SHACK EXPRESS – Coffee &<br />

Art is the perfect country-style<br />

eatery for those who want to feel<br />

like they’ve escaped the city while<br />

remaining in it. We can easily<br />

define their food as homely, heartwarming<br />

and belly-filling … the<br />

kind of nosh that is well worth the<br />

drive. We were hugely impressed<br />

by their simple menu – not too<br />

many choices but enough to cater<br />

for everyone’s taste. Smashing<br />

breakfasts, consistently good<br />

coffee, Cheezas, a Shack-style<br />

burger (made with a freshly baked<br />

waffle instead of a bun), gourmet<br />

shakes (think lavender and rose or<br />

coconut Lindt!) and cake tasting<br />

platter are well renowned. A lovely<br />

nursery offers a perfect excuse<br />

to do some plant shopping, not<br />

to mention the home décor shop<br />

– there’s local hand-made and<br />

painted art, antique finds, pots,<br />

concrete décor, chalk paint … the<br />

list is endless! And bring the kids<br />

along – there is a dedicated play<br />

area and loads of space to run<br />

The chicken, fig, halloumi and blue cheese really make this salad sing.<br />

Cheeza with bacon, feta<br />

and peppadew<br />

INGREDIENTS:<br />

1 slice of bread (any of your choice);<br />

250ml grated Cheddar; 45–60ml tangy<br />

mayonnaise; 1 spring onion (green and<br />

white parts), finely chopped; 125ml<br />

chopped bacon; 125ml roughly chopped<br />

peppadews; Danish feta; salt and pepper<br />

to taste<br />

METHOD:<br />

Heat the oven to 160°C.<br />

Fry the bacon until cooked.<br />

Mix the cheese, mayo, spring onion, salt<br />

and pepper well.<br />

Spread a little butter on the slice of bread.<br />

Spoon the mixture onto the slice of bread<br />

as evenly as possible, ensuring that you<br />

cover the bread right to the edges.<br />

Place the bread in the oven for about five<br />

minutes or until the cheese in the centre<br />

starts to melt. Top with the peppadews,<br />

bacon and feta. Garnish with microgreens.<br />
