Nichola O’Connell, food and beverage manager,<br />
ensures that her team is motivated and<br />
focused from breakfast service and delegate<br />
lunches through to dinner and drinks in the<br />
restaurant and bar, or a banquet service in the<br />
grand Brigante Suite.<br />
Managing a large food and beverage team that<br />
serves guests throughout multiple venues is an<br />
exciting challenge for Nichola. She explains:<br />
“I keep my team engaged by giving them<br />
individual projects to work on with their<br />
colleagues.<br />
"By giving my team the opportunity to take<br />
ownership of new initiatives and through<br />
providing them with guidance and support,<br />
we’re able to ensure that everyone is<br />

corporate meetings and conferences. Featuring<br />
12 air-conditioned, daylight meeting rooms,<br />
the hotel can accommodate a variety of events<br />
for up to 400 delegates.<br />
The Brigante Suite is the largest and was<br />
refurbished in 2016. It offers a private foyer and<br />
