While most kids request pizza, pancakes, or French fries for their birthday feast, I was the outlier asking for my mom’s spinach casserole. Call me crazy (don’t worry, I never said I was normal!), but from childhood and into adolescence a heaping helping of this home-cooked meal—followed by ice cream cake—was my only birthday wish. Loaded with plenty of cheesy, creamy, spinachy goodness, it’s still one of my comfort food favorites. Find the recipe in this month’s Taste department, “From Our Family to Yours” (page 76), along with seven other culturally, carb rich dishes from Style staffers, including an easy butter chicken, hearty Hungarian goulash, and simple-to-make but hard-to-say lokshen kugel. November also marks National Gratitude Month—a fitting time given it’s the (unofficial) start of the holiday season. Personally, I have so much to be grateful for, but on days when I’m overwhelmed and mentally running on empty, it can be hard to tap into a place of positivity. Luckily, contributor Linda Holderness shares a 30 day gratitude challenge in “Count Your Blessings” (page 32) with easy prompts to help you slow down, savor the small things, and bring more joy into your life. I’ve been putting her ideas into action and found #24 (“For one day, don’t complain about anything, even to yourself”) to be particularly challenging but refreshingly rewarding. There’s plenty more interesting, informative editorial packed into these pages—including top family photo tips (“Picture Perfect”; page 70), ensuring this year’s Christmas card is extra merry and bright; simple strategies for getting better sleep, plus products to help you doze off faster (“Rest Easy”; page 38); 10 ways to support area artists and arts organizations (“The Big Picture”; page 24); and three people’s empowering stories of sobriety (“Road to Recovery”; page 16). weathered their own storms to ultimately find<br />

peace, purpose, and positivity in their lives.<br />

WHAT HOPES AND DREAMS DO YOU HAVE<br />

FOR THE FUTURE?<br />

Honestly, my sobriety is very<br />

important to me. I make good<br />

decisions when I am of sober mind<br />

and body. So, my hopes and dreams<br />

for today and every day consist of<br />

staying sober one more day. If I do<br />

that, then the sky is the limit.<br />

elle grew up in a “normal” family<br />

with a younger sister and parents<br />

who’ve been married for 42 years. Life<br />

was good until she turned 16. That’s<br />

when Kelle made a foreign exchange<br />

trip to England and was introduced to<br />

alcohol. “I loved the way it made me<br />

feel,” she recalls. “When I returned to<br />

the states, I was outraged that the<br />

legal drinking age here was 21. In<br />

another country's eyes I was<br />

responsible enough to drink but in my<br />

own country I wasn't,” she says.<br />

After a sexual assault in high<br />

school, Kelle’s drinking pattern<br />

quickly escalated in college and<br />

she drank to forget her trauma.<br />

“Obviously, that isn't a healthy way<br />

to deal with your emotions and I<br />

know that now,” she says.<br />

Kelle drank till she was 35 at which<br />

point an interaction with a relative<br />

made her realize she was being Dr.<br />

Jekyll and Ms. hiding-her-problems.<br />

“I could tell I was causing them pain,”<br />

she says. “They helped me realize<br />

what I had become, and I was deeply<br />

ashamed of that person. The next day<br />

I took myself to my first AA meeting<br />

and my path to recovery began.” That<br />

pivotal day was April 17, 2017.<br />

HOW HAS YOUR LIFE CHANGED SINCE?<br />

My life is fantastic now! I’ve mended<br />

many broken relationships, was given<br />

tools to work through and process my<br />

emotions, and have looked deeper at<br />

my own personal flaws and character<br />

defects. Every day isn’t a cake walk<br />

but that is life. It's how you deal with<br />

it. I know now that drugs and alcohol<br />

aren’t the solution for me but a rabbit<br />

hole of self-destruction.<br />

DO YOU HAVE ANY ADVICE FOR SOMEONE<br />

FACING SIMILAR STRUGGLES?<br />

You are NOT ALONE! There are so<br />

many people who silently struggle on<br />

their own and die before ever really<br />

giving themselves a chance to flourish<br />

at life. Reach out for help. Whatever<br />

program of recovery you choose is a<br />

better program than the one you’re<br />

running for yourself right now.<br />

But in college, after a series of<br />

traumatic events, Amanda says<br />

the anxieties that lived at the<br />

back of her mind were suddenly<br />

amplified. “Alcohol was an easy<br />

way to suspend these feelings and<br />

access a version of myself I was<br />

more accustomed to—someone<br />

fun, outgoing, brave, and up for<br />

adventure,” she shares.<br />

Having children young seemed<br />

to slow things a bit for at 22, she<br />

stopped drinking in preparation<br />

for pregnancy. By 23 she had her<br />

first child and at 27, her second.<br />

But when Amanda’s body started<br />

becoming her own again, the<br />

mental issues she’d ignored for<br />

over a decade became too serious<br />

to ignore and she fell into her old<br />

ways.<br />

Over time, Amanda’s altered<br />

self became more of an effort to<br />

sustain, and she started to value<br />

that person less. Finally ready to<br />

make a change, she underwent<br />

years of therapy and life-changing<br />

diagnoses that led her to stop<br />

self-medicating and embrace who<br />

she was. “Life is filled with ups<br />

and downs and it’s my job to move<br />

through those periods with as much<br />

grace and as little judgement as<br />

possible,” she says.<br />

HOW HAS YOUR LIFE CHANGED SINCE?<br />

I’m now an illustrator<br />

(@thesoberillustrator), the cofounder<br />

of a mental health<br />

guidebook, “If Lost, Start Here”<br />

(@ifloststarthere), and a mental<br />

health writer for an app designed<br />

to help people cut back on alcohol.<br />

I’m even more present with my<br />

children. Every day, I’m moving<br />

closer to the person I always<br />

imagined I would be.<br />

WHAT HOPES AND DREAMS DO YOU<br />

HAVE FOR THE FUTURE?<br />

My only goal is to understand<br />

more deeply who I am and how I<br />

can best move through the world<br />

with intention and kindness. Yes,<br />

I’d also like to publish a book, run a<br />

marathon, and receive some sort of<br />

confirmation that I’m not doing it<br />

all wrong, but I understand that this<br />

isn’t how life works. I’m excited for<br />

whatever comes my way and feel<br />

capable of handling anything.<br />

DO YOU HAVE ANY ADVICE FOR SOMEONE FACING SIMILAR STRUGGLES?<br />

For anyone contemplating their relationship to alcohol, I would suggest a<br />

simple reframe. Instead of questioning whether you have a problem with<br />

alcohol, ask yourself if alcohol is helping you to become the best version<br />

of yourself. And if you do decide to explore sobriety, remember: There is<br />

power in community. Find your people and they will help you find your way.<br />

George T. Haymaker III<br />

lifelong entrepreneur, George<br />

made the decision early on to<br />

create his own destiny, having built<br />

four different companies in four<br />

different industries from the ground<br />

up. But his story doesn’t begin there.<br />

In college, he found that<br />

substances eased his anxiety, which<br />

had developed from childhood.<br />

With addiction looming large in his<br />

family, George was also genetically<br />

predisposed to it and by the time he<br />

hit 40, he was on cocaine, pain pills,<br />

and alcohol. Needless to say, it took<br />

a toll on his home and work life.<br />

At 50, substance use had<br />

completely taken over and was<br />

controlling him. “In the end, it was<br />

a 24-hour use cycle. I had to keep<br />

using in order for my body not to<br />

immediately go into withdrawals,”<br />

he shares. “My wife was imploring<br />

me to get help but as addicts do,<br />

we try and find any other way to<br />

manage it. Ultimately, I knew there<br />

was no other way, except to die,”<br />

admits George. “So, I agreed to<br />

seek help.”<br />

HOW HAS YOUR LIFE CHANGED SINCE?<br />

To the extent that anyone has<br />

control over their life, I have control<br />

over my life again. I’m at peace<br />

and have been given the gift of serenity. My relationships are much better and<br />

people like and respect me more. The thought [to use] might occasionally pop<br />

into my head but that’s just the addict in me seeking an opportunity to take<br />

control again. Addiction is sneaky and powerful.<br />

WHAT HOPES AND DREAMS DO YOU HAVE FOR THE FUTURE?<br />

I’ve dedicated my life to ReThink (rethinkicecream.us)—a healthy, tummyfriendly<br />

ice cream—out of a desire to help others. In recovery, addicts are<br />

advised to pursue a life of giving and helping others. The idea is this becomes<br />

our new high. My dream is to build resources to help people on a large scale.<br />

Causes that are important to me are addiction, animal rights, and children.<br />

DO YOU HAVE ANY ADVICE FOR SOMEONE FACING SIMILAR STRUGGLES?<br />

The bottom line is this: There is a better way to live life than mired in addiction.<br />

Each addict has their own bottom, where enough is enough and they’re willing<br />

to seek help. The sooner we all get to that point, the better for everyone. There<br />

is help if you want it. I attended a few rehabs and entered AA and without the<br />

help I received, I would be a dead man.<br />

Fighting Food Waste<br />

The next time you throw away food, pause for<br />

a second and consider the impact of that<br />

small, seemingly insignificant action.<br />

Did you know that 40% of our food is wasted in<br />

the U.S.? (And one-third of food produced across<br />

the world.) That’s over 133 billion pounds or 31% of<br />

overall food supply wasted every year—much of it<br />

perfectly edible and nutritious.<br />

Food Loss vs. Food Waste<br />

Now, food is wasted for several reasons and<br />

there’s often a distinction made between food<br />

loss and food waste. The U.S. Department of<br />

Agriculture’s (USDA) Economic Research Service<br />

defines food loss as “the edible amount of food,<br />

post-harvest, available for human consumption<br />

but not consumed for any reason.” Before<br />

food even reaches the grocery store, it can be<br />

lost due to bad weather, processing problems,<br />

overproduction, insects, etc.<br />

Food waste, on the other hand, includes the<br />

food left on your plate at a restaurant, scraps<br />

from preparing a meal at home, and the expired<br />

foods you toss. Overbuying, poor planning, and<br />

not paying attention to labels also contribute to<br />

our food waste habits. All this comes at a hefty<br />

Impact and Intervention<br />

Food waste, according to the World Wide<br />

Fund for Nature, also has an environmental<br />

impact, where we waste all the energy and<br />

water it takes to grow, harvest, transport,<br />

and package food. When all that food<br />

goes into landfills, it rots and produces<br />

methane—a greenhouse gas more potent<br />

than carbon dioxide.<br />

There’s much to be gained by consuming<br />

our food consciously. According to<br />

the Environmental Protection Agency<br />

(EPA), redirecting excess food to people,<br />

animals, or energy production provide<br />

immediate benefits to public health and the<br />

environment, including:<br />

• Reducing methane emissions from<br />

landfills.<br />

• Saving money through thoughtful<br />

planning, shopping, and storage.<br />

• Supporting your community by donating<br />

untouched food that would have<br />

GIVING BACK<br />

Local Efforts<br />

Current California state law requires businesses<br />

and multi-family communities to recycle<br />

organic waste. In 2022, additional regulations<br />

will become effective, requiring all Californians<br />

to recycle organic waste. Our cities are doing<br />

whatever they can to mitigate some of the<br />

damage by having various processes in place.<br />

"We already have a successful program to<br />

capture food waste from commercial customers.<br />

Now, we are working on a program that complies<br />

with state mandates to recycle organic waste<br />

into compostable material from residential<br />

customers and work to address food insecurity<br />

by recovering otherwise discarded fresh food,”<br />

says Devin Whittington, waste services utility<br />

manager for the City of Roseville.<br />

Folsom is designing a city-wide food scraps<br />

recycling program to be launched in 2022 that<br />

will drastically reduce landfilled food and<br />

greenhouse gas emissions. The food scraps<br />

will be made into compost and used in local<br />

parks, gardens, and farms. “The most exciting<br />

thing about this program is that we will be able<br />

to see a tangible difference in our air quality<br />

and soil quality as we reduce greenhouse gas<br />

emission from the local landfill,” says Sarah<br />

Moe, recycling supervisor at the City of Folsom.<br />

In other efforts, the El Dorado County<br />

Environmental Management Department and<br />

CalRecycle have teamed up with the Food Bank<br />

of El Dorado County to create a surplus food<br />

program to keep it out of the landfill. Rescued<br />

food from restaurants and food distributors is<br />

brought to the Food Bank of El Dorado County<br />

where it’s sorted through and distributed<br />

to nonprofits that provide emergency food<br />

assistance. Unsalvageable foodstuffs are<br />

donated to local farmers as livestock feed.<br />

So, what can you do? Here are some easy<br />

ways to reduce your own food waste.<br />

At Home<br />

• Meal plan before grocery shopping. Decide<br />

on recipes, check your existing supplies, and<br />

determine what quantities you need.<br />

• Prep and store produce as soon as you bring<br />

it home. Look online for storage methods for<br />

different produce and freeze what you can.<br />

• Use what you have before buying more.<br />

Websites and apps like BigOven, SuperCook,<br />

and MyFridgeFood allow you to search for<br />

recipes based on ingredients already in your<br />

kitchen. You can also use apps like Epicurious<br />

and Allrecipes.<br />

• Use overripe fruits in baked goods and<br />

breakfasts and overripe vegetables in soups<br />

and casseroles.<br />

• Save onion skins, celery and garlic ends, carrot<br />

peels, potato skins, and parsley stems to make a<br />

vegetable stock that you can freeze in ice trays.<br />

• Have a designated “leftovers” dinner night<br />

every week.<br />

• Perform a weekly audit of your fridge supplies<br />

and a monthly audit of pantry supplies.<br />

• Use see-through storage containers so you<br />

know what’s in your fridge and pantry.<br />

• Reconstitute dehydrated vegetables by<br />

immersing them in warm water for 15 minutes.<br />

• Compost food scraps like vegetable and fruit<br />

waste, eggshells, tea bags, and coffee grounds.<br />

Outside the Home<br />

• At restaurants, order only what you think you<br />

can finish. Allot room for the appetizers, main<br />

course, and dessert.<br />

• Take any leftovers home.<br />

• When you buy packaged foods, know that “best<br />

if used by” labels indicate quality—meaning they<br />

are still edible, just not at their peak quality; and<br />

“expires on” labels indicate safety levels.<br />

• Shop locally at the farmers’ market, co-op, CSA,<br />

etc. Doing so reduces the phases fresh foods go<br />

through on their way to spoilage. As a bonus,<br />

you reduce packaging waste, too.<br />

• Pick the bruised or odd-shaped produce that’s<br />

edible but might otherwise get thrown away.<br />

• Avoid buying too many fresh herbs, as they’re<br />

the most tossed items.<br />

During the Holidays<br />

• Plan your menu and choose recipes that use the<br />

same ingredients.<br />

• Resist impulse purchases and holiday discounts.<br />

• Use smaller dishes and serving spoons so guests<br />

don’t over-serve.<br />

• Reinvent leftovers by looking up recipes<br />

online and freeze the rest—don’t forget to label<br />

containers with dates and names.<br />

• Send your guests home with leftovers.<br />

• Donate excess food to food banks or<br />

homeless shelters.<br />

including “jewelrymakers<br />

[and] soapmakers,”<br />

explains Grey.<br />

Tune in. “The best<br />

thing an art lover can<br />

do right now is tune in,”<br />

advises Hyatt-Miler. Since<br />

the pandemic, artists<br />

have been engaging with<br />

audiences via virtual<br />

tours. Through “socially<br />

distanced in-person<br />

events and virtual<br />

displays of art/music/<br />

poetry” many are trying<br />

to reconnect with the<br />

arts community, he adds.<br />

10 Become a<br />

member. Consider<br />

joining a local arts<br />

organization. When<br />

you join, it’s a win-win,<br />

says Mayall. There are<br />

“benefits and discounts<br />

[given to members,<br />

and in return], you’re<br />

providing support for<br />

the organization and<br />

community it serves,” she<br />

explains. As it turns out,<br />

being a member can help<br />

grow that community<br />

and is a proven way to<br />

support the arts, says Kat<br />

Haro from the Crocker<br />

membership support<br />

The ABCs of ADUs<br />

A<br />

ccessory Dwelling Units, also<br />

known as ADUs and<br />

sometimes called in-law<br />

apartments, casitas, or granny flats,<br />

are smaller homes located on the<br />

same lot as a primary house. They<br />

can either be attached to the home or<br />

detached as a stand-alone. “You can<br />

build a new one or convert an<br />

attached or detached garage,” Kathe<br />

Russell, chief designer at<br />

DreamBuilders Home Remodeling<br />

(ourdreambuilder.com), says.<br />

Depending on where you live,<br />

however, the exact definitions<br />

of ADUs can vary. “For example,<br />

Sacramento County doesn’t consider<br />

a detached guest house without a<br />

kitchen an ADU. Also, tiny homes<br />

and most homes on wheels aren’t<br />

considered ADUs,” she says.<br />

Russell has an attached ADU to<br />

her primary residence, where her<br />

mother-in-law lives. “[The home] has a<br />

separate entrance from the exterior<br />

(but there’s also a connecting door that<br />

can be accessed from our house) and a<br />

parking space in our three-car garage<br />

that connects to the front porch and<br />

entrance. It’s worked out well. She has<br />

her independence, and we have our<br />

peace of mind,” Russell says.<br />

BENEFITS<br />

The benefits of having an ADU are<br />

increased property value and the<br />

potential for rental income. “We’ve seen<br />

clients who have also benefited from<br />

an ADU by being able to move an aging<br />

family member onto their property<br />

to care for them,” says Brenna Krouse,<br />

a certified interior designer at K<br />

Squared Interior Design & Remodeling<br />

(ksquaredconstruction.com).<br />

Colton Paulhus, co-founder<br />

and CEO of Anchored Tiny Homes<br />

(anchoredtinyhomes.com), says they’re<br />

a cost-effective way for grown kids to<br />

move back home (without moving back<br />

into your home) and avoid buying an<br />

unaffordable house and/or paying for<br />

a rental.<br />

According to Russell, some people<br />

use them as a separate home office or<br />

rent them out through platforms like<br />

Airbnb. With that said, some areas,<br />

such as Sacramento County, don’t allow<br />

short-term rentals.<br />

PERMITS<br />

Krouse, Russell, and Paulhus all<br />

recommend working with experts if<br />

you’re interested in adding an ADU to<br />

your property. “Each jurisdiction can<br />

be a little different and each parcel<br />

can have different challenges related<br />

to setbacks or HOAs, etc.” Krouse says.<br />

“As a general rule of thumb, ADUs can<br />

be a maximum of 1,000 square feet<br />

and must have a kitchen, bathroom,<br />

and bedroom.” There are also rules<br />

for separate exterior access, parking<br />

spaces, the height of the structure,<br />

the foundation, and setbacks,<br />

Russell shares. Says Paulhus: “From<br />

“As a design/build firm that<br />

constructs ADUs, we’ve found<br />

that the best way to approach<br />

them—whether we’re building<br />

something standard or nonstandard<br />

or converting an<br />

existing structure—is to create<br />

preliminary drawings for our<br />

clients and then schedule an<br />

appointment with the building<br />

department to review the<br />

plans and redline anything<br />

that isn’t going to fly,” she says.<br />

AVERAGE COSTS<br />

Though there are many<br />

variables when it comes to<br />

cost, Paulhus says the average<br />

cost for a one-bedroom<br />

ADU is $150K; however, his<br />

company can build a studio<br />

for $79K. Krouse continues:<br />

“Site conditions and utility<br />

costs can change the price<br />

significantly,” she says, but<br />

in general “prices vary from<br />

$250-$400 per square foot for<br />

building. What clients need to<br />

know is that a true ADU is a<br />

small residence or dwelling.<br />

We talk to many homeowners<br />

who think they can convert a<br />

shed into a living space and<br />

that isn’t necessarily an ADU,<br />

nor is it always permitted in<br />

certain jurisdictions. An ADU<br />

is meant to be an additional<br />

dwelling on your property—<br />

one that is separate from the<br />

existing home.”<br />

FINAL TIPS<br />

Krouse recommends<br />

homeowners consider the<br />

value that an ADU can add<br />

to their home. “While it is a<br />

significant investment, the<br />

value can be recouped as<br />

rental income or when the<br />

property is sold,” she says.<br />

“From a design perspective,<br />

you should consider designing<br />

the ADU so it looks similar<br />

to the existing home or so<br />

it ‘coordinates’ with your<br />

existing home.”<br />

Paulhus recommends asking<br />

yourself the following questions:<br />

What’s the intended use? Where<br />

is it going to go? Which finance<br />

route will I take (home equity<br />

line of credit, cash-out refinance,<br />

etc.)? How soon will I need it?<br />

Russell says to be aware of<br />

the minor details as soon as<br />

you get started on the project.<br />

“Don’t overlook the planning and<br />

drawings that will be needed to<br />

get your project off the ground.<br />

Make sure you budget for this as<br />

well—about 2-5% of your build<br />

price,” she says. “This is not a<br />

project for the average do-ityourselfer.”<br />

One final word of advice for<br />

someone considering an ADU?<br />

Go for it if you can afford one. “It<br />

will increase your property value<br />

here in California and give you<br />

lots of flexibility for helping out<br />

family or gaining extra monthly<br />

income,” Russell says.<br />

Cuppa Coffee & More on Placerville’s Main Street. The<br />

welcoming team and upbeat music are a perfect way to<br />

start the day. I tend to gravitate to their seasonal specials.<br />

WHAT ABOUT A GOOD LOCAL LUNCH? The chicken<br />

& waffles from Poor Red’s Bar-B-Que. The homemade<br />

Belgium pecan waffle with orange zest is excellent on<br />

its own, but add salty bacon bits, bourbon maple syrup,<br />

toasted rosemary butter, mashed potatoes, and fried<br />

chicken to the mix, and you’re in for a real treat. Plus,<br />

they have a great patio and casual ambiance.<br />

AND FOR DINNER? Allez! is the perfect dinner. All the<br />

entrées are made with so much love, but the paella with<br />

chicken, seafood, roasted vegetables, and saffron rice;<br />

or the garlic-crusted rack of lamb with Dijon mustard<br />

and French white beans are both at the top of my list.<br />

It’s genuine country French fare at its finest.<br />

WHAT DO YOU ADMIRE ABOUT OUR REGION’S<br />

CULINARY SCENE? El Dorado County has so many<br />

great chefs and dedicated restaurants who adapt and<br />

strive to make dining out feel as if you’re coming home.<br />

morning meal with some spice! Mexican food is usually my<br />

go-to. The Mimosa House does a great chorizo and eggs<br />

entrée with pinto beans, salsa, and your choice of corn or<br />

flour tortillas.<br />

AND WHEN IT COMES TO LUNCH? I love Wally's Café. Small<br />

and family-owned, the service is top-notch, and the shawarma<br />

is second to none. Plus, the lentil soup (served complimentary<br />

with your meal) has a kick and is super satisfying.<br />

GO-TO DINNER DESTINATIONS? If my family has anything<br />

to say about it, it’s sushi! Mikuni Sushi is always a favorite, but<br />

Tang's Sushi and PK Sushi are outstanding options as well; all<br />

three places serve super fresh fish and incredible sashimi.<br />

ANY OTHER HIDDEN RESTAURANT GEMS? For a local<br />

drink, I’m heading to CJ's Pizza Bar & Grill. Cold drinks,<br />

great pizza, and a good man running the operation. If I<br />

feel like getting dressed up, I go to Pink Martini California<br />

Kitchen & Cocktails.<br />

ANY LOCAL CHEFS YOU ADMIRE? I appreciate the<br />

longevity and success of Molly Hawks at Hawks and love the<br />

approach of the many talented chefs at The Chef's Table.<br />

HOW OFTEN DO YOU DINE<br />

OUT? Not as much as I should.<br />

My wife and I prefer cooking for<br />

each other. I believe cooking<br />

and creating is at its finest when<br />

preparing food for loved ones.<br />

BEST BREAKFAST IN TOWN? I<br />

frequent Cameron Park Coffee &<br />

Deli and usually order a caramel<br />

macchiato with a glutenfree<br />

carrot cake muffin. It’s a<br />

specialty that’s home-baked,<br />

sweet, and moist.<br />

El Carnaval in Placerville. I usually<br />

Hawks or Nixtaco. The former is<br />

bar and have a casual, abovepar<br />

and talk. When I’m craving tacos<br />

(which is often), it’s dinner at<br />

Nixtaco. I can make a meal out of<br />

their warm tortillas—they’re so<br />

delicious—and it’s even better<br />

now that they've reopened their<br />

inside dining room.<br />

ANY SPOTS YOU’RE EAGER<br />

TO TRY? I'm really interested in<br />

going to Restaurant Josephine in<br />

Auburn. Good pedigree from the<br />

people behind it, and the space<br />

looks super cute.<br />

NAME A LOCAL CHEF YOU<br />

ADMIRE. I've known Rick Mahan<br />

(The Waterboy/OneSpeed) for<br />

such a long time and admire his<br />

tenacity. I think Mike Fagnoni and<br />

Molly Hawks (Hawks) are terrific,<br />

too. They've grown their dream<br />

(and their family) and have so<br />

much good stuff to show for it.<br />

Finally, Patricio Wise at Nixtaco,<br />

because I admire people who<br />

start out small and just plunk<br />

away at it, one day at a time. He's<br />

achieved so much.<br />

8 Family Photo Tips<br />

The vibrant autumn leaves and cooler, more<br />

cooperative temps mean it’s the prime time to schedule<br />

a family photo session—especially as the holiday<br />

season approaches. Below are some tips from local<br />

photographers to ensure a stress-free, enjoyable session.<br />

1 | Schedule early on<br />

words, the early bird gets the worm<br />

kind of style does the photographer<br />

offer? If you’re interested in someone,<br />

schedule a time to talk, and see if you<br />

feel comfortable with them. Also, be sure<br />

to “read the fine print,” says Felts. When<br />

looking over packages, note that some<br />

sessions are mini sessions, which tend to<br />

be 30 minutes max. Knowing what you’ve<br />

signed up for and with whom will help<br />

ease additional stress when planning for<br />

a session.<br />

3 | Location, location, location<br />

Think about where you want to go,<br />

the terrain, and the critters we share<br />

our environment with. Also, take<br />

into consideration private property,<br />

required permits, and trespassing,<br />

advises Felts. It’s also not a bad idea<br />

4 | Coordinate but don’t match<br />

Avoid matching outfits, and instead,<br />

choose one main color and “loosely fit<br />

all clothing into it—mixing patterns and<br />

solids,” says Baldwin. You can still mix<br />

patterns and solids, but make sure they<br />

match the color palette. If you’re unsure<br />

where to start with wardrobe, then here’s<br />

5 | It’s all in the details<br />

After a color has been decided on, don’t<br />

forget the details. Consider “socks, clean<br />

putting outfits together, since the little<br />

things can make for a fantastic result.<br />

Another great idea is to use layers to your<br />

advantage. Jackets, sweaters, scarves, and<br />

hats make for more exciting, eye-catching<br />

photos. Also, “don’t forget about jewelry<br />

Once again, Placerville’s Main Street provides a golden<br />

nugget for those seeking an enjoyable dining experience.<br />

The Farm Table is a quaint little gem pumping out great<br />

food and friendly vibes.<br />

I stopped in on a Saturday evening just as they<br />

opened for dinner service and was seated near the front<br />

window with a view of Main Street passersby. Fresh-baked, olivestudded<br />

sourdough and lemon-rosemary artisan bread with whipped<br />

butter was brought out by our knowledgeable and attentive server,<br />

Elijah, while we discussed menu options. It had been a while since I’d<br />

had fresh, warm sourdough; coupled with a glass of local Pinot Noir,<br />

we were off to a great start.<br />

I followed that with burrata and grilled pears. Served on a bed of<br />

arugula dressed in extra-virgin olive oil and red wine vinegar with<br />

Marcona almonds and honey drizzle, the trick was to get as many<br />

of the ingredients on the accompanying crostini as possible for the<br />

perfect bite. Trust me: The reward was (well) worth the struggle.<br />

I wanted to see the chef’s interpretation of panzanella salad (a<br />

seasonal special from their summer menu that's no longer available)<br />

and was pleasantly surprised. The tomatoes, cucumbers, red onions,<br />

basil, and arugula were bright and refreshing, while the croutons,<br />

shaved Parmesan, bucatini, and vinaigrette added a nice balance<br />

of richness without making it heavy—a good representation of the<br />

restaurant’s moniker.<br />

The entrées were a tough decision—too many great-looking<br />

options. I went with the house-made ravioli Bolognese and the scallop<br />

and shrimp risotto. The ricotta, smoked mozzarella, and parmesanstuffed<br />

pasta sheets—smothered in a savory beef, pork, and veal<br />

Bolognese sauce—were so fantastic I didn’t want to share any with my<br />

companion. Fortunately, she was more interested in her risotto, and<br />

after tasting the perfectly cooked Arborio rice and succulent seafood,<br />

I can’t honestly say which entrée was my favorite.<br />

The staff was incredibly friendly and eager to engage and make<br />

suggestions. One of the co-owners, David Etheridge, stopped by for a<br />

brief chat, and you could sense his team’s passion for everything—from<br />

the building to the food (he is an avowed picky eater) to the community<br />

and their good fortune finding Executive Chef Frederick Reyes.<br />

Stop in for their “seasonal local menu” or at happy hour to sample<br />

some locally sourced beers and wines.<br />

It’s hard to believe that more people aren’t aware of Fahrenheit 250 BBQ<br />

in Roseville. They cook everything from scratch; make all their sausages,<br />

sauces, and sides in-house; and oh yes, they make some fantastic BBQ! The<br />

massive portion of delicious BBQ Nachos alone should be the talk of the<br />

Roseville BBQ scene. Is there a Roseville BBQ “scene” you ask? I can count<br />

six spots without straining my mesquite-smoked memory, so I’d say there<br />

are a lot of options. Speaking of options—once you get past the heaping<br />

pile of nachos loaded with cheese sauce, jalapeños, tomatoes, black beans,<br />

red onions, corn, sour cream, and your pick of pulled pork or chopped<br />

brisket, you can try making your way through The Trough. This BBQ<br />

behemoth comes with ribs, a ½ chicken, ¼ pound of brisket, ¼ pound of<br />

pulled pork, one sausage, and two small sides of your choice—plus white<br />

bread, house-made pickles, and onions. In other words, there’s something<br />

for every carnivore in your cave. Cornbread muffins, mac & cheese, grits,<br />

greens, beans, slaw…no less than 11 sides to choose from. Grab the kids, a few<br />

neighbors, or a local football team and drag them in (you won’t have to drag,<br />

they’ll go willingly…), because there’s too much good “Q” to go it alone!<br />

Pineapple-Cranberry Salad<br />

No matter what the main course is, this salad always<br />

refreshes and is a big hit with my family. Fresh<br />

cranberries really enhance the flavor.<br />

1 can (20 oz.) crushed pineapple (undrained)<br />

2 pkg. (3 oz. each) Jell-O raspberry flavor gelatin<br />

16 oz. can whole cranberry sauce or fresh<br />

cranberries<br />

1 apple, chopped<br />

2/3 cup chopped walnuts<br />

Fresh mint, to serve<br />

Drain pineapple, reserving juice. Remove 1 tbsp. of<br />

pineapple; set aside. Add enough cold water to juice<br />

to measure 3 cups; pour into saucepan. Bring to a<br />

boil, and then remove from heat. Add dry gelatin<br />

mixes; stir 2 minutes. Stir in cranberry sauce. Pour<br />

into large bowl. Refrigerate 1.5 hours or until slightly<br />

thickened. Stir in pineapple, apples, and walnuts.<br />

Refrigerate 4 hours or until firm. Garnish with<br />

reserved pineapple, sliced apple, and fresh mint.<br />

Vegan Mac & Cheese<br />

Mac & cheese is always a comfort food classic! Now, with so many great<br />

dairy-free alternatives at the grocery store, I’m still able to enjoy my<br />

favorite childhood meal as a vegan. Feel free to substitute with your choice<br />

of dairy/dairy-free products; the recipe can easily be doubled, too.<br />

8 oz. dried macaroni<br />

¼ cup margarine<br />

3 tbsp. all-purpose flour<br />

3 cups soy milk<br />

2 cups dairy-free cheddar cheese, shredded<br />

Salt & pepper, to taste<br />

Cook macaroni according to package directions. Drain. In a large pot, melt<br />

margarine over medium heat. Stir in flour to make a roux. Add soy milk to<br />

roux slowly, stirring constantly. Stir in cheese and cook over low heat until<br />

cheese is melted and the sauce is a little thick. Add cooked macaroni to the<br />

cheese sauce. Stir well to combine, adding salt and pepper to taste.<br />

Shortcut Butter Chicken<br />

Traditionally made, butter chicken is a somewhat arduous process. I found<br />

this recipe by Nadiya Hussain (winner of ‘The Great British Bake Off’) and<br />

while she calls it an easy chicken tikka masala (fun fact: The dish has its<br />

origins in the UK not India!), I’ve tweaked it a little to make it more of a<br />

butter chicken delicacy that I turn to whenever I want a luxurious Indian meal<br />

without the hassle.<br />

FOR THE CHICKEN MARINADE<br />

1 lb. boneless chicken<br />

breasts or thighs, diced<br />

1 tbsp. ginger and garlic<br />

(paste or minced)<br />

1/3 cup plain yogurt<br />

3/4 tbsp. lime/lemon juice<br />

½ tbsp. tandoori masala/<br />

tikka masala powder or<br />

garam masala/curry powder<br />

1 tbsp. olive oil or vegetable<br />

oil<br />

½ tsp. salt<br />

FOR THE GRAVY<br />

3 tbsp. butter (can substitute olive oil or<br />

vegetable oil but then it’s not “butter”<br />

chicken, is it?!)<br />

1 medium onion, finely chopped<br />

½ tbsp. ginger and garlic (paste or<br />

minced)<br />

1 tsp. garam masala powder/curry<br />

powder or a combination of ground<br />

cumin and ground coriander<br />

2 cups creamy tomato soup (this must<br />

be the creamy kind; I use Pacific Foods<br />

Organic Creamy Tomato Soup)<br />

Few sprigs fresh cilantro leaves, to serve<br />

1 tbsp. heavy cream or yogurt, to serve<br />

Marinate the chicken in all the ingredients and keep covered in the fridge<br />

for 30 minutes or overnight. Cook chicken in a large pan until the moisture<br />

evaporates; remove from pan. Add butter or oil to the same pan. Once melted,<br />

add onions; cook on medium heat until lightly browned. Add ginger-garlic<br />

paste and stir for about a minute. Add garam masala (or curry powder) and<br />

fry for a few seconds. Add tomato soup, cover, and let cook for 8-10 minutes.<br />

Add cooked chicken, covering the pan and stirring occasionally, until the gravy<br />

starts to bubble and the oil rises to the top. Turn stove off and serve with<br />

cilantro, a drizzle of heavy cream or yogurt, and Trader Joe’s Garlic Naan or<br />

white long-grain (Basmati) rice.<br />

Cheesy Spinach Casserole<br />

If you like spinach dip and cheesy pasta, then you’ll<br />

likely be a fan of this comforting casserole. Try<br />

adding mushrooms to the mix and get creative<br />

with the types of cheeses or ground meat you use.<br />

It’s an easy, forgiving, halfway-healthy recipe that<br />

even my two-year-old adores.<br />

1 tbsp. olive oil<br />

1 medium onion, finely chopped<br />

2 cloves garlic, minced<br />

1 lb. ground beef<br />

1 tbsp. Italian seasoning or herbs of choice<br />

Salt & pepper, to taste<br />

1 can cream of mushroom soup<br />

1 cup sour cream (or plain yogurt)<br />

16 oz. package frozen spinach (no need to thaw)<br />

3 cups cheese (I prefer Jack & cheddar), grated<br />

16 oz. dried whole-wheat pasta (macaroni or<br />

rotini)<br />

Parmesan cheese, to top & serve<br />

Red chili flakes, to serve<br />

Preheat oven to 375F. In a large skillet or Dutch<br />

oven, combine the olive oil, onions, garlic, ground<br />

beef, and spices. Cook until meat is browned. Add<br />

remaining ingredients and stir until combined.<br />

Transfer to a 13x9 casserole dish coated with<br />

cooking spray (or keep in the Dutch oven). Top with<br />

Parmesan cheese and bake for 35-40 minutes<br />

or until the pasta is cooked (you may want to<br />

stir it after about 20 minutes).. Serve with more<br />

Parmesan and red chili flakes.<br />

Goulash<br />

Although this recipe is not a traditional Hungarian goulash, my mom<br />

used to make it for our family all the time growing up. My dad is the one<br />

with the Hungarian lineage, but he was not the cook in the family, so<br />

Mom adapted her own version of it. The smell of the paprika (the most<br />

important ingredient!) and hearty meat, veggies, sauce, and cheese<br />

made it a staple during cold Midwest winters.<br />

3 cups dried pasta (any short<br />

shape will do—original recipe<br />

calls for macaroni, but I use<br />

gemelli)<br />

1 tbsp. olive oil<br />

1 medium onion, finely chopped<br />

4 garlic cloves, finely chopped<br />

1 green bell pepper, chopped<br />

2 cups mushrooms, chopped or<br />

quartered<br />

1 lb. ground beef<br />

32 oz. canned tomatoes<br />

6 oz. tomato paste<br />

1/4 cup fresh oregano,<br />

chopped<br />

1/4 cup fresh basil, chopped<br />

4 tbsp. Hungarian paprika<br />

2 tsp. salt<br />

2 tsp. pepper<br />

1 cup cheese, shredded (any<br />

melty type works; I use a combo<br />

of Jack and sharp cheddar)<br />

1 cup Greek yogurt, optional,<br />

to top<br />

Cook pasta to al dente or slightly before al dente; drain and set aside.<br />

Heat large skillet with olive oil at medium heat. When hot, sauté onions,<br />

garlic, peppers, and mushrooms until onions start to turn translucent.<br />

Add ground beef and cook until slightly browned. Add tomatoes and<br />

tomato paste and mix everything together so tomato paste is completely<br />

dispersed. Add pasta and stir. Add oregano, basil, paprika, salt, and<br />

pepper. Stir. Add cheese, cover, and let simmer for 10-15 minutes or until<br />

cheese is completely melted. Stir to mix cheese in. Top with Greek yogurt.<br />

Lokshen Kugel<br />

Traditionally, a kugel is associated with Chanukah<br />

and the sabbath. It can be prepared the night<br />

before and kept in a warm oven or served at room<br />

temperature for a snack or dessert. It also reheats<br />

perfectly and makes a great breakfast. If you serve<br />

it as part of a buffet table at a party, it’ll disappear<br />

in no time at all.<br />

16 oz. dried egg noodles<br />

6 medium eggs<br />

1 ½ cups milk<br />

1 cup cottage cheese<br />

1 cup sour cream<br />

½ cup sugar<br />

1 cup raisins (optional)<br />

½ cup brown sugar<br />

½ cup walnuts or pecans, chopped<br />

1 tbsp. cinnamon<br />

Preheat oven to 350F. Bring a large pot of lightly<br />

salted water to a boil. Cook the noodles until just<br />

tender, then drain. While noodles are cooking, beat<br />

the eggs in a large bowl. Add milk, cottage cheese,<br />

sour cream, sugar, and raisins (if using). Beat<br />

together and then add noodles. Mix well. Pour into a<br />

buttered 10x14 pan. Mix the brown sugar, nuts, and<br />

cinnamon together. Sprinkle evenly on top and bake<br />

for 1 hour until the center is firm.<br />

Chocolate Cheesecake<br />

This dessert has been a staple at family gatherings for<br />

as long as I can remember. The question amongst us is<br />

always, “Who’s bringing the chocolate cheesecake?!”<br />

And it’s so easy to make!<br />

FOR THE CRUST<br />

1 ½ cups<br />

graham<br />

cracker crumbs<br />

1/3 cup sugar<br />

1/3 cup melted<br />

butter<br />

FOR THE FILLING<br />

16 oz. softened<br />

cream cheese<br />

2 eggs<br />

¾ cup sugar<br />

½ cup cocoa<br />

powder<br />

1 tsp. vanilla<br />

FOR THE FROSTING<br />

1 cup sour cream<br />

2 tbsp. sugar<br />

1 tsp. vanilla<br />

Combine crust ingredients and press into bottom of<br />

a cheesecake pan, reserving about 2 tablespoons for<br />

topping. Preheat oven to 375F. Mix filling ingredients<br />

until creamy. Pour over crust and bake for 20 minutes.<br />

Let cool for 15 minutes. Increase oven temp to 425F.<br />

Combine frosting ingredients and spread over cooled<br />

cake. Sprinkle with reserved crust and bake for 10<br />

minutes. Let cool and then transfer to fridge. Best<br />

served chilled.<br />

Maltese Baked Pasta<br />

This classic Maltese recipe is a staple in my family<br />

that’s easy to make, delicious, and sized to feed—<br />

and please—a crowd.<br />

16 oz. dried pasta (penne or rigatoni)<br />

1 lb. ground beef<br />

1 medium onion, finely chopped<br />

2 cloves garlic, minced<br />

3 cups spaghetti sauce<br />

6 eggs, beaten<br />

1 tsp. dried basil<br />

4 tbsp. Parmesan cheese, shredded<br />

Salt & pepper, to taste<br />

Preheat oven to 350F. Cook beef until browned,<br />

breaking up the meat as you stir. Add onions and<br />

continue cooking until they’re soft. Add garlic<br />

and cook for about 1 minute longer. While meat<br />

is cooking, cook noodles according to package<br />

directions being careful not to overcook (you don’t<br />

want soft pasta). Run pasta under cold water<br />

and drain. In a bowl, add pasta and meat mixture.<br />

Add spaghetti sauce and carefully stir together.<br />

Grease a 13x9 casserole dish and fill it with the<br />

pasta mixture, pressing down lightly to pack it in.<br />

Combine eggs, basil, and cheese with a dash of salt<br />

and pepper; mix well. Pour evenly over the noodles,<br />

pressing down lightly to ensure the egg mixture<br />

is distributed throughout. Sprinkle more pepper<br />

on top and bake for about 30 minutes until the<br />

noodles on top start having dark edges.<br />
