The Legacy of Martin Luther King, Jr.<br />

On <strong>January</strong> 15, we honor the legacy of Dr. Martin Luther King, Jr. who fueled the Civil Rights<br />

movement in the 1960s and paid the ultimate price for his leadership. In the words of his widow,<br />

Coretta Scott King, this holiday commemorates Dr. King's "great dream of a vibrant, multiracial<br />

nation united in justice, peace and reconciliation.” There are many opportunities for families to<br />

carry on Dr. King's legacy, including reading and discussing books written about him. My Brother<br />

Martin by Christine King Farris and My Daddy, Dr. Martin Luther King, Jr. by Martin Luther King, III<br />

both paint a beautiful portrait of this leader from his family's perspective, making it easy for<br />

children to relate to this great historical figure.<br />

Three Movies That Inspire Kids To Change The World<br />

Children have an innate desire to make the world a better place. Why not foster that desire this<br />

<strong>January</strong> by watching inspirational movies as a family? Animated feature Fern Gully (1992) invites<br />

us into a beautiful rainforest landscape where a human helps the fairies who inhabit the forest<br />

save their home from a logging company that threatens to destroy it. Live–action feature Free<br />

Willy (1993) tells the story of Jessie, a boy who befriends an orca named Willy and ultimately frees<br />

him from evil theme park owners who want to kill him. Disney–Pixar feature Wall–E (2008) shows<br />

us the distant future when a polluted planet Earth can only be saved by the efforts of kind robots,<br />

Wall–E and EVE.<br />

Recipe: Candy Bar Fondue<br />

Ingredients:<br />

2 Snickers<br />

2 Almond Joys<br />

2 Butterfingers<br />

2 Twix<br />

1 pan brownies, cut into small cubes<br />

1 package fresh strawberries<br />

1 jar marshmallow creme<br />

1 cup heavy cream<br />

1 package pretzel sticks<br />

1 box graham crackers<br />

1 bag marshmallows<br />

Instructions:<br />

Spray a slow cooker with nonstick spray. Chop all the candy bars into one–inch chunks and place<br />

them in the slow cooker, along with the heavy cream and marshmallow creme. Cover the slow<br />

cooker and cook on low for 2 hours, stirring every 30 minutes. While the candy bar mixture melts,<br />

arrange the brownie cubes, strawberries, marshmallows, and graham crackers on a large serving<br />

tray. Set out fondue forks. Once the candy bar mixture is melted and smooth, serve warm.<br />

What is Your Health & Fitness Plan?<br />

Everybody needs a good health and fitness plan.<br />

Many times, it’s the simplest adjustments--and<br />

sticking to them over time--that add up to the<br />

biggest results for the whole family. We’ve put<br />

together some easy ways to boost your family’s<br />

health in 2018 and beyond!<br />

Cook (or not) for high-impact nutrition!<br />

When it comes to fruits and vegetables, the<br />

nutrition they offer comes down to whether<br />

you cook them or consume them raw. Cooking<br />

produce can destroy some nutrients, while<br />

enhancing others. For example, to get all the<br />

available vitamin C that apples, berries, and other<br />

fruits contain, eat them raw, including the peel.<br />

While baking fruits will destroy most of the vitamin<br />

C, the fiber and other nutrients like vitamin K remain mostly intact.<br />

Some veggies become more nutritious when cooked. For example, steaming carrots will increase<br />

their available beta-carotene, which turns to vitamin A in your body. In addition, pairing carrots<br />

with a source of healthy fat, such as avocados, nuts, or olive oil, helps your body actually absorb<br />

fat-soluble vitamins A, D, E, and K more easily.<br />

There are tons of guides online that tell you how to cook or eat raw produce in ways that<br />

preserve the most nutrients. But, getting the nutrition part down is only half the battle, of course.<br />

The other half is enticing kids to eat the produce they’re not excited about. One way is to add<br />

raw vegetables to fruit smoothies, so that the sweet, tangy flavors mask the “yucky” bitterness of<br />

the veggies. Likewise, cooked vegetables can be pureed and combined with hummus or other<br />

condiments to make delicious dipping sauces.<br />

Free your inner animal and get fit!<br />

Your family’s fitness routine is about to get awesome and effective. By using the animal<br />

kingdom as your inspiration, your strength, agility, and coordination will reach a whole<br />

new level. Warm up with some donkey kicks by kicking one leg,<br />

then the other, straight behind you. You can do this from<br />

a standing position or on all fours. Have everyone make<br />

a hee-haw sound while you kick to raise everyone’s<br />

energy level.<br />

Next, move on to more strenuous movements. Doing the<br />

crab walk will provide a total body workout. Start by sitting<br />

on the floor. Place your hands behind you and your feet<br />

flat on the floor in front of you. Then lift your hips as high as you can and<br />

“walk” forwards, backwards, and sideways!<br />

Now, start moving your body upward by leap frogging.<br />

Crouch down and then spring off the floor, jumping as<br />

high as possible and landing a few feet in front of your<br />

starting position.<br />

Finally, shark swims are the perfect cool-down. Balance<br />

on your left leg and reach in front of you with your left<br />

hand as you raise your right leg parallel to the ground.<br />

Reach your right arm above your head to make the<br />

shark’s fin. Then, switch to balancing on your right leg and holding your left arm<br />

above your head!

Slime Activity<br />

Avalanches are one of nature’s most<br />

interesting phenomena. An avalanche<br />

happens when layers of snow begin to<br />

dislodge and slide down a hill or mountain.<br />

But watch out! When an avalanche<br />

happens, you don’t want to be anywhere<br />

nearby! Why not create your own pretend<br />

play avalanche from the safety of your<br />

living room? All you have to do is whip up<br />

a batch of slime and let it slide!<br />

In a large bowl, dissolve 1/2 teaspoon of<br />

borax in 1 cup of hot water. In a separate<br />

bowl, whisk together one container of<br />

white school glue with 1/2 cup of water<br />

at room temperature. Stir in two drops of<br />

blue food coloring and 1 tsp of white or<br />

silver glitter. Once the borax mixture cools,<br />

add the glue mixture to it. Wearing rubber<br />

gloves, use your hands to squish and<br />

knead the slime--kids love this part!--until<br />

the slime firms up and reaches the desired<br />

consistency.<br />

recipe Icicle Pretzels<br />

Match<br />

the Halves<br />

Ingredients:<br />

1 package blue candy melts<br />

1 package white candy melts<br />

1 package large pretzel sticks<br />

1 cup blue sanding sugar<br />

1/2 cup white sanding sugar<br />

Instructions:<br />

Melt the blue candy melts in a small saucepan. Dip the pretzels in the<br />

melted candy, leaving about three inches uncovered. Immediately, roll<br />

the pretzels in the blue sanding sugar. Lay the pretzels on a baking sheet<br />

lined with parchment paper and refrigerate for 10 minutes. In a separate<br />

saucepan, melt the white candy melts. Remove the pretzels from the<br />

refrigerator. Hold each pretzel upright and use a spoon to drizzle the<br />

melted white candy over the tip. Allow the candy to drip down the sides.<br />

Before the white candy hardens, sprinkle on the white sanding sugar.<br />

Return the pretzels to the refrigerator for 10 more minutes before serving.<br />

around in a circle!<br />

Jazz up a classic<br />

game of tag, by<br />

taping three streamers<br />

to each player’s<br />

back. Then, the<br />

person designated<br />

as “it” will attempt to<br />

pull off the streamers.<br />

The first person to lose<br />

all three streamers<br />

becomes the next<br />

“it”!
