PENNE AL’ ARRABBIATA<br />

Arrabbiata means “angry” in Italian and as a<br />

dish it refers to the spiciness of the sauce. In<br />

this dish, penne pasta is cooked to perfection<br />

in generous portions of chopped tomato and<br />

infused with garlic, herbs and chilli flakes,<br />

then cooked in olive oil. The chilli flakes<br />

perfume the oil and make this dish all the more<br />

flavourful. The shape and texture of the penne<br />

retain the sauce particularly well, bursting<br />

with every bite. It’s a great go-to pasta dish for<br />

vegetarians and vegans, thanks to the omission<br />

of cheese in the delicious spicy tomato sauce.<br />
