Curl up and tune in to Showmax<br />

In the mood for crime? Comedy? Drama? Look no further than our picks of<br />

the best shows and movies this month.<br />

We’re kicking off with a local film directed by Oliver Hermanus. In<br />

The Endless River, a young waitress welcomes her husband home to the<br />

small <strong>South</strong> African town of Riviersonderend after his jail sentence. When the<br />

family of a foreigner living on a nearby farm is murdered, the waitress and the<br />

grieving widower begin gravitating towards each other. Trapped in a cycle of<br />

violence and bloodshed, the two form an unlikely bond seeking to transcend<br />

their mutual anger, pain and loneliness.<br />

When Detective Felicity Dill is killed in a car bombing, her sister, Allegra Dill, an<br />

investigator working for a senator, returns home to San Bonifacio to find the<br />

killer. In the process of her investigation, she uncovers a web of corruption in<br />

the small Texas town. Briarpatch (S1) is an artistic, interesting mystery crime<br />

series based on the Ross Thomas novel of the same name.<br />

Vida (S3) returns with the two Mexican-American sisters, Emma and Lyn, who<br />

couldn’t be more different or distanced from each other. Circumstances force<br />

them to return to their old neighbourhood, where they are confronted by<br />

the past and shocking truth about their mother’s identity.<br />

In the Reckoning (S1) the murder of a teenager and the hunt for a serial<br />

killer in a suburban town sets two fathers on a course of mutual destruction<br />

that will reverberate through their quiet community. Explore the darkest<br />

corners of the male psyche through the eyes of two fathers, one of whom is<br />

a serial killer.<br />

It’s time, once again, to wreak some hilarious havoc on the spacetime<br />

continuum as Future Man (S3) debuts its final season to wrap things up. Josh<br />

Futturman, a janitor by day and a gamer by night, is recruited by mysterious<br />

visitors to travel through time to prevent the extinction of humanity.<br />

Hard-hitting cop show Bosch (S6) is back. The run of shows sees Harry<br />

playing a key role in trying to save his city after a medical physicist is executed<br />

and the deadly radioactive material he had with him goes missing. Finding<br />

himself at the centre of a complex murder case, a messy federal investigation,<br />

and an impending catastrophic threat to Los Angeles, Bosch must act as<br />

domestic terrorists threaten the fate of Los Angeles.<br />

The hit mockumentary What We Do In The Shadows (S2) is a look into the<br />

daily (or rather, nightly) lives of three vampires who’ve lived together in New<br />

York for more than 100 years – plenty of time to get on each other’s nerves.<br />

With the Whisperer War upon them, the collective communities must come<br />

together and possibly sacrifice all they have to find a way to silence the<br />

Whisperers once and for all. Otherwise Alpha will ensure they face a certain<br />

doom … The Walking Dead (S10) is the definitive zombie show, having won<br />

77 awards globally.<br />

I May Destroy You is a British comedy-drama television series set in London<br />

where gratification is only an app away. Arabella is a carefree, self-assured<br />

Londoner with a group of great friends, a boyfriend in Italy and a burgeoning<br />

writing career. But when her drink is spiked with a date-rape drug, she must<br />

question and rebuild every element of her life.<br />

Netflix ... for a great night in<br />

The crime comedy-drama Good Girls (S3) revolves around three<br />

mothers who upend their seemingly cosy lives and descend<br />

into the world of crime to pay their family bills. Now they return<br />

to face the consequences of last season’s high jinks. The show is<br />

dark, a little outlandish – and in its best episodes, it’s gripping!<br />

The world as we know it has ended in The Rain (S3)... When<br />

a virus carried by rainfall wipes out almost all humans in<br />

Scandinavia, Danish siblings Simone and Rasmus take shelter in<br />

a bunker. Six years later, they emerge to search for their father, a<br />

scientist who left them in the bunker but never returned. Along<br />

the way they join a group of young survivors and together set<br />

out on a danger-filled quest through an abandoned Scandinavia,<br />

searching for any sign of life.<br />

After an excruciatingly long wait, the fantasy comedy drama<br />

Lucifer is back for season five. Throughout the series, Lucifer and<br />

his allies take on a wide array of supernatural threats – but they’ll<br />

be facing perhaps their most unique challenge yet this season.<br />

Good news Lucifans … the show has officially been renewed for<br />

season six!<br />

In Secret Origins, the scene is set in Madrid 2019 where a<br />

serial killer is spreading chaos. Anonymous people with no<br />

apparent connection are being murdered while imitating the<br />

first appearances of the most famous superheroes. It is up to<br />

two detectives to put together the pieces of a game with which<br />

they’re completely unfamiliar.<br />

Book club<br />

A book a day keeps boredom<br />

at bay. Add a glass of wine and<br />

you’re in for a happy <strong>August</strong>.<br />

In a tiny Italian village, life in the 1950s is a daily<br />

pageant of small human dramas. There are<br />

lippy signoras and earthy farmworkers. There’s<br />

a coffin-maker, a silkworm farmer and those<br />

who catch frogs for the town’s local delicacy –<br />

frog risotto. Then there’s Pistola, a teenage boy<br />

in love with his second cousin, Teresa, a girl<br />

who’s sadly, destined to marry the village thug.<br />

Don’t you already know Loves and Miracles of<br />

Pistola is going to be a magnificent read? Even<br />

more so, when you discover that to escape<br />

his heartache, young Pistola accepts the offer<br />

of a lifetime ... to travel to <strong>South</strong> Africa to work<br />

on the trains. In lively Johannesburg, he and a<br />

group of compatriots are trained as stewards<br />

and taught to speak English – and Afrikaans. It’s<br />

not all work, mind you. The Italians set up home<br />

in Hillbrow and go partying in Sophiatown<br />

with the likes of Miriam Makeba. When Pistola<br />

falls for the spunky Malikah, a political activist,<br />

the apartheid police watch every breath of<br />

their passionate, illicit relationship. It’s written<br />

by the wonderful Hilary Prendini Toffoli, who<br />

lives in Cape Town and is known for her social<br />

satire and investigative features. Just brilliant!<br />

So many of our favourite authors this month. Book Club’s going to<br />

be great. Jeffery Deaver (love!) has just released his latest thriller, The<br />

Goodbye Man. After witnessing a shocking suicide while pursuing two<br />

armed fugitives in the wilderness, Colter Shaw’s investigations lead him<br />

to go undercover in the Foundation – a cult that promises to transform<br />

people’s lives. It’s a cult led by a charismatic leader who commands<br />

terrifying loyalty from his followers, a cult that may have only one way to<br />

From the outside, the house in Lakeview Terrace looks perfect. And the<br />

Bigelows seem like the perfect family. The respected surgeon father. The<br />

glamorous, devoted mother. Two beautiful children. A perfect family<br />

in a perfect house, living their perfect lives. But perfect surfaces can<br />

hide dark undercurrents and behind closed doors lies a very different<br />

story. Teenager Zane and his younger sister, Britt, are terrorised by<br />

their violent father and dysfunctional mother. Too afraid to speak out,<br />

Zane does his best to protect his sister and counts the days until they<br />

can finally be free. Until the night when their father’s temper takes<br />

a horrifying turn for the worse, the perfect facade is exposed for the<br />

lie it is, and Zane and Britt manage to escape. With the help of their<br />

aunt, they rebuild their lives, creating new families and putting their<br />

past behind them. But can a past like that really be put aside? Under<br />

Do you remember how your heart just swelled when you read The<br />

Unlikely Pilgrimage of Harold Fry? Well, it’s time for an encore. Joyce<br />

Rachel’s Miss Benson’s Beetle is a story about a tiny insect, an exciting<br />

adventure and a deep, unexpected friendship. It’s the story of Margery<br />

Benson, whose life ended the day her father walked out of his study and<br />

magnificently written story revolves<br />

around two families – a free-spirited,<br />

enigmatic artist and single mum, and<br />

a journalist who, with her husband<br />

and four children, lives the perfect<br />

life, where everything is strictly under<br />

control. How these women influence<br />

their own and each other’s children,<br />

and how Celeste Ng captures the<br />

angst of being an adolescent,<br />

makes for a powerful, thoughtful<br />

read and a book that’s completely<br />

Travel and food and a touch of glam this <strong>August</strong><br />

Tapas for real foodies<br />

Tapas with Liam Tomlin is the most<br />

heavenly book imaginable. It’s a<br />

book to drool over, to sit for hours<br />

earmarking recipes and planning gettogethers.<br />

It’s all about the style of<br />

food Liam likes to cook and the way<br />

he likes to eat ... with lots of different<br />

tastes, textures and cooking styles. It’s<br />

crammed with inspiring, exceptionally<br />

styled photos of food you just long to<br />

re-create.<br />

What this isn’t, is a book for scaredy-cat<br />

cooks. Or for those with timid taste<br />

buds. It kicks off fairly safely with potato<br />

and chorizo tortilla, but before long it’s<br />

all braised pig’s head with bacon and<br />

egg, and sautéed frogs’ legs with wild<br />

mushrooms, parsley purée and truffle<br />

dressing. The Basic Recipe section<br />

includes walnut tuile and duck liver<br />

parfait and bao buns, for heaven’s sake.<br />

Delicious? Yes. But basic? Maybe not<br />

so much. You need a certain amount<br />

of skill and dedication – and time – to<br />

follow many of the recipes. Of course<br />

there are loads and loads of dishes that<br />

are less daunting ... the tomato tart<br />

with Parmesan catalan, basil and olives<br />

is time-consuming but delicious; the<br />

pancetta-wrapped prawns with crab<br />

and spring onion risotto is possibly our<br />

favourite recipe from the book.<br />

Liam, an Irish chef who worked in<br />

restaurants around the world before<br />

moving to Cape Town where he’s<br />

opened restaurants including the<br />

original Chefs Warehouse 10 yearsor-so<br />

ago and more recently Chefs<br />

Warehouse Maison in Franschhoek,<br />

describes his way of cooking as<br />

being focused on technique and on<br />

extracting as much flavour as possible<br />

to create tasty and well balanced<br />

dishes. This is the second edition of<br />

his book – the first, self-published,<br />

was only available at his restaurants.<br />

SUCCESS<br />

She is young, unapologetic and making moves. We catch up with Bedfordview entrepreneur<br />

Nomsa Nhlabathi, estate agent and director, who feels her best business move was<br />

defining her niche and not entertaining offers that go against that.<br />

One thing is certain, at the age of 26, Nomsa is well underway to make her mark in<br />

the real estate industry with her goal set on nothing but success.<br />

Her career in real estate started during the early days of her tertiary life. While most<br />

young adults were still figuring themselves out, Nomsa was set on pursuing a<br />

new career.<br />

“My real estate journey began in the North West where I was studying for a BCom<br />

in economics.<br />

“I interned at a real estate company for a while and did exceptionally well as an intern.<br />

Then I got an offer to run someone else’s real estate company in Kimberley and that<br />

is when I set my eye on ownership.<br />

“I wanted to purchase the franchise. However, they wanted to charge me over R500<br />

000 for the franchise which did not make sense. It was not a popular brand and everyone<br />

in the area had been introduced to it by me.”<br />

Nomsa then made the brave decision to resign and start her own property business.<br />

She felt that at the age of 23, she had enough experience and drive and so Prestige<br />

Property Group opened its doors in March in 2018.<br />

“I found my niche and was not prepared to entertain offers that went against it.<br />

“My main goal with the firm is to build a corporation that epitomises excellence<br />

through quality customer service - from how our clients are educated about their<br />

real estate transactions and decisions, to the actual member of the workforce and<br />

the lifestyle they embody.”<br />

Educating and building strong relationships with her staff is also high on her list<br />

of priorities.<br />

“My plan is to hire quality candidates and empower them, by not only educating<br />

them about real estate, but also about being a human representation of excellence<br />

and nothing less.”<br />

Setting up shop<br />

Nomsa chose Bedfordview as her headquarters because she grew up in the <strong>East</strong><br />

Rand and wanted to be a part of the change that will shift the quality of the<br />

<strong>East</strong> Rand.<br />

“I enjoy the potential this city holds. I want to contribute immensely to it and<br />

the fruits it is about to bear.”<br />

She added how she loves that the infrastructure is already in place and that Bedfordview<br />

is rated among the best areas in Africa.<br />

“I spent most of my childhood admiring Bedfordview because my father is a warrant<br />

officer at the Bedfordview Police Station,” said Nomsa.<br />

Her favourite hangouts are Starbucks in <strong>East</strong>gate and Woolworths in<br />

Bedford Centre.<br />

“I hold some of my most important meetings at the Harvard Cafe inside<br />

Rand Airport.”<br />

Highlights and challenges of your business?<br />

“I’ve just listed a globally celebrated five-star hotel in Centurion and a well-run shopping<br />

complex in Germiston. This<br />

caps our listings for the year at a well<br />

over R200-milliom portfolio and it<br />

is only June, so we have bigger and<br />

better plans ahead.<br />

“We are also working towards<br />

building systems to ensure that our<br />

business is digitally equipped to handle<br />

the 4IR without losing touch with<br />

human interaction,” Nomsa said.<br />

“I think being a young female in any<br />

industry is challenging. Older, more<br />

experienced people may not agree<br />

with your methods. They may also<br />

make the assumption that you do<br />

not know what you are doing because<br />

you are younger.<br />

“In more dire cases, you get clients<br />

who do not want to pay you your<br />

worth, or they try to pay less for my<br />

services because they assume they<br />

will get away with it.<br />

“Oh, and another is stubborn<br />

clients who refuse to go through<br />

the pre-approval process before<br />

looking for a home to buy, an<br />

office to lease or a building for<br />

investment purposes.<br />

“What many people don’t understand<br />

is that getting pre-qualified<br />

is for their own good. Why would<br />

you want to waste weeks or months<br />

looking for your dream home if<br />

there’s a chance that you can’t even<br />

line up financing?”<br />

Describe yourself<br />

“I draw deep satisfaction from solving<br />

problems and being the ultimate<br />

advocate for progressive change.<br />

“I am a thought leader in any conversation<br />

about the integral position<br />

real estate holds in our constant, yet<br />

subtle evolution. My ultimate goal is to build systems that will outlive us and<br />

assist us in unearthing the best we have to offer. Breaking barriers is an action<br />

I not only find necessary but natural.”<br />

When asked about her mission in life the answer was a quick “to live a full<br />

and happy life. I will cultivate beautiful personal and working relationships, I<br />

will eat well and take care of my body, and I will have fun and be intentional<br />

about the life I am living.”<br />

Nomsa enjoys working with some jazz in the background over a cup of coffee,<br />

travelling with her very small circle of friends and she loves teaching and<br />

building through the Prestige Property Group. “I also enjoy dancing, particularly<br />

to some jazz. I find cooking extremely therapeutic. I love spending time<br />

with my dogs and I love a good book.<br />

“For time out, I go golfing at the Germiston Golf Club. I love its rich history<br />

and the atmosphere is really peaceful.”<br />

Any skills and tips you’d like to share?<br />

“Everything in life is sales. Sales is a skill I would encourage everyone to learn,”<br />

she said earnestly.<br />

Life lesson and a message to share?<br />

“Charity begins at home. Take care of home and your community will be a<br />

community to be proud of.<br />

“I would encourage young people to chase the greatest, most beautiful version<br />

of themselves possible and be that.”<br />

Nomsa believes the following<br />

five tips helped her to succeed:<br />

1. “When you grow, your business<br />

grows, so do not stop<br />

growing. Upgrade your education,<br />

work out, sleep well, take<br />

care of your heart and mind, and<br />

replace bad habits with good<br />

ones. Practise kindness and love.<br />

Just don’t stop being better.<br />

2. “Be persistent. Do not stop.<br />

Everything in life is seasonal,<br />

including the adversities.<br />

3. Define what success means to<br />

you and be relentless in<br />

its pursuit.<br />

4. “Love your work, you spend<br />

most of your life doing it.<br />

5. “And rest.”<br />

industry that loves the mud<br />

and dirt but she is standing<br />

her ground. Renay Tandy chats<br />

to us from her Meyersdal<br />

home about being a business<br />

woman, mother and wife.<br />

As a five-day-old baby, born in Durban,<br />

Renay was adopted by two people<br />

she calls her ‘amazing parents’.<br />

The family then found their way to<br />

the suburbs of Joburg <strong>South</strong> where<br />

she grew up in Mondeor.<br />

“I went to Mondeor Primary and then<br />

Mondeor High, and have lived in the<br />

south pretty much my whole life. I<br />

have one older brother and a very<br />

close group of friends who are like<br />

sisters to me.<br />

“The south is my home, and has become<br />

a part of me. I love living in the<br />

south – I love its beautiful hills and<br />

open spaces, the small-town feel,<br />

and being so close to nature.”<br />

Home is where the heart is<br />

She married her high school sweetheart<br />

and business partner, Russel,<br />

11 years ago. The two have been<br />

dating since they were 16 and grew<br />

up together.<br />

Today, the couple lives in the Meyersdal<br />

Nature Estate with their two<br />

beautiful girls, Emma (7) and Megan<br />

(4). Emma is in Grade One at Marist<br />

Brothers Linmeyer and Megan is at<br />

Creative Academy Preschool. “They<br />

are everything to us, and Russell<br />

and I both put our family before<br />

anything else.<br />

“When I was seven months pregnant<br />

with Emma, Russell and I finished<br />

building our home in the Meyersdal<br />

Nature Estate, just a few weeks before<br />

I was due! We love living in the<br />

Estate – our children can ride their<br />

bikes around safely, and we enjoy<br />

driving, walking and cycling through<br />

the beautiful nature reserve right on<br />

our doorstep.<br />

“We are very much an outdoors-lov-<br />

ing family. On the weekend, you will find us either at Penbritte<br />

Equestrian Centre, where Emma and I ride, and where my other baby,<br />

my horse, lives.<br />

I have been riding horses since I was six years old, and it is my<br />

absolute passion.<br />

“I am also a mom to a beautiful palomino rescue horse, Brenny, who is such a<br />

big part of our lives. Being at the stable is my happy place, and it’s where I go<br />

for my ‘me time’.”<br />

Another place the family spends quality time together is at one of the driving<br />

ranges where Russell and the girls love hitting balls, or visiting friends and<br />

family “When we still could!” she added quickly.<br />

Their favourite holiday destination is Dunkeld Equestrian Estate in Dullstroom<br />

with its rolling hills and breath-taking views where they love waking up to the<br />

view of horses grazing in the white-picket fenced fields and picturesque fly<br />

fishing dams. “Russell is an avid fly fisherman, and the girls and I love the out<br />

rides on the horses.”<br />

Back to business<br />

Not many people know this, but her plan was to become a horse riding instructor<br />

until her beloved horse died while she was writing her matric exams.<br />

“That completely changed my life course, and made me rather decide to<br />

study journalism.<br />

“I was working as a journalist for a mining and engineering trade magazine<br />

before Russel and I started NGAGE. “We spotted a gap in the market for a<br />

public relations agency that specialised in industrial sectors such as mining,<br />

engineering, construction, IT and agriculture.” Fourteen years later, NGAGE has<br />

won a number of industry awards, the most recent for Best Industrial Communications<br />

Agency in <strong>South</strong> Africa, and has filled the gap for an agency that<br />

loves the mud and dirt of communication.<br />

“Over the years, we have grown into a full-service agency, offering everything<br />

from public relations to social media, advertising and design, online marketing<br />

and video production in-house.”<br />

Today, their business has a team of 20 professionals who are happiest in their<br />

hard hats on site with clients, and they absolutely love what they do.<br />

Challenges in life and business<br />

“In life, I think that the biggest challenge I have faced is lockdown and learning<br />

how to change our normal way of living overnight.<br />

“Juggling home-schooling our two girls, especially Emma, who is in Grade<br />

One, working from home and keeping the agency running successfully while<br />

the office was closed, all while cooking and cleaning, was a huge challenge<br />

for me.<br />

“I normally lead a very busy life, between the school run, extra-murals, nonstop<br />

client and internal meetings and exercising and socialising. Lockdown<br />

forced me to slow down, which was a difficult change for me to process.<br />

“I’ve had good and bad days, but I<br />

have learnt to love this new slowpaced<br />

life. There are so many positives<br />

to being in lockdown with your<br />

family for nearly three months, like<br />

sharing all of our meals together as<br />

a family, afternoons filled with board<br />

games and telling stories.<br />

“I love being included in my children’s<br />

schoolwork and watching<br />

them learn and develop and, most<br />

of all, being at home with my girls all<br />

day, which has been amazing.<br />

“I will look back on this with fond<br />

memories. In between all the craziness,<br />

the time in lockdown brought<br />

us together as a family and slowed<br />

us down to enjoy the small things<br />

in life.<br />

“When it comes to business, I look<br />

back at to when we started NGAGE. I<br />

was only 22 years old.<br />

“Selling to our male-dominated industry,<br />

and expecting them to trust<br />

me to manage their communications<br />

portfolio with very little examples to<br />

show them was very difficult.<br />

“I had to learn to prove myself very<br />

quickly in meetings and make sure<br />

to deliver on any promises that I<br />

made, so that we could quickly build<br />

up a reputation as a trusted supplier.”<br />

Any future plans?<br />

“The world of public relations has<br />

changed more over the past 10 years<br />

than it has for the last 50 years!<br />

“PR professionals need to learn and<br />

evolve to stay relevant, which is very<br />

difficult for some. I, however, love<br />

the challenge of learning something<br />

new, and I have embraced the<br />

changes and opportunities.<br />

“Social media is an integral part of<br />

a PR professional’s portfolio. If you<br />

don’t learn how to incorporate social<br />

media into your PR strategy, you will<br />

be left behind.<br />

“Another opportunity is measuring the<br />

effectiveness of online coverage and<br />

showing actual leads from these articles.<br />

This is something that we are very<br />

excited about at NGAGE and something<br />

that we are incorporating into our<br />

report for clients.”<br />

A message for other women<br />

out there?<br />

For some reason, we are too hard on<br />

ourselves. I recently learnt that you can’t<br />

pour from an empty cup. We need to<br />

sometimes put ourselves first so that we<br />

can take care of our family.<br />

WHEN THE<br />

SHOE FITS<br />

She lives by the motto, ‘Give a girl the right pair of shoes and she can conquer the world’.<br />

And for Enya de Oliveira, former Linmeyer resident, the shoe fits just right and<br />

she is on a quest to master the world in shoe design.<br />

Enya currently lives in Portugal where<br />

she designs shoes. She recently made it<br />

into the top 10 designers of the #ChooSketch<br />

Competition on Jimmy Choo’s<br />

Instagram page.<br />

When we caught up with her to chat<br />

about the competition and her life since<br />

she left for Portugal, she eagerly told<br />

us, “Sandra Choi, the creative director,<br />

picked her top 10, and then the top five<br />

winners would be selected by the public.<br />

Over 10 000 entries were sent from<br />

all over the world. I made it to the top<br />

10, and just to be recognised by Sandra<br />

Choi and the Jimmy Choo team already<br />

feels like a win to me.”<br />

But why shoes?<br />

“I always wanted to be in a design field, I<br />

just didn’t know which one. There<br />

are so many. Graphic, product or<br />

interiors. Fashion seemed like the most<br />

obvious choice.<br />

“Back home, in my high school years in<br />

Marian College Linmeyer (Marist Brother),<br />

all my friends were applying to LISOF<br />

and FEDISA, we were all fashionistas.<br />

However, I just didn’t see how I would fit<br />

into the bigger picture. We can’t all be<br />

fashion designers.<br />

“Then during matric dance season I kept<br />

hearing the same complaints from girls<br />

and guys alike: ‘I can’t find shoes. Either<br />

‘I’m too small a size’, like my best friend,<br />

or ‘I’m too big a size’ like the rugby boys<br />

who only wore sneakers and couldn’t<br />

find formal shoes in size 13.<br />

“The penny kind of dropped. I have<br />

always loved shoes and it just sounded<br />

so unique. I had never met anyone who<br />

was a shoe designer and that interested me. I could now see how I could fit into the<br />

bigger picture.<br />

“To this day most people are still quite intrigued when I say what I do.<br />

“Oh, and I also know my great grandmother was a ‘Gaspeadeira’ which is the technical<br />

word for a footwear seamstress. Maybe it’s in my blood.”<br />

Taking the leap<br />

With her dream in sight, Enya left home to travel overseas at the age of 18. We asked<br />

her about her fears when she left and the drive behind her decision.<br />

“I think the 18-year-old me had few fears. Probably because I was naive and I had<br />

my mom. She came with me for the first nine months, leaving my poor dad behind<br />

in SA.<br />

“I am eternally grateful to both of them because I know how much they hate to be<br />

apart and how, without both of them, I wouldn’t be where I am today.<br />

“When we arrived, my mom did everything for me because I spoke no Portuguese<br />

and was 18! I had no idea about anything in the real world.<br />

“She got me into the school, found us our first home, set up bank accounts and did<br />

all the necessary paperwork, helped me with my projects, taught me Portuguese, did<br />

the food shopping every day because we didn’t have a fridge, did laundry by hand;<br />

she got all of this and more done without a car to travel.<br />

“We lived with the absolute minimum because we were living in a new country and<br />

didn’t know what was going to happen. My dad supported both of us financially,<br />

which was not easy with the exchange rate. I think they had more fears than me.<br />

Looking back it was quite an adventure.<br />

“I think the final decision stemmed form the fact that I always wanted something<br />

more than SA. I wanted to live in Europe or the US. While everyone was looking into<br />

universities or moving to Cape Town, I was looking at the rest of the world.<br />

“And then this door opened and I couldn’t say no. Ever since then I haven’t said no to<br />

any opportunity, big or small, that has come my way.<br />

“I look at life as my university. Life and its experiences will teach me whatever I need<br />

to know.<br />

Up for the challenge<br />

The language was one of her biggest challenges. “We had Portuguese lessons at<br />

Marian, and I even did them for a few years in primary school but I really did not<br />

enjoy them.<br />

“I mean even more school on top of the school I was already forced to do. No thanks.<br />

I remember my exact word: ‘When will I ever need Portuguese?’ Well, well, well, did<br />

that not come back to bite me.<br />

“I thought I knew how to speak it until the first day of class and having lunch with<br />

people with a thick northern accent. I would listen to the lectures in Portuguese,<br />

translate in my head and write my notes<br />

in English. My mom, who is a translator,<br />

would translate all my assignments<br />

for me.<br />

“My colleagues helped me with Portuguese<br />

and I could help them with English.<br />

I basically learnt how to read and<br />

write with text messages and predictive<br />

text. I am now pretty fluent reading, writing<br />

and speaking. My English, however,<br />

has been what has opened many doors<br />

for me.<br />

“I also was very homesick for the first<br />

year. I missed my family and friends. I<br />

cried a lot. My first European winter was<br />

awful. My first birthday and Christmas<br />

were especially difficult. It was a difficult<br />

time but I never considered giving up.”<br />

Ticking the boxes<br />

Despite all the challenges, the sweet<br />

taste of success was finally there.<br />

“I feel I have had many successes. The<br />

fact that I’m still here, seven years later,<br />

when many people said I wouldn’t make<br />

it six months, feels pretty good.<br />

“I got a scholarship to study my passion.<br />

I interned for Luis Onofre, the most<br />

famous and best in my eyes, Portuguese<br />

footwear designer. I lived and interned<br />

in Italy, I was the senior designer for<br />

Cristina Ferreira, a TV personality and influencer,<br />

for four years, a senior designer<br />

for Cristiano Ronaldo, lived and interned<br />

at Sophia Webster, London, one of my<br />

favourite shoe designers.<br />

“Now, I work for a New York-based company<br />

which was on my bucket list, and<br />

now Jimmy Choo. All successes, some<br />

big, some small, but all successes which<br />

have pushed me closer and closer to<br />

something bigger.<br />

Tell us about your vision and mission<br />

“I guess the vision of any designer is<br />

to see their name on a shoe, to own a<br />

brand. However, because I work daily<br />

in the industry I know all the difficulties<br />

new brands have and that obviously<br />

scares me still.<br />

“Hopefully, one day I will have the courage<br />

to take that leap of faith. For now<br />

I really want to grow within Thursday<br />

Boots Co. I want to expand their infrastructure<br />

in Portugal and get lots of<br />

people wearing Made in Portugal.<br />

“Made in Italy still holds so much value<br />

and I hope to get Made in Portugal that<br />

value in consumers’ eyes because technically<br />

we are already there.<br />

“My mission will always take me back<br />

home though. I would love to be the<br />

fairy God mother of shoes. I would love<br />

to get a pair of shoes on every <strong>South</strong> Africans feet and then the rest of Africa.<br />

“I don’t see shoes as a luxury. They are an essential which we all have a right to.<br />

I would love to start foundations, educate young people about the industry and<br />

be a philanthropist.<br />

The best part of what you do?<br />

“I love to see my ideas come to life in the factories. I love to draw and the creative<br />

process. Many people think this is all I do. In reality this is probably five per cent of the<br />

process and usually the quickest part.<br />

“There is something so special about being in a shoe factory, watching the leather<br />

getting cut and stitched, and seeing the evolution from 2D to 3D... or maybe its all<br />

the free shoes I get, lol.”<br />

Any future dreams and plans?<br />

“Eventually, I would love to own my own company or brand. I would love to create<br />

jobs for my family here in Portugal as well as other talented people. I would love to<br />

be the first millionaire in my family and give back to both the SA and Portuguese<br />

communities.”<br />

Portugal, shares some trends and must haves for spring and summer.<br />

The Row<br />

The strappy, “barely there” sandal:<br />

Whether they are flat, kitten-heeled<br />

or a skimpy stiletto, the strappy aka<br />

‘naked’ sandal is arguably one of the<br />

leading trends for next summer. With<br />

early 2000s trends circling back, this<br />

is putting extra emphasis on the<br />

‘barely there’ sandal. Play into the<br />

kitsch look with bold neons, clear<br />

PVCs, high-heel tubular flip-flops and<br />

square toes! Look at brands like The<br />

Row, Cult Gaia and Zara.<br />

The sporty sandal:<br />

The active footwear crossover<br />

continues to dominate the markets<br />

this season for ladies, men<br />

and children alike. The ergonomic<br />

construction allows it to serve as<br />

an alternative to sneakers during<br />

the warmer months, providing<br />

practical comfort. The sporty or active<br />

sandal acts as a versatile casual<br />

sandal where the level of “active”<br />

aesthetic can be dialled up or<br />

down, depending on your personal<br />

style. If you are more inclined to<br />

a less active more classic look, look<br />

that won’t date and will last you a<br />

lifetime.<br />

Sneakers:<br />

Sneakers are a year-round essential. For<br />

SS20 this is no different. However, we<br />

are noticing a considerable shift away<br />

from the excessive, loud and chunky<br />

designs that have been dominating the<br />

markets the last few seasons. For SS20 its<br />

all about sleeker more minimal designs<br />

with a vintage vibe. The revival of the<br />

1980s Court Sneaker, The Plimsoll and<br />

the Retro Runner are all good examples<br />

of this trend for the whole family. Key<br />

details such as perforated toe boxes and<br />

countered suede accents lend to that<br />

vintage vibe. Look at brands like Loeffler<br />

Randal and Adidas (80s Court Sneaker),<br />

Converse x END colab and Novesta<br />

(Plimsoll), FEIT and New Balance (Retro<br />

OF PURPLE<br />

Greens tend to hog the limelight, but filling<br />

your plate with purple foods may be a<br />

very smart choice right now. They’re really<br />

incredible for your health.<br />

Registered dietician at Nutri & Flora,<br />

Dr Florence Malongane lists a few of<br />

the health benefits of purple fruit and<br />

veggies.<br />

Grapes<br />

Rich in antioxidants and nutrients such<br />

as potassium, calcium, iron, folate,<br />

magnesium, selenium, vitamins A, C<br />

and B6, among other benefits. Red<br />

grape skin is very high in resveratrol,<br />

which accounts for many health<br />

benefits such as supporting heart<br />

health, cholesterol level management,<br />

prevents signs of ageing and other skin<br />

and helps the body’s ability to manage<br />

healthy blood sugar levels.<br />

Blueberries<br />

Similar to grapes, blueberries are rich<br />

Beetroot<br />

That bright red root isn’t just a<br />

looker. Beets and beet greens are<br />

loaded with life-giving minerals,<br />

heart, kidneys, muscle, nerve and<br />

digestive functions), copper, iron,<br />

Purple cauliflower? No … it’s not some<br />

experiment gone wrong. The purple<br />

colour is caused by the presence of<br />

and cooks a little faster, than its white<br />

cousin. This cauliflower is a great source<br />

of vitamins C, K, B6 and fibre. Because<br />

Lamb shank and oxtail and a bottle of<br />

smooth, luscious red. We’re loving winter<br />

Slow-braised Karoo lamb shank<br />

(Serves 4 – 6)<br />

Warm up with a hearty meal of slow-braised Karoo lamb<br />

shank ... rich and delicious, cooked until the meat falls<br />

off the bone. The recipe was shared by Spier Hotel ... it’s<br />

winter food at its best. Serve it with a bottle of Spier<br />

Creative Block 3. Subtle, perfumed notes of blackcurrant,<br />

blackberry, raspberry, pomegranate and mulberry are<br />

followed by spicy flavours of black pepper and coriander<br />

... it’s a silky, rich mouthful.<br />

You’ll need:<br />

30 ml (2 Tblsps) vegetable oil; 4 medium-large lamb<br />

shanks, trimmed of excess fat; 1 large white onion, diced;<br />

2 large carrots, peeled & finely chopped; 6 garlic cloves,<br />

finely grated; salt and freshly ground black pepper, to<br />

taste; 500 ml (2 cups) beef stock; 375 ml (1.5 cups) good<br />

red wine; 4 large tomatoes, chopped; 30 ml (2 Tblsps)<br />

tomato paste; 4 sprigs rosemary; 4 sprigs thyme;<br />

5 bay leaves<br />

Method:<br />

Preheat the oven to 160 °C. Heat the oil in a large, wide<br />

oven-proof pot over medium-high heat. Brown the shanks<br />

on all sides, then remove from pot and set aside. Add the<br />

onions and carrots to the pot and fry over medium heat<br />

until softened, then add garlic and cook for one minute.<br />

Return the shanks to the pot and season generously with<br />

salt and pepper. Add stock, wine, chopped tomatoes,<br />

tomato paste and herbs. Bring to a simmer, then cover<br />

the pot with a lid. Transfer to the oven and cook for 2 ½ - 3<br />

hours, or until the meat starts falling off the bone.<br />

Remove shanks from pot and set aside. Discard bay<br />

leaves and herbs from the sauce and place pot on stove.<br />

Simmer sauce over medium heat until thickened to your<br />

desired consistency. Add the shanks and serve warm with<br />

(optionally) herbed pap and vegetables.<br />

Oxtail with green olives and orange<br />

Winter is the time to bring out full-bodied reds, best enjoyed by the fireside or with heart-warming<br />

comfort food. New Roodeberg Reserve, a blend of the finest wines in the cellar, is the perfect<br />

freezing-day food companion ... think meaty casseroles, roasts and game dishes. An intense and<br />

richly textured wine, its intricate layers of red plum, blueberries, crushed herbs and tobacco leaf<br />

with hints of dark chocolate are rounded off by soft, silky tannins. The wine infuses rich flavour<br />

when added to hearty winter dishes like this one, from foodie Elmarie Berry.<br />

You’ll need:<br />

2,5kg oxtail; olive oil; 2 onions, diced; 2 Tblsps soy sauce; a few sprigs fresh rosemary; 4 bay leaves; 1<br />

glass Roodeberg Reserve; 1 cup beef stock; finely grated rind of 1 orange; 200g pitted green olives;<br />

200g button mushrooms<br />

Method:<br />

Preheat oven to 200°C. Heat the olive oil and fry the onion until soft. Spoon it out and add oxtail<br />

to the hot pan. Fry until golden brown. Add the cooked onions, garlic, bay leaves, rosemary, wine,<br />

stock and orange rind. Place in the oven and bake for 3 to 4 hours. Check on it and add extra liquid<br />

if necessary. Add the olives and mushrooms and bake for another 1 hour.<br />

Chocolate fondant with Lindor<br />

We’re fond of a good Pinotage ... the FAT Bastard Pinotage is a great<br />

choice. This deep ruby red, medium bodied wine is all lush dark fruit<br />

with hints of chocolate and mocha. Perfect to serve with one of our<br />

favourite desserts ... a rich chocolate fondant. This one, created for FAT<br />

Bastard by Sam Linsell, is a wonderful way to end a winter meal.<br />

You’ll need:<br />

200g dark chocolate, chopped; 100g salted butter; 1 tsp good quality<br />

instant coffee granules or ½ tsp espresso powder; 2 free-range eggs;<br />

2 free-range egg yolks; ½ cup (110g) caster sugar; ¼ cup flour; 4 white<br />

or milk chocolate Lindt Lindor balls or 3 x squares from a slab; cocoa<br />

for dusting<br />

Method:<br />

Preheat your oven to 200°C / 400°F and grease 4 dariole moulds or<br />

ramekins (each with an approx capacity of 250ml / 1 cup). In a small<br />

pot melt the butter, coffee and chocolate until smooth. While it’s<br />

melting, using an electric beater, whisk the eggs, egg whites and sugar<br />

until pale and fluffy – about five minutes. Add the chocolate mixture<br />

and flour and briefly mix until well combined. Divide the mixture<br />

evenly between the four moulds and lightly press the Lindt Lindor<br />

balls/squares into the mixture in the middle. Bake for 16 to 18 minutes<br />

on a baking tray until they’ve puffed up and are firm on the top. Gently<br />

scrape a knife round the edges to loosen and tip out onto plates to<br />

serve hot.<br />

This makes 4 generous fondants, so you could quite easily make 6 to 8<br />

much smaller ones. Just reduce the cooking time down to 12 minutes<br />

and halve the quantity of Lindor chocolate you add to the middle.<br />

Every wine tells a story<br />

Every wine tells a story. This is the motto at<br />

Muratie, the historic estate tucked away<br />

in the beautiful Knorhoek Valley north of<br />

Stellenbosch. Established in 1685, Muratie<br />

is one of the oldest farms in <strong>South</strong> Africa,<br />

The Muratie Martin Melck Cabernet<br />

Sauvignon Family Reserve 2016 (named after<br />

20 years) boasts four-and-a-half stars in Platter’s<br />

<strong>2020</strong> SA Wine Guide. It has an intense ruby-red<br />

colour in the glass, opulent and polished, with<br />

the blackberries, currants and plums almost<br />

crème de cassis-like in their intensity. Even<br />

after the last sip, this red wine, with its lingering<br />

finish, will be remembered for a long time. It<br />

costs R460 a bottle and is only available at the<br />

estate or online.<br />

Muratie Martin Melck Cabernet Sauvignon<br />

2015 is classically styled and restrained. Aged<br />

for 20 months in French oak, it’s a full-bodied<br />

wine and will reward cellaring for at least<br />

another six years. Also a four-and-a-half star in<br />

the Platter <strong>2020</strong> guide, it costs R200 a bottle,<br />

and you’ll find it at wine merchants or online.<br />

Muratie Ronnie Melck Syrah Family<br />

Selection 2015/2016 (named after Ronnie<br />

Melck who, when asked to single out his<br />

favourite wine, always answered, ‘the wine in<br />

my glass’, which was often a Shiraz). A robust<br />

statement wine produced in extremely limited<br />

quantities (only 2200 bottles, each individually<br />

numbered), it’s described as expressive,<br />

intriguing and unharnessed. Rich concentrated<br />

blackberries, red currants and cherries burst<br />

onto the palate, while hints of black olive,<br />

pepper, smoke and bacon add savoury appeal.<br />

It’s only available at the estate or online for<br />

R530 a bottle.<br />

Ronnie described Muratie wines as ‘humble,<br />

honest and full of integrity, with quality being<br />

the only answer’, and the Muratie Ronnie<br />

Melck Shiraz 2016 certainly delivers on all<br />

those fronts. It’s an intensely red wine with a<br />

violet edge, offering rich floral and berry notes<br />

with hints of green peppercorns and gamey<br />

nuances, supported by a sweet spiciness with<br />

a vanilla, crème brûlée aftertaste. You can buy<br />

it at wine boutiques or online for R190 a bottle.<br />

prawn pasta<br />

(Serves 2)<br />

You’ll need:<br />

1 crushed garlic clove; 5ml finely<br />

chopped chilli (or less if you’re not<br />

a spicy food fan); 100ml olive oil; 14<br />

uncooked prawns, de-veined and<br />

peeled; 350g spaghetti (or pasta<br />

of your choice)<br />

Method:<br />

Heat olive oil in a pan over medium<br />

heat. Add garlic and chilli – be careful<br />

not to burn – and fry for about three<br />

minutes. Add the prawns and cook<br />

until pink. Season with salt according<br />

to taste.<br />

In a large pot, bring water to a boil<br />

over medium-high heat. Stir in 1 tsp<br />

of salt. Add pasta and cook until al<br />

dente. Drain off excess water. Plate<br />

pasta, top with the prawns and garnish<br />

with parsley.<br />

Pesce all’ Aqua Pazza<br />

(fish in the crazy water)<br />

(Serves 6)<br />

You’ll need:<br />

6 fillets of fresh white fish (hake works<br />

brilliantly); half a tin peeled chopped<br />

tomatoes; 125ml pitted black olives; 2<br />

cloves garlic, diced; 125ml dry white wine<br />

Method:<br />

Preheat oven to 180°C. Place fish fillets in a<br />

baking pan drizzled with olive oil. Season<br />

and top with tomatoes, olives, garlic,<br />

wine and mix well, making sure to coat<br />

everything. Place in the oven for 12 to 14<br />

minutes, turning the fish halfway through.<br />

Place fillets on a plate and top generously<br />

with the sauce from the pan. Add a spritz<br />

of olive oil.<br />

Serve with boiled baby potatoes doused<br />

with Maldon salt, olive oil and chopped<br />

Italian parsley. You can also add sautéed<br />

spinach seasoned with garlic.<br />

Chicken pot pie<br />

(Serves 4)<br />

You’ll need:<br />

2 onions; 600g chicken thighs, skin off,<br />

bone out; 350g mixed mushrooms; 1<br />

bunch of fresh thyme (30g); 400g puff<br />

pastry (cold)<br />

Method:<br />

Preheat the oven to 220°C. Place a<br />

30cm non-stick ovenproof frying pan<br />

on high heat, with a smaller non-stick<br />

pan on a medium heat alongside.<br />

Pour 1 Tblsp olive oil into the larger<br />

pan. Peel and roughly chop the<br />

onions, adding them to the larger pan<br />

as you go. Roughly chop two-thirds<br />

of the thighs, finely chop the rest,<br />

and add to the onion pan. Cook for<br />

six minutes, or until golden, stirring<br />

occasionally.<br />

Meanwhile, place the mushrooms<br />

in the dry pan, tearing up any larger<br />

ones. Let them toast and get nutty for<br />

four minutes, then tip into the chicken<br />

pan and strip in half the thyme leaves.<br />

Remove pan from the heat, add a<br />

pinch of sea salt and black pepper,<br />

then stir in 1 Tblsp red wine vinegar<br />

and a cup of water.<br />

Working quickly, roll out the pastry<br />

so it’s 2cm bigger than the pan,<br />

then place it over the filling, using a<br />

wooden spoon to push it into the<br />

edges. Very lightly criss-cross the<br />

pastry, then brush with 1 tsp olive oil.<br />

Poke remaining thyme sprigs into the<br />

middle of the pie. Bake at the bottom<br />

of the oven for 15 minutes, or until<br />

golden and puffed up. Easy!<br />

Lemony zucchini/ baby marrow linguine<br />

(Serves 2)<br />

You’ll need:<br />

150g dried linguine; 2 mixed-colour zucchini/ baby marrows; ½ a bunch of fresh mint (15g); 30g Parmesan cheese;<br />

1lemon<br />

Method:<br />

Cook pasta in a pan of boiling salted water until al dente. Drain, reserving a cupful of the cooking water.<br />

Meanwhile, slice the zucchini/ baby marrows lengthways, then again into long matchsticks with a knife or julienne<br />

peeler. Place a large non-stick frying pan on medium-high heat with 1 Tblsp olive oil, then add the zucchini/ baby<br />

marrows. Cook for four minutes, tossing regularly, while you finely slice the mint leaves, then stir them into the pan. Toss<br />

the drained pasta into the zucchini pan with a splash of the reserved cooking water. Finely grate in most of the Parmesan<br />

and a little lemon zest, squeeze in all the juice, toss well, then taste and season to perfection with sea salt and black<br />

pepper. Dish up, finely grate over the remaining Parmesan and drizzle with 1 tsp of extra virgin olive oil before tucking in.<br />

Meltin’ mustardy beef<br />

Although very easy to prepare, you have to start early as this is slow cooked for<br />

four hours. But it’s worth the wait!<br />

(Serves 6)<br />

You’ll need:<br />

900g beef shin, bone out (ask your butcher for the bone); 500g carrots; 2 onions,<br />

125ml Worcestershire sauce; 2 heaped tsps wholegrain mustard<br />

Method:<br />

Preheat oven to 160°C. Place a large shallow casserole pan on high heat, with<br />

a large non-stick frying pan on a high heat alongside. Dice the beef into 5cm<br />

chunks and toss with a generous amount of black pepper and a pinch of sea salt,<br />

then dry fry in the hot frying pan with the bone for eight minutes.<br />

Meanwhile, wash and trim the carrots, chop into 5cm chunks, and place in the<br />

casserole pan with 1 Tblsp olive oil. Peel and quarter onions and break apart into<br />

petals, straight into the pan, stirring regularly.<br />

When meat is nicely coloured, tip it into the casserole pan, then stir in<br />

Worcestershire sauce and mustard, and cover with 800ml<br />

boiling kettle water.<br />

Cover, then cook in the oven for<br />

four hours, or until the beef is<br />

meltingly tender. Loosen<br />

with a splash of water,<br />

if needed. Taste,<br />

season to<br />

perfection,<br />

and serve.<br />

Sticky lamb chops<br />

(Serves 2)<br />

You’ll need:<br />

6 lamb chops, French-trimmed (600g total); 200g baby rainbow carrots; 8 cloves garlic; 3 oranges; ½ a bunch of fresh<br />

thyme (15g)<br />

Method:<br />

Score fat of the lamb chops, season with sea salt and black pepper, then line them up, like a rack, and sit them<br />

together fat edges down in a large shallow casserole pan on medium-high heat.<br />

Leave for five minutes to render and crisp up. Trim and add the baby carrots (halving any larger ones) and the<br />

unpeeled garlic cloves alongside, turning the carrots regularly.<br />

Gently turn the chops onto their sides, to cook for two minutes on each side, or until golden but still pink in the<br />

middle. Meanwhile, use a vegetable peeler to peel strips of zest from one orange. Sprinkle them into the pan with<br />

the thyme sprigs, and toss together for just 30 seconds to get the flavours going. Remove chops to a plate to rest,<br />

then squeeze the juice from all three oranges into the pan.<br />

Let the juice bubble and reduce until sticky, quickly toss the lamb chops back in with their resting juices, then hey<br />

presto, time to dish up.<br />

to the chef<br />

Give mince a makeover with this magnificent recipe from rising culinary star, chef Ruth<br />

Marovatsanga. We’ve also got a few nifty mince tips up our sleeves to share…<br />

When 27-year-old Rutendo Ruth Marovatsanga<br />

scooped up the coveted Young Star Chef of the<br />

Year Award at the One&Only Reaching for Young<br />

Stars project in 2018, little did she realise it was<br />

the start of what was to become the culinary<br />

adventure of a lifetime.<br />

As part of her prize, Ruth jetted off to Dubai to<br />

take up an intense mentorship experience at the<br />

One&Only The Palm and the One&Only The Mirage<br />

in Dubai.<br />

Her time in Dubai included a spell working in<br />

various restaurants under the wings of executive<br />

chefs and she further built up her culinary<br />

experience in 12 bars and restaurants, one of these<br />

being the three Michelin star restaurant, Stay, with<br />

chef Yannick Alléno.<br />

Ruth barely had time to unpack her bags before<br />

she flew off to the US to take up a six-month<br />

work experience opportunity at Winslow’s<br />

Tavern, a highly-rated restaurant in Cape Cod,<br />

Massachusetts. This top heritage restaurant,<br />

housed in a historic building, is run by <strong>South</strong><br />

Africans, chef patron Phillip and Tracey Hunt.<br />

‘My <strong>2020</strong> plan includes increasing my knowledge<br />

in the front of house aspect of a restaurant<br />

and paying more attention to food and wine<br />

pairing. Now I’ve gained sufficient experience<br />

and knowledge about the food, it’s time to<br />

also understand the wine and service side of a<br />

restaurant. Within the next few years, I want to be<br />

a restaurant manager who can roll up her sleeves<br />

when the commis chef doesn’t show up for duty,<br />

as well as a chef who can easily recommend a<br />

wine to pair with the food.’<br />

If Ruth had the opportunity to cook for five famous<br />

people, she’d make beef Wellington for Gordon<br />

Ramsey; southern fried chicken for Michelle and<br />

Barack Obama; something sweet – maybe a toffee<br />

pudding – for Jamie Oliver and chicken biryani for<br />

Alex Guarnaschelli, the executive chef at New York<br />

City’s Butter restaurant.<br />

her favourite mince recipe with us.<br />

Chef Ruth’s terrine<br />

This works really well for a light lunch<br />

and can be prepared three days ahead<br />

and stored in the fridge. Simply bring it<br />

to room temperature before serving.<br />

(Serves: 8)<br />

You’ll need:<br />

350g rindless streaky bacon rashers;<br />

250g chicken livers; 300g minced<br />

pork; 450g minced beef; 1 large finely<br />

chopped onion; 2 cloves crushed<br />

garlic; 5ml dried oregano; 2.5ml ground<br />

allspice; 115g unsalted melted butter;<br />

120ml dry sherry; salt and ground black<br />

pepper according to taste<br />

Method:<br />

Preheat the oven to 180°C.<br />

With the back of a knife, stretch the<br />

bacon rashers. Use them to line the<br />

terrine dish or other ovenproof dish,<br />

leaving the rasher ends hanging over<br />

the sides.<br />

Finely chop the chicken livers and mix<br />

with the minced pork, minced beef,<br />

onion, garlic, oregano, allspice, and<br />

melted butter. Stir in the sherry and<br />

season with salt and pepper.<br />

Spoon the mixture into the dish and<br />

fold the ends of the bacon over the<br />

top. Cover tightly with foil or a lid, then<br />

stand the dish in a deep roasting tin.<br />

Fill the tin with enough hot water to<br />

reach halfway up the sides of the terrine<br />

dish. Cook in the oven for 90 minutes,<br />

then remove and cover with fresh<br />

foil. Place a weight on top and leave to<br />

cool, chill for up to 24 hours, then turn<br />

out and cut into slices.<br />

Serve with warm crusty bread or toast,<br />

topped with gherkins.<br />

Tips for jollying up your mince<br />

It always pays to keep mince on hand. It’s your budget-friendly bestie, ready to<br />

help out with quick-and-easy meals. Think cottage pie, spaghetti bolognese (kids<br />

love it!) and bobotie. From Italy ... lasagne, from SA ... vetkoek with curried mince.<br />

There are also sausage rolls and burgers, chilli con carne, tacos, meatballs and<br />

meatloaf. All you need is a kilo of mince, with chopped onions, garlic, salt and<br />

black pepper, oregano, basil and coriander – and you’re already halfway there!<br />

We found these five great tips to master mince.<br />

1. By swapping to a leaner mince, traditional recipes can become healthier. For<br />

classics like spaghetti bolognese, cottage pie and chilli con carne, a lean mince<br />

is the best choice. For burgers and meat loafs, mince with a higher fat content<br />

helps to achieve the right texture.<br />

2. Looking for a simple way to spice up your beef mince? Just add dry onion soup<br />

mix. Loaded with onions and a variety of other spices, who knew a little packet<br />

could pack so much punch?<br />

3. If you like the salty, tangy flavour Worcestershire sauce gives your meat, why not<br />

try substituting it for soy sauce? If the soy sauce is making your meat a little too wet,<br />

just add a few bread crumbs or ... peanut butter! Think of it like beef satay.<br />

4. To brown mince correctly, you should only put some of the mince in the pan<br />

at a time, not all of it. Adding too much mince at once reduces the temperature<br />

Veggie of the month<br />

Heirloom sugar snap pea Cascadia is a cool<br />

season vegetable for sowing this month. It<br />

produces unusually sweet, crunchy, edible<br />

pods which are perfect for eating straight<br />

off the bush or adding fresh to salads, but<br />

equally delicious steamed, sautéed, or stirfried.<br />

It’s an easy-to-grow vegetable for<br />

beginners, is a compact vine type, and has<br />

extra disease tolerance to powdery mildew<br />

and mosaic virus. The 7cm to 9cm long, dark<br />

green pods are a produced in abundance,<br />

almost smothering the plant. Be sure to plant<br />

it in a position that receives full sun and has<br />

well-composted soil. For good germination,<br />

soak the seeds overnight before sowing.<br />

Space the plants about 20cm apart, and<br />

keep the soil moist during germination. Pods<br />

should be ready for harvest 60 days from<br />

germination. Depending on the garden’s<br />

micro-climate, Cascadia can be germinated<br />

indoors in seed trays, or sown direct into the<br />

Geranium Marcada in hanging baskets and containers. If, like us,<br />

you’re longing for sunshine and summer, Marcada’s dazzling<br />

magenta flowers are just the tonic you need. This is a stronggrowing,<br />

semi-trailing geranium that spreads up to 45cm,<br />

spilling flowers prettily over the edges of pots and<br />

baskets. It grows and flowers well in cool, as well as<br />

hot, conditions and is drought tolerant, needing<br />

to be kept drier than other geraniums. Being selfcleaning,<br />

the dead flowers drop off easily, so there’s<br />

Fertilize spring flowering annuals<br />

with a liquid fertilizer for flowers.<br />

Increase watering as the temperature<br />

rises.<br />

Wait until the last frost has passed<br />

before sowing summer annuals and<br />

perennials like marigolds, alyssum,<br />

cosmos, Californian poppy, gaillardia,<br />

sunflowers and zinnias.<br />

Fork compost round summer<br />

flowering perennials, fertilize and<br />

water well.<br />

Prune winter flowering shrubs and<br />

neaten evergreen shrubs with a trim.<br />

Clean and weed pathways, driveways<br />

and treat and fix wooden furniture<br />

and garden benches.<br />

Sow spring vegetables like lettuce,<br />

peas, cabbage, spinach and Swiss<br />

chard into trays or small pots and<br />

keep them in a warm, sheltered area<br />

that’s protected from frost.<br />

Prevent snail and slug damage by<br />

using organic snail bait like Ferramol<br />

and eradicate aphids with an<br />

organic insecticide.<br />

Our indoor plant for <strong>August</strong> …<br />

While it’s still nippy outdoors, enjoy the spring fragrance of<br />

Lavandula Stoechas indoors. Besides being very pretty, the scent is<br />

also a natural stress reliever ... so whenever you walk past the plant,<br />

rub its leaves to release the delightful fragrance. Stoechas flowers<br />

are unlike other lavenders. The bracts on top of each bloom<br />

resemble bunny ears, or the open wings of a butterfly. Grown<br />

indoors, Stoechas lavender needs bright light and can take some<br />

morning sun. Let the soil dry out moderately between watering<br />

and snip off dead flowers to encourage more. In warm, bright<br />

conditions, such as a patio or living area, it may flower for up to<br />

three months. After flowering, you can lightly trim it, then plant in<br />

the garden – choose a spot that receives full sun and has soil that<br />
