Hello Spring!<br />

It’s <strong>March</strong> and that means all things Spring! Spring break, Spring<br />

training, and clocks spring forward.<br />

Our City Person this month is Sharon DiPietro. She is<br />

Chairman of the Board for the Tri-County Animal Rescue, and<br />

the Chair of the 17th Annual Doggie & Kittie Ball. Her passion<br />

for animals is contagious and admirable. Read about Sharon and her<br />

incredible work inside this issue.<br />

St. Patrick’s Day is Sunday, <strong>March</strong> 17th, but the celebrations are<br />

all weekend long in Delray Beach! Beginning on Friday the Pre-Party<br />

begins at 5pm, continues on Saturday with an all day festival from<br />

10 am to 6 pm at the Delray Beach Tennis Center - and admission is<br />

FREE! There will be plenty of music, food trucks, activities and fun for<br />

Delray Beach to<br />

Ban Plastic Straws<br />

City-Wide by 2020<br />

The City of Delray Beach received the<br />

green light to proceed with its plastic<br />

straw ban. The City Commission unanimously<br />

passed the ordinance restricting<br />

the distribution of plastic straws at all<br />

restaurant and beverage establishments<br />

at the February 5 Commission meeting.<br />

Delray Beach is the first city in Palm Beach<br />

County to enact this ban.<br />

Effective February 6, <strong>2019</strong>, food service<br />

establishments and bars will only be permitted to provide plastic<br />

straws to patrons that request them, although straws that are<br />

marine biodegradable, such as paper or bamboo straws, and reusable<br />

metal or glass straws are permissible. Effective January<br />

1, 2020, all plastic straws will be prohibited. Exceptions have<br />

been made for patrons with medical needs and for places such as<br />

hospitals, nursing facilities, schools and products pre-packaged<br />

with straws and produced outside the city. After January 1, 2020,<br />

establishments could face a $100 fine for the first offensive in a<br />

12-month period, $200 for a second offense in a 12-month period<br />

and up to $500 for the third offense in a 12-month period.<br />

Last summer, the City of Delray Beach Office of Sustainability<br />

launched a “Skip the Straw” campaign involving the Delray Beach<br />

Chamber of Commerce and Downtown Development Authority to<br />

help engage with Delray Beach’s downtown bars and restaurants<br />

and bring awareness to the impacts of single-use plastic straws.<br />

To date, many local establishments have discontinued providing<br />

plastic straws and approximately 20 have already voluntarily<br />

switched to paper straws.<br />

“Plastic straws, while a small component of the broad singleuse<br />

plastic problem, are a significant detriment to marine life,<br />

including sea turtles, fish and birds, which ingest small plastic<br />

pieces and often die,” says Dr. Ana Puszkin-Chevlin, the City’s Sustainability<br />

Officer. “The Skip the Straw campaign and the supporting<br />

ordinance are a first step to raising awareness of the impact<br />

single-use plastic and taking actions to modify consumer behavior<br />

that adversely impacts the environment.”<br />

Delray Beach joins approximately 11 other cities nationwide,<br />

including neighboring Deerfield Beach, Fort Lauderdale and<br />

Hallandale Beach in tackling the use of plastic straws and other<br />

single-use plastic part of their environmental stewardship initiatives.<br />

The campaign against plastic straws gained national momentum<br />

throughout 2018 as ocean advocacy groups brought attention<br />

to the 8 million tons of consumer plastic dumped into the<br />

oceans annually.<br />

Seaside Builders Hosted a<br />

Groundbreaking Event<br />

On February 7, <strong>2019</strong>, Seaside Builders broke ground on their<br />

newest project COVE 4 located at 344 Venetian Drive, Delray<br />

Beach. This exciting modern luxury townhome development offers<br />

four single-level living homes that will not stay on the market for<br />

Now that Delray Beach is a rising star in the art, culture and social scene,<br />

it might seem a little difficult to find affordable activities, shops or<br />

restaurants. I am here to prove you wrong. Delray Beach<br />

offers a mix of high-end boutiques with laid-back<br />

restaurants, and events for the whole family or<br />

nightclubs for night owls. Here is what you can do<br />

in Delray Beach in <strong>March</strong> for $50 or less.<br />

When I see food, I eat it. When I see wine, I drink it. <strong>March</strong><br />

is National Nutrition Month and is a great time to get<br />

back to what matters: seafood and wine, and their many<br />

health benefits, naturally. The Delray Beach Wine & Seafood Festival<br />

is back by popular demand and offers guests weekend culinary<br />

extravaganza. Not only will you be privy to a diverse menu of delicious<br />

seafood including lobster rolls, creole platters, conch ceviche<br />

and much more, you’ll also be able to enjoy wines from Amarone to<br />

Zinfandel. As if that’s not enough, there are also 100 exhibitors featuring<br />

arts and crafts, live music, a wine garden and craft beer area,<br />

and wine and food pairing seminars from top chefs from local restaurants<br />

and vintners from internationally renowned wineries. Admission<br />

is free but if you feel like shelling out a little cash, opt for a<br />

All-You-Can-Eat Event Hosted by the Woman’s Club of Delray Beach Benefits Local Nonprofits Helping Women and Children<br />

delights — both savory<br />

and sweet — all under one roof?<br />

on Monday April 8, for the ninth annual<br />

Real Men Bake and Rock at the Sock<br />

Hop, hosted by the GFWC Woman’s Club<br />

of Delray Beach.<br />

A popular event that raises money for<br />

a variety of local charities serving women<br />

and children, Real Men Bake is moving to<br />

a new location — the Delray Beach Elks<br />

Lodge on Northeast Fourth <strong>Ave</strong>nue in<br />

Delray Beach.<br />

“We’re excited to bringing Real Men<br />

Bake to the Elks Lodge,” said Mary Reis,<br />

president of the local Woman’s Club chapter.<br />

“The room is spacious and will give us<br />

the opportunity to put out more tables and<br />

chairs for our guests and still be able to accommodate<br />

more than 30 bakers.”<br />

With a 1950s theme, the event will feature<br />

a DJ spinning oldies and dance tunes as<br />

well as a cash bar. There will also be a silent<br />

auction as well as a raffle for several prizes.<br />

Set from 6 to 9pm, Real Men Bake and<br />

Rock at the Sock Hop is an opportunity<br />

for guests to sample of variety of culinary<br />

creations by guest bakers from throughout<br />

the community.<br />

As in years past, bakers will include<br />

elected officials, police officers, firefighters<br />

and other city staff members, representatives<br />

from local nonprofit organizations<br />

and businesses, and many others.<br />

Non-Surgical Approach<br />

To A Herniated Disc<br />

The medical phrase “herniated disc” is widely used to describe injury to<br />

the spine. It refers to the incidence of derangement within the spinal<br />

column in which there is injury to the spongy cushions (discs) between<br />

the individual bones (vertebrae). Herniated discs are most common<br />

when a person is in their thirties of forties however it can affect any age<br />

group especially when the aging population is active.<br />

It is most notably associated with the lumbar region (lower<br />

back) but can also affect the cervical region (neck) and<br />

thoracic (mid back) region with less prevalence.<br />

Quite often herniated discs in the lumbar region will<br />

produce sciatica (leg pain) and in the cervical region<br />

will produce arm pain. Dysesthesias (numbness<br />

and tingling) in the arms and legs are also<br />

associated with lesions involving the spinal discs.<br />

The disc itself lies between two adjacent vertebrae<br />

and is composed of a hard outer shell called<br />

the annulus and a gelatinous substance on<br />

the inside called the nucleus. The nucleus<br />

provides key structural support elements<br />

for the spine as it acts as a “shock<br />

absorber” for the spine so that the vertebrae<br />

do not touch each other. The<br />

cushion also creates a space between<br />

the vertebrae so that the spinal nerves<br />

can exit unharmed. However, the nucleus<br />

also contains certain chemical irritants such<br />

as tumor necrosis factor-alpha which can be<br />

toxic for nerves. Therefore it is of paramount<br />

importance that it remains within its shell. The<br />

annulus acts as the outer shell or barrier and is a<br />

resilient tissue made up of fibrocartilage.<br />

A herniated disc occurs when fissures (tears)<br />

form in the annulus or outer shell which allows<br />

for the nucleus to escape and get into dangerously<br />

close contact with the spinal nerves. The most offensive<br />

posture for the lumbar disc is sitting. This<br />

provides the greatest load on the disc and increases<br />

probability of herniation. Therefore sedentary<br />

lifestyles and jobs requiring prolonged<br />

sitting are deleterious for the discs. Other activities<br />

such as bending and twisting are also very<br />

damaging to the discs especially if repetitive. Lastly, acute events<br />

such as lifting something very heavy without proper support can<br />

injure the spinal discs.<br />

The “gold standard” for conservative, non-invasive treatment<br />

of disc herniations is non-surgical spinal decompression<br />

therapy. This treatment acts to create a negative pressure<br />

or vacuum within the spinal canal essentially retracting<br />

some of the disc material back into the annulus and away<br />

from the sensitive spinal nerves. In fact the pressure within<br />

the disc can get to minus 150 mm/HG. The most recent<br />

clinical study of 219 patients has showed<br />

that spinal decompression therapy<br />

provided an immediate resolution<br />

of symptoms for 86% of<br />

the participants while 84%<br />

remained pain free 90<br />

days post-treatment. In<br />

combination with a revolutionary<br />

modality termed<br />

class IV highpower laser<br />

therapy which accelerates tissue<br />

healing by tenfold through<br />

“kick-starting” the cellular machinery<br />

in the injured tissue, the outcomes<br />

are even more staggering. Core strengthening<br />

specifically designed for a disc herniation<br />

(which differs from other lumbar spine injuries)<br />

should not be ignored and should be a<br />

part of any protocol for injured discs.<br />

Imperfections<br />

As summer fades in South Florida, the zest for diet, exercise<br />

and alluring shape only accelerates. “If I could just be one<br />

size smaller,” is not reserved for swimsuits. We are a people<br />

addicted to healthy, fit bodies and beautiful contours, and now,<br />

those of us who pine for any easy fix to love handles, muffin tops<br />

and man boobs have a resource that seems too good to be true.<br />

The technology is called Vanquish, a completely non-invasive<br />

procedure to annihilate fat cells using radio frequency.<br />

Dermatology and Laser Medicine claim it as an enormous<br />

breakthrough. There is no surgery involved and no needles are required;<br />

in fact, the procedure is completely pain free. The machine<br />

never even touches the patient’s skin. Deep tissue heating without<br />

damaging skin or muscle effects measurable results in this FDA approved<br />

approach to the destruction of fat cells. Results can be seen<br />

after just four sessions of forty-five minutes each.<br />

Vanquish fat melting sessions are controlled and comfortable.<br />

The dermatologist will adjust the laser to hover over the areas of<br />

the body to be treated, never touching the machine to the skin. The<br />

heat produced from the laser will feel warm, never hot, and will<br />

resemble the sensation of a heating pad on the belly. Sensors built<br />

into the device “tune” the patient’s fat and customize the energy<br />

required for each patient’s treatment session.<br />

The science involved is simple. Once the fat cells have been<br />

overheated, they die off and are filtered through the<br />

lymphatic system, metabolized in the liver and then<br />

excreted through urine. For this process to be effective,<br />

patients are asked to drink plenty of water before<br />

and after the procedure, aiding in the elimination of<br />

dead fat. Some minimal redness may occur at the site<br />

of the procedure, but swelling is extremely unlikely.<br />

Patients are not reporting any contraindications.<br />

They are losing two to four inches after four treatments<br />

without changing their diets or increasing exercise.<br />

Of course there are skeptics, but the ease of delivery<br />

for Vanquish speaks bundles about its ability to<br />

please patients. Unlike the other fat buster technologies<br />

of the last thirty years, treatments don’t involve<br />

downtime or discomfort for the patient. Liposuction,<br />

while capable of eradicating larger volumes of<br />

fat, requires anesthesia and surgery and sometimes<br />

delivers uneven results. Ultrasound, in which a hand<br />

piece is moved around the body to destroy fat with<br />

deep-diving sound waves, generally requires pain medication.<br />

Cryotherapthy, which freezes fat cells, does work, but is a slow<br />

process for both the patient and the technician and requires a<br />

significant time commitment. Vanquish, from all sides, seems to<br />

be the fat busting venue of the future.<br />

Vanquish is new, exciting and full of promise. Today it is eliminating<br />

beer bellies and love handles.<br />

Tomorrow it will reach to contour flabby arms and fatty necks.<br />

From the point of view of the dermatologist, this is very “cool”<br />

technology; from the point of view of the patient, this may be the<br />

hottest technique on the planet for looking good.<br />

Do You Really Need Breakfast?<br />

You may or may not have heard of this concept before<br />

but if you haven’t let me introduce you to Intermittent<br />

Fasting (IF), how it works and why I love it!<br />

When I began learning about this concept, it was difficult<br />

believing this way of eating could be so beneficial. Skipping<br />

breakfast, letting hours go by without eating!? No<br />

way!? But after doing lots of research and practicing Intermittent<br />

Fasting for several years, I can share how IF can make reaching<br />

your fitness goals a bit easier by turning on your body’s fat burning<br />

mode and help you become healthier.<br />

So what type of “diet” is this, might you ask? Well, it’s not a diet<br />

it’s actually a pattern. Intermittent Fasting is an eating pattern that<br />

cycles between periods of fasting and eating. It does not give you particular<br />

foods you should eat, but rather when you should eat. Don’t<br />

let the term “fasting” scare you. Fasting actually allows the body to<br />

function more efficiently and literally helps turn your body into a fat<br />

burning machine. Not only is it super beneficial for fat burning, it has<br />

other amazing health benefits as well. IF is efficient at lowering insulin<br />

resistance (perfect for people concerned about Type 2 Diabetes).<br />

It helps reduce stress and inflammation in the body, which is beneficial<br />

in helping to starve cancer cells. IF also backs the research of<br />

lowering your risk of Alzheimer’s (something that runs on both sides<br />

of my family) and increases brain health and function. Personally, I<br />

think more clearly and have much more energy before I put food in<br />

my body. Go figure, right? The list of health benefits goes on and on.<br />

In addition, IF allows to simplify your eating. I am no longer consumed<br />

with food and what and when I need to be eating. Life just<br />

seems a little simpler when you aren’t worried about breakfast<br />

while getting kids and yourself out of the house. A feat any busy<br />

person can understand. What does skipping breakfast have to do<br />

with all of this? Skipping breakfast extends the amount of time that<br />

you are in the fasting state. While you are sleeping your body is<br />

in a fasting state. That’s why breakfast is called “break-fast.” Skipping<br />

breakfast extends the time your body is in fat burning mode.<br />

Experts recommend fasting for at least 16 hours from the time of<br />

your last meal. So if you ate dinner at 7pm your next meal should<br />

be at 11am the following day. By letting your body “fast” and giving<br />

it a break from being fed constantly it allows for amazing health<br />

benefits to start taking place.<br />

There are several different methods/ways to incorporate Intermittent<br />

Fasting into your lifestyle. This is not a one size fits all type<br />

of plan and there are many different methods to suit individual<br />

needs. Do some research and find a version that will work best with<br />

your needs, goals and lifestyle.<br />

Dr. Zarina Staller likes to do<br />

things in a big way. She went<br />

to Dental school in Bogota,<br />

Colombia and established a<br />

successful dental practice there.<br />

But when her family moved to<br />

the United States she decided to<br />

settle in South Florida.<br />

Armed with her D.D.S. from Colegio Odontologico she embarked<br />

on a new journey at Nova Southeastern University<br />

School of Dental Medicine. It is at Nova that she received her<br />

D.M.D. Degree with honors.<br />

“I was so focused on doing well in dental school that I did nothing<br />

but study and immerse myself in learning everything I could,” said<br />

the personable energetic dentist.<br />

It paid off.<br />

While at Nova she received the Academy of General Dentistry<br />

Award for being the most outstanding student in the dental school.<br />

She was also selected by the administration as a Presidential Knight<br />

to represent the University at special events.<br />

Not only did Dr. Staller graduate with honors, but she has been<br />

a teacher of cosmetic dentistry at Nova Southeastern University<br />

School of Dental Medicine for the past 17 years.<br />

But that’s only part of the resume of a woman who takes the<br />

practice of dentistry to a fine art. “My father was an Oral Surgeon<br />

in Colombia and I grew up helping in his practice. Many of my relatives<br />

were in the dental field, so it was natural for me to become a<br />

dentist. I love my profession.”<br />

You bet she does. Dr. Staller not only has a full-time practice in the<br />

Addison Place in Delray, but she also does dentistry for the military.<br />

“Once or twice a month I travel to military installations around the<br />

country to do dental work for servicemen and women being deployed.<br />

We might see 300 to 500 patients in a weekend, but I love it.”<br />

You would think that a dental professional with a thriving practice<br />

in the Delray area would be content to work two jobs. But Dr.<br />

Staller is not your average dentist. She thrives on challenges and<br />

rises to meet them with élan.<br />

She also does volunteer dentistry at The Caridad Center and is<br />

a professional underwater photographer. Her photos have won<br />

awards and are sparkling examples of the inherent beauty of Mother<br />

Nature’s finest deep-sea wonders. There are times when you might<br />

be shocked at her bravery. “I went 145 feet down to take pictures of<br />

sharks,” she says with a smile. There are also stills of a Cayman Island<br />

turtle and brilliant photos of anemones from the underbelly of Egypt.<br />

But that’s only the tip of the iceberg – or ocean life – for this<br />

dedicated dental professional with the upbeat modern office in<br />

Addison Place.<br />

“My dental practice is a boutique style where personal attention<br />

is at its zenith. I practice dentistry like dentists did in years<br />

before. From the moment patients come into the office I am with<br />

them. I listen to their fears and problems and am very honest in<br />

assessing treatment.”<br />

While some dental practices tend to do lots of root canals andsurgical<br />

procedures, Dr. Staller is more conservative in her approach<br />

to care. “I had one patient come to me very upset because<br />

she was told she needed a lot of expensive dental work. I examined<br />

her and found she did not need surgery. I fixed her teeth in a<br />

more affordable way without surgery and with less discomfort.”<br />

Dr. Staller specializes in cosmetic dentistry and is steeped in<br />

the age-old habit of seeing each patient on a one-to-one basis. “I<br />

spoil my patients and spend a lot of time with each of them. I was<br />

one of the first dentists in the area to offer computerized anesthesia<br />

and I attend the American Academy of Cosmetic Dentistry<br />

conference every year in order to further my education.”<br />

She also prides herself on spending time with each patient to<br />

make sure they get the right treatment customized for them. Dr.<br />

Staller offers porcelain and composite veneers but is open and honest<br />

about which one meets the budgetary needs of each patient.<br />

One size does not fit all here.<br />

And that’s a good thing. “I try to find the best solution for each<br />

patient. Dentistry is not about the money. I give my patients an<br />

honest opinion about what they need. We practice compassionate<br />

care here from head to heart.”<br />

If you ask Jean Marie Angelora she’ll attest to that. She’s been going<br />

to Dr. Staller for 11 years for all her dental needs. “Everyone here<br />

six retired National Football League players with at least<br />

Unlike most museums, what you see is what you can touch<br />

and interact with. The two-level home to over 200 vintage<br />

Pinball machines, Arcade Games, Skee Ball and Video games<br />

will take you into a new reality.<br />

This reality is centered on nostalgia with fun and action as heroes<br />

of their own destiny. And the best part – you become the superhero<br />

who can defy the tedium of life with a little bit of fun and<br />

a lot of action.<br />

The Silverball Museum is the brainchild of Rob Ilvento, a food executive<br />

and Steve Zuckerman, co-founder of Clipper <strong>Magazine</strong>. Both<br />

men value the nostalgic recreation of the New Jersey Boardwalk<br />

and the excitement of a unique way to enjoy the good old days.<br />

“We have people coming here every day because they love the<br />

atmosphere and the vintage machines,” said General Manager<br />

Dayna DiDomenico.<br />

She’s right. The vibe is electric with bing, ting and wham sounds<br />

that reverberate from all corners of this time warp of fun and fantasy.<br />

The machines are a reminder that time waits for some people<br />

at the right time. Some of these pinball machines and arcade games<br />

are from the 40s to the 80s. The vintage machines are often rotated<br />

from their other location in Asbury Park, New Jersey.<br />

There is also a row of Skee-Ball lanes that will have you testing<br />

out your eye-hand coordination and ability to score points with a<br />

Silverball’s Blue Bar located on the main floor of the museum<br />

quick throw of a ball. There are new machines like the The Beatlemania<br />

Pinball Machine, The Who’s Tommy Pinball Wizard, The<br />

1979 Kiss Machine, and dozens of other colorful neon games that<br />

Some of the games are from as far back as 1931 and include<br />

video games like Pac-Man, Galaga, Centipede, Donkey Kong, Space<br />

Invaders and others. But there’s more to this fun-filled paradise for<br />

children and adults. They have a retro-lounge and bar with Tiffany<br />

lamps and food for whatever ails you (too much reality, boredom or<br />

just down time).<br />

They have burgers with French Fries, pizza, meatball sliders,<br />

nachos, Chicken tenders, Quesadillas and other fun foods that<br />

will make you lick your lips and marinate in the juice of it all.<br />

The best part is that they have Happy Hour from 11am to 7pm<br />

Monday to Friday with food prices that match the same nostalgia<br />

as the machines themselves. Beer for $3, a great burger and fries<br />

for $6 and $5 Pizza, Caesar Salad, Jumbo Hot Dog, Cocktails and<br />

Jersey fries. They are open with a full menu from 11am to 2am<br />

(insomniacs rejoice).<br />

The two floors of this wizardry of gaming and naming make<br />

it the perfect place for a private party. They host over 50 parties<br />

per month and have time and space for more. You have your<br />

choice of two venues on the 2nd floor. One has a bar made from<br />

a ship with seven flat screen TV’s, air hockey game, pinball machines<br />

and a dance floor.<br />

The other side of this floor hosts a bit more of a Rat Pack feel with<br />

vintage tables and chairs, Foosball Table, Vintage Pinball machines,<br />

a Vintage Juke Box and a signed guitar from Tom Petty on the wall.<br />

Both locations are the perfect venue for fun, bonding, celebration<br />

and team building.<br />

For Private Events, you can bring in your own DJ - or music<br />

- or use their overhead music (that can be changed for<br />

your preference). They can cater the event for you, and you<br />

Gulf Stream School has a long<br />

history of excellence in education.<br />

The independent school is<br />

celebrating its 80th year.<br />

Gulf Stream School has a heritage of fostering educational<br />

excellence for Pre-kindergarten, Elementary, and Middle<br />

school students. The school primarily serves Boynton Beach,<br />

Delray Beach, Lake Worth, Boca Raton, Lantana, Manalapan, and<br />

the surrounding Palm Beach area. Graduates have been welcomed<br />

at schools around the world.<br />

They are a community of learners - sharing, discussing, debating,<br />

they “actively engage students and faculty in a thought provoking<br />

educational experience that fosters the skills, habits, and passion<br />

Their program’s approach is about more than just the subject<br />

The school faculty maintains traditional learning goals while<br />

keeping current with the latest innovations in technology.<br />

“Gulf Stream School has 80 years of history but we are mindful of<br />

the future of learning. We offer an innovative curriculum and programs<br />

for the use of technology, incorporating new techniques with traditional<br />

methods of education,” said Michael Mahady, Director of<br />

Admission & Secondary School Placement for Gulf Stream School.<br />

“It is the way society is evolving. Children now utilize numerous<br />

electronic devices on a daily basis. We have an obligation to prepare<br />

children for high school, college and the real world. We make<br />

sure they are prepared for the future,” said Casey Wilson, Director<br />

of Development for Gulf Stream School.<br />

The local school has added new programs and curriculum to enhance<br />

advanced learning. One future enhancement is the summer<br />

renovation of the library, converting the space into a collaborative<br />

learning commons by adding film and video editing, multimedia,<br />

robotics, 3D printing, and more. They also offer a wide variety of<br />

courses and afterschool programs including a STEM program,<br />

iMovie to create videos and commercials, robotics, along with<br />

cooking classes, drama, arts and athletics.<br />

“At Gulf Stream School, we feel it is critical to support our teachers<br />

by providing meaningful and impactful opportunities for professional<br />

development. Our teachers are enthusiastic about continuing<br />

their own education. They are passionate about seeking<br />

better ways to inspire our students,” said Wilson.<br />

The teachers believe that active collaboration and the integration<br />

of ideas, while incorporating emerging technologies in the<br />

classroom have helped students excel in learning.<br />

“Watching the children in computer class brings me great excitement<br />

while they collaborate with their peers. The projects require<br />

the students to draw on information from many different disciplines<br />

to come up with creative solutions. For example, math skills<br />

are used when making a model to scale to 3D print or determining<br />

the angle to turn a robot. Language arts skills are necessary to read<br />

for meaning during the design research and development, and for<br />

communicating their ideas. As the students work through problems<br />

and test different solutions, they are required to think critically and<br />

persevere until they succeed,” said Bridget Langford, Lower School<br />

Science and Technology Teacher.<br />

Shawn Harahush, Middle School Math and Robotics Teacher, said,<br />

“The robotics program fuses instruction with key concepts such as<br />

logic, trial and error and proportional reasoning. It allows students<br />

to work in teams to solve open-ended tasks. The program encourages<br />

students to plan, create, test and evaluate and test their ideas. It<br />

fosters the development of 21st century skills such as problem solving,<br />

programming, and experimentation. The program makes the<br />

students more aware of the connection among math, science, and the<br />

world around them. In addition, to the technical skills they are learning,<br />

it also is a lot of fun and encourages an abundance of creativity.”<br />

Gulf Stream School takes a personal interest in getting to know<br />

each applicant and his or her family. It is their objective to understand<br />

Champion For Those In Need<br />

Sharon DiPietro is a study in contrast. She is<br />

strong, yet compassionate, loving yet fiercely<br />

protective of the objects of her affection.<br />

As a child DiPietro had to fend for herself quite often. Her grandmother<br />

Macie was her role model (and savior) and the person<br />

who gave her confidence to pursue her dreams.<br />

But as a young child her dreams were about helping others. She<br />

canvassed her neighborhood looking to do good deeds for those in<br />

need. “I would see if the elderly people needed me to run errands for<br />

them, pull their weeds or cut their grass,” said the statuesque blonde<br />

raised in Cincinnati and living in Delray.<br />

DiPietro is not bashful about her strong faith, and her childhood<br />

attending church and teaching Sunday School. “My faith anchors<br />

me. God has given me a purpose and that purpose is to give voice<br />

to the voiceless.”<br />

The voiceless in her orbit now are distressed animals of all sizes<br />

and shapes and children in need. She is relentless in her desire to<br />

make the world a better place and continues to be a beacon of light<br />

for Tri-County Animal Rescue. She’s been on the board for seven<br />

years and Chairman of the Board for the past three.<br />

DiPietro is dedicated to their Capital Campaign and is Chair of their<br />

annual Doggie & Kittie Ball, that has become one of the most coveted<br />

and colorful charitable events in town.<br />

It’s not just formality that has driven this faith-driven wife, mother<br />

and grandmother to her position – it’s passion and an unwavering<br />

commitment.<br />

“We are bringing to fruition phase one of our extended campus for<br />

Tri-County. This includes The Veterinarian Center, a building for special<br />

needs pets, senior fur-babies and hospice care. We’re adding a<br />

mausoleum, increasing in-ground pet burial and bringing our thrift<br />

shop here. There will also be a boarding and grooming facility. The<br />

new campus will have a 64,000-square-foot footprint.”<br />

When DiPietro speaks – people listen. And when she sets her mind<br />

to something it’s like a bullet train coming at full speed. When she<br />

talks about the upcoming 17th Annual Doggie & Kittie Ball (April<br />

14th) her hands move quickly, and she exudes the elation of the<br />

event. “The Doggie & Kittie Ball is going to be awesome this year. It’s<br />

going to be high energy and interactive, so get your hats and jeans –<br />

diamonds and pearls - and have fun.”<br />

And when DiPietro says fun, she means it. They are having the<br />

Steve Chase Band, a casino, interactive gaming tables, blackjack,<br />

roulette, Texas hold ‘em, a dance floor, dinner, chip cage, pre-event<br />

social hour and a room of decadent desserts.<br />

Perhaps the biggest dessert – metaphorically – is DiPietro’s philanthropic<br />

bent and caring heart. This Midwest woman of steely determination<br />

generally flies under the radar, but there is always something<br />

brewing just beneath the surface.<br />

“Sharon is dynamic, passionate and tireless. I admire her professionalism<br />

and responsibility as chair of a large 501(c) 3 corporation.<br />

She runs her committee meetings with a sharp laser focus – and it’s<br />

not easy when you have 15 to 20 people with many ideas and a lot of<br />

work to do. Sharon does it so well – she’s organized and creative,” said<br />

travel agent Scott Grody, who’s on the Doggie & Kittie Ball Committee.<br />

Being a businesswoman was the warm-up for this earth-bound angel<br />

for the voiceless. Her resume is incredibly impressive with stellar<br />

achievements that run the gamut from sales to telecommunications<br />

company co-owner, investment portfolio manager and real estate.<br />

She was one of the first women to travel the country as a sales<br />

rep for Hanes’ L’eggs pantyhose. She opened three states and maintained<br />

national accounts, trained salespeople and earned recognition<br />

as a top salesperson.<br />

“It was challenging as a woman travelling alone during that era,<br />

but also tremendously rewarding. My favorite memories include being<br />

a guest on national televised talk shows, one with Nick Clooney<br />

(George’s father). Now that was memorable!”<br />

She was an assistant for Carl and Robert Lindner who owned<br />

American Financial Corporation, Penn Central, United Brands, the<br />

Ocean Reef Club, shopping malls and retail stores.<br />

But it was love that sent DiPietro to South Florida. When on vacation<br />

in Boca Raton her daughter LeAnna met a boy, fell in love and<br />

moved to South Florida. “I had it in my head to move to Florida someday<br />

- it was on my bucket list. But my daughter accelerated it.”<br />

Love intervened once again in her life when she moved to Florida.<br />

“I saw an ad for an assistant to the GM at Boca West Country Club, Jay<br />

DiPietro. I didn’t like him at first. But after a few months we developed<br />

a solid friendship and eventually became a couple.”<br />

Though her daughter left South Florida, Sharon stayed for Jay. And<br />

after 33 years together you could say it was a good decision. Especially<br />

since Sharon and Jay collectively have become the quintessential<br />

philanthropic duo. They started the Seminole Region Charity Golf<br />

Tournament that raises money for underprivileged children. They<br />

donate to organizations like SOS Children’s Village, Florence Fuller,<br />

Unicorn Foundation, Place of Hope and many others.<br />

If charity starts at home, it was Sharon who jump started a colorful<br />

life for husband Jay. “I fell in love with Sharon because of her beautiful<br />

heart. She loves unconditionally, and for the first time I saw pastels<br />

and flowers. She changed my life in so many ways – I saw beauty for<br />

the first time. I even had flowers put all over Boca West,” said the<br />

President and General Manager Emeritus of Boca West.<br />

It’s a mutual love fest for this couple who spread their love around<br />

like seeds in a flower pot of goodness. They attend charity events almost<br />

every night and are keepers of the flame for those who need a<br />

helping hand.<br />

Jay and Sharon have nine children, 24 grandchildren and five<br />

great-grandchildren. If you count Sharon’s fur-babies (and her Yorkies<br />

Bella and Baer) she has an infinite number of children and is the<br />

loudest voice for the voiceless.<br />

SCUOLA VECCHIA<br />

Culinary Passion And Authenticity<br />

Scuola Vecchia is in the rarified<br />

world of singularity. It’s one of the<br />

only Napolitano pizza restaurants<br />

in Delray, and one of the few with<br />

roots that date back 200 years.<br />

But luckily you don’t have to fly to Naples, Italy to indulge in this<br />

delicate Italian passion. A lot of people know this – hence the<br />

reason there was a line out the door on a recent Saturday night.<br />

Their slow and steady rise to Napolitano nirvana is due to the<br />

passion and consistency of its founders Sharon and Shaun Aloisio.<br />

Sharon was trained in the Neapolitan-style of pizza making from<br />

world-renowned Chef and Master Pizzaiuoli, Roberto Caporuscio.<br />

She stayed true to its namesake (and ingredients) and soon people<br />

began to appreciate the subtlety of its divinity.<br />

The pizza is lighter than traditional Italian pizza and the dough is<br />

ground slowly without additives and seven different wheats from<br />

around the world. Sharon knows these statistics because she lives and<br />

breathes life as a Neapolitan expert and chef. Her son Shaun has adopted<br />

this Naples art of pizza making as though it was his birthright.<br />

And perhaps it is. When Shaun makes one of his amazing Pizzas<br />

(like the Pizza con Pistachio e Salaccia) delight congeals with greatness.<br />

The Pistachio Pesto, Sausage and Smoked Buffalo Mozzarella<br />

on thin homemade pizza dough is unparalleled.<br />

Part of the totality of this mouthwatering marvel is enhanced by<br />

their wood burning oven made of volcanic stone. Shipped to Delray<br />

from Naples, it heats to 1000 degrees and seals in the moisture and<br />

flavors that are so delicately ordained. They also use Caputo flour (with<br />

no additives) for the pizza dough that is low in fat and light as a feather.<br />

Add that to the imported Italian San Marzano tomato sauce and you

have a pizza that seduces the senses. “The Pizza con Pistachio e Salaccia<br />

just blew me away. There is so much flavor in the sausage with<br />

pesto that you can taste the authenticity and passion that went into<br />

the dish,” said Bob Foster, who just returned from a bike trip in Italy.<br />

Others agree. “We have been to Scuola Vecchia many times and it<br />

never disappoints. Sharon and her team are fantastic and make you<br />

feel right at home. Great service, great food and great atmosphere.<br />

A must try when you are in Delray Beach. Authentic pizza-so good!”<br />

Scuola Vecchia has become so popular that their Neapolitanstyle<br />

roots on the <strong>Ave</strong>nue have become legend. They are hailed as<br />

the best pizza in Florida by The Daily Meal (and Trip Advisor), and<br />

are lovingly referred to in the Book, “Where to Eat Pizza as “some<br />

of the most stellar pizza this side of Naples, and frankly anywhere.”<br />

With all this fanfare comes dishes that are bursting with flavor<br />

and surprises. They recently added a special appetizer – Truffle<br />

Burrata. This subtle, yet stupendous dish is made with homemade<br />

mozzarella accented with Italian truffle oil. Grape tomatoes and<br />

baby arugula co-mingle with this cheesy delicacy and Homemade<br />

Focaccia bread comes on the side.<br />

“In Italy it’s about food, family and wine,” said Sharon, who with<br />

Shaun have been a fixture on <strong>Atlantic</strong> <strong>Ave</strong>nue for eight years. Their<br />

small yet gracious blue and white pizza restaurant with homemade<br />

pasta dishes and desserts to swoon over – has come full circle. At<br />

first people didn’t understand the strict adherence to authenticity<br />

and subtle flavoring. But it was only a matter of time before everyone<br />

realized that this Naples tradition is indeed a culinary treasure.<br />

“People are more appreciative of what we do now. They finally<br />

understand that it’s about quality over quantity. We use a homemade<br />

old school way of making dough and we make the cheese inhouse<br />

with Italian oils - rosemary, garlic, lemon and basil oil,” said<br />

Shaun, who is as good a father as a pizza maker.<br />

Sharon, on the other hand, is the devoted and dedicated creator<br />

of all things pasta. You know when you’re eating her freshly made<br />

Fettuccine Bolognese or Lasagna de Carne (meat lasagna). You get<br />

that seasonal high just like you feel when walking on the pristine<br />

beach first thing in the morning.<br />

It is the beach that charmed Sharon – and inspired her to create<br />

one of their favorite pizzas – The Scuola Vecchia. This homemade<br />

white pizza is made with fresh mozzarella, shrimp, arugula and<br />

grape tomatoes. “Our pizza is very light, and we make the mozzarella<br />

cheese on the premises. We’re so close to the beach I felt we<br />

needed a pizza with seafood from the Gulf Coast.”<br />

There is another ingredient to the success of this family business,<br />

and its tradition. Maybe not a tradition in the US anymore, but in<br />

Europe it’s a de rigueur. “People like the fact that the owner is on<br />

site and that the food is homemade not frozen. Everything here is<br />

made from scratch,” said Sharon.<br />

The food is so coveted that one customer waited over 45 minutes<br />

for the fresh meatballs to arrive at her table. That is also the reason<br />

Scuola Vecchia has regular customers who come every week (and<br />

sometimes every day) for homemade eggplant parmesan or a Regina<br />

Margherita Pizza.<br />

They have a full selection of salads – the Caprese with handmade<br />

mozzarella, tomatoes, extra virgin olive oil and basil, and Girella, with<br />

homemade mozzarella stuffed with eggplant, zucchini, prosciutto di<br />

parma and salad. For those with dietary restrictions they offer Gluten-free<br />

pizza made with fresh homemade gluten-free flour.<br />

Sometimes the best things in life come last – especially if you have<br />

a sweet tooth. Sharon’s homemade Tiramisu is indeed a wonderful<br />

thing. The softness and sweetness of its delicate flavors dance delightfully<br />

in your mouth. They also have homemade ricotta cannoli<br />

chocolate chip cheesecake and locally made Italian gelato.<br />

Though Sharon and Shaun are not artists in a classic sense their<br />

culinary artistry is evident in everything they do. The pizza making<br />

is precise and steeped in tradition, and their pastas, paninis, salads<br />

and desserts are what dreams are made of.<br />

2 Lbs Corned Beef<br />

1 1/2 Lbs Baking Potatoes<br />

2 Heads of Cabbage (green and purple)<br />

Olive Oil<br />

Salt and Pepper<br />

directions<br />

Place the Corned Beef and 3 cloves of sliced garlic in large pot of salted boiling<br />

water, add bay leaves, coriander, and garlic. Bring to a slow boil for two and a<br />

half hours. Remove corned beef and let rest, then slice thin.<br />

Toss potatoes with salt and pepper and olive oil and roast in a 350 degree oven<br />

for 40 minutes. Sauté cabbage in garlic and olive oil until desired doneness.<br />

What Are The Best Diagnosis<br />

Tools to Keep Pets Healthy?<br />

We are witnessing vast increases in health challenges that<br />

our pets are facing today versus years past. In our previous<br />

articles, we have addressed many. Suffice to say,<br />

with cancer, allergies, diabetes and behavior issues on the increase,<br />

not only do we have to work hard at preventing health challenges<br />

through our attention to lifestyle and nutrition, but also understand<br />

what are the true influences that are driving these challenges.<br />

Diagnosing the specifics starts with our astute observation and<br />

knowledge. We are with our pets constantly and we can often notice<br />

when there is a change in their personality and physiology. We<br />

see the lumps and bumps on the skin, the limp, the scratching and<br />

itching, the skin rash and hair loss plus many other symptoms. We<br />

realize it isn’t normal and therefore anxiously seek answers and<br />

advice from our local animal healthcare providers. We are hopeful<br />

that with all the new technology and diagnostic tools available, we<br />

can get answers and a solution.<br />

We are all familiar with the most common diagnostic tools such<br />

as blood profiles, x-rays, various scans and sensitivity tests. Unfortunately,<br />

most of the results do not reveal the answers that we need.<br />

Most generalized testing such as blood panels are inconclusive or<br />

do not show any issues. X-rays and scans are difficult to interpret<br />

which again is inaccurate and can be very expensive. While these<br />

can be useful in true emergencies such as accidents and injuries,<br />

their usefulness can be questionable. We also must rely on the professional<br />

opinion of the health provider to guide us.<br />

Before we start this process of clinical diagnostics, we must also<br />

understand what is truly problematic. We know that diarrhea and<br />

vomiting can be a symptom of many different health issues. In itself,<br />

those particular issues are nothing more than housekeeping<br />

and cleansing. It is usually self-limiting which means it will correct<br />

itself over the cleansing process. However, we do have to use our<br />

diagnostic skills to evaluate what may have caused these changes?<br />

Since most health challenges today are highly tied to toxicity, we<br />

have to look at the sources of toxic chemicals that our pets are exposed<br />

to. Food additives such as preservatives, colors, synthetic<br />

nutrients, drugs and medications, vaccines and household cleaning<br />

and lawn products are all contributors to the biochemical imbalances<br />

that create so called “disease.”<br />

These toxins are entering the body through the air which is processed<br />

by the lungs, ingestion of food and water which is processed<br />

by the gastrointestinal tract and absorbed through the skin. These<br />

toxins are killing and stressing the exposed cells of the body which<br />

start the process of breaking down the body. Critical functions of<br />

organs are compromised, reducing their capacity to produce their<br />

life and healing hormones, enzymes and other components. These<br />

components are needed to unleash the nutrients essential to heal<br />

and maintain optimal health.<br />

We are hopeful that your new understanding as presented will<br />

give you the knowledge to better understand the “whys” which can<br />

lead to a more accurate diagnosis. With this skill, we can identify<br />

potential challenges earlier and make corrections more targeted<br />
