ANDEAN ESSENCE<br />

The name Virgilio Martinez is synonymous with Peruvian<br />

gastronomy. His fascinating concepts of food and cooking, and<br />

his renown restaurant, Central – considered one of the best<br />

50 restaurants in the world, and the best restaurant in Latin<br />

America – have brought him and his work well deserved fame.<br />

Mil is Virgilio’s innovative new project inspired by the Moray<br />

Archaeological Site, and located only meters from it, in Cusco’s<br />

stunning Sacred Valley. More than just a restaurant, the new<br />

locale also houses the Mater Initiative headquarters. This<br />

centre for investigative projects is dedicated to the discovery<br />

and study of Peru’s plethora of ingredients from all over the<br />

country, through contact with communities and establishing<br />

relationships with regional producers.<br />

While Central’s menu is inspired by the ecosystems of Peru’s<br />

coast, mountains, and jungle, Mil is dedicated solely to the<br />

Andes. Through eight moments – or dishes – inspired by the<br />

landscapes of the high Andes and its different altitudes, Mil<br />

showcases local ingredients and pairs them with exotic solarinfused<br />

teas, macerated alcohols, and waters made with local<br />

plants. The restaurant offers a midday service for a maximum<br />

of <strong>20</strong> people. A true luxury experience.<br />

At Mil, it is more than just respecting Andean ingredients.<br />

The team also works side by side with the Kaccllarakay and<br />

Mullak’as Misminay communities, whose members are in<br />

charge of organising and working with the land. In return,<br />

these people receive daily wages as well as 50% of the<br />

harvest. The local populations have the chance to enjoy<br />

steady economic growth and to share their knowledge with<br />

the investigators who eagerly continue to learn about Peru’s<br />

incredible wealth.<br />
