Tips for Roasting<br />

the Perfect Bird<br />

–With Chef Hannah Smith–<br />

Thanksgiving is just around the corner which means now is the time to start planning<br />

your delicious feast. The number one component to any Thanksgiving meal is the turkey.<br />

There are plenty of ways to prepare a turkey including smoked and fried, but Chef<br />

Hannah is going to explain how to roast a turkey to perfection.<br />

One hour before roasting, take the turkey out of the fridge<br />

just to take the chill off. Don’t attempt to completely bring it<br />

to room temperature and don’t put it in the oven right from<br />

the fridge.<br />

Leave your turkey unstuffed! Stuffing must be cooked<br />

to a minimum of 165 degrees Fahrenheit, and when<br />

turkeys are cooked with stuffing, your bird will end<br />

up overcooked by the time your stuffing reaches<br />

the minimum temperature. So bake your stuffing to<br />

perfection separately.<br />

The rule of thumb for cooking a turkey is 15 minutes per<br />

pound. However, some factors, like brining the bird or<br />

leaving the legs untrussed, will contribute to a little faster<br />

cooking time. Begin checking the temperature of your<br />

turkey about halfway through the scheduled cooking time to<br />

gauge how fast it’s actually cooking.<br />

Every 30 minutes, remove the turkey from the oven and<br />

baste it all over. Pan juices actually cool the surface of the<br />

turkey, which keeps the breast meat cooking at close to the<br />

same rate as the legs and thighs. In the last 45 minutes or<br />

so of cooking, you can also baste the turkey with melted<br />

butter or olive oil. This helps crisp up the skin and turn it a<br />

beautiful deep golden brown.<br />

Let it rest! Lift the whole turkey (still on the rack) and<br />

transfer it to a cutting board. Tent loosely with foil and let<br />

it rest for 30 minutes. This gives time for the juices to be<br />

absorbed into the muscle tissue, making your bird juicier<br />

and easier to slice.

Taiyo Community Center. She will discuss what the different labels mean when purchasing,<br />

whether to brine or not and alternatives to roasting. Must be 18 years or older to participate.<br />

Sign up in advance as seating is limited.<br />

Chef Hannah provides monthly cooking classes which aim to teach cooking enthusiasts<br />

how to efficiently navigate their kitchen. These classes feature a wide variety of topics;<br />

from learning about different types of chocolate and how best to use a whole chicken<br />

to share a few DIY ideas. Bring these colors indoors and spruce your house up by<br />

Door Greeting<br />

Greet guests with this charming<br />

alternative to a fall wreath. Simply<br />

apply a layer of chalkboard paint to<br />

the inside of an old tray, then add<br />

autumn branches and bittersweet<br />

berries for a seasonal finish.<br />

What you’ll need: chalkboard paint<br />

faux leaves/garland décor (various<br />

Leaf Bowl<br />

Nothing says fall like maple leaves.<br />

Create this seasonal bowl and fit<br />

it with your favorite candies or<br />

spice it up with a festive candle.<br />

Simply super glue the fake or dried<br />

leaves and cover the entire bowl<br />

with leaves.<br />

What you’ll need: fake leaves ($8;<br />

Candle Holder<br />

Light up your house with these<br />

How to do it: If you chose to go with<br />

Mod Podge (use super or tacky glue<br />

for fake leaves) the leaves onto the jar,<br />

making sure to cover every inch of the<br />

jar. Once the Mod Podge has dried,<br />

add twine or straw around the jar for an<br />

extra flare. Lastly, place your favorite<br />

candle in the jar and voila, you have<br />

your very own candle holder!<br />

Metallic Pumpkins<br />

Paint paper mache pumpkins with<br />

metallic paint for festive decor that is<br />

sure to impress your guests.<br />

How to do it: Lay down thick paper<br />

and create a mini paint palette, pouring<br />

a generous amount of paint onto the<br />

paper. Dip a sponge brush in the paint<br />

and coat the pumpkins with one layer<br />

of paint, ensuring to cover the entire<br />

pumpkin (except for the stem). Once<br />

the pumpkins have dried, paint the<br />

stem of the pumpkin with another metallic color. Afterwards, add an additional<br />

coat of paint. Allow the pumpkins to dry and then place them in a mini basket<br />

alongside acorns or marbles. For a more personal touch, use a metallic pen to<br />

add fun designs onto the pumpkins.<br />

What you’ll need: paper mache pumpkins ($5/Four Pack; A&C); burnt orange<br />

and gold metallic paint ($4/Each; A&C), mini faux acorns ($3/Pack; A&C),<br />

metallic pen ($3-4; A&C), mini basket ($2.50; A&C), sponge brush ($.50-$3)<br />

Festive Fall Basket<br />

Simple wooden baskets are wonderful<br />

for creating beautiful fall décor. The<br />

best part is you can either dress them<br />

up or down – whatever fits your own<br />

personal style.<br />

How to do it: Select a small to medium<br />

sized basket. Cut out a piece of<br />

Styrofoam to fit the base of the basket.<br />

Super glue the piece to the bottom of<br />

the basket. After the glue has dried,<br />

stick your flower arrangement into the<br />

Styrofoam and glue to secure. For a<br />

little fun, paint acorns with a metallic<br />

gold and add a little glitter to the tips.<br />

Every year in early December, the mountainous city of Chichibu holds one<br />

of the most famous float festivals in all of Japan. Historically dating back 2,000<br />

years ago, this two-day festival lights up the night sky with hundreds of lanterns<br />

and a beautiful firework display.<br />

If you missed the opportunity to try delicious, traditional Japanese festival<br />

food during the summer, here’s your second chance. Wander the booth-lined<br />

streets of the city and immerse yourself in the food and culture of Japan.<br />

Try the festival staples like yakisoba or okonomiyaki and countless other<br />

delectable options. Brace the cold weather by indulging in an additional treat<br />

and warm up with a cup of hot and sweet rice wine called amazake, a traditional<br />

drink dating back to A.D. 500. Once you have sated your appetite, you can begin<br />

searching for a comfortable spot to view the parade.<br />

There are six floats which are incredibly detailed works of art. They are<br />

carefully handcrafted and decorated with tapestries, paintings, woodcarvings<br />

and rows of lanterns. These floats are completely man-powered and weigh<br />

approximately 10 to 20 tons each. With wheels made of wood, moving these<br />

massive structures calls for intense teamwork between dozens of people. It<br />

is an impressive sight to watch such beauty be pulled through the city with<br />

incredible dedication.<br />

Eventually, make your way to city hall where all the floats will begin to line up.<br />

From there, the floats will transform and wings will unfold to create a stage for<br />

traditional Japanese performances. Watch talented performers as they take part<br />

in traditional Japanese dances and Kabuki plays.<br />

Finish the night off with the rare occurrence of fireworks outside of the<br />

summer months in Japan. Sip your amazake, listen to traditional taiko drums<br />

and flutes while you enjoy the impressive two-and-a-half hour firework display.<br />

• What is a surface incident?<br />

A surface incident is an unauthorized or unapproved movement within the<br />

designated movement area (excluding runway incursions) or an occurrence<br />

in that same area associated with the operation of an aircraft that affects or<br />

could affect the safety of flight.<br />

• There are four categories of runway incursions:<br />

Category A is a serious incident in which a collision was narrowly avoided.<br />

»»<br />

Category B is an incident in which separation decreases and there is<br />

a significant potential for collision, which may result in a time critical<br />

corrective/evasive response to avoid a collision.<br />

Category C is an incident characterized by ample time and/or distance to<br />

avoid a collision.<br />

Category D is an incident that meets the definition of runway incursion such<br />
