Hallo!<br />

I am very happy to announce that this issue<br />

is the First Year Anniversary!<br />

Over the last 12 months, I've had the good fortune<br />

to meet and interview some very inspiring people in<br />

the local community and share their stories. We've seen<br />

good friends and loved ones<br />

pass on and we've met new people as the community<br />

spirit slowly grows in Valencia.<br />

The name changed as the volunteer group, <strong>Community</strong> <strong>Spirit</strong><br />

Valencia, started to organise events and initiatives. The<br />

magazine is now been read by 15,000 people on average per<br />

issue, which is incredible! All of this is only possible because of<br />

your support and for that, I am truly grateful. I trust the next 12<br />

months will be even better!<br />

PUBLIC BUS SERVICES IN VALENCIA<br />

Taking buses around Valencia will offer you the opportunity to get<br />

around the city whilst seeing the sights as you travel. It is important to<br />

remember that when you are taking the bus you will need to be<br />

reasonably independent - you will not necessarily know when you need<br />

to get off the bus so it can be more intimidating than catching the metro.<br />

If you decide to travel by bus, it is worth considering buying combined<br />

tickets that will allow you to take the bus as well as the tram and the<br />

metro (see below for more details). The options include the Valencia<br />

tourist card or the Integrated Transport Ticket.<br />

Valencia's underground system is one of the quickest and easiest<br />

ways to get around the city. It is a comfortable way to travel in the<br />

summer as there is air conditioning in the carriages.<br />

TUIN TRAVEL CITY CARD<br />

What is TuiN card?<br />

The TuiN card is a smart, single travel card for travel throughout the Metrovalencia network with additional<br />

advantages.<br />

How to charge it?<br />

It can be charged onto any contactless travel card (TSC) valid for the Metrovalencia network. In the future, it may<br />

also be charged on an NFC telephone and external sales networks.<br />

If you already own a TSC, you can charge it when the current balance runs out. Otherwise, you may purchase it<br />

pre-charged at the price set by FGV.<br />

Where to purchase it?<br />

Nowadays, you can charge it at Metrovalencia Customer Service Centres (CAC) and Customer Service Kiosks,<br />

where we will register your information to ensure you receive all of the advantages and help you resolve any<br />

possible incidences. You can also recharge your card at any ticket vending machine within the Metrovalencia<br />

network.<br />

As of April 2015, you can charge cards directly at ticket vending machines, although we still recommend you<br />

register at our customer service centres or online to receive all of the advantages that we offer (balance<br />

reimbursement in case of loss or theft, recharging your card online, etc.).<br />

Can I charge a new ticket if I still have journeys left from another ticket?<br />

No. You must use your journeys before, then you can charge a new ticket.<br />

What does it cost?<br />

You can acquire the ticket by charging a minimum balance of 10 € on your card, and additional multiples of 1 € (you<br />

may not charge cents).<br />

When you want to recharge your card balance, the minimum amount is also 10 € (and additional multiples of 1 €).<br />

How much does each journey cost?<br />

Once your card is charged, the price of each journey with the TuiN card is the same as a Bonometro:<br />

This is a project for those who would like to be involved in a<br />

movement on a global scale and hopefully make a small step<br />

to address some of the world issues going on right now. For<br />

example, displacement of peoples, refugees and immigrants<br />

that are seeking survival away from their native lands for one<br />

reason or another (there are no shortages of reasons).<br />

Every day we read, hear or watch causes in need of help through volunteer programs from one source or another. We know<br />

the NGO’s and Charities are struggling financially and logistically to provide all that is needed. In a small way, we can do our<br />

part and the rewards for your efforts will come.<br />

By recycling something that is considered harmful to the planet right now, therefore, addressing a global pollution problem<br />

and turning it into a useful object that can then be used to address another global problem in the form of shelter for those who<br />

have lost their homes.<br />

Plastic, as we all know, is all around us in abundance and it is disposed of in unthinkable quantities choking our oceans and<br />

polluting our drinking water sources. There has been much research by like-minded people in the process of remodeling plastic<br />

rubbish into useful objects and it is not as complicated as we may think, with a group of dedicated people and with their<br />

diverse talents and expertise, between us we can do this at surprisingly low cost if any.<br />

Plastic blocks (similar to breeze blocks that snap together) can be used to create anything from emergency housing for<br />

humanitarian situations to useful items for the house and garden. So, this project is twofold, on the one hand there is the global<br />

humanitarian issue and on the other hand there is a local opportunity for those that would like to set their creativeness free<br />

and attend workshops to create wonderful household and craft items that can be used personally or sold in bazaars, boot<br />

sales, and many other outlets to generate income for the community as a whole on a local basis, this has the potential to supply<br />

transport, housing and other serviceable things to address emergencies within the group.<br />

Valencia: the new Spanish El Dorado<br />

Until recently rather discreet, the third<br />

largest city of Spain is coming out of the<br />

shadows and is now becoming one of the<br />

main tourist destinations. At the same<br />

time, it attracts more and more<br />

candidates for expatriation.<br />

Valencia has everything great:<br />

A few years ago, it could be said that she<br />

was a little misunderstood. Today this<br />

beauty gets her revenge and is now being<br />

favored instead of her big sisters, Madrid<br />

and Barcelona...<br />

you can visit. As you walk through the city, you can admire various<br />

architecture in classical, Arabic, modernist, baroque or futuristic<br />

style. A bright urban landscape that makes Valencia an attractive<br />

and cosmopolitan city.<br />

Valencia offers a harmonious coexistence of an impressive past<br />

and a bold present. It is a mixture of multicoloured facades, plush<br />

buildings, gargoyles, and neoclassical, flamboyant Gothic or<br />

futuristic buildings... The maze of alleys that meander through the<br />

old quarter of El Carmen is a journey into the medieval past of this<br />

city. You can still see the remains of the 4 kilometer wall that<br />

surrounded the city (Puerta del Mar, Torre de Serranos, Torre<br />

Quart).<br />

A big city but human-sized?<br />

A real metropolis with 800,000 inhabitants<br />

yet keeping a side "of a city in a province",<br />

makes Valencia attractive because it is<br />

people-friendly. You can get around on<br />

foot without getting caught in a traffic<br />

jam. There are also as many museums as<br />

there are contemporary art galleries that<br />

La Dolce Vita guaranteed…<br />

What does Valencia offer aside from its more than 300 days of<br />

so beautiful and practical, the character of "Valencianos" (they are<br />

open and friendly), and above all, their philosophy on life. Yes,<br />

because better than anywhere else, you feel like you're dealing<br />

with real experts in knowing how to live! It seems that they have

the magic recipe of the perfect balance<br />

family and professional. All this in joy and<br />

good humour, and especially without<br />

A city that attracts expats<br />

This magic seduces many tourists. Some<br />

have become "expats" since they simply<br />

fell in love with this city and have become<br />

residents. The number of expats is<br />

constantly growing. They already<br />

represent 16% of the total population... It<br />

must be said that Madrid and Barcelona,<br />

once seductresses, have now become<br />

expensive and less pleasant cities<br />

(pollution, traffic jams, etc.).<br />

Valencia, the spoiled child<br />

Valencia, a spoiled child, laid out on the<br />

edge of the Mediterranean. Its coastline, 7<br />

kilometers of fine sand, faces the<br />

beautiful islands of the Balearic<br />

archipelago (Ibiza, Menorca, Majorca,<br />

Formentera, Cabrera). Its port, one of the<br />

most important in Spain, is notably<br />

famous for hosting the America's Cup in<br />

2007 and 2010. Around the quays and<br />

close to the beach, cafes, restaurants and<br />

hotels flourish to welcome the flood of<br />

visitors. The metamorphosis of this area<br />

continues with new developments<br />

including the establishment of a large<br />

Business School (EDEM) and Start-ups, to<br />

provide the new standard of<br />

competitiveness.<br />

While the media coverage of the América's Cup and the<br />

organization of the Formula 1 European Grand Prix in 2008 have<br />

kicked off a spectacular tourism boom, it is the incredible city of<br />

Arts and Sciences that has transformed Valencia from a quiet city<br />

into a city of the 21st Century. This set of five ultra-modern<br />

buildings became the new emblem of the city. It replaced the<br />

famous Miguelete, the orthogonal belfry in the historic centre,<br />

which was the main symbol of Valencia.<br />

A green river bed that transverses the city<br />

Valencia is not only an open-air museum with its modern and<br />

futuristic monuments, its palaces, bridges and old doors that make<br />

the admiration of passersby. Valencia would not be what it is today<br />

without its famous "green belt". The amazing Turia Gardens is<br />

unique in the world. Its name is that of a river which in 1957,<br />

following torrential rains, provoked large floods and the death of 81<br />

people.<br />

After this tragedy, the authorities decided to divert the course of<br />

this river and transform the nine kilometers that cross the city from<br />

east to west into a dry riverbed and use it for gardens and green<br />

public spaces. At any time of the day (or even night) you can find<br />

Valencianos and tourists alike at the park running, walking their<br />

dogs, rollerblading, cycling, playing football, having a picnic,<br />

strolling... or nothing at all!

The Fallas, Festivals of the Intangible Cultural<br />

Heritage of Humanity.<br />

And then, how to talk about Valencia without<br />

mentioning the famous Fallas? These incredible<br />

and spectacular festivals are now classified as<br />

Intangible Cultural Heritage of Humanity by<br />

UNESCO and attracts hundreds of thousands of<br />

visitors every year!<br />

For four days, from March 15 to 19 (Feast of St.<br />

Joseph, Patron Saint of Carpenters), the city is<br />

unrecognizable. She lives night and day to the<br />

rhythm of firecrackers, fireworks, parades,<br />

marching bands, dazzling streets of lights and<br />

other ceremonies. Monumental sculptures<br />

(called Fallas), depicting scenes of local or<br />

political life, often satirical, are erected all over<br />

the city.<br />

Prepared throughout the year, these works of art<br />

can reach 20 meters high and can cost more than<br />

100 000 euros! But on March 19 at midnight all of<br />

these popular sculptures are burned (the Crèma)<br />

except for El Ninot, a single character saved from<br />

the flames. It will make its way, as in every year, to<br />

the already very beautiful collection at the Fallero<br />

Museum.<br />

A 2-hour flight from Paris<br />

Valencia is only 1 300 kilometers from Paris (less<br />

than 2 hours by plane) with a number of direct<br />

flights from major European cities that increases<br />

each year... 3 mouse clicks are enough to book<br />

flights and lodging in order to discover (or rediscover?)<br />

this city has become a "must visit".<br />

Before arriving in the fine city<br />

Valencia four years ago, I had heard<br />

murmurings of the incredibly vibrant<br />

jazz scene that already existed. Now,<br />

those bygone mutterings have<br />

become resounding resonances of<br />

reality. A random mix of factors have<br />

made this phenomenon possible –<br />

barrio 'fallas' bands, Berklee School<br />

of Music and the fantastic nurturing<br />

of young talent through organisations<br />

such as Seda Jazz. Valencia is<br />

indeed on the world jazz map and I<br />

have explored that map with eager<br />

enthusiasm and real passion. Here<br />

are a few tips for venues that you<br />

should try and check out if you are a<br />

live jazz music fan.

Tucked away in a backstreet in El Carmen, Jimmy's is really<br />

renowned as the king of Jazz clubs in VLC. Dark and narrow, with<br />

that same ingredient and distinct flavour of the best Jazz clubs in<br />

London or New York. The owner, Chevi Martinez maintains a<br />

hushed reverential atmosphere, with attention to detail; photo<br />

memorabilia of all the great international jazz artists who have<br />

graced it's stage over the years, a mixing desk area with<br />

thousands of vinyls and CD's. Moreover, on Fridays and<br />

Saturdays there is no entrance fee for their 'jazz and tapas'<br />

evenings, just a small supplement on drinks to help cover the<br />

worthy fee of some of the best artists in Spain and further afield.<br />

This gem of jazz joint, is well worth a visit.<br />

Although it lacks that retrospective nod to<br />

the smokey jazz clubs of the past, there is<br />

a clean and orderly feel with a seemingly<br />

large space and comfortable seating which<br />

looks out onto the stage. You have to book<br />

online to secure your seats but many of the<br />

jazz events are free and if you want to<br />

catch the likes of the great Chano<br />

Domingues or Wynton Marsallis, a 20/30<br />

euro ticket is not going to break the bank.<br />

On entry, you can enjoy a drink at the<br />

comfortable bar, before being ushered into<br />

the main salon for the concert. Like<br />

Jimmy's, there are bar staff on hand to<br />

bring food and drink to your table.<br />

The finest Sunday evening jazz jam session!<br />

There is a superb line up for the core Jazz band with the well known Spanish<br />

trombonist Toni Belenguer and the fine French jazz guitarist, Bertran Kientz, along<br />

with very accomplished stalwarts on double bass and drums. This vintage feel bar<br />

has an open and welcoming space - splayed with arm chairs, sofas and carpeted to<br />

create a comfortable 1970's vibe. The 3 or 4 euro cover charge is well worth paying<br />

to see hear some truly top class playing. As is it is technically a jam session, seasoned<br />

amateurs up to professionals musicians could take along their instruments and join<br />

these cats. The likes of the young star, alto sax player, Victor Jiminez and one of the<br />

best trumpet players around, the internationally renowned, Voro Garcia also<br />

occasionally just happen to drop by for a jam.<br />

back on the scene again with a whirlwind return.<br />

Sala Matisse has transformed itself from a hum<br />

drum, 'once in a blue moon' concert venue to a<br />

happening live music 'local' that attracts some<br />

serious jazzers and is open most nights of the<br />

week. Technically speaking, this is more of a jazz<br />

venue than a strictly jazz club but they have their<br />

fair share of jazz evenings in their capacious 'sala'.<br />

The likes of Albert Sanz, Perico Sambeat regularly<br />

play here. With a decent sized stage and plenty of<br />

space to get yourself to the bar for a reasonably<br />

priced bevvie or two, Sala Matisse is high up on the<br />

fun time, jazz time list.<br />

This place is a real treat and has a special place in my heart as I go<br />

there almost every Sunday - either to the early afternoon or early<br />

evening live music sessions. It is an enormous warehouse venue<br />

packed with a mish mash of odd shaped furniture, plants, a food<br />

truck selling quality veggie and meat dishes and a large bar with<br />

efficient, attentive bar staff. There is no pretentiousness and you<br />

can just roll in from the beach in your shorts and sandals if you so<br />

desire. Although it attracts some quality jazz music groups from<br />

swing to blues and funk to Dixie, you need to check out the listings<br />

on their website as the musical styles, like the place are quite<br />

eclectic. If you want to really listen to the music, be sure to arrive<br />

30 minutes before the concert begins (they always start on time!)<br />

and grab one of the rickety tables closer to the stage. Many people<br />

go there to chat and the acoustics are not the best, so you will need<br />

to be nearer the stage area to appreciate the sounds.<br />

Above are just a few of the places that I have regularly been to.<br />

However, there are many other jazz venues scattered around<br />

Valencia from La Vitti, to Gestalguinas to the Berklee Lago Concerts<br />

to Radio City and the Black Note; not to mention the festivals and<br />

open air concerts that just seem to constantly crop up. Valencia is<br />

indeed a veritable jazz lovers paradise!<br />

BACK TO BASICS<br />

Preserving has been around for hundreds of years. It is the art of storing food<br />

from one season to eat in another. Many years ago, when everyone grew<br />

their own produce, preserving was an intrinsic part of life. It was a way of<br />

ensuring your family survived the cold season when the garden was not<br />

producing as much.<br />

There are many ways to preserve food, drying, salting, smoking and canning<br />

or jarring to name but a few. I remember as a youngster, my grandmother<br />

making jams, pickles and chutneys to store for later use. Going out and picking<br />

blackberries from the hedgerows was a family affair, with a picnic to keep us<br />

going and to stop us from munching all the fruit as we picked them. Those<br />

berries would then be preserved with sugar to make jam, jelly, butter and fruit<br />

cheese.<br />

There was nothing quite like home made jam spread thickly on buttered toast<br />

for breakfast in the winter, when fruits were scarce. It also ensured the health<br />

and wellbeing of family as this was a way of getting essential vitamins all year<br />

round.<br />

Q&A<br />

Why is canning your homegrown food important?<br />

For us here, it is all about knowing what we are eating<br />

and where it has come from. Storing our produce takes<br />

up a good 6 months of our year. Different trees produce<br />

fruit at different times. The trees produce an abundance<br />

that is impossible to eat without a lot of it spoiling. This<br />

led to making jams and marmalades to be able to store<br />

the excess. The problem is there are only so many jars of<br />

jam that can be eaten in a year, so I had to look for<br />

other ways to store them. Hence the canning or jarring<br />

as we call it in the UK.<br />

What other ways can you use to store your fruit<br />

harvest?<br />

All fruits are acidic on the PH scale and for this reason,<br />

they can be stored in sealed jars. The acidity stops the<br />

foods from spoiling. Fruits can be stored in just water<br />

but I like to store my fruits in a very light syrup. For me,<br />

it seems to enhance the flavour of the fruit.<br />

I will pick the fruits just as they are ripening. Overripe<br />

fruit will just turn to a mush during the processing to seal<br />

the jars, so using the fruit when it is firmer enables you<br />

to store it to eat as it is. The riper fruit I will process but<br />

this will be used for pies, crumbles or cakes.<br />

Tomatoes are a fruit but some are more acidic than<br />

others. So while cooking my tomatoes I add a little citric<br />

acid or lemon juice just to make sure the PH is low<br />

enough to stop the tomatoes spoiling. We plant at least<br />

200 tomato plants each year and from these plants, I<br />

can store about 100 jars of tomato sauce to cook with<br />

throughout the winter.<br />

Can you give us a little more information about how<br />

to can fruits?<br />

Canning fruit is the easiest method for long-term<br />

storage. The process uses just plain old water to seal the<br />

jars. You don't need any specialist equipment, just a<br />

large saucepan that is deep enough to fully submerge<br />

the jars to be processed.<br />

This method is called water bath canning. Normally with<br />

my fruit, I could pack it. That just means it is packed in<br />

the jar cold. I will get my pan of water boiling and use it<br />

to sterilise the jars to be packed. I will make my syrup<br />

with water and sugar and get that boiling too. I pack<br />

the slices of fruit, or whole fruits into the sterilised jar as<br />

tightly as I can, without squashing it and then cover<br />

with the boiling syrup. The jars have a 1 inch, 2cm gap<br />

left at the top of the jar, called headspace to ensure the<br />

contents do not boil out.<br />

I wipe the rims of the jars and screw on the lids. The jars<br />

then go into the big pan with boiling water to cover the<br />

jars. Once the water is boiling again the timer is put on<br />

for 20 minutes and a lid placed on the pan. When the<br />

timer goes off the jars are removed from the water and<br />

left to cool. The lids will make a popping sound as they<br />

seal.<br />

What jars do you use?<br />

I have a range of jars that have<br />

been gifted to me or that people<br />

save for me. Mostly I reuse the<br />

shop jars with what I call clicky<br />

lids. In America this is breaking<br />

all the written laws of canning<br />

but to me as long as those lids<br />

seal it is OK. If the button on the<br />

lid does not pull in then the jars<br />

go in the fridge and are used first.<br />

As soon as that jar is used the lid<br />

will then go in the bin. There are<br />

places on the internet where I<br />

buy new lids if needed.<br />

Can you give us a recipe for canning tomatoes?<br />

I don't really have recipes as such written down. I like<br />

to add whatever herbs I want on the day, but the one<br />

I use most has thyme in it as we can pick it wild here.<br />

I would use 3kg of tomatoes cut into quarters, 2 cloves<br />

of garlic, 2 tablespoons of olive oil and a heaped<br />

teaspoon of thyme. Put into a large pan and cook until<br />

the tomatoes are soft. Some people remove the skins<br />

before cooking but that is personal preference. You<br />

have to keep stirring as the tomatoes cook otherwise<br />

they may catch on the bottom of the pan.<br />

Then process in a water bath for 20 mins.<br />

These tomatoes are used to replace the tinned ones I<br />

used to buy. I use them in soups and stews. I also use<br />

it to go on pizzas or in my Chinese style rib sauce to<br />

name but a few.<br />

Where do you keep all of your canned produce?<br />

When I first started to can, the jars went into any<br />

spare space in the kitchen. That was fine until you<br />

start canning to feed the family for a year. Luckily we<br />

had a water deposit that we have changed into a<br />

store room. It is built into the ground and so has a<br />

constant cool temperature. Kev has built shelves along<br />

one wall for all my jars. This year we have about 300<br />

full jars and the shelves are full so another set will be<br />

built for next canning season.<br />

always so much more appealing at 4 am so I opted instead to snooze than watching my breath for 2 hours each morning.<br />

I also on several occasions stole bananas from the canteen and secretly scoffed my snacks in the evening as fruit did not<br />

satisfy my tea time hunger. Writing was also prohibited but I maintained a diary to record my up and down and sometimes<br />

mental thoughts; channeling my Ann Frank saved me and my pen became my best friend.<br />

The meditating was intense and I often thought my left thigh may implode from excruciating pain and yet over time, I found<br />

myself with the ability to maintain my position for longer periods. I would have sessions of insane mind activity, unable to<br />

focus because it was jumping from one ridiculous thought to another, playing silly songs on repeat in my head or blasting<br />

forgotten memories into my consciousness. Other times, an hour would fly by and I found I could concentrate and focus so<br />

intently that I think I was actually enjoying myself.
