Our review for <strong>December</strong>, took place at The<br />

Fritton Arms, in Norfolk, part of the 5000-acre<br />

Somerleyton Estate. Read all about it in the food<br />

I can’t wait to snuggle up by my Christmas tree<br />

with a few classic movies and some mince pies.<br />

This year will be my first married Christmas so I<br />

have been searching for that all-important gift for<br />

With 2019 just around the corner we fancied a<br />

refresh, so we have enlisted the help of our new<br />

Graphic Designer Katie Parsons, she will give the<br />

In this edition I had the pleasure of speaking<br />

with Max Helyer, the guitarist of indie rock<br />

band You Me at Six. He told me all about how<br />

they formed ten years ago and we discussed the<br />

Bangladeshi<br />

Spiced Turkey Breast<br />

BY AWARD WINNING<br />

CHEF ABDUS SHAHID<br />

Prep Time:<br />

40 mins<br />

Cooking Time:<br />

3.5 hours<br />

Why not try something a little<br />

different this year?<br />

Method<br />

1. In a food processor, puree the yogurt<br />

with the onion, garlic, ginger, lemon juice,<br />

turmeric, cumin, coriander, cinnamon and<br />

cayenne.<br />

2. Place the turkey breasts on a large rimmed<br />

baking sheet. Pour the yogurt marinade over<br />

the turkey and rub it over both sides and<br />

under the skin. Cover and refrigerate for at<br />

least 6 hours and up to 24 hours. Remove<br />

the turkey from the refrigerator 1 hour before<br />

roasting.<br />

3. Preheat the oven to 475°F/176°C Transfer<br />

the turkey breasts (with any marinade that<br />

sticks to them) to a large roasting pan, skin<br />

side up. Season with salt and pepper and<br />

drizzle the butter over the skin.<br />

4. Roast for 20 minutes. Reduce the oven<br />

temperature to 375°F/176°C and roast for<br />

50 minutes longer, or until an instant-read<br />

thermometer inserted in the thickest part of<br />

the breast registers 165°F/176°C<br />

5. Transfer the turkey to a cutting board and<br />

let rest for 10 minutes. Carve and serve.<br />

Ingredients<br />

• 2 cups plain whole-milk yogurt<br />

• 1 medium onion, coarsely chopped<br />

• 3 large garlic cloves<br />

• 1 1-inch piece of fresh ginger, peeled<br />

and thinly sliced<br />

• 1/4 cup fresh lemon juice<br />

• 2 teaspoons ground turmeric<br />

• 1 teaspoon ground cumin<br />

• 1 teaspoon ground coriander<br />

• 1/2 teaspoon cinnamon<br />

• 1/2 teaspoon cayenne pepper<br />

• 2 bone-in, skin -on turkey breast<br />

halves (about 3 pounds each)<br />

• Kosher salt and freshly ground pepper<br />

• 2 tablespoons unsalted butter, melted<br />

Premier Artists’ Showcase Invites Members<br />

To Join For 8th Successful Year...<br />

SUFFOLK OPEN STUDIOS<br />

Suffolk Open Studios have launched<br />

their 2019 Call for Artists, inviting artists<br />

and galleries living and working across<br />

Suffolk to join next year’s programme.<br />

Earlier this year, over 100 artists opened<br />

their studios to the public and enjoyed<br />

the many advantages of taking part,<br />

including reaching new audiences and<br />

showing their work in the comfort of<br />

their own studio; receiving valuable<br />

feedback by interacting directly with<br />

potential clients; and the chance to<br />

meet and collaborate with fellow artists<br />

in their area. Artists and galleries also<br />

benefit from valuable publicity through<br />

their profile on the Suffolk Open<br />

Studios website and Facebook page,<br />

and inclusion in the printed directory,<br />

distributed free of charge to tourist<br />

centres, art venues and visitor attractions<br />

throughout the county.<br />

Members are also guaranteed a place<br />

in the annual Suffolk Open Studios Annual Showcase<br />

Exhibition at the Apex Centre in Bury-St-Edmunds,<br />

running 25 February - 1 April 2019. This year’s show<br />

proved extremely popular and drew favourable comments<br />

from across the art community.<br />

Run by volunteers, Suffolk Open Studios is open to all<br />

Suffolk artists and galleries regardless of the media in<br />

which they practise. Members open their studios free<br />

of charge to the public 11am-5pm over the first five<br />

weekends of June, choosing to open on as many or few<br />

weekends as they wish. Many join together to form their<br />

own local artists’ “trails”; anyone unable to include their<br />

own studio can still take part by renting space with other<br />

artists and forming their own artists’ “hub”. More details<br />

are on the Suffolk Open Studios website at<br />

www.suffolkopenstudios.org.<br />

Artists and galleries wishing to take part in next<br />

year’s programme can do so from 1 November, by<br />

completing the online membership form at<br />

www.suffolkopenstudios.org/membership.<br />

A Christmas Proposal?<br />

Christmas is in full swing,<br />

romance is in the air<br />

and a very special gift is<br />

coming you way...<br />

He pops the question. You<br />

say yes. Hooray! You’re<br />

engaged! Now what do you<br />

do? Here are my tops tips:<br />

1. CALL YOUR RELATIVES...<br />

Your first task - sharing the<br />

exciting news with the world.<br />

And how easy would it be to do<br />

so in 140 characters or fewer<br />

or with a quick status update?<br />

No matter how tempting, it’s<br />

an engagement no-no to not<br />

pick up the phone and call your<br />

family members and friends. All<br />

of them. No one likes to be the last to know!<br />

2. GET YOUR RING SIZED...<br />

Your stunning sparkler is perfect in every way, except for<br />

the wiggle room (or maybe it’s a little tight and turning<br />

your fingertip a not-so-Tiffany-blue). Get it resized<br />

ASAP—after all, you’ll be showing it to everyone and the<br />

last thing you want is to lose the thing an hour after you<br />

get it.<br />

3. GET YOUR RING INSURED...<br />

Nothing can replace the sentimental value of your ring,<br />

but if something happens to it, at least you can get<br />

your (or his) money back. If you have home owner’s or<br />

renter’s insurance, call to add the ring to your policy.<br />

4. SET A DATE—EVEN IF IT’S NOT THE DATE...<br />

After “congratulations” and “let me see your ring,” here’s<br />

the first thing people will ask: “When’s the wedding?”<br />

It’ll save you lots of headaches if the two of you come up<br />

with a vague-yet-specific answer, like “We’re aiming for<br />

early 2020” or “We like the idea of next autumn.” People<br />

appreciate feeling like they’re in the loop, and they’ll also<br />

put the event into their mental datebooks.<br />

No, not a wedding planner person—<br />

at least not yet. Get an iPhone app,<br />

a planner, a calendar or some other<br />

kind of keep-organized device to<br />

help you create a timeline for major<br />

wedding-related tasks.<br />

7. START A WEDDING SAVINGS<br />

ACCOUNT...<br />

Remember that even a simple,<br />

small wedding costs money (and<br />

sometimes a lot more money than<br />

you would ever imagine).<br />

A wedding savings account is an<br />

easy way to keep cash accumulating<br />

for the big day, so you don’t have<br />

to rely on plastic to bear the brunt<br />

later on.<br />

8. ASK YOUR PARENTS (AND HIS)<br />

FOR THEIR IDEAL GUEST LISTS...<br />

Before you start putting a number<br />

on how many guests you want, it’s<br />

time to ask both your parents about<br />

whom they’d most want to invite.<br />

DON’T FORGET...<br />

You Me At Six are back again<br />

with a brand new album...<br />

Few bands get to spring a surprise sixth album<br />

into their career. Even fewer do so in as dramatic a<br />

fashion as You Me At Six do on their simply titled<br />

new record, VI. They know what you probably think<br />

of them – “The emo pop-rockers from Surrey,” as<br />

guitarist Chris Miller puts it – and once upon a time<br />

you would have been right. But not for a long time,<br />

and certainly not on VI, a record that switches<br />

moods and styles with breathless confidence, from<br />

devastatingly defiant rock to joyously uplifting pop.<br />

It all but drips with melodies and moods. It’s the kind<br />

of record a band makes when they are in love with<br />

all the possibilities of music. VI is not what you might<br />

expect a You Me At Six album to sound like.<br />

You Me At Six needed something unbelievable to<br />

happen with VI, because by their own admission it<br />

didn’t happen with their last album, Night People,<br />

released in February 2017. As a band, they were too<br />

tied up with their own business affairs, they didn’t<br />

write the songs to do their talent justice, and they<br />

created an album they felt was too samey, too linear,<br />

always travelling in one direction.<br />

They have notched up a list of considerable<br />

achievements since forming in 2004 as teenagers in<br />

Weybridge, Surrey, including four UK Gold Records,<br />

four Top 10 albums in the UK including Number<br />

1album Cavalier Youth, three sold out arena shows,<br />

sold out UK headline arena tours, an unparalleled<br />

15 consecutive A-List singles on BBC Radio One,<br />

multiple sold-out US headline tours and a Number<br />

1 rock song in UK & Australia and Top 5 Rock Radio<br />

track in North America in ‘Room To Breathe’.<br />

R: Hi Max, How are you?<br />

I’m good thanks, how are you doing<br />

today?<br />

R: Yeah, really good! Thanks for taking<br />

the time to speak to me.<br />

No worries, anytime, thanks for chatting.<br />

R: So, I will fire straight into the<br />

questions…<br />

Yeah!<br />

R: How did you first get into playing the<br />

guitar?<br />

When my sister and I were growing up,<br />

she started learned how to play the piano.<br />

The sound always intrigued me, it’s quite<br />

an enchanting thing to watch.<br />

I remember wanting to learn an<br />

instrument, but I didn’t know what.<br />

When I was in primary school, a<br />

musician came in one day and showed<br />

us a few instruments, I remember<br />

seeing the guitar; it was also around<br />

about the time I started to listen to rock<br />

music, so I knew that was the one<br />

for me. My parents didn’t want it to be a<br />

short-lived hobby; I had to wait for quite<br />

a while to get a guitar, which was about<br />

four years.<br />

R: Four years wow!<br />

Yeah, so it was quite a long time. I think<br />

the wait made me more hungry to learn<br />

how to play it.<br />

How did you form the band?<br />

I used to play in a band with Josh before<br />

You Me at Six, which stopped.<br />

So after that Josh and I enjoyed hanging<br />

out with each other making music and we<br />

wanted to start another band. Josh knew<br />

Matt, so it was the three of us who started<br />

the band, then Chris joined, he only lived<br />

a door or two down away from Matt’s<br />

parents’ house. Then we all went to Music<br />

College, and that’s when we met Dan who<br />

is our drummer now.<br />

R: Where does the name ‘You Me at Six’<br />

come from?<br />

We were booking gigs and didn’t have a<br />

name so it was a common term we used<br />

every Friday night for meeting up, “You<br />

Me at Six”? So we put that down as an<br />

option just so we had a band name and<br />

we never changed it.<br />

R: Well, I like it so I am glad you didn’t!<br />

Thank you!<br />

R: Before you were in the band you used<br />

to have your own clothing shop can tell<br />

us more about this?<br />

It wasn’t before the band, I started it with<br />

a friend outside of music, and he was<br />

actually our first merch guy. I am really<br />

into fashion; I like clothes; I am constantly<br />

sourcing designers and that was the<br />

whole process behind starting up clothing<br />

shop ourselves.<br />

R: What do you do in your downtime?<br />

Downtime can be anything for me, I like<br />

writing music a lot, so it could be writing<br />

music on my guitar, laptop or trying to<br />

produce music.<br />

I try to find ways of being creative but<br />

also find inspiration from going out in<br />

London town or taking walks or going to<br />

art museums. I like to switch off; it really<br />

helps that creative process.<br />

R: I guess that’s important when your<br />

schedule must be so busy?<br />

not the best musician myself.<br />

I think we always strive to become better<br />

and learn more. Being patient with<br />

yourself is important as is creating a set<br />

routine time to practice.<br />

R: Can you tell us more about the new<br />

album, your sixth album? I have had a<br />

little listen and I have to say I’ve really<br />

enjoyed it, there’s lots of energy. Did you<br />

enjoy creating it?<br />

Yeah, exactly, it’s good to compose your<br />

thoughts.<br />

R: What advice would you give to those<br />

learning the guitar?<br />

You need to be dedicated, you will not be<br />

the best musician straight away, I am still<br />

Yeah, we were just trying to push<br />

ourselves. I think when you challenge<br />

yourself it also challenges your fans about<br />

what they are listening to. For myself, I<br />

don’t listen to the same music all the time,<br />

that affects the way I write music and my<br />

outlook on things. We have tried to be<br />

more experimental with this album and<br />

make our music more interesting.<br />

R: My favourite track on the album is<br />

“Back Again”, it came on the radio when<br />

I was in the car and I didn’t realise it was<br />

you guys, it was different to some of your<br />

other songs. Do you have a favourite<br />

track on the album?<br />

That song sums up that day, I think Josh’s<br />

voice is always the thing that will glue<br />

You Me at Six together as it’s quite an<br />

identifiable voice.<br />

We can be more creative because of that.<br />

It was meant to be like a Friday night<br />

feeling song.<br />

It’s hard, as it’s a volume of work. As<br />

a musician, you don’t really want to<br />

choose a favourite, as they are all equally<br />

important, like you were saying “Back<br />

Again” was quite a different way of<br />

writing music.<br />

I wrote that with a guy called Joel Pott<br />

who used to play in Athlete; it was a<br />

different experience to write a song with<br />

a songwriter; it captured a certain energy<br />

and emotion on the day.<br />

I wanted something you could dance to, I<br />

think music is meant to make you happy<br />

and sad and I was in a great place and I<br />

think it reflects it in the song.<br />

R: It comes through; I have to confess I<br />

had a little bob up and down to it in the<br />

car… I am a right geek!<br />

It still makes me do that as well! The most<br />

humbling thing about that song is that it<br />

differs from what we’ve done, if it makes<br />

you bob your head or dance, that’s the<br />

most important thing.<br />

We are always trying to push and strive to<br />

become better.<br />

that album from start to finish, along with<br />

other songs mixed in. It reminds people of<br />

where they were at that time in their life.<br />

Almost nostalgic?<br />

Your UK tour stops by us in Norwich on<br />

8 th <strong>December</strong>, can you tell us more about<br />

that?<br />

Well, yeah I can, that show in Norwich will<br />

celebrate the 10-year anniversary of our<br />

album ‘Take Off Your Colours”.<br />

Yeah, really nostalgic, I try to find a way of<br />

not saying nostalgic!<br />

There is nothing wrong with that – that<br />

could be for good or bad times, but that’s<br />

music at the end of the day and I get that<br />

from other artists myself.<br />

The reason we are doing it is that we<br />

wanted to give something back to the<br />

fans, for us, we didn’t know if we should<br />

do it or not, but we wouldn’t be where we<br />

are today without our fans.<br />

So this is to say thank you. We will play<br />

ten years and there must have been a few<br />

but is there one particular one?<br />

We’ve been all over the world and<br />

headlined at festivals, but for me, it was to<br />

have a number one album on our fourth<br />

record ‘Cavalier Youth’ because when you<br />

make music, you don’t expect it to be a<br />

career, so to get a number one record it<br />

was great.<br />

In all honesty, I don’t think You Me at<br />

Six will get another number one record<br />

because of the way music is now analysed<br />

and used by streaming platforms.<br />

Well, I can’t give you exclusives, but what<br />

I can say is that you can probably expect<br />

a lot more from You Me at Six, we be<br />

playing more live shows and festivals.<br />

Like you say, never say never as you never<br />

know what’s will come out of You Me at<br />

Six right now!<br />

Very exciting!<br />

For myself it would be that we achieved a<br />

number one album in our musical career.<br />

But I would say, never say never!<br />

Never say never, I mean who knows!<br />

Lewis Ritson<br />

can come<br />

again...<br />

A series of articles which will feature boxing facts<br />

from both the past to the present...<br />

A defeat in boxing is not the<br />

end of the world it can of course<br />

be a little demoralising at the<br />

time for a fighter especially if<br />

he is expected to win. On the 13<br />

October <strong>2018</strong> British lightweight<br />

champion Lewis Ritson nicknamed<br />

the Sandman entered<br />

the ring at Metro Radio Arena<br />

in Newcastle Tyne and Wear.<br />

Ritson with an undefeated<br />

record of 17 victories with 11<br />

coming inside the distance<br />

was contesting the vacant<br />

European crown. His opponent<br />

Francesco Patera of Belgium<br />

was a former holder of the title<br />

and his resume consisted of 22<br />

fights with just three defeats<br />

winning eight of his said bouts<br />

inside the distance (including a<br />

disqualification victory).<br />

Expectations were high for<br />

the British fighter but boxing<br />

pundits were aware that Patera<br />

while not a world class fighter<br />

was no walk over. The man from<br />

Belgium was a slick operator<br />

who would not submit easily<br />

and would hence give hence<br />

Ritson all sorts of problems to<br />

overcome. Despite that a Ritson<br />

victory in front of his home<br />

fans looked to be on the cards<br />

perhaps not inside the distance<br />

but a solid 12 round points win<br />

looked the likely scenario.<br />

Patera was no stranger to the<br />

UK on the 15 October 2016<br />

he challenged Sean Dodd<br />

for the World Boxing Council<br />

International lightweight crown.<br />

This contest took place at the<br />

Echo Arena in Liverpool. Patera<br />

came up short when he lost a 10<br />

round points decision.<br />

There was no doubt plans in<br />

place for Ritson should he<br />

defeat Patera, a possible two<br />

defences of the European crown<br />

mixed in with a few non-title<br />

bouts before advancing towards<br />

a world title shot. The future<br />

looked set and exciting for<br />

Ritson but opponent Patera<br />

had plans of his own he too was<br />

ambitious. The fight went the<br />

full route of 12 rounds and the<br />

visitor showed indeed that he<br />

was not a fighter with a loser’s<br />

mentality he came to win and<br />

win he did. Patera proved to<br />

be the better man on the night<br />

and took the decision and the<br />

championship and shocked the<br />

British fighter in the process.<br />

This was a bitter pill for<br />

Ritson to swallow since he<br />

was emerging into a fighter<br />

of prominence one who was<br />

capturing the fight public’s<br />

attention with his exciting<br />

performances and looked to be<br />

a major star of the future.<br />

Ritson must now regroup and<br />

go back to the drawing board<br />

with his team and discover<br />

just what went wrong.<br />

Truthfully very few fighters<br />

are able to go through their<br />

professional careers without<br />

a loss on their record. Those<br />

who have met with defeat<br />

have often come back better<br />

fighters having learnt from the<br />

experience.<br />

Ritson has the talent to get<br />

over this setback and put the<br />

loss behind him and go on to<br />

higher honours. After a rest he<br />

can return to the ring in 2019<br />

and perhaps indulge in a three<br />

or four bout’s before setting<br />

his sights on the European<br />

crown again. If Patera is still the<br />

reigning continental champion<br />

during that time a Ritson-<br />

Patera return bout would be<br />

an immediate attraction. The<br />

British fighter who is promoted<br />

by Matchroom Boxing can<br />

extract revenge over his former<br />

conqueror and hence put<br />

himself back on course for a<br />

world title shot.<br />

How to try the pose:<br />

the left leg on the floor. Step the right foot over<br />

2. Exhale and twist toward the inside of the right<br />

thigh. Press the right hand against the floor just<br />

behind your right buttock, and set your left upper<br />

arm on the outside of your right thigh near the<br />

knee. Pull your front torso and inner right thigh<br />

snugly together.<br />

3. Press the inner right foot very actively into the<br />

floor, release the right groin, and lengthen the<br />

front torso. Lean the upper torso back slightly,<br />

against the shoulder blades, and continue to<br />

lengthen the tailbone into the floor.<br />

4. You can turn your head in one of two<br />

directions: Continue the twist of the torso by<br />

turning it to the right; or counter the twist of the<br />

torso by turning it left and looking over the left<br />

shoulder at the right foot.<br />

5. With every inhalation lift a little more through<br />

the sternum, pushing the fingers against the floor<br />

to help. Twist a little more with every exhalation.<br />

Be sure to distribute the twist evenly throughout<br />

the entire length of the spine; don’t concentrate<br />

it in the lower back. Stay for 30 seconds to 1<br />

minute, then release with an exhalation, return<br />

to the starting position, and repeat to the left<br />

for the same length of time. Watch a video<br />

Festive<br />

Wines<br />

The term Festive wines usually refers to Christmas or any<br />

other occasion for celebration.<br />

BY ‘WINE BUFF’ FRED FISHER<br />

At this time of year, we can concentrate on a<br />

Christmas meal and see what wine could be<br />

chosen at each stage of the meal.<br />

Of course, it can apply to any time of the year<br />

or for any celebration dinner.<br />

An Aperitif...<br />

Before the meal proper it is usual for an<br />

aperitif to be served and the favourite would<br />

be a sparkling wine. Now a popular drink<br />

with a wide choice available. At the top<br />

end Champagne is the best but can prove<br />

expensive. Some cheap Champagnes are<br />

available but they would have spent less time<br />

maturing in the cellars and may disappoint.<br />

The grapes generally are Chardonnay, Pinot<br />

Noir and Pinot Meunier.<br />

Of other sparkling wines the leading types are<br />

Prosecco from Italy and Cava from Spain.<br />

Prosecco has recently had enormous success<br />

which is leading to overproduction by<br />

increasing the vineyard sizes. Be wary of the<br />

very cheap ones as a result of this unless you<br />

are using them as a mixer drink. The grape<br />

used is the Glera which tastes different to the<br />

champagne grapes and a lot of it is made in a<br />

tank rather than a bottle.<br />

Cava is very popular and uses a similar<br />

method of production to champagne. The<br />

grapes are different again, being generally<br />

from Parellada, Macabeo, Xarel-Lo and<br />

Chardonnay. The word Cava stands for<br />

sparkling wine. There are many other<br />

sparkling wines made around the world, New<br />

Zealand, South Africa, USA, Portugal etc.<br />

Another popular aperitif is called KIR. For this<br />

you use 4 parts dry wine and 1 part Cassis<br />

(Blackcurrant Liqueur). If you use sparkling it<br />

is called a KIR Royale and with red wine it is a<br />

KIR Cardinal.<br />

The Starter...<br />

For meat dishes, red wine is always a good<br />

match. A good Burgundy is ideal but Rhone<br />

wines like Chateauneuf-Du-Pape can match.<br />

With Ham it seems to attract a lighter red like<br />

Beaujolais but Pork could work well with a<br />

lighter white wine such as Vouvray or Vinho<br />

Verde.<br />

Back to a full bodied red for Sausages, Spare<br />

Ribs and Steak and Kidney Pies.<br />

Pasta and Pizza seem to go well with light<br />

reds and sharp whites. Lasagne and Spaghetti<br />

Bolognaise would require a stronger red.<br />

From the variety of starters that are<br />

made it really comes down to<br />

the main ingredients and the<br />

sauces used. For fish and<br />

white meat starters a dry<br />

white wine would be OK.<br />

Stronger flavoured dishes<br />

would require a stronger<br />

tasting wine and would<br />

depend on the sauces used.<br />

Meat or Pate could match a<br />

red wine, preferably a light red or a<br />

strong tasting Rose.<br />

The Main Meal...<br />

With white meat the wine would need to<br />

match the ingredients and the sauces. Turkey<br />

at Christmas with Cranberry sauce could be<br />

matched by a strong white wine but a light/<br />

medium red such as Beaujolais could prove a<br />

good match.<br />

Dessert...<br />

The sweetness of a wine is<br />

important when matching a<br />

dessert. It needs to be as sweet<br />

or even sweeter than the dessert<br />

it is served with. Chocolate is an<br />

odd match.<br />

Dark chocolate can match surprisingly<br />

with a Pinot Noir red, particularly with<br />

Californian Pinot Noir. This is as a result of the<br />

rich fruitiness of the wine.<br />

Sauterne, one of the most famous sweet<br />

wines can suffer from Botrytis which<br />

concentrates the flavours and sweetness of<br />

the wine.<br />

The Muscat grape is used in many dessert<br />

wines and should be considered.<br />

Conclusions...<br />

It is said that any wine can match any food , it depends on whether you like it. That’s a<br />

personal view and there is a lot of truth in that. What is suggested is based on many peoples<br />

views and is mentioned as a suggestion only.<br />

Raspberry<br />

Bakewell<br />

Roulade<br />

Sure to be a family favourite,<br />

this warming winter one-pot has<br />

gently simmered sausages, hearty<br />

cannellini beans and a crunchy<br />

breadcrumb topping.<br />

1. Heat the oven to 180C/fan 160C/gas 4. Line<br />

a swiss roll tin about 30cm x 23cm with baking<br />

paper. Sift the icing sugar all over the paper and<br />

scatter over half of the flaked almonds.<br />

2. Sift the plain flour and baking powder into a<br />

bowl to aerate it, then stir in the ground almonds<br />

and lemon zest. Whisk the eggs and sugar in a<br />

stand mixer until the mixture is light and fluffy<br />

and will make a ribbon trail that doesn’t disappear<br />

straight away when you lift the whisk up, (this will<br />

take about 8 minutes). Fold the flour mixture in<br />

with a large metal spoon and scrape the mixture<br />

into the prepared tin, levelling the top.<br />

3. Bake for 10 minutes, or until the sponge is<br />

golden and just set to your touch, it should also<br />

sound crackly. Dust another sheet of baking paper<br />

with caster sugar and turn out the sponge onto it.<br />

Peel off the top paper gently and roll the sponge<br />

up carefully, using the sheet of paper underneath.<br />

Leave rolled up until completely cooled.<br />

Ingredients<br />

• Icing sugar 2 tbsp<br />

• Flaked almonds 60g, toasted and crushed<br />

• Plain flour 50g<br />

• Baking powder 1 tsp<br />

• Ground almonds 50g<br />

• Lemon 1, zested and juiced<br />

• Eggs 4<br />

• Golden caster sugar 75g, more for dusting<br />

• Double cream 200ml<br />

• Raspberry jam 150g<br />

4. Softly whip the double cream, then add 2 tsp<br />

lemon juice and mix lightly. Unroll the sponge<br />

and spread it with a layer of raspberry jam, then<br />

dot over the lemon cream and roll the sponge up<br />

again. Lift it onto a serving plate. Mix some icing<br />

sugar with lemon juice to make icing the thickness<br />

of double cream, drizzle this backwards and<br />

forwards over the roulade, and scatter with the<br />

remaining flaked almonds.<br />

A classic, vintage, bittersweet cocktail. Simple and balanced.<br />

INGREDIENTS<br />

• 1-2 measures of Norfolk Gin<br />

• Favourite tonic<br />

• Ice<br />

GARNISH<br />

• Strip of orange zest<br />

• Sprig of fresh thyme<br />

GLASS<br />

• Highball or balloon<br />

METHOD - Pour Norfolk Gin<br />

into your favourite glass, add<br />

ice and tonic. Gently squeeze<br />

the orange zest over the glass<br />

to release the oils. Finish with<br />

a sprig of fresh thyme.<br />

Method<br />

• Preheat the oven to gas 5, 190°C, fan<br />

170°C.<br />

• Cook the cocktail sausages wrapped in<br />

bacon to pack instructions, adding the<br />

Yorkshire puddings for the last 10 mins.<br />

• Remove from oven.<br />

A family favourite...<br />

Tiny versions of a British classic, these<br />

Miniature Toad in the Holes are great as a<br />

side dish or an inventive Christmas party<br />

canapé.<br />

• Divide the chutney between the<br />

puddings and put a sausage inside each.<br />

• Finish with a dot of English mustard<br />

and some fresh thyme.<br />

Its ok to cheat a little at Christmastime!<br />

Frozen Yorkshire puddings and preprepared<br />

pigs in blankets mean this<br />

fantastically festive nibble is ready in just<br />

half an hour.<br />

On the banks of Fritton Lake as<br />

part of the impressive 5000-<br />

acre Somerleyton Estate, it is<br />

hard to miss the impressive<br />

mustard yellow façade of The<br />

Fritton Arms, dating back to<br />

the 16th century.<br />

Re-opened in 2014<br />

by Hugh Crossley,<br />

known to most as<br />

Lord Somerleyton,<br />

this country retreat<br />

makes the perfect<br />

place to relax with<br />

loved ones. Boasting nine simple but elegantly<br />

furnished rooms overlooking stunning views<br />

of the grounds, you wouldn’t be mistaken<br />

to think they had drawn inspiration from the<br />

popular Soho Farmhouse in Oxfordshire.<br />

Here come the girls...<br />

I arrive for a much-needed girlie get away<br />

with my best friend, so it’s a twin room for<br />

us, and not a bad one at that. Exposed oak<br />

beams contrast against modern luxurious<br />

bedspreads, designer lamps along with<br />

We glam up and head down for dinner. The<br />

bar area, once an old inn, still retains its<br />

original look, right down to the stuffed pike<br />

which hangs on the wall. With a G&T in hand<br />

we peruse the menu next to the roaring log<br />

fire, the smell of the smoke reminds me it’s<br />

not summer anymore.<br />

Wine and dine...<br />

The restaurant–rustic with exposed brickwork–<br />

has an informal yet smart appearance with<br />

outbreaks of personality–my eyes are drawn<br />

to the splash of vibrant colour of the bright<br />

blue mis-matched chairs, whilst freshly cut<br />

seasonal flowers rest on each window next to<br />

modern pieces of art which add contemporary<br />

flourishes to the walls.<br />

There is a well-stocked bar featuring local ales<br />

and an original wine list including The Arm’s<br />

wine of the month. You won’t go far wrong<br />

with this month’s pick the Italian Sauvignon<br />

Blanc.<br />

Laying claim to zero food miles the menu is<br />

enticing and features locally sourced fresh<br />

ingredients directly from the estate. The<br />

land is mainly arable producing rapeseed oil,<br />

potatoes and barley, but it is also home to<br />

80 Welsh Black Cattle and 120 Norfolk Horn<br />

Lamb and Welsh Black Mountain Sheep, when<br />

they say Estate Lamb on the menu–they<br />

mean it! If they can’t find it on the Estate, they<br />

source locally wherever possible.<br />

A first time for everything...<br />

Luckily for us, we had General Manager<br />

Will on hand to guide as through the tasty<br />

options. As a strict vegetarian, I opted for the<br />

‘Wild Mushroom Pappardelle with Tenderstem<br />

Broccoli and Toasted Walnuts’ to start<br />

followed by the ‘Butternut Squash<br />

Risotto, Parmesan<br />

and Toasted Seeds’. After<br />

recently returning from<br />

Italy, it was a gentle nod<br />

to Italian cuisine I was<br />

accustomed to, sending<br />

me right back to the Amalfi<br />

Coast. Kirsty, on the other<br />

hand, was feeling rather<br />

adventurous, (most likely down<br />

to the G&T). She selected the<br />

‘Deep Fried Cod Cheeks with Tartare<br />

Sauce’. She then insisted on trying the ‘Slow<br />

Cooked Estate Rabbit and Barley Broth with<br />

Herb Oil’, for her main - it was the first time<br />

she’d tried game and I couldn’t stop her<br />

raving about it afterwards–much my dismay!<br />

The proof is in the pudding…<br />

Predictably, after two wonderful<br />

courses we were full, but it didn’t<br />

take much to persuade us to try<br />

a dessert. I say ‘a’ dessert–after<br />

deliberating for five minutes,<br />

Will could see us struggling,<br />

so like every great matradee<br />

he had a suggestion, “why not<br />

try them all” he asked? What a<br />

brilliant idea. The next thing we<br />

know, armed with spoons, we are<br />

in a fight to feast on the selection of<br />

Sticky Toffee Pudding with Rum & Raisin<br />

Ice Cream, Somerleyton Blackberry Jam<br />

A playful side…<br />

For those who like fun and games, The<br />

Fritton Arms has its own Billiard Room. I<br />

can’t say I would give Ronnie O’Sullivan a<br />

run for his money, but I gave it my best shot.<br />

It was the perfect way to end the night–we<br />

certainly had a giggle or two and gave<br />

everyone else one at that!<br />

Whilst you are here…<br />

Somerleyton Hall, the stately home, is open to<br />

visitors from April to September (Tuesdays,<br />

Wednesdays–gardens only, Thursdays and<br />

Sundays)–the history of the house is interesting<br />

and the gardens are delightful, supplying the<br />

gorgeous cut flowers in the hotel.<br />

The verdict…<br />

Fritton suits weekend-breakers looking for a<br />

pretty and tranquil setting. With a mixture of<br />

Paul Weller is the first artist to announce gigs as part of Forest Live 2019, the<br />

summer concert series promoted by the Forestry Commission.<br />

Paul’s latest release ‘True Meanings’, entered<br />

the UK charts at No 2. It is his fourteenth<br />

solo album and the twenty-sixth studio<br />

album of his career that began in 1977 with<br />

The Jam’s debut album ‘In the City’.<br />

Gentleman’s Dub Club release new single and album...<br />

After this past summer’s acclaimed project with The<br />

Nextmen, Gentleman’s Dub Club return with the<br />

hotly anticipated album, ‘Lost In Space.’<br />

True connoisseurs of blending influences from<br />

genres such as dub, reggae, ska, bass culture, jazz,<br />

and everything in between, the band has adopted<br />

a futuristic tone as they continue their mission to<br />

discover the ultimate bassline.<br />

Pre-orders for the record launch started on Oct 5 th<br />

with first single, ‘Stardust’ and second single ‘Turning<br />

Back’ (Featuring Million Stylez) is set for release on<br />

the 7 th <strong>December</strong>, whilst the full album is due for<br />

release on the 25 th January 2019.<br />

Teaming up once again with the mighty Easy Star<br />

Records has resulted in only one outcome: a euphori<br />

Meeting every unique end of the spectrum,<br />

Gentleman’s Dub Club once again draw on their<br />

incredible ability to fuse sounds together until<br />

they feel like they’ve always belonged. From the<br />

earth-rattling sounds of the first single ‘Stardust,’<br />

to the blockbuster proportions of ‘Intergalactic’,<br />

the deep undulations of ‘Ground Shakin’ and onto<br />

the beautifully melodic and aptly titled ‘Out Of This<br />

World’ – no comet is left unburnt.<br />

Joining the band on this interstellar adventure are<br />

the equally awesome Million Stylez and Winston<br />

Francis, who feature on ‘Turning Back’ and ‘Walking<br />

Away’ respectively, both of which have feel-good,<br />

ear-to-ear smile vibes throughout.<br />

The well-known role of a debut single from a<br />

forthcoming album is to set the tone and create an<br />

intro for the delights that are to follow – ‘Stardust’<br />

did exactly that, announcing itself with a flourish of<br />

fanfare-like horns.<br />

Set for release on the 7 th <strong>December</strong>, this reggae<br />

masterclass takes it up a notch with the<br />

unmistakable eccentric vocals of Million Stylez.<br />

Overflowing with groove and an infectious rhythm,<br />

it’s impossible not to move to this track. Infused<br />

with the origins of rocksteady, whilst combining the<br />

explosive signature rhythms that GDC are known<br />

for, ‘Turning Back’ ticks just about every box there<br />

is to tick.<br />

A colossal <strong>2018</strong> saw Gentleman’s Dub Club take<br />

their energetic live show across the UK, Europe,<br />

and beyond, with a hefty touring schedule including<br />

world famous festivals such as Bestival, Shambala<br />

and Boomtown, and gigs in such far flung places as<br />

Tunisia, Iceland and La Réunion.<br />

So the office Christmas meal<br />

was all arranged in good time<br />

during November, but to kick off<br />

<strong>December</strong> the office dropped the<br />

Now last year, it<br />

didn’t stay that<br />

secret… not quite<br />

sure who was to<br />

blame, but Wendy is<br />

in charge again.<br />

So lets see how we do this year.<br />

I’m happy with who I got! But<br />

let’s not worry- it’s all a bit of fun!<br />

I mean how wrong can we really<br />

go, especially if we have a given<br />

budget.<br />

Whether it’s between colleagues,<br />

friends or family, best start<br />

thinking of what we can achieve<br />

in our time frame and spending<br />

limit.<br />

Ideas around £5<br />

Now with a small budget, gifts are really just going to<br />

be token things. This is easy and pretty much what the<br />

supermarkets gifty isles are perfect for if you really have<br />

no idea. Simply opt for a prosecco or beer gift set- who<br />

doesn’t like those glasses to keep?<br />

Or the small pampering gifts, such as Nivea lip balms.<br />

The small treats are handy and often presented festivelygreat.<br />

Let’s be honest you could say these are made for<br />

the situation of our paths only really cross at the coffee<br />

machine!<br />

Ideas around £10- £15<br />

If you’re still lurking in the supermarket look at the gift sets<br />

in this price range, for example mugs or bigger pamper<br />

selections. You can also find nice packages in places such<br />

as Body Shop, Ted Baker and Boots- well known for their<br />

Christmas 3 for 2 range.<br />

One of my favourite shops for gifts is TK Maxx. Not only<br />

Curiosities...<br />

Norwich Castle was<br />

originally designed to<br />

be a Royal palace but<br />

became a fortification.<br />

No Norman kings ever resided<br />

there and the only time Henry<br />

I is known to have stayed<br />

at Norwich Castle was for<br />

Christmas 1121.<br />

It has been claimed that Henry<br />

VIII is credited with adopting<br />

the turkey as a Christmas bird<br />

following its introduction to<br />

Britain from America in the<br />

1520s. It became very popular<br />

amongst the Tudor elite of<br />

Norfolk and was normally served<br />

in a coffin-shaped Christmas<br />

pie, where it was stuffed with<br />

numerous other game birds.<br />

Large Tudor Houses and Halls<br />

all over Norfolk, would invite<br />

musicians to entertain them and<br />

their guests.<br />

Christmas in the 1700s saw<br />

presents being exchanged<br />

for the first time. The custom<br />

of giving a Christmas box to<br />

tradesmen and servants also<br />

became commonplace, as did<br />

paying small amounts to those<br />

less well off. Most undertook<br />

these obligations cheerfully<br />

as did the Norfolk clergyman<br />

James Woodforde who made<br />

a note in 1788 that he paid<br />

sixpence each to 56 “poor<br />

people” in his parish, entertained<br />

some to dinner, and those<br />

who were too lame to come in<br />

person had their dinners sent<br />

to them. But many others were<br />

resentful of this mounting cost.<br />

By the time the 1720s had<br />

ended, up to 250,000 turkeys<br />

had been walked from Norfolk<br />

to the London markets in small<br />

flocks of 300-1000. They started<br />

the long walk in August and fed<br />

on stubble fields and feeding<br />

stations. Their feet were dipped<br />

in tar to protect them. The most<br />

common breeds of Turkey in<br />

the UK are the standard white,<br />

bronze and Norfolk black<br />

breeds.<br />

St. Mary’s church Worsted<br />

features in an old legend of the<br />

phantom White Lady who only<br />

appeared there when the clock<br />

struck midnight on Christmas<br />

Eve. In 1830, a drunken man<br />

swore that he would go there<br />

and ring the church bell at<br />

twelve, so that he could meet<br />

the Lady and give her a kiss. No<br />

bell sounded so those from the<br />

nearby King’s Arms inn went<br />

in search of him, only to find<br />

him a gibbering mess in the<br />

bell chamber. Back at the inn,<br />

he revived a little, only to start<br />

crying wildly “I’ve seen her!<br />

There! There!” Then he collapsed<br />

again and died.<br />

George V stated that<br />

Sandringham was the place he<br />

loved more than anywhere else<br />

in the world and it became the<br />

setting for the first Christmas<br />

broadcast in 1932. In 1957,<br />

Elizabeth II broadcast the first<br />

televised Christmas message<br />

from Sandringham.<br />

Eggnog became the drink for<br />

Christmas with poor families<br />

substituting expensive rum for<br />

sherry. But how did it come by<br />

its weird “nog” name? No one<br />

knows for sure, but historians<br />

decided that “nog” was in fact<br />

short for “noggin,” which was<br />

slang for a wooden cup, or a<br />

play on the Norfolk variety of<br />

beer also called nog.<br />

Christmas Eve 1994 saw Roys<br />

Chairman Fred Roy pass away at<br />

the age of 74.<br />

The Heritage Triangle in Diss is known<br />

that the floor tile wear rating (PEI rating) is suitable for your intended<br />

9. MAINTENANCE – GET THE RIGHT ADVICE - If you are purchasing natural stone tiles (i.e. travertine,<br />

marble, slate), make sure you get the right advice for sealing and treating the tiles before and after fixing.<br />

Langleys Conservatories and Windows...<br />

Langleys was formed by the owner Simon<br />

Langley in 1987 and in its early days Simon not<br />

only designed and installed conservatories and<br />

replacement windows, he also used his skills as<br />

a qualified carpenter to design and build house<br />

extensions and fitted kitchens.<br />

In the late 80s and early 90s<br />

conservatories really took off<br />

forming the major part of the<br />

business and this is where the<br />

name originated. Even so Simon<br />

After a very exciting year of shows<br />

at Theatre Royal Bury St Edmunds,<br />

it’s finally time to raise the curtains<br />

on our annual pantomime, which this<br />

year is Sleeping Beauty.<br />

The final stone has been placed on Burytonia Castle,<br />

the flags have been raised and Fairy Fortune has<br />

worked her magic to give the historic auditorium a<br />

little extra sparkle, ready for opening night on Fri<br />

30 Nov.<br />

As a new-born baby, Princess<br />

Aurora was cursed by the evil<br />

Fairy Carabosse. On the day of<br />

her 16th birthday, Aurora will<br />

prick her finger on a spinning<br />

wheel and die. Will Nanny<br />

Fanny, King Edmund and<br />

Grub the kitchen boy be able<br />

to protect the un-suspecting<br />

princess? Will Fairy Fortune find<br />

a way to defeat her sister, the wicked Carabosse,<br />

and what part does the dashing Prince Florin have<br />

to play?<br />

Join us in the medieval kingdom of Burytonia for<br />

magic, mayhem and more. You’ll meet mythical<br />

beasts and even take a journey beneath the earth.<br />

Most importantly, you’ll discover if love really can<br />

conquer all. Another fabulous in-house production<br />

by Theatre Royal Bury St Edmunds, written by<br />

Chris Hannon, directed by Karen Simpson and with<br />

choreography by Julia Cave who is also featuring as<br />

the assistant director.<br />

You will need to act fast if you want to catch a seat<br />

in the weeks leading up to Christmas, the best<br />

availability is for performances in January. If you’re<br />

feeling like you need an extra sprinkling of Fairy<br />

Fortune’s magic, treat yourself to some tickets to our<br />

Gala Performance on Sun Dec 9 from 1pm.<br />

As well as a seat for the show, you’ll get to enjoy live<br />

music, a visit from Father Christmas, drinks and light<br />

nibbles before the show, ice creams and<br />

even goodie bags for the children. Plus,<br />

everyone is encouraged to join in the fun<br />

with a fancy dress competition before the<br />

show then starts at 2pm.<br />

Sleeping Beauty runs from Fri 30 Nov<br />

’18 right through to Sun 13 Jan ’19. There<br />

is a BSL interpreted performance Wed<br />

12 Dec at 2pm, there will be a Relaxed<br />

Performance Fri 11 Jan at 1.30pm and<br />

there are also touch tours available upon request.<br />

New World Service is a five piece<br />

covers band based in Suffolk.<br />

After forming in 2008, with a few<br />

changes to the line up over the years,<br />

the five members, Gavin Harmer,<br />

Darren Bland, John Wilson, James<br />

Irvine and Josh Woolnough, love<br />

performing all over Suffolk.<br />

The group cover a wide range of<br />

songs from different genres, including<br />

pop, rock and punk, this ranges from<br />

the 60s to the present day.<br />

They like nothing more than<br />

performing a lively and rocking set to<br />

their local fans, in pubs and clubs, and<br />

are available for private bookings and<br />

weddings.<br />

IT’S CHRISTMAS!...<br />

As you can see, me and my gang are<br />

ready for some festive action!<br />

Every year we throw on our Christmas Jumpers<br />

ready to pounce on some baubles. Uff!<br />

It ain’t all fun and games mind you… Christmas<br />

can be stressful for us pets. The change in<br />

routine, visitors, kids, loud music and decorations<br />

can worry us you know! Planning ahead can<br />

help minimise stress for pets and ensure they<br />

have a happy home at Christmas, too.<br />

Here are my top tips for helping all your furry<br />

friends have a stress-free Christmas:<br />

• Try to keep food, exercise, bed and toilet<br />

routines the same, consistency can help us feel<br />

more secure.<br />

retreat to in case they feel unsure. Try on top of<br />

wardrobes or under furniture – even cardboard<br />

boxes can make good hiding places.<br />

• Although Christmas is a busy time and<br />

there’s a lot to do and people to see, be careful<br />

about leaving us alone for any period which<br />

might cause us distress. I get extra sulky!<br />

• If you’re spending Christmas day with friends<br />

or family and your dog is coming with you, take<br />

something which smells familiar, like their bed,<br />

to help them feel secure. Take some of their<br />

favourite toys and chews to help keep them<br />

entertained.<br />

experiences. I like my ball left.<br />
