Countdown to City2Surf<br />

WITH NEW Year’s resolutions quickly<br />

approaching, there’s no better time to<br />

set yourself a personal goal than at one<br />

of the country’s biggest fun runs – the<br />

City2Surf.<br />

On March 22, the Les Mills City2Surf<br />

will celebrate its 46th running and as<br />

always will have an option for all types<br />

of fitness levels with a 14km and 6km<br />

The 14km event starts at 9am at Pioneer<br />

Stadium, and the 6km event starts at<br />

10am at Hansens Park, all culminating<br />

for a massive finish at Ferrymead Playing<br />

walking the Les Mills City2Surf is the<br />

Neighbour causes<br />

stir on quiet residential street<br />

AN INVESTIGATION is under<br />

way into complaints over a large<br />

multi-storey house being built<br />

on a quiet residential street in<br />

Riccarton.<br />

The city council is investigating<br />

concerns it has received from<br />

nearby properties and organisations<br />

over a new house currently<br />

in construction for carpet retailer<br />

and interior design service<br />

it has received complaints<br />

from four nearby properties<br />

along with concerns raised from<br />

the Riccarton Bush-Kilmarnock<br />

Residents’ Association and the<br />

Halswell-Hornby-Riccarton<br />

Community Board.<br />

The city council confirmed<br />

the house breaches multiple<br />

variations for a residential zone<br />

– including it does not meet the<br />

required finished floor level and<br />

breaches recession planes.<br />

But it argues Mr Dore is able<br />

to use the previous on-site townhouse<br />

coverage and consent as a<br />

baseline.<br />

Mr Higgins said it is an established<br />

principle under the Resource<br />

Management Act - either<br />

known as existing use rights or<br />

existing environment.<br />

When asked by <strong>Western</strong> <strong>News</strong><br />

why the house was designed the<br />

way it was, Mr Dore said: “I don’t<br />

know whether I have a comment<br />

on that, that is a bit like asking<br />

why did you dress in that colour<br />

today”.<br />

Mr Dore said he engaged an<br />

architect and he did not think he<br />

had any comment to add which<br />

would be “advantageous.”<br />

The previous townhouse on<br />

the site was demolished earlier<br />

this year.<br />

The construction of the house<br />

did not have public consultation.<br />

Board chairman Mike Mora<br />

said he is concerned a lack of<br />

consultation is an issue happening<br />

all over the city.<br />

But Mr Higgins said the key<br />

reason it was allowed to go ahead<br />

without consultation was due to<br />

its comparison against the previous<br />

house.<br />

The decision said it did not<br />

consider anyone to be adversely<br />

affected by the proposal, nor will<br />

there be adverse effects on the<br />

wider environment.<br />

Resident Peter Hodges said<br />

he was glad he was not directly<br />

neighbouring the building and<br />

described it as “over the top.”<br />

Another resident, who did not<br />

wish to be named, said while<br />

Rata St has a “very friendly<br />

neighbourhood group” the house<br />

has “caused a stir.”<br />

The resident was concerned<br />

it could start to cause a trend<br />

in how buildings can be constructed<br />

in a residential zone.<br />

Mr Higgins confirmed one<br />

variation was approved since the<br />

resource consent for the building<br />

was granted.<br />

But he said there will be a<br />

second one due to discrepancies<br />

between what has been approved<br />

and what has been built so far.<br />

A variation to the balcony and<br />

deck from the living area of the<br />

house was approved. The second<br />

variation for steel fins will be<br />

considered by an independent<br />

commissioner.<br />

A number of bus stop upgrades<br />

will be made to the bus stop<br />

on Halswell Rd. The Halswell-<br />

Hornby-Riccarton Community<br />

Board has approved for the bus<br />

stop on 286 Halswell Rd to be<br />

relocated to 278/280 Halswell<br />

Rd. A bus shelter will also be<br />

installed beside 278 Halswell Rd<br />

and the existing outbound bus<br />

stop opposite 284/286 will be<br />

A WELL-KNOWN police<br />

officer in Riccarton has retired<br />

after serving for 25 years.<br />

Community Constable Ken<br />

Carter, who had responsibility<br />

for the Riccarton area and<br />

Canterbury University, retired<br />

last month.<br />

Born and raised in Ashburton,<br />

he started as a beat constable<br />

in the central city, before<br />

serving as a response constable<br />

for 12 years.<br />

The remainder of his time<br />

has been as a community<br />

constable in the central city,<br />

Sydenham and Hornby, with<br />

responsibility also for Canterbury<br />

University.<br />

Senior Constable Carter<br />

said he first joined the police<br />

“because it seemed I had a lot<br />

of the traits needed to make a<br />

good policeman.”<br />

“It’s been a very fulfilling<br />

and challenging career, with<br />

lots of variation. I have enjoyed<br />

my time,” he said.<br />

When asked about the challenges<br />

of the job, Senior Constable<br />

Carter said all police<br />

have moments that challenge<br />

them.<br />

“The time of the earthquakes<br />

was a pivotal one for<br />

the city. But the thing I find<br />

hardest is knocking on a door<br />

in the middle of the night to<br />

tell someone they have lost a<br />

Senior Constable Carter said<br />

a particularly satisfying part of<br />

the role has been working with<br />

see a change in the drinking<br />

culture.”<br />

Of his retirement, Senior<br />

Constable Carter said: “There<br />

is lots of travel to do, fish to<br />

catch, hills to climb, and water<br />

to slalom water ski.”<br />

role has been taken over by<br />

Senior constable John Stevenson,<br />

who is based at the<br />

Hornby Police Station.<br />

car; if you must leave valuables<br />

Verbal stoush delays meeting<br />

A HALSWELL-Hornby-<br />

Riccarton Community Board<br />

meeting was adjourned last<br />

week after a verbal stoush<br />

broke out between two longserving<br />

members.<br />

Chairman Mike Mora and<br />

member Helen Broughton were<br />

at loggerheads at the public<br />

meeting over whether to appoint<br />

board members to various<br />

community organisations.<br />

The conflict started when<br />

Mrs Broughton suggested the<br />

decision be delayed because<br />

city councillor Catherine Chu<br />

and member Gamal Fouda<br />

were absent from the meeting.<br />

Mrs Broughton said the<br />

newer members needed more<br />

time to reflect on what community<br />

organisations they<br />

wanted to be appointed to.<br />

But Mr Mora said he had<br />

emailed out two opportunities<br />

to have the board meet over<br />

the issue before the meeting<br />

on Tuesday but there “wasn’t<br />

an appetite.”<br />

He was supportive of the<br />

board making a decision at the<br />

meeting in spite of Ms Chu<br />

and Mr Fouda being absent.<br />

But Mrs Broughton interjected<br />

telling Mr Mora to<br />

“leave it.”<br />

Mr Mora responded: “Hang<br />

on Helen I am talking. I know<br />

you said leave it but you have<br />

got a very active habit of letting<br />

things lie on the table.”<br />

At that stage Mrs Broughton<br />

called for a point of<br />

order.<br />

“You are uttering<br />

a critical comment<br />

without reason, I<br />

am asking you to<br />

withdraw it,” she<br />

said.<br />

Mr Mora then<br />

withdrew his<br />

comment and continued<br />

to discuss<br />

why the decision<br />

shouldn’t be delayed.<br />

Mrs Broughton’s<br />

formal motion did<br />

not get support<br />

from the community<br />

board.<br />

Said Mr Mora:<br />

“We haven’t got a<br />

seconder . . . we will<br />

go back to the item<br />

that people have<br />

had for periods of<br />

time to respond or<br />

indicate their willingness<br />

to and that<br />

hasn’t happened other than<br />

someone wants to lie on the<br />

table because they can’t make<br />

a decision.”<br />

Mrs Broughton then said<br />

loudly “point of order.”<br />

that. There is no reflection on<br />

me not being able to decide,<br />

it is an attack on an elected<br />

member,’’ she said.<br />

Mora to withdraw<br />

his comment,<br />

Mr Mora stood<br />

up and asked<br />

Helen “to be quiet<br />

Pratt to ask Mrs<br />

Broughton to<br />

leave the meeting.<br />

Mrs Broughton<br />

asked Mr Pratt<br />

to speak to Mr<br />

Mora about the<br />

issue.<br />

The meeting<br />

was adjourned<br />

for about 10<br />

minutes.<br />

Following the adjournment,<br />

Mr Mora withdrew his<br />

comment he made earlier that<br />

“someone wants (the report)<br />

to lie on the table because they<br />

can’t make a decision”.<br />

DEPUTY BOARD chairman<br />

Andrei Moore, and newly<br />

elected member Mark Peters<br />

want the conflict between<br />

Mrs Broughton and Mr Mora<br />

resolved going forward.<br />

“It is something I would<br />

like to see resolved so we can<br />

get on and do our jobs representing<br />

the community,” Mr<br />

Moore said.<br />

Mr Peters said the conflict<br />

at the meeting was “a bit unnecessary.<br />

“It would be nice to put past<br />

differences in the trash can<br />

on the way in and move on<br />

to work in nice harmonious<br />

ways,” said Mr Peters.<br />

“I don’t believe anyone in<br />

the community wants to see<br />

this going on. It is embarrassing<br />

when you get to that in<br />

public.”<br />

Mr Peters described Mr<br />

Mora as a “well-practised”<br />

chairman and was hopeful<br />

over the next 12 months<br />

the board could work<br />

harmoniously under his<br />

leadership.<br />

Hub will benefit pupils<br />

Rotary supports<br />

OAKLANDS SCHOOL senior<br />

pupils have moved into a new<br />

high-technology hub with an<br />

interactive television screen,<br />

kitchen, and green room for<br />

video creation.<br />

The new senior hub formerly<br />

housed the school office. It was<br />

completely renovated as part of a<br />

$5 million-plus campus redevelopment<br />

of the school.<br />

Year 7 and 8 pupils moved into<br />

the new hub at the beginning of<br />

this month.<br />

Oaklands School principal<br />

Margaret Trotter said the hub<br />

was an exciting development for<br />

the school and particularly its<br />

most senior students.<br />

The school placed an emphasis<br />

on fostering leadership and innovative<br />

learning in its senior students<br />

and this new space would<br />

enhance this, Mrs Trotter said.<br />

“We know this is a special<br />

age group who in their last two<br />

years of primary schooling add<br />

so much value to the school. All<br />

the students have leadership opportunities<br />

to develop their skills<br />

and abilities with a dedicated<br />

and experienced staff.<br />

“Their learning programmes<br />

cater for this age group with<br />

many opportunities to develop<br />

their own interests. They also<br />

use these skills to interact with<br />

our five-year-olds every week to<br />

build up relationships and support<br />

our younger students,” Mrs<br />

Trotter said.<br />

The new hub has an open<br />

plan area for all senior students<br />

to congregate as well as several<br />

break-out rooms for smaller<br />

group learning.<br />

It also contained a kitchen,<br />

that was in the former staff room<br />

and had been refurbished, for<br />

students to learn cooking skills,<br />

Mrs Trotter said.<br />

The school began its redevelopment<br />

early this year.<br />

Since then a new junior block<br />

and the year 7 and 8 hub have<br />

been finished.<br />

A new administration block,<br />

and a library and flexible learning<br />

block were on track to be finished<br />

by the end of this year.<br />

Next year the two existing<br />

‘Canterbury’ blocks built in<br />

the 1960s would be refurbished<br />

and the existing hall would be<br />

repainted on the outside, as<br />

would several other existing<br />

teaching rooms.<br />

NEARLY $4000 worth of<br />

groceries were packed and<br />

distributed by the Christchurch<br />

Rotary Club to help families in<br />

need with Christmas.<br />

The club gathered at the Cashmere<br />

Club hall recently to pack<br />

125 boxes of groceries for distribution<br />

amongst city charities and<br />

organisations who are at the front<br />

line when dealing with families<br />

feeling the financial pressures<br />

during the season.<br />

The organisations include<br />

Christchurch East Primary<br />

School, Family Help Trust,<br />

Prisoners Aid and Rehabilitation<br />

Society, Christchurch (Anglican)<br />

City Mission, Salvation Army,<br />

Canterbury Core Daddy’s and<br />

Battered Women’s Trust.<br />

The groceries were purchased<br />

from Pak’nSave Moorhouse Ave,<br />

who supported the project.<br />

Recipients for Civic Awards<br />

RESIDENTS FROM the western<br />

suburbs were amongst the 10<br />

groups and individuals to be<br />

recognised with Christchurch<br />

Civic Awards recently.<br />

The awards are presented by<br />

the city council to recognise<br />

those making a positive<br />

contribution to their<br />

community.<br />

This year’s recipients<br />

are:<br />

Bill Cowen, of Cashmere<br />

– A passionate<br />

footballer, Bill Cowen<br />

has spent decades working<br />

to promote the sport.<br />

He lives and breathes<br />

football and has driven<br />

the post-quake rebuild of<br />

his football club, Cashmere Technical’s<br />

facilities and membership.<br />

Barry Scott, of Halswell – For<br />

nearly 30 years, Barry Scott<br />

has been an active member of<br />

the Christchurch South Lions<br />

Club, where he has helped with<br />

countless community projects.<br />

He looks after the administration<br />

of the Halswell Public Hall.<br />

For many years Barry Scott has<br />

also assisted with Camp Quality<br />

programmes, which aim to bring<br />

fun, hope and happiness into<br />

the lives of children living with<br />

cancer.<br />

Judi Smitheram, of Spreydon<br />

– For the last four years, Judi<br />

Smitheram has been secretary<br />

of the Christchurch Folk Music<br />

Club and president of the Canterbury<br />

Folk Music Festival.<br />

Under her leadership, the festival<br />

has developed into a national<br />

event that attracts musicians<br />

from around New Zealand and<br />

the world.<br />

Kim Blackmore,<br />

of Mairehau – For<br />

more than 20 years<br />

Kim Blackmore has<br />

been the musical<br />

director and conductor<br />

of Stedfast<br />

Brass. The band has<br />

brought pleasure<br />

to thousands of<br />

music lovers around<br />

the city through<br />

its concerts and<br />

performances at school fairs,<br />

rest homes, church services<br />

and many other venues. Kim<br />

Blackmore not only arranges the<br />

performances, but he also gives<br />

tuition to new and less skilled<br />

band members.<br />

Christchurch Theatre Workshop<br />

SING Group – This group<br />

has been running sing-along<br />

concerts, primarily for elderly<br />

residents of rest homes and retirement<br />

villages, for 19 years.<br />

designer Jenny Gillies has helped<br />

foster Christchurch’s image as<br />

the Garden City through designing<br />

and displaying fabric floral<br />

creations both in Christchurch<br />

and overseas.<br />

– This organisation is focused on<br />

making Christchurch a cleaner,<br />

greener, more beautiful city.<br />

Through its Schools Environment<br />

Enhancement Programme,<br />

it supports about 40 schools with<br />

ideas and resources.<br />

Anne Stercq, of Richmond –<br />

A registered psychologist with<br />

more than 30 years experience,<br />

Anne Stercq has been one of<br />

the driving forces behind the<br />

development of the Seabrook<br />

McKenzie Centre for Specific<br />

Learning Disabilities.<br />

Phil Tappenden, of Riccarton<br />

– For the past 14 years, Phil<br />

Tappenden has worked tirelessly<br />

to build a relationship between<br />

the communities of Christchurch<br />

and Songpa Gu. He is Honorary<br />

Consul for the Republic of<br />

Korea in Christchurch and has<br />

been instrumental in organising<br />

scholarships and school and<br />

cultural exchanges.<br />

David Wilkinson, of<br />

Riccarton – After a 30-year<br />

career in law enforcement, David<br />

Wilkinson took on the role of<br />

Canterbury Area Co-ordinator<br />

for Canterbury Neighbourhood<br />

Support in 2010. Since then, he has<br />

worked tirelessly to strengthen the<br />

organisation and extend its reach,<br />

introducing new communication<br />

systems and setting up a satellite<br />

station in Riccarton.<br />

knocked them out last year, to<br />

make the final before falling by<br />

80 runs to Auckland’s Epsom<br />

boys basketball team had a<br />

footballer Ava Herrick was<br />

named in the New Zealand secondary<br />

schools’ under-16 football<br />

team which will compete in<br />

America in April.<br />

Fun and Games at Woodend Camp<br />

Hub 5 students spent Thursday and Friday of this week at the Woodend Camp. They challenged themselves with<br />

activities like the climbing wall, team building activities, archery, air rifles and driving go karts. Any free time was filled with<br />

the recreational activities the camp had available like the trampolines, mini golf, chess, Gaga Dodge ball game, volleyball,<br />

the playground the waterslide and the many sports activities available. A lot of learning took place from challenging<br />

themselves to try their best to succeed, to sleeping in a bunkroom with others, to eating in a dining hall with 95 other<br />

people, to showing resilience when not necessarily having had a lot of sleep.<br />

Some of the students have reflected on their camp experience below.<br />

Woodend Camp Reflections.<br />

Milli: The climbing wall was challenging when I was trying to get up the No 3<br />

path because I had to go out and up the overhang to get up to the top of the<br />

highest point.<br />

Matthew: I really enjoyed all the activities but especially the orienteering<br />

because you got to run through the forest with your friends and find the<br />

marker posts. The team building was fun because it challenged us to get<br />

the order correct on the 8 loop activity. We managed to do the loop in 20<br />

seconds which was equal fastest to one<br />

other group.<br />

Rae Anne: Team Building was fun<br />

because everyone was collaborating and<br />

communicating as to how we could get<br />

over the high wall. The people who were<br />

Hub 3’s Trip to the City<br />

A very enjoyable trip to the City!<br />

In integrated topic we have been looking at<br />

earthquakes how they are caused, how to keep<br />

safe during one and the effects of earthquakes.<br />

We have focused our learning around<br />

communities and change.<br />

For our class trip we took the children to the<br />

city to look at the effect of the earthquakes on the city and how it has changed.<br />

The places we went to were, The Gardens, Museum and then continued on to the<br />

Library where we saw Prince Charles and Camilla on their visit to Christchurch and<br />

finally we went to the Margaret Mahy Playground.<br />

A very fun filled and exciting trip we didn’t expect to see Prince Charles when we<br />

planned our trip.<br />

Thanks to all our parents for coming as parent help you made it all happen.<br />

A&P Show<br />

We had an AWESOME trip to the A&P Show. Thank you so much to<br />

all the parents who helped out and made the trip possible. Some of<br />

our highlights from the day were:<br />

• Face painting<br />

• Trailer tours: we got to sit in a trailer that was being pulled around<br />

by a tractor and get a tour of the show<br />

• Balloon animals<br />

• Sports Susan: she performed for us while we ate our lunch. She<br />

could ride a unicycle, do tricks, dance and crack jokes. We were<br />

lucky to have Zach called up on stage to be a helper. Zach really<br />

involved himself and made the show all the more entertaining<br />

• Wood Chopping: it was amazing how quickly some people could<br />

chop through blocks of wood<br />

• Freebies: lots of lollies, hat, beanies etc<br />

• Farm animals: we got to see sheep, rabbits, goats, bees and ducks<br />

• Motorbikes<br />

• Dog Trials: we were very impressed by all the tricks that the dogs<br />

could do, herding sheep, weaving between legs, riding skateboards, jumping through hula hoops<br />

Water Safety. Sounds boring...it wasn’t!<br />

Ye-Young - I really enjoyed the water safety activities. The one activity that I enjoyed the most was<br />

when we got to get under a flipped boat. I enjoyed it because it was very exhilarating. Another thing<br />

that I really enjoyed was when Mr Brown was spraying us with a hose, it was really funny. I am really<br />

thankful to the instructors that taught us and also for the people who fundraised for us so that we<br />

could do water safety. I hope that when I go to high school there will be similar activities.<br />

Hannah - I really liked the swimming. My favourite day so far has been Thursday because we got to<br />

wear lifejackets and use the boats. I liked going under the boat. It was fun jumping into the pool and<br />

just floating back up.<br />

Annabel - I have really enjoyed swimming for the<br />

whole week. My favourite part was when you had your<br />

life jacket and you would jump in and then the guy<br />

would push you all the way down to the bottom of the<br />

pool and then you would float back up and swim to<br />

the other end.<br />

Taylor - The first day of swimming was kind of boring<br />

because we just did lengths. The second day was better<br />

because we got to do manus and bombs. The third and<br />

the last days were the best because we got to use boats<br />

and learn how to survive if the boat was turned over.<br />

Eco-Warriors success at the National Finals<br />

From 1 - 3 November the Oaklands Eco-Warriors team competed at the National Finals of FPSNZ<br />

in Auckland.<br />

It was a busy weekend and the team (Thomas White, Ben Hanson, Charlie Barnes, Keisha Byrne, Isis<br />

McKenzie and Max McAlister) demonstrated the Oaklands CARE values very well. They were required<br />

to set up a display board outlining their project and were interviewed by a panel of judges. On Saturday<br />

night they shared their project with over 200 students, teachers and evaluators.<br />

We were very excited when the judges announced that<br />

we were Junior National champions in our category of<br />

Community Problem Solving for the second year in a row. We<br />

were even more excited when they said we had qualified for<br />

the International competition in America in 2020.<br />

The Eco-Warriors are passionate about making Oaklands<br />

School a plastic free lunch school. This term we will be having<br />

draws at our school assemblies for students who bring plastic<br />

free lunches. There will be some great prizes. We will also be<br />

presenting our ideas for rubbish & recycling systems for our<br />

new hubs to the Board of Trustees and we are busy preparing<br />

a display for the school gala where we will share recipes and<br />

resources to support plastic free lunches

The most perfect sticky glaze<br />

is slathered all over this juicy,<br />

tender, baked Brown Sugar<br />

Mustard Glazed Ham, with<br />

crisp edges and an incredible<br />

flavour<br />

Mustard-Glazed Ham<br />

Ingredients<br />

4-5kg bone-in fully cooked ham<br />

½ cup water<br />

½ cup unsalted butter<br />

1 cup brown sugar<br />

½ cup honey<br />

2 tablespoons Dijon mustard<br />

¼ teaspoon ground cinnamon<br />

¼ teaspoon ground cloves<br />

4 cloves garlic, smashed<br />

Directions<br />

Preheat the oven to 150 deg<br />

C. and arrange a rack in the<br />

lower third. Remove any plastic<br />

packaging or netting from the<br />

ham. Trim away the rind and<br />

discard. Set the ham aside to rest<br />

at room temperature for 1-2hr.<br />

Line a baking tray or dish with<br />

several sheets of aluminium foil<br />

or baking paper if you prefer (it<br />

will make clean-up a lot easier).<br />

Remove the rind or skin of<br />

the ham, ensuring you leave the<br />

fat on. Using a sharp knife score<br />

a 2-3cm wide diamond pattern<br />

(don’t cut more than 5mm deep)<br />

over the entire ham. Place the<br />

ham in the baking tray; pour ⅓<br />

cup of water into the base of the<br />

pan and cover the ham with two<br />

pieces of foil or baking paper and<br />

bake for 30min.<br />

Meanwhile, heat the butter<br />

in a small pot or saucepan<br />

over medium heat until golden<br />

browned. Add in the brown sugar,<br />

honey, mustard, cinnamon and<br />

cloves, stirring to mix together<br />

well until the brown sugar has<br />

completely dissolved, (about<br />

2min).<br />

Reduce heat to low and add in<br />

the garlic. Allow it to become<br />

fragrant, cooking for a further<br />

minute or two until the glaze<br />

just begins to simmer, then<br />

set it aside and let cool to<br />

lukewarm (the glaze should<br />

be the consistency of roomtemperature<br />

honey).<br />

After 30min baking time,<br />

carefully remove the ham from<br />

the oven and increase the oven<br />

temperature to 220 deg C.<br />

Discard the foil or parchment<br />

paper and pour ⅓ of the glaze<br />

all over the ham, brushing in<br />

between the cuts to evenly<br />

cover. Return to the oven and<br />

bake uncovered for 15min.<br />

Remove from the oven,<br />

brush with another third of<br />

the glaze and some of the pan<br />

juices, and repeat again after<br />

15min more minutes of baking<br />

until a dark golden-brown<br />

crust has formed, (about<br />

30min total). For added depth<br />

of flavour, mix some of the<br />

ham pan juices together with<br />

the glaze in the pot which will<br />

help keep it runny enough<br />

for brushing. If your crust is<br />

still pink after there suggested<br />

baking time, turn on your<br />

broiler (or oven grill), and<br />

allow it to broil for 2-5min,<br />

while keeping an eye on it so it<br />

doesn’t burn from the sugar.<br />

Let the ham rest 10-20min<br />

before slicing.<br />

NOTES<br />

If your glaze has been over<br />

simmered and begins to<br />

thicken between each baste,<br />

add some of the pan juices to<br />

it and heat it up over low heat<br />

until it warms through and is the<br />

consistency of warmed honey.<br />

How to remove ham rind<br />

1<br />

1. Cut a line through the skin<br />

all around the shank end.<br />

2. Insert a sharp knife between<br />

the rind and fat and run it<br />

along to detach the rind.<br />

3. Using your fingers, gently<br />

separate the rind from the<br />

fat, insterting your hand<br />

deeper into the ham to keep<br />

detaching it.<br />

4. Peel off and discard the rind.<br />
