Hot Smoked Trout and Nectarine Salad with Fresh Herbs<br />

(Serves 4) – Anke Roux<br />

Ingredients:<br />

• 1-2 fillets hot or cold smoked trout fillets • 1 cucumber, seeded and shaved into<br />

ribbons • 1 avocado, diced • 2 cups (500ml) baby herb salad leaves • 4 nectarines,<br />

sliced; handful of coriander leaves • 2 spring onions, finely sliced<br />

Dressing:<br />

• 1 Tbsp (15ml) fish sauce • 1 Tbsp (15ml) honey • 2 Tbsp (30ml) rice vinegar •<br />

2 Tbsp (30ml) canola or seed oil • 1 tsp (5ml) sesame oil • 1 Tbsp (15ml) finely<br />

chopped ginger • 1 red chilli, diced<br />

Method:<br />

If using uncooked trout, panfry for 3 minutes a side, rest and then flake. Toss<br />

salad ingredients on a platter and scatter over fish.<br />

Whisk dressing ingredients together and drizzle over salad. Serve.<br />

programme and my fiance, Dr M Ogonowski, is a medical doctor specialising in<br />

Otolaryngology. Between our hectic schedules we have a tight routine during the<br />

week and therefore make a concerted effort to ensure we always spend quality time<br />

together on weekends.<br />

“We are self-proclaimed foodies! With our love for food and my adventurous nature<br />

we are slowly but surely eating our way through <strong>South</strong> Africa’s top 100 restaurants.<br />

Hidden talents<br />

“I’m not too bad in the kitchen, especially when it comes to baking - I often whip<br />

up a tray of fudge or chocolate brownies for a midnight snack. I enjoy painting (of<br />

course that was before Netflix came along). I am quietly spiritual with a strong devotion<br />

to my faith. Prayer time is important to me, I consider it my daily fuel and at the<br />

Apple Crumble Cakes<br />

Egg-free, dairy-free and totally vegan!<br />

This simple cinnamon sugar apple cake<br />

is light and fluffy, loaded with fresh<br />

apples, topped with a crunchy cinnamon<br />

sugar layer and of course, made<br />

with MAYO<br />

What you’ll Need:<br />

• 1/3 cup B-Well Canola Oil • 3 tbsp B-Well<br />

Tangy Mayonnaise • ¾ cup Almond/<br />

Plant Milk • 1 ½ cups Brown sugar • 2 ½<br />

cup flour/Gluten-free Flour • 1 tsp baking<br />

soda • 1 tsp vanilla essence • 1 ½ cup<br />

apples, chopped into small pieces<br />

• 2 tsp cinnamon powder • 1 tbsp coconut<br />

butter • 4 tbsp coconut nectar<br />

• Coconut flakes, optional<br />

How to Make:<br />

Preheat oven to 190˚C. In a large bowl,<br />

mix the brown sugar, oil, B-Well Tangy<br />

Mayonnaise, Vanilla Essence and Milk<br />

until blended and smooth. In another<br />

bowl, mix flour, 1 tsp of cinnamon and<br />

the baking soda together. Stir together<br />

the wet and dry mixture and then fold in<br />

the chopped apples. Pour batter into a<br />

large greased cake pan or into separate<br />

cupcake tray. Combine the rest of the<br />

cinnamon with the coconut butter,<br />

coconut nectar and coconut flakes and<br />

sprinkle it evenly over the batter, this will<br />

create a crunchy crumble. Bake for 45<br />

minutes and serve warm with cream or<br />

ice-cream, Enjoy!<br />

Spekboom Brownies with<br />

Spiced Boabab n’ice-cream<br />

What You’ll Need:<br />

FOR THE BROWNIE<br />

• B-WELL Baking spray • ½ cup B-Well<br />

Canola oil • 1 cup Coconut Nectar<br />

Sugar • 3 Tbsp Ground Flaxseed<br />

(+½ cup coconut cream (= creamy<br />

flax egg) • 1 tbsp Vanilla • 5-6 small<br />

fresh Spekboom leaves (sour ones),<br />

pureed or finely chopped • 1 cup Allpurpose<br />

Gluten-free flour • 2/3 cup<br />

Cacao/cocoa powder • 1 tsp Baking<br />

powder/Bicarb of Soda • Pinch of<br />

salt • ½ cup Dark Chocolate chips<br />

or 1 slab 85% Dark chocolate,<br />

finely chopped • Walnuts, chopped<br />

(optional)<br />

FOR THE NICE-CREAM<br />

• 3-5 Frozen bananas, chopped<br />

• 40ml coconut cream • 1 tsp<br />

cardamom • Dash of cinnamon<br />

• 2 tsp Baobab<br />

How to Make:<br />

FOR THE BROWNIES:<br />

Spray some B-WELL baking spray into<br />

a square 20x20 pan. Preheat<br />

your oven to 180˚C. In a small bowl,<br />

combine the flax seed powder and<br />

coconut cream. Allow this to sit for a<br />

few minutes. In a large mixing bowl,<br />

combine all of the dry ingredients:<br />

flour, sugar, cacao, baking soda and<br />

salt. Whisk until the cacao is broken<br />

up and incorporated completely.<br />

Pour in the wet ingredients: B-Well<br />

Canola oil, flax egg mixture, pureed<br />

spekboom and vanilla extract. Stir<br />

until everything is mixed well, adding<br />

any nuts/fruits/bits you’d like to add.<br />

The dough will be thick and doughy.<br />

Use greased, or wet hands, to press<br />

into the greased pan. Bake 20-25<br />

minutes, until the edges and top are<br />

crisp. (Granted, I know many people<br />

have different degrees of mushy:crisp<br />

ratio.) Without topping: Cool, and then<br />

cut into squares. With topping: add<br />

the dark choco late chips/chopped<br />

pieces into a bowl with the spices<br />

and a heaped teaspoon of icing sugar.<br />

Heat the coconut cream and add the<br />

heated cream into the bowl, slowly<br />

stirring till all the pieces are melted<br />

and you have smooth chocolate<br />

spread. Pour over brownies- spreading<br />

evenly. Allow to cool, and then cut<br />

into squares. Serve with Boabab n’icecream.<br />

Keep leftovers covered and at<br />

room temp. Can be frozen for up to<br />

2 months.<br />

FOR THE N’ICE-CREAM:<br />

Add all ingredients to a blender,<br />

scraping sides to make sure everything<br />

is well mixed. Pour mixture into<br />

a bowl or freezer bag and put into<br />

the freezer for another 20 mins to set.<br />

Serve with Spekboom brownies and<br />

devour this incredible treat!<br />

Elegantly green<br />

Rediscover the beauty and benefits of indoor plants. Plants are natural living<br />

décor, bringing a room to life, changing the mood, and adding colour and texture.<br />

They are also good for us, by cleaning the air, and helping us to relax. Here’s how<br />

to use indoor plants to create a beautiful, tranquil space.<br />

THE DARK SIDE<br />

ZZ plant (Zamioculcas) grows just about anywhere,<br />

including in areas of low light, although<br />

it does better in brighter light. It is also valued<br />

for its air purifying qualities. Plants can survive<br />

an amazing amount of neglect, because they<br />

need very little water, especially if grown in low<br />

light. Let the soil dry out between watering. A<br />

spritz of water on the leaves helps with humidity<br />

and removes dust. Give them a liquid feed<br />

once in spring and again in summer.<br />

PEACE IN THE HOME<br />

The peace lily (Spathiphyllum) not only<br />

removes certain household toxins<br />

but also filters unpleasant odours and<br />

produces clean oxygen. This compact,<br />

well-shaped plant fits into any décor<br />

style. Needing only low light to grow,<br />

it’s ideal for bathrooms, bedrooms and<br />

kitchens. Water once a week, and don’t<br />

over water. It is sensitive to cold.<br />

INDESTRUCTIBLE ANTHURIUMS<br />

You don’t need green fingers to keep<br />

anthuriums alive. They last indoors for<br />

many years, needing bright indirect<br />

light in a warm room. Let the soil dry<br />

out slightly between watering and don’t<br />

let the plant stand in water. There are<br />

large as well as dwarf varieties in a great<br />

colour range from dark red/black, to<br />

salmon, pink, yellow, shades of red and<br />

white as well as bicolours.<br />

TRENDING TREES<br />

Indoor trees are the hottest trend in interior scaping. Weeping Fig (Ficus benjamina)<br />

is a popular indoor tree, growing up to 2m, with arching stems and glossy green<br />

leaves. Good for a light corner, on either side of a window, well-lit passage or patio.<br />

Plants need moderate watering, and liquid fertiliser once a month in summer. Spritz<br />

the leaves to keep them dust free. Light green leaves indicate a lack of nutrition. Leaf<br />

drop may be caused by under or over-watering or a change in temperature.<br />

GOOD FOR BEGINNERS<br />

Sansevieria ‘Golden futura’ always looks elegant, doesn’t wilt, and doesn’t take up<br />

much space, which is why it has become such a popular indoor plant with interior<br />

designers. It is happy in a well-lit room or home office and only needs watering when<br />

the potting mix feels dry.<br />

Tips for indoor plants<br />

• Don’t over- water. More plants die from over watering than underwatering<br />

• Keep plants away from direct sunlight. Most do well with bright, indirect light.<br />

• Keep plants out of draughts and away from heaters in winter.<br />

• Don’t let pots stand in water as the roots will rot. Rather place the pot on a bed of<br />

pebbles so that the water is away from the base of the pot.<br />

• Spritz or wipe the leaves every now and them to improve humidity and remove<br />

dust from the leaves.<br />

You’ll need ...<br />

6 chicken breasts<br />

And for the marinade ...<br />

4 tablespoons fresh lemon juice<br />

2 teaspoons finely grated fresh<br />

ginger<br />

3 cloves of peeled and minced garlic<br />

½ teaspoon chili flakes<br />

60ml olive oil<br />

To make ... Place the chicken pieces in<br />

a large bowl and add the marinade<br />

ingredients. Mix everything well.<br />

Cover, and refrigerate for two to 24<br />

hours. Heat a griddle non-stick pan<br />

over medium-high heat. Arrange the<br />

chicken onto the skewers. Oil the<br />

kebabs with olive oil. Cook for about<br />

seven minutes on each side, until the<br />

chicken is well done. Season to taste.<br />

Serve with the yoghurt sauce and<br />

the watermelon salad.<br />

You’ll need ...<br />

60ml olive oil<br />

1 cup double thick Greek yoghurt<br />

Handful of freshly chopped mint<br />

½ teaspoon chili flakes<br />

Salt and pepper<br />

To make ...<br />

Mix the double thick Greek yoghurt<br />

and olive oil with a whisk until well<br />

combined. Add the chopped mint<br />

and chili flakes and season with salt<br />

and pepper.<br />

Watermelon salad<br />

You’ll need ...<br />

Watermelon<br />

Feta<br />

Pitted olives<br />

Avocado, peeled and sliced<br />

A handful of fresh basil and mint<br />

Olive oil and black pepper<br />

To make ... Slice the watermelon and<br />

arrange on a plate. Crumble the feta,<br />

and sprinkle on top. Top off with<br />

pitted olives, sliced avo, basil and<br />

mint. Add plenty of back pepper and<br />

Magic of Makalali<br />

Some of the best sightings SA reserves can offer. Charismatic field guides.<br />

And charming bush textures. An authentic African experience awaits<br />

From seeking big and small game to telling bushveld tales, the field guides<br />

take you on an extraordinary African adventure.<br />

There’s something wonderfully romantic about Makalali River Lodge, and<br />

the bathtubs that overlook the reserve are one of the highlights.<br />

A Land Cruiser’s engine roars into<br />

action. Hippos groan. Buffaloes grunt.<br />

These are (some of ) the sounds of<br />

Africa. They surrounded us recently<br />

as we sat at a waterhole in the<br />

26000-hectare Aha Makalali Private<br />

Game Reserve near Hoedspruit.<br />

What was that? A lion growling? No,<br />

it was someone’s stomach grumbling<br />

… time for sundowners. It wasn’t long<br />

before we were standing with a cool<br />

G&T in one hand, a stick of dry wors<br />

in the other. Aware of the wildness<br />

around us.<br />

On our first afternoon game drive we’d<br />

already spotted two of the Big Five<br />

and, during our short stay, we’d go on<br />

to see a further two of these big-game<br />

animals, as well as a pack of wild dogs<br />

hunting impalas.<br />

We couldn’t possibly take credit for<br />

spotting the game first – the field<br />

guides and trackers are excellent (they<br />

tell us they ‘eat their carrots’) and<br />

they’ve a great sense of humour. When<br />

the message ‘We want to see a spotted<br />

leopard’ reached our field guide during<br />

a game of broken telephone, he<br />

laughed heartily and joked, ‘Oh, you<br />

want to see a spotted leopard? Today<br />

we were going to look for a plain one!’<br />

We learnt tourism group Tourvest is<br />

educating even more field guides<br />

through a fully-sponsored course at<br />

the Tourvest Field Guide Academy,<br />

based at the reserve.<br />

The field guides make sundowners<br />

far from ordinary. On our last evening,<br />

lanterns were set up in a circle at a<br />

spot in the reserve. A gin bar to one<br />

side. Comfy cushions scattered in the<br />

middle. It was ‘Bush TV’ at its finest.<br />

Impalas and wildebeest grazed a little<br />

distance away, while daring blackbacked<br />

jackals crept close to the<br />

snack table, hoping to score a piece<br />

of biltong. They didn’t! As darkness<br />

fell, we heard an unfamiliar sound …<br />

another of the Big Five!<br />

Yes, we’re bragging ... but with some<br />

of the best game viewing <strong>South</strong><br />

African reserves can offer – trust<br />

us – it’s tough to leave the game<br />

drives. But the bush adventures<br />

continue at Makalali. You can<br />

choose to stay at the Main Lodge<br />

or River Lodge – both are set in the<br />

reserve without a boundary fence,<br />

which fuels your authentic African<br />

experience. The décor, design and<br />

textures at these lodges scream<br />

bushveld, and swimming in any of<br />

the pools becomes a game-viewing<br />

experience. We watched warthogs<br />

wallowing in the mud near the Main<br />

Lodge pool.<br />

At night, an African tale and piece<br />

of sweet fudge were placed by our<br />

turned-down bed. One night, we<br />

found a little decorated box with<br />

a cute handmade pottery animal<br />

inside - ours was a zebra and there<br />

are six others in the collection. This<br />

lovely keepsake was crafted by<br />

artists from Gala Star – a company<br />

that enables underprivileged people<br />

to improve their lives by making art<br />

that’s sold in the tourism market.<br />

The luxurious rooms at the main<br />

lodge are hotel-like and cosy, with<br />

a spacious bathroom … and an<br />

outdoor shower. You can get two<br />

rooms with an interleading door –<br />

handy for families.<br />

Planning a romantic getaway?<br />

Book for the River Lodge. Perfect<br />

for a honeymoon! And fret not<br />

when they don’t give you a key for<br />

your room – you don’t need one!<br />

The rooms’ design and décor are<br />

charmingly bona fide bushveld –<br />

think a mosquito-net-draped bed,<br />

cosy fireplace and comfy seat on<br />

the veranda. And you’ll probably feel<br />

very, very clean because who could<br />

resist a splash in the oh-so-appealing<br />

outdoor shower, indoor shower and<br />

bathtub overlooking the reserve. The<br />

A bush holiday isn’t really complete<br />

without dinner in a boma … try the<br />

sweet home-made bread and the<br />

venison meat dishes which have<br />

a uniquely African touch – think<br />

kudu potjie or crocodile sosaties.<br />

It’s definitely a ditch-the-diet kind<br />

of holiday … in between brekkie,<br />

lunch and dinner there are pregame<br />

drive snacks – like decadent<br />

choc-chip cookies in the mornings<br />

and afternoon high tea – as well as<br />

bush coffees and sundowners in the<br />

reserve.<br />

In short ... when the toughest part<br />

of your day is dodging wayward<br />

hanging branches as your field<br />

guide seeks a terrific sighting, you<br />

know you’re in a magical place.<br />

Main Lodge superior rooms from R4520 a person sharing, for a maximum of two<br />

people a room and one child under the age of three in a cot. There are interleading<br />

rooms for a maximum of two people a room and children over the age of<br />

two will need their own bed, and are charged at 50 per cent of the adult-sharing<br />

rate. River Lodge suites from R6225 a person sharing with a maximum of two<br />

adults a suite. There’s one family suite for two adults and three children under the<br />
