evenings get a little bit shorter<br />
we all crave some comfort food.<br />
Three of our restaurants share<br />
their favourite easy recipes for<br />
you to recreate at home.<br />
Blanquette of Chicken<br />
A creamy chicken, mushroom <strong>and</strong><br />
tarragon stew with sweet potatoes,<br />
turnips <strong>and</strong> baby onions. Serves four<br />
people.<br />
600g chicken thighs<br />
<strong>12</strong>0g button mushrooms<br />
160ml double cream<br />
80g sweet potato<br />
60g turnip<br />
60g baby onions<br />
1 glass of white wine<br />
2lts vegetable stock<br />
Olive oil<br />
Salt <strong>and</strong> pepper<br />
40g tarragon<br />
Method:<br />
1. Peel <strong>and</strong> cut all the vegetables in 1cm<br />
dices.<br />
2. Pan-fry the chicken until golden.<br />
3. Add vegetables with the chicken into a<br />
medium pan.<br />
4. Add white wine <strong>and</strong> then add the<br />
vegetable stock, cream, tarragon <strong>and</strong><br />
stew all together for about 20 minutes,<br />
until the chicken is tender.<br />
5. Garnish with freshly<br />
chopped tarragon.<br />

Burnt Honey Panna Cotta<br />
Florentine makes this dish<br />
with honey from their<br />
honeybees located on<br />
their 4th floor roof.<br />
Makes eight.<br />
300ml milk<br />
700g double cream<br />
150g honey<br />
5 leaves gelatine<br />
Method:<br />
1. Boil the honey in a pan<br />
until it’s caramelised.<br />
2. Soak the gelatine<br />
leaves in cold water.<br />
3. Add half of the<br />
double cream into<br />
the caramelised<br />
honey followed by<br />
the soaked gelatine.<br />
4. Add the rest of the<br />
double cream <strong>and</strong><br />
the milk.<br />
5. Pour into glasses <strong>and</strong><br />
chill for 3-4 hours.<br />
Aubergine Parmigiana<br />
Serves 4<br />
You will need:<br />
4 aubergines<br />
Plain flour to dust<br />
300g grated<br />
Parmesan<br />
Vegetable oil<br />
Salt<br />
For the tomato<br />
sauce:<br />
2 tins of plum<br />
tomatoes<br />
4 garlic cloves<br />
1 chopped<br />
onion<br />
Olive oil<br />
1 bunch of basil<br />
Salt <strong>and</strong> pepper<br />
Method:<br />
1. Trim the aubergine <strong>and</strong> slice lengthways<br />
about 1 cm in thickness.<br />
Arrange the layers in a col<strong>and</strong>er <strong>and</strong><br />
season with salt, then leave them for<br />
an hour to draw out the water.<br />
2. Meanwhile, prepare the tomato<br />
sauce. In a large pan heat the olive<br />
oil, add the chopped onion <strong>and</strong> garlic<br />
<strong>and</strong> fry slowly until soft; add the plum<br />
tomatoes <strong>and</strong> cook gently for about<br />
45 minutes. Towards the end of<br />
cooking, season <strong>and</strong> set aside.<br />
3. Pat the aubergines dry with a towel.<br />
Heat the oil in a frying pan <strong>and</strong> dust<br />
each of the aubergine slices lightly<br />
with flour. When the oil is hot, fry<br />
the slices for 30 seconds each side<br />
or until golden. In the bottom of a<br />
baking dish, place a little bit of the<br />
tomato sauce, <strong>and</strong> then layer over<br />
the aubergines. Continue doing so in<br />
layers – a bit of tomato sauce, a few<br />
basil leaves, more aubergines, then<br />
a sprinkle with Parmesan. Repeat<br />
this four times so you will have a nice<br />
thick Parmigiana. Press down lightly<br />
with a spatula to make it compact.<br />
4. Bake for 25<br />
minutes at<br />
160˚C.<br />

INTERVIEW WITH WERNER SEEBACH, HEAD CHEF AT CHINO LATINO<br />
Wagyu beef is a highly prized meat known<br />
for its marbled appearance <strong>and</strong> its melt<br />
in your mouth tenderness. Chino Latino has<br />
recently added a beautiful wagyu beef dish to<br />
their menu, cooked directly at your table on a<br />
hot Himalayan salt block. Head Chef Werner<br />
Seebach tells us more about his newest dish.<br />
Why is wagyu beef such an expensive meat?<br />
The rearing method is what makes wagyu beef<br />
so expensive. For instance;<br />
calves are fed with milk<br />
replacements by h<strong>and</strong><br />
<strong>and</strong> wear jackets in cold<br />
weather. It’s also not a<br />
total myth that cattle are<br />
fed beer <strong>and</strong> massaged<br />
to help with the marbling<br />
of the meat.<br />
Which cut of meat do<br />
you use?<br />
We use a cut of the beef<br />
called an oyster blade<br />
that is not used very often as it has two muscles<br />
running straight through the meat. It takes us<br />
about one <strong>and</strong> a half hours to carefully remove<br />
all the muscles. That leaves us with amazingly<br />
marbled thin pieces of beef for ishiyaki. Other<br />
more sought after cuts of wagyu beef would<br />
cost up to five times more but we wanted<br />
everyone to enjoy our wagyu ishiyaki dish at an<br />
affordable price.<br />
How is your new wagyu beef dish served?<br />
We are not rewriting the history books but<br />
we are doing an authentic Japanese dish<br />
called ishiyaki where the beef is cut into small<br />
pieces <strong>and</strong> cooked on a rock or stone that has<br />
been heated inside a fire. We have changed<br />
that slightly <strong>and</strong> we are cooking the beef on<br />
Himalayan salt blocks formed 800 million years<br />
ago <strong>and</strong> carved out of the mountains of India<br />
<strong>and</strong> Pakistan.<br />
If you had to cook wagyu at home how would<br />
you do it?<br />
I would light up the BBQ with some Japanese<br />

Binchotan charcoal then add some apple <strong>and</strong><br />
cedar wood chips to the charcoal <strong>and</strong> just sear<br />
thebeef, rest, slice <strong>and</strong> eat.<br />
What is the best type wagyu dish you<br />
ever tasted?<br />
Other than our very own wagyu beef dish, the<br />
best dish was kobe beef in Moscow that was so<br />
marbled I could hardly see the red meat between<br />
all the fat. Just grilled with salt <strong>and</strong> pepper over<br />
open flames – delicious!<br />

Day, is celebrated in Mexico <strong>and</strong><br />

All of that film making can be quite taxing, so<br />

Situated in Covent Garden, the museum is home<br />
to original props, costumes <strong>and</strong> sets from feature<br />

Sometimes you want to just kick back <strong>and</strong> watch<br />

How did you find yourself working as Bar<br />
Manager at Kitchen at Holmes <strong>and</strong> getting<br />
into the industry?<br />
I started my career in a bar when I was 20<br />
years-old in Italy then came to <strong>London</strong><br />
where I’ve worked at Nobo, Aqua<br />
BAR MANAGER AT KITCHEN AT HOLMES<br />
<strong>and</strong> Soho House. I then started<br />
focusing on openings - my first<br />
one was Mr Foggs Tavern. I<br />
like to do openings as it’s the<br />
best time to insert some of<br />
your DNA into a project. I<br />
also enjoy working at hotels<br />
as you have the chance to<br />
get involved with guests in a<br />
different way.<br />
I loved Kitchen at Holmes from<br />
the first moment I saw it - I thought it’s smart,<br />
easy-going <strong>and</strong> has lots of potential. It suited my<br />
style <strong>and</strong> I couldn’t wait to make my mark on it.<br />

When they offered me the Bar Manager position I<br />
accepted without hesitation.<br />
What can we expect from the cocktails at<br />
Kitchen at Holmes?<br />
Each cocktail has a character <strong>and</strong> a ‘why’<br />
behind it. We have six cocktails on the<br />
menu including Sherlock’s Pipe, a<br />
negroni-based cocktail served in a pipe<br />
<strong>and</strong> KT Time, a refreshing cocktail<br />
with gin, cranberry <strong>and</strong> hibiscus<br />
served in a teapot (recipe below). We<br />
have been quite playful.<br />
What would you choose to eat <strong>and</strong> for<br />
the perfect accompaniment to drink at<br />
Kitchen at Holmes?<br />
Sherlock’s Pipe makes a great aperitif <strong>and</strong> goes<br />
well with starters like the Ibérico Bellota or Wild<br />
Boar Salami. The KT Time could be matched with

the Yellow Fin Tuna Tartare or Red Prawns Carpaccio.<br />
For the main course, I’d have the Adriatic Cuttlefish stir<br />
fry with the Chai Fizz or enjoy the Take It Easy after a<br />
Wagyu Rump Steak. And of course, we also have an<br />
amazing selection of wines to choose from.<br />
Tell us a bit about the Marylebone area where<br />
you’re based.<br />
I’m just starting to learn more about the area but it<br />
has a wonderful village feel to it <strong>and</strong> is a fantastic little<br />
oasis in the heart of the city. It’s home to a really great<br />
mix of people – residents, workers <strong>and</strong> tourists, <strong>and</strong><br />
I love getting to know them when they stop by for a<br />
drink at the bar.<br />
What do you think will keep customers returning<br />
to Kitchen at Holmes?<br />
It’s the little touches that make a great experience.<br />
We’re totally focused on service all day - from<br />
breakfast to the nightcap.<br />
What do you like to drink at home or socially?<br />
I’m a whiskey lover <strong>and</strong> I’m into my Japanese whiskies<br />
like Nikka Taketsuru. For cocktails, it depends on my<br />
mood - a Tommy’s Margarita if it’s sunny or at night a<br />
whisky-based one for the kick like an Old Fashioned or a<br />
Boulvadier which is a twist on a Negroni with bourbon.<br />
A bitter cocktail because I’m sweet enough already!<br />

What has been your best gig to date?<br />
I think my best gig to date has to be performing<br />
for Duchess Ferguson at Windsor Castle. We had<br />
a crazy amount of celebs in the room like Kate<br />
Moss, Naomi Campbell, Elton John <strong>and</strong> Robbie<br />
Williams. It was great!<br />
How would you describe your music?<br />
My music is eclectic - from jazz to classical but it<br />
definitely edges more towards the ballad side<br />
of things. Ultimately I aim to tell a true<br />
story through my interpretations of<br />
songs. I think that’s why people<br />
enjoy my shows because they can<br />
see the passion behind every<br />
word I sing.<br />
Who inspires you <strong>and</strong> why?<br />
My family inspires me with all<br />
their love <strong>and</strong> support for what I<br />
do. I could tell you artists who have<br />
career paths I’d like to follow but I feel<br />
like that isn’t what spurs me forward. I sing<br />
because I enjoy what music brings to people’s<br />
lives.<br />
What is your favourite cocktail?<br />
I love an Old Fashioned. Whiskey is the nectar of<br />
the Gods!<br />
What has been the craziest moment in your<br />
career so far?<br />
It has to be finding out I had accomplished a<br />
number one album while being part of Collabro.<br />
I didn’t quite know how to h<strong>and</strong>le that. It was<br />
just so overwhelming when we heard it on the<br />
radio as we were coming back from Cardiff<br />
Pride. The car was shaking on the M25 as we<br />
celebrated!<br />
What are some of your favourite songs in<br />

Bocelli. One of my favourite<br />
collaborations though was the<br />
Royal Variety Performance where we<br />
got to share the stage with Ed Sheeran, Shirley<br />
Bassey, Bette Midler <strong>and</strong> many more. Such fond<br />
memories.<br />
What have you got coming up?<br />
I’m very much looking forward to my ‘Movies<br />
<strong>and</strong> Musicals’ night at The Crazy Coqs on 14th<br />
<strong>September</strong>. I also have a very exciting show<br />
alongside Alison Moyet at the Royal Festival Hall<br />
on the 20th <strong>September</strong> in honour of the life <strong>and</strong><br />
work of Michelle Legr<strong>and</strong>. Apart from live shows,<br />
an EP is in the works currently so keep your eyes<br />
peeled for that!<br />
