The summer holidays are over, the kids are back at school (until half term) and life 

feels like it returns to normal before the Christmas madness begins. It’s a nice time 

to be out and about in the city when it’s not too hot or too cold. 

BFI London Film Festival starts at the beginning of October on the South Bank 

which always promises to bring some stunning cinema to film fans and they are 

even hosting film inspired DJ nights. And if you can’t make it to Germany, don’t 

worry because Oktoberfest in London gets better and better every year with 

various celebrations and interpretations of the event all over town.

Autumn 

is upon us and as the 

evenings get a little bit shorter 

we all crave some comfort food. 

Three of our restaurants share 

their favourite easy recipes for 

you to recreate at home. 

Blanquette of Chicken 

A creamy chicken, mushroom and 

tarragon stew with sweet potatoes, 

turnips and baby onions. Serves four 

people. 

600g chicken thighs 

120g button mushrooms 

160ml double cream 

80g sweet potato 

60g turnip 

60g baby onions 

1 glass of white wine 

2lts vegetable stock 

Olive oil 

Salt and pepper 

40g tarragon 

Method: 

1. Peel and cut all the vegetables in 1cm 

dices. 

2. Pan-fry the chicken until golden. 

3. Add vegetables with the chicken into a 

medium pan. 

4. Add white wine and then add the 

vegetable stock, cream, tarragon and 

stew all together for about 20 minutes, 

until the chicken is tender. 

5. Garnish with freshly 

chopped tarragon.

Burnt Honey Panna Cotta 

Florentine makes this dish 

with honey from their 

honeybees located on 

their 4th floor roof. 

Makes eight. 

300ml milk 

700g double cream 

150g honey 

5 leaves gelatine 

Method: 

1. Boil the honey in a pan 

until it’s caramelised. 

2. Soak the gelatine 

leaves in cold water. 

3. Add half of the 

double cream into 

the caramelised 

honey followed by 

the soaked gelatine. 

4. Add the rest of the 

double cream and 

the milk. 

5. Pour into glasses and 

chill for 3-4 hours. 

Aubergine Parmigiana 

Serves 4 

You will need: 

4 aubergines 

Plain flour to dust 

300g grated 

Parmesan 

Vegetable oil 

Salt 

For the tomato 

sauce: 

2 tins of plum 

tomatoes 

4 garlic cloves 

1 chopped 

onion 

Olive oil 

1 bunch of basil 

Salt and pepper 

Method: 

1. Trim the aubergine and slice lengthways 

about 1 cm in thickness. 

Arrange the layers in a colander and 

season with salt, then leave them for 

an hour to draw out the water. 

2. Meanwhile, prepare the tomato 

sauce. In a large pan heat the olive 

oil, add the chopped onion and garlic 

and fry slowly until soft; add the plum 

tomatoes and cook gently for about 

45 minutes. Towards the end of 

cooking, season and set aside. 

3. Pat the aubergines dry with a towel. 

Heat the oil in a frying pan and dust 

each of the aubergine slices lightly 

with flour. When the oil is hot, fry 

the slices for 30 seconds each side 

or until golden. In the bottom of a 

baking dish, place a little bit of the 

tomato sauce, and then layer over 

the aubergines. Continue doing so in 

layers – a bit of tomato sauce, a few 

basil leaves, more aubergines, then 

a sprinkle with Parmesan. Repeat 

this four times so you will have a nice 

thick Parmigiana. Press down lightly 

with a spatula to make it compact. 

4. Bake for 25 

minutes at 

160˚C.

WERNER ON WAGYU 

INTERVIEW WITH WERNER SEEBACH, HEAD CHEF AT CHINO LATINO 

Wagyu beef is a highly prized meat known 

for its marbled appearance and its melt 

in your mouth tenderness. Chino Latino has 

recently added a beautiful wagyu beef dish to 

their menu, cooked directly at your table on a 

hot Himalayan salt block. Head Chef Werner 

Seebach tells us more about his newest dish. 

Why is wagyu beef such an expensive meat? 

The rearing method is what makes wagyu beef 

so expensive. For instance; 

calves are fed with milk 

replacements by hand 

and wear jackets in cold 

weather. It’s also not a 

total myth that cattle are 

fed beer and massaged 

to help with the marbling 

of the meat. 

Which cut of meat do 

you use? 

We use a cut of the beef 

called an oyster blade 

that is not used very often as it has two muscles 

running straight through the meat. It takes us 

about one and a half hours to carefully remove 

all the muscles. That leaves us with amazingly 

marbled thin pieces of beef for ishiyaki. Other 

more sought after cuts of wagyu beef would 

cost up to five times more but we wanted 

everyone to enjoy our wagyu ishiyaki dish at an 

affordable price. 

How is your new wagyu beef dish served? 

We are not rewriting the history books but 

we are doing an authentic Japanese dish 

called ishiyaki where the beef is cut into small 

pieces and cooked on a rock or stone that has 

been heated inside a fire. We have changed 

that slightly and we are cooking the beef on 

Himalayan salt blocks formed 800 million years 

ago and carved out of the mountains of India 

and Pakistan. 

If you had to cook wagyu at home how would 

you do it? 

I would light up the BBQ with some Japanese

Binchotan charcoal then add some apple and 

cedar wood chips to the charcoal and just sear 

thebeef, rest, slice and eat. 

What is the best type wagyu dish you 

ever tasted? 

Other than our very own wagyu beef dish, the 

best dish was kobe beef in Moscow that was so 

marbled I could hardly see the red meat between 

all the fat. Just grilled with salt and pepper over 

open flames – delicious!

Day, is celebrated in Mexico and 

across other South American and 

European countries to remember

THE FILMMAKER’S

London is a hot-bed of amazing filming locations, 

with famous landmarks, hidden treasures and 

places of movie history littered throughout the city. 

Here we round up the top seven places to film, 

geek out or enjoy a good old fashioned movie. 

London Film Museum 

All of that film making can be quite taxing, so 

a great way to take a break and get a bit of 

inspiration is a trip to the London Film Museum. 

Situated in Covent Garden, the museum is home 

to original props, costumes and sets from feature 

films including Superman, Star Wars and Batman. 

BFI IMAX 

Sometimes you want to just kick back and watch 

a good film rather than shoot one – and the BFI 

IMAX is the perfect place to do just that. With the 

largest screen in Britain (20m high and 26m wide), 

this is the ultimate film watching experience and 

perfect for any movie buff. 

Notting Hill 

The pastel-coloured terraced houses, spotless pavements and 

beautiful streets make the perfect backdrop for any budding 

filmmaker. Roads such as Kynance Mews make for stunning 

shots, but a short walk around the area will uncover some secret 

hidden locations that will make those scenes really stand out.

Piccadilly Circus 

One of the most iconic places in London is 

the mesmerising Piccadilly Circus. Awash

London Eye

Eye is another solid London filming spot.

Trafalgar Square 

Perhaps the most incredible use of the 

world-famous Trafalgar Square is the mob 

scenes at the pinnacle moment of 2005 

film V for Vendetta. Marching through the 

square, it’s instantly recognisable and the

for such a scene.

How did you find yourself working as Bar 

Manager at Kitchen at Holmes and getting 

into the industry? 

I started my career in a bar when I was 20 

years-old in Italy then came to London 

where I’ve worked at Nobo, Aqua 

BAR MANAGER AT KITCHEN AT HOLMES 

and Soho House. I then started 

focusing on openings - my first 

one was Mr Foggs Tavern. I 

like to do openings as it’s the 

best time to insert some of 

your DNA into a project. I 

also enjoy working at hotels 

as you have the chance to 

get involved with guests in a 

different way. 

I loved Kitchen at Holmes from 

the first moment I saw it - I thought it’s smart, 

easy-going and has lots of potential. It suited my 

style and I couldn’t wait to make my mark on it.

When they offered me the Bar Manager position I 

accepted without hesitation. 

What can we expect from the cocktails at 

Kitchen at Holmes? 

Each cocktail has a character and a ‘why’ 

behind it. We have six cocktails on the 

menu including Sherlock’s Pipe, a 

negroni-based cocktail served in a pipe 

and KT Time, a refreshing cocktail 

with gin, cranberry and hibiscus 

served in a teapot (recipe below). We 

have been quite playful. 

What would you choose to eat and for 

the perfect accompaniment to drink at 

Kitchen at Holmes? 

Sherlock’s Pipe makes a great aperitif and goes 

well with starters like the Ibérico Bellota or Wild 

Boar Salami. The KT Time could be matched with


the Yellow Fin Tuna Tartare or Red Prawns Carpaccio. 

For the main course, I’d have the Adriatic Cuttlefish stir 

fry with the Chai Fizz or enjoy the Take It Easy after a 

Wagyu Rump Steak. And of course, we also have an 

amazing selection of wines to choose from. 

Tell us a bit about the Marylebone area where 

you’re based. 

I’m just starting to learn more about the area but it 

has a wonderful village feel to it and is a fantastic little 

oasis in the heart of the city. It’s home to a really great 

mix of people – residents, workers and tourists, and 

I love getting to know them when they stop by for a 

drink at the bar. 

What do you think will keep customers returning 

to Kitchen at Holmes? 

It’s the little touches that make a great experience. 

We’re totally focused on service all day - from 

breakfast to the nightcap. 

What do you like to drink at home or socially? 

I’m a whiskey lover and I’m into my Japanese whiskies 

like Nikka Taketsuru. For cocktails, it depends on my 

mood - a Tommy’s Margarita if it’s sunny or at night a 

whisky-based one for the kick like an Old Fashioned or a 

Boulvadier which is a twist on a Negroni with bourbon. 

A bitter cocktail because I’m sweet enough already!

KT Time Recipe 

Alluding to Ms Hudson’s famous clockwork 

tea time ritual, a herbal and fruity tea 

cocktail blending hibiscus and elderflower. 

50ml Beefeater gin 

25ml St. Germain elderflower liqueur 

10ml hibiscus syrup 

30ml cranberry juice 

10ml lime juice 

3 drops plum bitters 

Method: Shake all the ingredients and double 

strain. Serve in a frozen martini glass.

have become an institution in themselves 

and consequently the perfect location for 

any celebration. Or quite frankly, if you

Champagne Bar at Kettner’s 

Townhouse (Soho, W1D) 

If you imagine you might enjoy a glass of 

champagne in the same setting as Oscar 

Wilde, you’ll be happy to know that his old 

haunt at Kettner’s has been revamped by 

the Soho House group and turned in to the 

perfect spot to enjoy a glass of bubbly. 

The Iris Bar by Searcys

Harry’s Bar James Street

Iconic is nowhere near enough to describe 

the reputation that precedes Harry’s Bar 

and although their private member’s 

club in Mayfair isn’t open to everyone, 

they’ve been kind enough to open an 

establishment on James Street for the 

general public to enjoy. 

DUKES Champagne Picnic 

(Green Park, SW1A) 

Of all the ways to experience 

the champagne life, this has 

to be one of the best: a luxury 

picnic prepared by one of the 

most prestigious hotels in London. You 

can even pay extra to have a butler serve it 

to you. 

Bubbledogs (Fitzrovia, W1T) 

If you like the simple idea of only 

champagne and hotdogs on the menu, 

then Bubbledogs is well worth a visit. This 

might sound like a bit of a bizarre concept 

but don’t worry they do both of these 

things VERY well. 

The Ritz Terrace (The Ritz Hotel, 

150 Piccadilly, W1J) 

Last and by no means least, it really 

doesn’t get any more fabulous than 

the outdoor terrace at the Ritz. This 

will undoubtedly be one of the most 

memorable glasses of champagne you’ll ever 

enjoy but you might be waiting some time for a 

reservation, what with it being one of the most 

sought-after places in London and all. 

Bob Bob Ricard 

(Upper James Street, W1F) 

Would this really be a serious list about 

drinking champagne if we didn’t include 

Bob Bob Ricard? Their world-famous ‘Press 

for Champagne’ button has been bringing 

joy to its clientele for years now and even 

more to their Instagram followers.

What a summer it was! We had record 

breaking temperatures, a new Prime Minister 

and an extremely busy time across our hotels. 

We were pleased to open the new front 

terrace at Florentine that allowed people to 

savour the warm summer days and nights 

whilst listening to the UK’s best young talent 

in The Lounge. Our smallest guests enjoyed 

the kids activities with a dedicated puppy 

themed play room with their favourite 

characters. 

And now autumn - a lively period in London 

filled with cultural events. Fashionistas will 

attend the glamorous shows of the iconic 

London Fashion Week. The London Design 

Festival will host some of the world’s most 

talented designers and art lovers will be at 

Frieze - one of the most influential art events 

on the scene. 

This autumn we will change the great 

bottomless sushi brunch with live music at 

Chino Latino from Saturdays to Sundays. Try 

the amazing new menu at our latest restaurant 

Kitchen At Holmes in our new Holmes Hotel 

where DJs will be spinning lounge and funky 

tunes in the Bar. PRIMO and Vic’s Bar have the 

pleasure of hosting Jazmin Chloe, memorable 

X-Factor contestant who will perform with her 

elegant jazz duo. 

For this edition of our magazine we have 

interviewed Richard Hadfield - ex-member of the 

amazing band Collabro who were Britain’s Got 

Talent winners. Don’t miss his dazzling monthly

RICHARD HADFIELD 

What has been your best gig to date? 

I think my best gig to date has to be performing 

for Duchess Ferguson at Windsor Castle. We had 

a crazy amount of celebs in the room like Kate 

Moss, Naomi Campbell, Elton John and Robbie 

Williams. It was great! 

How would you describe your music? 

My music is eclectic - from jazz to classical but it 

definitely edges more towards the ballad side 

of things. Ultimately I aim to tell a true 

story through my interpretations of 

songs. I think that’s why people 

enjoy my shows because they can 

see the passion behind every 

word I sing. 

Who inspires you and why? 

My family inspires me with all 

their love and support for what I 

do. I could tell you artists who have 

career paths I’d like to follow but I feel 

like that isn’t what spurs me forward. I sing 

because I enjoy what music brings to people’s 

lives. 

What is your favourite cocktail? 

I love an Old Fashioned. Whiskey is the nectar of 

the Gods! 

What has been the craziest moment in your 

career so far? 

It has to be finding out I had accomplished a 

number one album while being part of Collabro. 

I didn’t quite know how to handle that. It was 

just so overwhelming when we heard it on the 

radio as we were coming back from Cardiff 

Pride. The car was shaking on the M25 as we 

celebrated! 

What are some of your favourite songs in 

your set? 

That’s a hard question. It’s forever changing 

although Bewitched will always be one that I 

hold dear as it was the first song I performed 

at Ronnie Scott’s on the Late Late Show. 

I currently really enjoy singing 

Somewhere from West Side Story. 

It really sits well in my voice and 

I have had great responses 

from my online audience. 

Who have you had the 

pleasure of working with? 

The list goes on and on!

Bocelli. One of my favourite 

collaborations though was the 

Royal Variety Performance where we 

got to share the stage with Ed Sheeran, Shirley 

Bassey, Bette Midler and many more. Such fond 

memories. 

What have you got coming up? 

I’m very much looking forward to my ‘Movies 

and Musicals’ night at The Crazy Coqs on 14th 

September. I also have a very exciting show 

alongside Alison Moyet at the Royal Festival Hall 

on the 20th September in honour of the life and 

work of Michelle Legrand. Apart from live shows, 

an EP is in the works currently so keep your eyes 

peeled for that!
