calculated temperature is reached. Thereafter, the hot mess is poured<br />
onto a cold marble slab. The ancient stone acts as a natural cooling agent,<br />
which contributes to the smooth texture of the finished product. Once<br />
the mixture has cooled enough, it is infused with oxygen by working it over<br />
by hand. When the time is right, the fudge is placed into a cast where it<br />
remains overnight. Our luxury fudges are cut and packaged by hand, each<br />
one carefully made for your enjoyment. Upon tasting the fudge, its texture<br />
is soft and melts away on the pallet.
