IT’S VALENTINE’S DAY MONTH AND ROMANCE IS IN<br />

THE AIR! Card sales, along with flower and candy sales,<br />

abound as those who love each other want to show their<br />

affection.<br />

I remember one particular Valentine’s Day when I was living<br />

in New York City and flying for American Airlines. I was<br />

engaged to my future husband Doug Bunce, and he sent me<br />

so many flowers, I could hardly hold them. I remember the<br />

photo my sister took of me holding the flowers and grinning<br />

from ear to ear. I wish I had that photo today!<br />

Our Valentine story is a special one. Dee and Larry Higby met at Disneyland, where she<br />

was working as a VIP hostess and Larry was working at various rides throughout the park.<br />

One particular day, he was an operator on the Jungle Cruise ride and saw this pretty girl walk<br />

up with a group of visitors. He wanted to get her attention, so he locked the turnstile and<br />

said, “Hi, my name is Larry Higby,” to which Dee replied, “So?” It only went up from there,<br />

and two years later, they were married. Dee’s take on that first meeting is, “It led to an<br />

exhilarating 52-year e-ticket ride!”<br />

54th Annual Gala<br />

Providence Speech and Hearing’s 54th annual gala, themed “Magic Under the<br />

Stars,” posted net proceeds of $555,000 to help continue its mission helping<br />

people with speech and hearing problems in Orange County. The dinner dance,<br />

which drew 271 guests, was made more magical with special musical guests, JT<br />

& Friends, who provided dance music late into the night.<br />

"Now or Never" art installtion at South Coast Plaza<br />

A NEW INSTALLATION AT SOUTH COAST PLAZA<br />

“Now or Never,” an interactive art piece by Dutch-American<br />

sculptor and painter Lara Schnitger is on view at South Coast<br />

Plaza’s Level 1 of the Saks Fifth Avenue wing through January,<br />

2021. The art piece is made of two-sided sequin fabric laid over<br />

wooden panels. Visitors may leave their mark on portions of certain<br />

pieces. The text and images deal with global warming and female<br />

MEET THE AUTHOR SERIES ANNOUNCED<br />

The Newport Beach Public Library is hosting a series of five Meet<br />

the Author talks and book signings from <strong>February</strong> through May,<br />

<strong>2020</strong>. The wealth of literary talent is impressive and includes:<br />

<strong>February</strong> 12 - Anita Abriel (The Light After the War) of a true story<br />

of survival during WWII; March 19 - Adam Chandler (Drive-Thru<br />

Dreams) of a road trip through America’s fast-food kingdom; April<br />

15 - Dr. Michael F. Roizen (What to Eat When & The What to Eat<br />

When Cookbook) for a strategic plan to improve your health and life<br />

through food; April 27 - Andrew Krivak (The Bear) as a stunning<br />

tribute to the beauty of nature’s dominion; May 21 - Christopher<br />

Costa Mesa marked its 25th<br />

anniversary at a benefit at The<br />

Harper in Costa Mesa with 150<br />

supporters attending to<br />

celebrate the impact the<br />

nonprofit has had providing<br />

quality education to more than<br />

5,000 neighborhood children<br />

positioning them for success in<br />

college and career. Think<br />

Together, a statewide education<br />

nonprofit committed to helping all students to succeed in their<br />

journey toward college and career, evolved from Shalimar to<br />

operate programs in nearly 50 school districts and serving more<br />

than 150,000 children. The evening’s 2019 Signature Award<br />

recipients included the first-ever Legacy Award presented to Trish<br />

O’Donnell in honor of her late husband John’s generosity during<br />

the critical early days of the Center. Pacific Life Foundation<br />

received the Innovator Award for the more than $200k contributed<br />

to Shalimar programs, and the Partner Award was presented to<br />

National Charity League’s Newport Chapter for its financial and<br />

TAYLOR BOTH KNEW EARLY ON IN LIFE THAT MUSIC WOULD<br />

BE THEIR DESTINY.<br />

Livingston Taylor (Liv, as he is known), grew up in a musical family<br />

in Chapel Hill, North Carolina. His older brother, James (yes, that<br />

James Taylor), taught him to play the guitar when he was 13 years<br />

old.<br />

But it wasn’t until he opened in Boston for Joni Mitchell at 18<br />

(with a standing ovation, no less), that he knew music-making was to<br />

encompass the entirety of his life.<br />

His laid-back manner and introspective lyrics have been drawing<br />

in countless fans throughout the years.<br />

“Lyrics are everything,” Liv says. “You must be telling stories<br />

compelling to the human condition.”<br />

Ray Benson, co-founder and Asleep at the Wheel band leader<br />

Over the years, he has shared the stage with Fleetwood Mac and<br />

Jimmy Buffett, recorded over 20 albums and even had his own<br />

“Livingston Taylor Day” in 2017, proclaimed by the Mayor of<br />

Boston in celebration of his 50-year music career.<br />

Growing up in West Lost Angeles, Karla was singing and writing<br />

songs at 15, honing her skills at the legendary Troubadour Club,<br />

along with James Taylor, Jackson Browne and Elton John.<br />

“It’s always been about the melodies and the music first,” she<br />

recalls. “It’s the music that inspires me to write lyrics.”<br />

Her soulful ballads have influenced countless musicians and<br />

made her a pioneer of the Southern California singer-songwriter<br />

scene.<br />

Writing from “a subconscious, deeper place,” she has also<br />

penned hits for Linda Ronstadt, Wynonna Judd and Bonnie Raitt.<br />

(The hit single “All My Life,” the Grammy-winning duet recorded<br />

by Linda Ronstadt and Aaron Neville, is still a favorite at weddings.)<br />

In March, Karla and Liv will share the stage at Irvine Barclay<br />

Theatre. They’ll reminisce about the past and share the heartfelt<br />

stories they have set to music.<br />

DEE AND LARRY HIGBY’S LOVE STORY BEGAN AT DISNEYLAND<br />

A locked turnstile at Disneyland proved fortuitous for Larry Higby<br />

and Dee Bramblett. As it turned out, the turnstile was purposefully<br />

locked by Higby who wanted to meet the pretty Disneyland tour<br />

guide as she was guiding her tour through the Jungle Cruise ride,<br />

where he was an operator.<br />

Higby remembers saying, “Hi, my name is Larry,” to which Dee<br />

replied, “So?” Not exactly a promising start, but Higby didn’t give<br />

up and finally got her to go out on a date.<br />

“And, that was it for me,” Larry remembers. “I knew right away<br />

Dee was the one.”<br />

It took Dee a little longer.<br />

“Summer was coming, and there were all these cute guys in the<br />

Park,” she says, “but mid-way through the summer, I started to<br />

figure out he was the one.”<br />

The year was 1965, and by fall, Dee was wearing a Sigma Nu pin<br />

Larry gave her from his UCLA fraternity. By the next fall, they were<br />

engaged, and in 1967, Larry proposed at the seaside gazebo at<br />

Victor Hugo Inn (now Las Brisas) in Laguna Beach. They were<br />

married at Anaheim First Presbyterian Church on July 1, 1967, two<br />

weeks after Larry graduated from UCLA with a degree in political<br />

science.<br />

They might never have met if Dee’s family hadn’t moved to<br />

California when her father retired as a U.S. Navy officer. Born in<br />

Spokane, Washington, Dee and her two siblings grew up living all<br />

over the world, due to their father’s assignments - Philippines,<br />

Naples, Italy, Hawaii, and more.<br />

“We moved every two or three years,” Dee says. “I finally got to<br />

put down roots in Pensacola, Florida, where I attended high school<br />

and one year of junior college before we moved to California.”<br />

Too late to register for college that year, Dee got a job at<br />

Disneyland, first as a tour guide and then as a VIP hostess,<br />

escorting the likes of James Garner, Debbie Reynolds, Sammy<br />

Davis, Jr., and Greer Garson.<br />

Larry, born in Pomona, California, never knew his father.<br />

Lawrence B. Mead II died during World War II as a fighter pilot on<br />

the USS Enterprise in the South Pacific. His mother married Don<br />

Higby three years later. Larry attended Ganesha High School in<br />

Pomona, playing football and basketball and serving as student<br />

body vice president, later repeating the honor at UCLA.<br />

Following the wedding, the couple lived in Inglewood, where<br />

upon graduation Larry received a job offer to work as assistant to<br />

H.R. Haldeman, who was West Coast VP for the prominent J.<br />

Walter Thompson advertising agency. Larry had become<br />

acquainted with Haldeman at UCLA, where he was on the Board of<br />

Regents and Alumni Association President.<br />

While working, Larry completed his first year in the UCLA<br />

Graduate School of Business when he received an offer he couldn’t<br />

refuse. Haldeman was leaving for New York City to run Presidential<br />

candidate Richard Nixon’s campaign and asked Larry to be his aide.<br />

Moving to New York in June 1968, Dee stayed behind and when<br />

Nixon won the presidency, moved to Washington D.C. to be with<br />

Larry, as he was named administrative assistant to Nixon’s White<br />

House Chief of Staff, H. R. Haldeman.<br />

Earlier attending college in California, Dee ultimately graduated<br />

from George Washington University in June, 1970, with a degree in<br />

psychology and three-months pregnant with Jennifer, who was<br />

born January, 1971.<br />

Moving up the ladder, Larry was named Deputy Assistant to the<br />

President of the United States and later to Assistant to the Deputy<br />

Director, Office of Management and Budget.<br />

“I had the dream job,” he says. “I traveled everywhere with the<br />

President - on the famous China trip and to Russia for the Salt Talks<br />

to start limiting nuclear weapons with Soviet Union General<br />

Secretary Leonid Brezhnev.<br />

“The President was very generous to offer Camp David for wives<br />

and families when we traveled,” Larry says. “Our daughter Jennifer<br />

flew on Air Force One and spent many nights at Camp David. I<br />

would get home late at night, and Dee would have dinner waiting.”<br />

Dee adds, “I trained Jennifer to sleep late in the morning so she<br />

could stay up later to see her father.”<br />

Everything changed in 1973, with Nixon leaving the White<br />

House due to the Watergate scandal, when Larry began working at<br />

Pepsico, Inc. A top-notch executive in sales and marketing, the<br />

family eventually ended up in Irvine with Taco Bell (which Pepsico<br />

acquired). More impressive credentials followed at Caremark,<br />

Times Mirror Cable Television and Times Mirror Company as LA<br />

Times VP and President of the OC Division. Then came a stint in<br />

Costa Mesa at Unocal Corporation as Group VP and President of its<br />

76 Products Company. Larry’s final 11-year run was President/CEO<br />

at Apria Healthcare Group.<br />

It was during these years that son Robbin Lawrence Higby (1975)<br />

and twins boys Ryan and Christopher Higby (1979) were born.<br />

Home was in Lemon Heights, with the children attending Tustin<br />

schools.<br />

During their early years, Dee was a class mom and because the<br />

boys were into baseball and football, Dee was Little League<br />

scorekeeper and Larry was president of the Booster Club. He and<br />

the late Larry Sanders founded the Foothill High School Education<br />

Foundation to raise money for school items.<br />

With the final child leaving for college in 1998, the Higbys<br />

moved to Newport Beach. Even before Larry retired in 2008, both<br />

of them were giving their time to charitable causes.<br />

Larry joined the Orange County Music Center Board (now<br />

Segerstrom Center for the Arts) in 1992, later serving as chairman<br />

2011-2015, and when he was asked to serve on South Coast<br />

Repertory’s board in 1992 and said no, Dee was asked, later serving<br />

as president 1998-2000.<br />

“It was a much better choice,” Larry says, smiling.<br />

The duo’s nonprofit involvements go on and on. They have both<br />

served on an impressive list of nonprofit boards (some currently)<br />

with Dee chairing galas for SCR and Segerstrom Center more than<br />

once. Larry’s co-founding the New Majority 20 years ago is<br />

something he is proud of, and they were both honored in 2019 by<br />

The Guilds of Segerstrom Center for their years of support and<br />

encouragement. Larry received the Center’s Chairman’s Cup in<br />

1996, and Dee was Angels of the Arts board president 2012-2014.<br />

“We both have a particular fondness for the arts in Orange<br />

County and love it that we have been involved,” Dee explains, “in<br />

particular, to see the blossoming of Segerstrom Center into a<br />

world-class cultural center.”<br />

As to their marriage, the joy is evident when you are with them.<br />

“It really was love at first sight,” Larry says. “She’s been an<br />

amazing mother, who raised and nurtured our family almost<br />

single-handedly. And, she is a great combination of strength and<br />

empathy in one person.”<br />

Dee says of Larry, “He’s been a great husband and father and is<br />

one of the smartest people I know. He always makes sure we have<br />

fun, and he has the most amazing ability to get something done.<br />

Nothing daunts him.”<br />

So, it’s fair to say Dee is very happy Larry locked the Disney<br />

turnstile all those years ago.<br />

“I remember the jolt of hitting that locked turnstile, but it turned<br />

out okay because it led to an exhilarating 52-year e-ticket ride!”<br />

VALENTINE’S DAY OCCURS EVERY FEBRUARY 14. Across the<br />

United States and in other places around the world, candy, flowers<br />

and gifts are exchanged between loved ones, all in the name of St.<br />

Valentine. Who is this mysterious saint and where did these<br />

traditions come from?<br />

According to Roman legend, during the third century,<br />

Valentinus was imprisoned for his Christian beliefs and sentenced<br />

to death. He was a bishop and martyr venerated as a saint by the<br />

Catholic, Orthodox and Anglican Churches. He was not only<br />

considered the patron saint of lovers but also the patron of<br />

epileptics. While in jail, Valentinus restored the sight of his jailer’s<br />

blind daughter. The night before he died, Valentinus wrote a<br />

farewell note to the girl, which he signed, “From Your Valentine.”<br />

His sentence was carried out the next day, <strong>February</strong> 14, 269 A.D.<br />

Hundreds of years later in fifth century Rome, people honored<br />

Juno, the pagan goddess of love and marriage, on <strong>February</strong> 14.<br />

During the celebration, men would draw women’s names and court<br />

them for marriage. In order to end the pagan celebration, Pope<br />

Gelasius declared <strong>February</strong> 14 as St. Valentine’s Day to honor the<br />

martyr Valentinus and to end the pagan celebration.<br />

In 1849, Esther Howland of Worcester, Massachusetts,<br />

published the first American Valentine’s Day card. As a result, she<br />

is known as the “Mother of the American Valentine.”<br />

Today, around 145 million Valentine’s Day cards are exchanged<br />

industry-wide, making Valentine’s Day the second-largest holiday<br />

for giving greeting cards. In addition to the United States,<br />

Valentine’s Day is celebrated in Canada, Mexico, the United<br />

Kingdom, France, Australia, Denmark and Italy, according to<br />

Hallmark. The first Valentine’s Day card offered by Hallmark was in<br />

1913.<br />

Last year, and for the first time ever, total U.S. Valentine’s Day<br />

spending reached $20 billion, with only around 30% of the<br />

population planning to celebrate the holiday, the smallest share in<br />

at least a decade. Even though overall participation keeps<br />

decreasing, the dollar volume keeps increasing. In a statement<br />

from Matthew Shay, CEO of industry advocacy group National<br />

Retail Federation, greater spending among those participating in<br />

the holiday is likely driven by the strong economy. While some of<br />

that spending will go towards friends, coworkers and family, most<br />

of the Valentine’s Day spending will be between spouses and<br />

significant others. This year’s average per person expenditure will<br />

be around $162, which is $59 dollars more than in 2010.<br />

Valentine’s Day plans vary by couple, but many will be sticking<br />

to tried and true traditions. According to an NRF survey, 15% of<br />

American adults plan on buying a gift certificate, 18% plan to buy<br />

clothing and jewelry, more than a third plan on an evening out,<br />

35% plan on buying flowers, 44% will buy a greeting card and<br />

more than half plan on buying candy.<br />

For those of you here in Newport Beach, what are your plans for<br />

Valentine’s Day? No matter what you do, be sure to celebrate it<br />

with a toast and lots of special treats!<br />

Conjure paradise and then multiply that image by ten.<br />

And, there you have Petit St. Vincent (PSV), one of the<br />

most exquisite islands in the Caribbean.<br />

The low key and luxurious 115-acre private island is<br />

flung into the sea - part of the nation known as St.<br />

Vincent and the Grenadines - located in a stunning<br />

spot where the Caribbean meets the Atlantic. Part of<br />

the Small Luxury Hotels of the World collection, PSV<br />

has 22 cottages that are staggered amid the beaches<br />

and hillside of the island. With so few cottages on<br />

property, even when the island is at full occupancy you<br />

can go all day without bumping into a fellow guest.<br />

On PSV you feel more like a luxurious castaway than<br />

a tourist. This is a place intended to give you space to<br />

fully immerse yourself in island life without forcing<br />

“fun” upon you, as so many other amped-up<br />

Caribbean resorts do. In fact, PSV is the antidote to the<br />

over-choreographed trip. There is no Wi-Fi (except<br />

near the main office) and there’s no TV to be found.<br />

From your villa, communication with staff is simple and<br />

elegant, operating through an unobtrusive flag<br />

system, where you hoist yellow for service and red for<br />

privacy.<br />

The experience of getting to this tiny island is an<br />

adventure of its own. My husband Scott and I flew into<br />

Barbados. The moment we touched down, a PSV rep<br />

whisked us through customs and immigration before<br />

leading us to the tarmac where a four-seat plane run<br />

by Mustique Airways awaited. We set off on a<br />

one-hour journey across the Caribbean Sea to Union<br />

Island, a colorful outpost where locals sell supplies to<br />

sailors who blow in from around the world. From the<br />

tiny airstrip we took a three-minute taxi ride to the<br />

dock, where PSV’s private motorboat fetched us for a<br />

15-minute ride to the lush island. There we were<br />

greeted with a potent rum drink (in a proper glass)<br />

before being sprinted to the cottage that would be<br />

our home for the next several days.<br />

Our cottage, perched over a bluff, had stone walls,<br />

beamed ceilings and sliding glass doors that opened<br />

to the ocean. Every cottage has outdoor space; ours<br />

had a wraparound terrace with lounge chairs, a dining<br />

table and, my husband’s favorite amenity - a<br />

hammock.<br />

Of course, the star of any Caribbean holiday is the<br />

beach. PSV has many beaches to choose from along its<br />

two-mile shoreline, some near the beach restaurant for<br />

convenience, and others secluded, like our favorite<br />

stretch known as the West End, where palapas-capped<br />

hammocks swing in the breeze. Each day, Scott would<br />

putter to the little dive shop to pick up snorkel gear so<br />

we could ogle spotted rays and colorful parrotfish<br />

gliding amid the reefs just offshore.<br />

The little dive shop happens to be a Jean-Michel<br />

Cousteau Diving Center, and it’s here that Scott took<br />

his very first scuba lesson. After a short instruction, he<br />

was able to go out and do two 45-foot dives, where he<br />

encountered barracuda and a moray eel amid the reefs<br />

just yards from the island, an unforgettable experience<br />

he has recounted almost daily since we’ve returned<br />

home. While he dived, I wound my way up a hill to the<br />

spa, where treatment rooms are tucked amid the<br />

treetops. I surrendered to a Balinese–style massage<br />

said to improve blood flow while being lulled to the<br />

sounds of doves cooing in the brush.<br />

The next day we took a five-hour sail on Beauty, a<br />

49-foot wooden sloop that was constructed for the<br />

owner of PSV by a master boatwright from a<br />

neighboring island. We snorkeled in a pristine reef<br />

(now a national marine park), where fleet-footed<br />

starfish scurried. We swam alongside large sea turtles<br />

cruising gentle waves. And, we explored an island<br />

inhabited only by iguana.<br />

On our final morning, gulls swooped overhead as I<br />

nursed my freshly squeezed beet-ginger juice outdoors<br />

on the terrace (the island’s bar turns out healthy juices<br />

by day and craft cocktails come evening). Rain clouds<br />

in the distance tossed a lacey screen over the sea. Scott<br />

and I were silent, soaking in the last of a place that had<br />

so wholly transformed us in just a few short days. We<br />

were relaxed and rested, yes, but we had also banked<br />

a few new adventures. Granted, we were reluctant to<br />

leave, but we knew we were heading home a slightly<br />

improved version of who we were. What more could<br />

we ask?<br />

DESPITE MAKING THE JAUNT TO NEWPORT’S LIDO MARINA<br />

VILLAGE FOR LUNCH AND BRUNCH, EVENING SERVICE IS<br />

WHERE CHEF AMY LEBRUN SHINES BRIGHTEST, AS SHE<br />

ACHIEVES REFINED, COMFORTING FLAVOR PROFILES. This<br />

is owed in part to her established supplier network, contributing a<br />

breadth of comestibles she showcases at Lido Bottle Works.<br />

“Sourcing at this level provides the right quality of what I want<br />

to serve,” Lebrun says. “Why not showcase all of the best<br />

resources we have available, at the peak of each season, and even<br />

within the micro changes that happen in between? If you can get<br />

those ingredients from those purveyors who specialize in it at the<br />

right time … it just doesn’t get any better than that.”<br />

Additionally, chef personally tends to a trio of gardens, the first<br />

based along the perimeter of LBW’s patio; her second is found in a<br />

Costa Mesa backyard. A partnership with Mercy House (A<br />

non-profit providing supportive housing opportunities to<br />

displaced persons.) is how a converted motel becomes Lebrun’s<br />

final patch of land to cultivate.<br />

We left the selections up to chef, respecting sound<br />

recommendations versus overanalyzing the menu. Our dinner<br />

commenced with a Burrata offering layers of personality.<br />

Grounded in a velvety butternut squash puree, crisp fruits such as<br />

Yali pears from Sunny Cal Farms in Reedley and curly greens<br />

peeked beneath a pool of creamy Italian dairy. Walnuts spiced with<br />

cardamom lent a distinct flavor, while pomegranate vinaigrette’s<br />

juicy arils complemented tastes built on a cracker bread canvas.<br />

Receiving Lido’s seasonal vegetables is a bespoke pleasure.<br />

Their best dressed in appearance, its mélange of cruciferous, root<br />

and marrow ingredients is decided by Lebrun’s local farmer’s<br />

markets trips. Her decision to live on a vegan diet for three weeks<br />

while planning for next season resulted in a reimagined<br />

point-of-view when plating vegetables. Green heirloom tomatoes,<br />

purple broccoli, watermelon radish and more are courtesy of San<br />

Juan Capistrano’s Ecology Center. From here, they are treated<br />

with varying preparations (grilling, pickling, marinating, etc.) to<br />

showcase their appetizing qualities. Pistachio butter accents are<br />

the umami-rich dressing to this generous crudite spread.<br />

Speaking of generous, Chef Amy’s Duck Breast serving can be<br />

shared by a pair of patrons, enabling diners to explore the menu<br />

further - perhaps allowing room for dessert, if one so chooses.<br />

Echoing our burrata base, pureed squash proves its versatility by<br />

equalizing the richness of this waterbird. Mushrooms and tart<br />

lingonberries further coax out the flavors of our dinner. However,<br />

our final entrée truly epitomized comforting cuisine.<br />

At first glance, we received a curious mound of noodles<br />

blanketed in a pale mint-hued sauce. After thoroughly<br />

incorporating the chive cream in our Filet Beef Stroganoff, we were<br />

rewarded with unexpected depth. Pan-seared mignon morsels and<br />

seasonal mushrooms met their match in a tangle of housemade<br />

egg pasta. Our deceptively delicious course was difficult to share,<br />

due to the fact that we didn’t want to.<br />

Thoughtful in person as she is behind the knife, Chef Lebrun<br />

pulled up a chair from a neighboring table, sharing anecdotes and<br />

elaborating on our dinner while we took our remaining bites.<br />

A recipe of unique texture, crunch and<br />

slight bitterness sure to impress<br />

LYON HAS SPAWNED SOME GREAT DISHES, AND ONE OF<br />

THEM IS THE SALADE LYONNAISE. It is not the simplest salad<br />

ever made, but one that approaches perfection in a way others do<br />

not. Its combination of bitter greens (traditionally frisée, though<br />

escarole, dandelion, and arugula all work beautifully), crisp bacon,<br />

barely cooked eggs and warm vinaigrette is unbeatable. This<br />

Valentine’s Day, prepare this simple and elegant delicious recipe<br />

for your romantic brunch, lunch or dinner meal.<br />

Ingredients (serves 4)<br />

1 head butter lettuce ½ French baguette<br />

1 friseé lettuce (optional) 2 oz Dijon mustard<br />

8 oz slab bacon 2 oz red wine vinegar<br />

4 eggs 4 oz light olive oil<br />

Preparation:<br />

Clean lettuce and cut leaves into medium size pieces.<br />

Cut the bacon slab into ¼” thick slices, then cut into ¼” pieces.<br />

Blanch by dropping bacon pieces in boiling water for about 4<br />

minutes. Remove & drain.<br />

Sauté blanched bacon in hot pan until light brown.<br />

Drain & reserve.<br />

Cut baguette into ½” cubes, sprinkle with some olive oil, salt and<br />

pepper. Bake in baking pan at 350° until light brown. Reserve.<br />

Poached egg: bring about 2 quarts salted water and 1 oz. vinegar<br />

to a heavy simmer in pot. Crack whole egg into small container<br />

individually, then drop into hot water. Drop up to 4 eggs at a time.<br />

Cook until egg white is firm and eggs float, about 4 minutes.<br />

Remove and chill in ice bath.<br />

Dressing:<br />

Pour vinegar into small mixing bowl. Add salt (1/4 tsp) and pepper<br />

(1/4 tsp). Mix well. Add mustard and mix well. Incorporate olive oil<br />

slowly with whisk.<br />

Presentation:<br />

Toss lettuce in dressing. Display the salad on each plate* Add<br />

croutons and warmed up lardons (cooked bacon cubes until brown<br />

and slightly crispy). Top with one poached egg on each salad after<br />

warming them in boiling salted water for 3 minutes.<br />

Optional: Add chopped herbs (chive, parsley) sprinkled over and<br />

served with a turn of fresh ground pepper.<br />

IN RECENT YEARS WE HAVE OBSERVED A PROLIFERATION OF SUPERCARS. The muscle car concept utilized in the 1960’s has evolved<br />

into the concept of supercar, and most recently into the term hyper car. The concept is open to interpretation, but until the 1990s consisted<br />

of a mid-engine two-seat car with a V-12 engine, a power output of at least 400 horsepower, and a top speed of at least 180 miles per hour<br />

(290km/h). Today, manufacturers utilize supercars as the halo for their brand to attract media attention and consumer hype that translates into<br />

self-promotion. One common definition for a supercar is a limited-production, top-of-the-line vehicle with a price above US $1 million, high<br />

performance, and advanced driving technologies. We have selected a few of the most relevant supercars that have raised the interest of<br />

collectors, the media and the public in general.<br />

This is the third hyper car in Aston Martin’s mid-engine history. The heart of the Aston Martin Valkyrie’s<br />

powertrain is its clean sheet Cosworth-built 65° naturally aspirated 6.5-litre V12 engine. It evokes the<br />

spine-tingling, ultra-high-revving F1TM engines of the 1990s, but benefits from two decades of progress in<br />

design, material and manufacturing expertise. With a certified peak power output of 1,000 bhp (or 153.8<br />

bhp-per-liter) at 10,500 rpm, it can continue to a maximum 11,100 rpm. It is an emissions-compliant road car<br />

with a peak torque of 740Nm at 7,000 rpm. These peak outputs are purely delivered by the ICE (Internal<br />
