Albergue Ollantaytambo offers guests and visitors an<br />

incomparable and complete pachamanca experience. Join<br />

the knowledgeable staff in every step of this ancient tradition:<br />

from the digging of the hole and the introduction of the<br />

fresh ingredients to covering the hole and the subsequent<br />

uncovering, which is accompanied by a release of indescribable<br />

aromas that fill the air and awaken the appetite.<br />

No trip to the Peruvian Andes is complete without partaking<br />

in one of the most treasured and picturesque local traditions:<br />

the pachamanca. This centuries-old custom is a celebration<br />

in and of itself, bringing people and communities together to<br />

participate and enjoy the goods of the earth.<br />

To quiet one’s hunger during the cooking process, participants<br />

are invited to wander the stunning hotel grounds. The organic<br />

farm is cultivated without the use of chemicals, and follows<br />

a traditional cultivation schedule that allows for the land to<br />

“rest.” Above the farm, you can find the on-site distillery where<br />

sugarcane alcohol is crafted into an impressive, high-quality<br />

spirit, or visit the coffee roasting laboratory where the master<br />

roaster will teach you about Peru’s coffee varieties.<br />

Pachamanca is a Quechua word, which translates to ‘earth<br />

oven.’ As the name suggests, the cooking is done by placing<br />

hot rocks into a hole dug into the earth, which is then covered<br />

with leaves. The pachamanca is a way to share the celebratory<br />

experience with Mother Earth and to thank her for her bounty.<br />

Pork, chicken, beef, lamb, and Guinea pig are customarily<br />

accompanied by local potatoes, yams, humitas, corn, and<br />

cheese, and slowly cooked to perfection in this beautiful and<br />

delicious ritual of flavours.<br />
