Hot Smoked Trout and Nectarine Salad with Fresh Herbs 

(Serves 4) – Anke Roux 

Ingredients: 

• 1-2 fillets hot or cold smoked trout fillets • 1 cucumber, seeded and shaved into 

ribbons • 1 avocado, diced • 2 cups (500ml) baby herb salad leaves • 4 nectarines, 

sliced; handful of coriander leaves • 2 spring onions, finely sliced 

Dressing: 

• 1 Tbsp (15ml) fish sauce • 1 Tbsp (15ml) honey • 2 Tbsp (30ml) rice vinegar • 

2 Tbsp (30ml) canola or seed oil • 1 tsp (5ml) sesame oil • 1 Tbsp (15ml) finely 

chopped ginger • 1 red chilli, diced 

Method: 

If using uncooked trout, panfry for 3 minutes a side, rest and then flake. Toss 

salad ingredients on a platter and scatter over fish. 

Whisk dressing ingredients together and drizzle over salad. Serve.

“My daughter, who is my whole world, is in Grade 6 with a busy extra-curricular 

programme and my fiance, Dr M Ogonowski, is a medical doctor specialising in 

Otolaryngology. Between our hectic schedules we have a tight routine during the 

week and therefore make a concerted effort to ensure we always spend quality time 

together on weekends. 

“We are self-proclaimed foodies! With our love for food and my adventurous nature 

we are slowly but surely eating our way through South Africa’s top 100 restaurants. 

Hidden talents 

“I’m not too bad in the kitchen, especially when it comes to baking - I often whip 

up a tray of fudge or chocolate brownies for a midnight snack. I enjoy painting (of 

course that was before Netflix came along). I am quietly spiritual with a strong devotion 

to my faith. Prayer time is important to me, I consider it my daily fuel and at the 

end of each day I thank God for all my blessings.

Apple Crumble Cakes 

Egg-free, dairy-free and totally vegan! 

This simple cinnamon sugar apple cake 

is light and fluffy, loaded with fresh 

apples, topped with a crunchy cinnamon 

sugar layer and of course, made 

with MAYO 

What you’ll Need: 

• 1/3 cup B-Well Canola Oil • 3 tbsp B-Well 

Tangy Mayonnaise • ¾ cup Almond/ 

Plant Milk • 1 ½ cups Brown sugar • 2 ½ 

cup flour/Gluten-free Flour • 1 tsp baking 

soda • 1 tsp vanilla essence • 1 ½ cup 

apples, chopped into small pieces 

• 2 tsp cinnamon powder • 1 tbsp coconut 

butter • 4 tbsp coconut nectar 

• Coconut flakes, optional 

How to Make: 

Preheat oven to 190˚C. In a large bowl, 

mix the brown sugar, oil, B-Well Tangy 

Mayonnaise, Vanilla Essence and Milk 

until blended and smooth. In another 

bowl, mix flour, 1 tsp of cinnamon and 

the baking soda together. Stir together 

the wet and dry mixture and then fold in 

the chopped apples. Pour batter into a 

large greased cake pan or into separate 

cupcake tray. Combine the rest of the 

cinnamon with the coconut butter, 

coconut nectar and coconut flakes and 

sprinkle it evenly over the batter, this will 

create a crunchy crumble. Bake for 45 

minutes and serve warm with cream or 

ice-cream, Enjoy! 

Spekboom Brownies with 

Spiced Boabab n’ice-cream 

What You’ll Need: 

FOR THE BROWNIE 

• B-WELL Baking spray • ½ cup B-Well 

Canola oil • 1 cup Coconut Nectar 

Sugar • 3 Tbsp Ground Flaxseed 

(+½ cup coconut cream (= creamy 

flax egg) • 1 tbsp Vanilla • 5-6 small 

fresh Spekboom leaves (sour ones), 

pureed or finely chopped • 1 cup Allpurpose 

Gluten-free flour • 2/3 cup 

Cacao/cocoa powder • 1 tsp Baking 

powder/Bicarb of Soda • Pinch of 

salt • ½ cup Dark Chocolate chips 

or 1 slab 85% Dark chocolate, 

finely chopped • Walnuts, chopped 

(optional) 

FOR THE NICE-CREAM 

• 3-5 Frozen bananas, chopped 

• 40ml coconut cream • 1 tsp 

cardamom • Dash of cinnamon 

• 2 tsp Baobab 

How to Make: 

FOR THE BROWNIES: 

Spray some B-WELL baking spray into 

a square 20x20 pan. Preheat 

your oven to 180˚C. In a small bowl, 

combine the flax seed powder and 

coconut cream. Allow this to sit for a 

few minutes. In a large mixing bowl, 

combine all of the dry ingredients: 

flour, sugar, cacao, baking soda and 

salt. Whisk until the cacao is broken 

up and incorporated completely. 

Pour in the wet ingredients: B-Well 

Canola oil, flax egg mixture, pureed 

spekboom and vanilla extract. Stir 

until everything is mixed well, adding 

any nuts/fruits/bits you’d like to add. 

The dough will be thick and doughy. 

Use greased, or wet hands, to press 

into the greased pan. Bake 20-25 

minutes, until the edges and top are 

crisp. (Granted, I know many people 

have different degrees of mushy:crisp 

ratio.) Without topping: Cool, and then 

cut into squares. With topping: add 

the dark choco late chips/chopped 

pieces into a bowl with the spices 

and a heaped teaspoon of icing sugar. 

Heat the coconut cream and add the 

heated cream into the bowl, slowly 

stirring till all the pieces are melted 

and you have smooth chocolate 

spread. Pour over brownies- spreading 

evenly. Allow to cool, and then cut 

into squares. Serve with Boabab n’icecream. 

Keep leftovers covered and at 

room temp. Can be frozen for up to 

2 months. 

FOR THE N’ICE-CREAM: 

Add all ingredients to a blender, 

scraping sides to make sure everything 

is well mixed. Pour mixture into 

a bowl or freezer bag and put into 

the freezer for another 20 mins to set. 

Serve with Spekboom brownies and 

devour this incredible treat!

Elegantly green 

Rediscover the beauty and benefits of indoor plants. Plants are natural living 

décor, bringing a room to life, changing the mood, and adding colour and texture. 

They are also good for us, by cleaning the air, and helping us to relax. Here’s how 

to use indoor plants to create a beautiful, tranquil space. 

THE DARK SIDE 

ZZ plant (Zamioculcas) grows just about anywhere, 

including in areas of low light, although 

it does better in brighter light. It is also valued 

for its air purifying qualities. Plants can survive 

an amazing amount of neglect, because they 

need very little water, especially if grown in low 

light. Let the soil dry out between watering. A 

spritz of water on the leaves helps with humidity 

and removes dust. Give them a liquid feed 

once in spring and again in summer. 



PEACE IN THE HOME 

The peace lily (Spathiphyllum) not only 

removes certain household toxins 

but also filters unpleasant odours and 

produces clean oxygen. This compact, 

well-shaped plant fits into any décor 

style. Needing only low light to grow, 

it’s ideal for bathrooms, bedrooms and 

kitchens. Water once a week, and don’t 

over water. It is sensitive to cold. 

INDESTRUCTIBLE ANTHURIUMS 

You don’t need green fingers to keep 

anthuriums alive. They last indoors for 

many years, needing bright indirect 

light in a warm room. Let the soil dry 

out slightly between watering and don’t 

let the plant stand in water. There are 

large as well as dwarf varieties in a great 

colour range from dark red/black, to 

salmon, pink, yellow, shades of red and 

white as well as bicolours. 

TRENDING TREES 

Indoor trees are the hottest trend in interior scaping. Weeping Fig (Ficus benjamina) 

is a popular indoor tree, growing up to 2m, with arching stems and glossy green 

leaves. Good for a light corner, on either side of a window, well-lit passage or patio. 

Plants need moderate watering, and liquid fertiliser once a month in summer. Spritz 

the leaves to keep them dust free. Light green leaves indicate a lack of nutrition. Leaf 

drop may be caused by under or over-watering or a change in temperature. 

GOOD FOR BEGINNERS 

Sansevieria ‘Golden futura’ always looks elegant, doesn’t wilt, and doesn’t take up 

much space, which is why it has become such a popular indoor plant with interior 

designers. It is happy in a well-lit room or home office and only needs watering when 

the potting mix feels dry. 

Tips for indoor plants 

• Don’t over- water. More plants die from over watering than underwatering 

• Keep plants away from direct sunlight. Most do well with bright, indirect light. 

• Keep plants out of draughts and away from heaters in winter. 

• Don’t let pots stand in water as the roots will rot. Rather place the pot on a bed of 

pebbles so that the water is away from the base of the pot. 

• Spritz or wipe the leaves every now and them to improve humidity and remove 

dust from the leaves.

Serve up this easy-peasy summer meal, along with a generous glass of

floss and Turkish Delight, and is perfect with these ginger and lemon marinated

marinated chicken kebabs with

Chicken kebabs 

You’ll need ... 

6 chicken breasts 

And for the marinade ... 

4 tablespoons fresh lemon juice 

2 teaspoons finely grated fresh 

ginger 

3 cloves of peeled and minced garlic 

½ teaspoon chili flakes 

60ml olive oil 

To make ... Place the chicken pieces in 

a large bowl and add the marinade 

ingredients. Mix everything well. 

Cover, and refrigerate for two to 24 

hours. Heat a griddle non-stick pan 

over medium-high heat. Arrange the 

chicken onto the skewers. Oil the 

kebabs with olive oil. Cook for about 

seven minutes on each side, until the 

chicken is well done. Season to taste. 

Serve with the yoghurt sauce and 

the watermelon salad. 

Yoghurt sauce 


60ml olive oil 

1 cup double thick Greek yoghurt 

Handful of freshly chopped mint 

½ teaspoon chili flakes 

Salt and pepper 

To make ... 

Mix the double thick Greek yoghurt 

and olive oil with a whisk until well 

combined. Add the chopped mint 

and chili flakes and season with salt 

and pepper.

Watermelon 

Feta 

Pitted olives 

Avocado, peeled and sliced 

A handful of fresh basil and mint 

Olive oil and black pepper 

To make ... Slice the watermelon and 

arrange on a plate. Crumble the feta, 

and sprinkle on top. Top off with 

pitted olives, sliced avo, basil and 

mint. Add plenty of back pepper and 

drizzle with olive oil.

Magic of Makalali 

Some of the best sightings SA reserves can offer. Charismatic field guides. 

And charming bush textures. An authentic African experience awaits

From seeking big and small game to telling bushveld tales, the field guides 

take you on an extraordinary African adventure. 

There’s something wonderfully romantic about Makalali River Lodge, and 

the bathtubs that overlook the reserve are one of the highlights. 

A Land Cruiser’s engine roars into 

action. Hippos groan. Buffaloes grunt. 

These are (some of ) the sounds of 

Africa. They surrounded us recently 

as we sat at a waterhole in the 

26000-hectare Aha Makalali Private 

Game Reserve near Hoedspruit. 

What was that? A lion growling? No, 

it was someone’s stomach grumbling 

… time for sundowners. It wasn’t long 

before we were standing with a cool 

G&T in one hand, a stick of dry wors 

in the other. Aware of the wildness 

around us. 

On our first afternoon game drive we’d 

already spotted two of the Big Five 

and, during our short stay, we’d go on 

to see a further two of these big-game 

animals, as well as a pack of wild dogs 

hunting impalas. 

We couldn’t possibly take credit for 

spotting the game first – the field 

guides and trackers are excellent (they 

tell us they ‘eat their carrots’) and 

they’ve a great sense of humour. When 

the message ‘We want to see a spotted 

leopard’ reached our field guide during 

a game of broken telephone, he 

laughed heartily and joked, ‘Oh, you 

want to see a spotted leopard? Today 

we were going to look for a plain one!’ 

We learnt tourism group Tourvest is 

educating even more field guides 

through a fully-sponsored course at 

the Tourvest Field Guide Academy, 

based at the reserve. 

The field guides make sundowners 

far from ordinary. On our last evening, 

lanterns were set up in a circle at a 

spot in the reserve. A gin bar to one 

side. Comfy cushions scattered in the 

middle. It was ‘Bush TV’ at its finest. 

Impalas and wildebeest grazed a little 

distance away, while daring blackbacked 

jackals crept close to the 

snack table, hoping to score a piece

lodges, even while you take a cool splash in the pool.

of biltong. They didn’t! As darkness 

fell, we heard an unfamiliar sound … 

another of the Big Five! 

Yes, we’re bragging ... but with some 

of the best game viewing South 

African reserves can offer – trust 

us – it’s tough to leave the game 

drives. But the bush adventures 

continue at Makalali. You can 

choose to stay at the Main Lodge 

or River Lodge – both are set in the 

reserve without a boundary fence, 

which fuels your authentic African 

experience. The décor, design and 

textures at these lodges scream 

bushveld, and swimming in any of 

the pools becomes a game-viewing 

experience. We watched warthogs 

wallowing in the mud near the Main 

Lodge pool. 

At night, an African tale and piece 

of sweet fudge were placed by our 

turned-down bed. One night, we 

found a little decorated box with 

a cute handmade pottery animal 

inside - ours was a zebra and there 

are six others in the collection. This 

lovely keepsake was crafted by 

artists from Gala Star – a company 

that enables underprivileged people 

to improve their lives by making art 

that’s sold in the tourism market. 

The luxurious rooms at the main 

lodge are hotel-like and cosy, with 

a spacious bathroom … and an 

outdoor shower. You can get two 

rooms with an interleading door – 

handy for families. 

Planning a romantic getaway? 

Book for the River Lodge. Perfect 

for a honeymoon! And fret not 

when they don’t give you a key for 

your room – you don’t need one! 

The rooms’ design and décor are 

charmingly bona fide bushveld – 

think a mosquito-net-draped bed, 

cosy fireplace and comfy seat on 

the veranda. And you’ll probably feel 

very, very clean because who could 

resist a splash in the oh-so-appealing 

outdoor shower, indoor shower and 

bathtub overlooking the reserve. The 

bathrooms are so impressive they

goodness sake! 

A bush holiday isn’t really complete 

without dinner in a boma … try the 

sweet home-made bread and the 

venison meat dishes which have 

a uniquely African touch – think 

kudu potjie or crocodile sosaties. 

It’s definitely a ditch-the-diet kind 

of holiday … in between brekkie, 

lunch and dinner there are pregame 

drive snacks – like decadent 

choc-chip cookies in the mornings 

and afternoon high tea – as well as 

bush coffees and sundowners in the 

reserve. 

In short ... when the toughest part 

of your day is dodging wayward 

hanging branches as your field 

guide seeks a terrific sighting, you 

know you’re in a magical place. 

Main Lodge superior rooms from R4520 a person sharing, for a maximum of two

rooms for a maximum of two people a room and children over the age of 

two will need their own bed, and are charged at 50 per cent of the adult-sharing
