St Austell Brewery’s award-winning pub and hotel estate spans the South West<br />

ranging from Bristol in the east, to the Isles of Scilly in the west and includes nearly<br />

180 pubs, hotels and inns. Many of the South West’s most famous pubs are part of<br />

the St Austell Brewery estate and you will usually find one of our pubs at the heart<br />

of every community.<br />

The Barley Sheaf, currently<br />

closed, had a great reputation<br />

as the town’s leading live music<br />

venue, attracting local and<br />

joint investment to reinvigorate<br />

the site and we are happy to<br />

Spirits and cocktails appear to be stealing the limelight at the moment<br />

as the sexy drinks category, while ‘Steady Eddie’ wine sometimes<br />

feels like the frumpy cousin in the corner.<br />

Why not piggyback on the popularity of cocktails and the rising trend<br />

of spritz drinks by testing out these fresh and exciting recipes? They all<br />

went down a treat at our recent Bristol <strong>Trade</strong> Show and we’re certain your<br />

customers will love them too...<br />

White Wine Siesta<br />

Ingredients:<br />

50ml Tanti Petali Pinot Grigio, 12.5ml tequila, 12.5ml<br />

Campari, 12.5ml grapefruit juice, 12.5ml lime juice,<br />

12.5ml sugar syrup.<br />

Method:<br />

Shake all ingredients and serve over ice in an old<br />

fashioned tumbler. Garnish with a wedge of grapefruit.<br />

Rosé Mojito<br />

Ingredients:<br />

50ml Falling Petal White Zinfandel, 25ml white rum, 85g<br />

pineapple chunks, 6 mint leaves, 4 lime wedges, 12.5ml<br />

sugar syrup, soda water.<br />

Method:<br />

Muddle lime wedges, mint and pineapple in the bottom<br />

of a high ball glass. Build all the ingredients over ice and<br />

garnish with mint and pineapple.<br />

Shiraz Bramble<br />

Ingredients:<br />

50ml gin, 25ml lemon juice, 25ml sugar syrup,<br />

25ml Yallaroo Shiraz.<br />

Method:<br />

Shake all ingredients except the wine then serve over ice<br />

in a tumbler. Float the red wine on top and garnish with a<br />

lemon wedge.<br />

B&B Spritz<br />

Ingredients:<br />

25ml bourbon, 25ml Chambord, 75ml Prosecco<br />

Borgo SanLeo, 25ml soda water, 2 squeezes of lemon,<br />

raspberries, blackberries, slices of lemon.<br />

Method:<br />

Build all the ingredients in a large wine glass filled with<br />

ice. Garnish with slices of lemon and a blackberry.<br />

English Garden Spritz<br />

Ingredients:<br />

25ml gin, 25ml elderflower liqueur, 75ml Prosecco Borgo<br />

SanLeo, 25ml soda water, lemon juice, mint leaves, slices<br />

of lemon, slices of cucumber.<br />

This has resulted in an increase in demand for premium spirits. With gin sales on the rise, vodka<br />

has slowed and dark spirits are experiencing growth – Tequila and Mezcal made an enormous<br />

leap in volumes in 2018.

INGREDIENTS<br />

HOW TO MAKE IT<br />

50ml Malibu<br />

75ml Pineapple Juice<br />

50ml Coconut Milk<br />

10ml Lime Juice<br />

5ml Grenadine<br />

Fill a cocktail shaker with ice and add the Malibu,<br />

pineapple juice, coconut milk and lime juice.<br />

Shake well and strain into a hurricane glass filled<br />

with ice. Drizzle in the grenadine to create a<br />

dripping blood effect. Garnish with pineapple<br />

leaves and a toy spider.<br />

Bloody Death<br />

INGREDIENTS<br />

50ml Dead Man’s Fingers<br />

Spiced Rum<br />

90ml Tomato Juice<br />

10ml Cranberry Juice<br />

Bat’s Blood Mojito<br />

40ml Bacardí Carta Blanca Rum<br />

20ml Blood Orange Juice<br />

20ml Lime Juice<br />

2tsp Caster Sugar<br />

2 dashes of Angustora Bitters<br />

10ml Grenadine<br />

Bat-shaped Jelly Sweets<br />

6-10 Mint Leaves<br />

Dissolve sugar with Bacardí Carta Blanca Rum,<br />

blood orange juice and lime juice, then add half<br />

of the mint leaves, bitters and crushed ice. Mix<br />

well and top with more crushed ice. Float the<br />

grenadine on top before garnishing with the rest<br />

of the mint leaves and bat jelly sweets<br />

Coffee Liqueur<br />

Fill a coupe or martini glass with ice and water<br />

and set aside. Add the ingredients to a cocktail<br />

shaker full of ice and shake for at least 15<br />

seconds. Tip out the water and ice from your<br />

chosen glass before double straining the shaken<br />

Meet Colwith Farm Distillery<br />

As part of our new ‘Meet The Distiller’ feature, we are travelling the length and breadth of the<br />

South West to bring you the latest information from some of your favourite drinks producers.<br />

Next on our travels is Colwith Farm Distillery, where Emma Oakland and Karen Balman from<br />

our <strong>Free</strong> <strong>Trade</strong> team met with founder and Master Distiller, Steve Dustow.<br />

olwith Farm Distillery is<br />

Cornwall’s first ‘plough to<br />

bottle’ distillery, founded upon five<br />

generations of farming history.<br />

Whereas most craft distilleries<br />

buy-in mass produced ethanol, at<br />

Colwith Farm Distillery, everything<br />

is delicately produced from scratch<br />

- on a single estate. In terms of<br />

provenance, authenticity and quality,<br />

put simply - it doesn’t get any better.<br />

The idea to build the region’s first<br />

plough to bottle distillery was<br />

developed by brothers Steve & Chris<br />

in 2010. Producing premium spirits<br />

represented the perfect way to add<br />

value to the crops produced on<br />

Colwith Farm.<br />

Stafford Dustow (namesake of<br />

Stafford’s Gin) moved to Colwith<br />

Farm, near Lanlivery in 1904 and<br />

five generations of the family have<br />

passionately farmed the soils ever<br />

since. At present, the father and<br />

son team of Mike and Chris are<br />

responsible for growing the crops<br />

that are transformed into premium<br />

spirits. Steve and Sophie look after<br />

the distillery, whilst Granddad Clive,<br />

now in his 80’s, keeps an eye on<br />

general proceedings and tends to the<br />

animals.<br />

Their crops are grown within a few<br />

miles of the distillery and thereafter,<br />

every step of the production<br />

process is delicately carried out<br />

in-house. From preparing the wash,<br />

fermenting, distilling, rectifying<br />

and finally bottling. Even the water<br />

used in the production process rises<br />

from an aquifer situated beneath<br />

the distillery. It is much more<br />

challenging, time consuming and<br />

costly to produce spirits this way -<br />

but they truly believe it’s worth it.<br />

Due to the variety of crops being<br />

grown on Colwith Farm, and the<br />

complexity of the equipment in the<br />

distillery, a plethora of premium<br />

spirits can be lovingly crafted from<br />

one site. Their Aval Dor Vodka<br />

(the Cornish word for potato) is<br />

crafted from King Edward potatoes.<br />

Stafford’s Gin is made by infusing<br />

a blend of botanicals from Colwith<br />

Farm and further afield with Aval<br />

Dor Vodka. And their whiskey<br />

project - well you’ll just have to go<br />

and harvest the potatoes used to make<br />

our gin and vodka on our fifth-generation<br />

family farm. Every step of the process is<br />

done here – on a single estate.<br />

WHY IS KEEPING EVERYTHING IN<br />

HOUSE IMPORTANT TO YOU?<br />

SD:<br />

As we do everything, growing the potato<br />

right through to hand bottling our spirits,<br />

there is a lot to monitor and manage. Our<br />

strength is our weakness! We spend six days<br />

a week in the distillery making world class<br />

spirits so sometimes it is hard to find time<br />

for admin, marketing, accounts etc. This<br />

said – we wouldn’t have it any other way.<br />

We can control every step of the intricate<br />

process to make sure the product is perfect.<br />

It takes six months to grow the perfect<br />

potatoes, our delicious Cornish potatoes<br />

are used at all of Rick Stein’s restaurants<br />

and take-aways, then six weeks to make<br />

the vodka. Ensuring the product we make<br />

is world class. This is a family business<br />

and it means everything to us to produce<br />

Cornwall’s first plough to bottle spirits.<br />

AND WHAT IS THE MOST ENJOYABLE?<br />

Firstly, working with the family. My<br />

dad and brother are always on the farm,<br />

grandad visits daily, my little boy was here<br />

yesterday, and my wife does the accounts.<br />

We have a small, passionate team, who<br />

we consider our extended family – they<br />

are from the local village. And of course,<br />

knowing that we turn our humble potatoes<br />

into Aval Dor Vodka which won silver<br />

in Best Vodka in the World this year is<br />

enjoyable.<br />

SD:<br />

Well this is the realisation of an eight year<br />

dream for our family. Back in 2010 we<br />

started looking into it and now we are set<br />

up to produce any spirit from scratch. We<br />

built a visitor centre because of the huge<br />

amount of interest at events and host guided<br />

tours, a gin masterclass and other bespoke<br />

events.<br />

Combine the wet ingredients and a<br />

handful of raspberries in a cocktail<br />
