Turkey Burgers<br />

Ingredients<br />

Burgers<br />

250g turkey breast mince<br />

½ red onion, diced<br />

2 garlic cloves, grated<br />

1 egg, beaten<br />

1 small apple peeled and grated<br />

1 tsp smoked paprika<br />

Salt and pepper<br />

Olive oil (to cook)<br />

Brussels Sprouts Coleslaw<br />

125g Brussels sprouts, trimmed<br />

½ red onion<br />

1 carrot, peeled<br />

50g Greek yoghurt<br />

30g mayonnaise<br />

1 tsp Dijon mustard<br />

1 tbsp lemon juice<br />

Salt and pepper<br />

¼ tsp ground cumin<br />

Handful of chives, chopped<br />

Handful of parsley, chopped<br />

Rolls, lettuce and cranberry sauce, to serve<br />

Fed up with the usual turkey recipes? Try these<br />

delicious turkey burgers topped with cranberry<br />

sauce and a Brussels sprout coleslaw.<br />

Serves 2<br />

Method<br />

1. Place the mince in a bowl with the remaining ingredients for the burger<br />

and mix well. Shape the mixture into two burgers about 3cm thick. Chill<br />

for 30 minutes.<br />

2. Preheat the oven to 190C/170C fan/gas mark 5. Place the burgers on a<br />

lined baking tray and brush the tops lightly with the olive oil. Bake in<br />

the oven for 20-25 mins, turning halfway through cooking, until cooked<br />

through.<br />

3. To make the coleslaw, grate the Brussels sprouts, onion and carrot in a<br />

food processor. Place in a bowl. Mix together the yoghurt, mayonnaise,<br />

mustard, lemon juice, salt and pepper and cumin. Pour the yoghurt<br />

mixture over the vegetables and coat thoroughly. <strong>St</strong>ir in the herbs.<br />

4. Serve the burgers in buns with lettuce, a spoonful of cranberry sauce<br />

and the coleslaw.<br />

which sugars 13g), protein 36g, fibre 3.8g
