THE FIRST E-BOOK ON STEVIA IN THE PHILIPPINES
Editor's Message
Hi Health Enthusiasts!
This is indeed, is the very first e-book written on Stevia in the Philippines. We have
produced a lot of articles on the subject -- and still are -- and have curated them to be
easily downloaded by those seeking information on the subject.
We hope you find time to share whatever knowledge you gain from this e-book. Our goal
is to reach as many as people as possible so as to bring forth our advocacy of pushing
sugar alternatives such as Stevia to help curb diabetes which is now the number cause
of death in the Philippines. Sadly, even the younger generation has been suffering from
this debilitating, yet preventable disease.
Take note that there is a brand (and kind) of Stevia that is grown locally. Personally, I find it
better tasting than imported ones. That's besides the fact that by buying local Stevia, we
are helping local farmers and the local economy, too!
So, read on and spread the good news of an alternative to Stevia!

WHAT IS STEVIA AND WHERE DOES IT COME FROM?
Negosentro | What is Stevia and its Origin? | People are taking their health and fitness
seriously, and that means they are maintaining a regular exercise regiment and a proper diet.
Although everyone has their own targets and needs, one of the most popular goals has always
been weight loss. Not only does maintaining a healthy weight give you a better chance of living
a longer life, but you often gain confidence in how you look. A big factor when it comes to this is
diet.
Counting calories has always been a method for those monitoring their weight, and this often
means that they have to sacrifice a lot of their best-tasting favorites in order to stay within their
threshold. The best-tasting food, such as fried and fatty foods, is often the worst for your
health. The worst of all this though is sweets. Experts argue that foods high in added sugar is
probably the worst thing in the modern diet.
WHAT IS STEVIA AND WHERE DOES IT COME FROM?
WHAT IS STEVIA AND WHERE DOES IT COME FROM?
Foods high in added sugar are delicious but provide tons of empty calories and are not very
filling. This means that there is a tendency to eat a high amount of sweets, and that is not good
for your body. Excess sugar intake has been linked to some of the most serious diseases, but
people continue to struggle to resist the temptation. Luckily, there is an alternative that will let
you satisfy your sweet tooth without putting your body at risk.
Stevia is a sweetener that has no cholesterol, no calories, no carbohydrates, and zero
glycemic indexes. It has been used as a substitute for sugar in beverages, baked goods, and
other types of food. It is different from other sweeteners because it is not artificial. Stevia
sweeteners are often 100% organic and natural. If you want to learn more about it, read on.
Where is Stevia from?
Stevia is a sugar substitute extracted from the leaves of a plant species called Stevia
rebaudiana Bertoni. It is a branch bushy shrub that is part of the Asteraceae family that is
closely related to asters and chrysanthemums. It is native to the Amambay region in the
northeast of Paraguay, but can also be found in other parts of South America.
Stevia rebaudiana Bertoni was first classified by Italian-Swiss botanist Moises Santiago Bertoni
in 1899 while conducting research in eastern Paraguay. Despite the fact that he was the first to
describe the plant and its sweet taste in detail, studies have shown that Stevia had been used
centuries prior for various purposes throughout the world. The Guarani Indian population from
Paraguay and Brazil used Stevia as a sweetener for medicinal teas used for treating heartburn
and other ailments. It was utilized as a treatment for burns and stomach pains as well, and it
was even used as a contraceptive. Similarly in other South American regions as well as in
Asia, Stevia was used as a sweetener for teas. Stevia leaves were also chewed on as a sweet
treat.
WHAT IS STEVIA AND WHERE DOES IT COME FROM?
WHAT IS STEVIA AND WHERE DOES IT COME FROM?
What Makes Stevia a Good Sugar Substitute?
In terms of its composition, Stevia is well-known for its high content of diterpene glycosides
compounds which are responsible for its sweet taste. Among the 230 species in the genus
Stevia, only two species produce the steviol glycosides associated with the sweet taste:
phlebophylla and rebaudiana . The diterpene glycosides are characterized as being around 200
to 300 times sweeter than saccharose or sugars in general. This means you need significantly
less Stevia than sugar to achieve the same level of sweetness.
In terms of cooking applications, one of the most important characteristics of Stevia is that it is
thermostable. Since the compounds that make Stevia sweet are not easily destroyed or
deactivated by heat, it is more than suitable for cooking.
So Exactly How Healthy is it?
Stevia provides the same sweet taste like sugar but with no calories and carbohydrates. This
immediately makes it a better alternative than table sugar in terms of its impact on the body.
Instead of providing the empty calories and simple carbohydrates that added sugar does,
Stevia gives room for the complex carbohydrates that provide nutrients and minerals that
sugar normally displaces.
Though further research still needs to be conducted to determine just how effective it is, Stevia
has also shown therapeutic benefits such as being anti-inflammatory and cancer-preventing.
As a substitute for sugar, Stevia is an option for those with diabetes, hypertension, and obesity.
It can even help prevent cavities.

HEALTH BENEFITS OF THE PHILIPPINES' SWEET & FIT STEVIA
Get Health Access | Health Benefits of Sweet & Fit Stevia | Stevia is an organic sugar
substitute that is known for its intense sweetness while still having no calories, no carbs, and a
zero glycemic index. It may sound too good to be true, but it is. Science and research have not
only proven these claims, but they have also led to other discoveries regarding the other
positive impacts Stevia may have on your health. The science behind it also supports the
claim that Stevia has no negative drawbacks that may affect your well-being
Sweet Without The Sour
Stevia is one of those unique food ingredients that is valued, not for what it brings, but for what
it does not. It has no calories and carbohydrates which is the complete opposite of what sugar
has.
Sugar is one of the most common ingredients out there, and it often comes in bulk in the food
we eat, but it is one of the least healthy ingredients out there.
HEALTH BENEFITS OF THE PHILIPPINES' SWEET & FIT STEVIA
HEALTH BENEFITS OF THE PHILIPPINES' SWEET & FIT STEVIA
Excessive sugar intake has been associated with weight gain and diseases such as obesity
and diabetes. Though the body needs sugar and maybe healthy if consumed in moderation,
sometimes it is just too hard to resist that extra piece of candy.
The most common solution to making sure sugar does not negatively impact your health is by
reducing the amount you consume. According to the World Health Organization (WHO), added
sugar should be no more than 10% of the total calories of a food or beverage. What this means
is that the daily sugar threshold of an average adult is 200 calories or 12 teaspoons of sugar.
Currently, the average daily consumption of sugar is at 42 teaspoons. For even more context,
let us look at the average sugar content of regular soft drinks. One glass of cola contains 6 to 8
teaspoons of sugar. Once you refill your glass, you already surpass the recommended daily
amount.
But why is it so important to limit sugar intake? This is because sugar has numerous ways it
can impact your body in a negative way. The most well-known characteristic of sugar is that it
is packed with calories. The body needs energy from calories, but sugar provides empty
calories as compared to nutrient-dense calories from more nutritious foods. The added calories
lead to excessive weight gain which in turn causes heart disease, diabetes, obesity, and
certain types of cancer.
Second, sugar only contains one or two sugar molecules which are converted to blood glucose
faster than complex carbohydrates found in whole grains and vegetables. Sugar displaces the
more nutritious complex carbohydrates which provide the body with vitamins, minerals, and
fiber. Sugar has also been correlated to cavities, poor energy levels, and lack of satisfaction
from healthy foods due to sugar cravings.

HEALTH BENEFITS OF THE PHILIPPINES' SWEET & FIT STEVIA
Sweet and Fit Stevia saves you from all of these possible problems by removing the sugar and
the risks associated with it from your diet. Sweet and Fit Stevia fulfills the need for sweetness
provided by sugar, so substituting sugar with Sweet and Fit Stevia is a no brainer especially
when you consider all of the negative things you can avoid.
Stevia Has Health Benefits of its Own
Apart from getting rid of sugar and all the drawbacks associated with it, Stevia actually has
health benefits of its own. To start, Stevia has been applied as a substitute for saccharose
(sugar) for the treatment of diabetes, obesity, hypertension, and cavity prevention. A number of
studies have also suggested that Stevia contains compounds that may offer therapeutic
benefits since they have anti-inflammatory, anti-tumor, anti-hyperglycemic, anti-hypertensive,
and antidiarrhoeal effects. It has also shown properties of being a diuretic and an
immunomodulator.
Stevia has the ability to restore a person’s strength after being physically and mentally
exhausted. Due to synergism and potentiation of components contained in Stevia leaves,
dynamic performance muscles are improved and fatigue is minimized.
Stevia also has a positive impact on the digestive system, particularly the pancreas and liver.
Due to its bactericidal and antiviral properties, Stevia can be used to treat diarrhea. Stevia
inhibits the intestinal smooth muscle, the stimulation of which leads to diarrhea associated with
motility.
Finally, Stevia truly is a great alternative to sugar for those with diabetes as research has
shown that Stevia sweeteners have no effect on blood glucose or insulin response. If you are
trying to manage your blood sugar, Stevia has been shown to lower blood sugar levels. Studies
have also provided evidence that Stevia has the potential to help lower blood pressure and
cholesterol.

HEALTH BENEFITS OF THE PHILIPPINES' SWEET & FIT STEVIA
HOW SAFE IS STEVIA?
Vigorbuddy | Is Stevia Safe? | Stevia has been growing in popularity as a healthy alternative to
sugar. It is appealing in that it has zero calories, zero carbohydrates, and zero glycemic
indexes but is approximately 200-300 times sweeter than sugar in the same quantity.
For those unfamiliar with Stevia, these characteristics may seem too good to be true and they
may understandably be skeptical. They may question if this is really authentic, but more
importantly, if it is actually safe. Since this is something that will be ingested, these concerns
are very much valid. What you put in your body directly affects your health, so it is justified to
want to know about what you are eating.
The good news with Stevia is that studies show there is nothing to worry about.
HOW SAFE IS STEVIA?
HOW SAFE IS STEVIA?
Stevia’s Regulatory History
Originally, there were concerns regarding Stevia when it was first made available as a product.
In 1991, Stevia was banned in the United States due to early studies suggesting that organic
sweetener may cause cancer. However, this was immediately refuted in a follow-up study, so
in 1995, the Food and Drug Administration (FDA) allowed Stevia to be sold and imported as a
food supplement.
Though it overcame the first hurdle, it was still just categorized as a food supplement, not as a
sweetener. Several manufactures made the argument that Stevia should be grouped with the
artificial sweeteners as “Generally Recognized as Safe” (GRAS). Substances that are GRAS
must meet the criteria that the substance has been determined safe through expert
consensus, scientific review, and/or widespread use without negative complications. In
December 2008, the FDA declared Stevia as GRAS, which opened the door for Stevia to be
used in mainstream food production.
So is it safe?
There is sufficient evidence to support the claim that Stevia is just as if not safer than its
artificial sweetening counterparts. Though there are still on-going studies to see the long-term
impacts of Stevia extract, scientists agree that it is not harmful if consumed in reasonable
amounts. It is widely accepted that Stevia in its purified form is completely safe.
Studies are currently being conducted, not just to see if it is safe, but to actually measure just
how effective Stevia is in terms of the health benefits it may bring. For example, there were
initial concerns that Stevia would reduce fertility or worsen diabetes, but studies discovered
that Stevia might actually improve glucose tolerance. Another study found that Stevia may
even induce the pancreas to release insulin and can potentially serve as a treatment for type 2
diabetes.
HOW SAFE IS STEVIA?
HOW SAFE IS STEVIA?
In fact, Stevia has already been integrated as an ingredient in over 5,000 food and beverage
products around the world. It could be found in desserts like ice cream and yogurt, to gum and
candy, to bread and wine, and it is even used to sweeten pre-workout drinks. One of the most
well-known brands that have used Stevia in their products is Coca-Cola. In 2008, they
developed and patented a Stevia purification process that allowed them to use Stevia in one of
their drinks, claiming a delicious yet unique taste while proudly advertising the use of the
healthy sweetener. Their Stevia-sweetened products were brought to different regions
worldwide for mass-market consumption, so there can be no doubt as to the safety of the
ingredient.
Sweet and Fit Stevia was the first Stevia Powder registered by the Food and Drug
Administration of the Philippines. Manufactured and distributed by Glorious Industrial and
Development Corporation, Sweet and Fit Stevia Food Supplement Powder has already seen
widespread use in hospitals and institutions across the Philippines.

Stevia has proven to be a great sweetening alternative for those with diabetes, so it is no
surprise that hospitals use Sweet and Fit Stevia when preparing meals for their diabetic
patients.

Heart Center, East Avenue Medical Center, Manila Doctors Hospital, and Medical City all use
Sweet and Fit Stevia. Vendors Megamelt, Good Shepherd, House of Polvoron, and Fruit
Magic, restaurants Banapple, Chili’s, and Tony Roma’s, hotels Manila Peninsula and Manila

Asian Food Tourist | The History of Stevia in the Philippines | Stevia has been gaining
popularity in recent years as a healthy sugar substitute. It has no cholesterol, no calories, no
carbohydrates, and zero glycemic index, making it an ideal sweetener for diabetics. It has
been used as a substitute for sugar in different applications such as beverages, baked goods,
and other types of food. It stands out from other sweeteners because it is not artificial. Stevia is
100% organic and natural.
Products made from stevia have been around for many years, but a lot of people are still
unaware that they exist, and may are skeptical because it is something they know little to
nothing about. So, let’s take a look at just where this magic sweetener came from and how it
ended up on our shores.
HISTORY OF STEVIA IN THE PHILIPPINES
HISTORY OF STEVIA IN THE PHILIPPINES
Where is Stevia from?
Stevia in the form we consume is extracted from the leaves of a plant species called Stevia
rebaudiana Bertoni. It is a branch bushy shrub that is part of the Asteraceae family and is
closely related to asters and chyrsnathemums. It is native to the Amambay region in
northeastern Paraguay, but can also be found in other parts of South America such as Brazil.
Discovered and classified by Italian-Swiss botanist Moises Santiago Bertoni in 1899, stevia
was first used by the Guarani Indian population from Paraguay and Brazil as a sweetener for
medicinal teas they used for treating heartburn and other ailments. Its medicinal properties
were also used to treat burns and stomach pains, and it was even used as a contraceptive in
some cases.
How did Stevia end up in the
Philippines?
The history of stevia in the Philippines is closely tied to the story of Mrs. Maura De Leon: the
Queen of Philippine Stevia. Originally, Mrs. De Leon was in the garments business for 17
years, but competition and other challenges made her pivot into other industries.
For years, she tried looking for a business that would be both significant and beneficial to the
Filipino people. While she was in the coffee business, one of her staff members suggested
they should either revolutionize the coffee business or shift to another venture since the coffee
shops locally sell the same products that only differ in presentation and marketing strategies.
Fatefully, a doctor friend of hers told her about this miracle plant from Paraguay during one of
her consultations. Of course, the plant her friend was talking about was stevia.
HISTORY OF STEVIA IN THE PHILIPPINES
HISTORY OF STEVIA IN THE PHILIPPINES
After hearing about it, Mrs. De Leon asked her team to conduct research, sending an
agriculturist to Baguio, La Union, Bicol, and Davao. To her surprise, they discovered that no
one was growing Stevia.
After looking into how to get the plant to grow locally, Mrs. De Leon purchased a small piece of
land and acquired stevia seeds from Paraguay. She faced a lot of hardships and challenges,
spending the first few years just figuring out how to grow it right. Five years into the
commitment, she was able to produce the first product made with stevia.
In 2008, Glorious Blend Coffee and Choco products were introduced in the local markets with
special blends mixed with healthy ingredients such as moringga, mangosteen, calcium, gotu
kola, and stevia. A year later, Sweet & Fit Stevia was certified by the FDA while her company,
Glorious Industrial & Development Corporation (GIDC), was recognized as the Philippines’ first
stevia company.

HISTORY OF STEVIA IN THE PHILIPPINES
WHY STEVIA IS THE BEST ALTERNATIVE TO SUGAR
Food Finds Asia | The Best Healthy Alternative for Sugar | Filipino cuisine is famous for its use
of sugar, not just in desserts like leche flan and halo-halo or shakes or suman and turon, but
also in dishes like tocino, adobo, patatim, and many more. You can always taste the sugar in
the tea, juices, shakes, and coffee served in restaurants. As such, Food and Beverage
businesses in the Philippines tend to focus on sugar and sweet flavor profiles. A couple of the
most popular food and beverage businesses in the Philippines are milk tea and pastry shops. If
you own this kind of business, you might want to consider the health of your customers by
using an alternative ingredient for sugar. Stevia is the best alternative for sugar.
Quick Overview of Stevia
Stevia has been known for its intense sweetness since its discovery in the late 1800s. It was
also used as traditional medicine such as treatment for burns, colic, and stomach problems.
WHY STEVIA IS THE BEST ALTERNATIVE TO SUGAR
WHY STEVIA IS THE BEST ALTERNATIVE TO SUGAR
The leaves of the stevia are served as a sweet treat, and this is the part of stevia that has been
extracted for sweeteners.
The Healthy Alternative for Sugar: Stevia
Stevia in other parts of the globe has already been used as a sugar substitute for years.
According to the Federal Food and Drug Administration (FDA), high purity steviol glycosides,
an extract of the stevia plant, is considered generally safe for use in food. Stevia has no
calories, and it is 200 times sweeter than sugar in the same concentration. This sweetener is
the best for Food and Beverage Businesses looking for an organic alternative to sugar. For
instance, if you have customers who are health conscious or have diabetes, you can use and
promote healthy stevia products to appeal to them. This can lead to more customers buying
and consuming your products which is definitely good for business.
The Health Benefits of Stevia
Stevia is an all-natural, zero calorie sweetener with two major sweet compounds called
Stevioside and Rebaudioside A (Reb A). These compounds are what give Stevia its sweet
taste. Stevia is the healthier alternative to refined sugar, and here are just some reasons why.
Lower Blood Pressure and Blood
Sugar Levels while Fighting Diabetes
High blood pressure, high sugar levels, and diabetes are becoming detected more frequently
among Filipino teens and young adults, and diet is partly to blame.
Having elevated blood pressure is a major risk factor and may lead to heart disease, stroke,
and kidney failure.
WHY STEVIA IS THE BEST ALTERNATIVE TO SUGAR
WHY STEVIA IS THE BEST ALTERNATIVE TO SUGAR
Unfortunately, having high blood pressure (hypertension) is not usually something you feel or
notice. You might write off a headache as nothing more than just that, but it might be a sign of
hypertension. The only way to really know is to measure and monitor your blood pressure
regularly.
Studies have shown that stevia may help lessen blood pressure. Some researches suggest
that daily intake of 750-1500mg of stevioside, a chemical compound in stevia, reduces systolic
blood pressure *the upper number in a blood pressure reading) by 10-14mmHg and diastolic
blood pressure (the lower number) by 6-14 mmHg.
One of the largest health concerns today is Type II Diabetes. Characterized by elevated blood
sugar caused by insulin resistance, stevioside seems to improve the function of the hormone
insulin, thus lowering blood sugar levels. Stevia does not have calories or carbohydrates and
therefore has no effect on blood glucose. Diabetic people can still enjoy sweets without raising
their blood sugar when substituting sugar with stevia.
Diminish Risk of Pancreatic Cancer
and Oral Disease
Pancreatic Cancer is a disease in which malignant (cancerous) cells form in the tissues of the
pancreas. The pancreas is a gland located behind the stomach and in front of the spine. The
pancreas produces digestive juices and hormones that regulate blood sugar. Stevia helps
reduce risk of having a pancreatic cancer. Scientifically, the stevia plant contains sterols and
antioxidant particles including kaempferol, quercetin, chlorogenic
acid, isoquercitin and isosteviol which are all necessary to reduce pancreatic cancer risk.
Stevia also reduces bacterial formation in the mouth, preventing cavities and gingivitis, which is
why several brands of toothpaste and mouthwash add it to their formulas.

Helps Maintain a Well Balanced .3
Diet
Stevia can help moderate calories in a diet and reduce weight. Plant-based and with zero
calories, stevia is highly recommended for those trying to achieve a balanced diet by
diminishing sugar intake without foregoing sweets entirely. Root causes of being overweight
and obese involve factors such as prolonged sitting, physical inactivity paired with high and
frequent intake of foods that are filled with refined sugar.
Helps Fight Allergies .4
Some people are allergic to sugar. The most common allergy when it comes to sugar is sugar
intolerance. Sugar Intolerance happens because your body has trouble digesting sugar.
According to the European Food Safety Authority (EFSA), “steviol glycosides aren’t reactive
and are not metabolized to reactive compounds, therefore, it is unlikely that steviol glycosides
under evaluation should cause by themselves allergic reactions when consumed in foods.”
This is why the Stevia can help prevent allergies.
Prevents Cancer
A 2012 study of a glycoside found in stevia plants suggested it may help speed up the death of
cancer cells in a human breast cancer line. Another study in 2006 indicated that stevia has
anti-inflammatory effects.
An animal study in 2002 suggested that stevia has anti-tumor properties. Antioxidant
compounds such as quercetin, kaempfrol, and other glycoside compounds found in stevia help
to eliminate free radicals in the body, thus preventing the production of cancer cells. These
antioxidants also prevent premature aging and cognitive malfunction.

HOW SWEET IS STEVIA?
Vigorbuddy | How Sweet is Stevia? | Stevia is a leafy green plant native to the Amambay
region in the northeast of Paraguay, but can also be found in other parts of South America.
Indigenous populations in Paraguay and Brazil originally used the plant species Stevia
rebaudiana as a natural sweetener, calling it the “sweet herb”.
Stevia derives its sweet taste from over 40 natural compounds known as stevial glycosides.
Most stevia sold in stores and used in consumer products use purified stevia leaf extracts that
contain one or more stevial glycosides. The most common of these glycosides is rebaudioside
A, rebaudioside D, and stevioside.
Stevia leaf extracts can be up to 250 to 300 times sweeter than table sugar (sucrose) in the
same quantity. Rightfully so, stevia is considered to be a high-intensity sweetener. Stevia leaf
extracts are similar in sweetness intensity to many artificial sweeteners on the market but
stand out as being an entirely organic alternative.
HOW SWEET IS STEVIA?
HOW SWEET IS STEVIA?
So Exactly How Sweet Is Stevia?
Purified stevia leaf extracts can exhibit different taste profiles depending on the steviol
glycoside(s) that are present. Some, such as rebaudioside D have a clean sugar-like taste
while others such as stevioside have a flavor profile that is described as being bitter or metallic.
Whole leaf stevia extracts, which contain a full array of steviol glycosides, are usually a poor
substitute for table sugar. Often, other ingredients such as erythritol, dextrose, or maltodextrin
are used to alleviate the intense sweetness of stevia leaf extract. With the high-intensity
sweetness of stevia leaf extracts, a little bit goes a long way.

HOW STEVIA IS MADE
Get Health Access | How is Stevia Sweeteners Made? | Stevia has been growing in popularity
as sugar substitutes do to its intensely sweet yet healthy and organic characteristics. It has
zero calories, zero cholesterol, and zero glycemic index, yet is 200 to 300 times sweeter than
sucrose, more commonly known as table sugar.
Stevia sweeteners are derived from stevia leaf extract. Stevia rebaudiana is a branch bushy
shrub that is part of the Asteraceae family that is closely related to asters and
chrysanthemums. It is native to the Amambay region in the northeast of Paraguay, but can
also be found in other regions of South America.
Stevia has been a source of high-intensity sweetness for centuries. Early on though, its flavor
was often inconsistent and contained unwanted flavors, most commonly a bitter aftertaste.
HOW STEVIA IS MADE
HOW STEVIA IS MADE
Over the years though, the process for extracting stevia has been continuously improved,
leading a more consistent, better-tasting product. So, what exactly is the process to extracting
stevia? Read on.
Grow. Harvest. Extract.
Stevia plants are grown in tropical/subtropical climates found in the Asian and South American
regions. To extract the plant’s intense sweetness, stevia leaves are harvested and dried. The
leaves are then steeped in hot water. After several filtering and centrifuging stages to
concentrate the sweetest components of the stevia leaves, the resulting extract is ready to be
sold commercially.
Stevia is comprised of over 40 natural compounds known as steviol glycosides. Food grade
stevia leaf extract must have at least 95% steviol glycosides, and this is a standard for the
majority of countries where stevia leaf extract is sold.

Re ne. Purify. Package.
Manufacturers may choose to package the food-grade steviol glycosides in any number of
different ways for the different products they want to produce. Because of the intense
sweetness of stevia leaf extract, much less of it is needed in comparison to achieving the
same level of sweetness with sugar. However, the small quantity of stevia that would be used
by most people in everyday sweetening applications could be difficult to measure and use.

In order to make stevia easier to use, manufacturers combine stevia extract with other
ingredients to help even out its sweetness. Other ingredients such as erythritol, dextrose, or

substituted with sugar in most applications. These include substituting sugar in food and
beverage recipes.

A transition to relying on delivery services and online presence has become essential for
traditional brick and mortar shops that want to stay afloat. Retail shops and restaurants that

THE QUEEN OF PHILIPPINE STEVIA: MAURA DE LEON
Negosentro | The Queen of Philippines Stevia | In the Philippines, people love sweet foods and
desserts. They enjoying eating all sorts of dishes but are unaware of the consequences,
especially from their sugar intake. Sugar is everywhere, and not even just in desserts like halohalo
and leche flan. Savory delicacies like adobo, longganisa, tocino, and Filipino-style
spaghetti all have sugar. Beverages like coffee, tea, shakes, and juices rarely go without sugar.
The pervasiveness of the affinity for food has led many to conclude that Filipinos have an
insatiable sweet tooth.
However, more and more people want to kick the habit and live a healthy lifestyle, so it might
be good to consider a healthier substitute for sugar that can still satisfy the cravings of your
customer. One of the best available alternatives is Philippine Stevia.
THE QUEEN OF PHILIPPINE STEVIA: MAURA DE LEON
THE QUEEN OF PHILIPPINE STEVIA: MAURA DE LEON
Introduction to Stevia
Stevia is a food ingredient with unique values that barely anyone knows about. Unlike other
sugar substitutes, stevia is derived from a plant. It is made from a leaf related to asters and
chrysanthemums. It is part of the Asteraceae family which is related to the daisy and ragweed.
Some of the stevia species, like candyleaf, are native to New Mexico, Arizona, and Texas. The
species of interest though when it comes to finding a sugar substitute is Stevia Rebaudiana.
This plant grows in regions in South America, particularly in Paraguay and Brazil, where people
have used the leaves from the stevia bush to sweeten foods for hundreds of years.
The discovery of stevia is credited to Swiss-Italian Botanist, Moises Santiago Bertoni, in the
1800s, but evidence shows that the native Guarani Indian used stevia hundreds of years
before then. Stevia was used for medicinal purposes as a treatment for burns and stomach
pains. Stevia leaves were also chewed on as a sweet treat. Stevia leaves have been used to
sweeten tea in South America and Asia, and it was only a matter of time before it was brought
to the Philippines. We have the Queen of Philippine Stevia to thank for that.
Maura de Leon: Queen of Philippine
Stevia
Farmers don’t just work until the sun goes down but they work until the job gets done. Farming
is not only a masculine job; it is about strength, courage, responsibility, and hard work that
women are just as capable of. These traits can be found in the Queen of the Philippine Stevia,
Maura de Leon.
THE QUEEN OF PHILIPPINE STEVIA: MAURA DE LEON
THE QUEEN OF PHILIPPINE STEVIA: MAURA DE LEON
Mrs. Maura David de Leon is an enterprising businesswoman with a special interest in farming
because she was raised on a farm in the barrio where her father was a progressive farmer.
According to Business Mirror, “Maura de Leon had all the reasons to opt for a more laidback,
fashionable and more propitious business, having tried and excelled in several businesses
before, the farmer in her compelled her to venture into probably one of the rarest, yet very
healthy agricultural plants – stevia”.
Because of her hard work and courage, she established a farm of Stevia called the Sweet and
Fit Farm in Brgy. Tambobong, Bocaue, Bulacan. The Sweet and Fit Farm become the pioneer
commercial Philippine Stevia grower and processor and is accredited by the Department of
Tourism. But this kind of success was not accomplished overnight. In her interview with
Business Mirror, she said that the business was very challenging for her from the start. There
were even times when she wanted to let go of the stevia farm and pursue another business.
Of course, planting stevia was a big challenge for Mrs. Maura de Leon and her team. For the
first three years of the farm business, it was a testing period since they were not familiar with
the plant. During this time, she thought her efforts were going nowhere.
“Sobra ang pinagdaanan namin kasi nag-start kami from zero,
lahat.”
THE QUEEN OF PHILIPPINE STEVIA: MAURA DE LEON

But then, something happened. One day her father approached her and asked if she was still
devoted and questioned her resolve, but she gave him a quick reply with a convincing nod. Her
father then said something she would never forget. Her father gave her a reminder that made
her push even harder to do her finest work ever.
“He told me, anak, ituloy mo, tulungan mo mga
magsasaka. (While pointing at a painting hanging
on the wall) Tignan mo yung kalabaw, mataba pa
kaysa farmer.”
Because of this, she realized that she should not give up and commit 100% to the business. In
their fifth year, she and her team were finally able to produce their first Stevia product. Thanks
to an engineer she met from the Department of Science and Technology, she was introduced
to spray-drying technology. It was the break she needed in order to manufacture Sweet and Fit
Stevia powder properly.
The success of the business is a great source of happiness for Mrs. Maura de Leon as her
dream of helping poor farmers has become a reality.
The Interview of Queen of Philippine
Stevia
Mrs. Maura de Leon was an interview on the “Jo on the Go” segment of PTV. She was
interviewed on location at the Sweet and Fit Farm where she shared her story, insights, and the
secret to her success.

SUSTAINABILITY OF STEVIA PRODUCTION
Executive Chronicles | The Sustainability of Stevia Production | Stevia has been gaining
popularity as a healthy and organic sugar substitute. With the current trends and popularity in
living a healthy lifestyle, it’s no surprise that people are looking for ways to replace sugar in
their diets. Some individuals, like diabetics, have no choice but to go sugar-free to control their
blood glucose levels. Stevia provides an alternative that has no calories, no cholesterol, and no
glycemic index, making it ideal for weight-watchers and diabetics.
Stevia is a naturally sourced flavoring ingredient that has been used for centuries. The stevia
plant native to South America was used by indigenous people to sweeten beverages and
chewed for their sweet taste. The plant leaves often called “sweet herb”, were also dried and
used to sweeten teas and medicines.
SUSTAINABILITY OF STEVIA PRODUCTION
SUSTAINABILITY OF STEVIA PRODUCTION
What most people don’t know is that stevia brings about benefits that go just beyond its
nutritional facts. According to a study found in Nutrition Today Journal, stevia production
requires lower inputs of land, water, and energy to produce the same amount of sweetness
found in other natural sweeteners.
Stevia Production
Similar to other plant-based ingredients such as sugar cane sugar or vanilla, purifying stevia
into high-purity leaf extract is done through a series of steps beginning with harvesting the raw
plant material. The leaves are dried and steeped in hot water, and the liquid extract is filtered
and purified with water or in some cases in combination with food-grade alcohol.
The extract may also go through activated carbon and ion exchange treatments to remove
organic residues and remove minerals. Adsorption/desorption resin is also used to concentrate
the glycosides that give stevia its sweet taste.
The final step involves spray drying, a method of producing a dry powder from a liquid or slurry
by rapidly drying with a hot gas. This process then produces stevia extract, which can be used
in products and other food applications.
Sustainability
As stated earlier, stevia requires lower inputs of land, water, and energy to produce the same
amount of sweetness found in other natural sweeteners. One of the largest stevia producers
was benchmarked and compared to beet and cane sugar producers, and the results showed a
significant difference in carbon and water footprints.
SUSTAINABILITY OF STEVIA PRODUCTION
SUSTAINABILITY OF STEVIA PRODUCTION
Using sweetness equivalence for comparison, the study found an 82% reduction in carbon
footprint for stevia compared with beet sugar and a 64% reduction compared with cane sugar.
In terms of water footprint, stevia production was 92% lower than beet sugar and 95% lower
than cane sugar.
In layman’s terms, stevia production has a significantly reduced impact on the environment
compared to the production of sugar. It must also be noted that due to the natural nature of
stevia, production is creating jobs and opportunities for farmers to grow profitable crops that
support public health goals.
Sweet and Fit Stevia
Sweet and Fit Stevia is the Philippines’ first stevia and is produced locally in a farm in Bulacan.
Apart from providing jobs to the local community, Sweet and Fit Stevia has been developed for
years to be the best possible product it can be, and the quality is maintained through stringent
screening and analysis during production.
Not only are you getting the best-tasting product, but you are also getting Stevia which has not
lost any of its characteristics. Sweet and Fit Stevia gives you the health benefits of Stevia while
taking away the risks associated with sugar. Sweet and Fit Stevia is healthy sweet, and there
is no bitter taste or downside to worry about.

THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
Food Finds Asia | The Healthiest Sweetener for your Food Business | Despite the ongoing
situation, the craving for good food is still as strong if not stronger than ever before. Filipino
millennials are a big reason why food businesses are so popular in the Philippines, and the
current pandemic is doing nothing to put off their cravings. Even if they cannot go out as
readily, they take advantage of the available delivery service to get access to the food they
want.
A food business by definition is quite broad as it often overlaps and seamlessly blends with
elements of art, personal passions, and cultural expression. According to the Ashfield District
Council,
a food business is a retail shop selling sweets and confectionary, a bakery, butchers,
a café or restaurant, fast food premises, a pub, a microbrewery, or pub, a cake maker and a
homer caterer. The common element across all of these is food, but as you can see, there are
many variants when it comes to the kinds of food and how the food is served to customers.
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
Products of food businesses that never wane in popularity are those that satisfy the sweet
tooth. These kinds of food businesses are “pop talk” or “teenage talk” fo Filipino Teens and
Millenials, meaning it is a popular topic of conversation. Unless you have been living under a
rock, you would know that milk tea is all the rave currently. The milk tea business is booming
not only in the Metro but also in the provinces.
In the same vane, coffee businesses have always been a staple. Despite the presence of bigname
brands like, Starbucks, the Coffee Bean & Tea Leaf, Bo’s Coffee, many small coffee
businesses are trending up in local communities because of the unique products and
experiences they provide their customers, often specializing in specific product types that are
better executed than those made for the mass market. As an example, millennials are more
health-conscious when it comes to what they eat and drink, counting calories and tracking
ingredients for the positive and negative effects they may have on their physical well-being.
This has led to an upward trend in the popularity of products that boast health benefits to its
consumers.
For a food business owner, it is clear that being health-conscious should be considered a
priority since it is a priority for the market. There are many ways to tackle being more attractive
to those looking for the healthiest option, but it can be as simple as deciding which ingredients
to use in your products. Sugar is one of the most popular ingredients, but it could lead to
negative health effects. There are many sugar substitutes out there, but why not consider one
that is organic, sweeter, and healthier than the rest. You should consider using stevia.
Stevia is the Healthiest Sweetener
Stevia in other parts of the globe has already been used as a sugar substitute for years.
According to the Federal Food and Drug Administration (FDA), high purity steviol glycosides,
an extract of the stevia plant, is considered generally safe for use in food.
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
Stevia has no calories, and it is 200 times sweeter than sugar in the same
concentration. Stevia can lower blood pressure and blood sugar levels. It can also help
maintain a well-balanced diet, fight allergies, and prevent cancer. This is why stevia is the
healthiest sweetener that you can use for your Food Business. It is a lot easier to prevent than
to cure.
Stevia Application
Here is a menu item that utilizes stevia as an ingredient. This recipe is from Sweet and Fit

HEALTH BENEFITS OF SWEET & FIT STEVIA BRAND
It is important that we live a healthy lifestyle in order to avoid diseases and sickness brought
about by the lack of proper diet and exercise. Research has proven that a healthy lifestyle can
help prevent a number of diseases including diabetes, cancer, and heart disease. The secret to
a long and healthy life is taking care of your body through how you treat it and what you feed it.
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
However, if it were that easy to live healthy, everybody would be doing it. The truth of the
matter is that there are challenges one must face in order to achieve and maintain a healthy
lifestyle. Sacrifices and adjustments have to be made in many aspects of life including habits
such as sleeping patterns, vices such as smoking, and diet. One of the hardest things to resist
is the temptation of sweets. There is an irony that all the best tasting things are usually the
worst for our bodies. The good news is that it does not always have to be the case. That is why
a product such as Sweet and Fit Stevia is such a game-changer.
Sweet and Fit Stevia is the first stevia in the Philippines that was registered according to the
Food and Drug Administration. Produced by Glorious Industrial and Development Corporation
(GIDC), Sweet and Fit Stevia has no cholesterol, no calories, no carbohydrates, and zero
glycemic index. However, probably the most important feature of Sweet and Fit Stevia as a
sugar substitute is that it has no bitter taste. Similar products often have a bitter aftertaste, but
Sweet and Fit Stevia stay sweet because GIDC has spent years mastering their production
process. After each leaf is carefully handpicked, they are swiftly brought to the plantation for
spray drying, locking in freshness. Each batch also goes under a strict safety analysis to
ensure its quality. GIDC strives to make only the best possible products for their customers,
and Sweet and Fit Stevia is no exception.
So What Is Stevia?
Sweet and Fit Stevia is grown and harvested locally in the Philippines. It is a dietary
supplement that contains extracts of Stevia rebaudiana Bertoni, an ancient perennial shrub part
of the Asteraceae family that is closely related to asters and chrysanthemums. It originates
from South America. Particularly, it can be found in Paraguay and Brazil. Stevia produces
diterpene glycosides that are low calorie sweeteners that make it around 200 to 300 times
sweeter than regular table sugar in the same concentration.
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
Stevia rebaudiana Bertoni’s namesake is Moises Santiago Bertoni, an Italian-Swiss botanist
that is often credited with the discovery of stevia in the 1800s. However, there is evidence that
stevia was used a lot sooner than that by the native Guarani Indian population. It was originally
utilized for its medicinal purposes such as a treatment for burns and stomach pains, but it was
also used as a contraceptive. Unsurprisingly, the stevia leaves were also chewed on as a
sweet treat. More recently, the stevia leaves have been used to sweeten tea in the South
American and Asian regions.
One of the most important characteristics of stevia is that it is not readily destroyed or
deactivated by heat. This makes it suitable for cooking and a viable alternative to sugar in
many applications. In summary, stevia is the best organic-based, all-natural sweetener with
properties that could be used to substitute to sugar.
What Are The Health Bene ts Of
Stevia?
Sugar is used frequently in many of the foods we eat, but it has gotten a bad reputation
because of its association with causing diseases such as obesity and diabetes. Though sugar
does have its benefits if consumed in moderation, sometimes it just cannot be avoided. That is
why sugar alternatives, both organic and artificial, have gained popularity especially in recent
years with the resurgence of interest in health and fitness.
According to the World Health Organization (WHO), it is recommended that sugar added to
food and beverages should be limited to no more than 10% of the total calories. For the
average adult, this is equivalent to around 200 calories or 12 teaspoons of table sugar.
However, the average daily consumption is around 42 teaspoons. For context, regular soft
drinks contains approximately 6 to 8 teaspoons of sugar per glass. Once you get a refill, you
are already consuming more than the recommended daily amount.
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
THE HEALTHIEST SWEETER FOR YOUR FOOD BUSINESS
This is where Sweet and Fit Stevia comes in. Sugar is used to help sweeten the taste of what
we eat and drink but at the cost of additional calories. Sweet and Fit Stevia is a healthier
alternative because it serves the same purpose as a sweetener but without the downsides of
sugar.
Sweet and Fit Stevia has zero calories which means that it helps prevent weight-gain. Sugar is
very calorie-dense, and though the body needs calories, sweets normally associated with
added sugar (sugar that is not naturally occurring in fruits or dairy products) would end up
replacing nutrient-dense food with empty calories.
The major fuel of the body is glucose which is broken down from carbohydrates, a combination
of sugar molecules. Simple sugars such as table sugar are composed of only one or two sugar
molecules and are converted to blood glucose faster than the complex carbohydrates found in
whole grains and vegetables. What this means is that the simple carbohydrates that can be
found in sugar ends up displacing the more nutritious complex carbohydrates which provide
vitamins, minerals, and fiber. Luckily, Sweet and Fit Stevia has no carbohydrates which means
your body can maintain the complex carbohydrates which have a lot more nutritional value
than the carbohydrates associated with sugar.
Stevia is a great alternative for those with diabetes as research has shown that stevia
sweeteners have no effect on blood glucose or insulin response. It has also been shown to
lower blood sugar levels. Studies have also shown that stevia has the potential to help lower
blood pressure and manage cholesterol.
For fitness buffs, Stevia has been used as a sugar substitute in workout drinks. In one of the
many versatile applications of stevia, workout drinks help provide a boost of energy to increase
athletic performance. Workout drinks also help increase endurance, letting your workout for
longer.

A healthy lifestyle consists of not just a balanced diet, but also regular exercise. Using stevia in
workout drinks helps promote both.
Is Stevia Safe?
When you are introduced to something you know little to nothing about, you can
understandably be skeptical of its authenticity and safety. This is even more true when it
comes to something that we ingest and may possible affect our health. The good news with
Stevia is that there is nothing to worry about.
Though studies are still being conducted as to what exactly the positive effects of stevia are,
what has been undisputedly been proven already is that stevia in its purified form is completely
safe. The Food and Drug Administration has certified stevia as safe for use in food, so there is
no need to be concerned when you substitute it in for sugar.
Stevia is already present as an ingredient in over 5,000 food and beverage products. Such
products include ice cream, yogurt, bread, gum, candy, wine, workout drinks, and soft drinks.
The potential for stevia as a sweetener was truly unlocked by the Coca-Cola company in 2008
when they developed a purification process that allowed them to utilize stevia in some of their
products. In December 2008, the Food and Drug Administration (FDA) in the United States
categorized stevia as “Generally Recognized as Safe,” which by definition means that they
have been determined to be safe through expert consensus, scientific review, or widespread
use without negative complications. Shortly thereafter, stevia started being used in mainstream
food production.
Nowadays, Stevia can be found as an ingredient in a multitude of products spanning different
types. It is prevalent in products made specifically for those with diabetes because of its
properties. In hospitals, cooking using stevia for diabetes patients and those that require a low
sugar diet is already common. Stevia’s widespread acceptance and utilization is a testament to
just how safe it is.

How Do You Cook With Stevia?
Sweet and Fit Stevia is extremely versatile and can be used for a multitude of recipes. It is
suitable as a sugar substitute when baking cakes and pastries, for hot and cold beverages,
meat and food preparations, and desserts. When combined with other ingredients, stevia has
been said to be a food enhancer. It somehow brings out the true flavors of the ingredients it is
mixed with.
Generally, 1 cup of Sweet and Fit Stevia is equivalent to 3-5 cups of sugar. In baking, bulking
agents may need to be included when sugar plays a substantial role in that function. For
example, a cake recipe that substitutes a cup of sugar with stevia may need 1/3 cup of a
bulking agent. These include egg whites, fruit puree, or yogurt. If other bulking agents are
already being used, just increase the amount of that ingredient in the recipe. Baking with stevia
may also lead to a denser baked good since sugar helps make cakes lighter. To counter this,
simply add a bit more baking powder than what is stated in the recipe. It should also be noted
that Stevia does not caramelize or crystalize like sugar, so it may not be suitable for those
kinds of baking applications.
Though at first, it may seem that replacing the sugar component in recipes with stevia takes a
lot of experimenting and trial and error, there are already numerous resources and recipes out
there that will help guide you through the transition easily. At the end of the day, just remember
all the benefits you can get from substituting the sugar in your diet with stevia, and you will
realize it is all worth it in the end.

HEALTH BENEFITS OF SWEET & FIT STEVIA BRAND
Excessive sugar intake has been
associated with weight gain and diseases such as obesity and diabetes.
HEALTH BENEFITS OF SWEET & FIT STEVIA BRAND
HEALTH BENEFITS OF SWEET & FIT STEVIA BRAND
Though the body needs sugar and maybe healthy if consumed in moderation, sometimes it is
just too hard to resist that extra piece of candy.

Studies
have also provided evidence that Stevia has the potential to help lower blood pressure and
cholesterol.

not be sufficient enough. There are many great reasons why workplaces should consider
investing in, not just good coffee, but great coffee.
For a start, coffee contains antioxidants to improve your health. And it’s also shown to improve
your mental functions, mood, and motivation. Several studies have even shown that drinking
coffee is one of the most important parts of the workday, and an impressive amount of people
claim they could simply not live without it. Research has shown that 84% of workers drink
coffee every day, and often feel like their day hasn’t started yet until they had their first cup.
Further research shows that great coffee in the workplace improves social interaction,
communication, and collaboration. It may even eliminate the need for employees to leave the
office to go to a local coffee shop. Considering the dangers of the COVID-19 pandemic, this
could be a life-saving alternative. It could even be better when the coffee itself provides health

But First, Where Did Coffee Come From?
Did you know that coffee was first invented in the ancient coffee forests on the Ethiopian
plateau by a man named Kaldi?
Kaldi discovered coffee when he noticed that, after eating the berries from a certain tree, his
goats became so energetic that they did not want to sleep at night.
Kaldi reported his findings to the abbot of the local monastery, who then made a drink with the
berries and found that it kept him alert throughout the long hours of evening prayer. The abbot
shared his discovery with the other monks in the monastery, and knowledge of the energizing
berries began to spread.
As word moved east and coffee reached the Arabian Peninsula, it began a journey which
would bring the beans across the globe
What is the History of Coffee in the Philippines?
According to the Phil Coffee Board, The first coffee tree was introduced in Lipa, Batangas in
1740 by a Spanish Franciscan monk. From there, coffee-growing spread to other parts of
Batangas like Ibaan, Lemery, San Jose, Taal, and Tanauan. Batangas owed much of its wealth
to the coffee plantations in these areas and Lipa eventually became the coffee capital of the
Philippines.
By the 1860s, Batangas was exporting coffee to America through San Francisco. When the
Suez Canal was opened, a new market started in Europe as well. Seeing the success of the
Batangeños, Cavite followed suit by growing the first coffee seedlings in 1876 in Amadeo. In
spite of this, Lipa still reigned as the center for coffee production in the Philippines and
Batangas barako was commanding five times the price of other Asian coffee beans.

In 1880, the Philippines was the fourth largest exporter of coffee beans, and when the coffee
rust hit Brazil, Africa, and Java, it became the only source of coffee beans worldwide.
The glory days of the Philippine coffee industry lasted until 1889 when coffee rust hit the
Philippine shores. That, coupled with an insect infestation, destroyed virtually all the coffee
trees in Batangas.
Since Batangas was a major producer of coffee, this greatly affected national coffee
production. In two years, coffee production was reduced to 1/6th its original amount. By then,
Brazil had regained its position as the world’s leading producer of coffee.
A few of the surviving coffee seedlings were transferred from Batangas to Cavite, where they
flourished. This was not the end of the Philippines’ coffee growing days, but there was less
area allotted to coffee because many farmers had shifted to other crops.
During the 1950s, the Philippine government, with the help of the Americans, brought in a more
resistant variety of coffee. It was also then that instant coffee was being produced
commercially, thus increasing the demand for beans.
Because of favorable market conditions, many farmers went back to growing coffee in the
1960s. But the sudden proliferation of coffee farms resulted in a surplus of beans around the
world, and for a while importation of coffee was banned in order to protect local coffee
producers. When Brazil was hit by a frost in the 1970’s, world market coffee prices soared.
The Philippines became a member of the International Coffee Organization (ICO) in 1980.
Today, the Philippines produces 30,000 metric tons of coffee a year, up from 23,000 metric
tons just three years ago.

What Are The Health Benefits Of Coffee?
Did you know that coffee can help prevent cancer?
According to the studies of Harvard, Coffee may affect how cancer develops, ranging from the
initiation of a cancer cell to its death.
For example, coffee may stimulate the production of bile acids and speed digestion through the
colon, which can lower the number of carcinogens to which colon tissue is exposed.
Caffeine itself may interfere with the growth and spread of cancer cells. Coffee also appears to
lower inflammation, a risk factor for many cancers.
The beneficial health effects of coffee, with improved antioxidant responses and reduced
inflammation, are both important important in cancer prevention. Evidence from the American
Institute for Cancer Research concludes that drinking coffee may reduce risk for endometrial
and liver cancer, and based on a systematic review of a large body of research, it is not a risk
for the cancers that were studied.

What Is Instant Coffee Mix?
You might be wondering where did instant coffee originate from? According to History of
Coffee, the first “instant coffee” was made in Britain in 1771. It was called a “coffee compound”
and had a patent granted by the British government. The first American instant coffee was
created in 1851.
It was used during the Civil War and experimental “cakes” of instant coffee were shared in
rations to soldiers. David Strang of Invercargill, New Zealand invented and patented instant or
soluble coffee in 1890.

For its manufacturing, it used something called the “Dry Hot-Air” process. The first successful
method of creating a stable soluble coffee powder was invented by Japanese-American
chemist Satori Kato of Chicago in 1901, and it was patented in 1903. George Constant Louis
Washington, an American inventor of Belgian descent developed his own instant coffee
process after Kato and made the first commercial brand of it in 1910.
During the First World War, instant coffee became very popular because the U.S. military
bought all the available supplies and included them in soldier’s rations.
In 1930, Brazil had large coffee surpluses spoil, so the Brazilian Coffee Institute asked the
chairman of the Nestlé to create a flavorful soluble coffee product which will help with the
storage problem and also possibly increase overall coffee sales.
Initial methods made products that had inferior flavors and that did not dissolve very well.
Nestlé agreed and began several years of research in order to solve the problem. The
breakthrough came in 1937 when Nestlé scientist Max Morgenthaler invented a new instant
coffee making method. The finished product is what we know today as Nescafé.
Nescafé went into market in 1938, and the process involving drying equal amounts of coffee
extract and soluble carbohydrates produce a better tasting instant coffee which quickly
became very popular. In 1954, they developed a method to produce instant coffee without the
use of carbohydrates. In a method called agglomeration, instant coffee particles are steamed
which make them tick together in clumps. Instead of adding even more heat which would
diminish the flavor, a new freeze-drying method was utilized to produce a higher-quality, better
tasting product. In

In the times of the Second World War, instant coffee is again very popular among the soldiers.
In 1954 Nescafe develops a method to produce instant coffee using only coffee, without added
carbohydrates for stabilization like before. A method called agglomeration was used, which is
done by steaming the instant coffee particles which make them stick together in clumps. The
only problem is that another heating further worsens the coffee’s flavor. A new method called
freeze-drying becomes the preferred method of making instant coffee because it generally
results in a higher-quality product with better taste.

COOKING WITH FIT & SWEET STEVIA BRAND
Food Finds Asia | Cooking With Sweet And Fit Stevia | Cooks and bakers who are looking to
use healthier ingredients in their recipes often look for substitutes that can provide the same
flavor profile as the ingredient they are looking to replace. One of the most common yet least
healthy ingredients is sugar. Sugar has a lot of calories that can contribute to unwanted weight
gain. It also displaces complex carbohydrates from nutritious food that provide vitamins and
minerals in exchange for simple carbohydrates that have little to no nutritional value. As such,
sugar is often one of the first ingredients to be replaced.
There are several sugar substitutes available out there, but most are generated artificially.
Luckily, there is an organic and natural option that can provide the same sweetness that is
sought after in sugar but without its unhealthy characteristics: Stevia.
Stevia comes from the Stevia plant, a small bush from the sunflower family native to South
America. In the Philippines, the first Stevia herbal dietary supplement that was launched is
Sweet and Fit Stevia.

Sweet and Fit Stevia
Sweet and Fit Stevia is grown and harvested locally at the Sweet and Fit Stevia Farm in Brgy.
Tambobong, Bocaue, Bulacan. According to the Food and Drug Administration of the
Philippines, it was the first registered stevia powder. It has no cholesterol, no calories, no
carbs, and is 100% natural. Most importantly, Sweet and Fit Stevia has no bitter taste, making
it the perfect substitute for sugar in your favorite recipes.
It can be used for a multitude of recipes. A few examples of where it can be utilized are for
baking, preparing hot or cold beverages, meat, and food preparations, and making desserts.
Stevia is said to bring out the true flavors of other ingredients, so Sweet and Fit Stevia might
actually make your recipes taste better than it ever did with sugar.
Cooking and Baking with Sweet and Fit Stevia
For simple applications like sweetening your coffee, you can use a sachet of Sweet and Fit
Stevia and you should be ready to go. However, there are few more things to consider when
cooking or baking with Sweet and Fit Stevia as an ingredient. It may seem intimidating, but it is
actually quite simple to make the transition. Also, when all is said and done, the benefits you
gain from making the change far outweigh the initial phase of figuring out how to cook with
Stevia.
As an initial guide and reference, you can generally use 1 cup of Stevia for every 3-5 cups of
sugar a recipe calls for. Give it a try and just adjust the amount according to your preference.
When baking, just remember that different ingredients serve multiple purposes. For example,
sugar plays a substantial role as being a bulking agent in baked goods.
COOKING WITH FIT & SWEET STEVIA BRAND
COOKING WITH FIT & SWEET STEVIA BRAND
Therefore, you might have to include your own bulking agent to the recipe to get the texture
you desire. For example, cake recipes that substitute a cup of sugar with Stevia may need a
1/3 cup of a bulking agent. If you are looking to stick with healthy options, you may use fruit
puree or yogurt as a bulking agent. Egg whites will also suffice.
It is also important to take into account that baking with Stevia may lead to a denser baked
product since sugar helps make cakes lighter. It is easy to counter this however by simply
adding a bit more baking powder than what is stated in the recipe. Finally, it should be noted
that Stevia does not caramelize or crystalize like sugar, so you might have to consider other
options if those are techniques that the recipe calls for.
Though at first, it may seem that replacing the sugar component in recipes with Stevia takes a
lot of experimenting and trial and error, there are already numerous resources and recipes out
there that will help guide you through the transition easily.
Sweet and Fit Stevia: The Healthy Sugar Substitute
Stevia is versatile and has diverse functionality, and that is why it is growing in popularity. It is
intensely sweet but without any bitter aftertaste. Apart from the taste though, Sweet and Fit
Stevia is great because of its positive health impact.
Since it has no glycemic impact and provides zero calories per serving, it is suitable of
diabetics and anyone looking for a sugar substitute. Science has also proven that Stevia helps
lower blood pressure and blood sugar. Sweet and Fit Stevia truly is the healthy sweet
alternative.

No Antibiotics or Synthetic Hormones
Conventional livestock is often fed antibiotics to protect against illness to make it easier for
farmers to raise them. Conventionally raised animals can also be injected with synthetic
growth hormones for quick weight gain and more milk production.
The concern is that these substances can make their way to the final product, meaning
customers may consume the drug residue that is believed to contribute to antibiotic resistance.
On the other hand, organic food, produced without antibiotics, is therefore intrinsically safer.
Organic meat and dairy also do not contain synthetic hormones that have been linked to
cancer risk.
More Antioxidants
In a six-year study published in the journal of Agricultural and Food Chemistry, researchers
found that organic onions had about 20% higher antioxidant content than conventionally grown
onions. However, according to an adjunct associate professor of Nutrition at the Harvard Chan
School of Public Health, the study shows that only one aspect of phytochemicals can be
improved under organic conditions, so there is, even more, to learn about regarding the
possible impact of organic food.
Less Harmful
Organic food is mostly grown without the use of synthetic pesticides or artificial fertilizers.
Though these chemicals are widely regarded as safe in the quantities used for food production,
there are experts that still think there is potential harm if expose to them repeatedly.
For example, the insecticide chlorpyrifos has been associated with developmental delays in
infants, and pesticide residues may contribute to ADHD prevalence and reduced sperm
quality .
