For more than four decades, NCLR has<br />

been at the forefront of the movement for<br />

LGBTQ equality. It was the first organization<br />

to launch projects advancing parent, youth,<br />

immigrant, and transgender rights, and—for<br />

the first time in 2017—NCLR sued a sitting<br />

president to stop Trump’s transgender<br />

military ban. And the fight continues.<br />

We are thrilled to be returning to the<br />

Desert again this spring and hope to<br />

have the biggest crowd yet. NCLR will be<br />

honoring two of our plaintiffs in Stockman<br />

v. Trump, one of our lawsuits to stop<br />

Trump’s transgender military ban. Kate<br />

will give an update from the frontlines of<br />

the resistance and describe NCLR’s ongoing<br />

fight to defend the LGBTQ community<br />

and protect the historic legal gains we<br />

have achieved together in recent years.<br />

From fighting for laws banning conversion<br />

therapy for LGBTQ minors to winning lifesaving<br />

asylum for LGBTQ people fleeing<br />

violence and persecution across the<br />

globe, Kate will share some of our most<br />

compelling, life-changing stories—we know<br />

ABOUT JFS OF THE DESERT<br />

For over 35 years, JFS of the Desert has provided<br />

services throughout the Coachella Valley to<br />

those in need, regardless of religion, age, income,<br />

ethnicity or life style. JFS services and<br />

Sabastian programs Skin are made Care possible through the financial<br />

support of Jewish Federation of the Desert,<br />

Desert Healthcare District, the Weingart Foundation,<br />

the Auen Foundation, Kaiser Permanente<br />

and other grants and the generous support of donors.<br />

Most of the nearly 3,000 men, women and<br />

children served are from low income households.<br />

They rely on JFS for low cost mental health<br />

counseling, crisis intervention and food support.<br />

JFS provides isolated, homebound seniors with<br />

care, transportation and enrichment activities. JFS<br />

also offers counseling in local elementary<br />

Perhaps most recognizable<br />

as the winner of Bravo’s Top<br />

Chef All-Stars, Richard Blais<br />

is a successful chef, restaurateur,<br />

cookbook author and<br />

television personality.<br />

So Good is the title of one of Richard’s books<br />

Fans know Richard Blais best as the<br />

winner of Bravo’s Top Chef All-Stars, the first<br />

competitor to be invited back as a permanent<br />

judge on Top Chef, and now as a Food<br />

Network regular as well. On television,<br />

Blais is famous for his daring cooking, making<br />

use of science (think liquid nitrogen) to<br />

dazzle and impress. He has even authored<br />

two books with elevated homestyle recipes<br />

and personal stories which invite you behind<br />

the scenes and into his own kitchen.<br />

Juli: Thank you for your time and interview,<br />

Richard. With the many responsibilities<br />

of being a famous TV personality, do<br />

you find time to cook at home?<br />

Richard: I do! I have two daughters, Riley<br />

and Embry, and love to cook with them<br />

at home. I think it’s important to make<br />

time and have fun in the kitchen with my<br />

family!<br />

J: Your skills are so diverse. Where did you<br />

get your education?<br />

R: I started my education working as the<br />

poissonier, also known as the fish cook, at<br />

a little fast food place known as McDonald’s.<br />

I eventually attended and graduated<br />

from the Culinary Institute of America in<br />

1998.<br />

J: Wow! What a great story. The humble<br />

beginnings of greatness! Where and what<br />

were you doing the day you decided to<br />

enter Top Chef?<br />

R: I was actually working in my restaurant<br />

in Atlanta when I got the phone call. I<br />

never actually applied to be on Top Chef -<br />

My restaurant happened to get reviewed<br />

that day, and the casting team in Atlanta<br />

saw the review in the local newspaper.<br />

Someone found me and I immediately<br />

accepted!<br />

J: Another fun story! You were just fated<br />

for fame! What was that like on the day<br />

you arrived and meet the other cast?<br />

J: Oh! That would be a challenge as well!<br />

What was your most proud moment on<br />

that show, and what was the dish?<br />

R: Definitely when I won! It was a multicourse<br />

menu - I don’t remember all of the<br />

specifics, but I remember doing a “Oysters<br />

and Pearls” dish that I definitely give some<br />

credit to.<br />

J: From that beginning you went on to<br />

so many successes, including the role as<br />

a recurring judge on the show. Which<br />

position serves you best?<br />

R: I definitely prefer judge to competitor -<br />

and prefer being a host most of all.<br />

J: What other shows are you involved in?<br />

R: I’m still very involved in the Top Chef<br />

series, as well as several shows on Food<br />

Network including Guy’s Grocery Games,<br />

Food Network Star, Chopped, and more.<br />

J: I find your company, Trail Blais very<br />

interesting. Can you tell us about it?<br />

R: It was initially built as a creative consulting<br />

firm to help build, design, open<br />

and operate restaurants in cities across<br />

the country.<br />

J: That’s a busy schedule! How do you<br />

juggle all of that with your personal and<br />

family time?<br />

chance to make it to too many restaurants,<br />

but taking any suggestions!<br />

J: That is a tough one. There are too<br />

many incredible venues and chefs in the<br />

Coachella Valley to mention them all. One<br />

of the hottest venues, and definitely one<br />

of my personal favorites is the new AC3<br />

Restaurant + Bar. at Hotel Paseo. It is a<br />

collaboration of two of the valley’s best<br />

restaurants, TRIO Restaurant and Copley’s<br />

On Palm Canyon. Juliana Copley, Andrew<br />

Copley & Tony <strong>March</strong>ese make the “Perfect<br />

Trio” to bring this hot new concept to<br />

El Paseo in Palm Desert.<br />

Award-winning Chef/Owner Andrew<br />

Copley and Executive Chef Brandon Testi<br />

have created a “New American” dining<br />

experience there, highlighting familiar<br />

dishes using local ingredients from The<br />

Gardens on El Paseo, located just steps<br />

away. Guests of AC3 also experience craft<br />

cocktails, California craft beers and a<br />

curated wine list.<br />

Thank you, Richard! We are so happy to<br />

have you visit us and share your talents. I<br />

R: Between us, I’m pretty anti-social. Let’s<br />

just say that arriving that day to share<br />

bunk beds with 20 other chefs was pretty<br />

intimidating.<br />

J: Yes, that would be a challenge, no matter<br />

how social one might be. Is there a top<br />

comical moment from that show that you<br />

can share?<br />

R: I shared a room with Fabio Viviani,<br />

which is a comedy in and of itself. He<br />

would spray the room with cologne before<br />

he entered and I spent most of my time in<br />

R: It’s definitely busy, but we find ways to<br />

make it work. I’m currently coaching my<br />

daughter’s little league basketball team<br />

to make sure that I see them as much as<br />

possible!<br />

J: Richard, congratulations on all your<br />

numerous successes and welcome to<br />

the Coachella Valley. Have you previously<br />

been to the area? If so, any favorite<br />

restaurants or venues?<br />

R: Yes, I love it here and come with my<br />

Fabio Viviani<br />

Chef, Culinary Personality,<br />

Restaurateur, Cookbook Author<br />

Chef Fabio Viviani has possessed a passion<br />

for food since his childhood growing up in<br />

Florence, Italy. At age 11, Viviani worked<br />

nights at a local bakery (since he was<br />

too young to officially join the staff), and<br />

during his teenage years he held a variety<br />

of positions, even serving under the<br />

mentorship of Simone Mugnaini, an iconic<br />

figure in the Italian restaurant industry.<br />

Between his training in Italian and Mediterranean<br />

cuisine at IPSSAR Saffi and<br />

working with culinary luminaries such<br />

as Mugnaini, Alessandro Panzani, and<br />

Saverio Carmagini, Viviani owned and<br />

operated five restaurants in Florence, a<br />

farm house, and two nightclubs by the<br />

time he was 27. Although a well-respected<br />

businessman in Italy, he was ready for<br />

a change and moved to Ventura County,<br />

California, where he opened Café Firenze<br />

in Moorpark.<br />

Teaming up with one of Chicago’s most<br />

innovative restaurant consulting groups,<br />

Dine|Amic, Viviani went on to open<br />

Siena Tavern in Chicago in 2013, which<br />

received accolades from Michigan Avenue<br />

and Chicago Tribune, to name a few.<br />

2014 saw the debut of Mercato by Fabio<br />

Viviani, a quick-service Italian concept in<br />

Chicago and San Diego, and the launch<br />

of Fabio Viviani Wine Collection. Viviani<br />

also opened his new steak restaurant,<br />

Prime and Provisions, as well as Bar Siena,<br />

both in Chicago in 2015. In January 2016,<br />

In August 2010 Aarti Sequeira competed<br />

on and won Season 6 of Food Network’s<br />

number-one series, Food Network Star,<br />

landing the ultimate dream culinary job: her<br />

very own Food Network show. A dedicated<br />

foodie all her life and a journalist by education<br />

and trade, Aarti successfully combines<br />

these passions in her entertaining blog and<br />

online cooking-variety show, Aarti Paarti.<br />

Now she takes her food knowledge, love for<br />

cooking, and enthusiasm for sharing information<br />

to the masses in her Food Network<br />

cooking series, Aarti Party. On this show she<br />

surprises viewers with unexpected flavors<br />

and techniques to expand their palates<br />

and culinary repertoire by imparting her<br />

knowledge of Indian cuisine and putting an<br />

approachable spin on all-American classics.<br />

Born in Bombay, India, and raised in Dubai,<br />

UAE, Aarti’s lifelong appreciation for food<br />

began at a young age and was inspired by<br />

her faith, her mother, her cultural background<br />

and her never-ending food experiments.<br />

Growing up in a traditional Indian<br />

Catholic family, Aarti spent Fridays dining<br />

on fish and Sundays at church. Her fondest<br />

food memories include her father’s weekly<br />

trips to the market for fresh fish and produce,<br />

her mother’s daily recipe creations, and<br />

Aarti’s own pretending to host a cooking<br />

show — an unexpected glimpse into her<br />

future as a Food Network star.<br />

After completing Dubai’s British system of<br />

schooling, including many music-related<br />

activities like piano and choir, Aarti moved<br />

to Chicago in 1996 to attend Northwestern<br />

University. In 2000, she earned a Bachelor<br />

of Science in journalism at Northwestern’s<br />

Medill School of Journalism with an adjunct<br />

major in International Relations. While<br />

pursuing her degree, Aarti gained valuable<br />

media experience working at the school’s<br />

student-run radio and television stations<br />

and also spent a short time in Washington,<br />

D.C., covering Capitol Hill for a local Fargo,<br />

N.D., television station. Upon graduation<br />

Aarti worked for about a year at CNN as<br />

a production assistant in Chicago before<br />

moving to New York in 2001 to work as a<br />

CNN producer for two years. In 2003 she<br />

married her college sweetheart, Brendan,<br />

and moved from New York to Los Angeles to<br />

start their life together.<br />

In addition to working several freelance gigs<br />

in the Los Angeles entertainment industry,<br />

Aarti assisted a Peabody award-winning<br />

director on Sand and Sorrow, a documentary<br />

about Darfur in 2004. Feeling like<br />

something was still missing, Aarti enrolled<br />

in The New School of Cooking in Culver<br />

City, Calif., where she earned her professional<br />

cooking certificate in 2007. To further<br />

explore her culinary calling, Aarti launched<br />

her blog and online cooking-variety show,<br />

Aarti Paarti in 2008.<br />

In addition to cooking, Aarti enjoys improv<br />

theater, music, Middle Eastern dance and<br />

visiting art galleries. She currently resides<br />

in Los Angeles with her husband, Brendan,<br />

while her parents and youngest sister live in<br />

Bangalore, India, and her middle sister lives<br />

in Phoenix.<br />

Author, and one of the country’s<br />

foremost authorities on cheese<br />

Juli: Hi Laura, I have to say right off that I<br />

love cheese! When did you first find this<br />

love?<br />

Laura: Happy to hear you’re a cheese lover<br />

too! For me, my love affair with cheese<br />

began at the ripe old age of four, when<br />

my mother would give me butter-crisped<br />

triangles of grilled cheese. Tasting that<br />

melty cheese, I was hooked.<br />

J: What is the history of pairing cheese<br />

with wines?<br />

L: I don’t know if there’s a specific cheese<br />

and wine pairing history, but I do know<br />

that both have been on the table together<br />

in France and Italy for centuries, and<br />

likewise, the subject of numerous still life<br />

paintings, also centuries old. It’s an ageold<br />

romantic notion and one that suits me<br />

just fine!<br />

J: Me, too! Tell us about the term,<br />

“Edu-tainer”?<br />

L: I call myself that because that’s genuinely<br />

how I see myself. I am very serious<br />

about educating people about cheese, its<br />

flavors, its textures, the people that make<br />

it, and the wines that go with it, but I like<br />

to do that by injecting humor along the<br />

way. After all, we’re talking cheese and<br />

wine here, not politics!<br />

J: Being a spokesperson for consumer and<br />

trade organizations must be interesting.<br />

That must involve a lot of travel. What is<br />

life like for you while you are on assignment?<br />

L: I actually don’t do nearly as much of<br />

that as I used to do, but yes – it definitely<br />

involves travel. While it might get<br />

tiring sometimes, the rewards are more<br />

than worth any travel hassles. I get to<br />

go to cities I’d never go to. I get to eat in<br />

restaurants I otherwise probably wouldn’t<br />

get the chance to try. I meet all kinds<br />

of people, which I love to do. And I get<br />

to work with different companies, each<br />

of which has its own ethos and ways of<br />

doing business. Fascinating.<br />

J: You have done many television shows<br />

including CNN, QVC, The Martha Stweart<br />

Show, Fox & Friends, and CBS’s The Early<br />

Show. What do you find most enjoyable<br />

about production?<br />

L: Growing up in LA (Santa Monica), I<br />

loved everything about Hollywood and<br />

about television. That’s why at age 12, I<br />

decided I wanted to be in television news.<br />

Sure enough, that’s what I did for my first<br />

15 years out of college. I worked in LA and<br />

San Francisco. But my TV news jobs were<br />

mostly behind the scenes, so it wasn’t<br />

until I started on the cheese path that I<br />

began to go in front of the camera. Having<br />

familiarity and ease in television studios<br />

definitely helped me do shows like Martha<br />

Stewart, even though I was a nervous<br />

wreck doing that particular show!<br />

J: Tell us about the James Beard Award and<br />

with what book did you win the award?<br />

L: My book, The All American Cheese and<br />

Wine Book, was the recipient of the James<br />

Beard award. I will never forget the night I<br />

won. The Beards are considered the Oscars<br />

of the book and restaurant world, so when<br />

they called my name, I literally floated on<br />

air down the aisle to accept my award.<br />

When I walked the stairs to the Lincoln<br />

Center, I had no idea that the bright lights<br />

would render me practically blind as I<br />

attempted to give my acceptance speech.<br />

This felt like big time! But while the lights<br />

may have shone on me, what I was most<br />

proud of was that they were shining on the<br />

subject of American cheese and wine. That<br />

was my passion then just as now, and, I’d<br />

venture to say, always will be.<br />

J: Thank you, Laura! You demonstrate wine<br />

pairing, cheese essentials, and cooking<br />

classes across the country, including such<br />

prestigious events as the Food & Wine<br />

Classic at Aspen, Pebble Beach Food &<br />

Wine, the South Beach Wine & Food Festival,<br />

Los Angeles Food & Wine, and the Santa<br />

Fe Wine & Chile Fiesta as well as Palm<br />

Desert Food & Wine. We are lucky to have<br />

you visit us here in the Coachella Valley!

Shaun O’Neale exploded onto the culinary<br />

scene in September 2016 when he claimed<br />

the title of America’s Best Home Cook and<br />

was named Season 7 champion of MasterChef<br />

on Fox. He graduated from reality<br />

star to culinary star in May 2017 with the<br />

release of his debut cookbook, My Modern<br />

American Table.<br />

O’Neale is a self-taught chef who educated<br />

himself by reading cookbooks, studying<br />

the history of food, and traveling the<br />

globe to absorb different cultures and<br />

flavors. During his season on MasterChef,<br />

O’Neale won over the palates of Gordon<br />

Ramsay, Christina Tosi, Daniel Boulud, and<br />

Wolfgang Puck with his bold flavors and<br />

flawless presentation. He carried the same<br />

techniques that earned him a record-setting<br />

eight wins in the MasterChef kitchen<br />

through the completion of his cookbook.<br />

My Modern American Table teaches other<br />

home cooks how to re-create O’Neale’s<br />

upscale, modern American dishes like his<br />

lobster ravioli and salted caramel chocolate<br />

tart.<br />

For the past 20 years, O’Neale has been<br />

orchestrating dance floors as a DJ with the<br />

highlight of his career culminating in 2011<br />

on New Year’s Eve, when he became the<br />

first DJ to perform on Las Vegas Boulevard<br />

in front of more than 100,000 people. Beginning<br />

in Tampa, Florida, and now calling<br />

Las Vegas, home, O’Neale has taken the<br />

same skills and determination that helped<br />

him to become a successful DJ and used<br />

them to start the newest phase of his life<br />

Ms. Ortega is recognized for her work in<br />

bringing the first East Coachella Valley<br />

Pride Festival to reality in Coachella in<br />

2017. Recently, she was named Director<br />

of Community Engagement for The<br />

LGBT Community Center of the Desert<br />

(The Center). She chairs the board of<br />

Leadership Coachella Valley, a program<br />

developing future Coachella Valley<br />

leaders. She serves on the annual Harvey<br />

Milk Diversity Breakfast Committee. She<br />

is a volunteer organizer of Palm Springs’<br />

Dyke <strong>March</strong> and social events for younger<br />

The Bloom in the Desert Ministries<br />

Community Justice Award celebrates<br />

The award embodies a portion of Bloom’s<br />

Alexis Ortega is the recipient of the 4th<br />

Annual Community Justice Award. She is a<br />

thought leader among LGBTQ millennials<br />

in our valley. She is an ambassador<br />

for The Center in Palm Springs and a<br />

justice seeker generally. In partnership<br />

between The Center and Building Healthy<br />

Communities Coachella Valley, Alexis<br />

builds LGBT programs promoting justice<br />

and support for persons in the eastern<br />

Coachella Valley. Through her work, 2017<br />

was the first year for the East Coachella<br />

Valley Pride Festival, enabling people to<br />

“walk as who we are.” The 2nd annual<br />

event is April 8, <strong>2018</strong>, at Veterans Park in<br />

Coachella.<br />

Alexis chairs the board of Leadership<br />

Coachella Valley, a program designed to<br />

identify, motivate, and develop future<br />

community leaders, connecting people in<br />

different sectors to work together making<br />

our valley a better place. She serves on<br />

acid to decalcify the tooth. It is called dental<br />

plaque and it forms very quick after eating.<br />

The better hygiene a person has, the less<br />

they will have decay. It takes both sugar and<br />

plaque to decay a tooth. The more you brush<br />

and floss, the more plaque removed and the<br />

less risk of decay.<br />

Additionally, elderly patients also tend to have<br />

more decay. It is more obvious with elderly<br />

patients who are loosing their dexterity, and<br />

in general they tend to eat more sweets more<br />

often, and not brush as often.<br />

There is also another component that needs<br />

to be explained here. In the mouth there are<br />

several types of bacteria. Some are responsible<br />

for gum disease and some are responsible<br />

for decay. Some people may have the best<br />

hygiene and still have gum disease and some<br />

who have the worst hygiene may not suffer<br />

from gum disease at all. This is because they<br />

do not have the bacteria responsible for gum<br />

disease. Same thing for decay. Some people<br />

will be more susceptible to decay then others<br />

even if they eat just a little sugar and have<br />

decent dental hygiene. That is because they<br />

have that kind of bacteria in their mouth in a<br />

higher rate then another person. But that is<br />

not a reasonable excuse. More brushing<br />

and plaque control with a topical fluoride<br />

application daily, preferably with a special<br />

personal tray made at the dental office will<br />

help.<br />

Very rarely a person will suffer from gum<br />

disease and a high rate of decay. It is<br />

generally one or the other. If someone has<br />

a high rate of decay, in general they will<br />

not suffer from gum disease like bone loss,<br />

periodontal pockets and tooth mobility.<br />

It is a proven fact though, that the better<br />

the dental hygiene you have and the better<br />

your diet is in terms of limiting sugar intake,<br />

the healthier your gums and teeth will be.<br />

So, it is not true that decay affect only<br />

kids. As long as you have one tooth in your<br />

mouth you are subject to get decay if you<br />

leave dental plaque on it and eat sugar!<br />

The best way to prevent that is to have<br />

good dental hygiene at home and brushing<br />

after any sugar intake, and to visit your<br />

dentist 2 to 3 times a year.<br />

Do you think that dental cavities are<br />

problems only for children?<br />

It is a general belief that cavities are for kids<br />

only. But in fact, cavities affect all ages!<br />

The reason why cavities are more prevalent<br />

in children is mainly the fact that they tend<br />

to eat more sugar and have poor hygiene<br />

habits. However, when looking at the cause<br />

of decay, which is basically plaque with the<br />

presence of sugar, it is easy to understand<br />

that cavities can happen at any age even if<br />

your mouth is full of crowns.<br />

Of course there are some people who have<br />

teeth that are softer then others and are<br />

easier to decay but that affects only 1% of<br />

the population. Basically any diet rich in<br />

sugar will increase your chance of decay.<br />

Soft drinks, candies and anything sweet<br />

will have a potency to create decay in the<br />

presence of dental plaque. Of course in<br />

order to create decay there has to be the<br />

bacteria that will transfer the sugar into<br />
