I cannot believe we are now nine months 

into the year. With whispers of autumn, 

Halloween and even Christmas on the go, 

we have yet another jam-packed edition in 

store for you. 

I was ecstatic this month to be given the 

opportunity to interview one of my favourite 

bands, the internationally successful Alt-J. 

I spoke to Gus Unger-Hamilton about their 

new album ‘Relaxer’ and current tour. Turn to

Butter chicken 

naan-wich... 

Prep Time: 

20 mins 

Cooking Time:

BY AWARD WINNING 

CHEF ABDUS SHAHID 

If you can’t decide between a curry and a 

sandwich for lunch or dinner, this butter 

chicken mix-up ticks all the boxes. 

Method 

1. Combine the chicken, marinade or paste 

and 2 tablespoons yoghurt in a bowl. Cover. 

Place in the fridge for 8 hours (or overnight if 

time permits) to marinate. 

2. Combine the remaining yoghurt, coriander 

and cumin in a bowl. Season. Set aside. 

3. Preheat a chargrill on high. Discard excess 

marinade and spray chicken with olive oil. 

Place a piece of baking paper on chargrill. 

Cook chicken on paper, turning, for 10-12 

minutes or until cooked through. Transfer to a 

plate. Cover for 5 minutes to rest. 

4. Meanwhile, place the vinegar and sugar in 

a heatproof bowl. Season. Microwave on high 

for 30 seconds or until sugar dissolves. Add 

cucumber and radish. Toss to combine. Set 

aside for 5 minutes to pickle. 

4. Thickly slice the chicken. Warm the naan 

bread following packet directions. Divide 

the lettuce, chicken, pickles, extra coriander, 

yoghurt mixture and chilli sauce among the 

naans, covering half of each. Fold naans over 

to enclose the filling. Secure with toothpicks. 

Ingredients 

• 4 (550g) Chicken Thigh Fillets, 

• 60g butter chicken marinade or tandoori paste 

• 180g Greek Style Yoghurt 

• 1⁄2 cup fresh coriander leaves, finely chopped, plus 

extra sprigs, to serve 

• Large pinch ground cumin 

• 2 tablespoons white vinegar 

• 3 teaspoons caster sugar 

• 2 large Lebanese cucumbers, peeled into ribbons 

• 6 small radishes, halved 

• 4 (280g packet) naan bread 

• Baby gem lettuce leaves, to serve 

• Chilli sauce, to serve

Well hello there! I’m back with my monthly column… Ok, so firstly a reminder 

about me. I’m Zena (Zee for short) I’m 43, a mother and a grandmother. 

Now, I know I can, at times, be a tad 

theatrical!

During the 90’s, and being 

40, I was at my social peak 

and I also kept in style with

clear to this day. Team the 

left over 90’s eyebrow and an Illness that 

makes you lose your hair and you’ve got 

‘NO EYEBROWS’! 

This was me, and I have been on a constant

about this type of skin treatment given 

that this month is Macmillan Cancer 

Care month. 

I thought this might help someone out 

there who is coming to the end of their 

treatment. I will have a full interview with 

Sarah on my blog, along with links to local 

cancer support groups.

had a huge reaction on my instagram.

Their new album RELAXER follows THIS IS ALL YOURS and the Mercury 

Prize and Ivor Novello Award-winning debut album AN AWESOME WAVE. 

Between them, the two records have sold in 

excess of two million copies and their songs 

have been streamed more than one billion 

times. 

The band have headlined festivals across the 

globe and sold out London O2 Arena and 

New York’s legendary Madison Square Garden 

on their last tour. 

After recently releasing their new album 

‘Relaxer’ and a recent return to the London 

O2 Arena for a special show as part of the 

venue’s 10th birthday celebrations, their busy 

tour has now begun. 

Rachel Ducker caught up 

with Gus Unger-Hamilton to 

find out more about it… 

R: When did you first 

realize you had a passion 

for music? 

I have always grown up 

with music, my dad was a 

musician and I played the 

piano from, well… I can’t remember a time I 

didn’t play the piano really! 

I think it was starting in a band that made 

me, for the first time, see music as purely 

something to do for enjoyment. I’d had a 

pretty strict upbringing in terms of piano 

practices, I was also a chorister at Ely 

Cathedral, there was always musical stuff 

that was forced on me, and that’s fine I am 

not complaining, but, I think it was actually 

meeting Joe and the guys at university and 

starting the band that made me realize ‘oh 

actually this is something that I want to do 

rather than just something that I just do’ 

without questioning it. 

R: That was my next question actually, how 

did Alt-J form as a band? 

We all met during our first year at Leeds 

University. Joe had come to uni with the 

expressed desire of finding like-minded 

people to start a band with. 

Within the first year he found 

me, Thom and Gwil and 

thought we would be good 

band mates, so he said ‘listen 

I want to get a band together’ 

and that’s really how we did it. 

R: How did you come up with 

the name Alt-J? 

I haven’t had this question in a 

long time, its named after the 

keyboard shortcut on the mac to make the 

Greek letter ‘Delta’ which is a sort of tribal 

thing. 

R: Does the symbol (∆) have any personal 

meaning or does it represent the meaning of 

change and transformation? 

Its neither of those really, we just all thought

it looked cool and sounded cool. We didn’t 

intend any meaning of the whole change 

thing, we never said that other people have 

kind of just picked up on it. 

R: I understand that you heard news about 

your first gig from your living room in Leeds; 

do you have to pinch yourself sometimes 

when you look back at your journey? 

R: Well it certainly is memorable and looks 

cool! As a fan myself, I notice you mention 

triangles quite frequently in your lyrics? Does 

that have any correlation to the ‘Delta’ sign 

or is there another reason behind this? 

I think its sort of related… its all a bit hazy 

for me as we came up with the Delta symbol 

thing before we were called Alt-J, so I think 

that must have been related to ‘Tessalate’, 

but we sort of let the triangle, Delta thing, 

slip away quietly really, we seemed to be 

attracting more attention that we could be 

really bothered to address. 

R: Well, I am sorry (laughs) I was very 

inquisitive about it... 

No it’s fine (laughs) it’s taking me back to the 

first album! 

Yeah, I mean I’ve never literally pinched myself, 

(laughs) but certainly you can have moments 

where you think ‘god this is kind of crazy.’ I 

grew up reading NME and then suddenly I am 

just doing it like the other bands, it’s amazing, 

so yeah, its pretty awesome. 

R: What was it like to win a Mercury Prize? 

It was great! It’s a prize that we all really love 

and respect, talk about, talked about when we 

were teenagers starting the band. The Mercury 

was the one prize we were like, ‘that’s the on 

we want to win, that’s a cool prize’ and so it 

was pretty amazing to win it like that, but that 

whole year, 2012, was such a crazy blur. 

We were doing everything for the first time, 

releasing an album, going to America and then 

suddenly the Mercury prize came and kind of 

crowned the year for us, it was unbelievable,

but I think its taken us a long time to actually 

get any perspective on that because it was 

such a whirlwind. 

sticking with them. Charlie has been our guy 

since day one; he was doing demos with us as 

far back as 2009. 

R: I can imagine! So you’ve just released 

your new album ‘Relaxer’ and in my opinion 

this album has a slightly more classical vibe, 

who’s influence was this? 

There was never a question of us not using 

him, as the demos he’d done with us, were 

what was getting us all of the attention and 

when we got signed we wanted Charlie. 

I have had a classical upbringing growing 

up, and always pushed the barriers in that 

direction a little bit, but I think also Joe had 

been listening to more classical music during 

the making of this album. He was really into 

Philip Glass and Bach, so I think between us, 

the classical influence has been more present 

on this album, yeah. 

R: It’s also the third album you have recorded 

with producer, Charlie Andrew, you must like 

him! Most bands use producers like revolving 

doors per album, so what is it about Charlie 

you like working with? 

The first album was obviously a big success 

and we were friends with Charlie by this point 

as well, so we worked with Charlie again on 

the second album. It’s a nice thing where we 

work well together. We never promise that 

we will work with Charlie for the rest of our 

careers, but I cant see any reason as to why 

we wouldn’t work with him in the future. He 

gets us, he knows how we work and vice 

versa. It’s a difficult relationship - the band 

and the producer - because so often it doesn’t 

work or you cant get on. So we are lucky to 

have found somebody so good for us, so early 

on.

It wasn’t the original plan to get Ellie to do 

it, but I think Joe always had in mind that he 

would like a woman to perform it, as in the 

song it is supposed to be two girls leaving 

a note for a guy, so it is almost as if you are 

seeing the song as a film and casting a woman 

to play that role. 

We toured with Wolf Alice, we really like 

Ellie and her voice and they were actually 

recording in Shoreditch working on their 

album. So we said ‘lets see if Ellie is free this 

afternoon’, as she was so she came down 

and then smashed it in a few takes and it was 

great. 

R: Why did you call the album ‘Relaxer’? 

The word used to be in a song called 

‘Deadcrush’ on the album, but we actually 

took it out. By that point we liked the word 

and thought it had a cool memorable ring to 

it. 

With us as Alt-J, people often think everything 

we do has some deep meaning and often it 

doesn’t you know? So ‘Relaxer’ looks good 

written down and made a good album name. 

It was pretty cool, it was nice for me as my old 

director of music, when I was a chorister there, 

is still there, so it was good to see him and 

work with him again and to meet the boys and 

to chat to them a little bit. 

R: This album doesn’t feature any interludes, 

was there a reason for this? 

There’s not really a reason, other than the fact 

we didn’t have anything knocking around that 

would have been suitable for an interlude. 

We also wanted to make it clear that we 

weren’t making albums in the same vain as the 

previous two for the rest of our career, if you 

do something twice, people go ‘ok’, but if you 

do it again it would be like, ‘ok what are you 

doing’ do you know what I mean? 

R: For those who haven’t heard the new 

album yet how would you describe the sound 

and genre? 

I don’t know about genres really, I always 

struggle to identify genres. Our album is a bit 

like you’re in some kind of strange world with 

lots of different doors, and when you open 

each door you enter into another world. 

All of the songs have a sense of place and 

environment, whether it is ‘Pleader’ that is set 

in 19th Century Wales, or ‘3WW’ which is set in 

Northeast England in a wet field, or ‘House of 

the Rising Sun’ in New Orleans, 100 years ago. 

R: Is it right that the closing track of the 

album, ‘Pleader’ was recorded at Ely 

Cathedral? 

Not all of it was recorded there, but we were 

there to record the choristers and the organ. 

They are hopefully quite immersive, realistic 

tangible worlds in each song that you can 

open the door, step in, go back out and open 

another door and see where you end up. 

R: I like that analogy, that’s really nice. 

R: What an incredible atmosphere that must 

have been? 

You mentioned ‘House of the Rising Sun’ 

what made you include this?

It’s a version we have wanted to do for a long 

time and finally on this album we worked on it 

properly. Its been knocking around for a few 

years. Also we have always seen ourselves as 

a folk band so it was nice on our third album 

to address this head on and do a really classic 

folk song. 

R: Alt-J have headlined at some pretty big 

venues, how do you adjust to that kind of 

audience, do you ever get nervous? 

I don’t really get nervous, you get used 

to playing bigger and bigger places, just 

the same as you would build up anything. 

Whether its strength, by lifting increasingly 

heavy weights or eating chillies, gradually 

eating hotter and hotter foods. I mean it is 

crazy to walk into a venue and see a huge 

place, we get a few butterflies before playing, 

but I don’t think we struggle from nerves at 

all, which is very lucky. 

R: Your currently on tour are their any places 

you are particularly looking forward to 

playing? 

Yeah, we are playing Bali for the first time next 

month, which I am really looking forward to. 

Its always fun to go to America, we are touring 

there in the Autumn, I mean I just love touring, 

it doesn’t matter where it is. There are certain 

places I like more than others but at the same 

time I think you can have fun in the most 

unexpected places.

Yeah! It did. It’s a good example of how

Madison Square Garden and its kind of too 

crazy to be true really, but it is true, you know? 

At the end of the day, it was a gig, and over 

and done with in an hour and a quarter, it all 

leads up to that time and then it’s done, it’s 

quite a strange job we do really! 

Well, you didn’t seem nervous at all, you 

seemed very cool and professional so good 

job, and really nice to talk to you!

Dress Happy, Be Happy…? 

How often do you wake up and just get dressed 

without much thought as to what you will wear? 

Have you noticed, when you are feeling a bit low 

you reach for the same old comfy clothing? Turns 

out, our choice of clothing is strongly affected by 

our mood, and our clothing can even influence 

how we are feeling! 

A study carried out by Professor Karen Pine 

at the University of Herefordshire found what 

a woman chooses too wear can be heavily 

dependent on her emotional state. The study of 

100 women revealed 50% would wear jeans when 

feeling depressed, only one third said they would 

wear jeans when feeling happy! 57% said they 

would wear a baggy top when feeling depressed 

and only 2% would wear one if feeling happy. 

The study also revealed how we are more likely 

to wear a favourite dress when happy compared 

with when depressed, a huge 62% wore a 

favourite dress when happy compared with only 

6% when depressed. Interestingly, the woman in 

the study also felt they could alter their mood by 

changing what they wore. 

SO WHAT DOES THIS TELL US?… 

This study not only shows the influence clothing 

can have on our mood, but also how it can alter 

our mood too. So if you are feeling a bit low, 

don’t reach for the baggy jumper and jeans, 

dig out your favourite dress or outfit and notice 

how difference you feel by doing so. The same 

principal can be applied to all sorts of scenarios, 

if you have an important meeting coming up or 

interview, wear something you know will make 

you feel confident, because not only will it boost 

your mood it will radiate out to how good you 

feel to those around you. 

TRY IT AND SEE... 

So in the mornings, especially as autumn looms 

around the corner and the summer holidays start 

to feel like a long time ago, dress how you want 

to feel, rather than how you feel. Dig out that 

favourite outfit when you are feeling a little low 

and remember we are all different, so if to you 

jeans mean ‘happy’, go for it. feel to those 

around you.

LORD HIGH ADMIRAL 

OF THE WASH 

The Lord High Admiral of the Wash is an ancient hereditary post 

that has been of British Isles history since medieval times. The 

title of Lord High Admiral was charged with protecting the realm 

from an attack on that part of East Anglia. The post was granted 

to the L’Estrange family after the Norman Conquest. 

The title was actually removed during the 1700s when the 

position for defending the coast was passed on to the Royal 

Navy. The descendants of the title, the L’Estrange family of 

Hunstanton still continue to claim the title although without any 

perks and inherited the Admiralty through his mother’s line. He 

does he control all shipping and smuggling along the Wash, as 

the L’E strange family were originally commanded to do in the 

13th century. 

A village sign at Old Hunstanton depicts Hunstanton Hall that 

used to belong to the L’Estrange family, and Roger L’Estrange 

on his horse. It was Roger who built the Hall and in the village 

sign he is seen holding a long spear. The head of the L’Estrange 

family In the right-hand spandrel of the sign below the main 

picture is the coat of arms of the L’Estrange family. The sign was 

made by Harry Carter of Swaffham and was presented by the 

Old Hunstanton Women’s Institute who built it to commemorate 

the Queen’s Silver Jubilee Year. 

Roger L’Estrange was the youngest son of Sir Hamon L’Estrange. 

Sir Hamon served as Sheriff and Deputy Lieutenant of Norfolk, 

and was allied to the Dukes of Norfolk, serving as a Member of 

Parliament in a seat under their control. Both father and son 

fought the Royalist side in the English Civil War. In 1643, the two 

led a failed conspiracy whose purpose was place the town of 

Lynn under control of the king. Roger L’Estrange’s subsequent 

activities as a Royalist conspirator lead to him spending time in 

prison, under sentence of death. 

Granted a special pardon by Oliver 

Cromwell, Roger maintained a 

low profile. By 1659, however, he 

was making his presence as a 

Royalist known. He printed several 

pamphlets supporting a return of 

Charles II and attacked various 

Commonwealth writers, including 

John Milton in a pamphlet titled No 

Blinde (original spelling) Guides. 

As a Licenser and Surveyor, 

L’Estrange was charged with the 

prevention of the publication of 

dissenting writings, and authorized 

to search the premises of printers 

and booksellers on the merest 

suspicion of dissension 

In 1685, L’Estrange was knighted 

by King James II and became 

a member of parliament for 

Winchester from 1685 to 1689. 

However, though a fierce Tory and 

High Anglican, he opposed the 

religious toleration of Catholics, 

which put him at odds with the 

policy of the new king. 

After the revolution in favor of 

William III, he lost all his offices 

and was arrested several times on 

suspicion of involvement in plots 

against him.

Local music fundraiser - Saturday 29th July

CIRCUS 

SLV. Global provide psychology students and graduates 

from around the world the opportunity to gain valuable, 

practical experience in the mental health sector whilst 

being immersed in a unique and exciting culture. 

In spite of the rain, we had an amazing 

turnout for our daughter Molly’s fundraiser. 

Our aim was to raise enough money to fund 

a placement with SLV. Global to work in the 

mental health sector in Sri Lanka. 

The entertainment was nothing short of amazing. It 

all started with an acoustic swing duo called Helen 

and Alan who played whilst canapés (by Elm Valley 

Foods & Julie and Bethany Foster) and fizz were 

served. Kit Temple, from ‘Kit’s Kitchen’, provided 

chicken or vegetarian Thai Curry and Bijou Wines 

provided the wine. 

We were blessed with the most amazing virtuoso 

performance from Rebecadecca Doo on her 

electric violin, followed by Ella Sopp, EZ Rollers 

and Alex Banks who brought the house down with 

an amazing drum and bass set.

If that wasn’t enough, we had Jodie “ Topsy “ 

Harris with her exquisite voice, accompanied 

briefly by Finn Peall (unannounced) doing a 

very funny parody of a Christina Aguilera. 

The rest of the evening was in the very good 

hands of DJ Barry Campbell, who played 

South American music. 

Whilst all the above was underway, we 

had Suzanne Arnold the Storyweaver and 

Samanda Ford Psychic Medium doing what 

they do best. 

The rain did not stop our hardcore guests 

dancing through the night. 

Finally, to end such an amazing day, we had 

the fire-starter William Peall, who set off a 

ridiculously over the top Fireworks display! 

The next morning, (as you can see from the 

pics), we had The Mexican Circus, Colectivo 

Embreve, perform their very skilful and 

evocative set, as it was too dangerous to 

perform in the rain. Thank you to Sea 

Change Arts for finding them for us. 

It was a rather unusual fundraiser, you could 

say we gave Latitude a run for their money, 

but we raised the funds for Molly. 

We must thank the following people for making the 

whole thing possible. William Peall, (he underpinned 

the event). To everyone who provided prizes for Raffle, 

served food and managed the bar (Scott Nathan), 

helped building stage (provided by Nicolas Garrod of 

Scenic Projects) and providing Marquees, tents, tables 

etc… to Corey Payne for all his digging skills, you are 

all amazing thank you, not forgetting Tylar on security.

Nestled amongst the fisherman 

huts, Walberswick Beach Campsite 

offers a unique opportunity to 

camp right next to the sea! 

If you are looking for a little serenity, this 

campsite provides a peaceful escape for all of 

the family. I popped along to pitch up a tent for 

the night, to experience just that, along with my 

partner Sam, and of course, our Norfolk terrier 

Archie, who was more than happy to join in! 

With just 16 tent pitches, getting a space at this 

campsite feels quite special indeed. It is worth 

noting to book up early! 

On this occasion Sam was joining me after work, 

so it was up to Archie and I to put up the tent 

and build our fortress for the evening. After 

finding our pitch, I collected everything one 

needs for a camping trip from the secure car park 

near by. With the use of the campsites handy 

wheelbarrow, we were ready to assemble the tent. 

As I fort a breeze of coastal wind, (and by that I 

mean me flying around everywhere trying to get 

the tent pegged into the ground), what could 

have been a slightly stressful 15 minutes was 

quickly soothed by the sound of lapping waves in 

the background. 

It suddenly dawned on me where I was and how 

close the camp was to the beach. So without 

another thought I took Archie by the lead and we 

strolled up past the reeds and onto the beach. 

As Sam arrived approximately an hour later, I 

could tell by the expression on his face he was 

amazed at just how close to the beach we were. 

Once settled, it was time to think about dinner. 

It would have been amazing to cook on site,

however, we weren’t quite as well equipped as our fellow 

neighbours who were taking great delight in creating rustic 

fire pit cooked meals with their families

We decided to take a walk up to one of our favourite 

locals The Bell Inn. The great thing about being in a small 

village is that everything is in walking distance. You can 

also visit The Anchor, or you may like to drive up the coast 

to Dunwich or Southwold. After a couple of hours, fed and 

watered, we were excited to stroll back along the beach in 

torchlight to our cosy little tent. 

There are near by toilet facilities, but note, this is a wild 

campsite, so apart from a fresh water tap you are pretty 

much left to your own devices. 

We tucked ourselves into bed, (along with Archie who 

decided to sleep right in the middle), and fell asleep to 

the sound of the sea. As we rose in the morning, we were 

kindly brought some fresh pastries from the campsite staff 

before packing up and heading back home... back to reality.

Knees 

• 

Pretty and simple... 

If you’ve never had a Bee’s Knees Cocktail, 

you’re missing out. It’s a gin based and 

it’s really easy to make at home with 

only three ingredients. 

Method 

1. Combine all ingredients in a cocktail 

shaker with ice. 

2. Shake and strain into a 

chilled martini glass. 

3. Garnish with lavender sprig. 

Ingredients 

• 2 ounces gin 

• ¾ ounce honey syrup (or lavender 

honey syrup) 

• ¾ ounce fresh squeezed lemon 

• Sprig of lavender for garnish

Oakfired at Royal 

Oak, Beccles… 

The Royal Oak has been serving the local 

community for many years now and dates back to 

1879, previously known as the ‘Oak’. 

‘Oakfired at Royal Oak’, with the intention of 

serving authentic pizzas to hungry mouths across 

Beccles and beyond. 

Although it has only been open for a short time, 

Oakfired has the potential to be up there with the 

best of them. 

The Bounce team were invited along to find out 

what makes Oakfired so special… 

“Places like Domino’s and Papa John’s have their 

place, for sure, but there’s nothing like the real 

deal. This pizza pub whips up an impressive line 

of pizzas with thin, robustly flavoured bases and 

fresh toppings. 

With new owners, it has been transformed and 

whilst still very much a pub, it is now known as

open kitchen, with a fiery orange glow emanating 

from its mouth.

the 900-degree oven, pulling out crisp, blistered 

pizzas. 

Cut, stacked wood fills large tubs surrounding 

it, playing a textural design role, whilst other 

features include a marbled kitchen top and 

exposed brickwork from the original pub in areas 

of the bar. 

We were here for the pizza, of course, but there’s 

more to the menu, including tasty starters, freshly 

prepared salads and mouth-watering homemade 

desserts, but I will get to that in a second. 

Owners Paul Williams and Paul Jackson have 

been working on the joint venture for several 

months. Whilst Paul Williams makes a superb 

front of house maitre d’, Paul Jackson is at the

these authentic pizzas? 

“Taking the pizza oven out of the 

equation, the flour’s gluten content 

is lower than all-purpose flour, and 

is left for hours to form, the 

key to the chewy, crisp Neapolitan 

pizza crust.”

The aromas of the pizzas moving swiftly in 

and out of the oven wafted over towards us, 

increasing the anticipation for what was to 

come. 

Pizza options here are simple and very 

traditional Italian combinations that include 

Margherita, Italian, and even a ‘Create Your 

Own’ for the picky ones amongst us! 

To start, we ordered some Mozzarella Garlic 

Bread to share, which came in a pizza style, 

merely teasing us by giving us a sample of the 

incredible dough, along with the Artichoke 

and Gorgonzola salad. 

It was a great way to ease into the meal and 

to enjoy the full dining experience, whilst 

being entertained by the busy kitchen station, 

sipping on a glass of red. 

The house wine options are pretty decent, 

however, if you want a little treat, we would 

recommend the Spanish Chianti on the 

wine list. 

I decided on the Italian (minus the Anchovies) 

and my ‘picky’ partner choose his own of 

Mozzarella, Goats Cheese, Mushrooms and 

Olives. 

The tomato sauce had the brightness of fresh 

Tomatoes, and it perfectly accompanied the 

melty Mozzarella and anise notes of the basil, 

which garnished the tops. 

The crust had some nice black spots on the 

underside and had a good depth of flavour. 

One thing is for certain - this pizza tastes 

authentic.

Onto dessert, you can’t beat homemade! 

Whilst my partner eyed up the Brownie, I 

selected the Lemon Tiramisu, made with 

Fresh Lemon. 

Both desserts lasted less than two minutes 

and after two pizzas, in my book that’s a 

good compliment! 

While the dining room was packed on a 

Friday night, service was attentive and 

smooth, and we felt we’d been whisked 

away to Italy for the evening. You can even 

eat alfresco at the front or back.

• Spread the yoghurt mix on the top of the 

quails and leave to marinate for a minimum 

of 4 hours. 

• Reduce the chicken stock by a third and 

keep aside. 

• Dice the potatoes into 2cm cubes and 

roast them in a hot oven, season to taste. 

Then cut the tomatoes into two and roast 

them too. 

Ingredients for 4 people 

• Fresh Boneless quail 4 each 

• Plain yoghurt 

100g 

• Olive oil 

2 tbsp. 

• Garlic 

1 clove 

• Small potatoes 

300 g 

• Small tomatoes on vine 1 bunch 

• Fresh spinach 

300 g 

• Courgette strips 

a few 

• Fresh Rosemary 

few sprigs 

• Fresh thyme 

few sprigs 

• Fresh lemon (zest) 1 each 

• Chicken jus or stock 400ml 

• Seasoning 

Method 

• Place the boneless quail skin down on a 

plate and season well with salt and white 

ground pepper. 

• Mix the plain yoghurt with the chopped 

rosemary, chopped thyme, lemon zest, 

• Cook the spinach in advance in a hot pan 

with a bit of oil, squeeze out the excess of 

water, season well and make some portions 

of 50g approx. 

• On a hot top grill on the stove, place 

the quail flat skin down and cook for two 

minutes, then cover with a tin foil and cook 

for a further 4 to 5 minutes. 

• To dress the plate, place the roasted 

potatoes and tomato in the middle with 

the spinach. Place the quail on top of the 

vegetables and pour some hot chicken jus 

on top. 

• Garnish with some fresh thyme, lemon 

zest and a few chips of cooked fried 

courgette strip.

So, why think about Christmas so early? 

It may seem early to most of you but this is now 

peak booking season for us with the Christmas 

events, we had so many people that we couldn’t get 

onto parties last year that they are not taking the 

chance this year! We already have lots of bookings 

in for this Christmas with some of the themed party 

nights only having limited availability left already! 

We get large groups of friends and local companies 

who return to party with us year on year and take 

advantage of the early booking discounts that we 

offer. 

What makes Christmas at the Bull Inn 

different? 

Christmas is such a fun time of year at The Bull 

Inn, the whole team look forwards to it from the 

moment the previous years’ hectic schedule comes 

to a close in early January. Each year we have a 

theme for all of the Christmas festivities and this 

year it is “ROCKING AROUND THE CHRISTMAS 

TREE”. The team are what makes the difference 

between a standard run of the mill Christmas party 

and a party at The Bull Inn – they are always first 

on the dance floor and ready and eager to get the 

party started. 

Where do we party at The Bull? 

We transfer the entire courtyard with the most 

amazing fully lined marquee which is attached to 

the building so no going outside. The marquee is 

heated, carpeted and looks simply AMAZING as a 

party space. It has its own bar and of course the 

dance floor so you can cut those Christmas party 

shapes once the music gets going. 

What has been your highlight over all of 

the Christmases you’ve done? 

Christmas is such a magical time filled with fun and 

festivities with twists and turns along the way and 

each year just gets busier and busier with more 

fun filled events added in. The number of repeat 

bookings that we get show that each year is fresh 

and fun. 

What is on the agenda this 

Christmas? When do all of the 

festivities start? 

The festive period this year is “Rocking around 

the Christmas Tree - dancing through the 

decades”. The first events on this year’s festive 

calendar are the Murder Mystery dinners on 

Friday 17th & Saturday 18th November. Then 

we have a new addition to the programme on 

Friday 1st December we have “ The Big Einter 

ball - in aid of SULSAR”. The Winter Ball ball 

is closely followed by one of our legendary 

tribute nights – Saturday 2nd December we 

are staging an 80’s party with the amazing 

Munch band live on stage in Barton Mills. By 

this time we are now well into the Christmas 

season when the ROCKING AROUND THE 

CHRISTMAS TREE themed parties take place 

on every Friday / Saturday through December.

Wines 

from Volcanic soils 

To live in the vicinity of volcanos is regarded as dangerous, although 

they have been around for about 4.5 billion years. 

BY ‘WINE BUFF’ FRED FISHER 

The eruptions with ash and lava 

have led to the formation of much 

of the soils, which provide a base 

for growing vines. 

Other crops are difficult to grow in such an 

environment. It is thus surprising to find that many 

vines grown on soil that was formed from volcanic 

action, however long ago, are surprisingly good. 

Soils that are derived from volcanic material, such 

as ash and lava can easily be identified e.g granite. 

The ash that is ejected by a volcano or through a 

fissure in the earth’s surface can spread far and 

wide. Water flow down mountains and through 

rivers, can spread even more material. 

There are broadly 3 types of rock: 

IGNEOUS - Which is formed from cooled and 

solidified lava or magma. 

SEDIMENTARY - Formed from weathered, 

eroded and precipitated particles deposited on 

land or under water, and after pressure forming 

limestone, sandstone, mudstone etc. 

METAMORPHIC -Formed from other rocks by 

heat and pressure.

The soils coming from all this activity are utilised 

to a great extent as it is clear that the poorer the 

soil for growing most other crops, is better for 

Vine growing. 

A selection of some famous wine regions and 

their volcanic basis: 

SOAVE North - East Italy 

A dry white wine from Veneto made mostly 

from the Garganega grape. The soil is composed 

mostly of basalt, an igneous rock, and limestone, 

formed over 50 million years ago. 

NAPA and SONOMA Valleys 

California 

Situated in northern California along 

the Ring Of Fire. This is a belt of 

volcanic and earthquake activity 

stretching from Argentina, to 

New Zealand and to California. 

Subject to many earthquakes 

and volcanic action. The last 

active volcanoes were 160 

million years ago, but there are 

now varied and complex soils 

coming from complex geology. 

The action of tectonic plates has led to 

even more complexity and concerns for more 

earthquake possibilities. Much of this has affected 

the vineyards of Napa and Sonoma Valleys. The 

wines nonetheless from these areas are world 

class. 

SANTORINI - Greece 

Santorini is a volcanic peak formed millions of 

years ago but the population have been making 

wine for 3,700 years. Akrotiri was a Bronze age 

city on Santorini, preserved under a layer of 

ash from eruptions in 17th century BC. The wine 

here is unique in that it is still an area of volcanic 

activity but ironically the resultant soils are 

suitable for making high quality wines. 

MADEIRA - Portugal 

Volcanic activity ended in Madeira about 

6,500 years ago but trapped gases still cause 

movement and depressions, particularly in road 

surfaces. Heavy weathering of Madeira Basalt 

rock has strangely led to some fertile soil. There 

is an extensive system of irrigation called levadas 

to regulate water flow. The wine produced here 

is high in acidity due to the volcanic soil. This 

leads to slow ripening. The grape varieties which 

are have adapted to this environment able to 

cope with this are mainly 4 main, Sercial, 

the driest, Verdleho, medium dry, Boal, 

moderately sweet and Malvasia, the 

sweetest. A heating process called 

estufagem is used to create Madeira, 

and it is also fortified with Brandy. 

CAMPANIA –Italy 

This area has a large number of 

active, dormant and extinct Volcanos. 

Mount Vesuvious is the most famous and 

dominates the Bay of Naples. It is predictable 

in that there were eruptions in 79AD, 472AD, 

1631AD, 1906Ad and 1944.It is expected to do so 

in about 500 years. 

Many other Volcanos exist in the region, Campi 

Flegrei and Ischia. 

The soils in the whole region have been affected 

by raining volcanic material so it is very much an 

area affected by volcanic action. 

Conclusions... 

Wine made from grapes grown in volcanic soil can be unique in that come from similar soils which 

were affected by volcanic action. There are numerous countries around the world with similar 

conditions, Hungary, Germany, Alsace, Chile, Sicily, Oregon, the list is almost endless. Anywhere there 

are large mountain ranges have soils that were formed originally by Earth’s eruptions and could with 

the right conditions support vine growing.

Chickpea 

fritters... 

Mix up a pancake-style 

batter to make little griddle 

cakes with storecupboard 

ingredients, then serve with a 

contrasting green salad. 

1. Blitz half the can of chickpeas in 

a food processor until smooth. With 

the motor running, add the eggs 

and milk, then sift in the flour and 

baking powder. Process until you 

have a lump-free batter. Fold in the 

whole chickpeas and chopped spring 

onions. Season and add half the 

harissa. 

2. Heat half the oil and fry the 

courgettes in batches until golden; 

keep warm in a low oven. Heat a little 

more oil and cook 2 tbsp-portions of 

the fritter mix in batches for a couple 

of mins, until you see bubbles appear, 

then flip over and cook the other side 

until golden. Keep warm with the 

courgettes. 

Ingredients 

• 400g can chickpea, drained & rinsed 

• 2 large eggs 

• 3 tbsp full-fat milk 

• 4 tbsp plain flour 

• 1 tsp baking powder 

• bunch spring onions, ½ chopped, ½ sliced 

lengthways 

• 4 tsp harissa 

• 3 tbsp sunflower oil 

• 2 courgettes, thinly sliced 

• 200g pack feta cheese, crumbled 

• small bunch mint leaves 

• 150ml pot natural yogurt, to serve 

3. Toss together the courgettes, feta, 

mint and sliced spring onions. Divide 

between 4 plates and top each with 2 

fritters and a dollop of yogurt swirled 

with the remaining harissa.

family, a themed buffet will do 

it. Choices, choices! 

1) Mexican Madness 

One of my favourite things to order when eating out is 

a sharing platter- whatever cuisine! But a nacho sharing 

platter always goes down well, so why not recreate 

this. Use your favourite tortillas, whatever cheese 

you like and experiment with some extra toppings. 

Don’t forget to go all out with the dips - We’re talking 

guacamole, salsa and sour cream. 

You could make your own or pick up a selection from 

the supermarket! The main course for a Mexican 

feast has to be a signature chilli. Let everybody help 

themselves and provide options of tacos, wraps or rice. 

2) American Appetites 

Bring the American diner to your kitchen with burgers, 

hotdogs and chicken strips. The classic sides would 

include fries and onion rings! Make sure you have 

a supply of BBQ sauce, mayonnaise, ketchup and 

American mustard for every taste bud. Make way for

dessert here by picking 

up those colourful glazed 

doughnuts from the bakery 

isle- or opt for ice cream 

and jelly! 

3) Choose Chinese 

crackers! 

Don’t we all chose the 

mixed starter when it 

comes to Chinese? Luckily 

supermarkets have this 

covered and provide those 

perfect ready prepared 

selection boxes- from 

prawn toasts to spring rolls, 

sorted. You can always 

put together your own 

noodle dish or again pick 

up your favourites from 

the supermarket, creating 

a variety on the table. 

Remember the prawn 

5) Italian Influence 

I’m thinking pizza hut buffet style here. 

Set up the home spread with a classic 

margarita, a meaty favourite and a 

Hawaiian delight to cover all bases. Pasta 

sides and your very own salad bar can top 

it all off. Why not some breadsticks for an 

extra touch! 

4) Indian Options 

Poppadoms’! Mango chutney, mint raita 

and lime pickle. What more do we want? 

Everyone has their go to curry, so you 

could make this on a large scale for all to 

enjoy. Like the Chinese selection boxes, 

supermarkets sell Indian versions too! 

Onion bhajis, samosas and more. A naan 

bread too please. 

The perfect way to round off the weekend.

summer at Beccles Lido with over 

30,000 swimmers by mid-August.

palette that contains three neutral, shimmer

also try purchasing one which has a brown/black

USE MULTI-PURPOSE PRODUCTS... 

The perfect way to downsize your travel beauty 

bag is to either wear less makeup products or 

use multi-purpose ones. Some brands offer 

chubby makeup sticks which you can use as a 

blush, eyeshadow and a lipstick. Sort through 

your makeup bag before your flight to work 

out if there’s anything you could multi-use and 

anything that you don’t really need. 

USE ILLUMINATING CREAM PRODUCTS... 

Liquid illuminators are a great essential, as they 

give you a dewy look that compliments your tan 

perfectly. Pack a cappuccino-coloured illuminator, 

as this can be used as a bronzer, highlighter and 

eye shadow, which will make your beauty bag a 

lot lighter. You’re also a lot less likely to sweat off 

creamy make up products as well, which makes 

them even more of a bonus when out in the heat. 

USE TRAVEL-SIZED MAKEUP BRUSHES... 

Instead of packing all your makeup brushes in 

your, use a couple of travel-sized brushes that you 

can use with multiple products. Pack a travel-sized 

foundation or stippling brush for your foundation 

and liquid illuminator, a powder/blush brush for 

bronzer/powder and one eyeshadow brush for 

eye makeup. If you prefer using blending sponges 

to brushes for foundation, be sure to pack one as 

you can use these for multiple products and they 

weigh far less than a brush. 

SWAP CLEANSER AND TONER FOR 

CLEANSING MAKEUP WIPES...

After 17 years trading in Norfolk, 

Urban Jungle Plant Nursery and 

Café flings its doors open for the 

first time on 5th August at its 

new sister location in Beccles, 

Suffolk. 

Urban Jungle is a unique plant shopping 

experience, very different to other garden centres, 

with a beautiful, quirky and inspirational shop 

floor, dominated by stunning plants. Large garden 

centres may have diversified from their core but 

at Urban Jungle it really is the plants that do the 

talking. 

Owner, Liz Browne says, “Business has boomed 

in the last few years and I put this down to the 

sheer hard work and determination of our team, 

their passion for plants, and 

great advice to customers 

so they buy the right plants 

for their gardens. Nearly all 

our customers come from 

referrals so they must be 

happy with our service.”

LATE SUMMER PROGRESSES

Kates Top Tip : Plan ahead - Buy springflowering 

bedding plants and buy or order 

spring-flowering bulbs. 

September is generally a cooler, 

gustier month than August and the 

days are noticeably shorter. 

While there’s not as much to do in the ornamental 

garden at this time of the year, if you have a fruit or 

vegetable patch, you’ll be busy reaping the rewards 

of harvest. 

Propagation 

Take cuttings of tender perennials, such as 

Pelargonium and Osteospermum. 

These plants often do better grown from new 

cuttings each year. If you do not have a greenhouse, 

then use a light windowsill to grow them on. 

It’s also time to get out and start planting springflowering 

bulbs for next year and you can collect 

seeds for next summer’s colour too. Make the most 

of the remaining warmth while you can! 

Continue collecting and storing seed from perennials 

still forming seed heads. Bring inside any tender 

perennials, such as Fuchsia, Gazania, Lantana and 

Abutilon, before frosts cause damage.

In my seemingly never ending 

quest to turn dadbod into 

radbod Action Man has turned to 

the current buzzword in fitness... 

CrossFit. 

The exercise regime was only officially 

trademarked in 2000, but now boasts 

over 13,000 worldwide locations 

and its own global competition the 

‘CrossFit Games’, which has a global 

television coverage and of which its 

champions can claim the title “fittest 

on earth”... (oh a just a little cheque for 

$250,000)! 

For those who are looking to take their fitness 

to the next level, or to seriously kick start a new 

regime, then CrossFit is for you. Don’t let the 

muscle bound, Reebok clad, kettle bell chucking 

beasts deter you for there is a very strong 

emphasis on team spirit. 

The workout of the day (aka WOD), will be 

a mixture of high intensity interval training, 

combing aerobic exercises, gymnastics and 

Olympic weightlifting, to push the body to 

its absolute limits of strength, endurance and 

flexibility. The exercises, weights and resistances 

are tailored to your abilities so despite a lack of 

experience you won’t feel left behind and it won’t 

be too long before you learn the lingo, and know 

your squat from your lunge and your swing from 

your snatch. The hour long session comprises 

of a warmup, a training segment (preparing you 

and setting limits for what’s to come), the WOD 

followed by a warm down and stretch. Each

WOD is different so there is no risk of a boring 

monotonous solo gym session, whilst also within 

your group / class you’ll be individually tasked 

to complete the required exercises within a set 

repetition or time limit. The group environment 

really encourages you whilst also delivering a 

subconscious competitive element all of which 

helps deliver your best possible workout. 

At your CrossFit affiliated gym, (aka Box), your 

not just a member your part of a family, a clan, 

all on the same path, all pulling in the same 

direction. This sense of belonging, being part of 

a bigger picture really helps strive to work harder 

which can only help you meet and exceed your 

fitness goals. 

Having undertaken half a dozen WODs now, I 

have gone through a vast array of emotions and 

feelings. From ‘I want to throw up’ to ‘that felt 

great’, into ‘I cant feel my legs’ and then ‘I want 

more!’ In conclusion, my fitness levels need some 

serious work but CrossFit is the answer! 

So I aim to continue my CrossFit training at my 

local Box GFP, (Grange Fitness & Performance), 

in Martlesham and who knows maybe next year 

Action Man will be gracing the CrossFit Games 

stage soon (maybe). GFP run by Matt Brennan 

and his great team offer an excellent CrossFit 

and general health & fitness service in a fun & 

friendly environment. If anyone is considering 

trying CrossFit then I can highly recommend 

their services and I would be happy to make an 

introduction. For those further a field or if you’d

Citiglow is a solo artist, previously 

known as NIK LOWE. 

Nik started performing live locally 

playing the acoustic circuits in 

Cambridge, Norwich and Ipswich 

area, and for last 2 years extensively 

in London. In 2012 Nik was a finalist in 

National final of Live & Unsigned playing 

at the O2, and voted in top 5 acoustic 

acts by the Live & Unsigned judges. 

He recently was the main support act 

for Gareth Gates on his 2012 summer 

tour, and was a supporting artist 

At Abbeyfest in Bury St Edmunds, 

supporting Odyssey, Heat Wave and 

Gwen Dickey. Last April (2013) Nik 

supported Jack Bruce (basist from 

Cream) on the Eastern leg of his 2013 

tour! 

In 2015 he opened for Toploader at 

Jimmy’s Farm & Paul Carrack at the 

Apex. His music has also been played on 

BBC Radio 6 Music in summer of 2014. 

He supported GO WEST this December 

2016, and ROY WOOD from ELO. 

With the name change and recent 

signing to TNS Managment, Citiglow 

is working on a release with a 10 track 

album recorded in Manchester at a 

Mercury Prize winning studio, set to 

launch November 2017! 

Nik also had the privilege to play at 

AbbeyFest back in 2013 supporting - 

Chas & Dave, then went on to support 

Roger Chapman from the 70’s band 

Family at St Andrews Hall in Norwich. 

Nik was honored to have played at The 

stunning Natural History Museum in 

Kensington to start this year, Nik has 

recently supported Geno Washington!

MY DO’S AND DON’TS FOR TRIPS TO THE BEACH... 

As far as summers go, this one 

was a pretty good one. 

If you have been reading my column over the 

past few months, you’ll see I’ve stared in a photo 

shoot, modelled a new haircut and had plenty of 

time at the beach! 

Speaking of beaches, for those who travel to the 

coast regularly with your four legged friends, 

you’ll be pleased to know September see’s the 

dog ban on the beaches lift again! Woof! 

So I have some tips to keep your pooch on the 

straight and narrow. 

DOG BEACH DON’TS: 

• Don’t let your dogs go into areas on the beach 

where they’re not allowed. 

• Don’t let your dog out of your site. Not even 

once. Paying attention and being proactive will 

go a long way in protecting you and your dog. 

• Don’t forget to bring the lead, beach towels, 

fresh water, and doggie sunscreen (yes, you 

can actually get sunscreen specifically made 

for dogs). 

• Don’t leave a mess behind! Bring your own 

doggie poop bags and be diligent about 

cleaning up. 

DOG BEACH DO’S: 

• Do make sure your dog’s vaccinations are 

current and that he’s wearing the proper ID. 

Keep your vet’s number on hand just in case 

something happens. 

• Do set a time limit for your beach trip. A couple 

hours might be just the right amount of time 

at the beach, depending on your dog’s 

activity level. 

• Do bring toys and balls to throw and fetch. 

This is exactly why you are both there: to 

HAVE FUN!
