What Makes Stevia a Good Sugar Substitute?

In terms of its composition, Stevia is well-known for its high content of diterpene glycosides

compounds which are responsible for its sweet taste. Among the 230 species in the genus

Stevia, only two species produce the steviol glycosides associated with the sweet taste:

phlebophylla and rebaudiana . The diterpene glycosides are characterized as being around 200

to 300 times sweeter than saccharose or sugars in general. This means you need significantly

less Stevia than sugar to achieve the same level of sweetness.

In terms of cooking applications, one of the most important characteristics of Stevia is that it is

used in mainstream food production.

So is it safe?

There is sufficient evidence to support the claim that Stevia is just as if not safer than its

artificial sweetening counterparts. Though there are still on-going studies to see the long-term

impacts of Stevia extract, scientists agree that it is not harmful if consumed in reasonable

amounts. It is widely accepted that Stevia in its purified form is completely safe.

Studies are currently being conducted, not just to see if it is safe, but to actually measure just

how effective Stevia is in terms of the health benefits it may bring. For example, there were

initial concerns that Stevia would reduce fertility or worsen diabetes, but studies discovered

Filipino people. While she was in the coffee business, one of her staff members suggested

they should either revolutionize the coffee business or shift to another venture since the coffee

shops locally sell the same products that only differ in presentation and marketing strategies.

Fatefully, a doctor friend of hers told her about this miracle plant from Paraguay during one of

her consultations. Of course, the plant her friend was talking about was stevia.

But then, something happened. One day her father approached her and asked if she was still

devoted and questioned her resolve, but she gave him a quick reply with a convincing nod. Her

father then said something she would never forget. Her father gave her a reminder that made

45g Gelatin Sheets

300ml Cold Water

170g Egg

85g Egg Yolks

50g Stevia

9. Fold in the whipped cream, thoroughly.

10. Immediately pipe or spread into prepared pastries or containers, cover and

refrigerate until completely set.
