Flavours of Campbelltown
With Council celebrating 150 Years last year, we continue to celebrate our food and our many cultures from presettlement
to today where many waves of migration have influenced the changing food culture in Campbelltown,
enriching our cultural heritage and creating a unique blend of food experiences from a variety of different
backgrounds.
This booklet has been produced over a number of years to recognise and promote some of the unique and high
quality food and beverage businesses that operate in the City of Campbelltown as well as highlighting the fantastic
experiences built off the back of the Food Trail like the Moonlight Markets and Pizza Festival.
There are many tasting pleasures to be enjoyed by visiting these businesses, talking to their staff who share their
stories, purchasing their goods and recommending them to your friends and families as part of the awardwinning
Flavours of Campbelltown Food Trail experience.
Michael Keelan – Ambassador
It has been a great pleasure to be the Ambassador for the Flavours of Campbelltown Food
Trail since 2012. Not only have I lived within the region, I have a great passion for food and the
experience it provides. The Food Trail initiative by Campbelltown Council is a classic example
of a council striving to support its businesses and local community by utilising its own skills,
networks and opportunities to the advantage of others. From such a simple idea has evolved a program
that is having a massive impact on the whole community with the attraction of visitors and new
businesses alike to the Food Trail and associated events.
I urge you to take the time to visit all or any of the businesses listed within this booklet – take it
from me, they are all delightful and unique in their products and experiences. This is a wonderful
promotion of local businesses with amazing stories and unique events that I am proud to be
associated with.
Regards
Michael

Mercato
Owners: John and Rosa Caporaso
Imma and Mario Caporaso established a continental deli on St
Bernards Rd, Rostrevor in 1972. They were committed to building
a business based on friendly, personalised service, and a range
of quality produce. Imma and Mario’s two children, Angela and
John, grew up in the shop and worked on weekends. John rejoined
the family business in 1998, with his wife Rose, and a vision to build
on the cultural empire established by his parents for over 25 years.
John moved the business to a larger, purpose built store down the
food emporium. The new store ‘Mercato’ opened in June 2005.
Mercato offers a wide variety of products from quintessential Italian
pantry staples to smallgoods, cheeses, wine and a range of specialty
run businesses in Italy, which provide great quality and value.
Their services include a range of platters, hampers, cooking
demonstrations, wine tasting and events, which are a part of their
efforts to educate and inform the local community on Italian
tradition and cuisine.
In Bar Mercato guests can taste authentic Italian fare in a casual
and comfortable setting. Drawing inspiration from the cafés of Italy
they offer both breakfast and lunch alongside coffee, traditional
sweets and Italian beverages such as spritz, wine and amaro.
Rezz
Owners: The Hamood Family
The original Reservoir Hotel was built as a watering hole for the
mostly European workers who were employed to construct the
Thorndon Park Reservoir. Not used to the unrelenting heat and
harsh South Australian conditions, it was agreed that the hotel
was a ‘necessity’ for exhausted workers. Although back then it was
a real working man’s pub, it boasted a glorious backdrop and
magnificent views to the picturesque Thorndon Park, making it
a great spot for future owners and entrepreneurs Fred and Lorna
Hamood.
The Hamood family took the reins in 1965, transforming the hotel
into a modern bar, lounge and dining venue. Forty years later Fred
and Lorna’s children – Fred Jnr, Richard, Rana, and Sue-Anne –
returned to once again reinvent the popular local now known as
‘The Rezz’.
A new take on an old favourite, Rezz is a modern venue that invites
diners to enjoy good food in the company of good friends. It’s
local, it’s family-friendly and after 160 years it’s still serving up the
very best of our great state. Literally.
Slape and Sons
Owners: Philip and Paul Slape
Australians have been enjoying Slape & Sons Sausages for
over 50 years and will continue to do so for many more years
to come. Robert Slape started his butcher’s apprenticeship at
the age of 14, learning about the importance of quality meats
and how to make superior sausages. He opened his first shop
in 1965, a small corner butcher shop in St Peters, ‘Robbie Slape
Sausages’. With continued support from locals, the business is
now in its 3rd generation, with all products made at their Newton
facility and sent to supermarkets and independent retailers
throughout Australia.
Slape & Sons provide a vast range of sausages, metwurst,
premium steak and more – all at factory outlet prices.
Specialties include gourmet sausages available in more than 25
flavours, along with their range of burgers, chevapchichi’s and
chicken schnitzels, which are all gluten free.
Springton Hills Wines
Owners: Giovanni (John) and Connie Ciccocioppo
Springton Hills Wines is a small boutique winery where all wines are
produced on their purpose built estate. All of the wine is made from
fruit grown on the property, which has been progressively planted by
the owners since 2001.
The winery is owned and run by the Ciccocioppo family, who pride
themselves on the integration of the traditional wine making process
with modern practices.
The two main varieties grown at Springton Hills Wines are Shiraz and
Riesling. Other varieties include Chardonnay, Cabernet, Grenache
and Montepulciano, which was brought to Australia by early Italian
immigrants and coincidentally comes from the same region in Italy
where the owner and wine maker was born – Abruzzo. All Springton
Hills Wines fruit is hand-picked and usually processed within one or
two hours of picking. Their red wines are all fermented in an open
fermenter, which is temperature controlled.
In the short period that Springton Hills Wines has been established it
has been awarded some fantastic accolades: Their wines include
award winning varieties from the Sydney International Wine Show and
the Barossa Wine Show, and they have received top reviews from
Winestate Magazine. The James Halliday 2011 Wine Companion
awarded the winery top accolades with a 5 star rating, which is
reserved for outstanding wineries.
