I have to share with you this joke about “The Best 13 Spanish Restaurants in Las
Vegas”.
The recommended list was published by Foursquare.com and it was about:
1- Julian Ferrano Tapas at Aria Casino Las Vegas
2- Jaleo at The Boulevard Tower
3- E by Jose Andres at The cosmopolitan
4- Firely Tapas Kitchen and Beer

And the list begin to shrink to something else

Among the good comments about trying this and that from the real Spanish
Restaurants food and Tapas, also came about the good comments for
trying food from the Japanese Restaurants, Italian, and French.
What should have been is “The Best 7 Spanish Restaurants in Las Vegas”.
Really why there is not much more than 7 Spanish Restaurants in Las
Vegas.
I think because of the general confusion with Latin food as Spanish Food.
Because also of the common Latin Spanish language and almost a
compatible culture between Spain and most Latin Countries.
On the contrary in the Foursquare best 13 Spanish Restaurants in Las
Vegas list, the confusion was not about Latin food, well almost if one
counted Italian Food and Japanese food as Latin. Keep in mind mixing
Spanish Food Restaurants with Italian and Japanese Restaurants can be
misleading to potential guest who are inquiring about something and
receiving information about something else.

benefits in return. It is about chatting with the local LEO and feeling
comfortable talking to a cop. Coffee and some sweets break the ice
between anyone and everyone. Why is it so good?

Mediterranean Tuna with Tarragon Vinaigrette

Ingredients
• 1 5-oz can of Genova Yellowfin Tuna, packed in olive oil
• a handful of watercress, rinsed and dried
• 1/2 cup canned black beans, well rinsed
• 1/2 cup canned cannellini beans, well rinsed
• 1/2 cup canned garbanzo beans, well rinsed
• 1/2 cup red kidney beans, canned, well rinsed
• large handful of fresh green beans
• 3 or 4 radishes, sliced paper thin (I used a mandolin slicer)
• about 10 cherry tomatoes
• several basil leaves
• fresh thyme sprigs
• fresh tarragon sprigs
• lemon wedges
Tarragon vinaigrette
• 2 Tablespoons (a fistful) fresh tarragon
• 4 Tbsp olive oil
• 2 Tbsp champagne vinegar (or other mild white vinegar)
• 1 tsp grainy Dijon mustard
• 1/4 tsp salt
• 1/4 tsp fresh cracked black pepper
Instructions
1. Drop the green beans in a pot of boiling water and let blanch for a minute or
two, depending on the size of your beans. You want them to be bright green
and just starting to get tender. Fresh beans cook up very quickly. Drain them
and immediately immerse them in a bowl of ice water. Let sit until cold, then
drain and pat dry,

2. Choose a plate or platter large enough so that each element of the salad has
a spot of its own and arrange the canned beans in sections around the
outside of your plate.
3. Put a small mound of watercress in the center and top the the tuna. Remove it
from the can carefully, trying not to break it up too much.
4. Arrange the tomato halves and green beans on the plate. Scatter the radishes
and fresh herbs across everything. Tuck in the lemon wedges and maybe a
sprig or two of tarragon.
5. Just before serving, drizzle liberally with the vinaigrette.
6. To make the vinaigrette, remove any thick stems from the tarragon and place
it in a small food processor. Pulse to finely chop it, scraping down the sides of
the machine as necessary.
7. Add the rest of the ingredients to the bowl and puree. Taste the dressing and
adjust any of the elements to your liking.
