July is my absolute favorite month of the year! It’s my birthday<br />

and America’s birthday month! What could be better<br />

than family, friends, food, and fireworks?! Check out our<br />

Special Feature on National Holidays in July for a few more fun<br />

Our City Person this month is Rachel Saunders. A coal miner’s<br />

daughter from a small town, population less than 700. This<br />

highly decorated 22 year veteran of the Delray Beach Police<br />

Department is dedicated, compassionate, and very respected.<br />

in Delray Beach,” said Trish Jacobson, copresident<br />

of the organization. “All of the<br />

non-profits receiving grants are having a<br />

positive impact in our community.”<br />

The organizations that received grants,<br />

presented during the June meeting of the<br />

Delray Beach Chamber of Commerce’s<br />

Nonprofit Council were:<br />

sponsors two <strong>Atlantic</strong> high students attending<br />

the Hugh O’Brian Youth Leadership<br />

program.<br />

“Our club traces its roots back to Delray<br />

Beach’s early years and has been supporting<br />

community efforts ever since,”<br />

said JoAnn Haros, co-president. “We’re<br />

pleased to be able to continue the tradition<br />

by providing grants to these many<br />

organizations in Delray Beach.”<br />

Much of the money given back to the<br />

community by the club is raised during its<br />

annual fundraiser, Real Men Bake and Rock<br />

at the Sock Hop, which drew close to 20<br />

bakers and more than 150 guests this year.<br />

freezers and coolers to accommodate<br />

perishable items. In addition, there will<br />

be a culinary workforce training program<br />

The instructor, Joanne Sinchuk, is a bookseller<br />

with 20 years of experience in the<br />

book business. She will discuss the ins and<br />

outs of traditional publishing and how it<br />

benefits the first time author. This is a<br />

great program if you have imagination,<br />

curiosity about writing your first book, or<br />

just want to learn about the process with<br />

some fellow female friends. The class is<br />

held at 6:30 p.m. and is free for members<br />

love dogs, but the Dog Days are a little more difficult to bear.<br />

The Dog Days most often refer to the hot days of summer<br />

when dogs would lie around on the concrete panting, but,<br />

instead, it turns out that the dog days refer to the dog star, Sirius,<br />

and its position in the heavens. To the Greeks and Romans,<br />

the “dog days” occurred around the day with Sirius appeared to<br />

rise just before the sun, in late July. They called these days the<br />

hottest time of the year, which is a period that could bring fever<br />

or even a catastrophe. Whatever you believe in, July is hot, and<br />

I’ve got the fever for some cool cocktails. Some of my favorites<br />

places for cooling down are El Camino for their margaritas (all<br />

of them), Brule for The Lady Rules, City Oyster for white wine<br />

on tap (and blackened fish tacos of course), Blue Anchor for a<br />

pint - or three - and a nice spot in the shade, Caffe Luna Rosa for<br />

a Peroni and some beach-goer people watching, and Cut432 for<br />

some happy hour wine and appetizers. The <strong>Ave</strong>nue offers us<br />

so many ways to cool down during these dog days that we can<br />

pretend like they’re almost not here at all. Ha! – not quite, Florida,<br />

but can’t live without. While family nights can be<br />

him, the dog<br />

charges into the water to retrieve what<br />

first appears to be a wayward stick, but<br />

to her horror, turns out to be something<br />

much more sinister...<br />

The next morning, three women in<br />

and around London—Fatima, Thea, and<br />

Isabel—receive the text they had always<br />

hoped would NEVER come, from<br />

the fourth in their formerly inseparable<br />

clique, Kate, that says only, “I need you.”<br />

The four girls were best friends at<br />

Salten, a second rate boarding school<br />

set near the cliffs of the English Channel.<br />

Each different in their own way, the four<br />

became inseparable and were notorious<br />

for playing the Lying Game, telling lies at<br />

every turn to both fellow boarders and<br />

faculty, with varying states of serious<br />

and flippant nature that were disturbing<br />

enough to ensure that everyone steered<br />

clear of them. The myriad and complicated<br />

rules of the game are strict: no lying to<br />

each other—ever. Bail on the lie when it<br />

becomes clear it is about to be found out.<br />

But their little game had consequences,<br />

and the girls were all expelled in their<br />

final year of school under mysterious circumstances<br />

surrounding the death of the<br />

school’s eccentric art teacher, Ambrose<br />

(who also happens to be Kate’s father).<br />

U-2’s Triumphant<br />

Return to Miami<br />

U-2 came, saw and conquered when it<br />

played Miami’s Hard Rock Stadium June 11,<br />

<strong>2017</strong>. Really it was more of a lovefest in a<br />

most international of cities, with fans waving<br />

the flags of their nations.<br />

U-2 has come quite a way since its humble<br />

beginnings in Dublin, Ireland as teenagers<br />

in 1976 at Mount Temple Comprehensive<br />

School. They have since become one of the<br />

most popular and successful groups in the<br />

history of pop music. The 1987 album “Joshua<br />

Tree” was the work that launched them<br />

as international superstars. The US + Them<br />

tour is a 30th anniversary of that landmark<br />

album, which was played in its entirety. The<br />

concert began with one of their earliest hits,<br />

“Sunday Bloody Sunday,” with drummer<br />

Larry Mullen, Jr., seated on a satellite stage,<br />

pounding out the signature rhythm, joined<br />

by bassist Adam Clayton, guitarist The Edge<br />

and singer Bono on another smaller stage.<br />

With U-2 it is just not the music. It is their<br />

spectacular sound and light stage presentation.<br />

The group made good use of Hard Rock<br />

Stadium’s huge five story high definition<br />

digital video screens wider than the football<br />

field where the Miami Dolphins and University<br />

of Miami Hurricanes play.<br />

Singer Bono is known for his political<br />

and social activism, but in Miami it was all<br />

about love.<br />

“These are your songs now,” he declared.<br />

“Let them Sing to You.”<br />

And sing they did over the course of two<br />

hours with great hits such as “New Year’s<br />

Day,” “Pride (In the Name of Love),” “With<br />

Or Without You,” and lesser numbers such<br />

as “Bad,” “Red Hill Mining Town” and “One<br />

Tree Hill.”<br />

The Miami show proved why U-2 is one of<br />

the most successful musical acts of all time,<br />

with 170 million records sold, 22 Grammy<br />

Awards won and a 2005 placement in the<br />

Rock and Roll Hall of Fame. Bono returned<br />

the favor by calling Miami a “sexy city.”

Exploring Cutting Edge Treatments and Addressing Misconceptions<br />

A shocking 80 % of all Americans will experience low back<br />

pain at some point in their life. Its epidemic status continues<br />

to grow and sufferers seek the most cutting edge approaches to<br />

not only ensuring relief but also restoring function.<br />

Quite often individuals may also develop<br />

associated thigh or lower leg pain termed<br />

sciatica. The clinical term sciatica requires<br />

clarification. Sciatica simply means “pain<br />

in the leg.” It does not mean that the sciatic<br />

nerve has been “pinched.” In fact, the<br />

sciatic nerve is not involved in most cases<br />

of thigh or gluteal pain because it does not<br />

supply sensation from this area.<br />

What Is The Cause Of Sciatica?<br />

Sciatica can be caused by irritation or<br />

trauma to nerve roots within the spinal<br />

canal or to peripheral nerves outside of<br />

the canal anywhere from the pelvis to<br />

the lower leg. Space occupying lesions<br />

within the spinal canal such as a bone<br />

spur, disc herniation, congenitally narrow<br />

canal, infection, metastasis, or mass<br />

can be the causative agent. Outside of<br />

the canal we find the instigators to be a<br />

femur head fracture, incorrectly placed<br />

intra-muscular injection, fixation of the<br />

sacroiliac joint, and primary bone cancer<br />

of the pelvis.<br />

The two most common and least diagnosed<br />

causes are facet joint syndrome and<br />

piriformis contracture. Facet joints help<br />

to guide motion of the spine letting us<br />

bend forward and back and side to side.<br />

They also relieve some of the weight bearing<br />

burden of the rest of the spine. Quite<br />

often they are irritated due to an injury,<br />

arthritis, or misalignment. This irritation<br />

produces referred pain into the gluteal region<br />

and back of the thigh.<br />

Piriformis contracture occurs when the<br />

piriformis muscle tightens and shortens<br />

for a prolonged period of time compressing<br />

peripheral nerves that provide sensation<br />

from the gluteal region and thigh.<br />

The tightening can occur due to repetitive<br />

use such as is seen in runners and tennis<br />

players, injury, and misalignment of the<br />

pelvis. The pain pattern is typically represented<br />

as severe buttock pain and mild<br />

thigh pain.<br />

How Is It Diagnosed?<br />

A comprehensive neurological and<br />

orthopedic examination should be performed<br />

checking reflexes, strength, sensation,<br />

posture, gait, muscle tone, and<br />

evaluating pain production from different<br />

positions. X-rays help to narrow down<br />

the diagnosis. Further imaging studies<br />

such as MRI and CT should only be necessary<br />

after a lack of improvement from<br />

conservative treatment or a progression<br />

of symptoms.<br />

Cutting Edge, Conservative Treatments<br />

The treatment of sciatica is aimed at<br />

removing the cause and restoring proper<br />

function to the area. Cutting edge maneuvers<br />

such as eccentric fast stretching<br />

and cross cord inhibition focus on reducing<br />

tension in tightened and shortened<br />

muscle and joint capsules. Chiropractic<br />

manipulations focus on removing the<br />

irritation and restoring proper motion<br />

in the facet joints. Flexion-distraction<br />

therapy helps to reposition some of the<br />

herniated material and increase the overall<br />

health of the disc. Neurophysiologic<br />

rehabilitation of the part of the brain that<br />

directly controls the tone of the deep spinal<br />

muscles helps to create stability in<br />

the spine. Lastly, a proper nutritional assessment<br />

should be made to promote an<br />

anti-inflammatory diet.<br />

Is Botox ®<br />

Really Toxic?<br />

People often ask me why anyone would want to inject poison or<br />

bacteria into their face just to get rid of wrinkles? My response is<br />

that the 11 million Americans who use Botox ® may have done a bit of<br />

and learned that it is not poison and it is not a bacteria.<br />

So if it’s not poison, what is it?<br />

“Botox ® ” is one of the many trade names<br />

for the protein called botulinum toxin that<br />

is produced by the bacterium Clostridium<br />

botulinum. While many refer to this neuromodulator<br />

as “Botox ® ,” there are actually<br />

several companies that make nearly identical<br />

products. Like it or not, it’s similar to how<br />

“Kleenex” became the term for all paper tissues.<br />

We lump Dysport, Xeomin, and Myoblock<br />

together and refer to all of these drugs<br />

as “Botox ® .” In my opinion Dysport, Xeomin,<br />

and Myoblock which are also clostridium<br />

derived proteins did a better job at naming<br />

their products (they left off the “tox” part,<br />

which limits patient anxiety). They achieve<br />

the same results - erasing wrinkles and turning<br />

the clock back 5-10 years with a medical<br />

procedure that typically takes less than 10<br />

minutes in a dermatologist’s office.<br />

Botox ® , known by the FDA as onabotulinumtoxin<br />

A, is merely a protein molecule<br />

composed of a string of amino acids, just<br />

like proteins found in vegetables and meat<br />

sources. The confusion for some lies in the<br />

misconception that people are getting “botulism”<br />

injections. Botulism is a severe, life<br />

threatening infection (which often starts as<br />

food poisoning) caused by the bacteria Clostidium<br />

botulinum. In severe cases of botulism,<br />

patients can become “septic” or “toxic”<br />

and can go into shock. But this has nothing<br />

to do with the cosmetic usage of Botox ® .<br />

There are no bacteria being injected during a<br />

cosmetic Botox ® treatment and therefore patients<br />

don’t become toxic. The FDA approved<br />

medical protein is synthesized in a laboratory<br />

and bottled and sold in sterile vials. One dark<br />

caveat, there have been reports of “Botox ® ”<br />

being sold on the black market that actually<br />

does contain bacteria. People who have been<br />

injected with illegal black market products<br />

have developed serious health problems that<br />

required hospital care.<br />

Botox ® has been safely used in medicine<br />

for the last 34 years. Originally it was approved<br />

by the FDA to treat spasticity in the<br />

eye muscles and an ocular condition call<br />

strabismus, and it is approved for children<br />

ages 12 and over. In addition to cosmetic<br />

use, Botox ® is used to treat cervical dystonia,<br />

writer’s cramp, excessive sweating, achalasia<br />

(an esophagus problem), chronic pain,<br />

neuropathy, migraine headaches and overactive<br />

bladders.<br />

What about complications? Using Botox ®<br />

cosmetically is an art form that should be administered<br />

only by highly trained professionals.<br />

While you may see advertisements for<br />

Botox ® in salons, spas and even a home party,<br />

Botox ® is exclusively a medical procedure,<br />

with the potential to have adverse side effects<br />

if not injected with the correct technique. In<br />

trained hands, Botox ® complications are usually<br />

limited to minor things like bruising or<br />

the occasional asymmetric eyebrow. More serious<br />

issues have resulted from injections of<br />

excessive amounts in the neck (not a cosmetic<br />

application). In this scenario Botox ® can<br />

travel to the muscles that control swallowing<br />

and coughing, and aspiration of food and/or<br />

pneumonia can result. These complications<br />

are extremely rare, but they do underscore<br />

that Botox ® treatments are not like getting a<br />

massage or facial. It is a medical procedure<br />

which requires the controlled environment<br />

and professional care of a medical office. Respect<br />

for the procedure ensures patient safety<br />

and optimum privacy.<br />

Are genetics to blame<br />

for your dental health?<br />

Whether you love or hate your smile, your<br />

parents are not completely responsible!<br />

It’s easy to look at genetics as the cause<br />

for mostly everything about our bodies.<br />

They determine our looks, risk factors and<br />

predispositions for certain diseases, even<br />

our smiles. Researchers have recently been<br />

examining the link between poor oral health<br />

and the genes we receive from our parents<br />

to determine just how much of our smile is<br />

out of our hands. Turns out, even when considering<br />

genetics, we play the best and final<br />

role in determining our oral health!<br />

Cavities<br />

Some people have an increased risk for<br />

tooth decay simply because of their genetics.<br />

Researchers found that people whose<br />

parents had tooth decay were also more<br />

prone to cavities. This means that even if<br />

you eat well, brush at least twice a day and<br />

floss, you could still have a greater chance of<br />

developing cavities than someone who has<br />

worse oral care habits than you. For people<br />

with this genetic makeup, it is even that<br />

much more important to have great oral<br />

care habits and to see your dentist regularly<br />

because you have to monitor your smile<br />

a little bit harder than people who aren’t<br />

prone to cavities.<br />

Teeth Size and Shape<br />

Did you notice when you were growing up<br />

that a lot of your friends didn’t have braces?<br />

It turns out that teeth size and shape is the<br />

result of genetics. This means that if your<br />

parents had crooked, small or crowded teeth,<br />

there’s a good chance you’ll have to deal with<br />

these problems as well. You might have to<br />

wear Invisalign or braces as an adolescent<br />

or possibly in the future (if you haven’t remedied<br />

these issues yet), while your friends<br />

with different genes get to have a straight<br />

smile without any additional work.<br />

Gum Disease<br />

Nearly 50 percent of all Americans suffer<br />

from gum disease, and this part of the population<br />

may have been more likely to get the<br />

disease based on their genetic risk factors.<br />

People who have poor immune responses,<br />

or have a family history of autoimmune disorders,<br />

have a greater chance of developing<br />

gum disease. If you have a poor immune response<br />

(i.e. get sick often), you will have to<br />

more closely examine your oral health, so<br />

make sure your dental team is aware and<br />

that you’re visiting them often.<br />

Your Role<br />

While there are clearly genetic factors that<br />

influence your smile, you cannot completely<br />

blame genetics for your dental health. You<br />

play a huge factor in the health of your smile<br />

just by taking care of your teeth. Make sure<br />

to brush, floss, eat healthy, don’t use tobacco<br />

products, and see your hygienist and dentist<br />

for regularly scheduled cleanings, exams<br />

and X-rays.<br />

It is clear that genetics play a huge role<br />

in our dental health, but you, and the care<br />

you give your teeth, have greater influence<br />

on the overall health of your teeth and gums.<br />

By taking the very best care of your smile,<br />

and seeing your hygienist and dentist, you<br />

can overcome your less than desirable<br />

genes (thanks mom and dad!) and have a<br />

healthy, happy smile!<br />

I often hear people talk about wanting to be fit, healthy and in shape<br />

{ but then its shortly followed by excuses as to why they’re not.<br />

Not enough time in the day, no motivation,<br />

traveling…there will always be obstacles!<br />

Let this be the month where there<br />

are NO excuses. If bikini season and this<br />

hot Florida weather isn’t enough to motivate<br />

you to get in shape, then find something<br />

that will. Here are some tips to help<br />

overcome some of the “excuses” that I commonly<br />

hear.<br />

1. “I don’t have<br />

enough time”<br />

A one-hour workout<br />

is 4% of your<br />

day! Not so bad<br />

when you look at<br />

it in those terms.<br />

I find great success<br />

in working<br />

out early in the<br />

morning before<br />

my day starts.<br />

It’s one less<br />

task that I have<br />

to worry about<br />

and it feels great<br />

to check it off your<br />

list. If early morning workouts aren’t for<br />

you, maybe a mid-day workout would be<br />

best on your lunch break. Find what time<br />

works best for you and stick to it. It’s true<br />

when they say, “The only workout you’ll regret<br />

is the one that didn’t happen.”<br />

2. “I travel too much”<br />

These days little to no equipment is<br />

needed for a sufficient workout.<br />

If you’re traveling and the hotel doesn’t<br />

have a gym, workout in your hotel room or<br />

go for a quick run if it permits. I have written<br />

many “hotel” workouts for my clients<br />

while they are traveling for work or vacation.<br />

If you don’t have a personal trainer to<br />

write your workouts get creative and write<br />

your own. Think bodyweight exercisessquats,<br />

pushups, lunges, dips, etc. Make<br />

sure to get your workout in at the beginning<br />

of your day to ensure it gets done. As<br />

far as nutrition goes when you’re traveling,<br />

always pack healthy snacks with you such<br />

a fruit, nuts and protein powder. If you will<br />

be having an extended stay in a hotel, make<br />

sure there is a refrigerator in the room and<br />

hit the nearest grocery store to stock up on<br />

healthy snacks.<br />

3. “I have no motivation”<br />

Motivation comes from within, so dig<br />

deep and find it. Grab a friend who has<br />

like- minded fitness goals and workout<br />

together. Having someone to hold you accountable<br />

is very valuable. Have a dress<br />

you’d like to fit into? Hang it somewhere<br />

where you’ll see it everyday. Set small goals<br />

for yourself that are attainable. Once you<br />

reach these goals your motivation level<br />

will increase. However, it takes time to see<br />

results so be patient and don’t be so quick<br />

to throw in the towel. Give yourself at least<br />

8 weeks to see any noticeable changes.<br />

I challenge you to take the no excuse<br />

stand and push yourself. Get up an extra<br />

hour earlier and start your day off<br />

with a workout. On your next trip or<br />

vacation set a goal of getting sweaty<br />

a certain amount of days. Make it a<br />

point to eat healthy when traveling.<br />

Set a vision for yourself with<br />

small attainable goals along the<br />

way. Don’t let silly excuses and<br />

obstacles stand in your way of<br />

looking and feeling your best!<br />

where do they come from?<br />

A migraine is not a disease, it is a Syndrome,<br />

{ or collection of symptoms.<br />

• 10% of school-age children suffer from<br />

The Migraine Research Foundation describes<br />

a migraine as “an extremely debilitating<br />

collection of neurological symptoms<br />

that usually includes a severe recurring<br />

intense throbbing pain on one side of the<br />

head (although in 1/3 of migraine attacks,<br />

both sides are affected).<br />

Attacks last between 4 and 72 hours and<br />

are often accompanied by one or more of<br />

the following: visual disturbances, nausea,<br />

vomiting, dizziness, extreme sensitivity to<br />

sound, light, touch and smell, and tingling<br />

or numbness in the extremities or face.<br />

While most people consider migraines<br />

to be solely the result of changes in bloodflow<br />

between the head and neck, modern<br />

imaging has shown that circulation is only<br />

part of the problem. Changes in the nerves<br />

in, and around the head and neck are also<br />

essential in understanding migraines.<br />

Migraines are neurovascular headaches.<br />

Neuro=nerves. Vascular=blood vessels. Migraines<br />

involve both. What is the connection?<br />

Using the latest in imaging technology,<br />

physics, and biomechanics, a unique technique<br />

has been developed to detect, and correct,<br />

changes to the head and neck responsible<br />

for altered brain function and circulation.<br />

a. Evaluation<br />

Migraine sufferers undergo a non- invasive<br />

evaluation. The evaluation is designed<br />

to understand your unique story, determine<br />

the presence of an ASC (Atlas Subluxation<br />

Complex), and create a 3D image of<br />

your head and neck.<br />

b. Report and Initial Correction<br />

The results are discussed, and calculations<br />

are performed to determine a custom<br />

correction of the junction between<br />

the head and neck.The correction is an<br />

extremely light and gentle adjustment that<br />

feels much like a doctor taking someone’s<br />

pulse on the side of the neck. The correction<br />

is so gentle, it is safely performed on<br />

infants and babies. Composite 3D digital X-<br />

rays are retaken to ensure a proper correction<br />

has been performed. The individual<br />

often does not feel a change immediately<br />

following the adjustment.<br />

c. Follow-up<br />

The individual often returns during an<br />

initial 12-week period to assess for proper<br />

correction, monitor tissue healing, and<br />

measure the progress of the symptoms. Unlike<br />

drugs and medications, the upper cervical<br />

technique does not treat or suppress<br />

the symptoms associated with migraines.<br />

The upper cervical procedure is designed<br />

to improve the biomechanics of the housing<br />

around the brain and spinal cord: the<br />

head and neck. The improved biomechanics<br />

often improves the adaptability of the<br />

brain and spinal cord, and individuals often<br />

show dramatic improvement in their<br />

symptoms. We have seen over 85% improvement<br />

in the frequency and severity<br />

of migraine symptoms with many patients<br />

through upper cervical care. The clinic also<br />

works with integrative professionals including<br />

From the tattoo aficionado to those in the<br />

Similar to the tattoo shops of the old days,<br />

Jeff Kozan is an expert in the art of tattooing.<br />

For 15 years, he has been perfecting the craft,<br />

starting as an apprentice at Tatts Taylors, and<br />

then opened his first studio in Fort Lauderdale<br />

and now Vatican Tattoo in Delray Beach.<br />

“I started getting tattoos fairly young, and<br />

while in college I got an apprenticeship and<br />

I loved it. Not very many people are able to<br />

truly make a living being an artist. When<br />

you are creating an image for a tattoo, you<br />

really get to know someone; and I give 110 percent because I<br />

know it will be there forever,” said Jeff.<br />

Many of the people who walk through the door have become<br />

good friends with the owner and the other tattoo artists.<br />

“We build a strong relationship with our clientele. Our clients<br />

become our friends,” added Jeff.<br />

His reputation is well known for being a true professional and<br />

an expert in the field. His staff of tattoo artists has many years<br />

of experience and impressive portfolios. Dana Hauser focuses<br />

on portraits and realistic paintings. EV Talesman’s style is more<br />

traditional with strong color and bold outlines. While Ben Abernethy’s<br />

tattoos are more of a traditional American style. The<br />

current trends in tattooing range from the mandala tattoos to<br />

tattooing on the ribs, yet Japanese and American traditional tattoos<br />

have always remained timeless.<br />

“We each have our own personal style. No matter what comes<br />

in the door, we can take it. We offer very well rounded tattooing.<br />

I learned that it’s important to be able to master everything,” said<br />

the owner.<br />

Many would agree that Jeff and his expert artists are truly<br />

masters of their trade.<br />

“The first thing you think when seeing the work being done<br />

here is art. The next is I want a tattoo of that caliber with me forever.<br />

These people are brilliant, and you can’t go wrong presenting<br />

your precious canvas to their masterful hands. They don’t<br />

just do tattoos; they do body art. If however you just want art<br />

of 2013 at the age of 95.<br />

National Hot Dog Day is all about the appreciation<br />

of hotdogs. It began on Capitol Hill in<br />

1991, where a hot dog luncheon was served.<br />

The National Hot Dog and Sausage Council<br />

designated July as National Hot Dog Month<br />

and its date varies based on when the North<br />

American Meat Institute hosts its annual hot<br />

dog lunch on Capitol Hill. It is also believed<br />

that a German immigrant who owned the St.<br />

Louis Browns began to sell hot dogs at the<br />

games. From then on hot dogs have become a<br />

part of American baseball culture.<br />

Parents’ Day celebrates and recognizesthe<br />

role of parents in the rearing of children,<br />

National Tequila Day is committed to appreciating<br />

Tequila can be credited to the Aztecs<br />

who made a drink by fermenting the<br />

agave plant in the 16th century. True<br />

tequila wasn’t created until about the<br />

seventeenth century when the first license<br />

was granted to the Cuervo family.<br />

It seems that National Tequila Day began<br />

to emerge around the late 1990s. This<br />

holiday is celebrated every year on July 24.<br />

July 29<br />

National Lasagna Day is a day to really<br />

appreciate lasagna. The ingredients for<br />

this dish include layers of flat-shaped pasta,<br />

cheese, sauce and often beef, spinach<br />

or seafood. Believed to have originated in<br />

Naples, Italy, rumors have indicated that it<br />

may have come from the Greeks or the British.<br />

National Lasagna Day is observed on<br />

July 29th of every year.<br />

International Friendship Day is a day intended<br />

to build friendships and bridge the<br />

gaps between race, color, religion and other<br />

factors which keep humans from enjoying<br />

friendship with one another. Initiated by<br />

the United Nations in 2011, they wanted<br />

a day for us to inspire our youngsters,<br />

our future leaders to understand<br />

the importance of friendship between<br />

people, countries, race and<br />

cultures, and an understanding and<br />

respect for diversity.<br />

International Friendship Day was initially<br />

observed on July 30th, but now celebrated<br />

on the first Sunday of August.<br />

National Cheesecake Day is a day to appreciate<br />

cheesecake dessert. Believed to<br />

have originated in ancient Greece using<br />

basic ingredients such as cheese, flour<br />

and honey. With the introduction of eggs<br />

and baking times, cheesecakes have taken<br />

on a whole new concept. Whether baked<br />

or chilled, having a variety of fruits or fillings,<br />

cheesecakes have become a restaurant<br />

Needlepoint…. Yoga For The Mind TM<br />

{It’s Friday at 3:00 and Stitches by the Sea is buzzing as if it’s Christmas.<br />

Lynne Dorsey is standing near the door and needle pointer Lisa Kalish<br />

has come to wish owner Judi Alweil a Happy Birthday.<br />

“When I visit my mother I always come<br />

here. This is my home away from home. It’s<br />

warm and inviting and you never hear the<br />

word ‘no.’ They’re so accommodating,” said<br />

Kalish.<br />

That’s the way it is at Stitches by the Sea.<br />

Everyone comes to enjoy the creative expression<br />

of needlepoint, but the secondary<br />

perk is as uplifting as the finished product.<br />

“I’ve been needlepointing for the past 52<br />

years and I’ve been coming here since they<br />

opened,” said Dorsey, who is one of the most<br />

vocal cheerleaders of Stitches by the Sea.<br />

Dorsey considered needlepointing a lost<br />

art until recently. But her enthusiasm for the<br />

craft never waned. “Up until recently not a lot<br />

of people were doing needlepoint, but now<br />

younger people are getting into it. Needlepointing<br />

has changed, it’s not your grandmothers<br />

needlepoint. One reason is because<br />

you can choose from textured threads, ribbons,<br />

and assorted decorative stitches.”<br />

When it comes to safe ports in the storm,<br />

Stitches by the Sea is the most amiable and<br />

admirable. They greet customers like old<br />

friends (which many are) and they go out<br />

of their way to find canvases that fill their<br />

customers most coveted wish list.<br />

Cheryl Cohen is one of the benefactors.<br />

The retired New Yorker, who lives in South<br />

Florida, is obsessed with musical legends<br />

Prince and Michael Jackson. That’s why she<br />

turned to Judi and her daughter Karen Helfman<br />

to make her decorative dream come<br />

true. They had an artist create a custom<br />

painted canvas with the likeness of Prince<br />

and Michael Jackson. Cohen needlepointed<br />

the canvases that now hang on her living<br />

room wall. She also carries a tote with<br />

Prince and Jackson’s pictures needlepointed<br />

in the center.<br />

One of their most prolific needlepoint customers,<br />

Debra sends her daughter Alyssa (a<br />

law school student) needlepoint canvases and<br />

fibers to New York. Not only does the daughter<br />

enjoy stitching, but her grandmother and<br />

mother join her in this creative pursuit.<br />

If you ask Dorsey why she gravitates to<br />

Stitches by the Sea she’ll tell you. “When I<br />

walk through this store my mood is immediately<br />

uplifted. These are my sisters, it’s a true<br />

neighborhood store with heart. If they don’t<br />

have what I want they will readily order it for<br />

me. Not a lot of stores will do that for you.”<br />

Dorsey is right. There aren’t a lot of stores<br />

as personal and pampering as Stitches by<br />

the Sea. There are even fewer who would<br />

order lunch for a customer not feeling well<br />

(this happened to Dorsey).<br />

What makes everyone turn to this emporium<br />

of rich colors and psychedelic dreams<br />

is their ability to embellish a canvas with fibers<br />

of varying texture and yarns. Not only<br />

that, the designer canvases are true works<br />

of art. Judi and Karen design some canvases<br />

that are colorful tropical scenes, dogs and<br />

cat, whimsical characters and other compelling<br />

ethereal pictures to make tote bags,<br />

purses, wall art or pillows.<br />

There are dozens of ways to make needlepoint<br />

fit your lifestyle and décor needs. Just<br />

recently head needlepoint czar Carole Piccininni<br />

fell in love with a needlepoint handbag.<br />

While she was stitching away in the<br />

store others were drawn to the idea and are<br />

now making artful handbags or satchels in<br />

varying sizes and styles.<br />

They also introduced rattan straw bags<br />

with colorful ribbon trim and needlepoint<br />

design in the center. You can choose between<br />

hundreds of colors and fibers ranging<br />

from straw silk, wool and silk, cotton,<br />

metallic, and hand-dyed fibers. If you buy<br />

a canvas the folks at Stitches by the Sea<br />

will teach you how to make the creation<br />

of your dreams.<br />

“The business has changed a lot in the<br />

last year. Our clients are younger and the<br />

designers are creating whimsical canvases<br />

that appeal to millennials,” said Daughterin-Chief<br />

Karen.<br />

Karen helped create their Instagram pages<br />

that are filled with colorful canvases to<br />

decorate walls, sofas or your torso. Upbeat<br />

sayings abound like “Nap Queen” “Inhale<br />

Exhale,” “love” or pictures of your beloved<br />

pets. There’s even a colorful psychedelic VW<br />

Bus and dramatic fashionistas in full accessory<br />

garb.<br />

If you want to bring in your youngsters<br />

Karen will teach them how to needlepoint.<br />

Stitches by the Sea is truly a family affair. Judi’s<br />

husband Dick, a retired aerospace engineer,<br />

can be found stitching, working or smiling<br />

behind the front desk most days as well.<br />

There are zebras, roaring twenties, Haitian<br />

homelands, beach scenes, pink flamingos<br />

and cute kitty canvases to choose from.<br />

But what goes above and beyond the shelves<br />

of yarns, canvases and finished needlepoint<br />

products (3-D animals, handbags, wall<br />

hangings and eye glass cases) is the pure<br />

pleasure everyone gets from being there.<br />

“Coming here is a form of bonding. Our<br />

customers become our friends. They’re<br />

more than just customers, they are people<br />

we really care about,” adds Karen.<br />

{A Break for My Brain<br />

I’m often surprised at the level of self-care and re-nourishment I’ve come<br />

to need. A heavy patient load and a great family (Thank You God) are more<br />

than enough some days to wring me out like a rag if I’m not careful. So<br />

here’s a long time habit I’ve relied on. Mind-LESS-ness. I know that “mind-<br />

FULL-ness” is all the rage. Right up there with meditation and yoga.<br />

But this practice, while based on those ancient traditions is far simpler.<br />

Effortless<br />

It’s so simple you’ll be amazed. You don’t<br />

have to go to the gym. It’s restful beyond belief.<br />

Requires no tools, special equipment<br />

nor expensive courses or training. Can be<br />

done anywhere, anytime. And recent research,<br />

for example at UMASS on Mindfulness<br />

Based Stress Reduction, suggests practicing<br />

like this improves both our mental<br />

and physical health. You be the judge.<br />

Where is Anywhere<br />

My favorite way to accomplish mind-<br />

LESS-ness is by darkening my office, setting<br />

my iPhone timer for 20 minutes and<br />

turning on the ceiling fan. I then kick all<br />

the way back in my chair (yes, it’s a recliner)<br />

and allow my thoughts to vanish. And<br />

when they do, my body finds the deepest,<br />

most restful places I’ve ever experienced.<br />

I sometimes fall asleep. I usually fall into<br />

the “twilight” of a kind of “self-hypnosis.” I<br />

always recover “ultra-refreshed.”<br />

Starting out takes a little practice. Shutting<br />

down our thoughts, even briefly, is<br />

something of a “counter-intuitive” move, as<br />

our busy, multi-tasking lifestyles are highly<br />

rewarded. Our minds are quite turbulent,<br />

mostly looking ahead or behind us. Rarely<br />

fully present.<br />

Be Sensible<br />

Here’s a key from the ancient Hindus:<br />

Come to Your Senses. Literally. The secret<br />

is allow our bodies to relax enough to begin<br />

re-focusing our mind onto “present centered<br />

modalities.” Starting with our breath,<br />

we can practice bringing ourselves fully<br />

into the present moment without judgment.<br />

I love the relief that comes from closing<br />

my eyes and leaving the lighted world<br />

behind. I become aware of my breathing.<br />

I sense the cool fabric supporting me. I<br />

hear gentle sounds of fans stirring the air.<br />

I smell the rich leather beneath me. In my<br />

experience, it only takes focusing on two of<br />

these “present sense modalities” at once to<br />

completely shut down one’s thinking. And<br />

then “sail away.”<br />

Good things often come in small packages. Not to say that Price<br />

A few blocks from the beach is a small cigar shop with a big personality.<br />

Locals and tourists gravitate there to share their love of cigars and bond<br />

{over intimate conversations that span the sphere of relevance.<br />

Their formal name is Puro’s Cigars but to<br />

those who enjoy the friendly vibe and premier<br />

cigars, it’s more like a home away from home.<br />

Customers sit in front of the store under<br />

umbrellas and savor premier cigars and<br />

premier conversation. The secondary thrill<br />

is one of friendship, camaraderie and kinship.<br />

These ethereal qualities may sound<br />

simplistic, but they mean a lot to cigar aficionados<br />

that frequent this downtown Delray<br />

cigar shop.<br />

Women often wonder how to get men to<br />

talk, but Puro’s has found the answer. This<br />

social element is a house brew that owners<br />

Lisbeth and Eduardo Garcia (and son Jesus)<br />

have patented. It’s part of the reason that<br />

this family-owned cigar store has thrived<br />

among fierce competition.<br />

“I come here because of the great people<br />

and the great selection of cigars. I would be<br />

here if they sold lollipops.” said Mike Wyman,<br />

who comes to Puro’s almost every day.<br />

with Lisbeth and Eduardo, it’s to connect<br />

Frank, who comes three or four days a<br />

week, calls Puro’s God’s country. Bob Kirk<br />

calls it his living room. “I enjoy the teasing<br />

under the umbrellas during the day, but at<br />

night there’s solace, secrets and cigars as<br />

well. “I come here every day. They’re like<br />

family. They have good cigars and espresso<br />

and you can make new friends. Just recently<br />

I saw a someone I hadn’t seen in 50 years<br />

and we sat together and talked,” said Ed.<br />

Ed is just one of the loyal fans that gravitate<br />

to the Puro’s terrain through thick and<br />

thin – rain or shine. “It amazes me how competitive<br />

this business is yet Puro’s thrives<br />

among all the options available. Even when<br />

it’s raining people will sit under the umbrellas<br />

and smoke cigars and talk,” said Foundation<br />

Cigar Company Rep Alfredo.<br />

Foundation’s newest cigar – that Puro’s<br />

has – is The Tabernacle. Made in Nicaragua<br />

it has a Connecticut Broadleaf wrapper and<br />

comes in assorted sizes. They also have “El<br />

Güegüense” by Foundation.<br />

Lisbeth, the matriarch of the Puro’s domain.<br />

Eduardo is a steady presence in the Puro’s<br />

inner circle as well. He enjoys the company of<br />

his guests and is very grateful for the camaraderie<br />

and congruence of this local cigar shop.<br />

Steve and Gary are also part of the Puro’s<br />

My husband and I own an advertising<br />

agency and I was doing a pitch and blurted<br />

out, “It’s what you do in your Sunday State<br />

of Mind.” A few phone calls later, the Sunday<br />

State of Mind wholesale company was<br />

born. We worked the trade show circuit<br />

on the West Coast and had much success<br />

with where it all began, the lounge wear<br />

and athletic leisure lines.<br />

I have always loved fashion and dressing<br />

my friends, so when the opportunity<br />

was presented to do a women’s day of fun<br />

and fashion, I jumped at the chance. Then,<br />

I spent the next few weeks guessing sizes<br />

and bringing clothes to women as they<br />

wanted to know where my store was. The<br />

next step of opening a retail location was<br />

just the natural progression.<br />

I never set out to open a store, it was<br />

just something that sort of happened and<br />

has worked out really well. Sunday State<br />

Style has an energy of its own and all of<br />

the customers that walk through the door<br />

just add to it.<br />

We are hyper focused on the customer<br />

experience and making women feel warm<br />

and welcomed. The fashions are on trend<br />

and affordable for any budget. We have<br />

a great time getting to know our clients<br />

and teaming up with the events that they<br />

are dressing for. We love our regulars and<br />

learning about the events.<br />

Rachel Saunders believes in destiny. When faced with<br />

a challenge she sees possibilities, when life throws<br />

her a curve ball she enlarges her hand to catch it.<br />

That’s the way it’s always been with this coal miner’s<br />

daughter. Raised in the small town of Pineville,<br />

West Virginia, Saunders was primed for greatness.<br />

Her mother Melissa was a nurse and extolled the<br />

virtues of education, her father Ralph (who labored<br />

in the coal mines for 30 years) taught his daughter<br />

about kindness and compassion. “My father’s work<br />

ethic was second to none.”<br />

Captain Saunders imbibed these virtues and set<br />

out to find her own path toward fulfillment. Though<br />

she was a star basketball player in high school<br />

she wandered off the athletic field into the world<br />

at large. She left FAU (where she was awarded a<br />

basketball scholarship) and began working at UPS<br />

unloading packages. Though it sounds menial, this<br />

former basketball champ saw it as a step toward<br />

nirvana. “I loved that job. I got paid to work out.”<br />

After working at UPS from 5 to 8 am Saunders<br />

headed over to her day job at an insurance agency<br />

in Boca Raton. After that she worked in security at<br />

the Polo Club for Wackenhut.<br />

But as the wind blows in different directions on<br />

different locales, so did the ideas and ideals of this<br />

adventurous small-town gal. “I went into the Army<br />

Reserves and did basic training at Ft. Jackson, South<br />

Carolina. The military was a stepping stone to getting<br />

into the police force,” said the holder of two<br />

state records in West Virginia basketball history.<br />

Because she was adventurous and independent<br />

Saunders wanted to see what life would be like outside<br />

Pineville (population currently 668). That’s<br />

why she signed up for the police academy at Palm<br />

Beach Community College. Saunders was not only<br />

the class leader but she was recruited by the Delray<br />

Beach Police Department. “I was making $13.26 an<br />

hour and thought I was rich,” said the Defensive Tactics<br />

Physical Fitness Award winner.<br />

A lot has happened since those early days. Saunders<br />

is a 22-year veteran of the Delray Police Force<br />

and is now a captain. When she was on the SWAT<br />

Team she was the only woman at the time (from<br />

1997 to 2003). “No one ever treated me differently<br />

because I was a woman, I just went out and did my<br />

job the same as the men did.”<br />

She sure did. She started out as a community patrol<br />

officer, then a SWAT Team member, West <strong>Atlantic</strong><br />

Task Force Officer, Investigative Division TACT<br />

Team officer, Community Patrol Sergeant and nine<br />

other positions in the Delray police force.<br />

Despite the inherent danger of the job this thrill<br />

seeker saw the positives through the peep hole of<br />

reality. “I loved my job and I still love it. My favorite<br />

time was on the TACT and SWAT Team. We would<br />

drive around or hide under bushes or cars and<br />

watch drug deals. The midnight shift is where the<br />

action is. I just loved the people I worked with.”<br />

Saunders (and her team members) often helped<br />

those who were arrested by bringing Christmas<br />

gifts to their families. “We arrested a lot of people<br />

but we treated them with respect and compassion.”<br />

If what goes around comes around then Saunders<br />

has received the same respect from those in<br />

her orbit. She has a binder filled with awards and<br />

testimonials from those whose lives have been<br />

miraculously affected by her bravery and commitment<br />

to excellence. “Officer Saunders went above<br />

and beyond the call of duty in responding quickly<br />

to a bad domestic situation I was in. She was calm,<br />

factual, professional and followed up the next day<br />

and saw it to conclusion. She made me believe that<br />

no matter what people say about the police, there<br />

are shining examples of excellence, caring and<br />

commitment.”<br />

Not only is Captain Saunders a positive force for<br />

good in the community, but she has compassion for<br />

those who walk beside her. Assistant Chief Mary Olsen<br />

has seen it firsthand.<br />

“What makes Captain Saunders special is her<br />

sense of urgency to make her officers perform at the<br />

highest level possible. She truly cares about them<br />

and how they are progressing through<br />

their careers. Everyone who works with<br />

Captain Saunders knows she’s passionate<br />

about the policing profession and her<br />

people. We are incredibly blessed to have<br />

someone like her impacting the largest<br />

group of officers in the department.”<br />

There are 101 to be exact. But Captain<br />

Saunders rises to every challenge with a<br />

smile on her face. Where there are gaps<br />

in the structure she builds a safety zone.<br />

One example is when she co-founded a<br />

Rape Aggression Self Defense Program<br />

(that still exists). Her awards are too numerous<br />

to mention and her ascent toward<br />

the top of the Police Force hierarchy is<br />

duly impressive.<br />

But that was her goal and focus from the<br />

beginning. “I had the best upbringing. My<br />

dad (Ralph) always helped those less fortunate<br />

and when he was laid off he would<br />

sell his coins and never complain. He just<br />

did what he had to do to take care of us.”<br />

Captain Saunders is a chip off the old<br />

block. She helps those less fortunate and<br />

lives up to her police force responsibilities<br />

with a polished sense of purpose and<br />

poise. Everyone who meets her is amazed<br />

at her commitment to others and to the<br />

city of Delray Beach.<br />

“I met Rachel when she joined the force.<br />

I was a single woman who purchased a<br />

home in not such a great part of town. She<br />

and her partners continually checked on<br />

me to make sure all was okay in my community.<br />

Rachel has a passion for what she<br />

does, she loves our community and always<br />

has the pulse for what’s going on,” said<br />

Nancy Stewart-Franczak.<br />

{Just because there’s a travel ban doesn’t mean you can’t traverse the<br />

culinary globe. If you want to eat sushi, there’s no need to fly to Japan,<br />

if you want authtentic Thai food you don’t have to jet off to Thailand.<br />

That’s because House of Siam has perfected<br />

the recipes for sushi and Thai dishes<br />

that will make you sing with delight. Their<br />

longevity speaks volumes to those who understand<br />

what homemade Thai food should<br />

taste like. And we all know that the best<br />

food is made in the chef’s kitchen.<br />

The Chefs at this local haunt are owners,<br />

Pian and Patrick. They’re not only from<br />

Thailand but they preside over their inner<br />

culinary sanctum with pride. Each dish is<br />

prepared with delicacy and authenticity<br />

catching the flavors with a mist of distinction.<br />

The reason is simply that the ingrediants<br />

are fresh (the herbs are home-grown<br />

in front) and the recipes are passed down<br />

from the ages. The Chicken with Peanut<br />

Sauce is pure pleasure with a thick tasty<br />

sauce, planks of chicken and carrots, broccoli<br />

and pea pods.<br />

This stir fry dish can also be made with<br />

beef, pork, tofu or shrimp. As a devotee<br />

of the vegetable stir fry with tofu, I can<br />

honestly say that the Chicken with Peanut<br />

sauce is equally as terrific. There’s just<br />

enough sauce to make it savory and saucy<br />

but not too much that it overpowers the<br />

chicken and fresh vegetables.<br />

Another dish with star power is from<br />

the Sushi menu. Though Sushi is the second<br />

incarnation for this 18 year-old restaruant<br />

it is a wonderful additon to their<br />

superb Thai dishes. The best sushi roll on<br />

the planet is their Tuna Fuji Roll with fresh<br />

Yellow Fin Tuna, Tamago and avocado on<br />

the inside topped with masago. This sushi<br />

roll is so good you’ll find yourself humming<br />

with delight. We guarantee it.<br />

So does Talitha from The Netherlands.<br />

“The Food at House of Siam is excellent<br />

authentic Thai food! The sushi presentation<br />

and taste is excellent as well. We always<br />

come here when we’re in Delray. It’s<br />

a great place for lunch or dinner!”<br />

Talitha is right. House of Siam is a wonderful<br />

place to enjoy lunch or dinner. And<br />

while you’re there make sure you try their<br />

Tofu Cashew entrée. The tofu is lightly<br />

fried in a wonderful tasty sweet sauce<br />

with cashews, red peppers, carrots and<br />

zucchini. The texture and temperament of<br />

this Thai favorite is perfect for those who<br />

love Thai food that is savory and tasty<br />

without being overly spicy.<br />

Other diners agree. “Hands down, my<br />

favorite Thai restaurant in South Florida.<br />

Great staff, friendly owner, and you MUST<br />

order the curry in a cut-out pineapple. It’s<br />

so simple, but adds so much taste!”<br />

If you’re looking for a fish dish with a<br />

taste of Thailand try their Fish with ginger<br />

and scallions. This healthy entrée is superb.<br />

Made with fresh Tilapia and served<br />

whole in a ginger sauce with fresh zucchini<br />

and carrots it was delightful.<br />

Richard Keeperman – a House of Siam<br />

first timer – was super psyched about the<br />

food at this Pineapple Grove Thai- Sushi<br />

Restaurant. “I absolutely loved the Tuna<br />

Sushi Roll, it was spectacular. I also had<br />

Tofu with Cashews and it was delicious. I<br />

rarely eat tofu, but I loved it. I go to restaurants<br />

to eat, not to be seen. I am definitely<br />

going back to House of Siam,” said the Real<br />

Estate Agent.<br />

Dining at House of Siam is often a repetitive<br />

reflex. Many of their customers<br />

eat there so often they become like family.<br />

And, it’s often the case that newcomers<br />

become so enamored with the place that<br />

they become regulars as well.<br />

And it’s easy to see why. Where else<br />

can you get food that is made to order<br />

with fresh ingredients that are tasty and<br />

healthy? That’s one reason that Vegetarians<br />

love dining here. There are Fresh<br />

Rolls (with sliced cucumber, carrots,<br />

rice noodles, lettuce and bean sprouts)<br />

wrapped in rice paper with ginger dressing.<br />

Or a vegetarian Hand Roll, Vegan Sushi<br />

Combos, Vegetable Pad Thai or Vegetable<br />

Soy Sauce Noodles with broccoli and<br />

carrots in a savory sauce.<br />

The chicken and shrimp dumplings<br />

with a sweet soy sauce are also a special<br />

treat. Try one and you’ll find yourself<br />

begging for more. You could say they are<br />

addictive (in a good way of course). We<br />

also love their House Sizzlers. This tasty<br />

dish comes sizzling hot to your table with<br />

diced cucumbers, onions, red bell pepper<br />

and cashew nuts - all stir fried over fresh<br />

cooked spinach. It’s topped with a delicious<br />

peanut sauce with either Chicken,<br />

Beef, Pork or Tofu.<br />

There are dozens of amazing dishes to<br />

choose from at House of Siam. Some people<br />

love the Eggplant Basil, others can’t<br />

walk by the front door without feasting<br />

on Coconut Curry. It comes with a choice<br />

of meat or seafood, and is cooked with<br />

mixed vegetables, Thai curry paste and<br />

fresh basil.<br />

We love House of Siam and are smitten<br />

with their “can do” attitude. The dishes<br />

are a cacophony of flavors in sauces that<br />

measure up to the best restaurants in<br />

town. What you see is what you get – and<br />

more. If you are adventurous in your culinary<br />

experience, let Pian and Patrick take<br />

you on a magical mystical foodie adventure.<br />

For the Vealchop:<br />

1 lb Vealchop<br />

1/2 cup Bread Crumbs<br />

1/4 cup Flour<br />

2 Eggs Beaten<br />

1/4 cup Oil<br />

For the stuffing:<br />

4 oz Spinach<br />

2 slices Mozzarella<br />

3 slices Fresh Mozzarella<br />

2 slices Goat Cheese<br />

1 bunch Broccoli - steamed<br />

preparation<br />

Preheat oven to 400 degrees. Butterfly and pound veal chop. Add mozzarella,<br />

spinach, goat cheese, and fresh mozzarella on top of the pounded chop, roll the<br />

pounded portion to close and seal the chop. Breading the veal chop.<br />

Roll the veal chop in flour, brush with eggs then lightly roll in bread crumbs.<br />

In a sauté pan lightly sear the veal chop until golden brown 4-5 minutes. Place<br />

the veal chop on baking dish then bake in oven for another 10 minutes to fully<br />

cook the center of the rollatini. Remove chop from the oven and serve with<br />

steamed broccoli and your choice of sauce.<br />

WHY DO OUR PETS GET ALLERGIES?<br />

A<br />

s we take more control and responsibility<br />

for our pets’ health and wellbeing,<br />

we need to improve our understanding<br />

of what optimal health means. This<br />

not only includes knowing about species<br />

appropriate diets, safe products and proper<br />

handling but also understanding what medications,<br />

insecticides and vaccines do and<br />

how they work. It also means that we should<br />

learn the medical terminology.<br />

Keeping this in mind, let us look at allergies<br />

and determine what an allergic response<br />

is. Allergies are not a natural occurrence but<br />

rather a natural response upon exposure to<br />

something the body needs to reject. In other<br />

words, it is a biochemical detoxification of<br />

that foreign intruder. The body is simply<br />

trying to remove the intruder and yet modern<br />

medicine approaches it by attacking the<br />

symptom rather than the cause.<br />

We hear from the veterinary field that<br />

our pets have allergies to anything from<br />

pollen, grasses and plants to various foods,<br />

meats and herbs. You rarely hear of an allergic<br />

reaction from a drug, vaccine, insecticide,<br />

chemical, cleaner, deodorizer, or other<br />

household or yard products. Which do you<br />

think the body is going to fight back against,<br />

natural, synthetic or man-created products?<br />

The typical approach in allopathic or conventional<br />

medicine is to use steroids, antibiotics,<br />

antihistamines and other drugs to<br />

suppress the symptoms. These products do<br />

nothing more than push the external symptom<br />

deeper into the body without allowing<br />

the body to expel the foreign properties.<br />

Thus, the body is actually fighting multiple<br />

battles which include trying to free itself<br />

from the allergen, ridding toxins from the<br />

drugs that have been administered and expending<br />

energy to heal itself.<br />

When we observe the chemical and toxic<br />

exposure to our pets today, we see hundreds<br />

of toxic chemicals in their standard pet food<br />

diets, preventive drugs, vaccines administered;<br />

along with environmental exposure to<br />

household, lawn and air pollutants toxins. Is it<br />

any wonder that what we call “allergy symptoms”<br />

such as scratching and itching, rashes,<br />

hotspots, tear staining, coughing, sneezing,<br />

paw licking, ear infections, anal gland issues<br />

and many more occur? Along with that, factor<br />

in the drugs they use for treatment with<br />

their toxic side-effects, it proves how durable<br />

and strong the natural body is.<br />

Truly, there is a simple answer right before<br />

our eyes as to why our pets have “allergies.”<br />

At the end of any day, a body’s condition<br />

is only as good as what we do to provide<br />

the healthy nutrition and balance within<br />

the body. From the macro diet of animal<br />

products such as meat, fish, poultry, eggs<br />

and other animal source foods to the micro<br />

nutrients provided by herbs, botanicals<br />

and other micro sources, these components<br />

are what ultimately balance the body and<br />

eliminate any form of allergy through the<br />

natural process.<br />

Allergy symptoms are natural events that<br />

our pets and even ourselves acquire, whether<br />

in a natural cycle or induced. If we simply<br />

feed the body what it requires, clean and detoxify<br />

in a natural way and balance through<br />

rotational nutrients, we will have healthy<br />

pets. Open your eyes to what is being put<br />

into your cute, furry and fuzzy family member<br />

and then you will suddenly understand.<br />
