The Legacy of Martin Luther King, Jr.<br />

On January 15, we honor the legacy of Dr. Martin Luther King, Jr. who fueled the Civil Rights<br />

movement in the 1960s and paid the ultimate price for his leadership. In the words of his widow,<br />

Coretta Scott King, this holiday commemorates Dr. King's "great dream of a vibrant, multiracial<br />

nation united in justice, peace and reconciliation.” We can learn more about his legacy through<br />

TheKingCenter.org's events, resources and artifacts on nonviolent change, and archive of<br />

"dreams” submitted by people of all ages and walks of life.<br />

Three Inspirational Must–Reads for the New Year<br />

Self–empowerment is always easier with the right resources. Here are three books for 2018 and<br />

beyond! 1) Stephen R. Covey's 7 Habits of Highly Effective People helps us eliminate mental<br />

barriers to success. For example, offer "win–win” solutions to interpersonal conflicts to improve<br />

your relationships. 2) In The Happiness Project, author Gretchen Rubin shares personal stories to<br />

help us adopt our own good habits. For example, identifying "freebie clutter” and "clutch clutter” in<br />

our homes can raise awareness of objects that deplete our energy. 3) Gary Keller and Jay<br />

Papasan tell us in The One Thing that the key to achieving more is to "go as small as possible.” In<br />

other words, concentrate on one goal.<br />

Recipe: Banana Fig Skillet Crisp<br />

Ingredients:<br />

3 large bananas, chopped<br />

1⁄4 cup regular rolled oats<br />

1⁄4 cup chopped macadamia nuts<br />

2 Tbsp shredded coconut<br />

1⁄2 cup butter<br />

2 Tbsp sugar<br />

2 Tbsp rum<br />

2 Tbsp honey<br />

1 tsp grated fresh ginger<br />

2 tsp ground cinnamon<br />

1 cup dried figs<br />

2 cups coconut ice cream<br />

Instructions:<br />

In a medium–sized skillet, cook oats and macadamia nuts over medium heat until the nuts turn<br />

light brown (about 3 minutes). Add the coconut and cook for another 3 minutes. Add the sugar,<br />

half of the butter, and ginger, and stir until the butter is melted. Transfer the mixture to a bowl and<br />

set aside. Next, using the same skillet, add the bananas, sugar, and cinnamon, and cook until the<br />

bananas soften (about 5 minutes). Then add the rum and honey and stir the bananas gently to<br />

coat them. Spread the oat mixture over the bananas and serve with a scoop of ice cream.<br />
