It’s Pumpkin<br />
Season!!!<br />
Iknow the temperature hasn’t cooled down yet (does it ever?)<br />
but on <strong>September</strong> 23rd we welcome Fall, the season of<br />
PUMPKIN EVERYTHING! As well as baseball playoffs, and the<br />
beginning of football (go Fins, Bucs, and Jags!).<br />
In this issue you will meet Noreen Payne, our <strong>September</strong> City<br />
Person. Diane Feen has dubbed her “Goddess of Goodness” and after<br />
reading her story, you will definitely agree. Her passions include<br />
hunger, children, and helping others – but she does so much more.<br />
She is a wife, a mom, a volunteer, a real estate agent, and…if that<br />
wasn’t enough, the incoming Chair for the Delray Beach Chamber of<br />
Commerce. We need more people like Noreen in the world.<br />
The avocado is such a popular berry (yep – it’s a single seed berry),<br />
that guacamole offered in many restaurants as an appetizer and is also<br />
a staple in gatherings as a dip and spread – so much so that guacamole<br />
has its own National Day, <strong>September</strong> 16th. Look inside for a simple and<br />
delicious recipe because, hey, it’s five o’guac somewhere!<br />

2-1-1 Broward is a live, 24-hour comprehensive<br />
helpline, providing all people<br />
with crisis, health and human services<br />
support and connecting them to resources<br />
in our community.<br />
Knowing where to go is the first step to<br />
getting the help. Every hour of every day,<br />
someone is searching for help or services<br />
– housing, food, financial assistance, relief<br />
from abuse, family issues, depression, childcare,<br />
suicide prevention, etc. Dialing 2-1-1 is<br />
an easy way for people who need help to get<br />
connected with the community service providers<br />
that can help them.<br />

Opportunities for All<br />
St. Paul’s Episcopal Church, 188 S. Swinton<br />
<strong>Ave</strong>., Delray Beach, is pleased to<br />
invite the community to participate in its<br />
Chorister and Instrumental Programs. Participation<br />
is open to the public regardless<br />
of faith tradition. The Chorister Program<br />
includes the Cherub Choir, Jubilate Youth<br />
Choir, and Chancel Choir and is affiliated<br />
with the Royal School of Church Music.<br />
The Cherub Choir, a pre-reading choir<br />
for children ages 4 through 6, meets on<br />
Wednesday afternoons at different times<br />
throughout the year in groups of four<br />
weekly rehearsals. At the end of a rehearsal<br />
cycle, the Cherub Choir sings for the 5pm<br />
Saturday Illuminated Worship service.<br />
The Jubilate Youth Choir, ages 6 and up,<br />
sings monthly during the academic year for<br />
the 10am Sunday service and at special events.<br />
Rehearsals are on Thursdays from 4:30-6pm,<br />
followed by family dinner from 6-6:30.<br />
The Chancel Choir, teen through adult,<br />
sings weekly at the 10:00am Sunday liturgy<br />
and for Choral Evensong and Lessons & Carols<br />
services. Rehearsals are on Thursdays<br />
from 7-9pm and on Sunday mornings at 9am.<br />
St. Paul’s also offers opportunities for teen<br />
and adult instrumentalists. On Saturdays<br />
throughout the year, The Illumineers meet<br />
at 4pm to prepare music for the 5pm service.<br />
On the second Saturday of each month<br />
from 9:30 to 11:30am, The Palm Beach Recorder<br />
and Early Music Society, a chapter<br />
of the American Recorder Society, meets<br />
for directed playing sessions. The group is<br />
open to all players of period instruments<br />
and vocalists as well.<br />

The Greater Delray Beach Chamber of Commerce held the annual<br />
Champions of Education Breakfast on August 8th. The<br />
Chamber Charities Foundation provided $500 Office Depot gift<br />
cards to the Principals of all of Delray Beach’s schools to help<br />
out with school supplies. The Breakfast was sold out with 250<br />
people in attendance bringing together City Officials, Educators<br />
and the local business community. Tony Carvajal, Executive Vice<br />
President of the Florida Chamber Foundation in Tallahassee was<br />
the Keynote speaker.<br />
Kae Jonsons, Director of Development and Community Relations<br />
at the Delray Beach Public Library and Chair of the Chamber’s<br />
Education Committee worked hard with her team to organize<br />
the event. She explains her commitment, “Grade-level<br />
reading, literacy and work-force readiness are critical issues<br />
facing Education today and are concerns of the business community.<br />
The Delray Chamber supports the goals of the Florida<br />
Chamber to have 100% of these children prepared to enter the<br />
workforce and reading on Grade-level.”<br />
Afterwards, an Education Roundtable was held with City and<br />
County officials and the Chamber Education Committee to discuss<br />
ways to collaborate and assist our Delray Schools.<br />

Now that Delray Beach is a rising star in the art, culture and social scene,<br />
it might seem a little difficult to find affordable activities, shops or<br />
restaurants. I am here to prove you wrong. Delray Beach<br />
offers a mix of high-end boutiques with laid-back<br />
restaurants, and events for the whole family or<br />
nightclubs for night owls. Here is what you can do<br />
in Delray Beach in <strong>September</strong> for $50 or less.<br />

is a fantastic time to fall<br />

How To Fix That<br />
“Pain In The Neck”<br />
Neck pain can be, well, a “pain in the neck.” It is estimated that<br />
10% of Americans (that’s 30,500,496 people!) are currently<br />
suffering from neck pain. The traditional treatment prescribed<br />
by physicians utilizing pain relievers, muscle relaxants, rest,<br />
and possible soft collar application is no longer the acceptable<br />
standard of care as this regimen only produces symptomatic relief.<br />
According to a landmark report furnished by the Task Force<br />
on Neck Pain and its Associated Disorders (which can be<br />
found in the peer reviewed medical journal Spine), some of<br />
the most effective treatments for neck pain include manipulation,<br />
mobilization, massage, and exercise. In addition, cutting-edge research<br />
is exposing the benefits of brain-based therapeutic exercises<br />
for the relief and prevention of neck pain due to the brain’s intimate<br />
control of neck muscles.<br />
The neck is the most dynamic part of the spine. Its main functions<br />
are to protect the spinal cord, provide the foundation for the<br />
skull, and act as a bridge connecting the skull with the rest of the<br />
body. However, it has to be flexible enough to allow movement in<br />
six different planes. This makes the neck the most vulnerable<br />
region of the spine to injury. It is lined with a high<br />
concentration of compression sensitive sensors<br />
(joint mechanoreceptors), which when triggered<br />
provide a high powered stimulation to the brain<br />
which is essential for its health. The small muscles<br />
which surround the neck play a large role in<br />
the overall health of the neck. Reflexes generated<br />
in these muscles in response to stretch relay<br />
through a certain part of the brain termed the<br />
cerebellum which then fire back to keep these same<br />
muscles strong. As a result, brain-based therapies<br />
geared towards the cerebellum produce amazing results<br />
concerning the overall stability of the neck.<br />
The most common neck complaints involve<br />
three distinct structures: the disc, the<br />
posterior joints of the spine also known as<br />
the facet joints, and the soft tissue regions<br />
including the ligaments and tendons surrounding<br />
the spine. Injury to the discs<br />
which are found between the vertebrae<br />
and act as shock absorbers will produce<br />
moderate to severe neck pain with associated<br />
pain into the arm and hand. The pain may be relieved momentarily<br />
with elevation of the affected arm over the head. Facet<br />
joint injuries will also manifest as neck and arm pain but may start<br />
without an offensive behavior like a trauma and will typically produce<br />
pain down the outer arm into the hand. Lastly, soft tissue injury<br />
will normally produce localized pain with severe restriction of<br />
movement. Nausea and headache may accompany the pain. This is<br />
commonly found after motor vehicle accidents.<br />
Many new, advanced therapies are combining physical medicine<br />
such as mobilization exercises, stretch/strengthening exercises,<br />
myofascial release, traction, decompression, and nutrition with<br />
brain-based exercises targeting the cerebellum region<br />
of the brain. This approach not only focuses<br />
on the neck structures themselves but also the regions<br />
of the brain that control the deep intrinsic<br />
muscles of the neck producing greater stability.<br />

Threads Are Getting A Lift<br />
Instead of reaching for an injectable filler or scalpel, skilled cosmetic<br />
providers are artistically reshaping faces with a minimally invasive<br />
approach that provides a naturally restored result. Absorbable lifting<br />
sutures are a technological evolution offering men and women an<br />
alternative solution to the universal problem of sagging aged skin.<br />
Becoming increasingly popular are the latest threads called Eurothreads,<br />
which are self dissolving sutures made of biodegradable<br />
polydioxone commonly known as PDO and PLLA which is<br />
Poly-L-Lactic Acid also known as Sculptra. The beauty of threads is<br />
that they can be used to lift sagging tissue and tighten the skin using<br />
a nonsurgical approach. The FDA approved material can also be used<br />
to volumize, smooth and contour areas of the midface and body with<br />
little downtime. What makes Eurothreads unique from other typical<br />
dissolvable sutures is that they have expanded their thread options to<br />

help treat the body such as lifting arms, sagging skin above the knees,<br />
and even buttocks. Smaller threads can be placed in the face and body<br />
to help create collagen and elastin to rebuild the structure and support<br />
of the skin which in return volumizes and corrects imperfections<br />
such as wrinkles and acne scars. Eurothreads have also been made<br />
with specific material such as PLLA to stimulate even more collagen<br />
production than other threads on the market.<br />
The lifting threads have small bi-directional cones or barbs on them<br />
so when placed under the skin the tissue can be maneuvered onto<br />
the thread causing it to “lift.” The threads hold the tissue in place and<br />
causes inflammation to stimulate collagen over time. As the thread<br />
gets reabsorbed the collagen and elastin that was formed will be left<br />
behind. This type of technology not only lifts instantly but then gets<br />
better over the next 12 weeks as collagen is being formed. It provides<br />
a more natural contoured look without the over-filled appearance<br />
that you may get from the overuse of dermal fillers.<br />
Smaller threads can be placed into areas such as the lips to give<br />
a natural enhancement that slightly plumps and redefines your lips.<br />
They also can be placed in areas that have wrinkles or divots in the<br />
skin to build back up the tissue for a smoother appearance such as<br />
smoker’s lines around the mouth, smile lines, cellulite and also acne<br />
scars. When placed in the décolleté or arms that have crêpe thin skin<br />
it is amazing to see how quickly thicker and smoother begins to develop.<br />
Blunt tip threads have been designed by Eurothreads to be<br />
safely inserted in the tear trough all the way up to the lash line to<br />
rebuild the lost tissue or hallowing under the eyes.<br />
A thread lift treatment takes about 30 - 45 minutes to complete and<br />
the recovery is about one to two days. There is typically no bruising<br />
with possible swelling. Mild discomfort can be experienced for up to<br />
two weeks. Results will vary but can last from 18 months to two years<br />
and possibly longer due to the collagen formation.<br />
Eurothreads can be used in combination with fillers, lasers,<br />
and other anti-aging treatments to provide an overall enhancement<br />
and reverse the signs of aging. Rebuilding the<br />
skin’s foundation elements such as elastin and collagen<br />
are the key factors in naturally restoring youth.<br />

Transformation YES!<br />
Thinking about the latest and greatest procedure to change<br />
the shape of your body? Well I’m here to help you question<br />
your decision before you put down that credit card. And I’m not<br />
talking about enhancing your bosom for a perkier look (I’ll be<br />
the first to tell you to go for that), I’m talking about liposuction,<br />
fat transfers, booty implants… all the procedures that promise<br />
a brand new you, and give you the look you always wanted.<br />
Sure, a shortcut seems appealing and<br />
ideal to some, or maybe a lot…but you<br />
may want to think twice before going<br />
under the knife. I’m not against all surgeries,<br />
there are people that have excess skin,<br />
and many that have tried everything (and<br />
tried it the right way) but still need a little<br />
extra help. However, there are some unnecessary<br />
procedures, and what may follow<br />
after choosing them:<br />
1. Regret<br />
There are so many clients that regret having<br />
surgery. After it’s done, there is (usually)<br />
no going back. Or even worse, is when a client<br />
does go back to get something fixed and<br />
it comes out worse. Before going back ask<br />
yourself: “Is this my last resort? Have I tried<br />
everything else? Would I really need lipo if<br />
I just cleaned up my diet? Do I really need<br />
booty implants? What if I did all the right exercises,<br />
even if it took me 2-3 years?”<br />
2. Longevity of results<br />
Sure, you might look like a hot tamale for a<br />
quick minute but if you don’t have the foundation<br />
of a healthy lifestyle, the results will<br />
not last. There are many people that get liposuction<br />
and then gained it all back! Imagine<br />
spending all that time, money and risks only<br />
to gain it all back. How can anyone believe<br />
they can continue eating poorly and the fat<br />
would never come back? Now that would be<br />

a true miracle! Learning how to eat and exercise<br />
correctly will give results that will last.<br />
It may not be the quick fix you were hoping<br />

3. The bad fat<br />
Cosmetic surgery does not get rid of the<br />
dangerous visceral fat that sticks around<br />
the organs. This type of fat can lead to<br />
heart disease, diabetes and obesity. So, if<br />
you think that after surgery you will become<br />
a “healthier” version of yourself,<br />
think again. Once again, everything leads<br />
back to diet and exercise. It’s not a quick<br />
fix, but one that will help you live healthier,<br />
stronger and longer.<br />
4. Undesired results<br />
This goes along with regret mentioned<br />
above – many clients that had various procedures<br />
are truly unhappy with the outcome<br />
for one reason or another. Dimpled bellies,<br />
drooping derriere implants, infected areas,<br />
boxy shapes, etc. Most desired results are attainable<br />
through eating clean and the right<br />
exercises. You may not achieve a booty like<br />
Kim Kardashian, but do you really want one?<br />
If so, then understand that the results are<br />
not always as promised, and you have to be<br />
prepared to deal with the aftermath.<br />
Hopefully you will think twice before going<br />
for the knife. But always do what makes<br />
you the happiest! Just research what you’re<br />
really getting in to before you do so, and<br />
know that there are non-surgical ways to<br />
achieve similar long lasting results if you’re<br />
willing to make a commitment!<br />

The Captain’s meeting was held on August 8th at the Delray Beach<br />
Elks Lodge. 19 boats entered into the tournament this year. Lots<br />
of great prizes were given away and a significant amount of money<br />
was raised for the various charities that the tournament supports.<br />
This year’s winners of the MGMFT Tournament are:<br />
The weigh-in was held at Veterans Park, on August 10th.<br />
Some very nice fish were brought to the weigh-in. It was<br />
also clear that the local population of sharks were celebrating<br />
Shark Week, as numerous anglers reported donating<br />
their fish to the sharks as they were being reeled in. The weather<br />
stayed very calm until the later afternoon. As always we had<br />
great prizes donated by our fantastic supporters and sponsors. A<br />
memorial for Deena Chapman, Mark’s sister, who was a long time<br />
committee member and passed in January was held on Sunday.<br />
The tournament was started by Mark Gerretson as the Delray<br />
Beach Jaycees Fishing Tournament to raise money for the Delray<br />
Police’s Kids and Cops program. Mark ran the tournament for 11<br />
years before he passed in 2005. At that time, his friends and family<br />
made a promise to keep the tournament going, and to continue<br />
to raise money for a variety of charities that support the Delray<br />
Beach Community. In 2016, the tournament became a 501(c)3<br />
non-profit organization. All committee members are volunteers.<br />
The committee works throughout the year to plan the tournament,<br />
identify worthy causes, and disburse the money to those<br />
in need. Over the years the tournament has raised over $150,000<br />
for local charities and provided help and hope to many children<br />
and families during tough times.<br />
The committee members are: Tim Knapp (Chairman), Patricia<br />
Gerretson (Marks mom), Keith Kern, Gary (Falcon) Musial, Jen<br />
Buce, Paul Shersty, Chris Reich, Jim Gerretson, and Brittany Gerretson<br />
Roberts.<br />
Next year is the 26th Annual of the tournaments founding, and<br />
we’re already working on plans to have bigger prizes and more<br />
boats entered. We are counting on the community to help spread<br />
the word and help us benefit the Delray Beach Community. We<br />
are looking for additional committee members to help us continue<br />
the work that the tournament has been doing. If you are<br />

Allyson Sullivan loves more<br />

Sullivan is also bullish about buying a home or condo instead of renting.<br />
She advises young people to think of home ownership as a great<br />

the first 10 to 15 years. That way you build more equity and paying off<br />

Another word to the wise when it comes to creating wealth – according<br />
to Sullivan – is to buy investment property. She advises finding<br />
property that has a positive cash flow (because cash flow is a no<br />
brainer she said). Sullivan suggests finding a good real estate agent<br />
you can trust to advise you about what to invest in and where to invest.<br />
“There are some great opportunities to buy in our area. You can’t count<br />
on social security to survive when you retire.”<br />
Retiring is far from Sullivan’s mind right now. She is steeped in her<br />
real estate career, and helping others reach their financial and domestic<br />
dreams. “I believe the recipe for a success story includes a strong and consistent<br />
track record of integrity, honesty, reliability and a lot of hard work.<br />
According to clients Sullivan is doing just that.<br />

them! I wake up every day and pinch myself because I get to do<br />
one of the things I love best – sell real estate in the most amazing<br />
location in the country!”<br />
Sullivan also has some hints on how to spruce up your home for<br />
minimal cost. She advises sellers to make sure the landscaping is<br />
inviting and attractive – especially the backyard. “A great backyard<br />
can sell a home!”<br />
She also suggests getting stylish window treatments – whether<br />
plantation shutters, accent curtains or light colored blinds. “You<br />
want the house to be light,” she adds.<br />
And lastly she has a wise word of advice to sellers. “Hiring a<br />
realtor is a good investment, not an expense. A good realtor adds<br />
value to a home and gives you good advice. Find someone who is<br />

For seven days, the Boca Raton<br />
Resort and Club was home to the<br />
64th Annual Porsche Parade.<br />
The Parade is the annual national<br />
convention of the Porsche Club<br />
of America. The first parade<br />
was held in 1956 with a total<br />
of 64 entrants. This year 2000<br />
participants and 800 Porsches<br />
were registered for the event.<br />
The last time the parade was in<br />
our area was the 13th Annual in<br />
Palm Beach Shores in 1968.
Members, enthusiasts and Porsche fans came from all over<br />
North America for this weeklong event. I met a gentleman<br />
from Wisconsin who drove his 1976 Porsche 911 down<br />
for the event. He stopped in Tennessee and picked up his brother<br />
to join him on the journey. After the event, they were headed to Key<br />
West to put the car in front of the Southernmost Point marker for<br />
a photo and take in the sights before heading home. He told me he<br />
has been to 40 of the 48 contiguous states in his 911.<br />
This year’s Parade activities included the Concours, autocross,<br />
time-speed-distance and gimmick rallies, destination tours, and<br />
more. The Concours was set up over several of the resort’s golf<br />
course fairways as well as a historical Porsche exhibit in one of the<br />
ballrooms. The selection of Porsches on display was wide and varied.<br />
From the 1950s to <strong>2019</strong>, from basic to advanced, from street to<br />
race winners, something for everyone. Besides entrants, representatives<br />
from the Porsche factory in Stuttgart, and from Porsche Cars<br />
North America also attended, along with numerous automotive-related<br />
vendors, spokespeople and sponsors.<br />
Adding to the excitement this year was Porsche unveiling two<br />
new models for 2020, the 2020 Porsche Cayman GT4 and the 2020<br />
Porsche 718 Spyder. An enthusiastic roar of applause came over the<br />
room as the covers were pulled away and a scramble ensued to get<br />
a closer look and take the first pictures. Another interesting observation<br />
was the amount of younger adult members in attendance at<br />
the parade. The Porsche Club of America has college age and junior<br />
member programs and encourages their attendance and participation<br />
in the events as well.<br />
Overall this was a fantastic event that was comprised of events all<br />
over the county and beyond. Hopefully the Porsche Club of America<br />
was pleased with The Boca Resort as a venue for their event and<br />
returns soon.<br />

You don’t have to be a Pinball<br />
Wizard to enjoy the miracles<br />
and memories at the<br />
Silverball Museum in Delray.<br />
Enter a world of Fun at Silverball Musuem<br />
Most everyone who goes there has a story. They either lived<br />
near an arcade or spent time playing the very same pinball<br />
machines that are now part of history, yet intact at the<br />
Silverball Museum.<br />
There is a time and place for everything. That’s why people flock<br />
to The Silverball Museum for a reprieve from reality or a respite<br />
from the routine. There are few places that delight the senses and<br />
challenge eye-hand coordination like Silverball does.<br />
You can have a ball, literally, at this simulated boardwalk trip<br />
down Nostalgia lane. They have 9,000-square-feet of arcade and<br />
boardwalk fun. There are 120 games that include vintage Pinball<br />
machines, Arcade Games, Skee Ball, Basketball, Video games and<br />
table shuffleboard.<br />
Each game has its origin displayed so you can revel in its historical<br />
roots. The Skee Ball is so much fun you might find eight-yearold<br />
kids playing alongside 80-year-old grandparents (who for that<br />
short time often feel as if they’re eight again).<br />
But like every pretty face, there is more to the picture than meets<br />
the eye. They also have a restaurant and retro bar that serves wonderful<br />
food and a full selection of libations.<br />
You can’t beat their Happy Hour menu that will have you dancing<br />
in the aisles (this is the kind of place you can do that without worrying<br />
that you will be escorted out by the grown-ups).<br />
The Happy Hour Menu is in full swing from 11am to 7pm Monday<br />
to Friday. For a mere $6 you can get a juicy burger with fries<br />
or chicken sandwich. If you would rather indulge in a pizza, meatball<br />
parmesan appetizer or Caesar salad it will set you back $5. The<br />
prices at this festive culinary side car of desire are about as nostalgic<br />
as the machines themselves. And, the best part is the food is<br />
great, not mediocre bar or fast food.<br />
Silverball is also the perfect place for a party. It’s one thing to<br />
throw a party and another to ensure your guests enjoy themselves.<br />
It’s a veritable win-win at this festive feast of games, food, music,<br />
nostalgia and drinks.<br />
They have hosted parties for an established real estate company<br />
in Delray Beach, a local city employee, charitable fundraisers and<br />
corporate events. It’s also the perfect place for Bar and Bat Mitzvahs,<br />
Birthday Parties, Sports and Football Parties, Anniversaries,<br />
Club or Business meetings and Reunions.<br />
Everyone agrees that Silverball is the perfect party place. “Let me<br />

just say that last nights’ party was amazing!!! From the band,<br />
to the waitstaff, to the food, everything was on point and everyone<br />
had a wonderful time. Thank you for taking such good<br />
care of us. We will definitely be back,” said one city employee.<br />
Last month Edwin and wife Kristin Santoni had their annual<br />
feast of fun and friendship upstairs in the Boat Bar Room. The<br />
Santoni’s invite their friends (who dress up in Star Wars garb<br />
and visit sick children in hospitals) for an afternoon of camaraderie,<br />
fun, food and games. “We love the pinball and arcade<br />
games we grew up playing. The food is always good, and we<br />
look forward to coming here each year. We love the air hockey<br />
and enjoy the nostalgia and pinball machines,” said Edwin.<br />
Cristy Moran couldn’t agree more. The Jupiter mom takes<br />
a “mom-cation” each year with her friends, and this year they<br />
chose Delray Beach. “I love it here, we love playing skee ball<br />
and all the machines. It’s the perfect place for us because there<br />
are so many terrific things to do.”<br />
There sure are. You can rent out the entire Silverball Museum,<br />
the second floor Kiss Lounge, Boat Bar or the entire<br />
second floor. They will supply food and drinks depending on<br />
your needs.<br />
The Silverball Museum is also the perfect place for lunch. It<br />
can change a sour mood in a nanosecond, and uplift you into<br />
the fantasy world that it so embraces.<br />
There is other good news. Silverball just added a 14-foot<br />
projection screen and new 72-inch TV’s to showcase sporting<br />
events. “We are screening college and NFL games of all Miami<br />
teams that are local and national,” said Dayna DiDomenico, Silverball<br />
Museum General and Events Manager.<br />
With the addition of the large screens for sporting events,<br />
Silverball has something for everyone. They also have a “Back<br />
to School Special” running through <strong>September</strong>. Bring your<br />
school schedule and you can play for a discounted rate of $10<br />
per person for an All Day Re-Entry Pass (for up to four people).<br />
One thing for sure, Silverball makes everyone smile. You can<br />
be young at heart or young in years. Either way, you can never<br />

Europe, Italy and even Manhattan, Rickey who was an attorney at<br />
the time, would visit ice cream shops and wonder why the ice cream<br />
wasn’t as good in many ice cream shops in the US. He decided to take<br />

the next step by attending ice cream school at Penn State University<br />
training with award winning gelato chefs. Rickey also worked<br />
alongside Chef Clay Conley at Buccan restaurant in Palm Beach. He<br />
decided to share his expertise by creating desserts for high-end restaurants<br />
and then opening ice cream shops in Delray Beach.<br />
“At Penn State University I learned which ingredients make ice<br />
cream pure, dense and light. I also spent time working in many<br />
kitchens and met gelato chefs all over the world. It started as a hobby<br />
and then it evolved into us providing ice cream and sorbets for<br />
select high-end restaurants, then I decided what if we take the front<br />
of our kitchen and start selling it retail to people and see what happens.<br />
It became very popular, and we needed to look for another<br />
location,” said Rickey.<br />
Proper Ice Cream offers the perfect setting for a date night, a<br />
birthday party or a family day out. They have indoor counter seating<br />
and outdoor seating for guests. The restaurant staff and owner<br />
can be seen at many city and charitable events around town. The atmosphere<br />
and ice cream is the perfect sweet treat for Delray Beach.<br />

in Delray Beach by Taste of Recovery Food Show.<br />

than the ice cream people are used to. We don’t use heavy<br />
cream; we use significantly less sugar and only natural ingredients,”<br />
said Rickey.<br />
“This place is amazing. The flavors are done with an amazing<br />
hand that balances the sweet and the salt perfectly. It can<br />
sit in the freezer and it still serves easily with a spoon. The<br />
sweet corn and blueberry was subtle and sweet while the cinnamon<br />
just hits you hard. Everything I’ve had from this place<br />
is amazing and I can’t wait to try it all. The price is 100% appropriate<br />
for the quality. I will be back and I can’t wait to sit<br />
out in the Florida heat enjoying a literally perfect cone of ice<br />
cream,” stated a happy customer.<br />

a rare opportunity for individuals from diverse business<br />
and personal backgrounds to come together and support not only<br />
Chamber of Commerce operations, but also to support our local<br />
businesses. Each Ambassador has a unique insight and experience<br />
with the Delray Chamber and how it can help promote and grow<br />
businesses. Ambassadors love sharing their knowledge and business<br />
“wins” to help pay it forward and support others. They are a<br />
wonderful group, and I consider myself blessed to be among them.”<br />
“We can always count on our Ambassadors to be there for the<br />
Members or our Board when we need them,” said Noreen Payne, Incoming<br />
Chair and an Ambassador herself. “Ambassadors are there<br />
in a pinch to volunteer during the many events that the Chamber<br />
holds each month. They are the cheering squad for new member<br />
Grand Openings and assist with philanthropic initiatives like collecting<br />
school supplies for the Community or Project Holiday gifts<br />

Goddess Of Goodness<br />
Noreen Payne is quietly leaving<br />
an indelible footprint in Delray.<br />
She didn’t plan it that way.<br />
It just sort of happened - organically.<br />
“I don’t like to talk about myself. I was shy growing up, but gradually<br />
came out of my shell,” said the incoming chair of the Delray<br />
Beach Chamber of Commerce.<br />
Like an oyster or a pearl, Payne did more than come out of her<br />
shell. She broke the structure. From a lifetime of volunteerism to<br />
active roles in non-profit organizations, Payne has changed many<br />
lives with her passion and selflessness.<br />
She had good role models. Her mother Kay was an Ambassador<br />
for UNICEF and volunteered for organizations that educated<br />
and fed children. Her father Riaz was an accomplished electrical<br />
engineer (for General Electric) who moved his family around the<br />
globe extensively.<br />
They lived in Buffalo, Chicago, New Orleans, Atlanta, London,<br />
Germany, South America, the Middle East and other places. She<br />
attended three high schools and was often perplexed when people<br />
would call her “too tall, too skinny, too quiet, etc.”<br />
But those days are over. Payne proudly carries her height, her<br />
physique and her station in life. As a matter of fact, she has risen<br />
in stature and hierarchy everywhere she goes.<br />
“Noreen always checks in to make sure our program and volunteer<br />
needs are being met. She not only delivers meals to homebound<br />
clients, but she has arranged to clean up a client’s yard, brought her<br />
children to help clean and organize a client’s home. She is passionate,<br />
has integrity, energy and a team player. Our clients are happy<br />
to see Noreen - she shares a smile and gives them hugs,” said Shona<br />
Castillo, Program Director for The Caring Kitchen.<br />
When Payne moved to Delray from Atlanta she took her two<br />
children (one strapped to her chest and the other in a stroller) to<br />
the Achievement Centers for Children & Families to play with the<br />
children. “When they saw us the kids would get so excited and say,<br />
‘the babies are coming.’”<br />
Payne does know, however, that helping others is not child’s<br />
play; it’s an important component of life. “You have no idea how<br />
many food insecure children there are just blocks away. My passions<br />
are hunger, children and helping others.”<br />
And helping others she does.<br />
She delivers meals for The Caring Kitchen, provides snacks for<br />
children and is involved with Impact 100 Women. She was cochair<br />
for the Achievement Center’s recent Annual Delray Beach<br />
Home Tour, raising a record-breaking amount of money.<br />
Stephanie Seibel, CEO of Achievement Centers, isn’t surprised.<br />
“Noreen is one-of-a-kind. She does whatever she can to further a<br />
good cause. In one day she may go from sitting at the boardroom<br />
table planning an event to sitting on the preschool floor for Delray<br />
Reads, planting a garden with our volunteers and delivering<br />
dinner to the homebound.”<br />
The wife, mother, volunteer and real estate agent enjoys flying<br />
under the radar, which is why she doesn’t relish the idea of talking<br />
about herself. But, true to her selfless nature, she’s compliant<br />
to a fault. “I want to show some love for my non-profits – they’re<br />
amazing and need help.”<br />
Helping others is something that tugs on Payne’s heartstrings.<br />
It’s what she was trained to do by familial osmosis, and is something<br />
she takes seriously. Her date book is so filled it looks like<br />
a daily flight log at JFK, and her days are so structured it would<br />
make a free spirit break out in hives.<br />
But her past often inspires her present. “We moved so often that<br />
my mother was always calling the Chamber of Commerce in each<br />
city. She would call and ask for a doctor, a dentist, a contractor, etc.”<br />
That may account for her devotion to the Delray Beach Chamber.<br />
She was Ambassador Chair, Vice Chair of Membership, Vice Chair of<br />
Programming, Director of the Year and incoming Chairperson.<br />
Though she enjoys anonymity, Jim Chard (Vice Chair of the<br />
Chamber) isn’t bashful about singing her praises. “Noreen is arguably<br />
the hardest working person in Delray. She is one of the<br />
best realtors in the City, and still manages the time to be on the<br />
board of some of the most significant not-for-profits in the City.<br />
As incoming Chair of the Chamber we will surely benefit from<br />
her energy, ideas, charm, and ever-present smile.”<br />
Payne was a finalist for the Ken Ellingsworth Community Service<br />
Award and The Ricard Ohrstrom Community Service Award.<br />
But it’s not awards she is seeking. It’s about building and<br />
serving community. When her husband Lee was transferred<br />
to DC, Payne re-created the Delray Beach experience in Round<br />
Hill, Virginia. She volunteered for their Home Town Event, adding<br />
a Christmas Tree Lighting with Santa, Movies in the Park,<br />
food and other fun things. It grew from 12 families participating<br />
to hundreds.<br />
Lee Payne took note of her uniqueness at first glance. “When I<br />
was working at a bank in Atlanta, this tall blond man walked up to<br />
me and asked, “What are you doing for the next 60 years?”<br />
Though she was shy and ignored him, karma and happenstance<br />
resulted in their union. They have been married 31 years and have<br />
two children, 20-year-old Alia and 22-year-old Kamran.<br />
When not making the world a better place Payne can be found<br />
selling property. Like volunteering, real estate is part of her heritage.<br />
“I always wanted to be in real estate because we moved so often.<br />
My mom took me house hunting every time we moved. Memories<br />
were created in our homes, and now I can help others do that.”<br />
Her friend and partner (from All About Florida Homes Team)<br />
Amy Snook fulfills that role with her. “Noreen is more selfless than<br />
anyone I’ve known. She never wants attention for her good deeds<br />
and never tells her friends what she does. When I can’t find her, it’s<br />
because she is running food to a child or family in need, helping<br />
a veteran, or checking in on an elderly person who doesn’t have<br />
family. She has the biggest heart.”<br />

Owner Sharon Aloisio bought (and shipped to Delray) the<br />
wood burning oven made of volcanic stone that heats to<br />
1000 degrees. She was one of the first restauranteurs to<br />
make Caputo flour pizza dough taste light as a feather and imported<br />
Italian San Marzano tomato sauce melt in your mouth.<br />
She also imported the wisdom, culinary excellence and 200-year-old<br />
Neapolitan pizza-making skills from the master, Roberto Caporuscio.<br />
And she did it with precision and dedication.<br />
The results were stunning. People came from all over to savor the<br />
flavors and texture of real Neapolitan pizza and homemade pasta<br />
that Sharon cooked up.<br />
It was a unique dining experience, and one that Aloisio adhered<br />
to strictly. She followed the tradition of the masters in Italy and so<br />
did her fans – that included locals, out of towners and the media.<br />
The menu grew and so did their expertise. Everyone seemed to<br />
notice. “This is the best pizza anywhere. There is true integrity in<br />

Hodan isn’t the only one drawn to Scuola Vecchia. Debbie Gansler<br />
and her husband Howard come once a week as well. “We love it<br />
here and have been coming since they opened. We order the Pizza<br />
Margherita and the specials of the day. The white pizza with figs<br />
and gorgonzola cheese is outstanding. I’m Italian and I love the thin<br />
crust, the ingredients and the excellent service.”<br />
Gansler is correct on all counts. The food at Scuola Vecchia is superb<br />
and its authenticity is overwhelmingly delicate and delicious.<br />
We’ve been here before but it seems with age comes perfection<br />
(like wine and wisdom).<br />
Part of the delicate balance of flavors and textures that seduce<br />
the senses are pizzas named after Aloisio’s grandchildren. Luckily<br />
her son – and business partner Shaun – recently had a baby girl. To<br />
honor her birth a pizza was created in her name. Called the Valen-

We also adored the Pizza Romeo, named after Shaun’s five-yearold<br />
son (who enjoys making pizza with his dad). This pizza is divinely<br />
made with homemade mozzarella cheese, thinly sliced potatoes,<br />
crispy pancetta and fresh rosemary. The unusual combination<br />
of flavors and ingredients in this pizza make it decadently delicious.<br />
We weren’t the only ones oohing and aahing over this homemade<br />
Italian fare. Local Delray resident (and finance guy) Dave comes to<br />
Scuola Vecchia quite often and was relishing the food as well. “This<br />
is the best pizza. I’ve been coming here since it opened so I don’t<br />
have to go to New York for pizza. I love Sharon and Shaun – they<br />
care about what goes on your plate and it shows.”<br />
You don’t have to be from New York to appreciate the TLC that<br />
goes into the food at Scuola Vecchia. Take the Girella Salad for instance.<br />
It goes like this – Homemade Mozzarella Cheese Rolls are<br />
stuffed with eggplant, zucchini and Prosciutto di Parma and served<br />
with a house salad with balsamic dressing. It is a celebration of texture<br />
and taste that we found intoxicating. It’s so far out of the traditional<br />
salad comfort zone that the flavors and texture just jump<br />
out at you gleefully.<br />
Speaking of glee – you must try their new homemade Italian<br />
Rice Balls. Called Sicilian Arancini they are lightly breaded and<br />
come three to an order - spinach and béchamel, homemade Bolognese<br />
and Prosciutto Cotto (Italian ham) with mozzarella. They are<br />
simply divine with varying flavors that dance with delight in your<br />
mouth. They’re so good it feels illegal. But, of course it’s as legal as<br />
writing your name on a post-it – but much more fun.<br />
The genius behind much of this excellence and expertise is Sharon.<br />
She learned to cook from her grandmother and has carried<br />
this tradition to fruition in her little corner of the world on <strong>Atlantic</strong><br />
<strong>Ave</strong>nue. She tries new dishes and is constantly whipping up specials<br />
that makes everyone ecstatically happy. Just look around – it<br />
feels like Neapolitan Nirvana. And it is!<br />
We aren’t the only ones impressed with Scuola Vecchia. The Daily<br />
Meal rated their pizza one of the best in South Florida and Trip Advisor<br />
deemed their Neapolitan tradition the best pizza on the planet.<br />
So does Donna from Delray. “My husband and I have excellent<br />
experiences at Scuola Vecchia. It’s the best pizza in the WORLD! We<br />
always feel like family when we dine there. Anthony, Rita, Sharon<br />
and Sean - what wonderful kind people. The Caprese salad with<br />
their homemade Mozzarella is to die for!”<br />
You bet it is. So is their Fettuccini Bolognese with homemade<br />
meat sauce cooked for three hours to infuse flavor into tomato<br />
sauce cooked in their wood oven. We also recommend the Salad<br />
Mare with fresh baby arugula, jumbo shrimp, grape tomatoes, lemon<br />
and extra virgin olive oil.<br />
Because Scuola Vecchia is a family business they welcome everyone<br />
with the same fanfare. That is why they offer Gluten Free<br />
Pizza made with fresh homemade gluten-free flour (not frozen like<br />
most).<br />
Before you say goodbye to Sharon, Shaun and the devoted staff,<br />
check out their desserts. The Flourless Chocolate Cake would make<br />
a horse whisper and a human covet it like a priceless pearl. We also<br />
suggest the homemade Tiramisu.<br />
Scuola Vecchia has hit its stride. The food is superb, inventive<br />
and homemade with love. Sharon and Shaun are at the epicenter<br />
of all this Italian Culinary Greatness, and they welcome you into<br />

Holy Guacamole!!!<br />
INGREDIENTS<br />
3 Hass avocados – peeled, pitted, and mashed<br />
1 Lime juiced<br />
½ Cup diced onion<br />
3 Tbsp chopped fresh cilantro<br />
2 Plum tomatoes, diced<br />
1 Tsp diced garlic<br />
directions<br />
In a medium bowl mash together avocados,<br />
lime juice, and salt. Mix in the rest of<br />
ingredients. Refrigerate for at least one hour<br />
before serving for best flavor.<br />
In case you were wondering, National<br />
Guacamole Day is Monday, <strong>September</strong> 16th.<br />
I don’t know about you, but I have a love/<br />
hate relationship with avocado. It’s yummy,<br />
and healthy, and filling, but…if you don’t<br />
buy it when it’s perfect, well, let’s just say it<br />
becomes the opposite of yum – YUCK!<br />
However, this doesn’t stop me from asking<br />
the produce person at any given market<br />
to help me pick my avocados. Guac-ward!<br />

Are Eye and Vision Issues in<br />
Pets Becoming an Epidemic?<br />
Eye and vision issues in our pets is becoming an epidemic<br />
with most older pets being affected. The disturbing issue of<br />
this is that these conditions are being accepted as normal<br />
and expected without most caregivers understanding the causes.<br />
Once there is an understanding of the basic causes, most vision<br />
challenges are normally preventable.<br />
All disease comes down to only two core causes, deficiency and<br />
toxicity. These eye and vision challenges are no exception. The real<br />
challenge is that eyes and vision issues are slow to develop and<br />
slow to correct. Unlike skin cells that are replaced on a monthly<br />
basis, nerve and eye tissue are replaced at a much slower rate. Most<br />
eye challenges are explained as degenerative because of this slow<br />
growing condition. The same is true when providing a treatment<br />
plan, as the results often take months to stem the degeneration and<br />
create healing.<br />
Basic eye changes often start with tearing, wet eye and tear<br />
staining which lead to infections. While some breeds of dogs and<br />
cats seem to be more predisposed to this type of condition, the<br />
cause can be a nutritional imbalance and repeated exposure to toxins.<br />
While many eye infections are the result of bacterial, viral or<br />
fungal growth, we have to ask what is wrong with our pet’s immune<br />
system that allows these pathogens to proliferate.<br />
Our approach to attaining optimal health is achieved by building a<br />
strong natural immune system with species specific nutrition and by<br />
reducing the addition of toxins through drugs, vaccines, cleaning products,<br />
lawn chemicals and other toxins. Toxins plug and destroy the cellular<br />
functions in filters such as the liver, kidney and lymphatic systems.<br />
Research has shown that aluminum and mercury have a direct<br />
link to kidney and liver failure which has a direct impact on the eyes.<br />
Why are our dogs having more of these eye problems than our<br />
cats? This is self-evident as we look at the plethora of toxins that<br />
our dogs are exposed to. Most feline pets are house dwellers and<br />
are limited in their exposure to the vast array of environmental<br />
chemicals that our dogs are exposed to. These include the pollutants<br />
in our air and lawn chemicals such as weed killer, bug killers,<br />
fertilizers and more. If those factors are not enough of an assault<br />
on our dogs, we are also told that because our dogs are frequently<br />
outdoors, we need to provide additional protection for them. The<br />
additional protection recommended by many in the veterinarian<br />
community is to increase vaccine schedules, monthly chemical and<br />
drug treatments for fleas, ticks, heartworms and other parasites.<br />
These toxins are continuously destroying healthy cells and teamed<br />
up with an inappropriate nutritional plan, this regimen inhibits<br />
proper growth of new healthy cells.<br />
The good news is this…what degenerates can also regenerate.<br />
The body is designed to heal itself. Our job as pet parents is to provide<br />
the proper tools for that to happen. This happens by us supporting<br />
a clean species specific appropriate nutritional program<br />
that excludes fillers, preservatives, colors and chemicals - along<br />
with creating a safer environment by choosing a more natural<br />
approach for flea and heartworm prevention, lawn treatments,<br />
household cleaners, vaccinations, etc.<br />
