A RESTAURANT<br />
WITH SOUL<br />
In <strong>20</strong>12, four talented Peruvian chefs lost their lives in a tragic<br />
car accident. Ivan Kisic – who up to that point was considered<br />
one of Peru’s most promising young chefs – was among those<br />
lost. A year later, his family inaugurated IK, a restaurant named<br />
after him and established with the idea of maintaining his legacy<br />
by always practising and promoting the respect for ingredients,<br />
sustainability, and passion for Andean cuisine.<br />
The restaurant’s philosophy is to share with its guests the glory<br />
of contemporary Peruvian gastronomy, while not straying<br />
from its roots. By using local products and reviving ancestral<br />
culinary techniques, IK has successfully satisfied the palates of<br />
thousands of food lovers from across the globe.<br />
This year, Francesca Ferreyros, who began her culinary career in<br />
stride with Ivan Kisic, has taken over as head chef. Her meticulously<br />
designed tasting menu – which offers five-course, seven-course,<br />
and twelve-course options – brings together coastal, Andean,<br />
and Amazonian influences and ingredients, adding a touch of<br />
international flair without losing its Peruvian essence.<br />
The daily menu at IK is comprised of <strong>20</strong> dishes: appetizers, entrees,<br />
and desserts. Its three ambiances look to calm the senses and<br />
eliminate possible distractions so that guests can focus on the<br />
extraordinary gastronomic experience at hand. With sustainability<br />
as an underlying theme and principal, the main dining room is<br />
decorated with recycled wood and lovely indoor plants.<br />
