The knives offer a very pleasant composition
and matchless edge retention. After the
first use, the high-quality non-stainless
blade steel will already show a gray-blue
discoloration, the patina, which will build
up and create a durable protective layer.
Managing Owners Carsten Felix-Dalichow and Kirsten Schulz-Dalichow
The centerpiece of the new series is an even
more distinguished choice. The exclusive
Boker Patina Damascus Kitchen Knife is
a limited edition of 50 pieces worldwide.
The non-stainless wild Damascus steel is
handforged by Chad Nicols from Mississippi
and creates a perfect harmony with the
handle of stabilized curly birch and brass
rivets.
HANDMADE SINCE 1869.
Last year, we were able to celebrate our
150th anniversary with many of our loyal
friends and business partners. Now we
are ready to look forward to the next 150
years.
It is easy to forget that in 1869, the
year of our foundation back in „the good
old days“, the world was grappling with
unprecedented change and disruption.
Thirteen years earlier, the fist mail order
catalog had been distributed in France. The
telegraph as well as trains and steamers
brought the world closer together and it
would be less than a decade until the first
sound recording.
Overseas export offered promising
opportunities. Members of the Boker
family had founded cutting tool factories
in the US, Canada and Mexico and the
cooperation with these companies was one
of the major incentives for the foundation
of Heinr. Boker & Co. in Solingen.
Handling the seemingly modern challenges
of globalization, networking and structural
changes has been part of our corporate
DNA from the very beginning.
Therefore, the current seventh edition of
our logo was inspired by our very first
trademark from 1869. As a deliberate
design choice, our logo‘s clear and
understated lines created a reassuring
contrast to the unsettled, often chaotic
political situation of the day.
We took the stylized tree framed by a
simple line and gave it a contemporary
look. Going forward, you will be able to
recognize every product made by Boker
by this new, yet familiar sign of excellent
quality.
The highlight of the current product catalog
is certainly the Boker Patina kitchen knife
series. The blades are forged from O1
carbon steel with a very thin grind.
Of course, the new catalog also has some
other new highlights: New in our product
range are the forged steak knives by
Goyon-Chazeau and the attractive steak
knives with colorful burl wood by Maserin.
Innovative knife sharpeners made by Work
Sharp Culinary make it easy to sharpen
your knife in a professional manner and
at an unbeatable price point. The product
range is rounded out by new sommelier
knives for all wine lovers.
We hope you‘ll enjoy reading and browsing
DAMASCUS STEEL
A thousands-of-years old blacksmithing craft that
still unfolds its fascination today. Originally, forging
multilayered steel was supposed to produce the
best possible quality material. Today, Damascus
enthusiasts hardly care about the technical aspect
anymore. They are passionate about the fascinating
material and its special look.
Classic handforged Damascus steel consists of at
least two types of steel with different compositions.
After forging, the piece of steel is folded and
forged again, which doubles the number of layers.
The process is repeated until the desired number of
layers is reached. By using steel types with different
properties, the blacksmith can influence the quality
of the Damascus significantly; a particularly hard
steel, for instance, can be combined with an
especially resilient steel in order to achieve a
balanced ratio of hardness and edge retention.
The Damascus pattern is influenced by forging and
the number of layers, but it can also be created by
embossing the finished forged Damascus bar. By
embossing the bar with the help of an embossing
punch with a specific pattern, the layers within the
Damascus shift against each other. The embossed
pattern appears as texture in the Damascus steel
once the embossed material is ground into a blade.
The pattern is barely visible on a freshly ground
blade. It needs to be finished in a special acid bath,
in which both types of steel react to the acid by
darkening at different levels. This brings out the
pattern created by the texture and reveals the true
magnificent beauty of Damascus steel.
Contrary to classic Damascus production,
stainless steel cannot be forged together under
normal circumstances. However, clever Damascus
blacksmiths came up with a technique that
circumvents this obstacle. The essential factor is
oxygen.
While classic, non-stainless Damascus is forged
and folded in a regular open smithy, the ambient
air is the deciding factor for stainless Damascus –
it prevents stainless steel layers from being forged
together. Hence, stainless Damascus is made by
preparing layer packages and forging them in a
vacuum.
One of the most sophisticated methods for forging
Damascus steel is torsion Damascus. Here, a twist
is added to the classic folding of the material. This
creates a unique pattern and the control needed
to master this forging process requires the highest
level of expertise.
Torsion Damascus was found in the few preserved
Vikings swords, made at a time when the most
sophisticated pieces were forged with outstanding
skill and craftsmanship far superior to the standard
swords of the day, even in technical terms.
The highly complex forging process that creates
the characteristic pattern makes torsion Damascus
one of the rarest and most exclusive types of
Damascus steel.

BOKER PATINA DAMASCUS
Although the Damascus blade of this special model
in a limited edition of just 50 pieces worldwide
will not develop any additional visible patina, it
is clearly part of the Boker Patina cooking knife
series.
Unlike the blades of non-stainless monosteel,
these blades are exposed to acid and patinized in
a controlled fashion during the production process
in order to bring out the different Damascus layers.
The handle of this extraordinary kitchen knife with
the classic Solingen three-rivet design is just as
appealing and functional as the blade. With its
one-of-a-kind pattern, the hand-selected stabilized
curly birch wood makes each individual knife truly
unique. The outstanding composition is finished
with brass rivets.
The non-stainless premium Damascus is handforged
in 180 layers by Chad Nichols from
Mississippi, one of the most renowned Damascus
blacksmiths of the knifemaker community. The fine,
contrasting pattern and perfect practicality of the
material is appreciated by knife producers all over
the world and by many custom knifemakers alike.
Once the premium Damascus has been forged, the
blade still has a long way to go before it is finished.
In the next step, the forged cropped piece is dieforged
at our Solingen factory. It is brought to a
red heat and pressed into a solid mold by a drop
hammer weighing two tons. The mold consisting
of a top and bottom half is called a die. Next the
blade is soft-annealed, deburred and calibrated.
This process creates a wild Damascus pattern as
unique as a human fingerprint. After its trip around
the world, it is ready for a new adventure - in your
kitchen.

BOKER CORE DAMASCUS
We are a modern and sustainable company with
roots in an industry with a long regional history.
Our region is the Bergisches Land, where blade
production was established as early as the Middle
Ages, thanks to two main factors. The dense forests
supplied wood as a renewable resource that could
be carbonized for forging. Many rivers running
through narrow valleys – primarily the Wupper
River – supplied easily accessible, renewable
energy for grinding mills and smithies.
Now, the Bergisches Land does not actually take its
name from its mountainous topography (“Berg”
being German for “mountain”), but from the noble
House von Berg. Their mighty counts left their mark
on the region like no other dynasty, reaching all
the way to the Rhineland. It is no accident that
their ancestral seat of Burg Castle has become
the landmark of the Bergisches Land. Thanks to
our close relationship with the castle preservation
association, Schlossbauverein Burg an der Wupper
e.V., we were able to obtain a small amount of
wood from the 100-year-old oak beams of this
historic monument.
A covered bridge connects the tower with the
shield wall and wall walk. In medieval times, it was
the only access to the tower.
Today, the west side of the keep has an additional
entrance to the ground floor. The archway bears a
sandstone plate with information about the history
of the mighty tower. In the past, the ground floor
was called the dungeon, accessible only through an
opening from the floor above and used as storage
for stone balls. In case of an attack, the defenders
of the keep would pelt attackers with the balls from
the upper floors. The ground floor could hold up to
12 tons of stones. From the first floor, stairs in the
outside walls, which are up to four meters thick,
lead to the upper floors.
We process pieces of the original oak beams of
the keep at Burg Castle with all due respect and
diligence to make handles for our Boker Core
Damascus, an edition strictly limited to 199 pieces.
The blade is truly special - the hand forged stainless
Damascus has a breathtaking pattern and offers
excellent resilience and hardness (60 HRC), which
makes the Boker Core Damascus an exclusive
collector’s item and guarantees exceptional
performance for all cutting tasks in the kitchen.
In Solingen, the forged blade piece consisting of
300 layers of Damascus is brought to a red heat
and die-forged into its beautiful shape by a drop
hammer weighing two tons.
What better way to express our respect for the
history of our region and our craft than by referring
to the Counts von Berg and their ancestral home?
Each of these works of art comes in an elegant
leather covered gift box with a certificate of
authenticity and individual serial number.
The wood was sourced from the so-called keep, the
main tower of Burg Castle, which is an impressive
105 feet tall. The foundation of the keep (46 ft. x 36
ft.) was laid in the first building phase of the castle
in the 12th century. The six-storied defense tower
with living quarters was rebuilt in the early 20th
century, modeled after Romanesque towers built
around the year 1130. From the top with its three
wooden brattices, visitors have a panoramic view
all the way to the neighboring town of Remscheid.

Close to the headquarters of the Boker Manufactory
in Solingen, Germany, lies Burg Castle on the
Wupper River - the landmark of the Bergisches
Land. It is also one of the largest castles in
western Germany and the largest reconstructed
castle complex in North Rhine-Westphalia. Today,
Burg Castle is used for a variety of cultural
purposes, including as a museum, event venue and
memorial.
In order to be able to fully maintain this landmark
in the future and renew the energy system, an
extensive renovation program was begun in 2017
and is set to continue until 2024. The renovation
has enabled us to obtain an exclusive inventory of
original 100-year-old oak beams from the mighty
keep of Burg Castle.
With great care and craftsmanship, we process
these historic oak beams from the keep into handle
which is available in a strictly limited edition of 199
pieces. The design of the Saga series was created
by Danish knife designer and renowned custom
knifemaker Jesper Voxnæs, and has already won
the iF-Product Design Award.
The best of two worlds: A traditional Japanese
chef’s knife - handmade in Solingen, Germany.
Not only do many top chefs swear by Japanese
kitchen knives - they are also becoming increasingly
popular with ambitious home cooks. The merits of
a knife with Japanese handles and the traditional
construction of a blade with stainless steel ferrule
are obvious, because delicate foods can be cut and
cooked very gently.
When chopping herbs, for example, the very fine
cut leaves hardly any essential oils. Flavors are
not lost, and the unwanted tears when chopping
onions can also be avoided. The perceived
sharpness when cutting is breathtaking, and
makes cooking an experience.
The secret of the unusual sharpness lies in the
material and its processing. The blade consists
of 37 layers of Damascus steel. The premium
blade steel VG-10, made in Japan, is used for
the core, and is characterized by a high degree
of hardness, toughness and a homogeneous
crystalline structure.
In a direct comparison of the cutting performance
with a product of an established Solingen kitchen
knife manufacturer according to DIN EN ISO
8442-5, the series Boker Damascus Black are not
only superior in the proverbial sense - the cutting
performance of our knives is more than 68%
higher than that of the competitor’s product in
the representative DIN test. In addition, the series
Boker Damascus Black convinces by an initial
sharpness that is far superior, making frequent
re-sharpening a thing of the past.
The handle material is black plywood, which, due
to its beautiful and dramatic color, emphasizes
the finely matted stainless steel ferrules and the
splendid grain of the razor-sharp Damascus blade.
BOKER CARBONSTAHL
BOKER CARBONSTEEL
Even in the age of state-of-the-art powdermetallurgical
steel, classic non-stainless carbon
steel still has its raison d‘être.
Many users appreciate the traditional aspect
of carbon steel as well as the combination of
edge retention and easy sharpening never quite
achieved by stainless steel. Due to this property in
connection with its very fine structure, carbon steel
is still a real alternative to chrome steel when it
comes to cutting tools.
For blades requiring an extremely fine edge, e.g.
razor blades, carbon steel is still a matchless
choice.
Outdoor enthusiasts also like carbon steel blades,
because they can even be sharpened on a piece of
river gravel in an emergency. In the kitchen, it is a
joy to work with a fine-edged carbon steel blade
that offers unsurpassed cutting properties.
„Non-stainless“, by the way, doesn‘t mean that
the blade will immediately take on an appealing
shade of rust.
With a little care, a blade made from carbon steel
has the same service life as a stainless blade. In
the kitchen, you just have to rinse the blade under
hot running water after each use. You should
avoid letting the used blade sit for a while without
cleaning it.
Since the dishwasher is not appropriate for
stainless kitchen knives, the same of course
applies to carbon steel blades.
Knives with carbon steel blades should not be
stored in a leather sheath, since these sheaths
often contain tannic acid, which can harm carbon
steel.
One completely natural property of the material
is the patina that will develop over time. It is
absolutely normal for the blade to take on a grayish
blue hue, which is not a flaw. On the contrary, the
patina (oxide layer) protects the blade and makes
it more resistant to outside conditions.
The patina often develops after the first use and
cannot be removed. For the expert, it is a sure sign
of high-quality carbon steel. Generally speaking,
this also applies to Damascus blades forged from
classic carbon steel.
1 BOKER CAMELIA OIL
The high-quality, pure Boker Camellia Oil is made
according to a traditional Chinese recipe and has
many uses. The thin oil is extracted from the seed
of the camellia tree, is taste neutral, odorless,
and does not dry. The camellia oil is food safe
and impresses with its special purity. Corrosion
protection: The acid-free, non-resinous, and
non-evaporating camellia oil is traditionally used
to protect from corrosion in the care of high-quality
knife blades made from carbon steel as well
as tools and weapons.
It is purely organic and perfect for preserving
non-stainless cooking knives and Straight Razors
since – in contrast to other care oils – does not
form an emulsion with water. Wood protection:
The low-viscosity oil quickly absorbs into the
wood and protects from moisture, dirt, and UV
radiation. Camellia oil is clear, does not discolor
the wood, and brings out the grain beautifully.
Outstanding for the care of high-quality Straight
Razor handles and (Kitchen) Knife handles made
from fine woods. Content: 100 ml.
PATINA [ˈpaːtina]
In Italian, patina means „thin layer“ or „veneer“.
It describes a surface (texture and color) created by
a natural or artificial aging process.
Sustainability, handcrafted products and supporting
local businesses have become trends in our
society. However, these aspects have always been
connected to our Boker DNA. Since our beginnings
in 1869, we have been offering a lifelong guarantee,
free sharpening services and large vertical manufacturing
range.
Products that will endure for decades and will be
passed on to the next generations are allowed to
show their age and history. These traces of usage
do not diminish the knife‘s value but are an expression
of quality, unique beauty and a personal
story - yours.
In a very short time, our new kitchen knife series
Boker Patina develops a patina through touching
acidic foods, which is not in any way a flaw. On
the contrary, the dark color that is created through
oxidation when the blade touches foods and water
serves as a protective layer and increased resistance
to external influences.
The fine structure of non-stainless O1 carbon steel
combined with the thin-edged grind ensure excellent
edge retention and superior cutting properties.
Quality is not just a matter of the used materials,
but also of the production process. Die-forged in
Solingen and finished by hand, each knife is a oneof-a-kind
masterpiece.
The composition of the Boker Patina Series is
completed with brass rivets and exquisite handle
scales of stabilized curly birch encasing the full
tang. This exclusive, hand-selected handle material
offers a vibrant flame-like pattern similar to the
finest burl woods.
The Boker Patina series with a classic three-rivet
design consists of three models with carbon steel
blades and a kitchen knife in hand-forged Damascus.

BOKER CORE ANNIVERSARY 150
Naturally, we want to celebrate our 150th
anniversary with another special edition, based
on our successful line of kitchen knives, Boker
Core. In the 17th century, a huge chestnut tree
used to provide welcome shade for the small tool
manufactory in Remscheid owned by the Boker
family. It is well known that this tree inspired the
name of the Boker Manufactory and the worldfamous
corporate logo.
Paying homage to the beginning of our company’s
history 150 years ago, this model features a handle
made from smoked chestnut wood. With its dark
color and subtle pattern, the material emphasizes
the elegant design and exclusive nature of the
knife. The die-forged blade is made from O1 carbon
steel, which offers superior characteristics and
excellent edge retention - the perfect material for
high quality kitchen knives. Even in the age of
state-of-the-art powder metallurgical steel, classic
non-stainless carbon steel still has its raison d’être.
Many users appreciate the traditional aspect
of carbon steel, as well as the combination of
edge retention and easy sharpening, never quite
achieved by stainless steel. For blades requiring an
extremely fine edge, e.g. razor blades, carbon steel
is still a matchless choice. In the kitchen, it is truly
a joy to work with a fine edged carbon steel blade
that offers unsurpassed cutting properties. With
a little care, a blade made from carbon steel has
the same service life as a stainless blade. In the
kitchen, you simply have to rinse the blade under
hot running water after each use.
One completely natural property of the material is
the patina that will develop over time, especially
after cutting acidic food. It is absolutely normal for
the blade to take on a grayish blue hue, which is
not a flaw. On the contrary, the patina (oxide layer)
protects the blade and makes it more resistant to
outside conditions. The patina often develops after
the first use and cannot be removed. For the expert,
it is a sure sign of high quality carbon steel.
In addition, the blade features two-tone
etching with the historic Boker tree etched in
gold. Providing a strong contrast and elegant
appearance, the inscription is etched in deep black.
The elaborate blade etching process according to
Solingen tradition is reserved for the finest, most
exclusive knives, highlighting the special status of
this anniversary edition in our product range.
All knives in this series are handcrafted in Solingen
and strictly limited to 150 pieces worldwide. Each
knife has an individual serial number and comes
with a certificate of authenticity, packaged in an
exclusive anniversary box.

BOKER HANDMADE KITCHEN KNIVES
31
HANDMADE KITCHEN KNIVES
Since 1869, the famous knives with the
internationally renowned Boker tree logo have
been handcrafted in Solingen, City of Blades.
Depending on the series and build, it takes up to
80 different production steps to make a knife in our
Manufactory. A kitchen knife passes through about
ten in-house departments during this process.
Before production of a new knife can begin, the
product idea is built digitally with the help of CAD
software. A simple hand-drawn sketch made by
one of our knife designer and custom knifemakers
often serves as the basis for the first construction
drawing. For forged knives, the base material is cut
into pieces, brought to a red heat and hammered
in a massive die with a drop hammer weighing
two tons. The blades of the non-forged knives are
stamped out of plates or cut with a laser or water
jet cutter.
The purpose and shape of the product is already
recognizable in the blade slugs. Next, the blade
gets a heat treatment. In order to attain the
required edge retention, the steel needs to be
as hard as possible, while also having enough
resilience not to break during use. The next step is
the grind with the necessary cooling.
Then, all Damascus knives are etched to reveal and
emphasize the different layers of steel.
The Scales Department stores lumber from various
trees; many of them are domestic varieties, but
we also have a stash of 5,000-year-old bog oak
and rare burl varieties. First, our master carpenters
cut the wood on a bench saw before they are
further milled by hand. The milled handles are
then combined with the blades in the Mounting
Department. Depending on the build, the knife is
assembled with rivets, hollow rivets or extremely
durable adhesive connections.
The most impressive transformation of the
unfinished knife happens in Fine Grinding. All
edges, protruding rivets, traces of adhesives and
scratches are skillfully shaped and smoothed
in countless steps on belts and grinding belts
and discs. Apart from the sharp blade, the knife
receives its final aesthetic and functionality.
The last step is the final inspection, where every
detail is visually checked by experienced experts.
Only completely flawless knives are hand-stropped
and then checked again, cleaned and packaged.
Each design has its own tradition and purpose and
offers different advantages in terms of production,
handling and use. Despite all differences, these
designs of Boker kitchen knives have one thing
in common. They are all excellent and superior
kitchen knives that you will never want to put
down.
Depending on your individual and personal
preferences in terms of design, weight, ergonomics
and balance, you are sure to find the right knife in
our collection.
Hunched over the bench grinder, the next
production step is carried out by hand - Solingenstyle.
The spine is ground, the transition from blade
to tang is cleaned up and the unique Solingen
blue-glaze is applied.

OAK
BOKER PURE CPM
Danish design emerged as a style in the middle
of the 20th century, strongly influenced by
the ideas of the German Bauhaus. This design
movement developed its own no-nonsense look
characterized by simple formalism, minimalism,
clarity and functionality, as well as by the use
of cutting edge industrial technology in the
realization of this design vocabulary. This is
the tradition of Danish designer and custom
knifemaker Jens Ansø, who designed the kitchen
knife series Boker Pure following these exact
design principles.
The knives have unique, classically simple lines
and offer excellent balance, handle ergonomics
and functionality. This minimalistic design is
highlighted with the use of “Bergische Eiche,” a
regional oak wood, for the handles. The pleasing
pattern of the elaborately finished oak wood is
only interrupted by three understated stainless
steel rivets, which are applied with great care in
a completely manual process.
In order to match the aesthetic quality of the
series with its technical properties, we use the
powder metallurgical steel CPM-154, made by
the American manufacturer Crucible Industries.
This steel is made by melting the already excellent
base steel 154-CM in order to add more carbides.
CPM-154
The steel is then atomized in a vacuum and
quenched with a cold air jet. The resulting
steel powder is pressed and sintered below
melting temperature. This process makes it
possible to give the steel a much higher carbide
concentration than regular blade steel; and the
carbides give the steel additional hardness and
edge retention.
The bar graph (left) shows the edge retention
compared to an established, popular kitchen knife
steel, the chromium-molybdenum-vanadium
steel X50CrMoV15, as well as to the excellent
440C. The superior edge retention of the 440C is
far surpassed by the powder metallurgical steel
CPM-154, which is a guarantee for a sharp knife
that keeps its edge for a very long time.
The Pure Series has truly set new limits and is,
with its puristic and functional design concept
and high end materials, the new eye catcher in
your kitchen.
SYNTHETIC
BOKER CORE — RECOMMENDED
BY LEADING RETAILERS
What do Trier, Wiesbaden, Münster and
Lüneburg have in common? Apart from a historic
city center, landmarks that are famous beyond
the borders of the region and a long standing
tradition as important trade cities, they share
another important aspect: these cities are the
homes of excellent cutlery retailers, who have
built their outstanding reputation over many
years by means of their extensive selection and
first rate expertise.
We harnessed their decades of experience,
excellent know-how and finely honed everyday
sense for the requirements and needs of
cooking and kitchen enthusiasts in our product
development of the Boker Core series, combined
with our almost 150 years of experience as a
Solingen Knife Manufactory. The result is a
product with dynamic lines, excellent handling
and breathtaking cutting capability that earned
the quality rating “recommended by leading
retailers.”
The solid blade blank, made from a
chromium-molybdenum-vanadium
alloy
(X50CrMoV15), perfectly suited for
making premium kitchen knives, is hand-forged
with Solingen craftsmanship, structurally
optimized and then hardened to 58 HRC. In
order to give the blade a longer service life and
even finer cut, our traditional hand grind is then
highly polished.
“I’m particularly impressed with the absolute
focus on functionality in the Boker Core
kitchen knife series. The design is very
pleasing – not too elaborate – and has a clean
and flush connection of the forged bolster
and the walnut handle, which also meets our
hygiene requirements.”
Jörg Lamskemper,
Head of the Craft Guild Messerschmiede-Innung
Schneidwerkzeugmechanikermeister
Carl Herlitzius GmbH & Co. KG, Münster
The forged bolster ensures a secure grip and
protects the user from possible injuries in case of
a slip. A special design feature of all knives in this
series is the gently rounded spine. This makes the
knife easy and pleasant to handle in any position
and prevents unpleasant pressure on the hand
– even if strong pressure is applied to the spine,
while executing a rock chop, for instance.
The perfectly proportioned handles round out the
cohesive and appealing look, and are available in
finely grained walnut, or durable synthetic, in our
Core Professional Series.
in this series are becoming more and
more popular and can be found in many
trendy kitchen accessories. We support the
use of local materials and products that
are still made with traditional Solingen
craftsmanship.”
THE FORM – SCANDINAVIAN DESIGN.
The substance is nothing if its superior potential is
not used in the appropriate form. Scandinavians
are known for a straightforward, clear and, above
all, highly functional design. The custom principle
of “form follows function” is consistently
implemented in Scandinavian design. And our
partner, Danish knifemaker and designer Jesper
Voxnæs, has been working hard at this for more
than 20 years.
Our decades-long experience in manufacturing
outdoor knives and the creativity of knifemaker
Jesper Voxnæs combine to present the concept
and design of the Saga series, setting a new
standard in cutting and ergonomics. The transfer
of the design into the culinary sector guarantees
that working with the Saga has become a unique
event - the Boker Saga chef’s knife was awarded
the iF Product Design Award in 2013.
THE SURFACE – ROBUST AND SLICK.
The finish is key. It crowns the knife both
aesthetically and functionally. For the Saga
Grenadill series we offer, for the first time
in the sector of kitchen cutlery, a stonewash
finish. This special finishing method upgrades
the existing cutting performance, as well as
providing extreme resistance against scratches,
with the micro structure of the finish. This tried
and true finish has been used in outdoor sector
for years.
Mankind’s oldest tool was invented for life
in nature - we also perfected it for the needs
of our time.
series are available on :
BOKER FORGE
This innovative kitchen knife series from Boker
combines innovative and dynamic designs with
a classic material selection, at a premium quality
level.
The concept of this series comes from Boker’s longstanding
tradition of manufacturing outdoor knives
of the highest quality and superior functionality.
The attractive, eye catching design lines distinguish
this series significantly from the masses of average
kitchen knives, without being too flashy.
These knives are perfectly balanced, and are made
of specially tempered high carbon steel to ensure
outstanding strength. The ergonomically designed
handle offers a comfortable and secure grip for
effortless cutting.
In addition to the classic version with black grip
handles made of high-quality ABS synthetic
material, a noble version with maple wood grip
handles is also available. The wood is certified with
the FSC seal, which guarantees sustainable forestry
and responsible wood harvesting.
Each knife comes packaged in a high quality gift
box. Also available with a matching knife block,
which is equally innovative and impressive, with its
solid construction.
The Boker Forge Series offers an outstanding priceperformance
ratio, and is sure to fit all of your
kitchen needs with superior style.
The blade geometry and the dynamic and functional
design of the solid bolster and end cap guarantee,
in combination with the flat grinding of the blades
and razor sharp edge, 100% cutting performance.
The handle scales are connected to the full tang with
three flush stainless steel rivets, and are available in
elegant maple wood or durable synthetic.
The blade and bolster design allows easy resharpening
and provides long-term cutting
performance when used properly (hand wash
recommended).

KNIFE
BLOCKS
Even long before kitchens became status symbols,
high-quality handmade knives deserve attractive
storage and presentation solutions. Our knife blocks
blend elegantly with the style of your kitchen and
present your knives to their best advantage.
Apart from being a visual highlight in the kitchen,
the secure and protective blocks also preserve the
sharp edge of your knives. Stored incorrectly, the
knives keep bumping into each other, which can
damage delicate edges and scratch the beautifully
finished blade. In addition, a block reduces the risk
of injuries, because the razor-sharp blades can be
stored safely inside the knife block, depending on
their build.

MODERN
Form follows function – this architectural design
principle inspired us in creating our new Modern
cutting boards. The typical angled corner catches
the eye, but also serves as a handle to reposition the
board. Thanks to the elaborate pin joint, the angled
corner is firmly attached to the cutting board. With
its dimensions of 38 x 27 cm, this extraordinary
kitchen accessory offers plenty of space for cutting
and carving. This minimalist cutting board is
available in solid oak, smoked oak and walnut. The
beautiful pattern of the wood makes each board a
one-of-a-kind piece, branded with a subtle Boker
logo. Weight: 1,3 kg.

KNIFE SHARPENING
The knife is humankind’s oldest tool. The need for
sharp blades is just as old and still very pressing
today. According to a survey, more than 90% of
German households use dull knives. Even though
everybody uses knives in the kitchen, the subject
of sharpening knives is still shrouded in mystery.
For many people, sharpening and stropping are
unfamiliar territory, skills ascribed only to an elite
circle of select specialists who use secret methods
to make dull knives sharp again.
It is almost like magic. However, there’s really no
wizardry involved. If you find the right method, you
can restore the edge of you own knives to exquisite
sharpness without a problem.
One more thing about manual sharpening: there is
an old adage saying that things done quickly are
not worth much. If something is worth doing, it
is worth doing slowly. A good manual sharpening
process always takes a little more time. A manual
knife sharpener primarily advertising its high speed
will never be able to offer the desired result that
can be achieved with the methods described below.
Today, machine sharpening has become a good,
practical alternative. Sharpening tools such as the
products sold under the brand Worksharp Culinary
offer a quick process and professional-grade results.
Thanks to their technology and angle guides, they
are also easy and safe to operate.

WORKSHARP CULINARY
The Work Sharp Culinary series takes sharpening
kitchen knives to a new level. The device offers
angle guides and timer-controlled sharpening intervals,
maintenance-free dust removal system and
the low noise level make operation clean and
quiet so that your countertop doesn‘t mutate into
a workbench. But the Worksharp Culinary series
offers even more innovation: who doesn‘t know the
high effectiveness of a fine serrated edge when it
comes to cutting tomatoes, etc.? With the Ceramic
Grinding Stick with integrated MicroForge (depending
on model) included in the scope of delivery,
you can provide your smooth favourite knife within
seconds with a highly effective micro-serrated edge,
micro-wave sharpening can also be easily converted
back into a smooth cutting edge.
speeds: for creating an edge, for sharpening
and stropping. Fully automated timer control for
68 PROFESSIONELLE SCHÄRFHILFEN
If you don’t feel safe holding the angle freehand,
there are different sharpening systems available
that offer a corresponding angle aid, but ultimately
work in a similar way to a bench stone.
One example is the Work Sharp Angle Set Knife
Sharpener, in which the sharpening plane is
virtually tilted into the longitudinal axis.
The sharpening angle is determined by the
A-shaped arrangement of the grinding surfaces,
and the knife only has to be guided vertically
along the entire length of the cutting edge,
alternately left and right along the stone.
Although free hand sharpening is also used
here, keeping the knife vertical is much easier
than maintaining a specific angle on a lying
bench stone. Sharpening systems are therefore
an excellent compromise for all those who not
only value a fine result, but who may even enjoy
the process of sharpening and honing by hand.
1 WORK SHARP ANGEL SET KNIFE
SHARPENER
The Work Sharp Angle Set Knife Sharpener designed
by Ken Onion is an adjustable knife sharpener,
offering versatile sharpening options by means of
three different grains and five sharpening angles.
diamond surface, a finer 800-grain diamond
surface and an extra fine ceramic surface for a
fine grind. The sharpening angle can be set to
15°, 17.5°, 20°, 22.5° or 25°. The additional coneshaped
ceramic sharpener easily handles serrated
blades. The Angle Set Knife Sharpener is foldable
and easy to store.
3 SPYDERCO TRI-ANGLE STONE CBN
CBN (Cubic Boron Nitride) is a grinding agent
whose hardness almost reaches that of a diamond
coating. It has superior abrasion-resistance and
better heat transfer than aluminum oxide or
silicone carbide, making it the industrial grinding
agent of choice. As supplement (rough) for the
proven Spyderco Triangle Sharpmaker (Pos. 2). Set
of two stones. Overall length: 17,8 x 1,3 cm.
MANUELLE SCHÄRFGERÄTE
SHARPENING STEEL
The sharpening steel should not be confused with
its similar half brother, the rod sharpener. Although
very similar in appearance, the difference lies in
the fact that the rod sharpener is made of abrasive
(material-removing) materials, such as ceramic,
synthetic ruby or a diamond-coated steel.
Since such a rod sharpener is used for sharpening,
it also differs in its handling. Used mainly for quick
“refreshing” of the sharpness in between, the
blade of the rod sharpener is usually guided along
the rod with the cutting edge first until the desired
sharpness is achieved.
4 SIEGER LONG LIFE
This sharpener, made of synthetic ruby, is 20 times
harder than hardened steel (20,000 Knoop hardness,
which is roughly a 200 hardness in Rockwell
units)! The most unusual aspect of this sharpener
is the high efficiency (taking less time for sharpening),
in combination with an extraordinarily fine
edge, allowing superior edge retention. In addition,
this sharpener will last longer than a diamond
sharpener, as it is not a coated instrument but one
of bulk material. Can be used either wet or dry,
and can be simply cleaned with a dish sponge.
Length: 20 cm.
Belgian “Brocken.” Both surfaces are perfect for
STEAK KNIVES
73
STEAK KNIVES
For the perfect steak experience, you need a good
cut of meat, the right cooking technique and a great
steak knife. Only a clean cut ensures that the steak
remains juicy and enjoyable throughout. Steak
knives are not just a practical addition. Thanks to
their materials, fine craftsmanship and elegant
look, they are often the highlights of the entire
dinner table.
They are place setting knives, usually with a slim
build and a blade length between nine and twelve
centimeters. A longer blade has the advantage of
being able to cut bigger pieces of meat without a
problem.
A shorter blade, on the other hand, is more compact
as well as easier and more flexible to handle. Unlike
regular cutlery knives, a steak knife is sharp enough
to cut meat into clean bites without ripping or
tearing it.
Steak knives with a straight edge can be used for
very fine and clean cuts. They can cut meat easily
without smashing or tearing it. A special advantage
of this blade is that it is easy to sharpen and
suitable for all meat temperatures.
A steak knife with a fully or partially serrated edge
has a toothy grind. Such a blade makes it easy to
cut even tougher or slightly stringy pieces of meat.
Steak knives with a serrated edge are very popular
choices for restaurants. Despite daily use and being
cleaned in a dishwasher (not recommended), they
retain their edge for a long time. However, when
they do start to lose their edge, serrated steak
knives tend to saw or tear the meat instead of
cutting it cleanly.
Steak knives differ not just in their grind, but also
in their size, shape and handle materials. The
handle is usually of equal length as the blade,
often consisting of premium natural materials such
as wood or stag. Our product range includes olive
wood, rosewood, boxwood, kingwood, snakewood
and paperstone, dyed burl wood, Ziricote, Cocobolo,
Guayacan ebony and stag.
As a set or individual piece, our wide variety of
products will enable you to find just the right steak
knife for your dinner table or knife collections.

A
ESABRAGE
The tradition of opening a bottle of champagne with
a saber goes back to the days of Napoleon. In 1812,
the mighty commander himself celebrated a victory
on the battlefield by originating the ‘sabrage’ with a
Briquet saber. This unique tradition is still alive and
well today, far beyond the borders of France. It is a
special highlight of any festive occasion.
If done correctly, it usually works without a hitch.
The wire is removed from the cork. In one measured
stroke, the saber blade glides along the neck of the
bottle and hits the thicker ridge underneath the top.
The top flies off with a bang and the champagne
can flow. Any shards of glass are carried off by the
pressure. The severed top with the cork inside is
marked with the date and kept as a memento of the
event or as a talisman.

BOKER PLUS CHEFYOUGO & SANYOUGO
Cooking with friends and family is becoming more
and more popular. In the kitchen or outdoors,
cooking and eating together is a defining moment
of community. The compact, shortened kitchen
knives SanYouGo and ChefYouGo by Boker Plus
are perfect for use outside of your own kitchen.
Jesper Voxnæs reduced the classic knife formats to
the essentials, shortening the handles in particular.
The blades, made from high quality 440C, are also
noticeably shorter compared to classic kitchen
knives. The SanYouGo was made from the essence
of a Santoku, while the classic chef’s knife was the
source of inspiration for the ChefYouGo. The blades
of these two extremely compact and flexible models
are finely satined, while the scales consist of black
G10 with a red fiber layer. Leather sheath included.
