Here are three new ways to volunteer this season! 1) Host a group of children for an afternoon hot<br />

chocolate social so that parents can finish their holiday shopping. 2) Visit an animal shelter and<br />

offer to help feed and care for the animals waiting to be adopted. 3) Help a teacher tidy and pack<br />

up the classroom for winter break and then set it all back up again when classes start. Lending an<br />

extra pair of hands can give a teacher more time to enjoy the holidays.<br />

mealtimes. 2) Hosting visitors? Give them a five star hotel experience by making up the sofa or<br />

Promote Human Rights<br />

Every year, Human Rights Day is observed on <strong>December</strong> 10 to raise awareness about areas in<br />

the world where human rights are not respected. Bring this global initiative to your own community<br />

by: 1) Advocating for the rights of children, refugees, and other vulnerable groups, 2) Donating to<br />

organizations that aid victims of human rights violations, 3) Reaching out to local government<br />

leaders to lobby for laws that protect human rights, and 4) Following #HumanRightsDay on social<br />

media to spread the word.<br />

Recipe: Zucchini Crab Cakes<br />

Ingredients:<br />

2 cups grated zucchini<br />

1 egg, beaten<br />

2 Tbsp butter<br />

1 cup bread crumbs<br />

¼ cup minced onion<br />

½ cup coconut oil<br />

1 cup crab meat, chopped<br />

1 tsp Old Bay seasoning<br />

Instructions:<br />

Combine 1 tablespoon of coconut oil with the other ingredients in a large bowl. Using your hands,<br />

shape handfuls of the mixture into spheres and then flatten into patties. Heat up a skillet to<br />

medium–high heat and fry each of the patties in the rest of the coconut oil, flipping on both sides,<br />

until the cakes turn golden brown.<br />

<strong>2017</strong><br />

Wow! Another year is just around the corner! Before<br />

we say hello to 2018, let’s look back at <strong>2017</strong>. From<br />

Amazon’s acquisition of Whole Foods to the hurricanes<br />

that ravaged Texas, the Caribbean, and Florida, <strong>2017</strong><br />

has been a memorable year. Check out these three<br />

highlights to say farewell to <strong>2017</strong> with a bang!<br />

In June, Wonder Woman hit theaters and ranked #1 at<br />

the box office its first weekend, pulling in a whopping<br />

$103,251,471! In addition to its box office performance,<br />

Wonder Woman made headlines for the fact that<br />

director, Patty Jenkins, is the first female director of a live-action film based on a comic book<br />

superhero.<br />

Earlier this year, scientists in the United States began using CRISPR gene editing technology to alter<br />

human embryos, after watching from afar the breakthroughs made by scientists in other countries.<br />

CRISPR, which stands for Clustered Regularly Interspaced Short Palindromic Repeat, is used to alter<br />

our DNA and correct defective genes that cause inherited diseases. Many scientists, politicians,<br />

and members of the general public express misgivings about CRISPR, fearing that it will give<br />

rise to a generation of “designer babies,” bearing traits parents select based on their personal<br />

preferences. Despite the varied opinions about CRISPR, this technology’s arrival in the U.S. signals<br />

a new era in science and medicine.<br />

For the first time in 99 years, North Americans, coast to coast, were able to witness a total eclipse,<br />

which occurs when the moon passes between the Earth and the Sun. The “path of totality”<br />

reached from Oregon to South Carolina, while people as far north as Quebec City and as far<br />

south as San Antonio were able to catch a 60 percent view of<br />

this celestial event. Armed with protective eyewear, people<br />

ventured out in droves on August 21, some even traveling<br />

closer to the path of totality, to watch the world change for<br />

just a few glorious minutes.<br />

Okay, 2018, here we come! To ring in the New Year, take a<br />

moment before your NYE get-together to write a letter to your<br />

2018 self, describing everything you want to accomplish in<br />

2018. Leave room for your 2018 self to write responses to your<br />

<strong>2017</strong> self, with monthly updates!<br />

RECIPE: Sugared Champagne Grapes<br />

Ingredients:<br />

3 cups grapes • 1 bottle champagne** • 4 Tbsp sugar<br />

Instructions:<br />

Wash the grapes and place in a bowl. Pour the champagne<br />

over the grapes, making sure every grape is submerged. Allow<br />

the grapes to marinate in the refrigerator overnight. Drain the<br />

grapes and gently toss with the sugar to coat them. Freeze<br />

the sugared champagne grapes for at least two hours before<br />

serving.<br />

**Ginger ale makes a delicious non-alcoholic substitute for champagne!
