INCLUSIVE DINING
Food Allergies and Special Dietary Needs
Inclusive dining at Northwestern means that we are providing a range of options for
a variety of dietary needs and lifestyles. We focus on preparing meals from scratch,
which means we know what’s going in our food and can provide critical ingredient and
nutrition information.
We have options for those who choose to eat according to their religious beliefs
including two kosher kitchens at Allison and Elder and Halal options at all of our Dining
Commons. If a student chooses to eat vegetarian or vegan, we offer daily rotating
selections at the Rooted stations. We do not bring peanuts or tree nuts into our
kitchens and provide allergen-safe stations called Pure Eats at all Dining Commons.
These stations serve meals prepared without gluten and the top nine allergens.
PURE EATS
What is Pure Eats?
Pure Eats stations or Dining Commons feature food that is simply prepared, seasoned
and served by a trained cook or chef. These meals avoid gluten and the top nine food
allergens: peanuts, tree nuts, fish, shellfish, wheat, soy, eggs, dairy and sesame. Pure
Eats is located at all of our Residential Dining Commons, with Foster-Walker East
dedicated entirely to Pure Eats.
The Sustainable Solution
OZZI REUSABLE CONTAINER
Ozzi to-go was designed to reduce
disposable waste on campus simply
by replacing the ‘throw away’ mindset
with a reusable way of thinking.
Whenever you wish to eat a meal
to-go in any of our Residential Dining
Commons, you will need to swipe twice;
once to enter the Dining Commons,
then again to purchase an Ozzi for $5.
After purchasing you can place your
to-go meal in the reusable container.
You can return your empty container
and exchange it for a $5 refund from
the cashier for your next use.
Each of the Ozzi to-go containers save over
300 single-use containers from landfills! Not
only that, it reduces waste hauling, lessens
the dependency on fossil fuels, and helps
reduce our carbon footprint.
Step 1
Purchase your reusable Ozzi
to-go container from the
cashier for $5
Step 2
Create your to-go meal
Step 3
Return your reusable Ozzi
container and get your $5
refund or exchange for another
Ozzi container to assure all
containers are clean
Rockbot lets you request the music playing in dining areas on
campus. The free app is used in thousands of businesses across
the country, allowing guests to influence the music!
Play, discover, and share the music you love.
SUSTAINABILITY ON CAMPUS
Our Efforts
WAYS TO LEARN LIFE SKILLS
Sustainability is at the core of Northwestern Dining’s mission. We’ve identified
opportunities to serve healthy and sustainable meals that support small and midsized
farms in the Midwest along with contributing to Northwestern’s goal of energy
and water conservation and waste reduction. We focus on sourcing locally from
farms within a 350-mile radius of campus year round. We also fight food waste at
every stage of the process by tracking all food
waste and plate waste in our Dining Commons.
All food waste is composted and any recoverable
food is collected by Campus Kitchens and
distributed to the Evanston community.
Composting
A Teaching Kitchen can be described as
a learning laboratory for one of the most
important life skills - cooking. A Teaching
Kitchen offers education in basic cooking
techniques in addition to other self-care
topics like enhanced nutrition, mindfulness,
and shopping on a budget. It’s located in
Allison Dining Commons as well as featured
within other dining locations on campus.
We recognize the importance of waste reduction
so we compost as much as possible in and outside
of our kitchens. Customer-facing composting is
also available at Norris University Center.
If you want to be part of the solution contact our
Sustainability Manager Sarah Levesque to discuss
joining a group of like-minded people on Campus!
