Did you know that November 14 is National Pickle Day? Celebrate this funky holiday with these<br />

four fun facts! 1) The art of pickling cucumbers dates back to 2000 B.C. in India. 2) Pickles get<br />

their name from the Dutch word pekel, which means to brine, the process of soaking food in salt<br />

water. 3) Dill pickles are the most popular pickle. 4) It is thought that the playwright, Shakespeare,<br />

coined the phrase, "in a pickle,” meaning that someone is in a difficult situation. The phrase<br />

appeared in the 1619 play, The Tempest.<br />

Celebrate Mickey Mouse's Birthday!<br />

November 18, 1928 is considered to be the official birthday of Mickey Mouse, the cartoon<br />

character created by Walt Disney. Mickey first appeared in the short film "Steamboat Willy” in<br />

1928 and has been entertaining fans around the world ever since. This year, Mickey will be 90<br />

years old! Celebrate his birthday by hosting your own Mickey Mouse birthday party and, of course,<br />

wearing your own pair of Mickey ears!<br />

Recipe: Pumpkin Spice Pretzels<br />

Ingredients: 1 can pretzel dough, 4 oz cream cheese (softened), 2 Tbsp butter (softened), 1⁄2 tsp<br />

vanilla, 1 cup powdered sugar, 2 Tbsp pumpkin pie spice<br />

Instructions: Remove the dough from the package and separate it into 12 pieces. Roll each<br />

piece into a long cylinder, about 1 inch in diameter. Shape each cylinder into the shape of a<br />

pretzel. Place the pretzels on a baking sheet lined with parchment paper. Sprinkle 1 Tbsp of the<br />

pumpkin pie spice over the top of the pretzels. Follow the package instructions for baking. Melt the<br />

butter in a small bowl. Stir in the vanilla. Mix the powdered sugar and the remaining pumpkin pie<br />

spice in a quart–sized plastic bag. When the pretzels have cooled, dip them in the butter mixture<br />

to coat. Transfer 5 or 6 pretzels at a time to the plastic bag and shake vigorously to coat them with<br />

the pumpkin pie spice mixture. Repeat until you have used all the ingredients.<br />

TIPS FOR BUILDING AN ECO-FRIENDLY FALL WARDROBE<br />

Make your fall wardrobe more eco-friendly this season by following the tips below! The best part is you<br />

don’t have to sacrifice style or versatility!<br />

Is your closet full of garments that are out-of-style or no longer fit? Take them to a good tailor who can<br />

“upcycle” them into garments that fit like a glove and feature new designs.<br />

Instead of purchasing the very latest trends every season, opt for garments with<br />

classic lines and cuts that you can wear for several years before they go out of style.<br />

Purchase garments that are made to last, ethically sourced, and manufactured<br />

using non-toxic chemicals and materials. Do your research to find out which<br />

clothing labels and retailers are the most eco-friendly. For example, certain fabrics<br />

can be made out of recycled material and dyed with non-toxic dyes. Also, seek<br />

manufacturers who pay their workers a fair wage. While eco-friendly garments<br />

tend to be pricier than their more hazardous counterparts, the<br />

long-term savings and other advantages of purchasing these<br />

items are important to consider. Avoid purchasing “dry clean<br />

only” garments, because the chemicals used to clean them<br />

are harmful to humans and to the environment. If you already own “dry<br />

clean only” garments, take them to a cleaner that specializes in non-toxic<br />

methods such as liquid carbon dioxide cleaning.<br />

Organize a clothing swap with your friends. Bring the items you no longer<br />

wear and walk away with “new-to-you” items! Donate the rest to a local<br />

thrift store.<br />

RECIPE: BRAISED CHUCK<br />

ROAST WITH WINE MARINADE<br />

Ingredients:<br />

1 lb boneless beef chuck roast<br />

1 tsp salt<br />

1 tsp pepper<br />

1 Tbsp olive oil<br />

4 onions, thinly sliced<br />

7 carrots, chopped<br />

7 yellow potatoes, chopped<br />

Instructions:<br />

Cover the entire chuck roast with<br />

the salt and pepper. Heat the oil in a<br />

large skillet and brown all sides of<br />

the chuck roast. Then transfer the<br />

roast to a plate. Add the carrots,<br />

potatoes, and onions to the skillet<br />

and saute for 10 minutes. Add the<br />

garlic, tomato paste, rosemary,<br />

wine, and water, and bring to a boil.<br />

Transfer all ingredients to a baking<br />

dish, including the chuck roast,<br />

cover, and braise in the oven at 325<br />

F / 160 C for 3 hours, turning the<br />
