Mother. Daughter. Angel. Monster? When Lisa Jewel, one of our favourite authors,<br />

endorses a book, saying ‘Set my nerves jangling,’ you know it’s a not-to-be-missed<br />

Sisters doing it<br />

for themselves<br />

Starting a business midst a pandemic and economic gloom. Crazy or brave?<br />

For sisters Chantal le Roux and Monica D’<strong>May</strong>e it was a bit of both.<br />

And today, these baking entrepreneurs are smiling from ear to ear.<br />

Lockdown saw many of us spend<br />

much more time in the kitchen than<br />

before … whipping up banana bread,<br />

fudge, scones and treat galore. So<br />

no surprise that that’s exactly what<br />

Chantal le Roux and Monica D’<strong>May</strong>e<br />

did too. They baked to their hearts’<br />

delight. So much so that family and<br />

friends kept on saying that they should<br />

turn this hobby into a business. And<br />

the seed was planted.<br />

‘One of our cousins, who knows how<br />

much we love baking, showed me an<br />

Instagram page that was trending in<br />

Australia - one with delicious looking<br />

treats,’ says Chantal.<br />

‘There were the most gorgeous gift<br />

boxes filled with baking treats, then<br />

cakesicles, smash hearts and geode<br />

art. She thought it was worth it for us<br />

to try our hand at. That was just the<br />

encouragement we needed. I asked<br />

Monica if she would like to join me in<br />

this venture. Of course, she said yes!<br />

And the excitement, planning and<br />

dreaming started in July.<br />

‘There was some worried looks, frowns<br />

and comments from suppliers asking<br />

us if we are really sure about this new<br />

venture. The world is going through a<br />

pandemic, businesses were closing, so<br />

it may not be the best time to start a<br />

business in baking. Right? Wrong. We<br />

couldn’t think of a better time.’<br />

The two sisters spent weeks<br />

researching, watching an enormous<br />

amount of Youtube videos to get<br />

ideas for their own look and feel. They<br />

ordered moulds from the UK and it<br />

was cooking game on.<br />

‘There was some organised chaos ... my home was constantly filled with baked<br />

treats that needed to be photographed for our website and social media.<br />

But when we started posting our creations, the response was overwhelming.<br />

Apart from our family and friends, who always supported us, we now had<br />

people interested and ordering.’<br />

The name of their business was inspired by their love for Europe, especially<br />

France. They always had a dream to open a little coffee shop and bakery on a<br />

sidewalk in Paris. ‘We wanted something different and French. So, we made a<br />

shortlist and La Pâtisserie Fantastique won.’<br />

When you see the gorgeous treats these two sisters create you’d be surprised<br />

to hear they have no formal training. They did use to help their mother, who<br />

used to make wedding or special occasion cakes, but that’s it! Both stay-athome<br />

moms for the past year, Chantal originally comes from a corporate<br />

background and still owns a carpet and upholstery cleaning company, Monica<br />

was a nursery school teacher and, for a while, a flight attendant.<br />

Of starting up a business, Monica says ‘Patience and perseverance are two key<br />

elements you need. ‘We learn something every single day, always trying new<br />

things and recipes. There is no room for failure, we put in everything we have<br />

and redo it if necessary until it is perfect. Chantal once made six batches of<br />

macarons in one day just to get five perfect macarons. People tend to think<br />

baking is easy, it most definitely is not. It is a science. For instance, humidity<br />

plays a huge role … it can destroy a whole batch of macarons. Something<br />

we’ve learned the hard way.<br />

‘You get your off days which, believe it or not, can influence your baking.<br />

Fortunately, when one has a ‘bad day, the other one can step in. Where Chantal<br />

lacks, I can make up for it and vice versa.’<br />

Working so close together every day, sure some sibling squabbling might<br />

happen? ‘We just have a good go at each other, cry and then make up. We<br />

know and respect each other’s boundaries. And if all else fails, we just open a<br />

bottle of bubbly!’<br />

The secret to their success? ‘With all the doom and gloom in the world, we<br />

just want to give people something bright and sweet. People’s outlook on<br />

life changed … they’re desperately looking for happy moments, colourful<br />

moments and moments of sweet delights to forget about reality for a little<br />

while. So that is exactly why we aim to create beautifully edible items that look<br />

like art but tastes amazing.’<br />

C: Chocolate lava cake – I appear hard on<br />

the outside, but I’m soft and squishy on the<br />

inside.<br />

M: A macaron – they are a complete pain<br />

to make, but once you get the knack of it,<br />

it is pretty simple. I seem very complicated<br />

and full of nonsense, but I’m actually pretty<br />

simple and easy-going.<br />

Kitchen equipment you use the most?<br />

C: My bright red mixer.<br />

M: My blender – I love to make smoothies.<br />

What do you say to your kids that your<br />

mother used to say to you?<br />

C: When my kids ask me why? I sometimes<br />

reply, BECAUSE I SAID SO.<br />

M: The phrase, ‘these kids …’ comes to<br />

mind.<br />

Most important lesson learned from<br />

your mother?<br />

C: Push through the hard times, you are<br />

always stronger than you think.<br />

M: Never give up, and you get what you<br />

give. So be nice, always!<br />

Falafel salad bowl & a glass of Shiraz<br />

Here’s a vegetarian feast, packed with flavour and<br />

texture, that’s the perfect dish for late Autumn<br />

lunch. Make the falafel mix ahead, roll into balls<br />

and refrigerate until you’re ready to drop them<br />

into hot oil. The herby yoghurt dressing provides a<br />

cool, creamy coat that ties everything together in a<br />

bright yet comforting way. Enjoy this with the sleek<br />

Spier Seaward Shiraz.<br />

Note: The chickpeas and beans need overnight<br />

soaking, so prep a day ahead. If you prefer not to<br />

use a mixture of chickpeas and beans, use two cups<br />

of chickpeas. This recipe serves four to six people.<br />

For the falafels, you’ll need: 1 cup dried chickpeas; 1<br />

cup dried beans (split broad beans, butter beans<br />

or heerenbone); water, for soaking; half an onion,<br />

roughly chopped; 30ml (2 Tbsp) lemon juice; 20g<br />

each parsley and coriander leaves; 3 garlic cloves;<br />

5ml (1 tsp) each of ground coriander, ground cumin<br />

and salt; 1ml (¼ tsp) each of ground nutmeg and<br />

ground cinnamon; 2.5 ml (½ tsp) baking soda;<br />

vegetable oil, for frying<br />

Method: Place the chickpeas and beans in a bowl<br />

and cover with water. Leave to soak overnight (8 to<br />

12 hours). Drain, then add to a food processor with<br />

the onion, lemon juice, parsley, coriander leaves,<br />

garlic, coriander, cumin, nutmeg, cinnamon, salt<br />

and baking soda. Process until you have a relatively<br />

smooth paste, scraping the sides. There should still<br />

be some texture — you don’t want a complete<br />

mush. Refrigerate for 15 to 30 minutes, then roll<br />

into balls with a diameter of about 4cm. Heat the oil<br />

over moderate heat. Fry the falafels in batches until<br />

golden brown. Remove with a slotted spoon and<br />

drain on kitchen paper. Serve immediately with the<br />

salad bowls and yoghurt dressing (see below).<br />

For the herbed yoghurt dressing, you’ll need: 3/4 cup<br />

Greek yoghurt; 15 to 30ml lemon juice; handful<br />

each of fresh parsley and fresh chives; 5ml Dijon<br />

mustard; salt and pepper<br />

Method: In a blender, add the yoghurt, lemon juice,<br />

herbs and mustard. Season with salt and pepper,<br />

then blend until smooth. Refrigerate until ready to<br />

use then serve with the falafel bowl.<br />

For the salad bowls, you’ll need: a bunch fresh<br />

salad leaves; shredded carrot and/or beans; some<br />

roasted vegetables of your choice (like cauliflower<br />

or aubergine), optional; pickled onions; freshly<br />

fried falafels; yoghurt dressing; sesame seeds<br />

for sprinkling<br />

Method: Arrange the leaves, vegetables, pickled<br />

onions and falafels in bowls. Top generously with<br />

yoghurt dressing and a sprinkle of sesame seeds.<br />

Serve with a glass of Spier Seaward Shiraz – a<br />

tall, dark and handsome Shiraz which also cuts a<br />

delicious dash when served with grilled meats or a<br />

going to be a delicious <strong>May</strong>.<br />

Tapas. Small, tasty dishes packed with big flavours and<br />

designed to share with friends, passing plates around<br />

the table for a little taste of everything. Local author<br />

Chantal Lascaris was inspired by her trips to Spain, and<br />

the bustling Spanish tapas bars and pintxos bars of San<br />

Sebastian. In All Sorts of Tapas, you’ll find delicious<br />

dishes that bring to life the richness of Spain’s flavours,<br />

with a few from South Africa, too. There’s everything<br />

from breakfast tapas (salami, egg and chips pintxos) to<br />

gazpacho shooters (served with tiny cheese toasties<br />

on the side). From delicious stuffed artichokes with<br />

caramelised onions to bite-sized cheesy herb muffins<br />

with peppadew cream. From arancini with truffle dip<br />

Rainbow nation slaw<br />

This is one of the recipes from The Flexitarian Foodie – Real<br />

Food – Conscious Living by Jax Moorcroft, a collection of<br />

proudly South African, budget-approved and family-friendly<br />

recipes which proves that eating and living an eco-friendly<br />

lifestyle doesn’t have to be complicated and expensive, but<br />

it does improve our health and that of the planet. Oh … and<br />

If you have a food processor lurking in the back of a cupboard<br />

somewhere, now is the time to dust it off and use it. This<br />

salad is super easy and quick if you can just whizz everything<br />

through the chute and save yourself some elbow grease.<br />

Otherwise, a grater will work just fine, doesn’t use electricity<br />

and gives your arms a great workout! Serves four.<br />

You’ll need: 1 red cabbage, outer leaves removed, and grated; 3<br />

carrots, peeled and grated; 1 broccoli head, grated; 1 red and 1<br />

yellow pepper, grated; 1 pineapple, peeled and grated; 2 cups<br />

baby spinach, finely chopped; 1/2 cup dried cranberries; 2/3<br />

cup no-nasties mayo; 1/ 2 cup fresh blueberries<br />

Method: Combine all the ingredients in a large glass bowl,<br />

adding the mayo and blueberries just before serving otherwise<br />

the pineapple juice might affect the texture of the mayo.<br />

Rosé as a wine style is currently one of the most popular<br />

Garden tasks for <strong>May</strong><br />

• There is still time to plant Spring bulbs<br />

If you have ordered tulips, plant them<br />

as soon as possible after they arrive.<br />

• Water Winter annuals at least once a<br />

week and give them a weekly feed with<br />

a liquid fertiliser to keep them flowering.<br />

• Train climbing sweet peas up their<br />

supports and check for aphids. Use an<br />

organic insecticide or soapy water (but<br />

not too strong a mixture).<br />

• Trays of pansies, violas and primulas<br />

can all still be planted out.<br />

• Pelargoniums, succulents, cacti, ferns,<br />

agapanthus, and day lilies can receive<br />

less water but don’t let camellias and<br />

azaleas dry out or their Spring flowers<br />

will be affected.<br />

• This is a good time to plant flowering<br />

shrubs like abelia, buddleia, Cape<br />

honeysuckle (Tecoma capensis),<br />

Calliandra, escallonia, may (Spiraea),<br />

Mackaya bella, and viburnum.<br />

• If you are in a frost belt, stock up on frost<br />

cloth and watch the weather report.<br />

• Pot up some of your favourite<br />

perennial herbs and pop them in a<br />

sunny sheltered area.<br />

• Go on a snail blitz and get rid of<br />

snails that are overwintering in<br />

old pots or among the clumps of<br />

perennials. Put out snail bait or traps<br />

to protect young seedlings.<br />

Veggie of the month - broad beans<br />

One of the easiest Winter crops to grow is broad beans, and<br />

it likes the cold, which encourages it to set pods.<br />

Broad beans are sturdy upright growing plants, about 1m<br />

high, which are rarely bothered by pests or diseases. From<br />

seed sown in <strong>May</strong> you should be able to start harvesting<br />

from the end of July or early August through to late<br />

September or October.<br />

They may be easy, but they’re heavy feeders, needing wellcomposted<br />

soil with additional fertiliser (2:3:2 or 3:1:5). And<br />

while they grow in all kinds of soil, they do need full sun and<br />

shelter from the wind.<br />

Sow seeds directly into the soil where the plants are to<br />

mature, keep them moist during germination and then<br />

water regularly once the seedlings have germinated. As they<br />

grow, the plants will need to be staked.<br />

Beans should be ready for harvesting within 12 to 16 weeks.<br />

The pods are ready for picking when they have filled out<br />

and before they burst open.<br />

Fresh beans have a delicious earthy flavour that fits in well<br />

with Winter cooking, in stews, casseroles and soup. And<br />

being a legume, the broad bean is an excellent source of<br />

high-quality plant protein.<br />

WHAT’S A WEDDING WITHOUT<br />

While the coronavirus pandemic has changed what<br />

gatherings are like now, some timeless wedding<br />

elements can’t be replaced - like the cake.<br />

CAKE?<br />

With trends changing every year, the overarching theme influencing<br />

what marriage celebrations will look like in the next year is<br />

intentionality and personality. As couples trade large parties for<br />

more intimate minimums and micro weddings, cake is one wedding<br />

element that offers some semblance of normalcy.<br />

While <strong>2021</strong> won’t necessarily see large, tiered confections like in<br />

previous years, cake aficionado Zolita Harper of Zolita’s Couture Cakes<br />

& Confectionery, says you can expect to see pre-packaged desserts,<br />

thoughtfully designed cutting cakes, new creative techniques and<br />

personal details that truly put the emphasis on the newlyweds. She<br />

breaks down wedding and cake trends that are unlike anything we’ve<br />

seen before.<br />

MICRO WEDDINGS AND MACRO WEDDINGS<br />

The tiny wedding is popular right now. With fewer guests than 80<br />

weddings are being held in more intimate settings, allowing for a<br />

larger budget to be spent on more opulence in areas like flowers,<br />

food and cake, and allow couples to really spoil their guests.<br />

With many weddings having been postponed, bridal couples have<br />

had extra time to save, some are adopting the go big or go home<br />

approach by hosting large weddings (province and protocol<br />

permitting) in excess of 150 people.<br />

These two trends have had a marked effect on the wedding<br />

cake industry.<br />

Micro weddings<br />

Slimmer, multi-tiered cakes with a distinct theme of modern art<br />

and geometric design. We are seeing taller, smaller cakes as well as<br />

floating tiers.<br />

Non-cakes, such as doughnut cakes, croquembouches or<br />

macaron towers. These are becoming increasingly popular with<br />

brides opting for something different, that doesn’t include cake alone.<br />

This also works well for the smaller guest list as portioning items like<br />

doughnuts, French macarons and profiteroles are much neater than<br />

cutting up cake. Even cheese wheels and large pies are being tiered<br />

and displayed as cake. These are used either before the reception or<br />

late at night as an alternative to a sweet treat. Brides are opting for the<br />

kinds of treats that are really tapping into the true patisserie’s talents.<br />

Mixed or alternate tiers of cakes and treats. We are also seeing the<br />

combination of these treats with cakes. Doughnuts, with cake bases<br />

or top tiers. Cakes with French macarons or profiteroles. This is quite<br />

creative and can be displayed very elegantly or have a funky fun twist.<br />

Plated desserts or mini cakes are particularly popular at micro<br />

weddings, adding a personal touch that is being created with plated<br />

meals and individual servings.<br />

Macro weddings<br />

While micro weddings also incorporate some<br />

of the trends above, we are seeing the trends in<br />

larger cakes mostly at larger celebrations, where<br />

brides and grooms want to make a statement.<br />

Tall buttercream cakes are being commissioned<br />

in pale colours, or white with buttercream palette<br />

flowers and other subtle embellishments, making<br />

them very magical and whimsical.<br />

We are also seeing the return of watercolour cakes,<br />

with beautiful sugar flowers being commissioned.<br />

This is a real treat for the true sugar artist.<br />

There are definitely trends that are making a<br />

comeback, and some that are relatively new, but<br />

all of these emerging trends are making for a very<br />

interesting <strong>2021</strong> wedding scene.<br />

paradise<br />

Miles and miles of pristine, untouched<br />

There’s a marvellous sense of<br />

excitement as you make your way<br />

along the rural, sandy roads towards<br />

Thonga Beach Lodge. The lodge is<br />

situated near the village of Mabibi<br />

on the remote Maputuland coast of<br />

KZN and, as you approach, glimpses<br />

of Lake Sibaya, South Africa’s largest<br />

freshwater lake, peep through the<br />

forest, adding to the anticipation.<br />

It’s not an easy drive (a 4 x 4 transfer<br />

from Sodwana is available and<br />

recommended), but the reward at the<br />

end of the bumpy journey is more<br />

than worth it.<br />

Situated in the Isimangaliso Wetland<br />

Park (a UNESCO World Heritage Site),<br />

Thonga is a hidden treasure and one<br />

of Isibindi Africa’s most sought-after<br />

destinations. This 12-room luxury<br />

beach lodge has every lavish comfort<br />

you could want, while still maintaining<br />

a wonderful sense of contemporary,<br />

rustic ‘wildness’. It really is, as the<br />

sign at the entrance says, ‘a civilised<br />

distance from civilisation’.<br />

The ocean view rooms, with open plan<br />

bathroom and private deck, are magnificent<br />

a world of five-star service and wonderful spoils. The lodge manages to be<br />

indulgent without being pretentious and the staff are friendly and available<br />

without being intrusive, allowing you space to truly relax and enjoy your getaway<br />

at your own pace. Tucked away in the indigenous coastal bush, just metres<br />

from the ocean, the thatched rooms are positioned for maximum privacy and<br />

minimum environmental impact, each one built on a raised platform and kitted<br />

out with everything you could want or need on a beach holiday. There are both<br />

ocean and forest view rooms and the deluxe ocean view rooms even have<br />

their own private plunge pools. The family rooms have two separate bedrooms,<br />

perfect for those travelling with younger children. It truly does feel like a forest<br />

hideaway and the wooden pathways that lead from the main lodge and

restaurant area to the rooms, plunge pools, spa and marine centre offers a<br />

wonderful opportunity to spot the odd little turtle hiding away in the bush or<br />

magnificent golden orb spider weaving its massive web. As one would expect<br />

from a lodge of this calibre, the food is both plentiful and of excellent quality.<br />

Every meal feels like an occasion and every effort is made to ensure all dietary<br />

requirements are met. Beautiful platters of fresh fruit, cheeses, cold meats and<br />

pastries adorn your table each morning, serving only as a precursor to the<br />

hearty full breakfast with all the trimmings that are to come. Lunch on the<br />

deck is a wonderful mini-buffet served on individual tiered stands at your table,<br />

comprising a variety of hot and cold dishes, and dinners are glorious threecourse<br />

affairs, with a choice of two starters, mains and desserts. Children, too, are<br />

given a choice between two main courses and desserts and parents can choose<br />

to let them eat earlier or at the same time as them.<br />

Adventures and experiences<br />

Whether you are looking for adventure or relaxation – or a little of both – there<br />

are activities and experiences aplenty. Wake up early, grab a coffee and saunter<br />

down to watch the sunrise on the beach (or lie-in if you prefer) and thereafter it’s<br />

up to you how much you would (or wouldn’t) like to do. Regarded as one of the<br />

best snorkelling sites in South Africa, snorkelling in Mabibi is a must. The lodge’s<br />

rockpool is vast and filled with thousands of species of tropical fish, octopus,<br />

moray eels and electric rays and their PADI dive centre is stocked with all the<br />

equipment you need. The staff are knowledgeable and helpful and everyone is<br />

welcome, from beginner to veteran. If you prefer to stay on land, a phenomenal<br />

evening turtle tracking experience is available (during turtle season) as well as<br />

bird watching and forest walks. Sundowners can be enjoyed alongside Lake<br />

Sibaya (6km from the lodge), where you can watch hippos frolic and pied<br />

kingfishers chase down their dinner with a G&T in hand. The more adventurous<br />

can enjoy an early morning kayak trip on the lake or an open ocean experience<br />

complete with an exciting surf launch (there is an additional cost for this). Of<br />

course, no luxury holiday is complete without a little pampering … and the spa<br />

at Thonga offers a wide variety of treatments and seaside spa spoils to rejuvenate<br />

and relax.<br />

A sense of community<br />

One of the most remarkable things about this particular Isibindi Africa lodge,<br />

though, must be its incredible, heart-warming connection to the village of<br />

Mabibi. It is a wonderful example of a development that has successfully married<br />

local community and private sector<br />

and it is clear, when you speak to<br />

them, that the staff who live in the<br />

village and work at Thonga (more<br />

than 80% of the lodge’s staff are from<br />

the community) are incredibly proud<br />

of their home and the work they<br />

do here. Isibindi does a significant<br />

amount of relief work in the area<br />

(including launching a massive<br />

feeding programme during Covid-19<br />

lockdown), as well as assisting with<br />

teaching staff and upgrading and<br />

maintenance of the local primary<br />

school.<br />

Whether you’re taking the short drive<br />

from Durban or are travelling from<br />

further up-country, a visit to Thonga<br />

Beach Lodge should be on everyone’s<br />

beach holiday bucket list. There is no<br />

doubt that during these uncertain<br />

times, trips to remote, untouched,<br />

hidden gems like this are invaluable<br />

and, with all the correct Covid<br />

protocols in place, you’ll feel safe and<br />

secure as you escape and relax in this<br />

piece of coastal paradise.<br />
