The next top model
Aspiring models from across the country recently got together at
Time Square for the glamorous finale of Top Model South Africa.
The event oozed glitz and glamour and finalists from across the
country got to showcase their beauty and talent. Managing director
for Top Model South Africa, Johan Ungerer said the brand is all
about upliftment, giving back, supporting the youth and creating
opportunities. CANSA South Africa was one of the organisations
that played a role in the success of the event. Ungerer said: “A certain
amount raised from the event will be going back to the CANSA
foundation and creating opportunities within the brand.”
Supporters, fans of the brand and members of the public got to join
in the fun and many got to experience a fashion show, with all the
bells and whistles, for the very first time. Ariana Stark from Pretoria
North and Tiaan Kleinhans from Johannesburg walked away with the
coveted titles of Top Model South Africa 2020.

FINALLY, A FAMILY
After years of struggling to fall pregnant, Chantelle and her husband, former
Mr South Africa John Owens, are the proud parents of little Jenica Jade.
But the journey was anything but easy. We caught up with the Amberfield mom to
find out more about their IVF journey and happy ending.

John’s love story sounds like
something out of a fairy tale.
The couple met while John was
a judge at a modelling contest
Chantelle took part in. There was an
instant connection and they went
on their first date the very next day.
Shortly after the couple got married
and although Chantelle became an
instant mom to John’s daughter Blake,
the couple knew they wanted to start
a family of their own. But, what was
supposed to be the best time of their
lives, time and again ended in tears
and heartbreak. Chantelle suffers from
endometriosis and although they
knew becoming parents wouldn’t be
an easy journey, they never expected
it would take this long.
“When after two years we still
weren’t pregnant, we went to see
a fertility specialist and I found out
that apart from endometriosis, I also
had premature ovarian failure. We
were told that our chances of ever
falling pregnant naturally was about
5 percent. Our only choice was IVF,”
29-year-old Chantelle says.
“Endometriosis is a very painful,
chronic condition where the
endometrial tissue not only grows
inside the uterus but also forms
in spots outside the uterus. The
tissue can be found on the ovaries,
the fallopian tubes, the ligaments
supporting the uterus and even in the
pelvic opening. It can also, in extreme
cases, be found on the bladder,
intestines or on old internal scars
caused by operations or laparoscopies.
I’ve had four laparoscopies myself, the
first at the age of 17,” Chantelle says.

The cause of endometriosis is not yet
fully known and a diagnosis often only
result after numerous surgeries. It is
treated using a variety of medication
but mostly surgery or a diagnostic
laparoscopy is needed,” Chantelle adds.
The IVF-treatment was brutal and
Chantelle was put on medical
menopause for three months before
the process could begin. It took about
six months, but finally there was some
good news.
After many back-and-forth discussions,
Chantelle and John decided to
openly share their IVF and pregnancy
journey with the world. “It wasn’t an
easy decision as it is deeply personal
and emotional. But God placed it
on our hearts to share our journey.
We wanted to share our hope and
knowledge about the process with
others. There is a stigma around
infertility and people don’t know how
many people struggle with it. We
should talk more openly about it, and
should definitely not struggle through
it alone,” Chantelle adds.
They started the Facebook group
Owens IVF Journey and have since
received lots of feedback. “The
amount of people who go through
the infertility journey or have already
been through it, caught us off guard,”
she says.
In November last year Chantelle gave
birth to a baby girl, Jenica Jade Owens,
and their family was complete. The
pregnancy was, for the most part,
smooth sailing. “I loved being pregnant
and the experience was everything
and more I always dreamt about,”
Chantelle says.
On 38 weeks and five days Chantelle
went into labour. But after 12
agonising hours she only managed to
dilate 2cm. Her body went into shock
and the baby’s heart rate dropped.
She was rushed to theatre for an
emergency C-section.
“Her name, Jenica, means ‘God’s
gracious gift’ – exactly what she is
to us. It is also the female form of
John. Her second name, Jade, is
John’s favourite colour and it’s also
a precious stone, which indicates
how precious she is to us,” Chantelle
explains her name.
To Chantelle, being able to be a mom
is extra special. “Motherhood to me
means lots of sacrifice but it’s also the
biggest privilege. To be able to be a
mom changes your whole being and
soul. You will never be able to be the
same woman before and after having
children,” she says.
To the Owens, family is everything. But,
not necessarily blood-related. “I have
friends that are like family to me – they
keep you grounded and provide a
feeling of belonging,” Chantelle says.
Alone time for the happy parents is
very important and Chantelle and
John try to catch-up over a cup of
coffee at night after Jenica falls asleep
and plan regular date nights where
Chantelle’s mom babysits.
To those dreaming of one day
holding their perfect little bundles
of joy, Chantelle has some words of
encouragement.
“I know the fertility journey is anything
but easy. It’s a road full of lots of
uncertainty, but I want to say to every
woman who is currently still waiting
on their little miracle, to never lose
hope. There is nothing one can say to
make it any easier, but just know – you
are not alone.”

SPOIL THE KIDS...

Carrot cupcakes –
A whole lot of love in a cupcake
Serves: 9 cupcakes

For the cupcake batter you’ll need:
1½ cups almond flour; 1 tsp baking powder;
½ tsp baking soda; ½ tsp sea salt; ¼ tsp ground
ginger; ½ tsp cinnamon; ¼ tsp nutmeg;
3 eggs; 1/3 cup maple syrup; ¼ cup coconut oil
(melted); ¼ tsp pure vanilla extract; 1½ cups
grated carrot
For the Cashew “Cream Cheese” frosting
you’ll need:
1 cup cashews (soaked for 2 hours or
overnight); 4 tbsps unsweetened dairy-free
milk; 2 tbsps lemon juice; 2 tbsps maple syrup;
1 tbsp coconut oil; a pinch of sea salt
Optional toppings:
Cacao nibs; coconut flakes; lemon zest
To make:
Mix together the dry ingredients (almond
flour, baking powder, baking soda, salt, ginger,
cinnamon and nutmeg). Ensure the baking
soda is mixed in very well, otherwise it can turn
the carrots green.
In a separate bowl, whisk together the wet
ingredients (eggs, maple syrup, coconut oil and
vanilla extract).
Stir the dry ingredients into the wet mix, and
then fold in the grated carrots.
Once everything is well combined, scoop
¼ cup of batter into a lined or oiled muffin tin,
bake in a 180°C oven for 23-25 minutes, or until
an inserted toothpick comes out clean.
As the cupcakes are baking or cooling, prepare
the icing by blending all ingredients in a
blender or food processor until a smooth and
silky texture forms.
Once the cupcakes are cool, ice them using an
offset spatula or spoon, or with a piping bag
(you can make this out of a Ziploc bag).
Top with cacao nibs, coconut flakes or lemon
zest, or leave them plain.

Makes: 16 squares
You’ll need:
170g butter; 180g dark chocolate;
150g castor sugar; 3 large eggs;
1 tsp vanilla; 80g cake flour; 60ml cocoa
powder; 100g choc chips; 4 ripe plums
To make:
Preheat oven to 180°C and line a square
cake tin with baking paper.
Melt together chocolate and butter, then
set aside to cool to room temperature.
Whisk together sugar, eggs and vanilla
until pale and thickened, stir in the
melted chocolate and butter until
well combined.
Fold in the flour and cocoa powder,
then stir in the choc chips.
Pour the batter into the tin.
Halve the plums, remove the pips and
slice thinly before arranging on the
brownie batter.
Bake for 35-40 minutes (do not overbake)
you still want the brownies to be
gooey in the centre.
Remove from the oven then let it cool
down in the tin.
Slice into 16 squares once the brownies
have completely cooled.
Crispy chicken fingers and plum
chutney
Serves: 4
You’ll need:
1½ cups mayonnaise; ¼ cup grated parmesan;
1 tbsp chicken spice; 1 tsp smoked paprika; salt
and pepper; 4 chicken breasts (sliced); 2 cups
panko breadcrumbs; 2 tbps oregano;
1 tsp cayenne; 6 plums (pitted and diced);
1 onion, finely chopped; ½ tsp chilli flakes; 1 cup
brown sugar; ½ cup cider vinegar; ½ tsp allspice
To make:
Mix together mayo, parmesan, chicken spice,
paprika, salt and pepper.
Add the sliced chicken breasts, then stir to coat
chicken in mayo spice mixture.
Combine panko, oregano, seasoning and
cayenne.
Dip the chicken strips into the crumbs, pressing
to coat well.
Deep-fry in canola oil until golden and crispy or
bake in a preheated oven at 200°C until golden.
For the plum chutney, combine the plums, onion,
chilli flakes, sugar, vinegar and allspice, in a pot
and then place over medium heat and simmer
gently, stirring occasionally, for 30 minutes.
Cool to room temperature then store in an
airtight container in the fridge for up to 2 weeks.

the beautiful outdoor boma area
where you can sip a good glass of
red wine as you tuck into a yummy
dinner and enjoy being serenaded
by the multi-talented kitchen and
bar staff. Breakfasts are a treat with
all the trimmings, including yummy
homemade croissants and pastries.

Close up with the cats
There are few times in one’s life
when you can stand right next to
two cheetahs as they laze and roll
about, gently gnawing on each other’s ears.
One of the main drawcards for visitors to the
lodge is, of course, the on-site Emdoneni
Cat project (now called Zululand Cat
Conservation), which has been in operation
for more than 25 years. Guests visiting
the project are given a guided tour of the
facility and invited to get up-close-andpersonal
with the Cheetahs, African Wild
Cats, Caracals and Servals on the property.
There is no petting allowed and, since its
inception, more than 40 cats have been
successfully released back into the wild.

Wilderness adventures
The small coastal town of St Lucia,
less than an hour’s drive from
Emdoneni, is a treasure trove of
natural beauty and protected wilderness.
It is not uncommon to see hippos strolling
down the street or spot rare and endangered
birdlife in the surrounding coastal forest.
The town borders the iSimangaliso Wetland
Park, home to four of the Big Five and 220km
of protected coastline. A walk along Mission
Rocks beach is a must. Clamber over the
rugged rocks as you head north along the
pristine beach towards the sea caves that
are home to thousands of fruit-eating bats.
Enjoy lunch at a Cape Vidal picnic spot under
the trees before enjoying a swim or snorkel
in the warm Indian Ocean. And then, what
better way to end the day than with a sunset
cruise along Lake St Lucia, sipping on a G&T
