The <strong>Boker</strong> Core Anniversary 150<br />

expands our successful series of chef's<br />

knives with an anniversary edition with<br />

a blade made of the precisely cut carbon<br />

steel O1, which is also limited to 150<br />

pieces worldwide. The noble handle is<br />

made of smoked chestnut wood, and<br />

the blade is provided with an elaborate<br />

two-tone special etching, which shows<br />

the <strong>Boker</strong> tree as a genuine gold etching<br />

with deep black inscription.<br />

That's an excellent reason to celebrate.<br />

It goes without saying that we would<br />

like to share this remarkable anniversary<br />

with all our customers and fans.<br />

Therefore, we are proud to present to<br />

you this unique, full tang Damascus<br />

knife. This exclusive piece is literally a<br />

tangible piece of <strong>Boker</strong> history.<br />

In "the good old days," before electricity<br />

became the standard power source,<br />

many production machines were steampowered.<br />

Steam was generated in a<br />

central location and piped to the various<br />

machines across the Manufactory's<br />

shop floor by means of huge flywheels.<br />

Today, one of those flywheels has its<br />

permanent place on our premises as<br />

a memento of the early days of our<br />

company, and a reminder of the changes<br />

we have weathered in the past century<br />

and a half. We took a massive piece of<br />

the flywheel shaft to forge the 180-layer<br />

Damascus steel used to create this<br />

exclusive anniversary edition designed<br />

by Chad Nichols. Now, all owners of<br />

these exclusive kitchen knives will be<br />

able to hold an authentic piece of <strong>Boker</strong><br />

history in their hands.<br />

the blade - as you know, the <strong>Boker</strong> tree<br />

logo goes back to the huge chestnut<br />

tree that used to grow on our very<br />

first company premises. Although that<br />

chestnut tree was struck down by a<br />

thunderstorm in the early 20th century,<br />

the smoked chestnut wood of the<br />

handle scales harkens back to the roots<br />

of the famous logo, giving every knife a<br />

unique, inimitable look.<br />

A special anniversary emblem in the<br />

handle scale creates an elegant<br />

accent. The knives are handcrafted in<br />

our Solingen manufactory in a strictly<br />

limited worldwide edition of 150 pieces.<br />

Each knife has an individual serial<br />

number and comes with a certificate<br />

of authenticity, packaged in an elegant<br />

Naturally, we want to celebrate our<br />

150th anniversary with another special<br />

edition, based on our successful line of<br />

kitchen knives, <strong>Boker</strong> Core. In the 17th<br />

century, a huge chestnut tree used to<br />

provide welcome shade for the small<br />

tool manufactory in Remscheid owned<br />

by the <strong>Boker</strong> family. It is well known<br />

that this tree inspired the name of<br />

the <strong>Boker</strong> Manufactory and the worldfamous<br />

corporate logo.<br />

Paying homage to the beginning of our<br />

company's history 150 years ago, this<br />

model features a handle made from<br />

smoked chestnut wood. With its dark<br />

color and subtle pattern, the material<br />

emphasizes the elegant design and<br />

exclusive nature of the knife. The<br />

die-forged blade is made from O1<br />

carbon steel, which offers superior<br />

characteristics and excellent edge<br />

retention - the perfect material for high<br />

quality kitchen knives. Even in the age<br />

of state-of-the-art powder metallurgical<br />

steel, classic non-stainless carbon<br />

steel still has its raison d'être.<br />

Many users appreciate the traditional<br />

aspect of carbon steel, as well as the<br />

combination of edge retention and<br />

easy sharpening, never quite achieved<br />

by stainless steel. For blades requiring<br />

an extremely fine edge, e.g. razor<br />

blades, carbon steel is still a matchless<br />

choice. In the kitchen, it is truly a joy<br />

to work with a fine edged carbon steel<br />

blade that offers unsurpassed cutting<br />

properties. With a little care, a blade<br />

made from carbon steel has the same<br />

service life as a stainless blade. In the<br />

kitchen, you simply have to rinse the<br />

blade under hot running water after<br />

each use.<br />

One completely natural property of the<br />

material is the patina that will develop<br />

over time, especially after cutting<br />

acidic food. It is absolutely normal for<br />

the blade to take on a grayish blue hue,<br />

which is not a flaw. On the contrary,<br />

the patina (oxide layer) protects the<br />

blade and makes it more resistant to<br />

outside conditions. The patina often<br />

develops after the first use and cannot<br />

be removed. For the expert, it is a sure<br />

sign of high quality carbon steel.<br />

In addition, the blade features twotone<br />

etching with the historic <strong>Boker</strong><br />

tree etched in gold. Providing a strong<br />

contrast and elegant appearance, the<br />

inscription is etched in deep black.<br />

The elaborate blade etching process<br />

according to Solingen tradition is<br />

reserved for the finest, most exclusive<br />

knives, highlighting the special status<br />

of this anniversary edition in our<br />

product range.<br />

All knives in this series are handcrafted<br />

in Solingen and strictly limited to 150<br />

pieces worldwide. Each knife has an<br />

individual serial number and comes<br />

with a certificate of authenticity,<br />

We asked ourselves how the knife of all<br />

knives should be made. Which materials<br />

and techniques should be used? Then we<br />

found the answer, and developed a world<br />

premier.<br />

For the <strong>Boker</strong> Damascus Superior series<br />

we use, for the first time, a four strand<br />

Torsion Damascus with a separately<br />

forged Damascus cutting edge, which is<br />

done by German Damascus forger Andreas<br />

Henrichs with fascinating precision,<br />

exclusively for <strong>Boker</strong>. In an extremely<br />

elaborate process, single Damascus<br />

layers are forged by hand to a massive<br />

square Damascus bar. This square bar<br />

is twisted 15 times, which creates the<br />

unique pattern of Torsion Damascus. Four<br />

of those strands, and a fifth non-twisted<br />

Damascus strand are forge-welded into<br />

the final shape.<br />

The result is a blade blank with<br />

extraordinary structure, unbelievable<br />

stability, and the basis for excellent<br />

cutting ability. In the <strong>Boker</strong> Manufactory<br />

in Solingen, the blade blank will then be<br />

processed by hand in more than 150 steps<br />

to the complete knife.<br />

THE ART OF DAMASCUS<br />

FORGING<br />

This method of forging Damascus<br />

was used in the Middle Ages to forge<br />

extremely high class sword blades for<br />

the gentry. Swords made of Torsion<br />

Damascus were extremely rare and<br />

sought after, so much so that the Vikings<br />

raided parts of Europe to obtain such<br />

swords.<br />

DAMASCUS DETAILS IN<br />

HANDLE<br />

For the handles, we use African<br />

Grenadill hardwood. Grenadill wood<br />

offers a beautiful grain, which is a<br />

perfect addition to the intricate blade,<br />

and provides an excellent balance to the<br />

knife. Due to its high content of oil, it is<br />

highly moisture resistant.<br />

The impressive wooden handle is<br />

framed by two Damascus bolsters and<br />

a Damascus butt cap, both made of<br />

stainless powder metallurgical Damascus<br />

with 300 layers. The handle pieces are<br />

individually hand-fitted to each blade,<br />

providing balance and beauty.<br />

Each of these works of art carries an<br />

individual serial number, making it<br />

possible to track the entire production<br />

process in the <strong>Boker</strong> Manufactory. The<br />

knife will be delivered in an exclusive<br />

wooden presentation case and includes<br />

a certificate of authenticity and owner‘s<br />

manual.<br />

A milestone in the history of kitchen knives<br />

by <strong>Boker</strong>. Made completely by hand, this<br />

unique work of knife art impresses every fan<br />

of high class cutting tools made in Solingen.<br />

Famous custom knifemaker Jens Ansø from<br />

Denmark created this puristic and extremely<br />

functional knife concept for <strong>Boker</strong>, in a<br />

traditional Scandinavian design. The main<br />

focus of Jens Ansø was the demanding user.<br />

The result, in his collaboration with the <strong>Boker</strong><br />

R & D team, is a knife series that combines<br />

superior function with a simple design and<br />

excellent ergonomics. In keeping with the<br />

high end concept, only the best quality<br />

materials were selected, which takes the<br />

functionality of this series one step further.<br />

The knives in this series are not meant for<br />

collector's pieces for the showcase - they<br />

are designed for daily use and downright<br />

demand it! The Damascus Pure models<br />

feature stunning, 200-layer Damascus steel,<br />

forged by Chad Nichols from Mississippi.<br />

Chad is one of the most innovative<br />

Damascus forgers worldwide and impresses<br />

the international knife community with his<br />

hand forged stainless Damascus steels. We<br />

chose him as the ideal partner for this<br />

demanding project when it came to the<br />

selection of the adequate blade material.<br />

The "Boomerang" pattern, with its unique<br />

and attractive appearance, is the perfect<br />

choice for a high end kitchen knife due to its<br />

stainless features. The blades not only show<br />

an appealing, contrasting pattern, they are<br />

also razor sharp and well balanced, and will<br />

conquer any cutting task with ease.<br />

Another impressive feature of this series<br />

is the handle material. The bog oak wood<br />

is not a "species" of wood, but oak logs,<br />

which laid in water or swamps for centuries<br />

and came up when the ponds or swamps<br />

dried out. Over this long period of time,<br />

the tannic acid of the wood reacts with the<br />

iron salts in the water, which results in a<br />

very high hardness and a handsome, deep<br />

brown coloring. This exquisite handle material<br />

harmonizes perfectly with the Chad Nichols<br />

Damascus blade.<br />

With the successful cutlery series <strong>Boker</strong><br />

Damascus Black, we present kitchen knives<br />

with a stunning look and feel, and aboveaverage<br />

performance. The best of two<br />

worlds: A traditional Japanese chef's knife<br />

- handmade in Solingen, Germany.<br />

Not only do many top chefs swear by<br />

Japanese kitchen knives - they are also<br />

becoming increasingly popular with<br />

ambitious home cooks. The merits of a knife<br />

with Japanese handles and the traditional<br />

construction of a blade with stainless steel<br />

ferrule are obvious, because delicate foods<br />

can be cut and cooked very gently.<br />

When chopping herbs, for example, the<br />

very fine cut leaves hardly any essential<br />

oils. Flavors are not lost, and the unwanted<br />

tears when chopping onions can also be<br />

avoided. The perceived sharpness when<br />

The secret of the unusual sharpness lies in<br />

the material and its processing. The blade<br />

consists of 37 layers of Damascus steel. The<br />

premium blade steel VG-10, made in Japan,<br />

is used for the core, and is characterized by<br />

a high degree of hardness, toughness and a<br />

homogeneous crystalline structure.<br />

In a direct comparison of the cutting<br />

performance with a product of an established<br />

Solingen kitchen knife manufacturer<br />

according to DIN EN ISO 8442-5, the series<br />

<strong>Boker</strong> Damascus Black are not only superior in<br />

the proverbial sense - the cutting performance<br />

of our knives is more than 68% higher than<br />

that of the competitor's product in the<br />

representative DIN test. In addition, the series<br />

<strong>Boker</strong> Damascus Black convinces by an initial<br />

sharpness that is far superior, making frequent<br />

re-sharpening a thing of the past.<br />

The handle material is black plywood, which,<br />

due to its beautiful and dramatic color,<br />

emphasizes the finely matted stainless steel<br />

CONSTRUCTION METHODS & BLADE JOINTS<br />

The knife has been an essential universal tool for more than 2.4 million years. Knives are available in a wide variety of shapes and<br />

designs for almost any purpose. As a tool, kitchen implement, decorative object or collector's item – people value the advantages<br />

of these sharp tools in every kitchen. The construction possibilities for a kitchen knife are almost as varied as the possible uses<br />

– from cutting fresh bread to carving a beef tenderloin or filleting fresh fish. At the <strong>Boker</strong> Manufactory, we use three different<br />

blade and handle joint designs, depending on the knife series. Each design has its own tradition and purpose, and offers different<br />

advantages in terms of production, handling and use. Despite all differences, these designs of <strong>Boker</strong> kitchen knives have one<br />

thing in common - they are all excellent and superior kitchen knives that you will never want to put down. Depending on your<br />

individual and personal preferences in terms of design, weight, ergonomics and balance, you are sure to find the right knife in<br />

THE FORGED BOLSTER<br />

European kitchen knives are mainly used to cut with pressure.<br />

The die-forged bolster offers a few distinct advantages. For this<br />

cutting technique, the index finger or middle finger presses<br />

down on the end of the blade. Thanks to its three dimensional<br />

shape, the bolster serves as a comfortable pressure point.<br />

At the same time, its weight supports the cutting movement<br />

when the blade moves forward. The knives in our <strong>Boker</strong> Core<br />

series are die-forged with a bolster. Die-forging is a technique<br />

with roots in the early days of industrialization. First, a roughly<br />

shaped piece is cut off from the raw material. This piece<br />

is brought to a red heat and hammered into shape inside a<br />

massive form consisting of two halves, top and bottom. This<br />

process is also called drop forging. The bottom die serves as<br />

a counter surface. The die dropping down onto the blade is<br />

affixed to a drop hammer weighing two tons. The resulting<br />

blade blank needs to be soft-annealed before the blanks are<br />

deburred, which means that the excess material created<br />

during the forging process is removed. The blank is calibrated<br />

again on a knuckle joint press with 800 tons of pressing force.<br />

This process is particularly suitable for sharply contoured<br />

blade profiles. The bolster remains a technical challenge,<br />

even and especially after forging. A grinder now shapes the<br />

knife's fine contour from the rough blank. The complex threedimensional<br />

and conical structure of the bolster requires the<br />

grinder's full experience and concentration. Careless handling<br />

can cause unsightly dents or notches at all junctions of the<br />

blade and handle.

THE FULL TANG — ROBUST & SIMPLE<br />

The full tang is the simplest and most robust solution. The<br />

concept comes from outdoor knives, and is most often used<br />

for knives that need to be particularly sturdy and withstand<br />

even abuse and improper usage, such as prying or chopping.<br />

The full tang follows the entire handle shape; the scales are<br />

riveted on from both sides. Then, the handle scales are fitted<br />

to the tang on a belt sander and also rounded so that they offer<br />

a pleasant and secure grip. The knives in our <strong>Boker</strong> Saga series<br />

feature a full tang.<br />

THE PUSH TANG —<br />

AS MUCH AS NEEDED, AS LITTLE AS POSSIBLE<br />

The push tang is the lightest of the listed joints. Its philosophy<br />

is "as much as needed, as little as possible". The actual tang<br />

is narrower than the ricasso that goes on into the handle. The<br />

tang runs through about a third of the length of the handle.<br />

Here, it is held by a single stainless steel rivet. The wood at<br />

the front end of the handle is protected by a finely satinized<br />

ferrule. Fitting the ferrule is particularly difficult, because its<br />

spot on the handle is both conical and oval. This means that<br />

it doesn't have a regular geometric shape. This construction<br />

follows the Japanese tradition and we use it for our series<br />

<strong>Boker</strong> Damascus Olive and <strong>Boker</strong> Damascus Black. In Japanese<br />

cooking, most cuts are pulled. With this technique, the blade is<br />

easier to control if the handle is lighter compared to the blade.<br />

If flexural forces came into play during the cutting process –<br />

though those are negligible when working with food – they<br />

would be happening in the strongest spot of this connection.

Depending on the series, making a<br />

kitchen knife requires up to 80 different<br />

production steps. About ten in-house<br />

departments are involved. Each build<br />

and finish requires some of the same<br />

processing steps and some different<br />

ones.Before production can begin, the<br />

product idea is built digitally with<br />

the help of CAD software. A simple<br />

hand-drawn sketch made by one of<br />

our knife designer and custom knife<br />

makers often serves as the basis for<br />

the first construction drawing. Once<br />

the design engineer has determined all<br />

production-relevant components, they<br />

are either made in-house or procured<br />

from suppliers. Then, production can<br />

begin.<br />

THE DROP FORGE<br />

The base material is cut into pieces,<br />

brought to a red heat and hammered<br />

in a massive die with a drop hammer<br />

weighing two tons. The resulting blade<br />

blank needs to be soft-annealed before<br />

it can be deburred, which means that<br />

the excess material created during the<br />

forging process is removed. The blank<br />

is calibrated again on a knuckle joint<br />

knives with a forged bolster.<br />

STAMPING<br />

Here, the blades of the non-forged<br />

knives are stamped out of plates or<br />

coils – depending on the material's<br />

commercial form – or cut with a laser or<br />

water jet cutter. Forging and stamping<br />

are the respective first steps in making<br />

a knife. The purpose and shape of the<br />

product is already recognizable.<br />

HARDENING<br />

The heat treatment of steel is a high<br />

art. When we harden and anneal steel,<br />

we push for the limits of the steel in<br />

question. In order to attain the required<br />

edge retention, the steel needs to be as<br />

hard as possible, while also having enough<br />

resilience not to break during use.<br />

GRINDING<br />

Here, the blade receives its long tapering<br />

grind from spine to edge. Cooling the<br />

piece requires great diligence at this stage.<br />

Otherwise, heat might warp the blade or<br />

even take away some of its hardness.<br />

GLAZING<br />

True Solingen handcraft begins with<br />

glazing. Here, the spine is ground, the<br />

transition from blade to tang is cleaned<br />

up and the unique Solingen blue finish<br />

is applied. The blades of the <strong>Boker</strong> Saga<br />

Satin series keep their blue satin finish<br />

surface. For the series <strong>Boker</strong> Damascus<br />

Olive and Damascus Black, the blades are<br />

also sand blasted, which brings out the<br />

texture of the stainless Damascus.<br />

DAMASCUS ETCHING<br />

Here, the blades of the hand forged<br />

Damascus knives are etched in order to<br />

bring out the lines of the different steel<br />

layers. We use a specially formulated<br />

acid bath, which is precisely adapted to<br />

the Damascus and the desired look of the<br />

blade.<br />

SCALES<br />

This department stores lumber from<br />

indigenous trees, 5,000-year-old bog oak<br />

and rare burl varieties. The first step of<br />

handle production is cutting the wood by<br />

hand on a bench saw – with a level of<br />

accuracy down to 1/10 of a millimeter. The<br />

resulting piece is then finished by hand or<br />

on a CNC milling machine. Our carpenters<br />

say, "It's all black before the saw." This<br />

means that you have to cut into the wood<br />

in order to be able to tell which parts and<br />

how much of the purchased raw material is<br />

actually usable.<br />

MOUNTING & FINE GRINDING<br />

In mounting, handles and blades are<br />

'married." Depending on the build, the knife<br />

is assembled with rivets, hollow rivets or<br />

extremely durable adhesive connections.<br />

The contour is also pre-shaped on the<br />

grinding belt. The contour that was<br />

prepared in mounting is now given its<br />

final finish on fine grained grinding belts<br />

and discs. Apart from the blade, the<br />

knife receives its final aesthetics and<br />

functionality.<br />

FINAL CHECK - HONING<br />

At the end of the process, experienced<br />

eyes scrutinize the knives. Only completely<br />

flawless knives are hand-honed and then<br />

checked again, cleaned and packaged.

Danish design emerged as a style in<br />

the middle of the 20th century, strongly<br />

influenced by the ideas of the German<br />

Bauhaus. This design movement<br />

developed its own no-nonsense look<br />

characterized by simple formalism,<br />

minimalism, clarity and functionality,<br />

as well as by the use of cutting edge<br />

industrial technology in the realization<br />

of this design vocabulary. This is the<br />

tradition of Danish designer and custom<br />

knifemaker Jens Ansø, who designed<br />

the kitchen knife series <strong>Boker</strong> Pure<br />

following these exact design principles.<br />

The knives have unique, classically<br />

simple lines and offer excellent balance,<br />

handle ergonomics and functionality.<br />

This minimalistic design is highlighted<br />

with the use of "Bergische Eiche," a<br />

regional oak wood, for the handles.<br />

The pleasing pattern of the elaborately<br />

finished oak wood is only interrupted<br />

by three understated stainless steel<br />

rivets, which are applied with great<br />

care in a completely manual process.<br />

In order to match the aesthetic quality of<br />

the series with its technical properties,<br />

we use the powder metallurgical steel<br />

CPM-154, made by the American<br />

manufacturer Crucible Industries. This<br />

steel is made by melting the already<br />

excellent base steel 154-CM in order to<br />

add more carbides.<br />

The steel is then atomized in a vacuum<br />

and quenched with a cold air jet. The<br />

resulting steel powder is pressed and<br />

sintered below melting temperature.<br />

This process makes it possible to<br />

give the steel a much higher carbide<br />

concentration than regular blade<br />

steel; and the carbides give the steel<br />

additional hardness and edge retention.<br />

The bar graph (left) shows the edge<br />

retention compared to an established,<br />

popular kitchen knife steel, the<br />

chromium-molybdenum-vanadium steel<br />

X50CrMoV15, as well as to the excellent<br />

440C. The superior edge retention<br />

of the 440C is far surpassed by the<br />

powder metallurgical steel CPM-154,<br />

which is a guarantee for a sharp knife<br />

that keeps its edge for a very long time.<br />

We are a modern and sustainable company<br />

with roots in an industry with a long regional<br />

history. Our region is the Bergisches Land,<br />

where blade production was established<br />

as early as the Middle Ages, thanks to two<br />

main factors. The dense forests supplied<br />

wood as a renewable resource that could be<br />

carbonized for forging. Many rivers running<br />

through narrow valleys – primarily the<br />

Wupper River – supplied easily accessible,<br />

renewable energy for grinding mills and<br />

smithies.<br />

Now, the Bergisches Land does not<br />

actually take its name from its mountainous<br />

topography ("Berg" being German for<br />

"mountain"), but from the noble House<br />

von Berg. Their mighty counts left their<br />

mark on the region like no other dynasty,<br />

reaching all the way to the Rhineland. It<br />

is no accident that their ancestral seat of<br />

Burg Castle has become the landmark of<br />

the Bergisches Land. Thanks to our close<br />

relationship with the castle preservation<br />

association, Schlossbauverein Burg an der<br />

Wupper e.V., we were able to obtain a small<br />

amount of wood from the 100-year-old oak<br />

beams of this historic monument.<br />

towers built around the year 1130. From<br />

the top with its three wooden brattices,<br />

visitors have a panoramic view all the way<br />

to the neighboring town of Remscheid. A<br />

covered bridge connects the tower with<br />

the shield wall and wall walk. In medieval<br />

times, it was the only access to the tower.<br />

Today, the west side of the keep has an<br />

additional entrance to the ground floor.<br />

The archway bears a sandstone plate<br />

with information about the history of the<br />

mighty tower. In the past, the ground floor<br />

was called the dungeon, accessible only<br />

through an opening from the floor above<br />

and used as storage for stone balls. In<br />

case of an attack, the defenders of the<br />

keep would pelt attackers with the balls<br />

from the upper floors. The ground floor<br />

could hold up to 12 tons of stones. From<br />

the first floor, stairs in the outside walls,<br />

which are up to four meters thick, lead<br />

to the upper floors. We process pieces<br />

of the original oak beams of the keep<br />

at Burg Castle with all due respect and<br />

diligence to make handles for our <strong>Boker</strong><br />

Core Damascus, an edition strictly limited<br />

to 199 pieces. The blade is truly special -<br />

the hand forged stainless Damascus has<br />

a breathtaking pattern and offers excellent<br />

resilience and hardness (60 HRC), which<br />

makes the <strong>Boker</strong> Core Damascus an<br />

exclusive collector's item and guarantees<br />

exceptional performance for all cutting<br />

tasks in the kitchen. In Solingen, the<br />

their ancestral home? Each of these works<br />

The wood was sourced from the so-called<br />

keep, the main tower of Burg Castle, which<br />

is an impressive 105 feet tall. The foundation<br />

of the keep (46 ft. x 36 ft.) was laid in the<br />

first building phase of the castle in the 12th<br />

century. The six-storied defense tower with<br />

living quarters was rebuilt in the early<br />

The solid blade blank, made from a<br />

to 58 HRC. In order to give the blade<br />

a longer service life and even finer cut,<br />

our traditional hand grind is then highly<br />

BLADE SHAPES — PURPOSE & USE<br />

At first glance, the wide variety of lengths, widths and shapes of kitchen knife blades might seem a little confusing. Since all<br />

knives are ultimately made for cutting, they are distinguished by their specific intended purpose. The advantages of the different<br />

shapes for different applications are fairly clear and easy to understand, so that the overwhelming number of choices can be<br />

narrowed down. The following list of knife descriptions will help you find the right tools for your kitchen.<br />

THE PARING KNIFE<br />

The paring knife is a small solid foundation for any kitchen knife set.<br />

The blade is narrow so that it can follow the outer circumference<br />

of a small potato as well as the inner circumference of an apple<br />

core. Paring knives are most often used without a board, they are<br />

simply held above a pot or bowl. But you can also use them with<br />

your cutting board to quickly cut a single onion used in a meal for<br />

one or two people or the ingredients of a quick lunch salad.<br />

THE CARVING KNIFE<br />

The carving knife has a long narrow blade capable of cutting<br />

paper-thin slices of roast beef, pot roast or ham. The blade is<br />

narrow to provide a smaller surface for the meat to stick to.<br />

The first choice for foods with a juicy and dense texture.<br />

THE PEELING/PARING KNIFE<br />

The length of a peeling knife blade is comparable to that of the<br />

paring knife, though the edge is straight with a sheepfoot tip.<br />

This makes for better utilization of the full cutting length, because<br />

the blade is pulling itself into the cut. The straight edge is also<br />

better suited for cleaning and scraping root vegetables, because<br />

the blade has more contact with the surface and is easier to<br />

control.<br />

THE MEAT FORK<br />

Compared to a regular tableware fork, the meat fork offers the<br />

advantage of its two long and very pointy tines that can easily<br />

penetrate deep into the meat. That makes it perfect for carving<br />

and serving large pieces of cooked meat. Thanks to its long tines<br />

and handle, the meat fork also makes a great barbeque tool.<br />

THE STEAK KNIFE<br />

Steak knives are set on the table. Unlike regular tableware knives,<br />

a steak knife is sharp enough to cut meat into clean bites without<br />

ripping or tearing it. Depending on your personal preference, we<br />

offer steak knives with a smooth cutting edge for the purists, or<br />

with a serrated edge.<br />

THE FILLET KNIFE<br />

The fillet knife is an extreme form of the carving knife. Its main<br />

purpose is the preparation of fish. The fine tip can be used for<br />

opening fresh fish. The slender blade offers raw or smoked<br />

salmon practically no surface for adhesion. The flexible blade can<br />

be flattened onto the cutting board in order to separate the fish<br />

skin from the fillet just above the board. A light knife for light<br />

cooking.

THE SANTOKU<br />

The Santoku knife, or just Santoku for short, serves the same<br />

purpose as the European Chef's Knife. The literal translation<br />

emphasizes this: San = three and Toku = virtues. The three<br />

virtues are fish, meat and vegetables. The Santoku became<br />

popular after World War II, when the Japanese economic boom<br />

meant that meat began to appear on menus next to fish.<br />

A Japanese blade shape was combined with a symmetrical<br />

European blade grind. One striking feature is the shorter<br />

length with the sheepfoot tip. It is proper to use the Santoku<br />

for pulling cuts, following Japanese tradition. The front part of<br />

European kitchen knives used to guide the knife on the cutting<br />

board is not necessary for a Santoku.<br />

THE BREAD KNIFE<br />

Professional chefs refer to the bread knife as "the saw."<br />

However, they are not just cutting bread with this knife, but<br />

all foods that are not strongly textured, e.g., cabbage. Pastry<br />

chefs use their bread knives to separate cake layers. The<br />

wide blade makes it easy to control in soft materials. Another<br />

advantage is the knife's excellent edge retention. When used<br />

correctly, a knife is not dulled in contact with the material but<br />

with the cutting board. With a serrated edge, only the tips<br />

touch the cutting board, protecting the real edge behind them.<br />

THE ALL-PURPOSE/UTILITY KNIFE<br />

The all-purpose/utility knife combines the best of all worlds. It can<br />

be used in hand and on the cutting board. The medium-size blade<br />

offers a reasonable compromise for easy straight and curved<br />

cuts. An aesthetically pleasing all-purpose knife can also serve as<br />

a very nice table or steak knife.<br />

THE CHEF'S KNIFE<br />

The Chef's Knife is the knife you buy when you can only have<br />

one knife.<br />

It is a workhorse, built for fast-paced kitchen<br />

battles. You use it to cook for your extended family, whole<br />

circle of friends or for an entire banquet. It is also the perfect<br />

knife for all passionate home chefs who like convenient cooking<br />

tools. The wide blade can be passed along the knuckles of<br />

your retracted fingers, which enables you to make swift cuts<br />

without risking injury. The food is pushed forward with the<br />

thumb. The classic long and pointy European chef's knives cut<br />

with pressure. With this technique, you really just use the back<br />

half of the blade. The front half is used to guide the knife on the<br />

board. You develop a fluid, even and easy motion and cutting<br />

rhythm. You can also use the spine to push the cut food off the<br />

board into the pot.<br />

THE SMALL CHEF'S KNIFE<br />

Like the Santoku, the small chef's knife is popular because of<br />

its shorter, easily controlled blade and universal applications.<br />

Thanks to the sturdy, wide blade, you can use the small<br />

kitchen knife for many tricky cutting tasks.

Close to the headquarters of the <strong>Boker</strong><br />

Manufactory in Solingen, Germany, lies<br />

Burg Castle on the Wupper River - the<br />

landmark of the Bergisches Land. It is<br />

also one of the largest castles in western<br />

Germany and the largest reconstructed<br />

castle complex in North Rhine-Westphalia.<br />

Today, Burg Castle is used for a variety of<br />

cultural purposes, including as a museum,<br />

event venue and memorial.<br />

In order to be able to fully maintain this<br />

landmark in the future and renew the<br />

energy system, an extensive renovation<br />

program was begun in 2017 and is set to<br />

continue until 2024. The renovation has<br />

enabled us to obtain an exclusive inventory<br />

of original 100-year-old oak beams from<br />

the mighty keep of Burg Castle.<br />

With great care and craftsmanship, we<br />

process these historic oak beams from the<br />

keep into handle scales for our successful<br />

kitchen knife <strong>Boker</strong> Saga, which is available<br />

The design of the Saga series was created<br />

by Danish knife designer and renowned<br />

custom knifemaker Jesper Voxnæs, and<br />

The knife offers excellent handle<br />

ergonomics, is perfectly balanced and can<br />

handle all cutting tasks with ease, due<br />

to the sturdy full tang. To complement<br />

the handle material, which is not only<br />

Thinly sliced vegetables and meat as well as<br />

delicately deboned fish require high-quality<br />

tools. In cooperation with the small Japanese<br />

knifemaker Yamahide, we present to<br />

you a selection of traditionally hand-forged<br />

Japanese cooking knives with blades of<br />

dual-layer steel.<br />

The cutting layer of the blades consists of<br />

shirogami (white paper steel), a non-stainless<br />

unalloyed carbon steel with a high<br />

degree of purity and a fine structure very<br />

close to Japanese sword steel. It is most<br />

often used for fine cutting tools, offering<br />

excellent sharpness, easy sharpening and<br />

maximum edge retention. Its hardness is<br />

at 60-62 HRC. This means that the highly<br />

hardened steel allows for extremely fine<br />

edge angles of 15 to 25 degrees.<br />

The kitchen knives, traditionally ground<br />

on one side, have a slight hollow grind on<br />

the back side, which makes for extremely<br />

precise, straight cuts and best cutting<br />

results. In addition, these knives can be<br />

sharpened on a classic Japanese water<br />

stone. The ferrule made from water buffalo<br />

horn combined with the typically asymmetrical<br />

handle of magnolia wood complete the<br />

authentic, elegant look. Enjoy the best of<br />

Japanese craftsmanship. Please note that<br />

the one-sided grind is only suitable for righthanded<br />

SHARPENING<br />

Of course, modern technology also finds<br />

its way into the subject of sharpening, but<br />

there are still many traditionalists among<br />

the "experts" of this subject. And that<br />

usually means using bench stones.<br />

Such stones can be of very different<br />

nature; they can be natural stones,<br />

synthetically produced stones, or even<br />

mixed forms.<br />

Basically, stones are not used dry.<br />

Depending on the stone one needs water<br />

(as for example with Japanese water<br />

stones, which must be watered properly,<br />

or the Belgian Brocken, with which only<br />

the surface is moistened), or in addition,<br />

oil, as with the Arkansas stones proven<br />

for centuries. While the oil of the oil<br />

stone only has the task to ensure the<br />

gliding on the stone and to flush removed<br />

steel particles out of the stone, the water<br />

forms a grinding sludge especially with<br />

the Japanese water stones, which is<br />

decisively involved in sharpening.<br />

Especially for particularly fine cutting<br />

edges, the highest qualities of the<br />

Arkansas oilstones have enormous<br />

potential, but here too personal<br />

preferences are often decisive.<br />

There are different ways of sharpening<br />

on the bench stone: while one prefers<br />

to sharpen one side of the blade with<br />

circular movements or on the path of an<br />

"8" with the cutting edge (i.e. the back of<br />

the blade in front) until a burr is formed<br />

and then changes sides, the reciprocal<br />

pull against the cutting edge (i.e. with<br />

the cutting edge in front) is a popular<br />

method, especially for fine honing. And as<br />

so often in life, there is not one truth here;<br />

trying out and finding out the personally<br />

preferred method is a recommendable<br />

way here.<br />

It is essential to keep the correct angle<br />

when sharpening. When sharpening on<br />

the stone, the correct angle has to be<br />

determined on the one hand, and on the<br />

other hand it has to be kept constant<br />

during the whole sharpening process,<br />

which of course requires some practice<br />

and experience.<br />

Those who appreciate the traditional<br />

method, but are open to more modern<br />

materials, will of course also consider<br />

bench stones made of ceramic or with<br />

diamond coating. While the handling is<br />

identical to that of water or oil stones, oil<br />

or water can usually be avoided here, and<br />

the wide range of grains also offers all<br />

possibilities here.<br />

It is important that after sharpening a<br />

burr is removed cleanly, depending on<br />

the grinding method. This can be done,<br />

for example, by using honing leather,<br />

which, possibly treated with abrasive<br />

paste, represents the final step and gives<br />

the cutting edge "the final polish" (see<br />

page 72).<br />

If you don't feel safe holding the<br />

angle freehand, there are different<br />

sharpening systems available that offer<br />

a corresponding angle aid, but ultimately<br />

work in a similar way to a bench stone.<br />

One example is the Spyderco Triangle<br />

Sharpmaker, where the plane of focus<br />

is tilted into the longitudinal axis. The<br />

sharpening angle is determined by the<br />

V-shaped arrangement of the rods,<br />

and the knife only has to be guided<br />

downwards along the entire length of the<br />

blade, alternating vertically left and right<br />

along the stone (see p. 72).<br />

Although sharpening is also carried out<br />

by hand, it is much easier to hold the<br />

knife perpendicular than to maintain a<br />

specific angle on a lying bench stone.<br />

Therefore, sharpening systems are an<br />

excellent compromise for all those who<br />

not only value the fine result, but who<br />

may even enjoy the process of sharpening<br />

and honing by hand.<br />

Before we come to another sharpening<br />

option, we would like to say a few words<br />

about the good old sharpening steel.<br />

Often misunderstood as a sharpening tool,<br />

sharpening steel still has its justification<br />

today. However, as already indicated, it is<br />

not suitable for sharpening a blunt knife<br />

because it does not remove material from<br />

the cutting edge.<br />

Basically, a sharpening steel is only used<br />

to keep a sharp kitchen knife sharp.<br />

The finely tapered cutting edge, which<br />

can be knocked over when it comes<br />

into contact with bone or a hard cutting<br />

surface, for example, is straightened up<br />

again with the sharpening steel. To do<br />

this, carefully attach the knife and pull<br />

it over the sharpening steel a few times<br />

with light pressure alternately with the<br />

back of the blade first (!). This will<br />

straighten up the blade again and you can<br />

start to work with fresh cutting power.<br />

The sharpening steel should not be<br />

confused with its similar half brother, the<br />

rod sharpener. Although very similar in<br />

appearance, the difference lies in the fact<br />

that the rod sharpener is made of abrasive<br />

(material-removing) materials, such as<br />

ceramic, synthetic ruby or a diamondcoated<br />

steel.<br />

Since such a rod sharpener is used for<br />

sharpening, it also differs in its handling.<br />

Used mainly for quick "refreshing" of the<br />

sharpness in between, the blade of the<br />

rod sharpener is usually guided along the<br />

rod with the cutting edge first until the<br />

desired sharpness is achieved. In contrast<br />

to sharpening steel, material is removed<br />

from the cutting edge, which means that<br />

a real sharpening process takes place.<br />

And you have to know that neither of the<br />

two tools is suitable to fulfil the function<br />

of the other!

The tradition of opening a Champagne<br />

bottle with a saber was born in the<br />

Napoleonic era. The "sabrage" with the<br />

Briquet saber was founded in 1812 by the<br />

general himself after winning a battle.<br />

This unique custom has survived to this<br />

day, and not only in France. It is a special<br />

highlight at any festive occasion. When<br />

done correctly, it generally works without<br />

issue. After the wire basket is removed<br />

from the cork, one drives the blade of the<br />

saber along the bottleneck and onto the<br />

thickening of the neck below the bottle<br />

head. The whole bottle head comes off<br />

with a bang and the Champagne flows<br />

out. Any resulting glass fragments fly<br />

forward, propelled by the pressure. The<br />

torn off bottle head with the cork will<br />

be labeled with the date and will then<br />

serve as a reminder of the celebration<br />

or as a talisman. True to the original, the<br />

especially high quality Champagne Saber<br />

by Fox is manufactured in the famous<br />

cutlery workshop in Maniago, Italy. The<br />
