Ahhh <strong>October</strong>…<br />

Iabsolutely love this month!<br />

As a huge fan of pumpkin everything (who isn’t?) I have<br />

shared some of my favorite pumpkin recipes – from a martini,<br />

to soup and more! There are also spooky inspired recipes to fill<br />

a goblin’s belly before heading out to trick-or-treat. Inside this<br />

issue we also have the CDC guidelines for a safe Halloween.<br />

Downtown Delray Beach is having some great (and safe) Halloween<br />

Festivities for all. Whether you choose to participate live or virtual,<br />

the Achievement Centers for Children and Families has great events<br />

planned – Witches Brew, Quiz Ride, a Witches hat decorating contest,<br />

and more! Read all about it in Gotta Know.<br />

<strong>October</strong> is Breast Cancer Awareness Month - a cause near and dear<br />

to me. Early detection saves lives. The Mammo Van will be in our<br />

town on the 29th offering low cost mammograms, as well as financial<br />

assistance, and they accept insurance. Read about the details in Locals<br />

Only – appointments are necessary.<br />

We are very lucky to have no shortage of incredible people to feature<br />

as our City Person. Every month I say, “this human is my favorite,” only<br />

to be blown away by the next – and Roy Simon is no exception. He is<br />

Delray Beach. His grandfather immigrated here from Lebanon in 1911<br />

when the population was a mere 2000 people. Since then, he has built<br />

many of the buildings and homes in our beloved Village by the Sea, and<br />

tirelessly serves our community. Amazing.<br />

Celebrate Lantern Festival<br />

with Lantern-at-Home Kits<br />

announced it will not be<br />

hosting its annual Lantern<br />

Festival this year on <strong>October</strong> 17 due to the COVID-19 pandemic.<br />

The museum understands how meaningful and magical this<br />

holiday is to their guests and will be offering beautiful Lanternat-Home<br />

Kits to light up at-home celebrations and welcome<br />

home beloved ancestors’ spirits in honor of Obon.<br />

To participate, Morikami invites the public to purchase the<br />

Lantern-at-Home kits (online or in-store) for $20 and take<br />

photos of their toro nagashi (literally, flowing lanterns) in a<br />

pool, lake/ocean, bathtub (get creative!) and share them on<br />

Instagram using the hashtag #lanternathome and tag @morikamimuseum.<br />

Local Theatre with BUNKER<br />

The Arts Garage is announcing Theatre At Home: Live From<br />

Arts Garage with a live and simultaneously live-streamed<br />

performance of BUNKER, a one act play directed by and starring<br />

South Florida actor and writer Jonathan David Kelly. The<br />

timely and thought-provoking production will have one performance<br />

BUNKER dramatizes the story of Khalan<br />

and his mother as she finds herself becoming<br />

the very thing from which she is<br />

trying to protect him. This story of love reveals<br />

how wars may unintentionally start<br />

at home and the journey back to peace. It<br />

asks the demanding question: “How do you<br />

raise a Black Boy with no manual?”<br />

Kelly co-stars with performance poet,<br />

novelist and playwright Sharonda Eccentrich<br />

Richardson and librarian-turnededucator<br />

The price for a live-streamed performance<br />

Takes Different<br />

Kind of Flight<br />

The 9th Annual Witches of Delray charity<br />

bike ride to benefit Achievement<br />

Centers for Children & Families in Delray<br />

Beach will take a different kind of flight<br />

this year due to concerns over COVID-19.<br />

In place of a group bike ride, the Witches<br />

of Delray will hold various opportunities<br />

to “get wicked” both in person and virtually<br />

throughout Downtown Delray Beach<br />

throughout <strong>October</strong>.<br />

Participants can receive access to live and<br />

virtual experiences, including a Witches Quiz<br />

Ride, Witches Plates & Potions Hospitality<br />

Bingo, Best Virtual Cackle and Best Decorated<br />

Hat for a $20 donation. Participants will<br />

also have a chance to win a new bike at the<br />

Witches Brew held at Tim Finnegan’s with<br />

a special appearance by John Brewer of the<br />

Delray Beach Socially Distance Supper Club<br />

If you’re familiar with Milagro Center in<br />

Delray Beach, you’ve undoubtedly heard<br />

the words “teach” and “inspire” as part of<br />

their mission of providing after-school academic<br />

and cultural arts programming for<br />

at-risk children and teens. But since the<br />

Covid-19 crisis hit last March, this landmark<br />

organization has added another key<br />

element to helping local youth and their<br />

families: “feed.”<br />

That word began reverberating early in<br />

the crisis when Milagro Center partnered<br />

with Hospitality Helping Hands and Living<br />

Hungry to provide 100 hot meals, three days<br />

a week, to families hit hard by job losses.<br />

That commitment continued through<br />

a partnership in August with the Joshua’s<br />

Heart Foundation when families in Boca<br />

atlantic ave magazine on vacation<br />

Raton and Delray Beach were provided<br />

with fresh fruits and vegetables, pasta, rice<br />

and other provisions. A total of 165 participants<br />

received nearly 4,116 lbs. of food or<br />

the equivalent of 3,430 meals were served<br />

over the course of two distributions.<br />

Achievement Centers for Children and<br />

Families (ACCF) and Healthier Delray<br />

Beach have established the “Love Matters<br />

Fund in Memory of Monica Herring,”<br />

an employee who served the ACCF for 16<br />

years. The fund will assist a child or children<br />

in the Delray Beach community to<br />

attend the Centers’ summer camp or after<br />

school programs.<br />

Over Ms. Herring’s tenure at the Achievement<br />

Centers for Children and Families,<br />

she worked in a variety of positions, most<br />

notably as its dance instructor. She passed<br />

away last month in a car accident.<br />

“She touched many lives through her<br />

kindness and soft-spoken manner and<br />

her passing is devastating to the staff and<br />

Most Fun Small Town, Most Crazy Small Town, Most Small Town that Feels<br />

Like a Big Town. Delray has it all. With a bustling downtown, Pineapple<br />

Grove area, and little nooks and crannies in between, there’s more<br />

to do in Delray now than ever, with events and happenings<br />

spanning from daytime to nighttime. While it can<br />

seem expensive at times, there’s a great<br />

opportunity to enjoy all the City has to offer<br />

of Delray Beach and several local organizations have partnered to<br />

create the RISE: Climate & Art Weekend. This annual event expresses<br />

science through art to better connect people to imperative environmental<br />

challenges of this century, such as climate change and rising<br />

tides affecting our community. Held virtually from <strong>October</strong> 1 to 4,<br />

registered viewers can watch artistic discussions, see art exhibits,<br />

and hear from regional experts and City staff about climate change<br />

and impacts and resilience efforts that effect our community. You can<br />

expect to enjoy discussions about the roles of women in the state’s<br />

modern conservation and environmental movements, how regions<br />

of Florida are preparing for climate change and sea level rise, and the<br />

Even though we can’t head out and experience live shows how<br />

we once did, we can still do our best to not only enjoy as much<br />

live action as we can, but also support our local creatives and<br />

local businesses as much as we can. <strong>October</strong> is National Field Trip<br />

Month and you’re invited to take a field trip via your Wi-Fi and check<br />

into the Arts Garage events this month where they’re hosting live<br />

events that you can enjoy from your home. They’re offering a Music<br />

at Home with artists such as JD Danner, Ann Hampton Callaway, the<br />

COVID-19 or not, the landscape of the world makes it okay<br />

to indulge in the seafood diet: when you see food, you eat<br />

food. In an effort to not go totally calorie crazy, stick to<br />

the theme of the month and at least you’ll be getting your fix<br />

of the freshest fish in town. <strong>October</strong> is National Seafood Month<br />

and couldn’t be a better time to sink your teeth into flavorful<br />

dishes while we’re in the Florida season of post-summer and<br />

pre-whatever. Whatever you do, make sure you indulge in the<br />

blackened fish tacos from City Oyster. Made with pico de gallo,<br />

cilantro, lime crema and flour tortillas for $17, these tacos are a<br />

prime example of how delicious, fresh fish is supposed to taste.<br />

You can also stop in J&J for some fine and fancy fish options<br />

like their Pan Seared Snapper with shrimp and lobster sauce<br />

over champagne risotto for $34. Or, head to RACKS Fish House<br />

& Oyster Bar and order literally everything from their raw bar<br />

including shrimp cocktail, half shell clam, fresh oysters, fish dip<br />

► Wonder Woman 1984 – Fast forward to the 1980s as Wonder<br />

Woman’s next big screen adventure finds her facing an all-new foe:<br />

The Cheetah. Principal photography is underway on Warner Bros.<br />

Pictures’ follow up to the Superhero’s first outing, last summer’s<br />

record-breaking “Wonder Woman,” which took in $822 million at the<br />

worldwide box office. “Wonder Woman 1984” will also be helmed by<br />

acclaimed director Patty Jenkins, and star Gal Gadot in the title role.<br />

► Honest Thief - When experienced bank robber Tom Carter<br />

facility where he works. He, however, quickly realizes that the FBI isn’t<br />

The Importance of Time<br />

Before sitting down and deciding on a topic for this month’s<br />

article, I had a conversation with a patient. This patient is a<br />

sweet woman in great shape and full of life, but today she had<br />

a “knot” in her shoulder that was causing her pain. During our<br />

conversation, I began to realize that she was impatient and<br />

really didn’t understand the importance of her diagnosis and<br />

the amount of time it would take to actually treat.<br />

When she hopped off the table she said “That’s it, I’m fixed<br />

right? You put it back in place?” For the sake of time, I’ll<br />

keep my answer short. I said, “No ma’am that’s not exactly<br />

how it works.”<br />

Let us dive into what we have been tiptoeing around for the past<br />

few articles. Simply put - YOUR BODY WILL ADAPT TO THE EN-<br />

VIROMENT YOU EXPOSE IT TO DAILY. If you sit at a desk in poor<br />

posture looking at your computer all day, your body will slowly<br />

(time reference) turn into the positions you are in for long periods<br />

of time repetitively. For example, let’s say a person that works all<br />

day sitting at a desk on a computer comes into the office for neck<br />

and upper back pain. The pain is just the symptom caused by prolonged<br />

poor posture. This can lead to rounded shoulders, forward<br />

head posture, TMJ-Disorder, headaches, vertigo, and even radiating<br />

pain down the arms and hands. Chiropractors use your symptoms<br />

to trace your pain to the root cause - which could be something as<br />

simple as a muscle strain secondary to posture related issues. In severe<br />

cases, due to the decrease in proper cervical and thoracic biomechanics,<br />

muscles become retrained to protect the spine, causing<br />

improper loading of the spine which increases the predilection for<br />

a disc related injury, all from bad posture.<br />

What does this have to do with time? Time is the driving factor<br />

in injuries such as these. These injuries aren’t traumatic, they are<br />

slow degenerative injuries. Time is also the driving force in treating<br />

and restoring proper posture to these patients. There is no onetime<br />

adjustment, there is no “It’s back in place and I’m good to go”<br />

treatment. These injuries take time to manifest and they also take<br />

time to correct.<br />

There are three stages to soft tissue injuries and reformation -<br />

each having their own layers of complexities.<br />

1. The inflammatory stage - with chronic injuries we tend to see<br />

this when we start doing soft tissue work like myofascial release,<br />

stretching the tissue, or during the acute exacerbation of the chronic<br />

injury. This can last about 72 hours and is common after an injury<br />

to be sore after treatment.<br />

2. Repair phase - in this phase the inflammatory response has<br />

subsided, and the tissue is starting to heal. During this phase it is<br />

important to break bad habits, so the tissue starts to heal properly.<br />

A diet rich in collagen, vegetables, and being well hydrated are important<br />

to create new healthy tissue. This phase can take anywhere<br />

from 72 hours to 6 weeks depending on the severity of injury.<br />

3. The remodeling phase - with the formation of new collagen,<br />

it’s time to mold and reshape the tissue. This is where we introduce<br />

exercise to strengthen and reshape the tissue. This process can take<br />

three weeks to 12 months, again, injury dependent. Most chronic<br />

injuries, or posture related injuries tend to take anywhere from 4<br />

months to a year to see a full transformation.<br />

Remember, when you are with a health care professional, listen<br />

to them. Ask questions about the duration of care. Your doctor<br />

should make you feel empowered in your care. We can help you get<br />

better. It just takes time!<br />

The Liquid Face Lift<br />

During the anti-aging and wellness revolution,<br />

ultramodern aesthetic techniques have evolved<br />

Trick or Treat?<br />

Deciphering between healthy foods<br />

and “fake” healthy foods<br />

If you are overwhelmed or confused by all the proclaimed<br />

“healthy” foods that are out on the shelves today, you are not<br />

alone! Unless you are super knowledgeable on nutrition it is<br />

hard for the average consumer to really know what is good for<br />

them and what is just another “fake” healthy product! It is easy to<br />

be tricked with savvy labeling and marketing. Let’s take a look at<br />

some of the trickiest misleading “healthy” foods on the market!<br />

1. Protein/Energy Bars<br />

Although there are some good ones out there (shout out to my<br />

beloved FroPro), most are full of tricks. Added sugars, sugar alcohols,<br />

preservatives, food dyes, chemicals… the list goes on. The other<br />

issue with these bars is that some of them are advertised as having<br />

minimal ingredients, which is great but, the sugar content is through<br />

the roof! At that point you could be eating the sugar equivalent to<br />

a candy bar. On the contrary, if the bar has “no sugar” which a lot<br />

of people would naturally see and think, “Oh this is great!” it’s most<br />

likely filled with sugar alcohols which can cause bloating and some<br />

other unwanted side effects.<br />

2. Veggie Patties<br />

“It’s all veggies, no meat…what could be bad about mashed up<br />

veggies!?” A lot! Most of these patties are loaded with sodium, fillers,<br />

and chemicals to bind the veggies into a burger like consistency. Not<br />

so healthy after all!<br />

3. Veggie Chips<br />

Speaking of veggies, let’s talk about veggies in chip form! Just<br />

because they are made from veggies does not mean they<br />

are good for you! It is the oils and saturated fats they<br />

are fried in where this goes wrong. Not to mention,<br />

most veggie chips have potatoes listed as their first<br />

ingredient and contain the same amount of calories<br />

as regular potato chips. That’s definitely a “trick!”<br />

You are better off making kale or sweet potato<br />

chips, which are easy and delicious, without all<br />

the extra added oils and calories.<br />

4. Juice/Smoothies<br />

These are a huge culprit and can be so misleading<br />

to the average consumer. “Eat your fruits, eat<br />

your veggies” is what we are used to hearing. Getting<br />

your daily intake of greens and veggies all at<br />

once sounds like a great idea, but before picking up<br />

your next juice, take a close look at the sugar content. For example,<br />

let us take the “Original Superfood 100% Juice/Puree Blend.” This<br />

brand has a whopping 51 grams of sugar! Yikes! Sadly, there are<br />

many other brands just like this or worse. A healthy green juice drink<br />

is one with less than 15 grams of sugar per serving, saving yourself<br />

from unnecessary sugar and calories.<br />

5. OrGAnic Snacks<br />

We assume that anything labeled “organic” would naturally be<br />

better for you…fewer calories, less fat, less processed than non-organic<br />

foods. “Organic cheese balls must be better than non-organic<br />

right!?” Yes, but processed foods are still processed. Organic may<br />

mean slightly better ingredients but that doesn’t give one free reign<br />

to chow down. Just remember to treat these “snacks” like you would<br />

anything else and don’t over-eat just because it’s “organic.” We have<br />

all used that excuse now and again!<br />

6. Skinny Lattes<br />

I could not believe how many clients I’ve met with recently are<br />

drinking these. I think the word “skinny” throws a lot of people off.<br />

These coffee drinks are not so “skinny” after all. One 16oz skinny<br />

latte from Starbucks contains 16 grams of sugar compared to a<br />

regular coffee with almond milk and stevia which has 0 grams. Stick<br />

with the latter!<br />

7. Zero Calorie Foods<br />

Here is another item that tricks many people. Zero calorie foods<br />

can come in the form of drinks, salad dressings, sauces, syrups,<br />

etc. But if this amazing salad dressing has zero calories,<br />

then what are you really ingesting? The answer is chemicals,<br />

sugar alcohols, and preservatives. Gross! But it’s<br />

zero calories, right? Wrong! A better choice is having<br />

a small serving of the real deal than eating chemicals.<br />

These are a few examples of tricky healthy foods<br />

out there, but there are many more. Think twice before<br />

buying something labeled “healthy, skinny or<br />

calorie free.” Paying extra attention to the nutrition<br />

label could potentially save you from extra<br />

unwanted calories, chemicals, and junk.<br />

This age of COVID has really challenged the Delray Beach<br />

Chamber of Commerce when it comes to connecting with<br />

our members. Known prior as the Chamber where “Warm<br />

and Welcoming Works”, social distancing has forced the team to<br />

they have come to know.<br />

window. Planned each Thursday, our “New Member Spotlight” provides<br />

a small group zoom call for new members to share their story,<br />

A Delray Beach Treasure<br />

To newcomers in Delray Beach<br />

the name Simon may not ring<br />

a bell. There are no buildings<br />

with their name and no<br />

monuments that tell their story.<br />

Yet, the Simon family has roots that run as deep as the oldest<br />

banyan tree. Their story is one of Delray Beach lore and civic<br />

responsibility.<br />

In 1911 Alexander Abraham moved from Lebanon to Delray<br />

Beach. In 1920 he brought his son Alexander. The rest of the Simon<br />

clan and their relatives followed. In those days Delray was a farming<br />

town (hard to believe now) and the total population was about 2000.<br />

Roy Simon was one of them.<br />

As the son of Alexander, Roy learned that honesty and integrity<br />

were as important as the land you stood on. Deals were done on a<br />

handshake and if you needed money, the Simon name was as solid<br />

as the words American Express.<br />

“My father built a reputation on ethics and trust. You could go into<br />

any bank and do business if you were the son of Alexander Simon.”<br />

Roy has stayed true to his fathers’ reputation and dedication<br />

to hard work. The elder Mr. Simon sold and shipped produce and<br />

farmed on 25 acres of land he owned in Boca Raton.<br />

His son Roy took a different route. He went to Georgia Institute<br />

of Technology and got a degree in Architecture. He also served as<br />

an officer in the Air Force in Scotland where he got instant on the<br />

job training.<br />

“I was fresh out of college and was involved in building dormitories,<br />

mess halls, a chapel, bowling alley and more. We built 135<br />

buildings in two years. It was my first job out of college,” said the<br />

architect with the biggest resume and quietest persona in town.<br />

Though he is low key Roy is a giant when it comes to historical<br />

and factual information about Delray. He can tell you about any<br />

building and its historical reference point. “Did you know we had<br />

three grocery stores on <strong>Atlantic</strong> <strong>Ave</strong>nue and a fish market?” he asks.<br />

Roy’s architect friend Roger Cope calls him a living legend and an<br />

architectural treasure.<br />

“I bought a historic home in Delray and the archival documents<br />

were drawn by R.S. When I called Roy, I found out it was his signature.<br />

He was an intern at the time with Kenneth Jacobson and<br />

he drew the plans by hand. Roy also knew the family history of my<br />

house. He’s the Godfather of architecture here.”<br />

You bet he is.<br />

“The city of Delray is always in Roy’s heart. He never gives up and<br />

is always working hard for people. You couldn’t ask for a nicer man<br />

and a nicer family,” said former legislator Richard Machek.<br />

Roy’s office is a museum and homage to Delray Beach. There are<br />

black and white photographs of the shoreline and <strong>Atlantic</strong> <strong>Ave</strong>nue’s<br />

former less developed self. There are also photos of buildings he<br />

built in his storied 62-year history as an architect.<br />

But self-interest is not what Roy Simon is about. Quite to the contrary<br />

his true love (aside from his family) is Delray Beach. He has contributed<br />

to the evolution and constitution of Delray since he was a lad.<br />

He was President of the Delray Beach Chamber of Commerce<br />

twice, founding member of Delray Historical Society, founder of<br />

Downtown Development Authority and Trustee of Old School<br />

Square Historic Preservation.<br />

Roy received the Rotary Club “Service Above Self” Award for Outstanding<br />

Service in the community, the Jaycees Distinguished Service<br />

Award and the Delray City Commission Award for 40 years of<br />

service on city advisory boards.<br />

He also co-founded the Delray Affair and Initiated the Pro-Am Golf<br />

Tournament benefitting Bethesda Memorial Hospital for 40 years.<br />

But that’s only half of his civic engagement in a city that reigns<br />

supreme in his consciousness. “My father loves this town more than<br />

anyone and is the official historian of Delray. His grandfather, uncles<br />

and cousins settled here; and to establish a life in Delray for his family<br />

is something he holds onto dearly. He is a great leader. When he<br />

saw a need, he always found solutions for Downtown Delray to be<br />

sustainable throughout history,” said daughter Laura Simon, Executive<br />

Director of the Downtown Development Authority.<br />

Not only is Roy a vital part of the sociological infrastructure of Delray,<br />

he is also a renowned architect. He designed Delray Community<br />

Center Pompey Park, Trinity Lutheran School and Church, <strong>Atlantic</strong><br />

Plaza, St. Vincent Church and hundreds of other buildings and homes.<br />

Mark Denkler has seen Roy’s architectural genius up close. “Roy<br />

uniquely designs properties in Florida. He uses building designs<br />

that allow sunlight, while reducing cooling costs. He also knows the<br />

history of Delray, so when he remodels a home (like ours) the addition<br />

flows with the original property. Roy and his family are the<br />

foundation and soul of the city,” said the owner of Tootsies Shoes.<br />

Roy’s architectural philosophy was ingrained in school. “We were<br />

taught to think of ourselves as doctors. People come to us with a<br />

problem and we solve it. The end result is that we create something<br />

that people will enjoy.”<br />

That mission has been accomplished. Roy’s churches, homes and<br />

offices have the Simon sentiment. They allow for pleasant public<br />

spaces while enhancing South Florida’s inherent beauty.<br />

Despite his amazing career, Roy is most proud of his family. Michael<br />

is Director of the Boynton Beach CRA, son Christopher is a<br />

landscape architect and daughter Laura is with the DDA. He’s been<br />

married to Beth for 59 years and has five grandchildren.<br />

Longevity is also what defines him. Roy has been a member of St.<br />

Paul’s Episcopal Church for 85 years and has played an active role<br />

in many capacities.<br />

Serving others before self is a biblical yet profound accomplishment.<br />

Roy Simon has a lifetime of doing just that.<br />

“My father has made a tremendous impact on me and my family,<br />

as well as thousands of business owners, visitors and property<br />

owners in Delray Beach. It’s an honor to work and walk in his<br />

shoes,” adds Laura.<br />

Spooky Recipes for<br />

Looking for an easy appetizer to “scare” up<br />

for your Halloween party? Or what about a fun<br />

dinner for the night of Trick-or-Treating with<br />

(or without) the kids? Dinner on Halloween can<br />

be anything but regular—it’s gotta be spooky!<br />

Here are some ghoulish Halloween recipes to<br />

get you and your family in a spooky mood.<br />

Witchy Guacamole Dip<br />

INGREDIENTS<br />

2 large avocados<br />

1/4 red onion, thinly chopped<br />

2 garlic cloves, minced<br />

juice of 1 lime<br />

shredded carrots (hair)<br />

2 green olive slices (eyes)<br />

2 black olive slices (eyebrows)<br />

2 slices of a mini red bell pepper (lips)<br />

1 cornichon (nose)<br />

blue corn chips (hat)<br />

directions<br />

1. In a bowl, mash the avocado.<br />

Add the garlic, onions and lime<br />

juice and mix until well combined.<br />

Season with sea salt for flavor.<br />

2. Add the guacamole to the lower<br />

half of a serving plate.<br />

3. Create the corn chip hat first and<br />

then add the carrots for the hair.<br />

4. Assemble the face and serve!<br />

Eyeballs and<br />

Spaghetti<br />

INGREDIENTS<br />

1 lb. ground beef<br />

1/2 medium onion, finely chopped<br />

1/4 c. Panko bread crumbs<br />

2 cloves garlic, minced<br />

2 tbsp. chopped fresh parsley<br />

1 large egg, beaten<br />

Kosher salt<br />

Freshly ground black pepper<br />

1 lb.spaghetti<br />

1 1/2 c. marinara, warmed<br />

Mozzarella cheese, cut into rounds<br />

Black olives, sliced crosswise into rounds<br />

1. Preheat oven to 400° and line a large, rimmed baking sheet with parchment.<br />

2. In a large bowl, add beef, onion, Panko, garlic, parsley, and egg. Season<br />

generously with salt and pepper. Mix ingredients together with a rubber<br />

spatula or your hands until well combined, then shape into 1” balls. Place onto<br />

baking sheet.<br />

3. Bake for 13 minutes, then to each meatball, add a piece of cheese and olive to<br />

resemble eyeballs. Bake until cheese is melty, 2 minutes more.<br />

4. Meanwhile, in a large pot of salted, boiling water, cook spaghetti according to<br />

package directions until al dente. Drain and transfer to platter.<br />

5. Pour warm marinara sauce over spaghetti, then scatter with meatballs.<br />

Witchy Finger Cookies<br />

INGREDIENTS<br />

1 egg<br />

1 cup butter, softened<br />

1 cup confectioners’ sugar<br />

1 teaspoon almond extract<br />

1 teaspoon vanilla extract<br />

2 2/3 cups all-purpose flour<br />

1 teaspoon baking powder<br />

1 teaspoon salt<br />

¾ cup whole almonds<br />

1 .75 ounce tube red decorating gel*<br />

directions<br />

Combine butter, egg, sugar, almond and<br />

vanilla extract in a mixing bowl. Beat<br />

together with an electric mixer, gradually<br />

add flour, baking powder and salt and<br />

continue beating. Refrigerate for 20-30<br />

minutes (do not skip this step!).<br />

Preheat oven to 325 degrees. Light grease<br />

baking sheets or line them with parchment<br />

paper. Remove dough from refrigerator in<br />

small amounts. Scoop 1 heaping teaspoon at<br />

a tine onto a piece of waxed paper. Use the<br />

waxed paper to roll the dough into a thin<br />

finger-shaped cookie. Press one almond into<br />

one end of each cookie to resemble a long<br />

fingernail, Squeeze cookie near the tip and<br />

again near the center to mimic knuckles.<br />

With a sharp knife, make lines in the dough<br />

(without cutting completely through). Place<br />

cookies on baking sheets.<br />

Bake in the preheated oven until the cookies<br />

are slightly golden in color, about 20-25<br />

minutes.<br />

* This next step is optional. Remove the<br />

almond from the end of each cookie;<br />

squeeze a small amount of red decorating<br />

gel into the cavity; replace the<br />

almond to make the gel<br />

ooze out around the<br />

tip of the cookie.<br />

Additional tips: Add<br />

green food coloring<br />

to the dough for green<br />

monster hands. Add<br />

chocolate chips to<br />

resemble warts.<br />

Pumpkin Spice Martini<br />

INGREDIENTS<br />

1 (1.5 fluid ounce) jigger vanilla flavored vodka (such as Stoli ® )<br />

1 (1.5 fluid ounce) jigger Irish cream liqueur (such as Bailey’s ® )<br />

1 (1.5 fluid ounce) jigger pumpkin flavored liqueur (such as Hiram Walker ® )<br />

1 cup ice cubes<br />

1 pinch ground cinnamon<br />

1 pinch ground nutmeg<br />

Graham cracker crumbs - optional<br />

directions<br />

Rim a well chilled martini glass with graham cracker crumbs - optional.<br />

Pour the vanilla flavored vodka, Irish cream liqueur, and pumpkin flavored liqueur into a cocktail shaker<br />

over ice. Cover, and shake until the outside of the shaker has frosted. Strain into chilled martini glass, and<br />

garnish with a sprinkle of ground cinnamon and ground nutmeg to serve.<br />

LIBBY’S ® Pumpkin<br />

Cranberry Bread<br />

INGREDIENTS<br />

3 cups all-purpose flour<br />

1 tablespoon plus 2 teaspoons<br />

pumpkin pie spice<br />

2 teaspoons baking soda<br />

1 1/2 teaspoons salt<br />

3 cups granulated sugar<br />

1 can (15 ounces) LIBBY’S ®<br />

100% Pure Pumpkin<br />

4 large eggs<br />

1 cup vegetable oil<br />

1/2 cup orange juice or water<br />

1 cup sweetened dried, fresh or<br />

frozen cranberries<br />

directions<br />

PREHEAT oven to 350° F. Grease and flour two 9 x 5-inch loaf pans.<br />

COMBINE flour, pumpkin pie spice, baking soda and salt in large bowl. Combine<br />

sugar, pumpkin, eggs, oil and juice in large mixer bowl; beat until just blended.<br />

Add pumpkin mixture to flour mixture; stir just until moistened. Fold in<br />

cranberries. Spoon batter into prepared loaf pans.<br />

BAKE for 60 to 65 minutes or until wooden pick inserted in center comes out clean.<br />

Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.<br />

Recipe makes two loaves.<br />

FOR THREE 8 x 4-INCH LOAF PANS:<br />

PREPARE as above. Bake for 55 to 60 minutes.<br />

FOR FIVE OR SIX 5 x 3-INCH MINI-LOAF PANS:<br />

PREPARE as above. Bake for 50 to 55 minutes.<br />

Light and Fluffy Pumpkin Pancakes<br />

INGREDIENTS<br />

1 1⁄4 cups all-purpose flour<br />

2 tablespoons sugar<br />

2 teaspoons baking powder<br />

1⁄2 teaspoon cinnamon<br />

1⁄2 teaspoon ginger<br />

1⁄2 teaspoon nutmeg<br />

1⁄2 teaspoon salt<br />

1 pinch clove<br />

1 cup 1% low-fat milk (can be any kind)<br />

6 tablespoons canned pumpkin puree<br />

2 tablespoons melted butter<br />

1 egg<br />

directions<br />

Whisk flour, sugar, baking powder, spices<br />

and salt in a bowl.<br />

In a separate bowl whisk together milk,<br />

pumpkin, melted butter, and egg.<br />

Fold mixture into dry ingredients.<br />

Spray or grease a skillet and heat over<br />

medium heat: pour in 1/4 cup batter for<br />

each pancake.<br />

Cook pancakes about 3 minutes per side.<br />

Serve with butter and syrup.<br />

Makes about six 6-inch pancakes.<br />

Pumpkin Soup - Classic and Easy<br />

INGREDIENTS<br />

2lb pumpkin, chopped into large chunks<br />

(remove skin and seeds - see Note 1<br />

below) or substitute with 2 1/2 cups<br />

of pumpkin puree<br />

2 medium onions, sliced<br />

2 cloves of garlic<br />

3 cups chicken or vegetable stock<br />

1 cup milk - for vegan see Note 2 below.<br />

Salt and pepper<br />

directions<br />

Combine all ingredients (except salt and pepper) in<br />

a saucepan and bring to boil, then reduce heat and<br />

let simmer until pumpkin is tender.<br />

Remove from heat and use a stick blender to blend<br />

until smooth. If you don’t have a stick blender, use a<br />

blender (see Note 3 below).<br />

Season to taste with salt and pepper, then serve with<br />

crusty bread.<br />

Variations: For a richer finish, substitute the milk with<br />

cream, but add after blending and do not bring to boil.<br />

Garnishes: Dollop of yogurt, sour cream or crème<br />

fraiche goes wonderfully.<br />

Notes<br />

1. ~2.5lb pumpkin before peeling and removing seeds.<br />

2. To make it vegan, substitute with almond or soy milk.<br />

3. If you don’t have a stick blender, you can use a blender<br />

BUT you must make sure that the soup is cooled<br />

slightly before blending it, otherwise you will find out<br />

the hard way that hot soup + blender = soup explosion<br />

(literally, the lid will blow off the blender when you<br />

start blending it).<br />

Baked Stuffed Pumpkin<br />

INGREDIENTS<br />

4 oz. sweet Italian sausage<br />

½ c. chopped onion<br />

1 pumpkin<br />

½ c. chopped Granny Smith apples<br />

¼ c. white wine<br />

1 c. Israeli couscous<br />

¼ c. dried cranberries<br />

1 tbsp. extra-virgin olive oil<br />

1 tsp. fresh thyme<br />

1 tsp. fresh oregano<br />

½ tsp. salt<br />

¼ tsp. fresh ground pepper<br />

4 small pumpkins<br />

directions<br />

Make the stuffing: Preheat oven to 350 degrees. Decase and crumble<br />

the sausage meat and place it in a large saucepan over mediumlow<br />

heat. Cook the sausage until it is almost done - about 8 minutes.<br />

Remove the sausage from the pan, increase heat to medium, and<br />

add the onion and 2 cups of the chopped pumpkin. Sauté until the<br />

pumpkin begins to soften - 5 to 7 minutes. Add the chopped apple<br />

and sausage and sauté for 3 minutes. Add the wine, cook for 2 minutes,<br />

remove from heat, and set aside. Combine the couscous, dried<br />

cranberries, olive oil, thyme, oregano, salt, and pepper in a large<br />

bowl. Add meat mixture to the bowl and toss to combine.<br />

Bake the pumpkins: Evenly fill the hollowed-out pumpkins with<br />

the stuffing mixture and place the pumpkins in a shallow baking<br />

dish. Cover the dish with aluminum foil, bake for 25 minutes, remove<br />

the foil, and bake for 10 more minutes. Serve immediately.<br />

Do I Need to Detox My Pets and How?<br />

The key to optimal health and the prevention of disease is proper<br />

nutrition and remaining toxin free. Easier said than done in<br />

today’s environmental condition. Much of our food sources are<br />

grown on poor quality land containing many synthetic chemicals and<br />

toxic fertilizers. Pet food specifically, is mass produced, highly processed<br />

and can contain additional chemicals, preservatives, hormones, appetite<br />

enhancers and more. While we recommend avoiding these commercially<br />

toxic, processed foods, we realize that many pet owners are<br />

unaware of the truth about pet foods. We constantly explain it here and<br />

you can find much more information throughout our archives.<br />

Let’s address the need for detoxifying your pets with how, why, and<br />

how often.<br />

We know from our ongoing research that there are numerous issues<br />

and repercussions from those commercially “balanced diets” for our<br />

pets. Many contain synthetic compounds and some even contain toxic<br />

ingredients that the body accumulates daily.<br />

We know of the daily exposure if we walk our pets outdoors. Like us,<br />

our pets are exposed to the daily chemtrails above. Above, you can see<br />

strange cloud trails and patterns in the sky that look unnatural. The<br />

government sprays to protect us all from mosquitoes, Zika, Encephalitis,<br />

West Nile and an ever-expanding list of viruses. The method used<br />

is done with aerosols that all eventually settle to the ground where our<br />

pets walk with unprotected feet daily. Add that to all the lawn chemicals<br />

they are also exposed to that also percolate those chemicals back<br />

up into their surroundings with every rain. Inside, think about the<br />

products you use to clean your floors and carpeting. We never think<br />

that our pets are exposed there as well as when toxic cleaners are<br />

used. We wouldn’t want our babies to crawl around on those areas.<br />

Isn’t your pet important too?<br />

If the above exposures aren’t enough of an assault, add on what we<br />

are told is “modern medicine.” This consists of flea, tick and heartworm<br />

drugs, a barrage of vaccines and boosters (sold as preventatives), as<br />

well as medications for every minor ailment and symptom. Technically,<br />

we are creating a toxic soup within our pet’s body. Do you have any clue<br />

what is happening inside your pet’s body? Have you ever had a drug or<br />

food reaction? Your pet can’t tell you what is going on.<br />

It is imperative that we need to get all these harmful chemicals out<br />

of our pets’ bodies on a regular basis and limit their initial introduction.<br />

Research and consult with a natural health provider, whether a<br />

naturopath, homeopathic or nutritional and herbal specialist. Since are<br />

pets are experiencing a daily assault as we all are, the effort to avoid and<br />

eliminate these toxins is paramount.<br />

We have discovered and advanced food, herbs and botanicals that<br />

will not only aid the body’s detoxification efforts, but also rebuild the<br />

system with micronutrients and antioxidants. It’s truly a gift that we<br />

have rediscovered these foods in nature that will correct the manmade<br />

mistakes that are flooding our environment. Plants such as Milk Thistle,<br />

Chlorella, Dandelion, Spirulina, Wheat Grass, Moringa, and so many<br />

more have proven themselves as the natural fighters to save our pets.<br />

A balanced approach is to limit as many toxins as possible from our<br />

pets. Detoxify on a daily basis with the proper foods and build their immune<br />

system with appropriate clean diets, clean water and a clean environment.<br />
