Three Creative Ways To Volunteer During the Holidays
Here are three new ways to volunteer this season! 1) Host a group of children for an afternoon hot
chocolate social so that parents can finish their holiday shopping. 2) Visit an animal shelter and
offer to help feed and care for the animals waiting to be adopted. 3) Help a teacher tidy and pack
up the classroom for winter break and then set it all back up again when classes start. Lending an
extra pair of hands can give a teacher more time to enjoy the holidays.

These easy prep ideas will help you enjoy a relaxed holiday season! 1) Traveling to a holiday
gathering? Pick up a quick–n–easy host⁄hostess gift, like a set of coasters from the city you live in
or locally– made soaps and take them with you. They'll come in handy during parties and
mealtimes. 2) Hosting visitors? Give them a five star hotel experience by making up the sofa or
guest room with fresh linens, a turned–down comforter, mints on the pillows, and neatly folded
towels. 3) In charge of decorating? Skip the clutter and put out just ONE holiday item that has
significance for everyone at your gathering.
Promote Human Rights
Every year, Human Rights Day is observed on December 10 to raise awareness about areas in
the world where human rights are not respected. Bring this global initiative to your own community
by: 1) Advocating for the rights of children, refugees, and other vulnerable groups, 2) Donating to
organizations that aid victims of human rights violations, 3) Reaching out to local government
leaders to lobby for laws that protect human rights, and 4) Following #HumanRightsDay on social
media to spread the word.
Recipe: Zucchini Crab Cakes
Ingredients:
2 cups grated zucchini
1 egg, beaten
2 Tbsp butter
1 cup bread crumbs
¼ cup minced onion
½ cup coconut oil
1 cup crab meat, chopped
1 tsp Old Bay seasoning
Instructions:
Combine 1 tablespoon of coconut oil with the other ingredients in a large bowl. Using your hands,
shape handfuls of the mixture into spheres and then flatten into patties. Heat up a skillet to
medium–high heat and fry each of the patties in the rest of the coconut oil, flipping on both sides,
until the cakes turn golden brown.

2017
Wow! Another year is just around the corner! Before
we say hello to 2018, let’s look back at 2017. From
Amazon’s acquisition of Whole Foods to the hurricanes
that ravaged Texas, the Caribbean, and Florida, 2017
has been a memorable year. Check out these three
highlights to say farewell to 2017 with a bang!
In June, Wonder Woman hit theaters and ranked #1 at
the box office its first weekend, pulling in a whopping
$103,251,471! In addition to its box office performance,
Wonder Woman made headlines for the fact that
director, Patty Jenkins, is the first female director of a live-action film based on a comic book
superhero.
Earlier this year, scientists in the United States began using CRISPR gene editing technology to alter
human embryos, after watching from afar the breakthroughs made by scientists in other countries.
CRISPR, which stands for Clustered Regularly Interspaced Short Palindromic Repeat, is used to alter
our DNA and correct defective genes that cause inherited diseases. Many scientists, politicians,
and members of the general public express misgivings about CRISPR, fearing that it will give
rise to a generation of “designer babies,” bearing traits parents select based on their personal
preferences. Despite the varied opinions about CRISPR, this technology’s arrival in the U.S. signals
a new era in science and medicine.
For the first time in 99 years, North Americans, coast to coast, were able to witness a total eclipse,
which occurs when the moon passes between the Earth and the Sun. The “path of totality”
reached from Oregon to South Carolina, while people as far north as Quebec City and as far
south as San Antonio were able to catch a 60 percent view of
this celestial event. Armed with protective eyewear, people
ventured out in droves on August 21, some even traveling
closer to the path of totality, to watch the world change for
just a few glorious minutes.
Okay, 2018, here we come! To ring in the New Year, take a
moment before your NYE get-together to write a letter to your
2018 self, describing everything you want to accomplish in
2018. Leave room for your 2018 self to write responses to your
2017 self, with monthly updates!
RECIPE: Sugared Champagne Grapes
Ingredients:
3 cups grapes • 1 bottle champagne** • 4 Tbsp sugar
Instructions:
Wash the grapes and place in a bowl. Pour the champagne
over the grapes, making sure every grape is submerged. Allow
the grapes to marinate in the refrigerator overnight. Drain the
grapes and gently toss with the sugar to coat them. Freeze
the sugared champagne grapes for at least two hours before
serving.
**Ginger ale makes a delicious non-alcoholic substitute for champagne!
