EVENTS CALENDAR
In the Western Folklife Center Wiegand Gallery: Passed from
person to person and generation to generation, traditional
skills such as quiltmaking, embroidery, needlepoint and
cross stitching have brought a legacy of handcrafted
functional and decorative works into our daily lives. Today’s
artists have access to sophisticated tools and global textiles
that have significantly changed the cultural landscape.
Stitching Art showcases the quilts and collections of six fabric
artists who have taken great joy in honing stitching skills
to create work that beautifully reflects personal interests,
aesthetics, moods, and milestones. Exhibition supported by
the Nevada Arts Council, a state and local agency; and the
National Endowment for the Arts, a federal agency.
JODI
Schultz
NORTHEASTERN NEVADA FEATURED ARTISTS
jschulz@ecsdnv.net
Jodi Schultz is an extraordinarily talented artist, who is energetically experimenting
and developing her artwork using many diverse and specialized mediums. Jodi is a
devoted educator and she has focused a large amount of her life’s work and energy on
students, lesson plans, and creating interesting examples of art projects. She’s designed
and created some really impressive bulletin boards too. (All you teachers will understand!)
Jodi has often traveled to Elko from her home in West Wendover to teach community
art classes at the Elko County Art Club, participate in exhibits, show work during
community art events, and is recognized as one of the most outstanding and
creative artists in Northeastern Nevada.
Jodi was born in Billings, Montana in 1965. She received
her Bachelor of Arts degree in art education from Virginia
Wesleyan College in 1989. Jodi continued her studies with
focus on Figurative Painting, earning her Master of Fine
Arts degree from the Academy of Art University in San
Francisco, and since, has been exhibiting
her artwork in venues including the
John Steinbeck Museum, San
Francisco’s Arc Gallery, Virginia
Wesleyan College, Koehnline
Museum, Brick City Center for
the Arts, and Savannah College
of Art and Design. Locally, she
has been exhibiting in the Taber
Building Art Gallery, Elko County
Art Club 775-735-8170, 407 Railroad
St, Elko, Nevada.
Jodi believes the arts continue to grow
and thrive in our society when parents,
schools, and community join to create
opportunities for all ages to experience
working with their hands, mixing color,
and enjoying the self esteem we all feel
after creating a new art project.
Stuffing Biscuits
Ingredients:
• 3 c. mashed potatoes - possibly leftovers!
• 3 slices bacon, cooked and crumbled
• 2/3 c. shredded cheddar cheese
• 2 tbsp. thinly sliced chives
• 1/2 tsp. garlic powder
• Kosher salt
• Freshly ground black pepper
• 2 egg, beaten
• 1 1/3 pt. panko bread crumbs
Preparation:
In a large bowl, combine mashed potatoes with cooked bacon, cheddar, chives, and garlic
powder, and season with salt and pepper. Stir until all ingredients are incorporated.
Place eggs and panko in separate shallow bowls. Use a small cookie scoop to scoop 1” to
2” balls of mashed potato mixture. Roll into a ball in your hands, then dredge first in egg
and then in panko. Repeat until all mashed potatoes are used.
Heat 3” of oil in a large cast iron skillet until candy thermometer reads 375°. Fry potato
balls in batches until golden on all sides, 2 to 3 minutes. Drain on a paper towel lined
plate and season immediately with more salt.
Ingredients:
• 2 medium stalks celery,
cut up
• 1 medium carrot, cut up
• 1 medium onion, cut up
• 1 tbsp. fresh thyme leaves
• 5 large leaves sage, torn
• 1 tbsp. extra-virgin olive oil
• 2 1/2 c. all-purpose flour
• 1 tbsp. sugar
• 1 tbsp. baking powder
• 1/2 tsp. baking soda
• 4 tbsp. butter, cut up
and cold
• 1 1/4 c. buttermilk
• 1 1/2 lb. ground turkey
(93% lean)
• 1/2 c. mayonnaise
• 1/4 c. cranberry preserves
or sauce
Preparation:
In food processor, pulse celery, carrot, onion, thyme, and sage until finely chopped. In
12" skillet, heat oil on medium. Add vegetable mixture and 1/4 teaspoon each salt and
pepper; cook 15 minutes or until tender, stirring occasionally. Transfer to medium bowl;
cook completely. Preheat oven to 450 degrees F. Spray two 12-cup muffin pans with
nonstick cooking spray. Line large rimmed baking sheet with parchment. In clean food
processor bowl, pulse flour, sugar, baking powder, baking soda, and 3/4 teaspoon salt until
blended. Add butter. Pulse until coarse crumbs form. Transfer mixture to large bowl. Stir in
buttermilk, then one-third of cooked vegetable mixture until just blended. Divide among
cups of prepared muffin pans (about 3 tablespoons each). Bake 15 minutes or until golden
brown. Transfer biscuits from pans to wire racks; let cool slightly.
Meanwhile, in medium bowl, combine turkey, remaining cooked vegetable mixture, and
1/4 teaspoon salt until just combined. Form into 24 patties (2" wide); place on prepared
baking sheet. Bake 15 minutes or until cooked through (165 degrees F). When biscuits are
cool enough to handle, slice in half. Add turkey patties and dollops of mayo and cranberry
preserves.
Green Bean Casserole
with Onion Rings
Photo & recipe courtesy of www.delish.com
Ingredients:
FOR THE BREAD PUDDING:
• Cooking spray
• 3/4 c. pure pumpkin puree
• 2 large eggs
• 1 c. milk
• 1/2 c. heavy cream
• 1/2 c. packed dark brown sugar
• 4 tbsp. unsalted butter, melted
• 1 tsp. ground cinnamon
• 1/2 tsp. pure vanilla extract
• 1/2 tsp. kosher salt
• 1/4 tsp. ground ginger
• 1/4 tsp. ground nutmeg
• 7 c. day-old brioche, cut into
1-inch cubes
• 1/2 c. pecan halves, roughly chopped
FOR THE BOURBON SAUCE:
• 1 c. granulated sugar
• 1/2 c. heavy cream
• 1 tbsp. bourbon
Preparation:
Preheat oven to 350°F with the rack in the middle position. Grease an 8-by-8-inch baking
dish. Make bread pudding: Whisk together pumpkin, eggs, milk, cream, sugar, butter,
cinnamon, vanilla, salt, ginger, and nutmeg in a bowl until smooth. Fold in bread and
pecans. Let stand 30 minutes. Transfer to prepared baking dish and bake until set, 30 to
35 minutes.
Make bourbon sauce: Combine sugar and 1/4 cup water in a medium saucepan. Bring
to a boil over medium-high heat and cook, without stirring, until sugar mixture is dark
amber in color, 12 to 15 minutes. Remove from heat and carefully add cream and
bourbon, stirring until smooth and creamy.
Serve pudding with sauce alongside.
Ingredients:
FOR THE GREEN BEANS:
• 1 1/2 lb. green beans, halved
• kosher salt
• 7 tbsp. butter, divided
• 1 medium yellow onion,
sliced into rings
• 8 oz. button mushrooms,
trimmed and sliced
• Freshly ground black pepper
• 5 tbsp. all-purpose flour
• 3 c. whole milk
FOR THE ONION RINGS:
• 1/2 c. cornstarch
• kosher salt
• 1/2 tsp. baking powder
• 1/4 tsp. baking soda
• 1/4 tsp. cayenne pepper
• 1 c. all-purpose flour, divided
• 3/4 c. club soda, chilled
• 1 medium onion, sliced into
1/2"-thick rings
• Vegetable oil for frying
Preparation:
Make Green Beans: Preheat oven to 350°. Cook green beans in a large pot of boiling salted
water until bright green, 6 to 8 minutes, transfer to an ice bath to cool, then drain.
Meanwhile, in a large pot over medium-high heat, melt 2 tablespoons butter. Add onions and
salt and cook, stirring often, until tender, about 5 minutes, then add mushrooms and salt and
pepper and cook, stirring often, until brown and tender, 5 minutes more. Transfer onions and
mushrooms to a large bowl, add green beans, and toss to combine.
Melt remaining 5 tablespoons butter in same large pot, then add flour and cook, stirring
constantly, until golden brown, about 2 minutes. Gradually whisk in milk and bring to a simmer,
then cook until slightly thickened, about 4 minutes; season with salt. Pour sauce over green
beans and mushrooms and toss to combine, then transfer to a 3-quart baking dish and cover
with foil. Bake until warmed through and bubbling around the edges, about 20 minutes.
Make Onion Rings: Meanwhile, whisk cornstarch, salt, baking powder, baking soda, cayenne,
and ½ cup flour in a large bowl, then add club soda and whisk until smooth. Place remaining
½ cup flour in a separate bowl, add onions, and toss to coat.
Fit a large heavy-bottomed pot with a deep-fry thermometer and heat oil to 350°. Working in
batches, dip onion rings into batter and carefully lower into oil, being careful not to overcrowd
the pot. Fry, turning occasionally, until golden brown, 2 to 3 minutes. Transfer to a wire rack set
on a baking sheet and season with salt, then repeat with remaining onions. Top warm green
bean casserole with onion rings just before serving.

Ingredients:
• 7 cups ¾ inch cubes Cornbread
• 7 cups ¾ inch cubes crustless firm white
sandwich bread
• ½ cup (1 stick) butter, divided
• 6 ounces diced pancetta
• 1 large onion, chopped
• 1 large crisp apple, peeled
and chopped
• 1 cup pecan pieces
• ¼ cup chopped fresh parsley
• 4 teaspoons chopped fresh thyme
• 4 teaspoons dried rubbed sage
• 1 teaspoon coarse kosher salt
• 1 teaspoon freshly ground black pepper
• 4 large eggs, beaten
• 2 cups low-salt chicken broth
Preparation:
Cut and lay bread cubes out the day before to dry. (Or dry them out in the oven for 5
minutes before starting.) Preheat oven to 350 degrees F. Put the bread cubes in a large
bowl. Melt 4 Tb. butter in large skillet over medium heat. Add the pancetta and sauté until
brown. Then add the onions and cook to soften—2-3 minutes. Add the apples and soften
another 3-5 minutes. Finally add the herbs and pecans. Toss and remove from heat.
Add 1 teaspoon coarse salt, and 1 teaspoon pepper; stir to blend. Add vegetable mixture
to bread and toss. Whisk the eggs and broth together and pour over the bread mixture.
Toss and let it stand 5 minutes. Generously butter twelve nonstick muffin cups. Spoon ½
cup of stuffing mixture into each muffin cup. Press to compact. Mound another ½ cup of
remaining stuffing mixture over stuffing in each muffin cup, pressing to hold shape. Bake
muffins until golden, about 22-25 minutes. Cool in pan 15 minutes. Using small knife,
loosen muffins and pop out of pan.
*Can be made 1 day ahead. Rewarm uncovered in microwave in 30-second intervals, or
covered loosely with foil in 350°F oven, about 15 minutes. Loosen from muffin pan with a
butter knife.
Ingredients:
• 3 pounds russet potatoes
• water
• 7 tablespoons butter
• 3/4 cup sour cream
• 1/4 cup milk
• 1/2 teaspoon garlic powder
• 3/4 teaspoon salt
• 1 cup shredded cheddar cheese
TOPPING:
• 1/4 cup panko
• 1 tablespoon butter
• 2 tablespoons chopped chives
• 5 strips bacon cooked
• 1/2 cup shredded cheddar cheese
Preparation:
Peel and chop the potatoes. Add to a large pot. Cover with water and heat over high heat,
boil the potatoes in the water about 20 minutes or until softened. Preheat the oven to
350 degrees.
Drain the potatoes and add to a large mixing bowl. Add the butter, sour cream, milk, garlic
powder, and salt. Mix with a potato masher or for creamier potatoes use a hand or stand
mixer. Add the shredded cheddar cheese and stir to combine. Spray a 2 quart baking dish
with cooking spray. Spoon the potato mixture into the dish. Smooth the top with the back
of a spoon.
In a small saucepan add the tablespoon of butter and the panko bread crumbs. Cook
over medium heat until just toasted. Sprinkle on top of the potatoes. Top with shredded
cheese and bake uncovered for about 15 minutes until the cheese is melted.
Top with bacon and chives. Serve warm and enjoy!
Apple Pie Salsa with
Cinnamon-Sugar Tortilla Chips
Photo & recipe courtesy of www.frostingandasmile.com
Ingredients:
FOR THE CAKE:
• 1-3/4 cups all purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 1 stick (1/2 cup) unsalted butter, melted
• 3/4 cup sugar
• 2 large eggs
• 1 cup very ripe mashed bananas (2-3)
• 2 tablespoons fresh lemon juice
• 1-1/2 teaspoons vanilla extract
FOR THE TOFFEE SAUCE:
• 1-1/4 cups heavy whipping cream
• 1/2 cup dark brown sugar
• 1/2 cup light corn syrup
• 4 tablespoons unsalted butter
• Pinch salt
FOR SERVING:
• Sliced perfectly ripe bananas
• Chopped pecans
Preparation:
Preheat the oven to 350°F. Butter and flour an 8x8-inch baking dish. In a medium bowl,
whisk together the flour, baking soda, baking powder and salt. In the bowl of an electric
mixer, mix the melted butter and sugar until blended. Add the eggs, mashed bananas,
lemon juice and vanilla extract and mix well. On low speed, stir in the flour mixture until
just incorporated. Do not over mix. Pour the batter into the prepared pan and bake until
golden, and a tester inserted into the center comes out clean, about 35 minutes.
Meanwhile, make the sauce. Bring the heavy cream, brown sugar, corn syrup, butter, and
salt to a boil in a heavy small saucepan over high heat, whisking until the sugar dissolves.
Reduce the heat to medium-low and cook at a gentle boil, whisking occasionally, until
the sauce is slightly thickened, about 15 minutes. It should be the consistency of maple
syrup -- it will continue to thicken as it cools. Remove the sauce from the heat and cool.
Spoon 1/3 cup of the toffee sauce over top of the baked banana cake. Return the cake to
the oven and bake until the sauce is bubbling vigorously, about 6 minutes. Cool the cake
in the pan on a rack for at least 30 minutes. Cut the cake into 9 squares or 12 rectangles.
Serve the cake slightly warm or at room temperature with warm toffee sauce and top with
sliced bananas and pecans, if desired.
Ingredients:
FOR THE SALSA:
• 4 medium Granny Smith apples, diced
• 2 teaspoons lemon juice
• 1 cup light brown sugar
• 2 tablespoons butter
• 1 teaspoon cinnamon
• 1/4 teaspoon nutmeg
• 1 tablespoon cornstarch
• 2 teaspoons vanilla
• 1/2 cup whipped cream (optional)
FOR THE CINNAMON SUGAR CHIPS:
• 1/4 cup sugar
• 1 tablespoon cinnamon
• 5 flour tortillas
• 2 tablespoons melted butter
Preparation:
For the Salsa: In large sauté pan, combine apples, lemon juice, brown sugar, butter,
cinnamon, and nutmeg. Cook over medium heat for 20 minutes, stirring occasionally. Stir
in cornstarch. Cook for two minutes, stirring occasionally. Remove from heat. Stir in vanilla.
Serve warm. Top with whipped cream just before serving.
For the Cinnamon Sugar Chips: Preheat oven to 350 degrees. In small bowl, combine
sugar and cinnamon. Brush both sides of each tortilla with melted butter. Rub cinnamonsugar
mixture onto both sides of each tortilla. Cut tortillas into wedges. Place on
ungreased baking sheet. Bake for 14-16 minutes until brown and crisp. Cool on wire rack.
Notes: Salsa is best served warm. Salsa can be stored tightly covered in refrigerator for up to
two days then reheated in microwave. Chips do not need to be refrigerated.

SMALL BUSINESS
Jeff Dalling
Coffee Mug Family Restaurant
If it hasn’t been made evident
by now, we love people here
at AAT! We love hearing about
their stories and passions for
our community, but we also
love hearing about what our
fellow locals do and why they
do it! For example, we have
some wonderful neighbors
who own/manager some
fantastic local businesses and serve our town
tremendously by doing so! This fact is why
AAT has partnered up with our good friends
at B3 Glass, to bring you all “Small Business
Fridays!” Each week, we’ll feature a different,
local small business and talk with its owner
and hear about their journey, their business
in general, as well as their heart for their
customers and our city!
Today, we’re joined by Jeff Dalling. You can
normally find Jeff managing his Commercial
St. restaurant, Coffee Mug, which his
grandparents started here in Elko back on
January 1st of 1987. Jeff has also recently
opened a new events venue just down the road
from the Coffee Mug; this space is a perfect
location for a reception or meeting hall. Jeff
himself plans to hold his upcoming birthday
party in the building! Furthermore, this week
it was used as an interview room as AAT sat
down with Jeff to talk about his work and his
love for downtown Elko. However, before we
get into any other topics, let’s take a moment
to get to know a little bit about Jeff, himself.
“I was brought to Elko when I was a year old
after my parents got a divorce; I was born in
Silicon Valley. I lived with my grandparents out
in Pleasant Valley before moving away when
I was five and bounced around for a while. I
used to spend Summers here, and Elko had
always had a warm spot in
my heart; I had a lot of good
memories growing up. After
high school, I went to attend
the University of Nevada
Reno to get my bachelor’s
degree in history and
political science, and when
I was doing that, because
I couldn’t afford college,
I joined the Nevada Air Guard for twelve
years. Joining up with them was probably
one of the better decisions I’ve made; I met
lifetime friends there and just had a good
time. However, the best decision I ever made
was learning how to fly! I spent six months in
Uzbekistan; it wasn’t a great place, but after I
got back I started taking flight lessons. Flight
lessons opened a whole new world for me. I
flew everywhere; those were the good days!”
“I was flying, working in Reno, and everything
was great. And then, in November of 2009, I
flew back here to Elko to help my grandparents
close down the Coffee Mug after some of their
other associates let the restaurant get into a
lot of financial trouble as they were going to
take it over from them, but my grandparents’
names were still on all of the guarantors on
the licenses and with the vendors. We closed
it down for five days, but the staff talked us
into re-opening it. Again, I was only supposed
to help for a bit and then fly back to Reno and
get back to work, but my grandma asked,
after seeing how good of a job I did managing
everything, if I would take it over. It took a while
for me to finally make my decision because it
was such a big move, and I did have family
here who could have done it. However, I said
yes, and I moved back in December of 2009.
From there, we just hit
26
- Everyone has a story. Whats yours? -
the ground running and… shoot; it’s been nine
years, now! We just celebrated five years at our
current location, back in August.”
Thanks for sharing some of your story with us,
Jeff. Now, your businesses currently reside at the
downtown corridor, but that was not always the
case. The Coffee Mug, for example, as moved
locations a couple of times in its existence. When
I (Anthony Crosby) moved to Elko in 2011, the
restaurant’s home was over in the Elko Junction
Shopping Center. After some unfortunate chain
of events, you had to move out of that building
and set up shop downtown. How as that whole
transition worked out for you overall? Do you
enjoy operating out of the city’s center? “The
move has been great, for downtown Elko and
us. I’ll be honest, when I first moved here, it
(downtown) was sketchy, and the block we’re
currently on was the worst because everything
was boarded up. It was rough; I was afraid to
come downtown and not be off the freeway.
However, I feel as if we get more people off
the freeway now because when people come
into town, they go to Google and look at our
customer’s amazing reviews. Therefore, we get
people who want the coziness of a local mom
and pop joint. And in a perfect world, because
the Mug is bringing in five hundred to seven
hundred fifty people down to our area a day, I
would like to see these people stay downtown
and visit some of the other businesses down
here like the museum, the antique store, have
a coffee at Cowboy Joes or a beer at The Stray
Dog etc. People are just downtown, shopping,
having a good time because that synergy is
there! It would be nice because sometimes I
feel like my customers come into the Mug and
then go on their way, which was not what I was
expecting. But that’s where something like my
event venue comes into play, something to help
bring a little more of that synergy to downtown.
Toki Ona has been a local favorite
since 1990 when the restaurant
first opened. Our restaurant and
bar is known for serving fresh,
never frozen, beef, lamb, pork,
chicken and seafood entrees in
both Basque and American style
dishes. We pride ourselves with
serving large portions, making sure
you leave full and happy. All beef
is IBP Choice or Certified Black
Angus Choice. Toki Ona has a
full service bar where you can sit
Open 7 days a week 6:00am-9:30pm
You can have a wedding reception there
and then walk down to Machi’s or The Star
when the official party is over! That’s what I’m
hoping for our downtown area.”
As a Downtown Business Association board
member and someone on the Elko planning
commission, I shouldn’t have been too
surprised when Jeff insisted that we turn
the interview into a walk and talk as he was
excited to take me around downtown and
further share with me his heart for the area.
Our entire conversation would be a little much
to fit into this one article, but you can believe
the passion from Jeff was there. We made
our way over to the Chilton Centennial Tower
and the “Train Park” and continued to chat as
laborers were already hard at work improving
the area. “I’m pretty proud of downtown,”
Jeff explained. ” We’re not all the way there,
but at the end of the day, we are trying to
do something nice. It will get there. I believe
most big cities would give their right arm to
have our downtown corridor! I would like to
see a little amphitheater, for live music and
maybe something like Shakespeare in the
park, and a splash pad out here! That’s MY
vision to see this whole thing be very family
friendly, but you have to compromise with
everyone else; you can’t just have my vision.
I feel like we’re on the right track now; a lot
of us are on the same the same page to get
things done.”
“I’m fully committed to downtown; I believe
in it. I’m committed to making this place go!
More than just being involved with the board
and the committees, I try to really put my
money where my mouth is as I do have a big
investment with the Coffee Mug. It is a lot of
work, but I really do enjoy it, and I want to see
this place succeed.”
SHAWN CAVANESS
Kindergarten Teacher
of 28 years
Everyone has a story, even
our teachers! Therefore,
today, we’re going to be
sitting down with someone
who has been shaping the
young minds of the Spring
Creek area’s kindergartners
for quite a while. This
got me (Anthony Crosby)
thinking back to my time in
kindergarten. Unfortunately,
I don’t recall much. I don’t
remember my teacher, and I
may vaguely remember some
of my classmates. All that
honestly comes to mind is doing “woodshop”
which consisted of me hammering large nails
into flat pieces of wood; my mom was not
very thrilled whenever I would bring these
dangerous projects home. Even though I
may not remember the exact details of my
kindergarten teacher’s time with me, I am
thankful for her. Now that I get to write read
and write every day to make AAT happen, I’m
appreciative of the fact that some of these
skills were most likely formed and developed
in her classroom. Thank you, teachers, for
indeed making a difference in the world!
As previously mentioned, we’re sitting down
with our very own superstar of education! Her
name is Shawn Cavaness, and she, up until her
retirement this past year, has been teaching
kindergarten at Spring Creek Elementary for
the last twenty-eight years! That’s quite an
accomplishment! Currently, Shawn is working
part-time as a literacy specialist at Grammar
Elementary and still enjoys helping some of
the newer teachers at Spring Creek Elementary
with learning programs that have worked so
well for her over the years. Shawn, thank you
so much for investing so much into hundreds of
lives over the course of almost three decades!
From where did this passion for teaching the
young people of Spring Creek originate? “I’m
from Minnesota, a suburb right above St.
Paul. After high school, I went to a community
college and had no idea what I wanted to
do. I got a job at a daycare
working with four-year-olds,
and I absolutely loved it. I
just loved the pre-school
age and decided that’s what
I wanted to do. I went off to
the university and got my
degree. I did my student
teaching in fourth grade
before going off to Australia
to do my kindergarten
student teaching; I had
a professor who had an
exchange program, so I
spent six weeks there doing
that and a couple just visiting. However,
when I came back home, I missed the main
timeframe to get a job in Minnesota, so I sent
out my resume and… Elko called me! I had
never been to Elko before, but I packed my
car up and just drove out here. I was in shock
when I got here because there weren’t any of
the trees and lakes I grew up with! I was only
going to stay here for a couple of years to gain
my experience and go back to Minnesota.
Well…I didn’t go back. I met my husband,
had my two kids, and fell in love with this small
town. I started out working in Carlin before
going to Mountain View Elementary and then
spent the rest of my time in Spring Creek.
Retiring after being at that school for twentyeight
years is really hard; I miss the kids and
collaborating with all of the teachers.”
Well, I’m sure many Spring Creek parents are
thankful for you, Shawn! What would you say
was your favorite thing about showing up to
your classroom, time and time again over so
many years? “I think the biggest thing was just
been being able to watch the kids grow. When
they come in as kindergartners, they’re not
necessarily reading; they may not know their
letters and sounds. However, at the end of
the year, they know all of that! That’s what I’ve
enjoyed seeing the most. I just loved seeing
them grow” Do you ever run into any of your
former students around town? “Yeah! I may not
always remember their names at first; it may
30 www.EverythingElko.com | November 2018
- Everyone has a story. Whats yours? -
take me a couple of hours, but normally I do
remember! Some of them I’ve kept in contact
with. This last year, in my class, I had the son of
a mother who I actually taught during my first
year as a teacher at Spring Creek Elementary; I
started my career with her and ended with her
boy. That was a neat thing.”
Teachers are some of the biggest unsung
heroes in our society today. What they do
every day is essential, but it’s not always easy.
What was the most challenging aspect of your
teaching career, Shawn? “Things are a lot
different now compared to when I first started.
I had a lot more freedom when it came to what
I could teach. I would still be teaching the same
things, but now there’s all the standards and
different things that come down from the State;
that’s the hardest. You try to get all of that in,
while also being a caretaker, a disciplinarian,
you have to be all of those things, and more,
packed into one.” Keeping those words in
mind, what’s the biggest thing you would
encourage parents to do when it comes to
helping their children’s kindergarten teacher
succeed in his/her job? “You can tell which
kids have been read to since day one. It’s really
important that parents do this with their kids.
Read and work with them every day; it only
takes about ten minutes. We (teachers) want to
do it all, but parents are a great influence on
their kids.”
Great! Thanks for the insight coming from many
years of experience! Is there anything else
you’d like to share with your community as we
close out this conversation with you, Shawn? “I
loved teaching kids; I think about them as my
kids. I’m going to miss the hugs. I always think
and wonder where my students are and what
they’re up to…I just care about them. I hope
that I have touched and made a difference in
some of their lives throughout the years.”
THE INTELLIGENCE OF
Corvids
Contributed by
Lois Ports for
Bristlecone Audubon
CORVIDAE is a family of birds
that include the crows, ravens, jays,
nutcrackers and magpies. Corvids are
considered the most intelligent birds
that have been studied to date and their
intelligence surpasses most mammals.
THEY RECOGNIZE THEMSELVES
IN A MIRROR. Different colored spots
were placed on birds in a study. These
spots were only visible in the mirror.
When the birds with the colored stickers
saw themselves in the mirror, they
attempted to remove the sticker.
THEY CAN RECOGNIZE PEOPLE’S
FACES. Expert John Marzluff and his
fellow researchers at the University of
Washington set up a study to see if crows
could remember human faces. They
wore caveman masks while they went
to catch and mark the crows. Each time
they came back wearing these masks,
the crows would mob the researchers
and attack them. If they returned with
a different mask, or without a mask at
all, they were left alone. The researchers
continue to test the birds and they still
haven’t forgotten - even after a decade.
THEY ARE PROBLEM SOLVERS. In
one study, a crow was given a task to
complete that involved eight individual
steps that had to be solved in a specific
order to release the food reward. The
bird had to collect the tools, then use
them to complete the next step of
the puzzle. He was familiar with the
individual tools, but had not had to
combine their use before. The crow
completed the task. Crows are known to
drop nuts with hard shells into the street
and will wait for cars to come crack the
shell before swooping down to retrieve
the contents.
SEED SORTERS HAVE HUGE
HIPPOCAMPI. The hippocampus
is the part of the brain that controls
memory. Clark’s nutcrackers have a large
hippocampal complex relative to both
body and total brain size. They have
better spatial memory and do better
with tests involving food caching and
retrieval. If you can’t remember where
you put your food, you won’t be able to
eat.
THEY CAN ‘TALK’. Corvids are very
vocal birds, using squawks and knocks
to communicate with one another
and to outsiders. Birds such as ravens
can imitate noises such as computer
notifications and water droplets. But they
can also imitate human speech. There
are ravens at the Tower of London that
will squawk “keep the path” to tourists.
They can also mimic the sounds of pets
like cats and dogs, and predators such as
owls.
www.EverythingElko.com | November 2018
CORVIDS
THEY USE TOOLS. In one study done by researchers from the
University Oxford, they placed food inside of a bucket at the bottom of
a long tube, making it inaccessible to the hungry crow in the study. The
crow first tried using a wire to reach the bucket. When that didn’t work
it bent the wire into a hook and use this to retrieve the bucket. Some
types of crow use sticks as a means of digging food out of small holes
in fallen branches.
THEY ARE FAMILY ORIENTED. Many species of birds never see
their young once they leave the nest. However, crows in America
allow their offspring to stick around for years. Often the parents will
have more young before their firstborns leave the nest. The older
offspring help raise the youngest birds in the nest. They do everything
from feeding their mother and the babies to protecting the nest from
predators. They will also offer protection for their family members who
are out looking for food. These sort of “family values” and loyalty are
seldom seen in birds.
Kauai
Active Vacation or Relaxing Vacation?
Kauai may be the right choice for you.
While the other islands tend to be a
little more active and busier, Kauai likes
to keep things pretty mellow, letting
its natural beauty speak for itself. So if
outdoor activity, especially hiking is on
your vacation to do list, then this island
just may be the right choice for you.
1. Waimea Canyon, also known as the
“Grand Canyon of the Pacific” is a hiker’s
paradise. This glorious gulch contains
3,000-foot tall cliffs with lush green foliage
amidst red pops of color, sprinkled with
waterfalls. Millions of years ago, volcanic
activity as well as the Waimea River, helped
carve out this mini canyon. Erosion and
rainfall are among the factors that continue
to chisel away at this mountainous beauty.
But hey, maybe hiking isn’t for you. If that’s
Each Hawaiian island has its own unique vibe,
the case, there are many companies
that offer helicopter tours and they are
not to be missed. A highlight of any
Kauai vacation is a helicopter tour of
the Waimea Canyon.
2. The Na Pali Coast-The Nā Pali Coast
State Park is a 6,175 acres’ Hawaiian
state park located in the center of the
rugged 16 miles along the northwest
side of Kaua'i, the oldest inhabited
Hawaiian island. The na pali along the
shoreline rise as much as 4,000 feet
above the Pacific Ocean and is best
seen by helicopter or by boat. There
are also many hiking trails available
here as well, including the most
famous of them all, the Kalalau trail.
The Kalalau Trail is an 11-mile trail
that leads from Ke’e Beach to Kalalau
Beach along the Na Pali Coast and it
is well worth the effort, if you are up to
it. This hike isn’t for the faint of heart.
Make sure you do your research and
your training before you head out.
3. Poipu Beach Park-Head to the South Shore of
Kauai and you will see why the “Travel Channel”
once named Poipu Beach America’s best beach.
This is one of the most popular and safest beaches
on the island, which makes it popular with locals and
visitors alike. Plus, you have a good chance to see
marine life here as well. The Humpback whales can
be seen offshore between December-May. Hawaiian
sea turtles swim these waters as well. But the beach is
most famous for the endangered Monk Seal that lives
here. Snorkeling is very good here as well, and you
may even catch a glimpse of the Hawaiian state fish,
the humuhumunukunukuapuaa(no, I’m not kidding.
That’s its real name and it’s a real fish). With a wading
pool for toddlers and young swimmers, it’s no wonder
this beach is so popular.
Table Tips
Thanksgiving Table Colors
Natural harvest and classy: Blue, white
and orange look FABULOUS together!
You might want to try this gorgeous
color combo on your table this year.
Use Burlap
Burlap is the perfect texture for Thanksgiving!
Use it as a runner, or make easy no-sew
placemats and napkin rings. Burlap looks
incredible with leaves and pumpkins and all
things Thanksgiving! Use burlap liberally!!!!
Add a Little Bling
Even the most rustic tables can benefit from
a little sparkle and glitz! But use the sparkle
sparingly! A little goes a long long way! Find
fun places to tuck a little glam into your
tablescape! Try glitzy acorns on the ledge of
a candlestick along with some oak leaves.
I love that rustic/luxe look!
Make a Simple Natural Centerpiece
You don’t need lots of formal flowers … just
lots of natural elements. Pinecones, acorns,
pumpkins, feathers, deer shelds and moss
look great cascading down the table or all
caught up together in a bowl or pedestal.
Keep it natural, simple and inexpensive!
SENIOR
Wellness
We love our senior pets, so much in fact,
that we set aside a month every year to
make sure that they get the high-quality
care they deserve! This month we are
celebrating our seniors in November,
so we want to give you information to
consider some health aspects that your
senior may be experiencing and needing
some veterinary guidance in getting
through them.
You may wonder as your faithful
companion ages, that at what age
are they truly considered seniors or
geriatrics. For smaller dogs and cats, that
age is 7, whereas our larger canine friends
age faster and are considered seniors at
6 years old. So what kind of health care
changes can we expect to implement into
our pet’s regimen as they age? The first
change we need to implement is more
frequent vet checkups. Our younger
guys are recommended annual visits,
whereas we want to see our seniors at
least twice a year, more frequently if they
have health issues.
When your pet comes in for these visits,
what problems are we examining for?
The full physical examination that your
veterinarian performs is the palpation of
your pet for lumps, hair loss, tenderness,
changes in abdominal character, dental
disease, eye health, and joint mobility.
Questions that your pet’s vet tech or
veterinarian will ask you help them
identify underlying issues that may just
be presenting, or ones that have become
a true health concern. Your veterinarian
will begin to start running annual or
semi-annual bloodwork at these visits, to
establish normal parameters of internal
organ function and to start monitoring
for changes that would indicate disease
process’ like kidney/urinary tract disease,
liver disease, diabetes, and thyroid
disease. They may further recommend
ultrasounds, ECG, radiographs or
echocardiograms if there is any indication
on the physical exam or bloodwork that
indicates heart disease, cancer, and joint
or bone disease.
As our pet ages, we are not only
increasing their veterinary care, but we
are also modifying their diet and nutrition
at each visit to make sure we are staying
on top of weight control and ensuring
they are getting the appropriate caloric
intake with correct nutrients. During
their exam, we document any changes
in their mobility, their mental health and
status, and changes in behavior. Mental
health is just as important to our older
pet’s quality of life as their mobility and
appetite, so we do not want to ignore
these changes as “getting older”. Getting
lost in the house, circling in the yard, and
vocalizing with no cause are just a few
changes to remember to mention to your
veterinary team at your pet’s next visit.
For more information » on signs
to watch for in the aging pet,
or for questions you may now
have, contact the health care
team at Elko Veterinary Clinic.
Make sure your senior pet is ready to keep up for all the ADVENTURES you’ll have together!
Why Spinal
Problems
Often Return
Can’t shake your back pain?
Chiropractic
Even regular chiropractic users often pooh-pooh the idea
of periodic chiropractic checkups after symptoms subside
with the classic, “If it’s not broke, don’t fix it” line.
This justification often results in a relapse into the original symptoms returning
with a high probability of those symptoms worsening and new symptoms
developing for countless patients.
How come?
Because deeper rooted
structural problems, if left alone
or not corrected back to a normal
or near normal position, continue
to abnormally load vital tissues like
nerves and muscles they don’t have
the opportunity to heal like a cut,
infection or some other self-resolving
health condition.
Addressing Long
Lasting Problems
By the time spinal problems produce obvious
symptoms, the problem has been there for some
time—the science says even a decade or more.
Yet often people feel like the symptom didn’t
emerge until “last week, when I bent down to
pick up the paper.”
Opening doors to a better life, one home at a time
Basic chiropractic care may produce
symptomatic improvement in a matter of
months, sometimes weeks. The patient
is often delighted, but they have left
the problem untouched. That’s why the
original symptoms are likely to return. It’s
hard to know when, but it’s almost always
after some major physical, chemical or
emotional stress. This can leave a patient
confused and wondering if chiropractic care has to be forever. Thankfully, science
has proven that deeper rooted structural problems can be changed back to a
normal or at least near normal position finally taking pressure off all these vital
areas and often providing the so desired long term relief that people search for.
It takes a bit of time, and effort but that’s why people seek out care in our office.
To find a deeper rooted problem and have an option to fix it to a near normal as
possible position. True maintenance care can then be implemented because the
problem was addressed not just the symptom.
ruining your life, give us a call. We will provide the latest in scientific analysis
The Elko Regional Interfaith Christmas Crèche Exhibit committee invites
you to journey with them as they travel the road to Bethlehem at this year’s
14th Annual Exhibit. The theme for the exhibit is “The Road to Bethlehem”
with the focus being on the journey and likening the journey Mary and
Joseph took in their day, to our own journey towards Christ.
The exhibit will journey to Bethlehem by featuring Advent calendars — a step-by-step
countdown to the birth of Jesus Christ. Traditionally, Advent occurs the four weeks prior to
Christmas day. Advent is a season of preparation in anticipation and in celebration of the
coming of the Christ child.
The tradition of the calendar dates back to the mid-19th century when German Protestants
made chalk marks on doors or lit candles to count the days leading up to Christmas. The
first printed calendar is believed to be to have been produced by Gehard Lang in the early
1900s. His calendar was inspired by an advent calendar his mother had made for him as a
child, which was constructed of cardboard with 24 candies attached to it.
THE EXHIBIT
Along with the advent calendars, the exhibit is anticipating another stellar year of
participation from the community in sharing their nativities that make up the exhibit. The
exhibit averages upwards of 500 to 700 nativities each year in the form of figurines, quilts,
wall hangings, paintings, illustrations, and ornaments.
This year the organizers would like to see more participation from the children. Children’s
original art has been on display primarily from only a few church groups. The exhibit invites
and welcomes more participation from any church or children’s organization, as well as
individuals and families. Children are especially invited to create an advent calendar or
nativity scene with a countdown. The can be a drawing or a coloring page, made from
paper, fabric or felt, wood shapes (blocks, peg dolls, etc.), or whatever material they choose.
A live nativity re-enactment will also be presented. This short play is a good opportunity to
be reminded of what all of the nativities on display are really about. The re-enactment will
be repeated several times during the exhibit.
25TH ANNUAL MESSIAH SING-ALONG
The Messiah Sing-along is the climax of the exhibit each year, and this year the sing-along is
celebrating 25 years, with the last 14 years in conjunction with the Crèche Exhibit. The singalong
began in 1993 when the Elko Religious Leaders Association was looking for an event
which could bring together each of their congregations and the community to fellowship
one with another. The sing-along mixes soloists and the congregation joining together to
sing George Frideric Handel’s oratorio Messiah.
In the beginning, soloists were chosen by audition. The soloists are now chosen by invitation.
Current sing-along organizer Saralu Skidmore was first asked to be a soloist in 1997 by
original organizer, Kay Quist. “I was so honored to be a part of this event,” says Skidmore.
She has been part of the sing-along since that time— singing, organizing, or both.
Many talented soloists have performed over the past 24 years including, Bob Colbert, Ron
Skidmore, and Courtney Welch, who are still participating. Before moving from the Elko
area, Robin Ballew was a long-time soloist. She also helped to organize the sing-along for
many years. Gail Mierns, who is now assists Skidmore in organizing the sing-along, has also
performed as a soloist.
As important as the soloists are, accompanists also play a major role in the sing-along’s
success. This year the sing-along will have the pleasure of being accompanied with piano
and organ by Ann Louise Alger and Connie Muir. Both have accompanied the sing-along
over the years, along with Mike Polise. Polise played for several years prior to his move to
Florida. Highlighting the 20th Annual Messiah Sing-Along, Polise was joined by the Elko
Community Orchestra.
“I believe that having the Messiah sing-along at the end of the Crèche weekend is a
wonderful event to finish off the celebration of Christ's birth here in our community,” says
Skidmore. “Our goal is still the same—to bring together people of all faiths to sing together
the beautiful Messiah songs. It is wonderful to sing praises to our Lord. This music is inspired
and lifts your heart while singing.”
Skidmore add the invitation that they always hope for many people to attend either singing
or just listening.
MUSICAL PERFORMANCES
The Messiah Sing-along is not the only music to be found at the Crèche Exhibit. Throughout
the four-day event there will by performances by many community groups and individuals,
including: Spring Creek High Expectations Choir, Elko High School Choraliers, Elko High
School String Orchestra, Elko Handbells, Mountain View Elementary School Choir, Adobe
Middle School Choir, Music Mosaics String Quartet, and a Spanish Choir.
LIGHT THE COMMUNITY: GIVE AS HE GAVE
In the parable of the Good Samaritan, we learn that our neighbor is anyone in need, even a
stranger. (See St. Luke 10:25-37). In our personal journey to Christ, we can become more like
Him when we give as He gave.
The exhibit is collecting warm, winter items for the homeless in the area. This year the
exhibit is pleased to be partnering with Underdog Street Ministries in this effort. For more
than seven years, Underdog Street Ministries has served those who are experiencing
homelessness in the community. Their mission statement is to help the chronically homeless
in Elko with life-sustaining needs…whatever that may be.
During the winter months, life-sustaining needs include items to keep warm and protect
from the weather. Those attending the exhibit, as well as anyone who would like to help,
may bring donations to the exhibit. Suggested items that would be of most benefit are:
• Wool or Heavily Insulated gloves • Wool socks
• Hand warmers
• Insulated boots
• Sleeping bags (Winter-rated)
• Heavy and durable quilts
• Propane heater fuel
• Restaurant & Fast Food Gift Cards
(1 lb./16 oz green cylinder)
THE ROAD TO BETHLEHEM
“As God’s children, we are all unique and special, and so is our life’s journey. Both
temporally and spiritually, our life can be filled with hardships, happiness, difficulties, and joy.
This Christmas season, each day, may we all take a step closer to Jesus Christ in our journey,
by coming to know and understand the purpose of His birth. And as we focus on the Savior
of the World, we can receive true peace, that only He can give. Take the journey, travel
the road, and retrace the footsteps of Mary and Joseph as we countdown the days to the
Savior’s sacred birth.” – Sandy Ballard, Crèche Exhibit Director
THANKSGIVING
STORY
BRACELET
By Dr. Jean Feldman
With this bracelet you will know The first Thanksgiving that was
long, long ago. The Pilgrims set sail from far away on the Mayflower
with tall WHITE sails. They sailed many days across the ocean
BLUE. The seas were rough, but the ship came through. At last
they spotted land so GREEN. They were so happy they cheered
and screamed. The first year was so hard and BLACK. Many died
and wished that they could go back. But the Native American game
them a hand and helped them survive in the strange new land.
They decided to celebrate in a special way and that became the first
Thanksgiving day. They prepared a feast with turkeys BROWN, and
RED cranberries that they had found; YELLOW corn that they had
learned to grow, and ORANGE pumpkin pies, don't you know!
But before they ate the turkey and dressing, they all held
hands for a thankful blessing.
We made this easy “thankful tree” with a
branch found in our yard, some construction
paper, a glue gun, and a pot & rocks to hold
it all together.
We started by putting the branch in the
pot, poured rocks around it to steady it,
and then cut out some simple leaf shapes
from yellow, orange and brown construction
paper. Then together we made a list of
things we are thankful for. The list ranged
from sweet (the blue sky, princesses) to
touching (mom & dad, lots of love).
STATE FARM'S GOOD NEIGHBOR NOVEMBER 2018
LAMOILLE
Volunteer Fire Department
Most of us look forward to those long hot
summer days. After bitter cold winters, we can’t
wait to shed those cumbersome coats and be
able to enjoy the sunshine on our shoulders. The
sounds of hot dogs simmering on the grill, and
children laughing while they chase each other
with squirt guns becomes the soundtrack of our
days. As hot days drag on filled with sunshine and
warm breezes there are some in our community
who know all too well that this time of year can
be dangerous and devastating. Instead of a
fun campfire to roast marshmallows with and
sing songs around, they see an ignition switch
surrounded by dry fuel in the form of grasses and
trees. What starts as an innocent good time can
quickly turn into hundreds of thousands of acres
scorched, habitat lost for area wildlife, ranches,
livelihoods, and homes lost.
The men and women of the Lamoille Volunteer
the time away from their homes and families
to save someone else’s. The Department has 10
volunteers, with 15 of them being very active. Six
of these members are not only certified to fight
wild land fires but they are also certified to fight
structure fires with two members who have their
EMT medical certificates.
This year we have all seen the devastation that
a very hard fire season can cause. Many of us
were faced with wild land fires that were a little
too close to our homes, or ranchland for comfort.
Lamoille VFD was there for the Gance, Owl Creek,
and several other fires this summer including
the most recent Range 2 fire. The Range 2 fire
affected our area most recently, devastating
Lamoille Canyon Recreation areas. Through the
combined efforts with Nevada Division Forestry,
Elko County Fire and BLM, firefighters were able
to keep this fire from affecting homes and land
It takes an incredibly special person to volunteer their time to help
save and protect the property of others from a fire.
Fire Department do this bravely. They make
sure that they are ready to serve whether it be
a structure fire or wild land fire. They will take
in the Lamoille Valley. Through their air attacks,
dozers, and helitacks they were able to slow and
stop fire progression. The area they normally
86 www.EverythingElko.com | November 2018
cover is anything south of I-80 from Secret Pass to
10 mile/ Lucky Nugget, to Lamoille Summit.
In addition to being on the front lines of a firefight
the members of the Lamoille VFD spend a
considerable amount of time trying to make sure
that their services are not needed. According the
Jess Sustacha, the Fire Chief for Lamoille VFD, “The
last thing you want to do is lose someone’s home.”
That is why he and fellow members take the time
to educate the public about the importance of
preventative measures. They went door to door
explaining the importance of having enough
defensible space. A month later they drove around
and rechecked the homes and a large majority of
home owners in the area have cleared at least thirty
feet of defensible space around their homes and
out buildings.
The Lamoille VFD fights all of their fires with the
use of only a few vehicles. Their frontline structure
truck is a 1974 International, it is a structure and
wild land engine. They have a 1968 military 6x6
water tinder which carries 2,500 gallons of water
along with the two type six engines which can fight
wild land fires, and a command truck. One type six
that is equipped with full extrication gear and the
command truck were donated to the department
by Verdi Volunteer Fire Department. They are going
through some growing pains at the moment. Their
current building can only hold two of their fire
trucks and they rely on members with safe storage
places for the others. They simply do not have room
to house the important equipment they need at the
moment. This will hopefully be changing soon.
They have been given a gift of some acreage
to build a new station. This is currently going
through the legal process of being signed over
and permitted, but after that happens they will
be able to start fundraising to build their new
building. This is where we all need to step in! It
will be our turn at that point to give back and
make sure that these great men and women can
continue to do their jobs.
Maybe you are interested in the prospect
of joining the Lamoille VFD? Volunteer fire
fighters are greatly needed throughout our area
right now. If you have it in your heart to serve
your community in this way you need to fill out
an application through Elko County. You then
can select the department that you would like to
serve on. Maybe you are not physically capable
of fighting a fire or helping with a medical call.
That is ok! You can become an associate member
and help the department with fundraising and
events. We each have our own part to play when
it comes to making sure that our people and
property is safe.
WE KNOW THAT IT HAS BEEN A VERY
LONG AND TERRIBLE FIRE SEASON.
We appreciate all of the men and women in
all of our local fire departments. Please know
that the time you spend away from your
homes and families is greatly appreciated.
We all know that without you we may have
a lot more losses than we currently do. From
the bottom of our hearts we send our thanks.
If you have someone you would like to
nominate as a Good Neighbor please call
