Welcome to our restaurant! This edition of Ultimate Journeys – Travel in Peru is hot out of the oven and full of<br />

the flavours that represent all the best parts of our country.<br />

We know that Peru has an endless supply of ingredients to turn your visit into an unforgettable trip – and we<br />

are not necessarily referring to cooking. In this special edition, we bring together an assortment of our top<br />

“ingredients”: an array of amazing experiences to be enjoyed in our beautiful country. When appropriately<br />

combined with each person’s liking, these products will provide all the fixings for the perfect recipe, or, in this<br />

case, your dream vacation.<br />

As experts on all things Peru, we have decided to make a varied menu that showcases our favourite products.<br />

We gathered the best of the best of <strong>20</strong>18, and proudly present it to you on our menu. Each “dish” has a pinch<br />

of adventure, a dash of luxury, a few grams of history, and a generous serving of culture. But, above all, they<br />

bring together the passion we feel for our country and the desire we have to transmit our pride in being<br />

Peruvian.<br />

In the following pages, we share a conversation with the “Head Chef,” Jose Pedraza, who gives us insight from<br />

his role as Managing Director into what the last year has represented for LimaTours. He also explains the<br />

essence behind what has kept us at the forefront of the tourism industry for the last 60 years and tells us<br />

about the upcoming plans for <strong>20</strong>19.<br />

The 360° Machu Picchu Train was nominated for a Reader<br />

Award in the “Right Track” category, by the National<br />

Geographic Traveller Magazine. This category recognises<br />

the best available train trips – on both long and short<br />

routes – that feature the highest level of service and<br />

technology, guaranteeing a top-tier experience. At the<br />

award ceremony held on November 26, however, the<br />

Eurostar that travels from London to Amsterdam won<br />

over Peru’s representative.<br />

our country because of its historical wealth and its<br />

archaeological sites, among which the most popular<br />

are Machu Picchu and the Nasca Lines. This award<br />

is added on to those granted by India’s Lonely<br />

Planet Magazine, in the “Best Emerging International<br />

SITES IN PERU<br />

The Mountain of Seven Colours, or Vinicunca, has<br />

quickly become one of the most famous destinations<br />

in our country, according to Cusco’s regional governor,<br />

Edwin Licona. The unique natural attraction is the<br />

second-most visited place in Peru after Machu Picchu.<br />

Between 1,000 and 1,500 people visit Vinicunca on<br />

a daily basis, depending on the season, and it is<br />

expected that the site’s popularity continues to grow<br />

thanks to the ongoing promotion. The mountain’s<br />

beauty speaks for itself.<br />

The vast varieties of birds that inhabit our country have<br />

earned Peru recognition as the “Best Birdwatching<br />

Destination in the World” in the Infinity Discovery <strong>20</strong>18<br />

Gala held in Shanghai, China. The contestants were<br />

evaluated by a jury made up of travellers, professional<br />

photographers, and experts in wildlife conservation.<br />

Infinity Discovery is an agency that specialises in naturebased<br />

travel, and – with its award ceremony – looks to<br />

promote these types of experiences.<br />

There are some projects that enhance a community’s sense of<br />

identity and pride. There are spaces that are reborn through<br />

art and culture, eventually gaining international attention and<br />

praise; places that were once avoided, only to become ‘hot<br />

spots’ while simultaneously participating in positive social<br />

change. This is the case for Monumental Callao: an artistic<br />

proposal that has reawakened and increased the collective<br />

value of the streets surrounding the port of Callao.<br />

Only a few years ago, the district of Callao was synonymous<br />

with danger. Organised crime and violence had overtaken<br />

the streets and the area’s historic centre, resulting in fear and<br />

general avoidance from locals and tourists alike. Nonetheless,<br />

the resourceful chalacos – as those who live by the port are<br />

called – were determined to find ways to bring the light back<br />

into this important and historic neighbourhood.<br />

Soon, a private initiative arrived at the area, and with the help of<br />

locals, has slowly transformed these historic streets into works<br />

of art, while concurrently giving residents a chance to engage<br />

in legitimate economic and social evolution. What were once<br />

dirty and decrepit walls are now restored and covered with<br />

colourful graffiti murals. Old mansions have been remodelled<br />

and now house art galleries and contemporary boutiques. The<br />

assortment of fabulous restaurants are serving people from all<br />

over the world, and Monumental Callao has become in vogue.<br />

everyone can be a part of – whether it be though participatory<br />

graffiti workshops for adults and children, or by just enjoying<br />

the unique ambience while taking in the lively and stimulating<br />

Peru is one of the few countries that can rightfully claim to<br />

house one of the best museums in the world. Described by<br />

visitors as “unmissable,” “an aesthetic pleasure,” “exceptional,”<br />

and “a journey through time,” the Larco Museum has been<br />

recognised as one of the top <strong>20</strong> museums in the world by the<br />

TripAdvisor Travellers’ Choice Awards.<br />

The Museum boasts a collection of 45 thousand pieces<br />

gathered throughout more than 92 years. Its founder, Rafael<br />

Larco Hoyle, inaugurated the museum’s first location in<br />

the Chillin Hacienda within the northern department of La<br />

Libertad, in honour of his father, Rafael Larco Herrera, who<br />

was known for his “patriotic spirit and love of the past.” It<br />

was not until the 1950’s that the museum and its incredible<br />

collection was transferred to Lima and installed in the very<br />

same 300-year-old mansion it remains into this day.<br />

To walk through the halls of this amazing place is to take<br />

a trip through history, and connect with ancient Peru.<br />

While cultures like the Nasca, Chimu, Wari, and Inca are<br />

represented in each space, it is the Mochica Culture that<br />

gets the most attention, as it was the pioneer collection<br />

and the culture that inhabited the very northern terrain the<br />

museum initially opened. Dazzling jewels, stunning textiles,<br />

ceremonial trousseaus, weapons, vessels, and artefacts<br />

will take you five thousand years into the past. Enjoy these<br />

historic, cultural, and visual treasures as the experienced<br />

museum guides tell you about the origins of many traditions<br />

Peru’s essence is infused with a mysticism that has woven its<br />

way through the country’s history, bringing with it a series of<br />

rituals and customs that continue to hold huge cultural value<br />

to this day. Some of these have mutated over time, adapting<br />

to occurring social changes, while others continue to be<br />

practised and executed much like they were when conceived.<br />

No matter the culture – be it Moche, Chachapoyas, Inca, etc. –,<br />

nature and humankind’s connection to it has always been an<br />

underlying theme and fundamental part of ancient Peruvians’<br />

worldview. Andean cosmology – as it is known today –<br />

emphasises the relationship between man and nature, and the<br />

sacred connotation it possesses: the Earth is the Pachamama<br />

(Mother Earth in Quechua), and the mountains are the Apus.<br />

Together these revered entities protect and provide.<br />

The Payment to Mother Earth is one of the most important<br />

rituals performed in the Andes, done in gratitude to the<br />

Pachamama for all the products, animals, and water that she<br />

provides. With a quintu in hand (three select coca leaves that<br />

are used to communicate with the gods), and an assortment<br />

of objects that make up the traditional ‘despacho’ – all of<br />

which are wrapped up in a weaving as colourful as a rainbow<br />

– a shaman “returns” part of the goods received from Mother<br />

Earth to her.<br />

The arrival of the Spanish brought with it the uprooting of<br />

native customs. Nonetheless, Andean residents managed to<br />

adapt their traditions in ways that maintained their essence –<br />

although this often meant hiding or camouflaging them within<br />

the new, imposed customs. Luckily for us, these 500-yearold<br />

rituals have stood the test of time, and we now have the<br />

chance to be a part of them.<br />

Peru is inarguably privileged when it comes to natural wealth,<br />

boasting a vast coast, stunning mountains, and a rich jungle,<br />

which all come together to yield a unique and geographically<br />

diverse place, bursting with an incredible variety of endemic<br />

flora and fauna.<br />

Among our natural attractions, Lake Titicaca stands out as<br />

one of the most special. Located in the department of Puno,<br />

this navigable lake – the highest in the world – spans across<br />

8,562 square kilometres, and houses hundreds of people on its<br />

various islands. From the shore, the lake appears as open and<br />

endless as the ocean.<br />

A tranquil boat trip across Titicaca is a great way to appreciate<br />

the lake in all its splendour. For those looking to enjoy the<br />

lake in a different way, however, there are Polynesian canoes<br />

that can be taken across the waters to explore the shores<br />

and lesser-known corners, taking passengers on visits to local<br />

communities, and making memories under the starry night sky.<br />

The journey takes three days of steady rowing across<br />

approximately 80 kilometres – a tough but rewarding voyage<br />

that promises to get you in contact with the surrounding nature<br />

as you make your way. Your first stop is on the Uros Island,<br />

known to have been built with reeds woven by its inhabitants<br />

and located only 15 kilometres away. From there, 11 more<br />

kilometres take you to the Llachon Community, where you will<br />

camp for the night and have the chance to enjoy an enviable<br />

view of the lake.<br />

Taquile is your first stop of day two. This island is famous for its<br />

pre-Inca legacy and the incredible and elaborate textiles woven<br />

by the male members of the community. A gorgeous, whitesand<br />

beach awaits you, complemented by calm waters perfect<br />

for activities like paddleboarding. The last day brings with it the<br />

final stretch: 30 kilometres of rowing to your final destination.<br />

Those who wish to revel in the beauty of The Seven Colour<br />

Mountain must put in the work. Located in Cusco, this<br />

spectacular natural sight demands a two-day hike to over 5,000<br />

meters above sea level – a trek completely worth the effort,<br />

however, as this dreamy scenery is unlike anything else.<br />

Vinicunca is located about 100 kilometres outside of Cusco, in<br />

the Pitumarca district, within the Canchis province. The site<br />

itself is stunning, and the natural scenery that surrounds the<br />

route is equally as impressive, boasting native flora and fauna,<br />

and a fantastic view of the revered Apu Ausangate, known for<br />

protecting those who walk beneath it. The mountain’s stark<br />

white peaks contrast with the bright colours of the mountain<br />

and the rich blues of the sky.<br />

While hard to fathom, the colourful Vinicunca Mountain was<br />

under water two million years ago. Marine, lacustrine, and river<br />

sediments settled in the area, eventually forming various layers<br />

of different sizes that now look like stripes. Meanwhile, the<br />

tectonic activity of the zone created the mountains, while the<br />

colours are the results of a mix of minerals, like clay, sandstone,<br />

marl, silicate, copper, calcium, and more.<br />

The site’s recent popularity has turned it into one of Cusco’s mustsee<br />

destinations. Thousands of people make their way to the<br />

site to enjoy the unique visual spectacle, and to snap the perfect<br />

photograph from the top of the lookout tower. It is hard not to<br />

feel the grandeur of nature when in the presence of such a sight,<br />

and even harder to overlook her fragility if not properly cared for.<br />

Immersed in the lush jungle of Cusco’s cloud forest lies an ancient<br />

of gold in Quechua, is a fantastic archaeological site nestled on<br />

challenging – four-day hike full of ascents and descents, that takes<br />

you through a variety of microclimates. From Andean highlands<br />

to Amazonian cloud forests; from 4,000 meters above sea level to<br />

stone walls. All this and more on this incredible route.<br />

Choquequirao is an ancient Inca citadel built above the Apurimac<br />

River Valley, 3,000 meters above sea level. Its size and limited<br />

accessibility have made the excavation and study of the site’s<br />

12 sectors a difficult task. Based on what has been uncovered,<br />

however, the high-quality stonework indicates that the citadel<br />

was used for ceremonial purposes and housing for the elite.<br />

Some theories suggest that it also served as a control point,<br />

and it was home of the last Inca bastion after the arrival of the<br />

Spanish to Cusco.<br />

Its plazas and terraces are noteworthy, as is the flora and fauna<br />

that surround it. The impressive view of the valley shares the<br />

spotlight with the Llamas of the Sun – llama figures made from<br />

stone –, and the incredible number of butterflies that flutter<br />

around hikers. Your camera is sure to be doing the most work<br />

During the six-hour journey from the city of Lima to Huancaya,<br />

you will traverse the coastal desert and make your way into the<br />

Huancaya is relatively new on the tourist map. Part of the Nor<br />

Yauyos Cochas Landscape Reserve, it boasts one of the two<br />

most impressive high Andean landscapes and is the origin of<br />

the Cañete River – one of the most important on the central<br />

coast. The incredible thing about the place is its numerous<br />

waterfalls and its lovely Polylepis forests, guarded by the<br />

INTERNAL RESTRUCTURING. WHY WAS THIS DONE?<br />

Jose: It precisely has to do with processes. We realised that –<br />

with the way that we were structured – there was an overlap of<br />

operations. With these changes, we are looking to make sure our<br />

people spend their time doing what they have to do, rather than<br />

wasting time on other tasks that limit productivity and efficiency.<br />

Another important point is that it permits the specialisation and<br />

standardisation in the workplace: there were areas that worked<br />

in different ways besides having the same function, but there was<br />

no clear line of work. This is going to change to benefit the whole<br />

something that happens to all of us: we have the idea that there<br />

was just this one, grand culture. We have the chance to share<br />

Peru as so much more than that; as a place that dates back over<br />

five thousand years ago, full of the history and culture of many<br />

civilisations – and that the Incas were just a small part of it all.<br />

In <strong>20</strong>12, four talented Peruvian chefs lost their lives in a tragic<br />

car accident. Ivan Kisic – who up to that point was considered<br />

one of Peru’s most promising young chefs – was among those<br />

lost. A year later, his family inaugurated IK, a restaurant named<br />

after him and established with the idea of maintaining his legacy<br />

by always practising and promoting the respect for ingredients,<br />

sustainability, and passion for Andean cuisine.<br />

The restaurant’s philosophy is to share with its guests the glory<br />

of contemporary Peruvian gastronomy, while not straying<br />

from its roots. By using local products and reviving ancestral<br />

culinary techniques, IK has successfully satisfied the palates of<br />

thousands of food lovers from across the globe.<br />

This year, Francesca Ferreyros, who began her culinary career in<br />

stride with Ivan Kisic, has taken over as head chef. Her meticulously<br />

designed tasting menu – which offers five-course, seven-course,<br />

and twelve-course options – brings together coastal, Andean,<br />

and Amazonian influences and ingredients, adding a touch of<br />

international flair without losing its Peruvian essence.<br />

The daily menu at IK is comprised of <strong>20</strong> dishes: appetizers, entrees,<br />

and desserts. Its three ambiances look to calm the senses and<br />

eliminate possible distractions so that guests can focus on the<br />

extraordinary gastronomic experience at hand. With sustainability<br />

as an underlying theme and principal, the main dining room is<br />

in one of the most treasured and picturesque local traditions:<br />

the pachamanca. This centuries-old custom is a celebration<br />

To quiet one’s hunger during the cooking process, participants<br />

are invited to wander the stunning hotel grounds. The organic<br />

farm is cultivated without the use of chemicals, and follows<br />

a traditional cultivation schedule that allows for the land to<br />

“rest.” Above the farm, you can find the on-site distillery where<br />

sugarcane alcohol is crafted into an impressive, high-quality<br />

spirit, or visit the coffee roasting laboratory where the master<br />

roaster will teach you about Peru’s coffee varieties.<br />

Pachamanca is a Quechua word, which translates to ‘earth<br />

oven.’ As the name suggests, the cooking is done by placing<br />

hot rocks into a hole dug into the earth, which is then covered<br />

with leaves. The pachamanca is a way to share the celebratory<br />

experience with Mother Earth and to thank her for her bounty.<br />

Pork, chicken, beef, lamb, and Guinea pig are customarily<br />

accompanied by local potatoes, yams, humitas, corn, and<br />

cheese, and slowly cooked to perfection in this beautiful and<br />

ANDEAN ESSENCE<br />

The name Virgilio Martinez is synonymous with Peruvian<br />

gastronomy. His fascinating concepts of food and cooking, and<br />

his renown restaurant, Central – considered one of the best<br />

50 restaurants in the world, and the best restaurant in Latin<br />

America – have brought him and his work well deserved fame.<br />

Mil is Virgilio’s innovative new project inspired by the Moray<br />

Archaeological Site, and located only meters from it, in Cusco’s<br />

stunning Sacred Valley. More than just a restaurant, the new<br />

locale also houses the Mater Initiative headquarters. This<br />

centre for investigative projects is dedicated to the discovery<br />

and study of Peru’s plethora of ingredients from all over the<br />

country, through contact with communities and establishing<br />

relationships with regional producers.<br />

While Central’s menu is inspired by the ecosystems of Peru’s<br />

coast, mountains, and jungle, Mil is dedicated solely to the<br />

Andes. Through eight moments – or dishes – inspired by the<br />

landscapes of the high Andes and its different altitudes, Mil<br />

showcases local ingredients and pairs them with exotic solarinfused<br />

teas, macerated alcohols, and waters made with local<br />

plants. The restaurant offers a midday service for a maximum<br />

through the city on a bike in this four-hour tour, you will be<br />

restaurant has its own particular low-key – yet inviting – feel<br />

unique to the cook who runs it.<br />

Open your appetite with a ride across the Pacific Ocean-front<br />

esplanade that takes you from the Miraflores to the Barranco<br />

neighbourhood. In light of the coastal setting, our first stop is<br />

at Barra Mar for a sampling of seafood dishes, including our<br />

popular traditional ceviche. Upon finishing, get back on your<br />

bike and head out in search of more local spots offering an<br />

assortment of mouth-watering dishes, like the causa rellena<br />

from Juanito Restaurant, and the lomo saltado at Isolina.<br />

When it comes time for dessert, you have the chance to<br />

indulge in one of two options: artisanally made ice cream at<br />

Bosco Magico, or traditional picarones – a fried dough made<br />

of yam, squash, clove, and cinnamon, and covered with<br />

honey – from Javier Restaurant. To quench your thirst, visit<br />

the Barranco Beer Company and enjoy an artisanal beer. At<br />

the end of the tour, make your way back to Miraflores with a<br />

When it comes to the Inca Trail, most think of the highly<br />

transited route that takes tourists to Machu Picchu, in Cusco.<br />

This 40-kilometre segment, however, is actually a small part of<br />

a network of roads called Qhapac Ñan, which span over 60,000<br />

kilometres – from Colombia to Argentina – and was originally<br />

created to unify the entire Inca Empire.<br />

There are Inca trails across most of Peru’s coast and mountains.<br />

While many of them have been tragically erased by the<br />

construction of cities, roads, or a general lack of care, there are<br />

still areas – especially in the Andes – where one can encounter<br />

various segments of these networks, many of which are well<br />

preserved and still used by members of local communities.<br />

“Qhapaq Ñan: The Great Inca Trail” is the result of a 130-day<br />

expedition in search of the best-preserved areas of the trail,<br />

with the goal of promoting both their touristic potential and<br />

the importance of their conservation. The seven day-six<br />

night programme departs from Huaraz in Ancash and takes<br />

you to the Huanuco Pampa Archaeological Site in Huanuco<br />

– one of the most important northern administrative sites of<br />

the Empire.<br />

As you make your way, accompanied by the impressive<br />

mountains of the Cordillera Blanca Mountain Range, you will<br />

pass through communities that still use the Qhapaq Ñan as<br />

their only connection to the surrounding villages. Admire<br />

ancient stone staircases; note how the trail weaves around<br />

lagoons and rivers as it continues into the horizon of the<br />

beautiful, open pampas; make your way from the frigid and<br />

arid highlands to warm, lush valleys, and enjoy the incredible<br />

A bit over two hours north of Lima lies the ancient city of Caral,<br />

a wondrous place deserving of its UNESCO World Heritage Site<br />

title. This city was the most important for a civilisation that<br />

inhabited the coastal deserts of Peru over 5,000 years ago,<br />

making it the oldest city in the Americas.<br />

On par with China, Egypt, India, and Mesopotamia, parts of<br />

Peru were also thriving all these years ago, boasting incredible<br />

constructions made with local natural materials – like stone and<br />

wood. Despite the passing of time, the city remains perfectly<br />

preserved, and its pyramids can be truly appreciated with the<br />

stark desert and blue skies as a background.<br />

The desert is synonymous with dunes, and dunes are<br />

synonymous with adventure. In our attempt to put a spin on<br />

the typical visit to this extraordinary archaeological site, we<br />

integrated a pinch of adrenaline into our tour, inviting guests<br />

to partake in a wild ride through the sand on a 4x4 truck. An<br />

experienced driver will take you up and down the dunes as you<br />

delve into Lima’s adventurous side.<br />

Take advantage of a free afternoon and indulge in the<br />

Chachapoyas has become a top destination. With the Kuelap<br />

fortress as its main attraction, this part of Peru’s northern<br />

jungle is luring more and more tourists, offering great<br />

weather, amazing archaeological sites, and stunning natural<br />

Located only 42 kilometres from Chachapoyas lies<br />

Cocachimba, a village known for being the starting point<br />

from many of the hikes leading to the famous Gocta waterfall.<br />

This quaint and visually impressive area is home to the Gocta<br />

Lake Titicaca spans across over 8 thousand square kilometres,<br />
