something very special about the last six weeks of every year.<br />

We prepare to visit or host family from near or far, we enjoy<br />

shopping for people we love, we become more aware of those<br />

Santa landing at Old School Square (12/5) that was named the best<br />

tree in Florida by Travel and Leisure in 2016, the Annual Boat Parade<br />

(12/13), the Comic-Con Holiday Parade (12/14), the Grand Menorah<br />

Lighting at Old School Square (12/22), and a Family Friendly New<br />

You’ve come a long way Delray! In the 80s for holiday festivities<br />

we had to drive north to Lantana or as far south as Fort Lauderdale.<br />

Now, thanks to the amazing people in the Downtown Development<br />

Authority and the Community Redevelopment Agency, Old School<br />

Square, and the many volunteers that live in and love our City by the<br />

Sea, we are proud to have our own.<br />

Bill Branning, our <strong>December</strong> City Person has had a hand in<br />

growing and developing Delray Beach into what it is today. He is<br />

a 7th generation Floridian, tracing his family back to 1815 and<br />

settling in Middleburg, Florida! You cannot go anywhere in Delray<br />

without running into a project that Branning has built. He has served<br />

as Chairman of the Board on both Old School Square, the Delray<br />

Beach Chamber of Commerce, and on the board for the Community<br />

Redevelopment Agency for ten years – amazing!<br />

Women Built”For Habitat for<br />

Humanity<br />

Boca West Country Club presented keys to a new Habitat for<br />

Humanity home to the deserving mother and daughter team,<br />

Ilomane Brivaus and Jessie Demesmin, whose dream home is located<br />

in Delray Beach. The team of <strong>2019</strong> Women Builders led<br />

by co-chairs Beverly Raphael Altman and her daughter Robyn<br />

Raphael-Dynan were made up of more than 125 women who<br />

took meaningful action, fundraised, and advocated for good, affordable<br />

housing for those less fortunate.<br />

This is the tenth house that Boca West Country Club members<br />

have sponsored for Habitat for Humanity of South Palm<br />

Beach County, providing affordable homes earned by a hardworking<br />

on the value of the 2017 grant which bought robotics<br />

technology for elementary and middle school students. The<br />

charity poker tournament drew 30 men who competed for<br />

grand prizes including free nights in Delray’s new Marriot<br />

Courtyard, shows at the Arts Garage and Old School Square,<br />

dining at Harvest Grille, Seasons 52, and Morton’s Steak<br />

House, as well as fine wines, and sports memorabilia.<br />

My name is Giovanni Roselli. I have been in the<br />

fitness industry for 14 years, and currently work<br />

at Purlife Fitness Centers in Delray and Boca. Like<br />

many Floridians, I am a recent transplant from New York.<br />

Previously, I was a Tier 4 Coach, Group Fitness Instructor,<br />

and Master Instructor for Equinox, having traveled nationally<br />

teaching their education curriculum. I have also worked<br />

for Nike as a Master Trainer and content consultant, most<br />

notably having produced exclusive content for their NTC<br />

Training app. In addition to my work at Purlife, I provide<br />

continuing education throughout the country to personal<br />

trainers and speak at corporate wellness events. At Purlife,<br />

you will often see me training clients using my favorite<br />

pieces of equipment: Kettlebells, TRX, and ViPR PRO. My<br />

wife Stacey is the founder of The Reading Village, a private<br />

tutoring company specializing in teaching reading to dyslexic<br />

children. We have a wonderful two-and-a-half year old<br />

daughter Juliet Rose, and we enjoy the strong culture and<br />

community here in Delray and Pineapple Grove. My family<br />

frequently visits Old School Square and we enjoy eating<br />

Now that Delray Beach is a rising star in the art, culture and social scene,<br />

it might seem a little difficult to find affordable activities, shops or<br />

restaurants. I am here to prove you wrong. Delray Beach<br />

offers a mix of high-end boutiques with laid-back<br />

restaurants, and events for the whole family or<br />

nightclubs for night owls. Here is what you can do<br />

in Delray Beach in <strong>December</strong> for $50 or less.<br />

Yes, we are all entitled to life and liberty, freedom of expression,<br />

and more, but let’s not forget about the basic human<br />

right and need to eat. <strong>December</strong> is Human Rights Month and<br />

while we’re all focused on parties and presents, let’s make sure to<br />

take time out to support those who need it most. The Fourth Annual<br />

Empty Bowls Delray Beach event is presented by The Palm Beach<br />

County Food Bank and is back again looking for support. This grassroots<br />

event raises money for hunger relief in Palm Beach County<br />

and invites the public to “eat simple, so others can simply eat.” Old<br />

School Bakery provides rustic breads and more than 30 local chefs<br />

donate their signature soups, all served by local celebrities. Guests<br />

share in a simple meal of bread, soup and water, and will receive a<br />

unique bowl to take home as a powerful reminder of all the empty<br />

bowls in the community. Local schools have also chosen to participate<br />

and will be selling bowls that local students have made in an<br />

extra effort to raise funds for the cause. Empty Bowls is held on Sunday,<br />

<strong>December</strong> 8 from 11am to 2pm at the Old School Square Pavilion,<br />

It might sound like beer and rewards go together, but this is a<br />

match made in hop heaven. <strong>December</strong> is Safe Toys and Gifts<br />

Month and while the good people at Old School Square aren’t<br />

raising money for toys for kids, they are raising money for free community<br />

programming in Delray Beach, so bottoms up to support all<br />

in. The Second Annual Winter Craft Beer Garden is held Saturday,<br />

<strong>December</strong> 21 and you and every single person you know are invited<br />

to get together and enjoy craft beer from tons of local and national<br />

vendors. You’ll be hoppy to drink local seasonal favorites from Barrel<br />

of Monks Brewing, Green Man Brewery, New Belgium Brewing,<br />

Stone Brewing, M.I.A. Beer Company, and more, and there’s even<br />

a full bar for those who aren’t into beer. The event is held around<br />

the base of the 100-foot Christmas Tree so it’ll feel uber festive and<br />

almost like a pre-Christmas party with your community. Enjoy the<br />

party with $5 drink tickets or go really festive and opt for the $15<br />

branded beer stein with the first pour included. There will also be a<br />

is National Write a Business Plan Month and the<br />

good people at the Creative Arts School at Old School Square<br />

have done all the hard work for you, so all you need to do is<br />

show up and pay attention. They are hosting a How to Publish<br />

lecture and discussion where you’ll learn about what’s happening<br />

in the publishing industry, understand the difference<br />

between traditional publishing and self-publishing, and how<br />

to keep informed. Instructor Barbara Cronie will dive into<br />

the procedure about how to get published, how to write a<br />

query letter, the importance (or not) of the proposal, needing<br />

an editor and agent, and the importance of a platform. She<br />

believes that the times are changing and it’s important to be<br />

informed, so take advantage of this great class. Here’s to taking<br />

Witches Of Delray Reach Record Breaking Numbers<br />

The 8th Annual Witches of Delray<br />

is pleased to announce it<br />

has reached a record-breaking<br />

number of riders. On Saturday, October<br />

26th, the Witches of Delray flew through<br />

Downtown Delray Beach with 300 riders<br />

and raising $16,000!<br />

Witches from all over joined the annual<br />

ride that has become a growing tradition<br />

in Downtown Delray Beach. The<br />

Witches started the 3-mile route east<br />

down <strong>Atlantic</strong> <strong>Ave</strong>nue to A1A and back<br />

west down <strong>Atlantic</strong> <strong>Ave</strong>nue where they<br />

concluded at the Delray Beach Green<br />

Market. Special thanks, for escorting and<br />

keeping our Witches safe, to the Delray<br />

Beach and Boynton Beach Police Departments,<br />

and the Palm Beach County Sheriff<br />

Department.<br />

Witches of Delray chairwoman, and<br />

Alpha Witch, Andie DeVoe couldn’t have<br />

been more thrilled with this year’s turnout<br />

Arthritis and Chiropractic<br />

Arthritis - we’ve all heard of it, and it affects some if not most<br />

of us. Arthritis has many forms and conditions, but for the<br />

purposes of this article we are talking about osteoarthritis.<br />

Osteoarthritis or OA is defined as the degeneration of joint<br />

cartilage and the underlying bone, most common from middle<br />

age and onward in life. This can happen in any joint, but<br />

here we will specifically address OA of the spine.<br />

Quick anatomy lesson, we (humans) have 7 cervical, 12 thoracic,<br />

and 5 lumbar vertebrae and in between each one of those vertebrae<br />

is a disc. These discs have two parts. The inside is a gelatinous<br />

material called the nucleus pulposus and the outside portion<br />

of the disc is called the annulus fibrosis. The annular material is a<br />

strong durable material that bonds to the top and bottom of the<br />

vertebrae that it is in between. These discs act as the shock absorbers<br />

of the spine. Just like in your car, these wear out after lots of<br />

miles or improper use. Improper use can occur due to poor biomechanics,<br />

poor posture, overuse, or even injury. The discs are a very<br />

viscous material and need movement in order to get their nutrition<br />

and hydration. If the spine is injured, or biomechanics are altered,<br />

the discs are not getting their proper nutrients and hydration, they<br />

dehydrate or degenerate. When this happens, you have degenerative<br />

disc disease.<br />

When the disc is degenerated and dehydrated, the body views that<br />

as unstable and locks down the muscles around the joints, and protects<br />

the spine by laying down more bone, creating osteoarthritis.<br />

There are other concerns in this process as well. During the degeneration<br />

process, the likelihood of developing disc herniation is<br />

increased as well as an increase in symptoms such as sciatica. How<br />

can this be treated? First and foremost, MOVEMENT is the key to<br />

life. Stretching, going to the gym, going on walks, getting out and experiencing<br />

this beautiful country of ours is going to help keep those<br />

joints lubricated. For the spine, getting adjusted will introduce motion<br />

to the joints that are stuck in the protective mechanism we<br />

talked about earlier. It will also help rehydrate the discs over time.<br />

For disc herniation, non-surgical spinal decompression is the<br />

most aggressive conservative treatment that can be done to help<br />

with herniations and sciatica. Coupling spinal decompression<br />

with Class IV laser therapy will bring more healing properties<br />

into the joints.<br />

Facial plastic surgeons are typically double board certified in<br />

Otolaryngology/Head and Neck Surgery (ENT) and Facial Plastic<br />

Surgery. One important distinction is the fact that a significant<br />

percentage of ENT residency training alone, which lasts 5<br />

years, is also dedicated to facial plastic and reconstructive surgery<br />

and most ENT surgeons are already well versed in the tenets<br />

of facial plastic surgery. Therefore, the one year fellowship<br />

training in the area is even more specialized. Dr Grunebaum<br />

completed her fellowship at the University of Miami in 2007<br />

and was hired immediately on faculty where she remains in<br />

a teaching position.<br />

Dr Grunebaum focuses her cosmetic surgery practice<br />

on facelifts and rhinoplasty. She feels that patients<br />

may be averse to the term “facelift” and seek a “neck<br />

lift” but she explains “neck lift” is in some ways a misnomer.<br />

“Realistically”, she says, “there is actually<br />

no such thing as a “necklift” which doesn’t require<br />

surgery above the neck to hide scars and<br />

take a mature face to a more youthful contour!”<br />

In addition, when it comes to rhinoplasty, she is<br />

highly focused on BOTH form AND function. “I<br />

don’t make pretty noses that don’t breathe well.”<br />

she states. She goes on to clarify “a large portion of<br />

my rhinoplasty practice has focused on taking care of<br />

and treating patients who have experienced the negative<br />

phenomenon of an operated nose that has poor breathing function.<br />

I am specifically trained to help avoid this problem.”<br />

The remainder of Dr Grunebaum’s surgical work is in the area<br />

of complex head and neck cancer reconstruction and skin cancer<br />

reconstruction. “While cancer is a devastating diagnosis for many<br />

of my patients, it is an honor to be trusted to help my patients<br />

through this difficult journey and to do my best to restore all areas<br />

of the face. The tenets of cosmetic facial surgery make me better<br />

at being a reconstructive surgeon and vice versa. Having the<br />

Dr Grunebaum is an expert in minimally invasive cosmetic injectables<br />

Cigars and Longevity<br />

Celebrating birthdays is an American tradition.<br />

Whether a person or a business, each year is an<br />

auspicious time to mark ones’ time in existence.<br />

At Puro’s Cigar Shop this philosophy has become part of their<br />

legacy. Each year the Puro’s family descends onto the parking<br />

lot outside their shop in <strong>Atlantic</strong> Plaza and celebrates<br />

life, love and the art of smoking great cigars.<br />

This year was no different.<br />

The Puro’s family is not just made up of relatives, but includes<br />

loyal customers, cigar representatives and owners Lisbeth, Eduardo,<br />

and Jesus. This year was even more auspicious because Jesus’s<br />

wife Carolina brought their newborn baby to round out the ageless<br />

quality of earthly enjoyment.<br />

“I love it here. It’s so casual and there is intelligent conversation<br />

between people from different walks of life and different countries.<br />

It’s very mentally stimulating,” said Dave Horowitz, who has been<br />

coming to Puro’s for eight years.<br />

Horowitz isn’t the only person who relishes their time at Puro’s –<br />

whether the annual fete or weekly pilgrimages. Bernie Naekel goes<br />

almost every day to smoke a cigar and experience the camaraderie<br />

and comfort of Puro’s. “The owners are such nice people and everyone<br />

here is so down-to-earth.”<br />

Norm and Elaine Hecht subscribe to the same brand of familiarity<br />

and friendship at Puro’s. “The camaraderie of the owners – regardless<br />

of age or income – is so sweet. There is no arrogance here,”<br />

said Norm.<br />

You could say the Puro’s devotees are like one big happy family.<br />

Most everyone agrees if there is a solution to world peace it would<br />

most likely be found at Puro’s. The Monday after the Anniversary<br />

party, the patio of this wood paneled cigar shop was filled with cigar<br />

lovers reminiscing about the party and the annual raffle that<br />

gets everyone excited.<br />

“All the regulars come to smoke cigars and hang out on the patio<br />

and talk about the party each year. It’s a tradition as rich and diverse<br />

as the party itself,” said Lisbeth, the matriarch of the Garcia<br />

family.<br />

Her husband Eduardo is the corner to the golden box that fills the<br />

space with good vibes and cigar precision. “I often ask what cigar<br />

I should smoke, and the owners of Puro’s always come up with a<br />

great recommendation,” said Claudia Marquez, who attended the<br />

party with her boyfriend Chris Bergman.<br />

Chris has been coming to Puro’s for ten years. He was walking<br />

by one day and noticed the good vibrations and conversation by<br />

happenstance. “I did not know anyone (or anything about cigars)<br />

when I first came here, but very quickly I became part of their family.<br />

They actually care.”<br />

Tony Visone, a restauranteur and Puro’s fan, stood up and<br />

watched all the action from an aerial view. His smile lit up the space<br />

he inhabited, and he commented on the congenial crowd and ethereal<br />

beauty of the Garcia family.<br />

While the conversation and live music set the stage for celebration<br />

the Garcia family brought out (and served) chicken, sausage,<br />

and skirt steak kabobs, potato salad and empanadas. There was an<br />

open bar and a raffle where guests won items like a golf bag, humidor,<br />

cutter, cigar packages, T-shirts and other goodies.<br />

In its 10th year in business Puro’s shows no signs of slowing<br />

down. Their customers love the ambience, the loyalty and the premium<br />

cigars that abound from all sides.<br />

by the Cuban cigar tradition and is blended with fine fillers and<br />

binders from Nicaragua.<br />

mouthwatering notes of chocolate, sweet spice, toffee and caramel.<br />

Finding Sanity<br />

A Birthright<br />

I’ve mounted a small framed plaque on my office wall. It says:<br />

“Peace. It is not the absence of noise, trouble or hard work. It is to be in<br />

the midst of those things, and still be calm in your heart.” An anonymous<br />

saying likely created by someone familiar with the practice of<br />

prayer or meditation...creating moments of stillness, during which it<br />

is possible to find the strength and sanity we need to carry on. For<br />

our children. For our tribe. For ourselves. For the planet.<br />

Who’s Talking?<br />

Dan Harris, commentator, in his great little book “10% Happier”<br />

talks about meditation this way: “...lying in bed at night, I realized<br />

that the voice in my head—the running commentary that had dominated<br />

my field of consciousness since I could remember—was kind of<br />

an asshole.” Noted by Buddha thousands of years ago, our jumpy,<br />

impatient thoughts can drive us crazy, especially under stress.<br />

Harris details his experience of observing those thoughts with an<br />

intent to be free of them. He realized that often our thoughts are<br />

in the future or the past, rarely leaving room for experiencing the<br />

present moment. Steeped in fear, worry and regret, we get caught<br />

up and forget we can set them aside. Easier said than done.<br />

It Takes a Practice<br />

I learned mediation in college. An antidote, I think, to my roaming<br />

ADHD mind. Thinking of so many things randomly made me fidgety<br />

and impatient and difficult to concentrate. It was hard on relationships<br />

because it made it hard to pay full attention to anyone. My impulsive<br />

thoughts and scattered nature led to depression and excessive<br />

drinking more often than I was comfortable admitting.<br />

Competitive college swimming was a great experience of being<br />

good at something I loved and at the same time soothing. The pool<br />

became another world of “present-sensory” delight. I learned yoga<br />

and stretching to balance the stress of twice-per-day workouts. I<br />

dabbled in meditation, calming my mind and controlling my body.<br />

I got faster in the pool. I walked more peacefully through my life.<br />

Long Lasting<br />

I have long relied on this “meditation” skill to stay centered, to<br />

accept so much I can’t change and to be happier than without it. I<br />

dropped the formality. My teachers called it “just sitting.” No spiritual<br />

trappings, no cosmology. Not even Buddhism. Just sit. How?<br />

How to<br />

Give yourself privacy 5 minutes daily for the next few days. Do<br />

this and notice the changes...<br />

1. Set your timer. Make the alarm soft.<br />

2. Sit comfortably. Get a firm cushion.<br />

3. Close your eyes...or let your gaze become soft into the distance.<br />

4. Don’t control the breath; simply breathe naturally.<br />

5. Focus on the breath and the movement of your belly with each.<br />

6. Be patient with distraction. This isn’t failure. It’s practice. Just<br />

bring your thoughts back to your breathing and relax.<br />

There are a number of good apps that can help like Calm, Insight<br />

Timer and Headspace.<br />

Building Our Future<br />

If Bill Branning were an antibiotic there would be too much healthy stuff<br />

to fit into one capsule. He is overflowing with knowledge of Delray’s<br />

intricate infrastructure, his peers and the importance of giving back.<br />

Branning has been invaluable to the essence and establishments<br />

that stand beside him. To those who know him – in<br />

both his business and personal life – he is a consummate<br />

builder with a big heart and broad smile who hasn’t stopped<br />

building, both in around Delray Beach since the 80s.<br />

To the matriarch of Old School Square, Frances Bourque, he is<br />

the brightest young man she’s had the pleasure of spending the<br />

last 40 years with to make Delray dreams come true.<br />

Those dreams have been in the Branning family for years. According<br />

to Branning lore, his family came to Florida in 1815. They settled<br />

in Middleburg, Florida and built a church that still stands today.<br />

His father Charley was a mechanical engineer, his uncle was an<br />

electrical engineer and Bill went to University of Florida with a plan<br />

to major in mechanical engineering. But he quickly realized that his<br />

passion was better suited for a degree in Building Construction.<br />

There are a lot of people in Delray who are grateful Branning<br />

followed the building construction path. “I don’t think I’ve seen<br />

anyone work harder than Bill to make Delray a better place. His<br />

work at Old School Square, the Delray Chamber, the CRA and on<br />

city boards has been invaluable,” said former mayor Jeff Perlman.<br />

Branning is also legendary for his expertise in construction,<br />

project management and attention to detail. According to former<br />

CRA Executive Director Diane Colonna, Branning’s expertise in<br />

construction and budgeting were invaluable to them as they tackled<br />

ambitious programs and infrastructure projects.<br />

“He helped us avoid pitfalls in project bidding and management<br />

and helped to ensure that the agency got the best product for its<br />

money. He did all of this on a volunteer basis, spending hours reviewing<br />

specifications and budgets. The CRA and the City benefited<br />

greatly from Bill’s contributions.”<br />

It makes sense that Branning would have a stake in the land that<br />

sits beneath his feet. He is a 7th generation Floridian who grew<br />

up in North Palm Beach and Miami. His grandfather Percy was a<br />

boat captain born on Datura street in West Palm and his greatgrandfather<br />

was a banker on Clematis Street.<br />

Bill is revered for his expertise in the building business and<br />

is President of BSA Construction Company situated in a historic<br />

house in downtown Delray. He was involved in the original renovation<br />

of the Sundy House, the historical restoration of the Cornell<br />

Theatre, the relocation of the Historical Society offices and other<br />

building projects that define Delray Beach.<br />

He has also been a fixture in boards and organizations around<br />

Delray. He spent 10 years as a board member of the<br />

Delray Community Redevelopment Agency (CRA), was Chairman<br />

of the Board of Old School Square (for four years) and is the outgoing<br />

Chairman of the Board of the Delray Chamber of Commerce.<br />

His life has been a kaleidoscope of projects sprinkled all over<br />

the city and boards that oversee its excellence. Branning was on<br />

the SPRAB Board, Historical Preservation Board, Parking Management<br />

Advisory Board, Historical Society Board and Chair of the<br />

Associated General Contractors of America WPB chapter.<br />

Though he has dedicated endless hours to volunteering on<br />

boards and committees in Delray, he sees its inherent benefit.<br />

“Volunteer members of the community create the fabric of who we<br />

are as a city. It’s important to be a part of the process of creating<br />

the vision and helping achieve goals that move Delray forward.”<br />

Branning is a man of his word. “Bill is dedicated and loyal to<br />

his community, his friends and family. He inspires and encourages<br />

everyone - but when he raises his shoulders, opens up his<br />

arms and puts on his captivating smile, you know you have been<br />

‘BRANNING-ed,’” said Bourque, the founder of Old School Square.<br />

Part of the Branning allure is his positive outlook and adventurous<br />

nature. When not at a committee meeting or construction site<br />

he can be found wandering the globe. His passion is travel and he<br />

gleefully describes his recent trips outside the confines of his immediate<br />

homestead.<br />

When asked about his favorite places to travel he quickly replies:<br />

“I have a lot of favorite places, but I really love adventuring<br />

and discovering new places.”<br />

Those places this year include the New Orleans Jazz Festival,<br />

Puerto Rico and the California wine country. It is often said that<br />

a solid life is made up of work and play, and Branning seems to<br />

embody this philosophy. His generous spirit and intelligence are<br />

like frames to the picture that fills it.<br />

His friend Roger DeCapito has always known that about Branning.<br />

“Bill is an amazing businessman and friend. He finds time to<br />

volunteer at Old School Square, the Chamber, and boards around<br />

town, yet still finds time for friends and customers. He is a great<br />

contractor with a big heart.”<br />

When it comes to the Chamber Branning is leaving the helm<br />

with great confidence in its future. “I’m excited about our change<br />

in leadership. Since we brought Stephanie Immelman aboard as<br />

CEO, the Chamber’s value to its members has improved greatly.<br />

Programs have been reworked, marketing and messaging has<br />

been refocused and we are serving our membership more effectively<br />

than ever.”<br />

Seeing positive growth is paramount in Branning’s life. But others<br />

see the foundation of its pouring. “Bill is honest - and this honesty<br />

shared with love and encouragement makes you become the<br />

best you can be,” adds Bourque.<br />

1. Preheat oven to 350° and line two cookie<br />

sheets with parchment. Cream butter and<br />

sugars until light and fluffy, 3 to 4 minutes.<br />

Mix in egg and vanilla.<br />

2. In another bowl, whisk together flour,<br />

cornstarch, baking soda, and salt, then add<br />

mixture to wet ingredients and mix until<br />

smooth. Dough will be thick.<br />

3. Using a small cookie scoop, place<br />

ingredients<br />

FOR THE COOKIES<br />

3/4 c. (1 1/2 sticks)<br />

butter, softened<br />

1/2 c. packed brown sugar<br />

1/2 c. granulated sugar<br />

1 large egg<br />

1 tbsp. pure vanilla extract<br />

2 c. all-purpose flour<br />

2 tsp. cornstarch<br />

tablespoon balls of dough onto parchmentlined<br />

cookie sheets. Press down lightly on<br />

each cookie to flatten slightly. Bake until<br />

edges are just starting to brown, 9 to 10<br />

minutes.<br />

4. Remove from oven and let cool 2 to 3<br />

minutes, then transfer to a cooling rack to<br />

cool completely.<br />

5. Make frosting: Beat cream cheese until<br />

1 tsp. baking soda<br />

1/4 tsp kosher salt<br />

FOR THE FROSTING<br />

1 (8-oz.) block cream<br />

cheese, softened<br />

1 1/4 c. powdered sugar<br />

1 tsp. pure vanilla extract<br />

1/4 c. granulated sugar<br />

smooth. Add powdered sugar and vanilla and<br />

mix until smooth.<br />

6. Put sugar into a small bowl. Spread about<br />

a tablespoon of frosting onto tops of each<br />

cookie, then press into granulated sugar,<br />

coating frosting with sugar.<br />

7. Just before serving, use a kitchen torch to<br />

caramelize sugar on top, then set aside to cool.<br />

Store cookies in the fridge for up to 4 days.<br />

Seafood Al Cartoccio<br />

‘Al cartoccio’ is the Italian way of saying ‘cooked in a bag.’ In this recipe<br />

we will cook the salmon and seafood in a foil pouch. This is one of the best<br />

ways to cook fish. Cooking “al cartoccio” is quick with an easy clean up.<br />

ingredients (serves 4)<br />

4 - 4oz Salmon fillets<br />

1lb Shrimp<br />

12 Calms<br />

12 Mussels<br />

12 Cloves of garlic, sliced<br />

1tsp Salt<br />

1tsp Oregano<br />

1 Pinch red pepper flakes<br />

4 Tomatoes, diced<br />

1oz Extra virgin olive oil<br />

1cup White wine<br />

1cup Fish broth<br />

1cup Marinara sauce<br />

12 Basil leaves julienned<br />

Juice of 1/2 lemon<br />

directions<br />

Preheat oven to 450 degrees.<br />

Using a large sheet of aluminum foil, line a baking dish.<br />

Place all fish in the center and brush with olive oil.<br />

Combine remaining ingredients and pour over fish.<br />

Fold the foil to form a pocket and hold in all liquid.<br />

Bake in oven 7 minutes, or longer for a well done fish.<br />

Remove from oven and let rest for 5 minutes.<br />

Open pouch carefully to avoid steam.<br />

Serve with crusty bread and pasta al dente.<br />

When looking at the history of our canine family members,<br />

evidence shows that they’ve existed for over 20,000<br />

years. Our feline family members adopted us 10-12,000<br />

years ago. Yes, our pets have been with us for a long time. In our<br />

never-ending quest for optimal health for our furry companions,<br />

and so much more. We don’t have control over the air and have<br />

limited control on our water supply, however we can control what<br />

we use in our homes, medications and food.<br />

Our focus in this article is to guide on how to ensure optimal<br />

health for your pets. Besides limiting exposure to toxic, harmful<br />

chemicals and substances, the healthiest regiment is to provide the<br />

cleanest, species appropriate foods available.<br />

Our pets entered mankind in a period that is referred to as the<br />

Paleolithic era, which dates from approximately 2.5 million to up<br />

until 10,000 years ago. Our pets, from their initial contact with<br />

humans and adapting to us in modern times, have had to undergo<br />

many changes including exposure to toxic, harmful, and processed<br />

foods. During the Paleolithic period, humans ate lean meats, fish,<br />

fruits, vegetables, nuts and seeds obtained by hunting and gathering.<br />

Pets’ diets were the same.<br />

What was the actual diet of our pets’ ancestral Paleolithic era? As<br />

carnivores, it would be animal-based foods. Cats are obligate carnivores.<br />

That means they need only animal-based foods. Canines<br />

are opportunistic carnivores. That means more scavenging. They<br />

will eat outside the animal-based diet only to balance their needs.<br />

Today’s modern diets for our pets contain ingredients that are<br />

mostly grains, legumes, and large amounts of processed ingredients<br />

which are not even close to their ancestral Paleolithic foods.<br />

They are complemented with synthetic, foreign-made nutrient<br />

additives that are not even available to the body through the natural<br />

digestive process. Is it any surprise that our modern pet family<br />

has many more health issues than their wild, natural cousins? Statistics<br />

show that dogs are the number one cancer and toxic animal<br />

on earth. There is a reason and a solution.<br />

We feel that our carnivore pets deserve to be fed biological and<br />

species appropriate foods that are part of their ancestry. Our values<br />

need to respect the natural order of their biological needs. We<br />

understand that meat diets can be more costly than filler-based<br />

diets. Starting with a natural basic food program can prevent unnecessary<br />

health issues. Going back to what would be called a<br />

Paleo Diet, we advise research, evaluate all the life changing improvements<br />

that your pet experiences, and then decide.<br />
