Pumpkin Latte?!<br />

<strong>September</strong> 22 we welcome Fall, and although our temperatures<br />

here in sunny South Florida are still very warm, we are officially in<br />

the homestretch of <strong>2021</strong>. I don’t know about you, but this season I<br />

am excitedly looking forward to football (go Fins, Bucs, and Jags!).<br />

In this issue you will meet Emilie Konopka, our <strong>September</strong> City Person.<br />

Diane Feen calls her a Leader, Communicator, and a Visionary, and after<br />

reading her story, you will definitely agree. Her passions include cooking,<br />

art, music, yoga (to name a few) – but she does so much more. She is a wife,<br />

a mom, a volunteer, the regional director for a major retail company and…<br />

if that wasn’t enough, the new Chairman of the Board for our beloved Old<br />

School Square.<br />

I know I’ve said this in a previous issue, but I believe it’s worth repeating<br />

– we are in the middle of hurricane season. Hurricane preparation is part of<br />

South Florida life. <strong>September</strong> and October have notoriously been the most<br />

active for hurricanes. If you have a whole house generator, get it serviced,<br />

if you have a portable generator, make sure you have fresh gas to run it<br />

3-5 days. Get water, non-perishable foods, paper goods, cleaning supplies,<br />

batteries, flashlights, and all necessary medications.<br />

Do you have Fall travel plans? Consider local destinations and staycation!<br />

Menin, the Delray Beach headquartered developer (Delray<br />

Beach Market, Lionfish Delray) have announced that Ember<br />

Grill and Rosewater Rooftop, operated by Clique Hospitality,<br />

situated in The Ray Hotel Delray Beach, Curio Collection by<br />

Hilton, will officially open doors to the public on Wednesday,<br />

<strong>September</strong> 1, <strong>2021</strong>, with reservations first being accepted via<br />

OpenTable. A third hospitality concept by Menin, Stingers, a<br />

quick stop for artisan coffee creations and teas along with light<br />

Impact 100 Men of Palm<br />

Beach County’s Board of<br />

Directors<br />

There are three newly elected board members, Nicholas<br />

Coppola, David Freeburn, and Emmanuel St. Germain.<br />

Four members of the previous board will serve again this year,<br />

Stephen Greene, Ted Hoskinson, Dan Paulus, and John Snider.<br />

They have been elected to serve for the grant year commencing<br />

July <strong>2021</strong> and ending June 2022. Impact 100 Men of Palm<br />

Beach County has just had their fifth anniversary! During those<br />

first five years, the members of the organization reviewed<br />

grant requests from over 150 nonprofits serving children in<br />

our communities. Members contributed funds in equal proportion<br />

and worked as a team to choose a handful of organizations<br />

to be stewards of our members contributions. Over $250,000<br />

Ron Burkhardt is the originator of three<br />

genres of Contemporary Art-Notism<br />

(hieroglyphic memory fragments), Earth<br />

Art (large organic fields of paint fused with<br />

nature), LetterScapes (bold geometric color<br />

blocks of abstract words).<br />

Honored with over 200 creative awards<br />

and exhibited in more than 70 galleries and<br />

museums worldwide, Burkhardt is known<br />

for his rhythmic scrawls, striking designs<br />

and rich colorations. He has been collected<br />

and exhibited internationally in a dozen<br />

countries including Italy, Japan, Germany,<br />

Brazil and Switzerland.<br />

His Art has also sold at Art Basel, Sothebys<br />

and Phillips de Pury. Tri-coastal Burkhardt<br />

is a Florida resident, who splits his<br />

time between Palm Beach, New York, and<br />

California.<br />

Delray Beach Public Library is pleased<br />

to host a reception to meet the artist 6 pm<br />

to 8 pm, Wednesday, <strong>September</strong> 22, <strong>2021</strong>.<br />

This event is free and open to the public.<br />

Teens who went through Shift Happens<br />

report a 68% increase in handling<br />

stress well<br />

Andrea and Lee Vallely<br />

Transformational coaches Lee and<br />

Andrea Vallely have found a way to<br />

significantly lower stress and improve<br />

well-being in teens impacted by the pandemic.<br />

The Vallelys, who have spent years<br />

coaching adults through difficult times<br />

with their Shift Happens program recently<br />

modified the program for teens at the request<br />

of parents. New data from their pilot<br />

program at Somerset Academy in Boca<br />

Raton shows unbelievable results: 68%<br />

increase in managing stress well, 59% increase<br />

in remaining calm during stressful<br />

situations and a 57% jump in overall happiness<br />

among the teens.<br />

“Before the program, I had so much anxiety.<br />

Now, I don’t have to carry situations everywhere<br />

I go. I handle things a lot better,”<br />

said Daniela, a middle school student who<br />

went through Shift Happens for Teens.<br />

The 8-lesson Shift Happens curriculum<br />

is turnkey for teachers and distributed<br />

with video lessons and an accompanying<br />

workbook. The program was created<br />

from Lee and Andrea’s proven method of<br />

teaching the principles behind our psychology.<br />

It shows students their innate<br />

well-being, how to calm a busy mind, and<br />

the eyeopening way to not react to their<br />

fluctuating moods.<br />

The Vallelys created Shift Happens for<br />

Teens during the pandemic after parents<br />

begged them for help with their children<br />

who were struggling with isolation, anxiety<br />

and change. The couple ran a pilot program<br />

at Somerset Academy in Boca Raton<br />

this past spring and were surprised at the<br />

amazing results.<br />

Puppy Pals, The Comedic<br />

Stunt Dog Show to Perform<br />

in Boca Raton and Delray<br />

Beach<br />

Boca Raton and Delray Beach are ‘going to the dogs!’ Puppy<br />

Pals, the comedic Stunt Dog Show, will bound onto the stage<br />

at the Mizner Park Cultural Center on <strong>September</strong> 25, and at the<br />

Delray Beach Playhouse on <strong>September</strong> 26. Both performances<br />

will take place at 1 pm.<br />

Filled with surprises and laugh-out-loud canine comedy,<br />

Puppy Pals is a show suitable for all audiences – adults, children,<br />

and dog lovers! The performing pooches – most of them<br />

rescued and adopted by the show’s creator Wesley Williams<br />

– execute challenging and comical tricks in an atmosphere of<br />

controlled chaos. Veterans of both America’s Got Talent and<br />

Britain’s Got Talent, these ‘from shelter to showbiz’ Puppy Pals<br />

perform challenging stunts, including jumping rope, climbing<br />

ladders… and back flips!<br />

The Tri County Animal Rescue (https://tricountyanimalrescue.com<br />

) will be holding a fundraiser in conjunction with the<br />

Puppy Pals performance at the Mizner Park venue.<br />

The Puppy Pals will perform at the Mizner Park Cultural<br />

Center located at 201 Plaza Real in Boca Raton on <strong>September</strong><br />

25th at 1 pm, and the Delray Beach Playhouse located at 950<br />

NW 9th Street, on <strong>September</strong> 26th at 1 pm. Tickets for both<br />

Families for $7,070.<br />

“The generous grant will help us provide services to the Delray<br />

Beach children and families that rely on our services,” said<br />

Jessica Hall, Director of the Achievement Centers for Children<br />

& Families Foundation. “We are so grateful to Power Financial<br />

Credit Union for this needed support.”<br />

To commemorate its anniversary, PFCU is giving back to the<br />

members and community that have supported it since 1951,<br />

with donations of $7,070 each to seven South Florida charitable<br />

organizations. The charities that will split nearly $50,000<br />

include: The Advocacy Network on Disabilities, Jason Taylor<br />

Foundation, Take Stock in Children, Save LGBTQ, Shifting Gears<br />

Twenty years of providing art, culture and history culminated<br />

in an evening of laughter, music and nostalgia at the Spady Cultural<br />

Heritage Museum. On July 27, <strong>2021</strong> – two decades after the<br />

museum opened to the public – guests arrived to celebrate the institution’s<br />

past and future.<br />

Board members of the Spady Museum mingled among former<br />

board members, staff, partners, artists and the museum founder<br />

and past Board Chair Vera Farrington. Farrington’s daughter, Charlene<br />

Farrington, manages the museum as its Director and has overseen<br />

the museum’s continued relevance with programming that<br />

appeals to all ages and ethnicities.<br />

of Business Administration. His next step<br />

was FAU where he obtained a (MBA) Master<br />

of Business Administration. During his<br />

time at FAU he started his career with the<br />

Florida Panthers Ice Hockey Team. Working<br />

with them for over 5 years in both hockey<br />

operations and business analytics. Hard work<br />

and determination have paid off. Educated in<br />

Florida and now working here too in a very<br />

prominent position of CEO. His parents Chuck<br />

Country music returned to the iTHINK Financial Amphitheatre in<br />

West Palm Beach. Multi Grammy and CMA Award winners Lady<br />

A (formerly known as Lady Antebellum) headlined a four artist<br />

bill that included Carly Pearce, Niko Moon and Tenille Arts. It was easy<br />

to tell that each artist was as happy to be on stage performing in front<br />

of a live audience as that audience of thousands were happy to be<br />

experiencing live music again. A special evening of inspired performances<br />

were enjoyed and truly appreciated by all.<br />

Celebrate National Dog Week<br />

English writer John Heywood once said, “Every dog has its<br />

day.” Thanks to Captain Will Judy, every dog has its week!<br />

National Dog Week started in 1928 when World War I<br />

veteran and canine advocate Captain William Judy, decided that<br />

a week-long celebration was the least that could be done to recognize<br />

the service and the loyalty of people’s best friend.<br />

After returning from the war, Captain Judy established a publishing<br />

business dedicated to canines. Through his Dog World<br />

<strong>Magazine</strong> empire, a multitude of books, and his National Dog<br />

Week initiatives, Judy educated and guided a new generation of<br />

pet parents.<br />

The occasion, which takes place over the last week of <strong>September</strong>,<br />

offers an opportunity to organize new and fun events for<br />

dog lovers and dogs, while helping local organizations, shelters,<br />

and canines in need.<br />

Although the pandemic has altered everyone’s lifestyles, there<br />

are many ways to show appreciation to the dog that gives you<br />

unconditional love, friendship, and constant companionship.<br />

While we agree that every day, our dogs should be celebrated,<br />

we love having a special week. Here are some top ideas for celebrating<br />

with your pup every day of this momentous week:<br />

Monday: Take your dog on a walk somewhere new. Let your<br />

dog take the lead and let them walk at their own pace while<br />

sniffing everything that they want (within reason). Romeo,<br />

America’s Top Dog Model brand ambassador (pictured below)<br />

is planning on celebrating National Dog Week with his first visit<br />

to Arthur R. Marshall Loxahatchee National Wildlife Refuge for<br />

a sunrise walk.<br />

Tuesday: Teach your dog a new skill. Learning new tricks will<br />

keep your dog’s mind sharp. There are lots of books and videos<br />

to help take your training to the next level.<br />

Wednesday: Support a pet organization. Donate a monetary<br />

gift or needed supplies. Find COVID-19 specific and virtual volunteer<br />

opportunities at volunteermatch.org.<br />

Thursday: Adopt a dog. If you are considering adding a new<br />

pup to your family, visit your local shelter and see what they<br />

have to offer. What better way to celebrate National Dog Week<br />

than by giving a forever home to a dog in need?<br />

Friday: Embark on a trip to see fall foliage. Mia, America’s<br />

Top Dog Model <strong>2021</strong> National winner (pictured above), and her<br />

family are planning a trip to Georgia’s Blue Ridge Mountains<br />

where they will enjoy hiking and plenty of picture taking.<br />

Saturday: Create an “at home” spa. Nothing compares to the<br />

pampering and relaxation of a spa day. Spend quality time bonding<br />

with your dog, complete with bath, pet-icure, teeth brushing,<br />

massage and lots of hugs.<br />

Sunday: Watch a movie together. Whether or not your dog<br />

is aware of other dogs on the screen, they will definitely enjoy<br />

snuggling up on the couch with you. Select a movie where the<br />

dog is the hero like in Lassie, The Wizard of Oz, and Air Bud.<br />

Masking the Symptoms<br />

The world we live in today is full of misleading<br />

information. It’s not out of the ordinary for people to talk<br />

about their pain when they learn that I’m a chiropractor.<br />

Pain is often the topic of conversation. These conversations are<br />

an opportunity to educate people on pain and what is causing<br />

it. It is also common to speak on the multitude of topical<br />

creams, treatments, and doctors that they have tried with no results.<br />

There is a clear delineation between symptoms and causes of<br />

symptoms. Our healthcare system has been an integral part in<br />

teaching us to use pain as the determining factor when we are<br />

better. Pain is the last symptom to show up and the first to go<br />

away. There has been long standing dysfunction and compensation<br />

that has led to where you now have pain in that area and<br />

want it fixed. Like a root canal, the procedure is done to save a<br />

tooth that has long standing decay and is eliciting sometimes unbearable<br />

pain. The fix to the problem is the root canal, the actual<br />

fix would have been to take care of your mouth, brush your teeth,<br />

floss, and see your dentist regularly to prevent this.<br />

As any good clinician should, we use pain as a subjective marker<br />

to gauge the patient’s thoughts on their progress; however,<br />

this should always be accompanied by objective measures that<br />

show verifiable outcomes that show improvement. Those can be<br />

done with range of motion, orthopedic testing, functional movement<br />

evaluations, reflexes and other neurological tests that can<br />

be documented. These tests give us a baseline of how the person<br />

is functioning overall and are monitored through treatment.<br />

We do this solely because pain is subjective, meaning a 10 for<br />

me might be a 5 for you. That is why when we do examinations,<br />

we use the pain and symptoms that are present as a road map<br />

to get to the original source and cause of dysfunction. Let’s use<br />

sciatica, as the topic for the remainder of the article. Scaitica, by<br />

definition, is just inflammation of the sciatic nerve. It is not a<br />

definitive diagnosis; it is an early symptom. Sciatica takes many<br />

forms, radiating pain into the glutes, down the hamstrings, into<br />

the calf, and sometimes into the foot. Here, as clinicians we need<br />

to delineate what is causing this problem. Is it a disc issue, a zygapophyseal<br />

joint, a facet capsule issue, a stenosis issue, a muscle<br />

imbalance issue, or is it from major trauma or pathology? All of<br />

these possibilities have their own treatments and their own patterns<br />

that a trained clinician should be able to detect. There is no<br />

blanket treatment, no amount of over-the-counter medications,<br />

topical creams, stretches or massages that can be used to fix the<br />

actual problem, not just mask the symptoms. Fixing the problem<br />

takes time, repetition, strengthening, and reconditioning your<br />

body to function as it was designed. The cause of these symptoms<br />

should be dealt with an active plan. Stop masking symptoms and<br />

get to a clinician that can help you determine what is going on<br />

and has a concrete plan on getting back to living without pain<br />

Summer has come to a close and now it’s back to the<br />

school year grind. Summer is a time for loose schedules…<br />

aka missed workouts, family vacations…lots of extra<br />

calories and kids to entertain. No time to yourself!<br />

Although fun and exciting, all these summer activities can reek<br />

havoc on the body and make getting back on track that much<br />

harder. There is no better time than now to make your fitness<br />

regime part of that “grind.” Here are a few tips to get back on track,<br />

feeling good and beat those summer blues.<br />

The first and most important component of getting back on track<br />

is to have a “fitness” plan and to set a goal for yourself. Setting a fitness<br />

plan could be as simple as saying you’re going to get to the gym<br />

3x per week. Make sure it’s at a time that will not be interrupted and<br />

a time that will work for you. Next up is to set a small goal. Having a<br />

“specific” goal will allow you to focus on training and give you extra<br />

motivation to exercise. It’s a lot easier to make it to the finish line if<br />

you have an attainable goal in sight. Whatever this goal may be, write<br />

it down and put it somewhere where you will be reminded of it everyday.<br />

Committing your goal to paper and seeing the written words are<br />

more powerful than just having a thought or talking about it.<br />

Next order of business would be for you to get your eating in check!<br />

I highly recommend keeping a daily food log of exactly everything that<br />

you are consuming…the good the bad and the ugly! This will help you<br />

easily pinpoint your strengths and weaknesses. Make sure to get in<br />

the proper mix of lean protein, complex carbohydrates, healthy fats<br />

and of course lots of veggies. Skip anything that is processed and stick<br />

to all homemade prepared meals (yes, with preparation and thought…<br />

you can do it!) The other nutrition component is water! Your body<br />

can not properly burn fat if it is dehydrated. It’s such a simple thing<br />

many people don’t do. Aim for 1oz of water per pound of bodyweight.<br />

Drinking proper amounts of water will also help to keep you feeling<br />

full, flush out toxins and help de-bloat you faster than you may realize.<br />

So get out that gallon and start your chuggin!<br />

The last step to help you get back on track is to find an accountability<br />

partner. Surely you can find someone…a friend, the neighbor,<br />

your dog (just kidding!) who is looking to get in shape or even just<br />

live a healthier lifestyle. An accountability partner will help keep<br />

you on track and honest. I see greater fitness retention when friends<br />

pair up. Think about it….you’re much less likely to skip your workout<br />

if someone is meeting you and it gives you someone to call when<br />

you’re ready to throw in the towel.<br />

If you follow these three principles it should help you get back on<br />

track in no time! My last piece of advice, don’t do the old…”I’ll start<br />

on Monday!” There is no better time to start than now! Come up with<br />

a plan, set a goal, clean up your eating, grab a friend and get moving!<br />

You’ll be glad you did.<br />

Why do we celebrate Labor DAY?<br />

The idea of Labor Day emerged in the late 19th century out of the<br />

organized labor movements. In <strong>September</strong> 1882, unions in New<br />

York decided to throw themselves a parade to celebrate unions as<br />

a concept and the hard-working people comprising them.<br />

Even though workers had to give up a day’s pay to attend, more<br />

than 20,000 people showed up to the parade. It was a celebration<br />

of historic proportions.<br />

Soon, unions in other states started having <strong>September</strong> parades,<br />

and within five years, several states declared “Labor Day” official<br />

state holidays. In 1894, 12 years after the first labor parade in New<br />

York, President Grover Cleveland signed an act establishing Labor<br />

Day as a federal holiday on the first Monday of every <strong>September</strong>.<br />

How do we celebrate Labor DAY now?<br />

While some towns still have Labor Day parades similar to the<br />

original Labor Day festivities of the 19th century, the general focus<br />

of the holiday has shifted more toward celebrating the end of summer.<br />

Cookouts and pool parties are much more in favor now than<br />

marching bands and union speeches. And Labor Day is usually a<br />

busy time for travel.<br />

Still, the original spirit of honoring the work force remains, and<br />

Labor Day is a paid holiday for most American workers. According<br />

to the U.S. Travel Association, more than half of all working<br />

Americans don’t use all of their paid vacation days. In a country<br />

that works so much, having a day off is an ideal way to celebrate<br />

and recharge for the fall. That, and amazing sales!<br />

When do Labor DAY sales start?<br />

Another tradition of Labor Day in America is the discounts! Labor<br />

Day is on Monday, <strong>September</strong> 6, but Labor Day sales usually<br />

start the weekend before and, in some cases, up to a week in advance.<br />

If you’re in the market for something large like a kitchen<br />

appliance, a washer/dryer, or a mattress, Labor Day is an excellent<br />

time to go shopping because big ticket items often get the most<br />

notable discounts around this time of year.<br />

Can you wear white after Labor DAY?<br />

Wearing white after Labor Day has long been considered a fashion<br />

faux pas. However, no one is certain where the rule “you cannot<br />

wear white after Labor Day” came from.<br />

Some fashion historians say it was pure classist snobbery — a social<br />

more set in place by the American nouveau riche as a way to easily<br />

denote who was wealthy and who wasn’t, because people with<br />

less money could not afford seasonal clothes. Others say that not<br />

wearing white after Labor Day simply came about because Labor<br />

Day marked the end of summer and white was traditionally thought<br />

of as summer-wear. As the weather turned colder, people began to<br />

favor darker clothing, like gray sweaters and dark navy suits.<br />

Over time this trend became fashion tradition. Despite what<br />

fashionistas might say, it’s not a hard and fast rule. Fashion icon<br />

Coco Chanel wore white year-round, so there’s no reason not to<br />

wear your favorite white clothes anytime you please!<br />

The family owned and operated flower shop was started 70 years ago<br />

“Peterson’s Flower Market has been open since 1953. It is a familyowned<br />

business with five generations working for the company,” said<br />

Michael Peterson, the owner of Peterson’s Flower Market. The family<br />

Cardoso has been behind the wheel of Scratch Car for 25 years<br />

(it’s their anniversary) and he relishes the work and the relationships<br />

he’s made. His son Daniel is now in the business, and manager<br />

Fernando Rezende has been there 15 years.<br />

Because Cardoso feels his customers are part of his extended<br />

these cars, they look horrible, and the customer has already paid a<br />

scammer cash out of their pockets. These people follow older people<br />

into parking lots and ask for cash to fix their cars, it’s terrible.”<br />

Cardoso started with one mobile car driving to people’s houses<br />

to fix their cars. Now he has nine employees and does major<br />

auto repairs, minor repairs and paints all makes and models.<br />

Their reputation in the industry is unparalleled for their reasonable<br />

prices, customer service, and drop-off and pick-up<br />

service.<br />

• At 5:30am Hitler’s armies invaded Poland, starting World War<br />

• Delegates from all 12 US states unanimously agree<br />

• The worst terrorist attack in US history occurred when 4 large<br />

passenger jets were hijacked and then crashed into buildings,<br />

killing nearly 3,000 people. Both Twin Towers would fall, and the<br />

• As the Battle of Fort McHenry took place in Baltimore Harbor<br />

• British Prime Minister Neville Chamberlain returned to<br />

England after meeting with Adolf Hitler and proclaimed, “peace<br />

would later invade Poland as well as Czechoslovakia. Chamberlain<br />

The Delray Chamber Nonprofit Council Has<br />

Been Telling Stories Like Never Before All Year!<br />

Today the group is back home at the Delray Beach Chamber of Commerce<br />

Some of the brave NPC Committee leading the group<br />

After a long quiet COVID year, the Delray Chamber’s Nonprofit<br />

Council knew they needed to help local nonprofit<br />

organizations find their voice again. Braving the pandemic,<br />

the council’s leadership committee looked at <strong>2021</strong> and decided to<br />

start meeting -- in person – once again. Launching in January, with<br />

the support of the Arts Garage, this pioneer group gathered and<br />

spread out around this music venue tables to begin telling their<br />

stories again.<br />

Through expert leaders, speakers and supporters, the group started<br />

the journey back to tell who they are, why they exist and how they plan<br />

to continue the outreach they believe in. With the theme of “Telling<br />

Your Story Like Never Before” monthly meetings targeted the art of<br />

storytelling, the renewed need for branding, video & pictures, how to<br />

really use social media, write press releases and tell their story from<br />

the heart. Each new topic renewed the stories that had gone quiet, and<br />

each month brought new recruits. The group continues to grow…..all<br />

with the desire of telling their story again.<br />

Today, with vaccines behind us and new variants before us, our future<br />

seems a bit scary but the story continues to be told. Diana Rosayn,<br />

NPC Chair & Marketing Director for Be Like Brit Foundation shared,<br />

“Despite and in spite of this difficult time we continue to grow and have<br />

incredible impact. Now more than ever, nonprofits are determined<br />

to share their story in a new way. As a committee we came together<br />

wanting to provide our nonprofit community the right support, tools<br />

and templates to reinvigorate and ready their missions. As individuals,<br />

we realized that meeting in-person has truly brought our stories to life<br />

and built a community that confirmed we truly are stronger together.”<br />

The Council will end their year in December with a Story Telling<br />

Competition, allowing participants to write & present a 500-word story<br />

to a panel of judges. A robust prize package will be awarded along<br />

with a special lunch for everyone in attendance. It will be a party celebrating<br />

this brave story-telling journey through <strong>2021</strong>! “As Chamber<br />

liaison for the Nonprofit Council, I have been amazed and honored<br />

to be a part of this pioneer group. Their courage, their mission, their<br />

ability to pivot and adjust is astounding. Always with their mission in<br />

mind, fueled by the needs and the people behind those needs, they<br />

have continued to tell their stories,” said Lynn Van Lenten, Member<br />

Services Director at the Delray Chamber.<br />

And hopefully 2022 will allow them to tell an even better story.<br />

Delights “Down Under”<br />

It’s a long way to travel and currently it’s<br />

‘off limits’ but plan a future trip to Perth,<br />

Australia, it’s a fabulous place to visit.<br />

Let’s face it; Australia REALLY is on the other side of the world!<br />

Travelling times vary but the quickest you will get there is<br />

around 30 hours. However, you could break up the travel<br />

time by stopping off at various destinations on route.<br />

Swan River<br />

Qantas Airline (Australia’s leading carrier) offers flights from Miami,<br />

stopping in Los Angeles, and again in Sydney, Australia before<br />

the last leg of the journey into Perth. So why not take the opportunity<br />

to stroll down Rodeo Drive or visit Mickey at Disney Land? On<br />

your next stop take a trip to visit the famous Sydney Opera House.<br />

Once in Perth you will be met by a picture-postcard city. Situated<br />

on the banks of the Swan River, it is a perfect setting. In summer<br />

(December - February) the weather is fantastic, with temperatures<br />

ranging from 65 degrees to around 86 degrees and over<br />

50 miles of clean, white sandy beaches; Perth’s coastline is ideal<br />

for swimming and surfing.<br />

The city offers a ‘free travel zone’ for buses to get you around, where<br />

you can visit the Perth Mint, Swan Bells Tower, Art Gallery of WA,<br />

Western Australia Museum and many more Perth tourist attractions.<br />

For some spectacular panoramic views of Perth and the river, a<br />

visit to Kings Park and Botanic gardens is a must! Take full advantage<br />

of the many lookout points available to the public or try the<br />

treetop walk for a unique view of the city or just enjoy a relaxing<br />

picnic in one of the many recreation areas of the park.<br />

Visit King Street for some up-market retail therapy, packed<br />

with boutiques, art galleries, eateries, and beautiful people; it’s<br />

the place to be seen!<br />

Just 10 minutes north of the city is Scarborough Beach where you<br />

can fish, swim, surf, skate, and windsurf. If you travel another 10<br />

minutes north, you will find Hillarys Marina. A recreation boating<br />

harbor with restaurants, bars, shops, galleries, and tourist attractions<br />

set on walkways over the Indian Ocean. From here you can<br />

take a 45-minute ferry to Rottnest Island where you can experience<br />

some fantastic diving and snorkeling amongst the coral reefs,<br />

hidden bays, and deserted cycle paths waiting to be explored. The<br />

small marsupial quokka, a bit like a small Kangaroo, only exists on<br />

this island, and in some parts, they have become very tame.<br />

Alternatively, if you head south from Perth you will come to Fremantle.<br />

Fremantle is recognized as the best-preserved 19th Century<br />

seaport in the world! Over 150 buildings in the port city are<br />

classified by the National Trust. These include The Round House<br />

which was built in 1831 and is the oldest public building in W.A.,<br />

The Esplanade Hotel which was built in 1890s, and the Fremantle<br />

Prison which was built by convict labor in the 1850s. You can also<br />

get a ferry to Rottnest Island from here.<br />

Still heading south, you come across the town of Rockingham.<br />

Here there are water sports of all kinds, ocean cruises, camping, sailing,<br />

dolphin encounters, swimming, crabbing, museums, penguin<br />

and seal tours, wine tasting, theaters, golfing…plus much more.<br />

Thirty minutes south of Rockingham you reach Mandurah, where<br />

the heart of the city is arranged around an estuary, crisscrossed<br />

by pleasure boats and pontoon barges, and is alive with cafes and<br />

restaurants dotted along the boardwalks. Follow the meandering<br />

waterways out into the Peel Region, and restaurants, wineries,<br />

historical sites, and many other attractions bring still more variety<br />

and fresh surprises to your Mandurah visit. We spotted some<br />

spectacular homes on the water, and it reminded me of our very<br />

own Intracoastal.<br />

Kalbarri National Park<br />

But of course, no trip to Western Australia would be complete<br />

without a visit into the ‘bush.’ One of WA most popular places is<br />

River. It offers a range of adventure activities like bush walking,<br />

The park is rich in bird life and other animals. Most native mammals<br />

are nocturnal, but you can sometimes see western grey kangaroos<br />

Leader, Communicator, Visionary<br />

Everyone has a role in life. If you ask Emelie Konopka what<br />

hers is she sums it up like this: “My primary roles in life are<br />

wife, mother, and Retail Executive Director.”<br />

But Konopka is clearly modest to a fault. Her role is much less linear<br />

and more comprehensive in all directions.<br />

As someone who started high school at the age of 13 and<br />

graduated at sweet sixteen, Konopka could be considered a brainiac.<br />

She was Valedictorian of her high school class and graduated with a 4.0<br />

grade point. She’s also a classically trained pianist and flutist who performed<br />

in jazz bands and marching bands in high school in Louisiana.<br />

However, music eluded Konopka in her career path. Instead, she<br />

found success as a retail store manager and executive at stores such as<br />

Charming Charlie, Target and New York & Company. Her current position<br />

as Regional Director (of the South) for Rue 21 takes Konopka on<br />

the road more than half the month. But that’s business as usual for this<br />

dedicated retail professional.<br />

Her all-consuming position at Rue 21 and her consulting business<br />

(EDK Strategy consultants) does not deter her from volunteering, nor<br />

from her pursuit of music and culture.<br />

When meeting with Konopka you can see her passion is closely<br />

aligned with the tempo within her grasp. She has two cell phones,<br />

that she alternatively glances at, but she is definitely attuned to the<br />

matter at hand.<br />

Currently, that hand is closely fixated on Old School Square, where<br />

she was recently crowned Chairman of the Board. Not a newcomer to<br />

the OSS territory (and thematic relevance) Konopka was on their Board<br />

of Directors before she was recently anointed Chairman of the Board.<br />

This volunteer position, that carries quite a lot of weight in the organization,<br />

comes with hefty responsibilities. But clearly Konopka is<br />

up to the task.<br />

“I’ve worked very hard in my career to establish myself as a leader<br />

who holds positions that impact and influence others – and being chairman<br />

defines that role,” said the Louisiana native, who was a thespian<br />

and debate champ in school.<br />

Konopka has worked hard. She started out at JC Penney wrapping<br />

gifts in the Women’s Foundation Department as a teen, and now oversees<br />

137 stores in 11 states for Rue21.<br />

Hard work was part of her family dynamics. Her grandmother Vera<br />

showed Konopka that a woman’s role is as expansive as her aspirations.<br />

“My grandmother inspired me. She was a logistics manager at JC Penney,<br />

a wife, mother, artist and volunteer. She was a strong woman.”<br />

Konopka learned from Vera that women can do anything they want<br />

– with the right amount of determination and hard work. That’s the<br />

reason she has worked in some of the most successful retail chains<br />

in the country.<br />

Her resume winds and tilts on a retail axis with words like empowering,<br />

motivating, team collaboration, maximizing strengths and profit in<br />

competitive markets.<br />

But Konopka is equally tethered to the earth by way of her other passions<br />

– cooking, art, music, yoga, mother to Caitlyn and wife to John.<br />

“During Covid I cooked my way through two Julia Child’s Cookbooks.<br />

Cassoulet has become a staple in our house.”<br />

Though her life is a merry-go-round of activity, Konopka is always the<br />

safe port in the storm. “When everything gets chaotic I am the voice of<br />

reason. To be an effective leader you must listen to understand, instead<br />

of listening to respond.”<br />

It is this ability to assess a situation and understand its cause, that<br />

allows Konopka to find solutions to problems and create change. It<br />

also allows her to be a good leader, whether it be a retail store or a<br />

concert venue.<br />

Cornell Museum Director and Curator Melanie Johanson has seen<br />

this talent close up. “Emelie comes with a strong vision for the future<br />

of Old School Square. She has spearheaded our Fall programs with a<br />

collection of Max Weinberg’s photos and memorabilia and is someone<br />

in leadership I can always rely on.”<br />

Konopka was instrumental in creating an upcoming “Night Under the<br />

Stars,” an open house for all venues at Old School Square. She is excited<br />

about adding a commercial kitchen to the renovation mix at the Crest<br />

Theatre so they can do catering and offer culinary classes.<br />

Everyone who has seen Konopka up close in meetings (and discussions)<br />

is impressed with her logic, communication skills, vision, and<br />

compassion.<br />

Elise Johnson Nail is one of them.<br />

“Emelie is smart, dedicated, and an extremely accomplished business<br />

leader and personnel expert. In my decades of business, I have met very<br />

few people with her skill set, empathy, and wisdom. Any organization<br />

would be extremely lucky to have her, and right now that organization<br />

is Old School Square. She is truly inspirational and one-of-a-kind.”<br />

Konopka also created a committee for OSS called Omni. This initiative<br />

will integrate the different venues and mediums of entertainment<br />

that permeate the OSS campus. “We will be creating traffic and footsteps<br />

through what we offer. It is important that we work together and<br />

collaborate as a team to connect with each other.”<br />

The new Chairman of the Board of OSS is also concerned about<br />

young people’s exposure to the arts. “It’s a challenge today for<br />

young people because schools are leaving art and music out of the<br />

curriculum. OSS plays a big role in providing an outlet of expression<br />

for children.”<br />

In her 30-year career in retail Konopka has scaled the heights of<br />

leadership, sales, and management. It is those skills (and more) than<br />

make her the perfect leader for the sustainability and growth of Old<br />

School Square.<br />

“I have visions for Old School Square, not only for the health of the<br />

organization but ways to give back. I always said, ‘if I didn’t have to<br />

work for a living, I would love to lead a non-profit organization.’”<br />

It seems that Konopka is realizing that dream. And those around<br />

her couldn’t be happier.<br />

He dotes on his customers with homemade Italian fare at his<br />

intimate restaurant in Pineapple Grove.<br />

The restaurant, Il Contadino is a place where people<br />

come to celebrate holidays, birthdays or just want to luxuriate in<br />

the pampering and power of a homemade Italian meal.<br />

Menna likes when his patrons call ahead to tell him what foods<br />

they prefer. That way he has time to create the perfect version of<br />

their favorite dishes with élan.<br />

Ken Chiarella came to Il Contadino with his mother Marilyn<br />

(who was celebrating a milestone birthday) and three of his<br />

and fresh, and the flavors are distinct and amazing. Every<br />

time we come here, he asks us what we want, and then he<br />

prepares it beautifully.”<br />

When Ken’s mom Marilyn asked for lamb chops for her birthday<br />

dinner, Menna didn’t have them. But within an hour they<br />

mysteriously appeared in front of her with all the trimmings. She<br />

beamed with delight as her son looked on with amazement and<br />

accolades fit for a prince.<br />

“I have been to the best restaurants in New York and Italy and<br />

Michel is as good as all of them. I always tell the truth; this place<br />

is amazing.”<br />

Others feel the same way. “Do not walk past this place when you<br />

visit downtown Delray. If you’re a true foodie tell Owner/Chef Michel<br />

you want to try the meatball first and you will be blown away!<br />

Then enjoy dinner and very fine wines! Support your local chef,<br />

there’s no one better!”<br />

Some of the dishes that Ken and his guests (Sam and Judy Maruca)<br />

had are steeped in Italian tradition and prepared artfully and<br />

tastefully. They raved about the artichoke hearts basted in garlic<br />

with a wine sauce, sprinkled with Reggiano cheese. As lovers of<br />

homemade Italian food, the group feasted on Zuppa di Mussels in<br />

a light tomato sauce with clam broth, as well as Cowboy Rib-Eye<br />

Cooking has been a passion of Menna’s since he was a tot. When<br />

his parents were away, he would go into the kitchen and create<br />

gourmet dishes for them. “My parents would come home and say,<br />

‘who catered this meal.’ I could barely reach the stove, but I loved<br />

cooking, it’s always been my creative outlet.”<br />

His guests can tell. “This pasta made me feel like I was in Italy.<br />

We have been here so many times and it’s always wonderful,” said<br />

Maruca. His wife Judy was all smiles as the spaghetti with anchovies,<br />

garlic, olive oil, and breadcrumbs came to the table.<br />

One of Menna’s finest dishes is his tequila tortellini, prepared<br />

tableside in a flame-lit pan that sparks the tequila to adhere to the<br />

creamy light sauce. Add that to the peas, prosciutto, and Reggiano<br />

cheese, and you have a delicious pasta that hails from the greats.<br />

It seems Michel is always on the prowl for new dishes and new<br />

experiences. After all, he has been in the restaurant business for 40<br />

years. Just recently he tasted potato latkes from another restaurant.<br />

Not impressed he quickly got out his frying pan and tried his hand<br />

at this ethnic dish. What he came up with is a potato latke lover’s<br />

dream. Tasty, crispy, and fresh, they seemed to disappear as quick as<br />

they came to the table. He also added sour cream to the center fold.<br />

For Marilyn’s birthday, Menna cooked up a rack of lamb with<br />

roasted garlic and rosemary. It was a dream dish, she said. And she<br />

ought to know. The Boynton Beach resident cooked delicious authentic<br />

Italian meals for her family for years.<br />

For Michel time does not stop. Though the restaurant business<br />

has been hard hit by the pandemic he continues to experiment in<br />

new ways to please guests. “I will be open for breakfast if people<br />

want me to. I make great omelets with fresh vegetables and other<br />

style egg dishes. People just have to call me.”<br />

Menna is also making fresh pizzas with all the trimmings of the<br />

pizza heritage. There is a difference between pizza and homemade<br />

pizza, and Michel wants to show everyone the difference. Also<br />

new at Il Contadino are fresh paninis and wraps with meats, fresh<br />

cheese, lettuce and tomato.<br />

Other outstanding dishes are Pork Osso Bucco that is braised all<br />

day with tomatoes and vegetables as well Mozzarella En Carrozza.<br />

If you are a fish lover, try the whole Branzini, baked with garlic and<br />

wine, delicately cooked.<br />

If you are celebrating a special occasion Menna will prepare<br />

homemade dishes for as many people can fit inside this intimate<br />

space. He also has over a thousand different wines from around the<br />

globe waiting to be opened.<br />

The Chiaprella and Maruca clan had a bottle of Napa Valley Eagle<br />

Eye red wine that was divine. Full-bodied and smooth to the palate,<br />

it was an excellent choice. Whatever your wine preference is,<br />

Menna will make it happen.<br />

That might be another reason people love dining there. “Michael<br />

and his staff take the farm to table concept to new heights. I had<br />

Eggplant Napoleon, wow. A fresh and delicious take on eggplant<br />

rollatini. His presentation of veal cutlet with eggplant gave new life<br />

to an old favorite – it was amazing. Topped it off with cannoli and<br />

cappuccino. Best ever. This place is the real deal,” said Doug.<br />

It’s comments like Doug’s that makes Michel smile. It is also what<br />

makes his passion flame – not only table side – but inside his heart.<br />

<strong>September</strong> is National<br />

Fruit and Vegetable month!<br />

Let’s have fun with creative ways to prepare some<br />

of our local fresh produce! Head on over to our local<br />

GreenMarket and pick up fresh fruits and veggies!<br />

Corn! Grill it, steam it,<br />

boil it, eat it on the cob:<br />

Nothing beats fresh corn.<br />

Butter Boiled Corn<br />

Ingredients:<br />

6-8 ears of corn, shucked<br />

1 stick of butter<br />

1 Cup of milk<br />

Salt to taste - optional<br />

Directions:<br />

Fill a large pot about halfway with water. Bring<br />

water to a boil. Add milk and butter. Add corn<br />

and reduce heat. Simmer corn for 6 to 8 minutes<br />

Remove corn from cooking liquid and its ready<br />

to serve.<br />

Corn Spoon Bread<br />

Ingredients:<br />

3 cups whole milk<br />

2 cups fresh corn kernels or one 10-ounce package<br />

frozen corn, thawed<br />

3/4 cup finely ground cornmeal<br />

2 tblspoons unsalted butter, plus more for the dish<br />

1 tablespoon fresh thyme leaves<br />

1 1/2 teaspoons kosher salt<br />

1/4 teaspoon black pepper<br />

2 large eggs, lightly beaten<br />

Directions:<br />

Heat oven to 350° F.<br />

In a large saucepan, over medium heat, bring 2<br />

cups of the milk and the corn to a boil.<br />

In a small bowl, whisk together the remaining<br />

milk and the cornmeal. Whisking constantly,<br />

slowly add the mixture to the boiling milk. Reduce<br />

heat and simmer gently, stirring frequently,<br />

for 3 minutes. Remove from heat. Stir in the butter,<br />

thyme, salt, pepper, and eggs.<br />

Transfer to a buttered casserole or cast-iron skillet.<br />

Bake until golden and set, about 30 minutes.<br />

Serve warm or at room temperature.<br />

Ingredients:<br />

1 tablespoon vegetable oil<br />

1 head cauliflower<br />

1½ cups plain Greek yogurt<br />

1 lime, zested and juiced<br />

2 tablespoons chili powder<br />

1 tablespoon cumin<br />

1 tablespoon garlic powder<br />

1 teaspoon curry powder<br />

2 teaspoons kosher salt<br />

1 teaspoon black pepper<br />

Directions:<br />

Preheat the oven to 400° and lightly grease a<br />

small baking sheet with vegetable oil. Set aside.<br />

Trim the base of the cauliflower to remove any<br />

green leaves and the woody stem.<br />

In a medium bowl, combine the yogurt with the<br />

lime zest and juice, chili powder, cumin, garlic<br />

powder, curry powder, salt and pepper.<br />

Dunk the cauliflower into the bowl and use a<br />

brush or your hands to smear the marinade evenly<br />

over its surface. (Excess marinade can be stored<br />

in the refrigerator in an airtight container for up<br />

to three days and used with meat, fish or other<br />

veggies.)<br />

Place the cauliflower on the prepared baking<br />

sheet and roast until the surface is dry and lightly<br />

browned, 30 to 40 minutes. The marinade will<br />

make a crust on the surface of the cauliflower.<br />

Let the cauliflower cool for 10 minutes before<br />

cutting it into.<br />

Buffalo Cauliflower<br />

Ingredients:<br />

Olive Oil cooking spray<br />

3/4 cup baking flour<br />

1 cup water<br />

1/2 teaspoon garlic powder<br />

Salt and pepper to taste<br />

2 heads of cauliflower, cut into bite size pieces<br />

2 table spoons butter<br />

1/2 cup Franks Red Hot Buffalo Sauce<br />

1 teaspoon honey<br />

Directions:<br />

Preheat oven to 450 degrees. Lightly grease a baking<br />

sheet with cooking spray.<br />

Mix flour, water, garlic powder, salt and pepper<br />

together in a bowl with a whisk until batter is<br />

smooth and a bit runny. Add cauliflower to batter<br />

and mix until cauliflower is coated. spread onto<br />

baking sheet.<br />

Bake in the preheated oven until lightly browned,<br />

20-25 minutes.<br />

Melt butter in a saucepan over medium heat.<br />

Remove saucepan from heat and stir in hot sauce<br />

and honey into butter until smooth. Brush hot<br />

sauce mixture over each piece of cauliflower until<br />

all mixture is used.<br />

Bake until cauliflower is browned, about 10 minutes.<br />

Remove from oven and let cauliflower cool<br />

10-15 minutes.<br />

tasty fruit. A simple boozy<br />

blueberry sauce makes<br />

this a grown up treat!<br />

Blueberry Gin<br />

Sundaes<br />

Ingredients:<br />

1 cup of fresh blueberries<br />

1/3 cup Gin<br />

1 pint vanilla ice cream<br />

4 waffle bowls<br />

Mint for garnish<br />

Directions:<br />

In a small saucepan combine blueberries and Gin.<br />

Simmer, stirring frequently until berries burst<br />

and mixture begins to thicken - about 5-8 minutes;<br />

let cool.<br />

Divide one pint of ice cream among 4 bowls evenly<br />

and top with sauce. Garnish with mint.<br />

Lemons are one of my<br />

favorite fruits! I use it in<br />

vineagrettes, drinks, and<br />

desserts. Here’s one of<br />

my favorite ways to enjoy<br />

this sweet tart fruit.<br />

Lemon Garlic Pasta<br />

Add in cooked chicken, shrimp, or steamed broccoli<br />

for a complete meal!<br />

Ingredients:<br />

1 lb angel hair spaghetti<br />

4 large garlic cloves, minced<br />

1/2 to 3/4 teaspoon dried hot red pepper flakes<br />

1/2 cup extra-virgin olive oil<br />

Finely grated zest from 2 lemons<br />

3 tablespoons fresh lemon juice<br />

1 1/2 teaspoons salt<br />

1/2 teaspoon black pepper<br />

1/2 cup chopped fresh flat-leaf parsley<br />

Directions:<br />

Cook pasta in a 6-quart pot of boiling salted water<br />

until al dente. Reserve 1 cup cooking water and<br />

drain pasta in a colander.<br />

While pasta is boiling, cook garlic and red pepper<br />

flakes (to taste) in oil in a 12-inch heavy skillet<br />

over moderate heat, stirring, until garlic is golden,<br />

about 5 minutes. Stir in zest, then juice, salt,<br />

pepper, and 1/2 cup reserved cooking water and<br />

bring to a simmer.<br />

Toss pasta in sauce with parsley. (Add more cooking<br />

water if pasta seems dry.)<br />

What is a Proper Diet and<br />

How Does My Pet Change with it?<br />

Most pet parents want to do the very best for their beloved<br />

pets. We observe many pets with designer collars and leads,<br />

pricey fashion apparel, special beds for their morning and<br />

afternoon naps (as some sleep in their parent’s bed at night), luxury<br />

visits to the grooming spa and daycare for playtime. Pet owners spare<br />

no cost to keep pets happy and healthy including costly medical care<br />

and premium foods.<br />

With thoughts that we are doing the very best for our pets, we<br />

should all consider this: unlike their ancestors in the wild, our pets<br />

are experiencing shorter life spans with many more health issues<br />

than previous generations. Cancers, liver and kidney issues, autoimmune<br />

disorders, chronic allergies including skin and coat issues, ear<br />

and anal gland problems, yeast and urinary infections, and finally joint<br />

and pain issues plague our beloved pets. What is behind this trend of<br />

dysregulation of the healthy body and causing what the medical community<br />

describes as disease?<br />

In the natural health community, we are always looking beyond<br />

the symptoms and see the causes of this health dysfunction. We start<br />

with the most basic of premises that all disease has only two basic<br />

core causes - deficiency (malnutrition) and toxicity (poison). With that<br />

knowledge, natural health professionals start the search by evaluating<br />

your pets’ and even your own lifestyle to find where the toxins are<br />

coming from and the quality of the foods that are consumed.<br />

Often, it is only after a diagnosis of health challenges and costly testing<br />

and treatments that result in marginal, little, or no cures, that food<br />

is then looked upon. At that point, veterinarian approved, formulated<br />

pet foods are recommended which at times the pet won’t even eat.<br />

After jumping from formula to formula many pets only acquire short<br />

term results.<br />

Pet owners are often put into conflict between following medicinal<br />

advice based on the pharmaceutical model of medicine or natural<br />

health, based in nature, species appropriate diet entrees that include<br />

botanical, earth and herbal foods. Healing is never about a single solution,<br />

drug, food, herb or therapeutic approach. It involves the integration<br />

of many components of multiple modalities.<br />

The fundamentals begin at the cellular level with feeding every cell in<br />

the body with the proper species appropriate nutrition and not killing<br />

or altering those cells with toxic or synthetic substances that the body<br />

will reject. Every food product has a direct effect on growth and nourishing<br />

at the cellular level which is necessary for health and healing.<br />

In Traditional Chinese Medicine (TCM) it was recognized that you<br />

treat “like with like.” As the body is constantly replacing cells, we<br />

should be creating healthy new cells. If you are suffering from a heart<br />

problem, the nutritional profile of heart meat will duplicate in the reproduction<br />

of new healthy heart cells. Same is true with all the major<br />

body function centers.<br />

If your pet was already changed to a real whole raw or home cooked<br />

food diet, what changed and how quickly did you see them? Were you<br />

discouraged from following this path but saw the results with your<br />

own eyes? Yes, it takes time to cleanse the body and understand some<br />

minor challenges. It’s worth it to watch your pets heal and thrive with<br />

a health and vitality extended life.<br />
