SERAFINI & VIDOTTO<br />

Francesco Serafini and Antonello Vidotto founded the winery<br />
in1986, with the aim of making quality wine. Aware of<br />
their land’s potential, they decided to apply the cultivation<br />
and vinification <strong>tech</strong>niques of the most prestigious French<br />
winemakers. The public face of the winery is Francesco Serafini.<br />
He is dynamic and outgoing, passionate about wine to<br />
the point of fanaticism and a serious connoisseur and<br />
master taster. He is responsible mainly for the winemaking<br />
and external relations. Antonello Vidotto, who shares Francesco’s<br />
great passion for wine, has a more reclusive personality<br />
and these days spends most of his time tending the<br />
vineyards. For the two partners the pursuit of quality starts<br />
with careful work in the vineyards. Ripe and healthy grapes<br />
come from a high planting density (around 6,000 plants per<br />
hectare) and a low yield of around one bottle of wine per<br />
vine stock. The modern winery, designed by architect Carlo<br />
Palazzolo, is spread over two subterranean floors. The winery<br />
has become a pilgrimage destination not just for lovers<br />
of wine but also for architecture enthusiasts.<br />
Serafini & Vidotto preserve the soil and its vitality by maintaining<br />
the organic substances and by enriching them with<br />
the same micro-organisms nature has chosen for the plants’<br />
own benefit.<br />
