Thousands of families have lost all their
belongings due to Hurricane Ida and continue to
endure hardship as they rebuild their homes and
communities.
The VIVA NOLA team has witnessed the great
need that exists, and Latino families who do not
have access to government assistance due to their
immigration status are at risk. Many of those
families are the same ones who came to rebuild
New Orleans after Hurricane Katrina. This is our
chance to help them.

Louisiana Honored as
2021 Medium Chamber of the Year
Each year, The United States
Hispanic Chamber of Commerce
(USHCC) recognizes three
chambers of commerce in the small,
medium, and large categories for
their contributions to the Hispanic
business community.
This year’s award for the
medium-sized chamber belongs
to Louisiana. Mayra Pineda, the
President and CEO of the Hispanic
Chamber of Commerce of Louisiana
attended the national conference
held at Las Vegas, Nevada, and was
honored with the award.
After many unknown obstacles
created by the pandemic, HCCL
has quickly and efficiently adjusted
to a new style of programming.
By navigating the complex and
uncharted terrain of COVID-19,
the HCCL has managed to
uninterruptedly serve the Hispanic
business community and operate in
a new business environment. The
advocacy and technical assistance
this organization has provided has
been invaluable during this difficult
time. These efforts have gained the
national recognition.
HCCL created a Bilingual
Workforce Development Training
Program offering the underserved
community a safe space to learn
and study at their own pace. This
program enrolls more than 500
adult learners every year, and since
its inception in 2008, the program
has placed over 150 learners per
year in full time jobs. Throughout
the pandemic, this center has
acted as a beacon of light providing
critically needed assistance,
education, and opportunity to the
community.
“We are delighted to honor the
Hispanic Chamber of Commerce
Louisiana and its successful efforts
to ensure access to education
and an equitable recovery for
the Hispanic community. Their
commitment to providing the small
businesses with the tools to thrive,
as well as serving underrepresented
communities illustrates that in
the wake of a cultural reckoning,
meaningful change is possible,” said
USHCC President and CEO, Ramiro
Cavazos.

“The Chamber of the Year Award is definitely a proud moment for our
organization, but it is also a reminder and motivation of our commitment
moving forward as we focus our mission to build a more equitable
community. We will continue to work tirelessly to erase the systemic
barriers that are preventing our communities from thriving. Bridging the
digital divide, providing access to capital and procurement opportunities,
and building a pipeline of skilled workforce are critical to true economic
development. These areas have been highlighted through COVID-19 where
our Hispanic communities have been disproportionately impacted and, in
my community, the added impact of Hurricane Ida.

October 15. How much do you know about Latin American / Hispanic countries?
Here are some cool facts about these beautiful nations.
Costa Rica
Capital: San José.
What country is “Pura Vida” and its typical breakfast is “Gallo Pinto”? Costa
Rica, located in Central America, is one of the most biodiverse countries in
the world and is one of the few countries in the world with no army.
Costa Rica es “Pura Vida” y su desayuno típico es el Gallo Pinto. Este país
centroamericano es uno de los países con mayor biodiversidad del planeta. Es
uno de los pocos países del mundo sin ejército.
México / Mexico
Capital: Mexico City / CDMX
Mexico has the largest square plaza in the world and the second most
visited Catholic sanctuary in the world.
It‘s capital city has over 170 museums, which makes it the second city in
the world with the largest number of museums.
The meteorite that wiped out dinosaurs millions of years ago hit the
Mexican Yucatan Peninsula.
México tiene la plaza más grande del mundo, y el segundo santuario católico
más visitado del mundo.
Es la segunda ciudad del mundo con el mayor número de museos, más de 170.
El meteorito que acabó con los dinosaurios hace millones de años golpeó la

El Salvador

The delicious “pupusas” are known throughout Central America
but are originally from El Salvador.
It is the smallest country in Central America and is home to the
largest soccer stadium in Central America, the Estadio Cuscatlán.

The Mayan ruins of Tikal are today for this country, what the great pyramids
they are for Egypt, a national symbol. The national bird is the quetzal. The coin is
named after the bird. Lake Atitlán is the deepest lake in Central America.
Las ruinas mayas de Tikal son hoy para este país, lo que las grandes
pirámides son para Egipto, un símbolo nacional. El ave nacional es el

Hondruas’ native dance, Punta, was declared by UNESCO as “Intangible
Cultural Heritage of Humanity.”
Honduras is home to the second largest coral reef in the world after
the Great Barrier Reef.
The Archaeological Park of Copán houses a Hieroglyphic Staircase
that contains the largest written text in the world. Built in 755 AD.
El baile nativo de Honduras, la Punta, fue declarado por
la Unesco como “patrimonio cultural inmaterial de la
humanidad”.
Honduras cuenta con el segundo arrecife de coral más grande

Atlantic Ocean and the sunset in the Pacific from the top of its highest
point, the Barú volcano.

settlement in the Americas and home to Christopher Columbus’s
first New World landing point in 1492.It is the largest economy
in the Caribbean and Central American region.

This country is known all over the world for its famous cigars and for
having one of the most popular Latin singers of the 20th century,

Cuba is home to the the bee hummingbird, the smallest bird in
the world.
Its main music genre is son Cubano, which is a unique mix of
instruments like bongos, trumpets, keys and the tres guitar.

puros y por tener una de las cantantes latinas más
populares del siglo XX ... ¡¡¡Azúcar !!!
Es el hogar del pájaro más pequeño del mundo, el
colibrí abeja. Su mayor género musical es el son

Puerto Rico

Casa Bacardi is the largest rum distillery in the world. It is so large that more
than 70% of the rum sold in the United States comes from this country.

The remains of the Spanish explorer Juan Ponce de León are found in a tomb
inside the Cathedral of San Juan.

It has a naturally -occurring Rainbow River, the Caño Cristales. The river’s
vibrant water and unique colors are found in no other streams on Earth.
90% of the world’s emeralds come from this Colombia.

This country is known for having the highest waterfall in the world, Angel Falls, which
was Disney’s inspiration for the creation of one of his film “UP.”
NASA declared Lake Maracaibo the thunderstorm capital of the world.
Canaima National Park is a jewel of natural splendor comprised of some of the oldest
landforms on earth. It is one of the largest national parks in the world.
Venezuela es reconocido por tener la caída de agua
más alta del mundo, la cascada Salto Ángel, la cual fué
inspiración de Disney para la creación de la película “UP”.
La NASA declaró el Lago de Maracaibo como la
capital mundial de las tormentas eléctricas.

Perú

In this country you can find 12 examples of UNESCO world heritage sites and
more than 100,000 archaeological sites; being Machu Picchu, one of them.
It has the highest sand dune in the world: Cerro Blanco in the Sechura Desert.
It has the tallest flower in the world, the Puya Raimondii plant that is only
found in the high peaks of the Andes.

Chile is recognized for its wines and for being the host of one of the
greatest cultural events such as the Viña del Mar Festival. Chile is also
knwn for the great poets Gabriela Mistral and Pablo Neruda.
It is home to the Atacama Desert, one of the driest places on the planet.
Its national liquor, Pisco, is a type of Brandy produced in the Chilean
regions of Atacama and Coquimbo.
Uruguay
Capital: Montevideo
Known for its delicious dishes such as chivito and asado and also for
hosting the first soccer World Cup in 1930.
Uruguay’s national anthem is the longest in the world with more
than 102 music bars and a duration of 6 minutes.
The capital city, Montevideo, is located on the Río de la Plata that
separates Uruguay from Argentina.
Conocido por sus deliciosos platos como el chivito y el asado y también
por ser anfitrión de la primera copa del mundo de fútbol en 1930.
El himno nacional de Uruguay es el más largo del mundo con más
de 102 barras musicales y una duración de 6 minutos.

The Paraná River, which runs through Paraguay, Brazil and Argentina, is the
second longest in South America after the Amazon.

Capital: La Paz
This country has the largest salt flat in the world: The Salar de Uyuni is so big that it
can be seen from space. Beneath the salt flat is the world’s largest lithium deposit.
La Paz is unofficially the highest capital city in the world. The official capital is Sucre
but the working capital (the seat of government) is in La Paz.
Lake Titicaca which straddles the border between Peru and Bolivia is the world’s
highest navigable lake.
Paraguay es un país donde el 90% de su población es bilingüe. Sus lenguas oficiales
son el español y el guaraní. Posee uno de los ecosistemas más importantes y extensos
del mundo, el platanal, que es compartido con Brasil y Bolivia.

The first animated film was created in Argentina in 1917 by Quirino
Cristiani, who inspired Walt Disney during his tour in Latin America.

El famoso Río de la Plata es de gran importancia económica
y social.
Argentina alberga el punto más alto y el más bajo del
hemisferio sur.
La primera película animada fue creada en Argentina en

Brasil / Brazil
Capital: Brasilia
Samba music is recognized as the national cultural heritage of Brazil.
The national soccer team has been the only one to attend all the
World Cups.
60% of the Amazon rainforest belongs to Brazil. There are more than
400 airports in this nation.
Rio de Janeiro was once the capital of Portugal, which means that it
was the only European capital city ocated outside of Europe.

restaurant in the world, Botín restaurant, recognized in Guinness
Records. Spain is the only European country that has a border
with an African country.

Miguel de Cervantes Saavedra fue el autor de la primera novela
moderna en la historia, Don Quijote de la Mancha.
Las tapas son un orgullo gastronómico nacional. Madrid cuenta

Imagination Movers
The guys who like to figure things out are back!

The city of New Orleans is always
brimming with history, culture,
cuisine, art, and music. People
around the world have experienced its
unique sounds of Jazz, Blues, Bounce,
Brass, Hip-Hop, Zydeco, and much more.
We can thank countless musicians such
as the famous Louis Armstrong, Irma
Thomas, Trombone Shorty, to name
a few, for being an inspiration and for
sharing their universal legacy. There is
also a unique local music band that’s
been “Brainstorming” for years and
awakening the imagination of kids around
the world. Dave Poche, Scott Durbin,
Rich Collins, and Scott “Smitty” Smith are
four “goofy” friends from Lakeview, Mid-
City and together they are the Imagination
Movers. We shared a cup of coffee with
Smitty while he told us their success
story.
“Everything had gone to animation or
puppets, there were no people.” The idea
of creating the group was born in 2002
at a friend’s birthday party. Their show
would be about four friends who work in
an “Idea Warehouse.” This warehouse is
a metaphor for the child’s mind to solve
problems. Mover Smitty remembered,
“the first pilot script was about helping a
child decide between a healthy snack and
junk food.” Next came creating the music.
They wrote three songs, “Snackin ABCs,”
“My Favorite Snacks,’’ and “Good Ideas.”
These became their first album called
“Good Ideas.” This album later added
other songs like “I Want My Mommy”
and the fan-favorite “Brainstorming.”
After putting out the record, selling it,
and giving it to friends, their popularity
grew, not only locally but regionally.
The attention allowed them to create
and release their first DVD, which was
recorded during a live performance at the
UNO Lakefront Arena. The DVD made it
to Burbank, California, thanks to friends
and opened the door to The Walt Disney
Company.
Right from the start, the four movers
knew how to “Reach high, Think big,
Work hard, Have fun.” Their partnership
with Disney helped them gain popularity
in Europe and Latin America. According to
Mover Smitty, their time at Disney brought

them “one of the most fun creative
challenges that they had” when writing
songs for their television show. After 3
seasons, they began touring around
the country.
The “Movers” are a real example
of perseverance and resilience. Like
many musicians in this business, they
had to face some challenges and
obstacles. However, they never lost
sight of what their brand is all about:
Kids. “Kids were being treated as
consumers more than anything,” said
Smitty. “We wanted kids to have fun
using their creativity and using their
imagination to solve problems.” It was
importanto to the movers “not to play
down to the kids, to play on their level,
not to dumb down the music.”
The Imagination Movers have
been “organic from the start.” All this
is reflected in their more than 200
songs, television shows, concerts, and
music videos. Their Facebook page
has served as a way to stay relevant
and to continue connecting with their
audience. There, you can see them
rehearsing and “goofing around” live.
Their brotherhood is so strong that
when they get together with their
instruments, voices, and songs, magic
happens and you can really see their
passion.
The Movers and their iconic blue
suits are back with a new album called
“Happy to Be Here” which includes
five songs, “Happy,” “Robot Breaks
Down,” “Leaves Fall Down,” “My Dog,”
and “Alligators are Cute.” “Happy to
Be Here” is a beautiful, fun, and very
clever album that was born in an
Airbnb in Manchac, Louisiana, literally,
in the swamp. “We went there and
brought our instruments. It’s almost
like we were sequestered, it’s like,
okay, we are here for a reason,” Mover
Smitty recalled.
There’s no doubt that their “Big
ideas” and inspiration for their new
songs are, like the rest of their work, a
group collaboration. An example is the
lyrics from the song “My Dog,” in which
each Mover wrote their own verses
about their pets. “So, these lyrics are

true, we are all dog owners, except
for Dave who’s a cat owner, which is
hilarious,” Smitty commented. “Scott’s
dog Hershey, his dog pees when you
pet him. When I come home my dog
picks up a shoe, and brings it to me,”
he added smiling. The song “Robot
Breaks Down” is one of Smitty’s
favorites, he describes it as “It’s just so
poppy, candy goodness.” The video for
this song was filmed in City Park and
was directed by Abby Collins, Mover
Rich’s daughter.
What is in store for the Movers?
As true New Orleanians, their love
for the city, their community, and their
passion for music motivate them to
keep moving forward. And the Hispanic
community is no exception. For their
20th anniversary in 2022, the Movers
have a surprise, and in a sneak
preview, they told us that it includes
Spanish language content. “We’ve
been working on a song - tentatively
titled Te Digo Que Te Amo (De Muchas
Maneras) and we’re also looking to
re-record Brainstorming in Spanish.
For us, we are aware of our impact
and how what we’ve created resonated
with our Spanish-speaking fans. It’s
our goal to respectfully recognize our
fan base as evidenced by our desire to
give back even as we create.”
Mover Smitty finished off this
interview by giving a special message
to the community: “If you are
passionate about what you want to do,
just do it! We just kind of believed it
and we worked to push it along.”

Nuestra hermosa ciudad de Nueva
Orleans está llena de historia,
cultura, exquisita comida, arte
y música. El mundo entero ha tenido
el placer de escuchar sonidos únicos
como el Jazz, Blues, Bounce, Brass,
HipHop, Zydeco entre otros. Podemos
agradecer a innumerables músicos
como Louis Armstrong, Irma Thomas,
Trombone Shorty, y muchos más por
ser una inspiración y por compartir su
legado universal. Además de todos estos
excelentes músicos, existe una banda
local que con su estilo único alternativo
ha estado por años despertando la
imaginación de los niños alrededor del
mundo. Dave Poche, Scott Durbin, Rich
Collins y Scott “Smitty” Smith son cuatro
amigos que juntos conforman a Los
Imaginadores o Imagination Movers.
Tuvimos el placer de sentarnos con uno
de ellos para compartir la historia de su
trayectoria musical.
“Todo era animación o marionetas”
comenzó diciendo Smitty. La idea de crear
este grupo nació durante una fiesta de
cumpleaños en el año 2002. Comenzaron
pensando en hacer un show de televisión
en el que estos amigos desde un taller
“Idea Warehouse” pensaran en ideas para

ayudar a los niños a resolver problemas.
“Este taller es una metáfora de la mente
del niño para resolver problemas”. “El
guión del episodio piloto fué de ayudar a
un niño a decidir entre comida saludable
o comida chatarra”, recuerda Smitty.
Después vino la música. Las primeras
canciones que escribieron fueron “Snackin
ABC’s”, “My Favorite Snack” y “Good
Ideas”, posteriormente incorporaron más

popularidad creció no sólo local sino a
nivel regional. Con la ayuda de familiares
y amigos y de trabajar animando fiestas
de cumpleaños, su popularidad creció y
así pudieron lanzar su primer DVD, el cual
fué grabado en el UNO Lakefront Arena.
Este DVD llegó a Burbank, California y a
oídos de la compañía de entretenimiento
más importante del mundo, la compañía
Walt Disney.
Desde el principio, este grupo sabe
como “Llegar alto, Pensar en grande,
Trabajar duro, divertirse”. Con Disney
ganaron rápidamente popularidad no
solo en Europa sino también en Latino
América. Según Smitty, Disney les
trajo “uno de los retos más creativos y
divertidos” en lo que respecta a escribir
las canciones para el show de televisión.
Después de tres temporadas, continuaron
haciendo tour. La hermandad que hay
entre ellos es tán fuerte que cuando se
juntan, su creatividad y su pasión se
refleja al tocar sus instrumentos, en la
armonía de sus voces y en las letras de
sus canciones. Los “Movers”, son un
ejemplo de perseverancia y fortaleza.
Como muchos otros músicos, se han
enfrentado a varios retos y obstáculos.
Sin embargo, nunca perdieron la
perspectiva que los caracteriza, los
niños. “Los niños han sido tratados como
consumidores más que otra cosa” dijo
Smitty. “Queríamos que los niños se
diviertan usando su creatividad y usando
su imaginación para resolver problemas”.

Para ellos es importante “no menospreciar
a los niños, jugar a su nivel, no bajar el
nivel intelectual de la música”.
Los Imagination Movers han sido
“auténticos desde sus comienzos”. Esto se
refleja en las más de 200 canciones, sus
shows de televisión, sus videos musicales
y sus ensayos en vivo en su página de
Facebook. Los Imaginadores con sus
íconos trajes azules están de regreso y
con nuevo material. El álbum “Happy to
Be Here” (“Felíz de estar aquí”) incluye
cinco canciones, “ Happy”, “Robot Breaks
Down”, “Leaves Fall Down”, “My Dog”
y “Alligators are Cute”. Los hermosos

Smitty cuenta que para componer su
nuevo material rentaron un airbnb en
Manchac, Luisiana, prácticamente en

secuestrados, dijimos, estamos aquí y es
por alguna razón”. No hay duda que sus

una colaboración en grupo. Un ejemplo
de esto es la canción “My Dog”, en la cual
cada uno de los integrantes de este grupo
musical compuso su propio verso acerca
de su mascota. Smitty nos cuenta, “La letra
de la canción es verídica, todos tenemos
perros, excepto Dave, él tiene un gato, lo
cual es divertidísimo” también Smitty nos
cuenta sus anécdotas, “El perro de Scott,
Hershey, se hace pipí cuando lo acaricias.
Cuando yo llego a casa, mi perro recoge
un zapato y me lo trae”. Agregó que la
canción “Robot Breaks Down” es una de
sus favoritas y que el video fué dirigido por
Abby Collins, hija de Mover Rich y grabado
en City Park.
¿Qué más podemos esperar de
los Movers? Su amor por esta ciudad
y comunidad y su pasión por la música
los motiva a seguir adelante. Nuestra
comunidad Hispana no es la excepción.
Para la celebración de su próximo 20
aniversario, en el 2022, the Movers
nos tienen una increíble sorpresa y nos
hacen el honor de darnos la exclusiva,
“Hemos estado trabajando en una
canción - posiblemente titulada “Te Digo
Que Te Amo” (De Muchas Maneras) y
también queremos grabar la canción
“Brainstorming” en español. Estamos
conscientes del impacto y de la resonancia
que hemos tenido con nuestros fans
de habla hispana. Nuestro objetivo es
reconocer con mucho respeto a nuestros
fans como lo demuestra nuestro deseo
de retribuir incluso mientras creamos”.

A Better Buillon

Fall has arrived, and with fall, our eating habits change. Heavier, richer
foods are usually incorporated into our daily menu alongside more
soups. A common ingredient of Latino households is the little yellow
squares with the chicken on the package. Bouillon is added to many
familiar recipes throughout Latin America to flavor soups, rice dishes,
and more. However, a closer look at the label may provide a good reason
to make your own chicken stock.
#1. Unilever makes it, yes, the company that also makes your soap.
#2. It contains palm oil, one of the most environmentally destructive
crops. Large areas of the Amazon have been cleared to produce this oil.
#3. The oils are hydrogenated. Hydrogenated oils may lead to an
increased risk of coronary heart disease, metabolic diseases, and obesity
(Kochan et al., 2010).
#4. The salt intake for just ½ a cube amounts to 48% of the daily
recommended intake at 1110 mg/serving.
#5. It lacks vitamins, minerals, protein, and other beneficial spice
components in a whole food broth.
A healthier alternative that will deliver maximum flavor is to make your
own! All you need is a chicken carcass/bones, vegetables, and herbs.

Chicken
Broth Recipe
Here is a recipe for a chicken broth. If you would like
to make more, double or triple the recipe depending
on the size of your stockpot and how much chicken
you have available.
You will need a stockpot, cutting board, knife, and
large spoon to skim any debris and fat that rises to
the top while cooking.
At least 3 lbs. chicken bones, cleaned and trimmed
2-3 carrots
1 onion (skin included)
1 bay leaf
½ dried pepper (optional for spicier dishes)
About 3-4 sprigs of thyme/oregano
6 cloves of garlic (skin included)
½ bunch parsley
½ bunch of cilantro with or without leaves
Peppercorn
Sea salt or Himalayan salt
¼ tsp. of turmeric
Cover ingredients until they are submerged in water.
Simmer for about 2-3 hours, depending on how
strong you would like the flavors.
Skim fat and foam during the cooking process and
remove.
If water decreases too much during cooking, you may
add a bit more. However, for concentrated flavor, do
not add water.
Upon completion, strain, cool, and freeze in small,
medium, and large containers for multiple uses. A
quick internet search for “souper cubes” (ice cube
trays that fit the perfect amount of soup or stock)
will provide you with a silicone tray that pops out the
ideal amount of broth when you need it. It is like an
ice tray with larger compartments! Not only will you
have a healthier alternative to bouillon, but you can
always build your stock as you trim vegetables while
cooking. Pop trimmings into a freezer bag for later
use!

Aquí presentamos la receta parahacer un caldo de pollo casero. Si desea hacer más cantidad,
