Elsa has fond memories of her
childhood, growing up in the
small town of Klerksdorp. “I was a
real tomboy and I loved spending
time outdoors, going on little
adventures. I grew up in a home
with a very creative mother who
was always making something look
pretty. Her biggest passion was for
entertaining and spoiling her guests.
Unfortunately, I did not inherit her
love for entertaining, but my sister
certainly did - she is a real master
chef and also creative. Funnily
enough, I landed up with a very
successful coffee shop, The Flower
Cup, even though I can hardly fry an
egg.
“I’ve always been a business woman
with a dream to retire at the age
of fifty. At this stage, it seems like
I will never retire though as I keep
taking on more and more! There is
something about the adrenaline in
the business world that lights me
up. I have been working in business
in one way or another since my first
born was six months old and he is
now 22, so that says it all! I started
as a Sales Assistant at Grandiflora
selling and hiring out wedding
dresses. From there, I became the
proud owner of a successful bridal
boutique, GF Bridal Couture. A few
years later I opened a Men’s store,
also in the Multiflora building and
another bridal boutique in Fourways.
At the time we were the leading
bridal boutique in Gauteng. But as
Rich Dad, Poor Dad says, after five or
six years it’s time to sell the business
because once you reach that ceiling,
you will just stagnate.
“As owner of the Multiflora centre my
husband, André de Wit, understands
the industry. The two of us make a
great team and, of course, we both
are workaholics. Sometimes I don’t
know if it’s a good or bad thing.
One day he asked me to help out
at Grandiflora and that year, the
shop had the highest turnover in
eight years, marking the beginning
of my time at Grandiflora. I am so
passionate about this business that
I branched out to help with the look
and feel of the nursery and started

“The best part of my work is I get to
be creative. It allows me to stretch
my mind, do and buy new exciting
things, and to engage myself in a
way which takes me one step closer
to reaching my full potential. And,
of course, travelling overseas to do
the buying is utterly the best! I was
privileged to visit Messe Frankfurt,
the biggest World Trading Show
connecting 23 000 suppliers with
1.4 million potential customers all
over the world. They talk about the
latest trends in décor and introduce
colour palettes for the year. I can
reveal shades of dark pinks and
maroons and also your Tiffany blue
with antique golds and rose gold
are trending along with black, gold
elements and geometric pieces. On
the tropical side, you’ll find lots of
greens, hanging botanical baskets
with ‘feature’ birds a must. Of course,
the vintage look is here to stay,
combined with blue traditional delph

She went on to say, “To be a retail
buyer is not easy because you are
responsible for planning, selecting,
and purchasing large quantities of
goods and then merchandising them
to make sure they sell. I permanently

“Last year, I began importing two
containers and this year, by the Grace
of God we stand on 13 containers
so far. My vision for Grandiflora is to
see it grow, to have agents all over
South Africa and to become a wellestablished
and recognised onestop-shop
that is known for the best
pricing and exclusivity.
My motto is, ‘Get closer than ever to
your customer. So close you tell them
what they need, well before they
realise it themselves!’
“Working six days a week, I try to do
as little as possible on a Sunday. If I’m
at home I enjoy a braai, sipping a gin
with pink tonic, and treasuring time
with my husband and my two boys,
FC and Reghardt.
“On Saturdays or during their school
holidays the boys occasionally help me
out at Grandiflora or The Flower Cup and
I have always taught them the effort you
put in is what you will get out at the end
of the day! Nothing in life that is worth it,
will come easily. Looking back to when
it all began, none of it actually did come
easily but it’s all been worth it!“

Meet the dynamic
optometrist Damien
Bartlett. We sat down with
him and chatted about
the rewards of watching
someone smile when
they receive their first pair
of spectacles or contact
lenses.
“At the age of 11, I received
my first pair of contact
lenses after battling with
an eye condition known
as Keratoconus, which
had gone undiagnosed
from a young age. I was
very myopic but assumed
my vision was normal. My
case was rather unusual for
someone of my age and I was
referred to many optometrists.
Eventually, after feeling I’d
never be able to see properly,
I went to Cape Town where
I was fitted with specialised
contact lenses in the back room of
a contact lens manufacturing lab.
The two optometrists and a lens
manufacturing technician called
Wendy Wilmot, changed my life and
I went home with my new contact
lenses in. I just couldn’t believe what
vision I had missed out on and that
day I made the decision I wanted to

“In 2008 I qualified and graduated
with a B.Tech Optometry degree
from the University of Johannesburg
and began working part-time in one
of the largest optical laboratories in
the city. After this I embarked on student
optometric work at a prominent
practice gaining valuable practical
experience. When my professional
career kicked off I had the ability to
give patients professional and personalised
eye care.”
His practice philosophies have remained
unchanged, as he continues to provide
individualized eye care at ModernEyes

“Growing up in Brackenhurst and attending Alberton High School,
I enjoyed life in the south and had a great group of friends.
I’d say I’m a collector of friends
and I’m still in close contact with all my school and varsity pals.
I have a close bond with my two younger brothers. My middle brother runs
his own trailer engineering and manufacturing business
and my youngest brother is currently in matric at St David’s in Inanda.
Family is important to me. I’ve been married for four and half years to my high
school sweetheart and best friend, Sheri. We haven’t begun
a family yet, but we are definitely in the ‘thinking about it stage’. Presently our
two dogs, a Jack Russell called Gunner and a mini dachshund named Poppy,
fill a little space in our lives but as much as we enjoy them, having children is
something we are both really looking forward to. We love travelling and try
to visit a different country each year, enjoying spending some valuable time
together. I enjoy a glass of good whisky and an occasional poker game with
friends, watching cooking shows on TV and then trying out the recipes. Other
than that I’d say I’m your regular kind of a guy, with a passion for life and looking
forward to making many more wonderful memories.

Ingredients
500ml fresh cream • 1 tin condensed milk • ½ cup Delheim
Pinotage • 2 tbs berry jam • 200g dark chocolate • 5ml Maldon
salt
Method
Pour the wine in a saucepan and simmer until reduced by
half. Let it cool. Melt the dark chocolate, spread it out onto
baking paper and sprinkle the Maldon salt over. Leave until it
hardens and break up into pieces.
Whip the cream in a stand mixer until stiff peaks form.
With the mixer still running, slowly pour in the sweetened
condensed milk.
Gently stir in the Delheim Pinotage, berry jam and salted dark
chocolate. Spoon the ice cream into a freezer-safe container
and freeze for 4 hours or overnight. Serve in an ice-cream
cone with chocolate sauce.
Pork & Fennel Meatballs with Tomato Sauce (serves six)
Love meatballs? We do … and we really
love this new recipe from Spier, who

hearty nuggets with pasta, mashed potato
or crusty bread. They pair wonderfully with

Ingredients
For the sauce: 45ml olive oil • 3 cloves
garlic (crushed/grated) • 2 cans (800g)
whole Italian tomatoes (blitzed to a
smooth pulp) • 10ml (2 teaspoons) sugar •
salt and pepper to taste
For the meatballs:
30ml olive oil • 1 onion (finely chopped)
• 1 fennel bulb (finely chopped, and save
some of the fronds for serving) • rind of a

small lemon (finely grated) • 10ml smoked
paprika • 1kg pork mince • salt and pepper
to taste
Method
Prepare the sauce: Fry the garlic until
golden. Add tomatoes, sugar, salt and
pepper and bring to a boil. Simmer about
15 minutes or until reduced by a third.
Prepare the meatballs: In a wide pan,
heat the oil and fry the onions, fennel and
lemon rind until they are soft and fragrant.
Remove from the heat and transfer to a
mixing bowl, adding the smoked paprika,
mince, salt and pepper. Mix well. Shape
into balls (about 4 to 5cm in diameter).
Using the same pan as before, add more
olive oil and fry the meatballs on all sides
over medium heat until just cooked. Serve
with the warm tomato sauce. Optionally,
serve with pasta/starch of your choice.

We’re planting… Osteospermum
ecklonis ‘Purple Sun’, a new variety with
vivid flowers that announce the beginning
of spring. The blooms feature several
shades of orange that fade into a deep
purple ring at the centre of the flower.
Plants form a compact, well-branched
plant, 25cm high and 40cm wide, with
an abundance of flowers. Grow ‘Purple
Sun’ in full sun and in ordinary garden soil
that’s been well composted. They also look
good in containers and hanging baskets.
In coastal gardens, plants should be
sheltered from the wind. Fertilise in spring
and again in autumn. Water regularly but
don’t over water as the plant can tolerate
moderately dry soil.

AUGUST
• August is a windy month; secure
climbers and stake newly planted
trees. Check the ties of standard roses
and all other standard plants that are
supported by stakes.
• In very cold areas delay winter rose
pruning until the middle or end
of August.
• Increase watering to once a week for
most plants.
• Fertilise all plants. Flowering plants
should get 5:1:5 or 3:1:5 and shrubs
and trees 2:3:2 (or their organic
alternatives). Fuchsias like a nitrogenrich
fertiliser at the beginning of the
season.
• Remove the spent flowers of primulas,
petunias, pansies and violas to
encourage them to keep on flowering.
• Give the lawn its spring treatment.
Rake out all the dead grass and then
cut the lawn with the lawnmower on
its lowest setting. Compacted ground
can be spiked with a garden fork or a
hollow tine fork. Apply lawn fertiliser
and water in well.
• If the lawn has hollows, is uneven or
there are dead patches, level it with
lawn dressing. Fertilise and water well.
• Remove leaves from gutters and
fix any broken ones. Why not call in
a plumber to set up a system that
diverts rainwater from the gutters into
a tank.
• Clean the garden furniture and treat
any wooden garden furniture. Check
with your paint shop for suitable
products.

Coastal escape
Plett ... still (and always will be) the perfect
destination for a mid-year coastal break
With its plush boutiques and
smart complexes, Plettenberg
Bay is hardly a sleepy seaside
village getaway. But, in spite of the
dramatic development that has
taken place in recent decades, the
town remains a shrine to nature’s
bounty. And there’s nowhere
better to enjoy the view than
at the Sky Villa Boutique Hotel,
part of the Cape Summer Villas
Collection.
‘Plettenberg Bay always has the
most wonderful sunrises,’ my
mother tells me, reminding me
of how we used to sit, hands
wrapped round steaming mugs of
coffee, watching a small red ball
slowly climbing the horizon. That
was back in the nineties, when
Plett was our family holiday spot.
And, although much has changed
since then, the grandeur of the
sunrise certainly hasn’t. That’s
what I’m thinking as I watch that
same red ball from my balcony, its
rays refracted in a golden splash
on the surface of the lagoon. Just
beyond this gilded spectacle, the
beach beckons…
It’s no wonder that Plett’s
legendary scenery draws legions
of holidaymakers, local and
international alike. But the same
craggy beauty which makes it
a joy for the eyes also makes for
outstanding exploring. While it’s
tempting to sit and take in that
balcony view, I know there are
even greater splendours beyond
the hotel.
There’s the famed Robberg hike,
for instance – a favourite way for
locals to spend the weekend. The
walk takes you from rocky dunes
(watch out for the views of seals at
play) to a wave-splattered beach.
Then there’s cruising down the
Keurbooms River, where shadow
plays on fynbos-festooned
mountains and amber-coloured
water laps at private beaches. If
ever there was a place that called
you to spread out your towel and

turn off your phone, this would be
it – but, then again, that would be
a wasted opportunity. The smooth,
calm waters also make this an ideal
spot for trying out your stand-up
paddling skills. But if that idea
doesn’t grab you, perhaps the
thought of cruising slowly down
the river, bubbles in hand, will.
Plett’s beaches are also a favourite
party spot for whales and
dolphins. We played tag with them
out on the ocean, and although
the dolphins proved somewhat
shy and elusive, nothing could
beat the exhilarating sensation of
streaming over azure blue waves.
Then there are those boutiques
and bakeries. Those
who love browsing
through interesting
stores will find time
flies as they meander
down Plett’s high
street, refuelling
occasionally with a
flat white and slice
of buttery cake.
As much as all these activities are
food for the soul, there’s just as
much fulfilment to be found at
the hotel itself. It’s as though every
angle and corner of Sky Villa has
been carefully designed to make
you stop and stare – inside the
hotel, a luxe palette of metallics
is offset by moody wallpapers
and floral fabrics. Clearly, this
establishment hasn’t been created
merely as a place to relax; it’s also
intended as a treat for the senses.
The hotel’s gardens are even more
pleasing. Flurries of fynbos make
for a smudgy pastel landscape,
while the vista rolls all the way
down to that sapphire
sea. You can’t blame a
girl for wanting to take
it all in – which is why I
spent much of my stay
at the heated pool on the
rooftop bar. The espresso
martini I’m sipping certainly
doesn’t hurt, either.
The panorama from the
restaurant is similarly
spectacular. That might be the
reason the hotel is fast gaining a
reputation as a favourite breakfast
destination, although it’s the
dinners that really got my mouth
watering. The menu draws on
Mediterranean influences, so
expect plenty of fresh, bold
flavours that pair perfectly with
your coastal location. My all-time
hero dish is Live By Chocolate, a
chocolate experience so densely
delicious it will take care of all
cravings for the next week: think
a duo of mousse, lashed with
butterscotch sauce and finished
off with a dollop of home-made
ice cream. Of course, life isn’t
just about dessert (would that
it could be). I also loved the
avocado and salmon tartare,
with a liberal drizzle of sesame
oil complementing the Asian
complexity of the dish, while the
pork belly received lavish praise
from my companions. A word
of advice – go hungry! Sky Villa’s
portions are generous, to say the
least, and you’ll definitely want to
do them justice.
After just one weekend here, I feel
cosseted and cocooned – and
more than ready to tackle life
below the clouds.
