Easy to Make<br />

Making yogurt involves adding a<br />

small amount of starter (yogurt) with<br />

active live cultures to milk and allowing<br />

time and heat to do their jobs.<br />

Heat aids fermentation, which is<br />

what gives yogurt its signature tangy<br />

flavor, thickness and aroma. Using a<br />

crockpot or Instant Pot makes the process<br />

almost effortless, and once you<br />

try it, you will think twice before buying<br />

yogurt at the store again — it’s that<br />

simple.<br />

ground flaxseeds, raisins, chopped<br />

or frozen fruit lightly sweetened<br />

and thickened with chia seeds.<br />

Greek Style<br />

If you prefer thicker, protein-rich<br />

yogurt, simply line a colander or<br />

sieve with cheesecloth, add the finished<br />

yogurt, and place over a bowl<br />

to strain. Store it in the refrigerator<br />

for two to four hours or until the desired<br />

thickness is reached.<br />

Easy Crockpot Yogurt<br />

Start this easy recipe at lunchtime<br />

and enjoy fresh yogurt<br />

for breakfast the next day. A<br />

small, instant-read thermometer<br />

is helpful.<br />

Ingredients:<br />

1/2 gallon of 2 percent or whole<br />

organic milk (yogurt will be<br />

thicker with whole milk)<br />

1/2 cup plain yogurt with “live and<br />

active cultures,” preferably<br />

organic<br />

Honey, maple syrup or sugar<br />

to sweeten, if desired<br />

Vanilla extract, optional<br />

Method:<br />

Pour milk into crockpot and turn on<br />

low. Heat until milk reaches 170-180<br />

degrees, about 2 1/2 hours. Turn off<br />

crockpot, unplug and allow milk to<br />

cool to 110-115 degrees — about<br />

2 1/2 to 3 hours. Stir in 1/2 cup of<br />

plain yogurt, whisk well. Cover the<br />

crockpot with blankets or towels and<br />

allow it to sit for at least 12 hours. If<br />

desired, add 1/4 to 1/2 cup maple<br />

syrup or honey to sweeten and 2<br />

tablespoons of vanilla extract. Place<br />

in a glass bowl or glass jars in the<br />

refrigerator and allow to cool for<br />

four to six hours. Yogurt will thicken<br />

Include Digital Assets In Your Estate Plan<br />

Not long ago, it was<br />

difficult to access someone else’s<br />

bank or financial accounts during<br />

their incapacity without, at a<br />

minimum, a written notarized<br />

durable power of attorney. Today, such authorization may require nothing more<br />

than an on-line internet password as more and more of the world becomes<br />

paperless. Incapacity is one thing, but if someone dies, assets managed by online<br />

internet digital access are increasingly at risk of being lost. The digital world<br />

has become a part of most all of our lives and management of digital assets<br />

needs to be included when preparing your last will, revocable trust or other estate<br />

planning. Imagine the following example of children of savvy computer parents<br />

who died without a will.<br />

When John and Susan’s mother and father died, it appeared they had only<br />

a modest estate which included a home, its contents and 2 cars. In searching<br />

through their parent’s home, they found no mail, receipts or any other evidence<br />

of bank accounts, insurance policies or investments. Because there was no will,<br />

they were required to hire a probate attorney in order to acquire title to the family<br />

home and 2 cars. Nine months later with probate concluded, John and Susan<br />

were given title to their parent’s assets.<br />

One year following the order of discharge of their probate proceeding, Susan<br />

found a computer flash drive in her mother’s jewelry box and contacted John.<br />

When they opened the information of the flash drive on a computer, they were<br />

overwhelmed. The flash drive contained passwords to banking and investment<br />

accounts, one of which was a crypto-currency account, Bitcoin. In 2012, John<br />

and Susan’s parents invested $2,500 in Bitcoin which today is valued at a few<br />

million. Although the passwords provided them with access to investment<br />

and bank balances, it was necessary to reopen the previously closed probate<br />

to amend the estate value. Had Susan not found the flash drive left by her<br />

parents, their assets may have ended up in the State of Florida’s unclaimed<br />

property.<br />

Other information found on the flash drive included a Family website,<br />

Facebook, Instagram, Twitter, and iTunes accounts. According to recent<br />

studies, the average person has roughly $25,000 or more worth of assets<br />

stored on digital devices. That value includes purchased movies, books,<br />

music and games as well as personal memories, communications, personal<br />

records, hobbies and career information. Of those surveyed by these<br />

studies, 55 percent said they store assets that would be impossible to recreate,<br />

re-download or repurchase.<br />

Today’s world is becoming increasingly more digital and paperless.<br />

Trying to organize and take the time necessary to develop an electronic<br />

digital map of all of our online assets can be exhaustive considering how<br />

many times we are routinely asked by the company custodians of those<br />

accounts to change or modify our user names and passwords for security<br />

purposes.<br />

Like a safe without a key, rather than just electronically placing digital<br />

assets on a flash drive, computer or on-line where no one may find them<br />

after you have died, discuss with your estate planning attorney how to<br />

include a plan to notify your beneficiaries of<br />

digital assets upon your death.<br />

Fresh Fruit Syrup<br />

With Chia Seeds & Honey<br />

Ingredients:<br />

1 1/2 cups of berries or other<br />

cut-up fruit, fresh or frozen<br />

3 tablespoons chia seeds<br />

1/2 cup water<br />

2-4 tablespoons of honey<br />

or maple syrup<br />

Method:<br />

Combine all ingredients in a<br />

saucepan and bring to a boil.<br />

Reduce heat to simmer 15-20<br />

minutes or until thick. The fruit<br />

will thicken as it cools and<br />

can be stored in a glass jar in<br />

the refrigerator for one to two<br />

weeks. Use for “fruit-on-the-bottom”<br />

with fresh yogurt or as a<br />

topping.<br />

Florida, Henri’s mission to brighten<br />

the lives of critically ill children and<br />

their families was born in 1986, after<br />

hearing of the death of a girl named<br />

Amy. Suffering from terminal leukemia,<br />

the 6-year-old’s wish to meet<br />

Mickey Mouse went unfulfilled when<br />

she died while arrangements were<br />

still being made to bring her family<br />

to Central Florida.<br />

“Though I never knew her, Amy’s<br />

death became the catalyst for building<br />

Give Kids The World and has<br />

affected everything in my life since,”<br />

Henri recalled in his 1996 autobiography,<br />

Gift of Life.<br />

Henri rallied area hospitality leaders,<br />

including fellow hoteliers, transportation<br />
