Instructions<br />
1. Putthe beefinashallowbowl, addthe peppers,onion, garlic, fajitas<br />
seasoning, half the limejuice andoil.Mix andset aside.<br />
2. To prepare thesweetcorn salsa, mix allthe ingredients together.<br />
Season,ifrequired.<br />
3. Heat alarge non-stick fryingpan andcook thebeefmixturefor<br />
3-4minutesoruntilthe beef and vegetables caramelise. Warm the<br />
tortillas in microwave.<br />
4. To assemblethe fajitas, put some salsaonthe base of each tortilla,<br />
then topwiththe beef andvegetablemix.Sprinkle overthe herbs,<br />
roll up andserve withthe extrasides.<br />
