HANDMADE SINCE 1869.<br />

Last year, we were able to celebrate our<br />

150th anniversary with many of our loyal<br />

friends and business partners. Now we<br />

are ready to look forward to the next 150<br />

years.<br />

It is easy to forget that in 1869, the<br />

year of our foundation back in „the good<br />

old days“, the world was grappling with<br />

unprecedented change and disruption.<br />

Thirteen years earlier, the fist mail order<br />

catalog had been distributed in France. The<br />

telegraph as well as trains and steamers<br />

brought the world closer together and it<br />

would be less than a decade until the first<br />

sound recording.<br />

Overseas export offered promising<br />

opportunities. Members of the <strong>Boker</strong><br />

family had founded cutting tool factories<br />

in the US, Canada and Mexico and the<br />

cooperation with these companies was one<br />

of the major incentives for the foundation<br />

of Heinr. <strong>Boker</strong> & Co. in Solingen.<br />

Handling the seemingly modern challenges<br />

of globalization, networking and structural<br />

changes has been part of our corporate<br />

DNA from the very beginning.<br />

Therefore, the current seventh edition of<br />

our logo was inspired by our very first<br />

trademark from 1869. As a deliberate<br />

design choice, our logo‘s clear and<br />

understated lines created a reassuring<br />

contrast to the unsettled, often chaotic<br />

political situation of the day.<br />

We took the stylized tree framed by a<br />

simple line and gave it a contemporary<br />

look. Going forward, you will be able to<br />

recognize every product made by <strong>Boker</strong><br />

by this new, yet familiar sign of excellent<br />

quality.<br />

The highlight of the current product catalog<br />

is certainly the <strong>Boker</strong> Patina kitchen knife<br />

series. The blades are forged from O1<br />

carbon steel with a very thin grind.<br />

Of course, the new catalog also has some<br />

other new highlights: New in our product<br />

range are the forged steak knives by<br />

Goyon-Chazeau and the attractive steak<br />

A thousands-of-years old blacksmithing craft that<br />

still unfolds its fascination today. Originally, forging<br />

multilayered steel was supposed to produce the<br />

best possible quality material. Today, Damascus<br />

enthusiasts hardly care about the technical aspect<br />

anymore. They are passionate about the fascinating<br />

material and its special look.<br />

Classic handforged Damascus steel consists of at<br />

least two types of steel with different compositions.<br />

After forging, the piece of steel is folded and<br />

forged again, which doubles the number of layers.<br />

The process is repeated until the desired number of<br />

layers is reached. By using steel types with different<br />

properties, the blacksmith can influence the quality<br />

of the Damascus significantly; a particularly hard<br />

steel, for instance, can be combined with an<br />

especially resilient steel in order to achieve a<br />

balanced ratio of hardness and edge retention.<br />

The Damascus pattern is influenced by forging and<br />

the number of layers, but it can also be created by<br />

embossing the finished forged Damascus bar. By<br />

embossing the bar with the help of an embossing<br />

punch with a specific pattern, the layers within the<br />

Damascus shift against each other. The embossed<br />

pattern appears as texture in the Damascus steel<br />

once the embossed material is ground into a blade.<br />

The pattern is barely visible on a freshly ground<br />

blade. It needs to be finished in a special acid bath,<br />

in which both types of steel react to the acid by<br />

darkening at different levels. This brings out the<br />

pattern created by the texture and reveals the true<br />

magnificent beauty of Damascus steel.<br />

Contrary to classic Damascus production,<br />

stainless steel cannot be forged together under<br />

normal circumstances. However, clever Damascus<br />

blacksmiths came up with a technique that<br />

circumvents this obstacle. The essential factor is<br />

oxygen.<br />

While classic, non-stainless Damascus is forged<br />

and folded in a regular open smithy, the ambient<br />

air is the deciding factor for stainless Damascus –<br />

it prevents stainless steel layers from being forged<br />

together. Hence, stainless Damascus is made by<br />

preparing layer packages and forging them in a<br />

vacuum.<br />

One of the most sophisticated methods for forging<br />

Damascus steel is torsion Damascus. Here, a twist<br />

is added to the classic folding of the material. This<br />

creates a unique pattern and the control needed<br />

to master this forging process requires the highest<br />

level of expertise.<br />

Torsion Damascus was found in the few preserved<br />

Vikings swords, made at a time when the most<br />

sophisticated pieces were forged with outstanding<br />

skill and craftsmanship far superior to the standard<br />

swords of the day, even in technical terms.<br />

The highly complex forging process that creates<br />

the characteristic pattern makes torsion Damascus<br />

one of the rarest and most exclusive types of<br />

Damascus steel.

Although the Damascus blade of this special model<br />

in a limited edition of just 50 pieces worldwide<br />

will not develop any additional visible patina, it<br />

is clearly part of the <strong>Boker</strong> Patina cooking knife<br />

series.<br />

Unlike the blades of non-stainless monosteel,<br />

these blades are exposed to acid and patinized in<br />

a controlled fashion during the production process<br />

in order to bring out the different Damascus layers.<br />

The handle of this extraordinary kitchen knife with<br />

the classic Solingen three-rivet design is just as<br />

appealing and functional as the blade. With its<br />

one-of-a-kind pattern, the hand-selected stabilized<br />

curly birch wood makes each individual knife truly<br />

unique. The outstanding composition is finished<br />

with brass rivets.<br />

The non-stainless premium Damascus is handforged<br />

in 180 layers by Chad Nichols from<br />

Mississippi, one of the most renowned Damascus<br />

blacksmiths of the knifemaker community. The fine,<br />

contrasting pattern and perfect practicality of the<br />

material is appreciated by knife producers all over<br />

the world and by many custom knifemakers alike.<br />

Once the premium Damascus has been forged, the<br />

blade still has a long way to go before it is finished.<br />

In the next step, the forged cropped piece is dieforged<br />

at our Solingen factory. It is brought to a<br />

red heat and pressed into a solid mold by a drop<br />

hammer weighing two tons. The mold consisting<br />

of a top and bottom half is called a die. Next the<br />

blade is soft-annealed, deburred and calibrated.<br />

This process creates a wild Damascus pattern as<br />

unique as a human fingerprint. After its trip around<br />

the world, it is ready for a new adventure - in your<br />

kitchen.

We are a modern and sustainable company with<br />

roots in an industry with a long regional history.<br />

Our region is the Bergisches Land, where blade<br />

production was established as early as the Middle<br />

Ages, thanks to two main factors. The dense forests<br />

supplied wood as a renewable resource that could<br />

be carbonized for forging. Many rivers running<br />

through narrow valleys – primarily the Wupper<br />

River – supplied easily accessible, renewable<br />

energy for grinding mills and smithies.<br />

Now, the Bergisches Land does not actually take its<br />

name from its mountainous topography (“Berg”<br />

being German for “mountain”), but from the noble<br />

House von Berg. Their mighty counts left their mark<br />

on the region like no other dynasty, reaching all<br />

the way to the Rhineland. It is no accident that<br />

their ancestral seat of Burg Castle has become<br />

the landmark of the Bergisches Land. Thanks to<br />

our close relationship with the castle preservation<br />

association, Schlossbauverein Burg an der Wupper<br />

e.V., we were able to obtain a small amount of<br />

wood from the 100-year-old oak beams of this<br />

historic monument.<br />

A covered bridge connects the tower with the<br />

shield wall and wall walk. In medieval times, it was<br />

the only access to the tower.<br />

Today, the west side of the keep has an additional<br />

entrance to the ground floor. The archway bears a<br />

sandstone plate with information about the history<br />

of the mighty tower. In the past, the ground floor<br />

was called the dungeon, accessible only through an<br />

opening from the floor above and used as storage<br />

for stone balls. In case of an attack, the defenders<br />

of the keep would pelt attackers with the balls from<br />

the upper floors. The ground floor could hold up to<br />

12 tons of stones. From the first floor, stairs in the<br />

outside walls, which are up to four meters thick,<br />

lead to the upper floors.<br />

We process pieces of the original oak beams of<br />

the keep at Burg Castle with all due respect and<br />

diligence to make handles for our <strong>Boker</strong> Core<br />

Damascus, an edition strictly limited to 199 pieces.<br />

The blade is truly special - the hand forged stainless<br />

Damascus has a breathtaking pattern and offers<br />

excellent resilience and hardness (60 HRC), which<br />

makes the <strong>Boker</strong> Core Damascus an exclusive<br />

collector’s item and guarantees exceptional<br />

performance for all cutting tasks in the kitchen.<br />

In Solingen, the forged blade piece consisting of<br />

300 layers of Damascus is brought to a red heat<br />

and die-forged into its beautiful shape by a drop<br />

hammer weighing two tons.<br />

What better way to express our respect for the<br />

history of our region and our craft than by referring<br />

to the Counts von Berg and their ancestral home?<br />

Each of these works of art comes in an elegant<br />

leather covered gift box with a certificate of<br />

authenticity and individual serial number.<br />

The wood was sourced from the so-called keep, the<br />

main tower of Burg Castle, which is an impressive<br />

105 feet tall. The foundation of the keep (46 ft. x 36<br />

ft.) was laid in the first building phase of the castle<br />

in the 12th century. The six-storied defense tower<br />

with living quarters was rebuilt in the early 20th<br />

century, modeled after Romanesque towers built<br />

around the year 1130. From the top with its three<br />

wooden brattices, visitors have a panoramic view<br />

all the way to the neighboring town of Remscheid.

Close to the headquarters of the <strong>Boker</strong> Manufactory<br />

in Solingen, Germany, lies Burg Castle on the<br />

Wupper River - the landmark of the Bergisches<br />

Land. It is also one of the largest castles in<br />

western Germany and the largest reconstructed<br />

castle complex in North Rhine-Westphalia. Today,<br />

Burg Castle is used for a variety of cultural<br />

purposes, including as a museum, event venue and<br />

memorial.<br />

In order to be able to fully maintain this landmark<br />

in the future and renew the energy system, an<br />

extensive renovation program was begun in 2017<br />

and is set to continue until 2024. The renovation<br />

has enabled us to obtain an exclusive inventory of<br />

original 100-year-old oak beams from the mighty<br />

keep of Burg Castle.<br />

With great care and craftsmanship, we process<br />

these historic oak beams from the keep into handle<br />

scales for our successful kitchen knife <strong>Boker</strong> Saga,<br />

which is available in a strictly limited edition of 199<br />

pieces. The design of the Saga series was created<br />

by Danish knife designer and renowned custom<br />

knifemaker Jesper Voxnæs, and has already won<br />

the iF-Product Design Award.<br />

Mississippi. This premium Damascus boasts 200<br />

layers and a Rockwell hardness of 60 HRC, as well<br />

as the Damascus pattern “Fade,” with its fine, high<br />

contrast lines.<br />

While classic, non-stainless Damascus can be<br />

forged and folded in an open forge, the prepared<br />

layer packages of stainless Damascus must be<br />

forged with great effort in the vacuum. Damascus<br />

steel products forged by Chad Nichols are known<br />

for their exclusive look in the kitchen and, more<br />

importantly, for the excellent edge retention and<br />

Even in the age of state-of-the-art powdermetallurgical<br />

steel, classic non-stainless carbon<br />

steel still has its raison d‘être.<br />

Many users appreciate the traditional aspect<br />

of carbon steel as well as the combination of<br />

edge retention and easy sharpening never quite<br />

achieved by stainless steel. Due to this property in<br />

connection with its very fine structure, carbon steel<br />

is still a real alternative to chrome steel when it<br />

comes to cutting tools.<br />

For blades requiring an extremely fine edge, e.g.<br />

razor blades, carbon steel is still a matchless<br />

choice.<br />

Outdoor enthusiasts also like carbon steel blades,<br />

because they can even be sharpened on a piece of<br />

river gravel in an emergency. In the kitchen, it is a<br />

joy to work with a fine-edged carbon steel blade<br />

that offers unsurpassed cutting properties.<br />

„Non-stainless“, by the way, doesn‘t mean that<br />

the blade will immediately take on an appealing<br />

shade of rust.<br />

With a little care, a blade made from carbon steel<br />

has the same service life as a stainless blade. In<br />

the kitchen, you just have to rinse the blade under<br />

hot running water after each use. You should<br />

avoid letting the used blade sit for a while without<br />

cleaning it.<br />

Since the dishwasher is not appropriate for<br />

stored in a leather sheath, since these sheaths<br />

blue hue, which is not a flaw. On the contrary, the<br />

patina (oxide layer) protects the blade and makes<br />

cannot be removed. For the expert, it is a sure sign<br />

of high-quality carbon steel. Generally speaking,<br />

this also applies to Damascus blades forged from<br />

classic carbon steel.<br />

according to a traditional Chinese recipe and has<br />

many uses. The thin oil is extracted from the seed<br />

of the camellia tree, is taste neutral, odorless,<br />

and does not dry. The camellia oil is food safe<br />

and impresses with its special purity. Corrosion<br />

protection: The acid-free, non-resinous, and<br />

non-evaporating camellia oil is traditionally used<br />

Naturally, we want to celebrate our 150th<br />

anniversary with another special edition, based<br />

on our successful line of kitchen knives, <strong>Boker</strong><br />

Core. In the 17th century, a huge chestnut tree<br />

used to provide welcome shade for the small tool<br />

manufactory in Remscheid owned by the <strong>Boker</strong><br />

family. It is well known that this tree inspired the<br />

name of the <strong>Boker</strong> Manufactory and the worldfamous<br />

corporate logo.<br />

Paying homage to the beginning of our company’s<br />

history 150 years ago, this model features a handle<br />

made from smoked chestnut wood. With its dark<br />

color and subtle pattern, the material emphasizes<br />

the elegant design and exclusive nature of the<br />

knife. The die-forged blade is made from O1 carbon<br />

steel, which offers superior characteristics and<br />

excellent edge retention - the perfect material for<br />

high quality kitchen knives. Even in the age of<br />

Since 1869, the famous knives with the<br />

internationally renowned <strong>Boker</strong> tree logo have<br />

been handcrafted in Solingen, City of Blades.<br />

Depending on the series and build, it takes up to<br />

80 different production steps to make a knife in our<br />

Manufactory. A kitchen knife passes through about<br />

ten in-house departments during this process.<br />

Before production of a new knife can begin, the<br />

product idea is built digitally with the help of CAD<br />

software. A simple hand-drawn sketch made by<br />

one of our knife designer and custom knifemakers<br />

often serves as the basis for the first construction<br />

drawing. For forged knives, the base material is cut<br />

into pieces, brought to a red heat and hammered<br />

in a massive die with a drop hammer weighing<br />

two tons. The blades of the non-forged knives are<br />

stamped out of plates or cut with a laser or water<br />

jet cutter.<br />

The purpose and shape of the product is already<br />

recognizable in the blade slugs. Next, the blade<br />

gets a heat treatment. In order to attain the<br />

required edge retention, the steel needs to be<br />

as hard as possible, while also having enough<br />

resilience not to break during use. The next step is<br />

the grind with the necessary cooling.<br />

Then, all Damascus knives are etched to reveal and<br />

emphasize the different layers of steel.<br />

The Scales Department stores lumber from various<br />

trees; many of them are domestic varieties, but<br />

we also have a stash of 5,000-year-old bog oak<br />

and rare burl varieties. First, our master carpenters<br />

cut the wood on a bench saw before they are<br />

further milled by hand. The milled handles are<br />

then combined with the blades in the Mounting<br />

Department. Depending on the build, the knife is<br />

assembled with rivets, hollow rivets or extremely<br />

durable adhesive connections.<br />

The most impressive transformation of the<br />

unfinished knife happens in Fine Grinding. All<br />

edges, protruding rivets, traces of adhesives and<br />

scratches are skillfully shaped and smoothed<br />

in countless steps on belts and grinding belts<br />

and discs. Apart from the sharp blade, the knife<br />

receives its final aesthetic and functionality.<br />

The last step is the final inspection, where every<br />

detail is visually checked by experienced experts.<br />

Only completely flawless knives are hand-stropped<br />

and then checked again, cleaned and packaged.<br />

Each design has its own tradition and purpose and<br />

offers different advantages in terms of production,<br />

handling and use. Despite all differences, these<br />

designs of <strong>Boker</strong> kitchen knives have one thing<br />

in common. They are all excellent and superior<br />

kitchen knives that you will never want to put<br />

down.<br />

Danish design emerged as a style in the middle<br />

of the 20th century, strongly influenced by<br />

the ideas of the German Bauhaus. This design<br />

movement developed its own no-nonsense look<br />

characterized by simple formalism, minimalism,<br />

clarity and functionality, as well as by the use<br />

of cutting edge industrial technology in the<br />

realization of this design vocabulary. This is<br />

the tradition of Danish designer and custom<br />

knifemaker Jens Ansø, who designed the kitchen<br />

knife series <strong>Boker</strong> Pure following these exact<br />

design principles.<br />

The knives have unique, classically simple lines<br />

and offer excellent balance, handle ergonomics<br />

and functionality. This minimalistic design is<br />

highlighted with the use of “Bergische Eiche,” a<br />

regional oak wood, for the handles. The pleasing<br />

pattern of the elaborately finished oak wood is<br />

only interrupted by three understated stainless<br />

steel rivets, which are applied with great care in<br />

a completely manual process.<br />

In order to match the aesthetic quality of the<br />

series with its technical properties, we use the<br />

powder metallurgical steel CPM-154, made by<br />

the American manufacturer Crucible Industries.<br />

This steel is made by melting the already excellent<br />

base steel 154-CM in order to add more carbides.<br />

The steel is then atomized in a vacuum and<br />

quenched with a cold air jet. The resulting<br />

steel powder is pressed and sintered below<br />

melting temperature. This process makes it<br />

possible to give the steel a much higher carbide<br />

concentration than regular blade steel; and the<br />

carbides give the steel additional hardness and<br />

edge retention.<br />

compared to an established, popular kitchen knife<br />

steel, the chromium-molybdenum-vanadium<br />

steel X50CrMoV15, as well as to the excellent<br />

440C. The superior edge retention of the 440C is<br />

The sharpening steel should not be confused with<br />

its similar half brother, the rod sharpener. Although<br />

very similar in appearance, the difference lies in<br />

the fact that the rod sharpener is made of abrasive<br />

(material-removing) materials, such as ceramic,<br />

synthetic ruby or a diamond-coated steel.<br />

Since such a rod sharpener is used for sharpening,<br />

For the perfect steak experience, you need a good<br />

cut of meat, the right cooking technique and a great<br />

steak knife. Only a clean cut ensures that the steak<br />

remains juicy and enjoyable throughout. Steak<br />

knives are not just a practical addition. Thanks to<br />

their materials, fine craftsmanship and elegant<br />

look, they are often the highlights of the entire<br />

dinner table.<br />

They are place setting knives, usually with a slim<br />

build and a blade length between nine and twelve<br />

centimeters. A longer blade has the advantage of<br />

being able to cut bigger pieces of meat without a<br />

problem.<br />

A shorter blade, on the other hand, is more compact<br />

as well as easier and more flexible to handle. Unlike<br />

regular cutlery knives, a steak knife is sharp enough<br />

to cut meat into clean bites without ripping or<br />

tearing it.<br />

Steak knives with a straight edge can be used for<br />

very fine and clean cuts. They can cut meat easily<br />

without smashing or tearing it. A special advantage<br />

of this blade is that it is easy to sharpen and<br />

suitable for all meat temperatures.<br />

A steak knife with a fully or partially serrated edge<br />

has a toothy grind. Such a blade makes it easy to<br />

cut even tougher or slightly stringy pieces of meat.<br />

Steak knives with a serrated edge are very popular<br />

choices for restaurants. Despite daily use and being<br />

cleaned in a dishwasher (not recommended), they<br />

retain their edge for a long time. However, when<br />

The tradition of opening a bottle of champagne with<br />

a saber goes back to the days of Napoleon. In 1812,<br />

the mighty commander himself celebrated a victory<br />

on the battlefield by originating the ‘sabrage’ with a<br />

Briquet saber. This unique tradition is still alive and<br />

well today, far beyond the borders of France. It is a<br />

special highlight of any festive occasion.<br />

If done correctly, it usually works without a hitch.<br />

The wire is removed from the cork. In one measured<br />

stroke, the saber blade glides along the neck of the<br />

bottle and hits the thicker ridge underneath the top.<br />

the essentials, shortening the handles in particular.<br />

The blades, made from high quality 440C, are also<br />

noticeably shorter compared to classic kitchen<br />

knives. The SanYouGo was made from the essence<br />

of a Santoku, while the classic chef’s knife was the<br />

source of inspiration for the ChefYouGo. The blades<br />

of these two extremely compact and flexible models<br />

are finely satined, while the scales consist of black<br />

G10 with a red fiber layer. Leather sheath included.<br />
