The highlight of this catalog is certainly<br />
the new kitchen knife series <strong>Boker</strong><br />
Patina. The forged blades, made of<br />
the carbon steel O1, are ground very<br />
thin and convince not only with an<br />
extremely appealing composition<br />
but also with incomparable cutting<br />
performance. Even after the first use,<br />
the high quality steel can be recognized<br />
by the gray-blue tarnishing of the<br />
blade, the patina, which then acts as a<br />
resistant, protective layer.<br />
HANDMADE SINCE 1869.<br />
Last year we were able to celebrate our<br />
150th anniversary with numerous loyal<br />
friends and business partners. We are<br />
now looking forward to the next 150<br />
years with a thirst for action.<br />
One quickly forgets that already in our<br />
founding year 1869 - in the supposedly<br />
“good old days” - the world was<br />
in a state of unprecedented upheaval.<br />
Thirteen years earlier, the first mailorder<br />
catalog had appeared in France,<br />
electric telegraphy, railways and<br />
steamships brought the world closer<br />
together and the first sound recording<br />
was less than a decade away.<br />
The promising possibilities in overseas<br />
export and the cooperation with cutlery<br />
factories in the USA, Canada and Mexico,<br />
which had previously been founded<br />
by members of the Böker family, were<br />
essential incentives for the foundation<br />
of Heinr. Böker & Co. in Solingen.<br />
Managing Owners Kirsten Schulz-Dalichow and Carsten Felix-Dalichow<br />
Dealing with challenges that seem<br />
modern today, such as globalization,<br />
networking and structural change, has<br />
therefore been firmly anchored in the<br />
DNA of our manufactory from the very<br />
beginning.<br />
With this in mind, the seventh revision<br />
of our logo is based on the very first<br />
trademark from 1869, which was a<br />
positive declaration of intent to a<br />
certain extent, and which contrasted<br />
a seemingly restless and chaotic<br />
historical situation with a clear and<br />
simple formal language.<br />
The stylized tree with the simple<br />
bordering line has now been taken<br />
up again and translated into a<br />
contemporary appearance. In the<br />
future you will recognize every product<br />
that leaves our factory by this new and<br />
yet familiar seal of quality.<br />
The showpiece of the new series is<br />
even more exclusive. The high class<br />
<strong>Boker</strong> Patina Damascus chef's knife<br />
is limited to 50 pieces worldwide.<br />
The Wild Damascus is hand forged<br />
by Chad Nicols from Mississippi, and<br />
harmonizes perfectly with the handle,<br />
made of stabilized burl birch with brass<br />
rivets.<br />
Of course, the catalog can also boast<br />
many other novelties - a wide selection<br />
of innovative kitchen knives and<br />
accessories.<br />

A millennia-old blacksmith's art,<br />
which still develops its fascination<br />
today. While the forging of multi-layer<br />
steels originally served to produce<br />
the highest possible material quality,<br />
today's enthusiasm for Damascus<br />
steel is no longer based on technical<br />
demands, but rather on a passion for<br />
the material and its special charm,<br />
the fascination of which is hard to<br />
resist.<br />
In the production of classic, hand<br />
forged Damascus, at least two steels<br />
of different compositions are forged<br />
together.<br />
After forging, the steel piece is<br />
folded and forged again, doubling<br />
the number of layers. This process<br />
is now repeated until the desired<br />
number of layers is reached. By using<br />
steels with different properties, the<br />
quality of the Damascus steel can be<br />
significantly influenced - for example,<br />
a particularly hard steel can be<br />
combined with a particularly tough<br />
steel in order to achieve the best<br />
possible balance between hardness<br />
and cutting performance.<br />
The pattern of the Damascus steel<br />
is influenced by the forging and the<br />
number of layers on the one hand, but<br />
can also be produced in a targeted<br />
manner by additional stamping of<br />
the finished forged Damascus bar. By<br />
embossing the ingot using a stamping<br />
die with a specific pattern, the<br />
layers in the Damascus are shifted<br />
against each other. The embossing<br />
pattern appears as a structure in the<br />
Damascus when the blade is ground<br />
out of the embossed material.<br />
Visually, however, the pattern is<br />
hardly recognizable on the freshly<br />
ground blade; only through the final<br />
etching in a special acid, in which the<br />
two types of steel respond differently<br />
to the acid and tarnish darkly, does<br />
the pattern created by the structure<br />
come to the forefront, and unfold the<br />
true splendor of Damascus steel.<br />
In contrast to classic Damascus<br />
production, rust-bearing steels cannot<br />
be forged under normal circumstances.<br />
However, resourceful Damascus blade<br />
smiths have devised a method to<br />
circumvent this obstacle. The crucial<br />
point here is oxygen.<br />
While the classic, non-corrosive<br />
Damascus is forged and folded in a<br />
normal, open forge, the ambient air is<br />
the decisive factor in the case of noncorrosive<br />
Damascus – it prevents the<br />
forging of stainless steels. For this<br />
reason, in rust-bearing Damascus,<br />
pre-stacked layers of layers are<br />
forged together under vacuum.<br />
One of the most demanding forms<br />
of forging Damascus steel is Torsion<br />
Damascus. Here, in addition to the<br />
classic folding process, the material<br />
is also twisted, i.e. twisted into itself.<br />
This results in a very unique pattern,<br />
and the control of this forging process<br />
certainly requires the highest level of<br />
expertise.<br />
Torsion Damascus is also known, for<br />
example, from the few remaining<br />
swords from the Viking Age, in which<br />
the finest pieces were forged with the<br />
highest level of craftsmanship, which<br />
were also technically far superior to<br />
the standard swords of the time.<br />
The extremely complex forging process,<br />
with its characteristic pattern, still<br />
makes Torsion Damascus one of the<br />
most exclusive and rarely found<br />
Damascus variants today.

Even if the Damascus blade of this exclusive model,<br />
which is limited to only 50 pieces worldwide, does<br />
not develop a visually perceptible patina after<br />
use, the affiliation to the <strong>Boker</strong> Patina kitchen<br />
knife series is unmistakable. In contrast to the<br />
models with blades made of carbon steel, the<br />
acid treatment and the (controlled) discoloration<br />
is already carried out during the manufacturing<br />
process, as this is the only way to make the<br />
different Damascus layers visible.<br />
The handle of this extraordinary chef's knife,<br />
in the classic Solingen three-rivet design, is<br />
in no way inferior to the blade in terms of<br />
appearance and function. With its lively grain,<br />
the handpicked, stabilized burl birch wood makes<br />
each knife truly unique. This extraordinary<br />
composition is completed with brass rivets.<br />
The premium Damascus with 180 layers is hand<br />
forged by Chad Nichols from Mississippi in<br />
the USA, one of the most renowned Damascus<br />
blade smiths in the world of knives.<br />
The fine, high contrast designs and the high<br />
suitability of the material for everyday use<br />
are not only appreciated by various knife<br />
manufacturers worldwide, but also by<br />
numerous custom knifemakers.<br />
However, with the forging of the high quality<br />
Damascus, the blade is still far from its final<br />
shape and finish. In the next step, the forged<br />
split piece is further processed in our drop<br />
forge in Solingen.<br />
After it has been heated there to a red heat, a<br />
two-tone ramrod beats it into shape in a massive<br />
mold. This mold, consisting of an upper and<br />
lower half, is the so-called drop forge. In the<br />
next step, the blade is soft-annealed, deburred<br />
and finally, calibrated.<br />
The resulting Wild Damascus pattern is as<br />
unique as a human fingerprint, and after its<br />
journey around the world is ready for new<br />
adventures - in your kitchen.

We are a modern and sustainable company with<br />
roots in an industry with a long regional history.<br />
Our region is the Bergisches Land, where blade<br />
production was established as early as the Middle<br />
Ages, thanks to two main factors. The dense<br />
forests supplied wood as a renewable resource<br />
that could be carbonized for forging. Many<br />
rivers running through narrow valleys – primarily<br />
the Wupper River – supplied easily accessible,<br />
renewable energy for grinding mills and smithies.<br />
Now, the Bergisches Land does not actually<br />
take its name from its mountainous topography<br />
("Berg" being German for "mountain"), but from<br />
the noble House von Berg. Their mighty counts<br />
left their mark on the region like no other dynasty,<br />
reaching all the way to the Rhineland. It is no<br />
accident that their ancestral seat of Burg Castle<br />
has become the landmark of the Bergisches Land.<br />
Thanks to our close relationship with the castle<br />
preservation association, Schlossbauverein Burg<br />
an der Wupper e.V., we were able to obtain a small<br />
amount of wood from the 100-year-old oak beams<br />
of this historic monument.<br />
built around the year 1130. From the top with its<br />
three wooden brattices, visitors have a panoramic<br />
view all the way to the neighboring town of<br />
Remscheid. A covered bridge connects the tower<br />
with the shield wall and wall walk. In medieval<br />
times, it was the only access to the tower.<br />
Today, the west side of the keep has an additional<br />
entrance to the ground floor. The archway bears a<br />
sandstone plate with information about the history<br />
of the mighty tower. In the past, the ground floor<br />
was called the dungeon, accessible only through an<br />
opening from the floor above and used as storage<br />
for stone balls. In case of an attack, the defenders<br />
of the keep would pelt attackers with the balls<br />
from the upper floors. The ground floor could<br />
hold up to 12 tons of stones. From the first floor,<br />
stairs in the outside walls, which are up to four<br />
meters thick, lead to the upper floors. We process<br />
pieces of the original oak beams of the keep at<br />
Burg Castle with all due respect and diligence to<br />
make handles for our <strong>Boker</strong> Core Damascus, an<br />
edition strictly limited to 199 pieces. The blade is<br />
truly special - the hand forged stainless Damascus<br />
has a breathtaking pattern and offers excellent<br />
resilience and hardness (60 HRC), which makes<br />
the <strong>Boker</strong> Core Damascus an exclusive collector's<br />
item and guarantees exceptional performance<br />
for all cutting tasks in the kitchen. In Solingen,<br />
the forged blade piece consisting of 300 layers<br />
of Damascus is brought to a red heat and dieforged<br />
into its beautiful shape by a drop hammer<br />
weighing two tons.<br />
What better way to express our respect for the<br />
history of our region and our craft than by referring<br />
to the Counts von Berg and their ancestral home?<br />
Each of these works of art comes in an elegant<br />
leather covered gift box with a certificate of<br />
authenticity and individual serial number.<br />
The wood was sourced from the so-called keep, the<br />
main tower of Burg Castle, which is an impressive<br />
105 feet tall. The foundation of the keep (46 ft. x<br />
36 ft.) was laid in the first building phase of the<br />
castle in the 12th century. The six-storied defense<br />
tower with living quarters was rebuilt in the early<br />
20th century, modeled after Romanesque towers

Close to the headquarters of the <strong>Boker</strong><br />
Manufactory in Solingen, Germany, lies Burg<br />
Castle on the Wupper River - the landmark<br />
of the Bergisches Land. It is also one of the<br />
largest castles in western Germany and the<br />
largest reconstructed castle complex in North<br />
Rhine-Westphalia. Today, Burg Castle is used<br />
for a variety of cultural purposes, including as<br />
a museum, event venue and memorial.<br />
In order to be able to fully maintain this<br />
landmark in the future and renew the energy<br />
system, an extensive renovation program was<br />
begun in 2017 and is set to continue until<br />
2024. The renovation has enabled us to obtain<br />
an exclusive inventory of original 100-yearold<br />
oak beams from the mighty keep of Burg<br />
Castle.<br />
With great care and craftsmanship, we process<br />
these historic oak beams from the keep into<br />
handle scales for our successful kitchen knife<br />
<strong>Boker</strong> Saga, which is available in a strictly<br />
limited edition of 199 pieces. The design of<br />
the Saga series was created by Danish knife<br />
designer and renowned custom knifemaker<br />
Jesper Voxnæs, and has already won the iF-<br />
Product Design Award.<br />

While classic, non-stainless Damascus can<br />
be forged and folded in an open forge,<br />
the prepared layer packages of stainless<br />
Damascus must be forged with great effort in<br />
the vacuum. Damascus steel products forged<br />
by Chad Nichols are known for their exclusive<br />
look in the kitchen and, more importantly,<br />
for the excellent edge retention and everyday<br />
functionality of the beautiful material.<br />

The best of two worlds: A traditional Japanese<br />
chef's knife - handmade in Solingen, Germany.<br />
Not only do many top chefs swear by Japanese<br />
kitchen knives - they are also becoming<br />
increasingly popular with ambitious home cooks.<br />
The merits of a knife with Japanese handles<br />
and the traditional construction of a blade with<br />
stainless steel ferrule are obvious, because<br />
delicate foods can be cut and cooked very gently.<br />
When chopping herbs, for example, the very fine<br />
cut leaves hardly any essential oils. Flavors are<br />
not lost, and the unwanted tears when chopping<br />

material and its processing. The blade consists<br />
of 37 layers of Damascus steel. The premium<br />

crystalline structure.<br />
In a direct comparison of the cutting performance<br />
with a product of an established Solingen<br />
kitchen knife manufacturer according to DIN EN<br />
ISO 8442-5, the series <strong>Boker</strong> Damascus Black are<br />
not only superior in the proverbial sense - the<br />
cutting performance of our knives is more than<br />
68% higher than that of the competitor's product<br />
in the representative DIN test. In addition, the<br />
series <strong>Boker</strong> Damascus Black convinces by an<br />
initial sharpness that is far superior, making<br />

The handle material is black plywood, which, due<br />
to its beautiful and dramatic color, emphasizes<br />

chef's knife - handmade in Solingen, Germany.<br />
Not only do many top chefs swear by Japanese<br />
kitchen knives - they are also becoming increasingly<br />

construction of a blade with stainless steel ferrule<br />

of 37 layers of Damascus steel. The premium<br />

crystalline structure.<br />
In a direct comparison of the cutting performance<br />
with a product of an established Solingen kitchen<br />
knife manufacturer according to DIN EN ISO<br />
8442-5, the series <strong>Boker</strong> Damascus Olive and<br />
<strong>Boker</strong> Damascus Black are not only superior in the<br />

The classic carbon steel still has its<br />
raison d'être in the age of ultra modern<br />
powder metallurgical steels.<br />
Many users appreciate not only the<br />
traditional aspect offered by carbon<br />
steel, but also the combination of<br />
cutting performance and easy resharpening<br />
that stainless steels have<br />
never achieved. This property and the<br />
very fine microstructure make carbon<br />
steel a real alternative to chromium<br />
steels for many cutting tools, even<br />
today.<br />
Carbon steels are still unsurpassed,<br />
especially for blades where the finest<br />
possible cutting edge is required, such<br />
as razors.<br />
But outdoor enthusiasts also appreciate<br />
the fact that a carbon steel blade can<br />
be brought back to a good sharpness<br />
on a river rock in an emergency. In<br />
the kitchen, too, particularly finely<br />
ground carbon steel blades, with their<br />
unsurpassed cutting capabilities, are a<br />
real pleasure.<br />
With a little care, a carbon steel blade<br />
has the same life expectancy as a<br />
stainless blade. In the kitchen, it is<br />
usually sufficient to rinse the blade<br />
under hot running water after use.<br />
What you should avoid is leaving the<br />
used blade lying around for a long time<br />
without cleaning it.<br />
Since the dishwasher is also a taboo for<br />
stainless steel kitchen knives, this also<br />
applies to carbon steel blades.<br />
Knives with carbon steel blades should<br />
not be stored in a leather sheath, for<br />
example, as leather sheaths normally<br />
contain tannic acids that can attack the<br />
carbon steel.<br />
A completely natural material property<br />
is the formation of a patina when the<br />
knife is used. A gray-blue tarnishing<br />
of the blade is completely normal, and<br />
in no way constitutes a defect. On the<br />
contrary, the resulting patina (oxide<br />
layer) forms a protective layer on the<br />
blade, which increases its resistance to<br />
external influences.<br />
This patina often becomes visible after<br />
the first use, and cannot be removed.<br />
The expert immediately recognizes the<br />
high quality carbon steel from this. In<br />
principle, this also applies to Damascus<br />
blades forged from classic carbon steels.<br />

This high quality, pure camellia oil<br />
is made according to a traditional<br />
Chinese recipe, and has many uses.<br />
The thin oil is extracted from the<br />
seed of the camellia tree, is taste<br />
neutral, odorless, and does not dry.<br />
The camellia oil is food safe and<br />
impresses with its special purity.<br />
Corrosion protection<br />
The acid-free, non-resinous, and<br />
non-evaporating camellia oil is<br />
traditionally used to protect from<br />
corrosion in the care of high quality<br />
knife blades made from carbon steel,<br />
as well as tools and weapons. It<br />
is purely organic and perfect for<br />
preserving non-stainless kitchen<br />
knives and straight razors as – in<br />
contrast to other care oils – does not<br />
form an emulsion with water.<br />
Wood protection<br />
The low-viscosity oil quickly absorbs<br />
into the wood and protects from<br />
moisture, dirt, and UV radiation.<br />

Naturally, we want to celebrate our 150th<br />
anniversary with another special edition,<br />
based on our successful line of kitchen<br />
knives, <strong>Boker</strong> Core. In the 17th century, a<br />
huge chestnut tree used to provide welcome<br />
shade for the small tool manufactory in<br />
Remscheid owned by the <strong>Boker</strong> family. It is<br />
well known that this tree inspired the name<br />
of the <strong>Boker</strong> Manufactory and the worldfamous<br />
corporate logo.<br />
Paying homage to the beginning of our<br />
company's history 150 years ago, this<br />
model features a handle made from smoked<br />
chestnut wood. With its dark color and<br />
subtle pattern, the material emphasizes<br />
the elegant design and exclusive nature<br />
of the knife. The die-forged blade is<br />
made from O1 carbon steel, which offers<br />
superior characteristics and excellent edge<br />
retention - the perfect material for high<br />
quality kitchen knives. Even in the age of<br />
state-of-the-art powder metallurgical steel,<br />
classic non-stainless carbon steel still has<br />
its raison d'être.<br />
Many users appreciate the traditional aspect<br />
of carbon steel, as well as the combination<br />
of edge retention and easy sharpening, never<br />
quite achieved by stainless steel. For blades<br />
requiring an extremely fine edge, e.g. razor<br />
blades, carbon steel is still a matchless choice.<br />
In the kitchen, it is truly a joy to work with<br />
a fine edged carbon steel blade that offers<br />
unsurpassed cutting properties. With a little<br />
care, a blade made from carbon steel has the<br />
same service life as a stainless blade. In the<br />
kitchen, you simply have to rinse the blade<br />
under hot running water after each use.<br />
One completely natural property of the<br />
material is the patina that will develop over<br />
time, especially after cutting acidic food. It is<br />
absolutely normal for the blade to take on a<br />
grayish blue hue, which is not a flaw. On the<br />

gold. Providing a strong contrast and elegant<br />
appearance, the inscription is etched in deep<br />
black. The elaborate blade etching process<br />
according to Solingen tradition is reserved for<br />
the finest, most exclusive knives, highlighting<br />
the special status of this anniversary edition<br />
in our product range.<br />
All knives in this series are handcrafted in<br />
Solingen and strictly limited to 150 pieces<br />

Since 1869, the famous knives with the<br />
worldwide known <strong>Boker</strong> tree mark have<br />
been handmade in the blade city of<br />
Solingen. Depending on the series and<br />
type of construction, up to 80 different<br />
steps are necessary to finish a knife in our<br />
manufactory. A chef's knife passes through<br />
about ten internal departments.<br />
Before the production of a new knife can be<br />
started for the first time, the product idea<br />
is digitally designed with the help of CAD<br />
software. A simple hand sketch by our knife<br />
designers and custom knifemakers often<br />
forms the basis for an initial design drawing.<br />
For forged knives, the raw material is then<br />
cut into slit pieces, heated to red heat and<br />
beaten into shape in a massive die with the<br />
help of a two-ton ramrod. The blades of the<br />
non-forged chef's knives are punched from<br />
steel plates or cut out by laser or water jet<br />
technology.<br />
The intended purpose and the shape can<br />
already be clearly seen from the blade<br />
blanks. In the hardening shop, the blade<br />
undergoes thermal treatment. The steel<br />
must be as hard as possible for the required<br />
cutting performance on the one hand, and<br />
tough enough not to break during use on<br />
the other. The blade is then ground with<br />
appropriate cooling.<br />
Bent on the grinding stand, the next<br />
production step is carried out by genuine<br />
Solingen craftsmanship. The back is ground,<br />
the transition from blade to tang is cleaned<br />
and finally, the unique Solingen blue plating<br />
is applied. All Damascus steel knives are<br />
then etched, so that the different layers of<br />
steel can be distinguished, i.e. accentuated.<br />
The handle department stores the wood of a<br />
wide variety of trees, including many native<br />
species, but also 5,000-year-old bog oak<br />
and rare root woods. These are cut by our<br />
master carpenter into so-called scantlings<br />
on a circular table saw and then further<br />
processed by hand on a milling machine.<br />
The milled scantlings are then married to<br />
the blades in the reiding mill. Depending on<br />
the type of construction, this is done using<br />
rivets, hollow rivets or extremely durable<br />
adhesive joints.<br />
The most impressive transformation of the<br />
unfinished knife takes place in the buffing<br />
department. All edges, protruding rivets,<br />
protruding glue and scratches are skillfully<br />
shaped in countless work steps on belts and<br />
grinding wheels with different grit sizes.<br />
Apart from the sharp cutting edge, the<br />
knife gets its final shape aesthetically and<br />
functionally.<br />
Finally, the knives are meticulously checked<br />
with an experienced eye in the final<br />
inspection. Only absolutely faultless and<br />
flawless specimens are then sharpened by<br />
hand, marked with our hand proof, checked<br />
again, then cleaned and packed.<br />
Each design has its own tradition and<br />
justification and at the same time different<br />
advantages in production, handling and<br />
application. One thing, however, unites<br />
the <strong>Boker</strong> kitchen knives presented here<br />
despite all the differences – they are all<br />
exceptional, superior kitchen knives, which<br />
you will not voluntarily put down. According<br />

Danish design emerged as a style in the<br />
middle of the 20th century, strongly<br />
influenced by the ideas of the German<br />
Bauhaus. This design movement developed<br />
its own no-nonsense look characterized by<br />
simple formalism, minimalism, clarity and<br />
functionality, as well as by the use of<br />
cutting edge industrial technology in the<br />
realization of this design vocabulary. This is<br />
the tradition of Danish designer and custom<br />
knifemaker Jens Ansø, who designed the<br />
kitchen knife series <strong>Boker</strong> Pure following<br />
these exact design principles.<br />
The knives have unique, classically simple<br />
lines and offer excellent balance, handle<br />
ergonomics and functionality. This<br />
minimalistic design is highlighted with the<br />
use of "Bergische Eiche," a regional oak<br />
wood, for the handles. The pleasing pattern<br />
of the elaborately finished oak wood is only<br />
interrupted by three understated stainless<br />
steel rivets, which are applied with great<br />
care in a completely manual process.<br />
In order to match the aesthetic quality of<br />
the series with its technical properties, we<br />
use the powder metallurgical steel CPM-154,<br />
made by the American manufacturer Crucible<br />
Industries. This steel is made by melting the<br />
already excellent base steel 154-CM in order<br />
to add more carbides.<br />

The steel is then atomized in a vacuum and<br />
quenched with a cold air jet. The resulting<br />
steel powder is pressed and sintered below<br />
melting temperature. This process makes<br />
it possible to give the steel a much higher<br />
carbide concentration than regular blade<br />
steel; and the carbides give the steel<br />
additional hardness and edge retention.<br />
The bar graph (left) shows the edge retention<br />
compared to an established, popular kitchen<br />
knife steel, the chromium-molybdenumvanadium<br />
steel X50CrMoV15, as well as<br />
to the excellent 440C. The superior edge<br />
retention of the 440C is far surpassed by the<br />
powder metallurgical steel CPM-154, which<br />
is a guarantee for a sharp knife that keeps<br />
its edge for a very long time.<br />

The knife is humankind's oldest tool.<br />
The need for sharp blades is just as<br />
old and still very pressing today.<br />
According to a survey, more than 90%<br />
of German households use dull knives.<br />
Even though everybody uses knives in<br />
the kitchen, the subject of sharpening<br />
knives is still shrouded in mystery.<br />
For many people, sharpening and<br />
honing are unfamiliar territory - skills<br />
ascribed only to an elite circle of select<br />
specialists who use secret methods<br />
to make dull knives sharp again; it is<br />
almost like magic.<br />
However, there's really no wizardry<br />
involved. If you find the method that<br />
is right for you, you can restore the<br />
edge of your own knives to exquisite<br />
sharpness without a problem. One<br />
more thing about manual sharpening<br />
- there is an old adage saying that<br />
things done quickly are not worth<br />
much. If something is worth doing, it<br />
is worth doing slowly. A good manual<br />
sharpening process always takes a little<br />
more time. A manual knife sharpener<br />
who is primarily advertising his high<br />
speed will never be able to offer the<br />
desired result that can be achieved<br />
with the methods described below.<br />
Today, machine sharpening has become<br />
a good, practical alternative. A vast<br />
variety of home sharpening tools are<br />
available, but our experience has<br />
shown that machines with sharpening<br />
belts achieve a far superior quality of<br />
the finished product than machines<br />
working with grinding wheels.<br />
We hope that our overview on the<br />
following pages will take some of<br />
the "mystery" out of the subject of<br />
sharpening knives and motivate you to<br />
take a closer look at this practical and<br />
useful skill.

WHETSTONES<br />
SHARPENING<br />
Of course, modern technology is catching up<br />
with the subject of sharpening, but many of the<br />
"experts" on this subject are traditionalists. And<br />
that usually means: you use stones.<br />
Such stones can be very different in nature; they<br />
can be natural stones, synthetically produced, or<br />
even hybrids. Stones are generally not used dry.<br />
Depending on the stone, you need water (such as<br />
Japanese water stones, which need to be watered,<br />
or the Belgian Chunks, which only moisturizes<br />
the surface), or oil, as in the centuries-proven<br />
Arkansas stones.<br />
While the oil in the oil stone only has the task<br />
of ensuring the sliding on the stone and wash<br />
away worn steel particles from the stone, the<br />
water forms a grinding sludge, especially in the<br />
Japanese water stones, which is instrumental in<br />
sharpening.<br />
Especially for very fine cutting, the highest<br />
qualities of the Arkansas oil stones have<br />
tremendous potential, but here as well, it's<br />
generally a matter of personal preference.<br />
There are different methods of sharpening with<br />
the bench stone - some prefer a circular motion<br />
or "8" trajectory with the edge (i.e. with the<br />
spine of the blade ahead), sharpening one side<br />
of the blade until a burr emerges and then<br />
changing sides. In particular, in the case of the<br />
fine print, the respective mutual pull against the<br />
cutting edge (i.e. with the cutting edge ahead) is<br />
a popular method. And as so often in life, there<br />
is not one correct method here - trying out and<br />
finding the personally preferred method is the<br />
way to go.<br />
When sharpening, it is essential to maintain the<br />
correct angle. When sharpening on the stone, on<br />
the one hand, it has to be determined correctly and,<br />
on the other hand, to be constantly maintained<br />
during the entire sharpening process, which of<br />
course requires some practice and experience.<br />
If you appreciate the traditional method but are<br />
open to more modern materials, you can of course<br />
also consider ceramic or diamond coated bench<br />
stones. While the handling is identical to water<br />
or oil stones, it can usually be dispensed with oil<br />
or water, and the wide range of grits also offers<br />
all options.<br />
It is important that after creating a burr, depending<br />
on the grinding method, it is removed cleanly.<br />
For this purpose, a leather strop will do, which,<br />
possibly also treated with abrasive paste, represent<br />
the final step and the cutting edge "meets the<br />
finishing touch."<br />
The finely tapered edge that can bend when<br />
coming in contact with a bone or a hard cutting<br />
surface is straightened with a sharpening steel.<br />
The knife is carefully placed on the steel and<br />
pulled across on alternating sides with light<br />
pressure and with the spine first (important!).<br />
This straightens the bent edge and refreshes the<br />
knife's cutting power.<br />
The steel should not be confused with its similar<br />
half-brother, the rod sharpener. Though they<br />
look very similar, the difference is that the rod<br />
sharpener is made with abrasive materials, such<br />
as ceramic, synthetic ruby or diamond-coated<br />
steel. Since these rods are used for sharpening,<br />
they are also handled differently.<br />
Perfect for quick touch-up sharpening, the<br />
sharpener is used by pulling the knife along<br />
the rod, edge first, until the desired level of<br />
sharpness is reached. Unlike the steel, the rod<br />
sharpener does take material off the edge; this<br />
is a true sharpening process. You need to know<br />
that neither of the two tools is suitable for<br />
replacing the function of the other.<br />

The tradition of opening a Champagne bottle<br />
with a saber was born in the Napoleonic<br />
era. The "sabrage" with the Briquet saber<br />
was founded in 1812 by the general himself<br />
after winning a battle. This unique custom<br />
has survived to this day, and not only in<br />
France. It is a special highlight at any festive<br />
occasion. When done correctly, it generally<br />
works without issue. After the wire basket is<br />
removed from the cork, one drives the blade<br />
of the saber along the bottleneck and onto the<br />

Jesper Voxnæs reduced the classic knife formats<br />
to the essentials, shortening the handles in<br />
particular. The blades, made from high quality<br />
440C, are also noticeably shorter compared to<br />
classic kitchen knives. The SanYouGo was made<br />
from the essence of a Santoku, while the classic<br />
chef's knife was the source of inspiration for the<br />
ChefYouGo. The blades of these two extremely<br />
compact and flexible models are finely satined,<br />
while the scales consist of black G10 with a red<br />
fiber layer. Leather sheath included.<br />
