<strong>May</strong> just so happens to be my favourite time of<br />

year, yes, you guessed it... I am a Taurian, it’s my<br />

birthday soon... and I can’t wait to celebrate!<br />

It’s been a very busy month here at <strong>Bounce</strong> HQ,<br />

not only have we moved offices; I have literally<br />

just moved the final box into my first purchased<br />

house! Not to fear though, I have still managed to<br />

find time to bring you another exciting edition of<br />

<strong>Bounce</strong> <strong>Magazine</strong>, full of your usual favourites.<br />

If you haven’t heard of The Amazons yet, you will<br />

do! Hot on the rock music scene, I recently caught<br />

up with lead singer Matt Thompson about the<br />

band and their new album. I have really enjoyed<br />

their music, so I urge you to read the interview<br />

and to take a listen!<br />

This month, we visited the coast for our monthly<br />

food review, which took place at the renowned<br />

Sutherland House in Southwold.<br />

We were delighted to see ingredients were locally<br />

sourced, plus, the restaurant has been awarded<br />

two rosettes by the AA for the quality of their<br />

food. Check out our full review in the Food and<br />

Drink section.<br />

During April, I was privileged to be invited back<br />

to the annual Hobbs Fashion show to compère<br />

at the event for the Women’s Refuge in Bury St<br />

Edmunds. See pages 12 & 13 to find out all about it.<br />

The Beccles Food & Drink festival returns to the<br />

town at the end of the month. We will be there in<br />

full force, so make sure you pop along and say hi!<br />

Aloo Tikki ~ Vegan and<br />

Gluten Free<br />

Method<br />

1. Chop potatoes into approximately 1 inch<br />

cubes and begin to boil a large pot of water<br />

(about 10 cups).<br />

2. Once water is boiling, carefully drop in<br />

potatoes and reduce heat to medium high.<br />

Allow water to come back up to a boil. Set<br />

your timer for about 7 minutes… or cook until<br />

potatoes are fork tender.<br />

3. Once the potatoes are finished cooking,<br />

drain and run briefly under cold water.<br />

Transfer to large bowl and mash up with a<br />

potato masher, leaving fairly large chunks.<br />

You want this to be a “rough” mash. You can<br />

also use a fork or mix briefly in your electric<br />

mixer.<br />

4. In small pan, combine leek, ginger, garlic,<br />

turmeric, cumin, garam masala and lemon<br />

zest with a touch of cooking oil and fry over<br />

medium high heat just until fragrant… about<br />

2 minutes. Stir spices into the bowl with the<br />

potatoes, along with the besan flour, salt, and<br />

lemon juice. Fold in peas and cilantro.<br />

5. Shape into patties about 1 x 2 inches, and<br />

deep fry at 360 °F for about 3 or so minutes,<br />

until they turn nice and dark golden brown.<br />

Let cool to just above room temperature and<br />

then serve.<br />

• 4 medium to large sized potatoes, skin on<br />

• 1 leek, toughest darker green parts cut<br />

away and the rest sliced thinly<br />

• 1 inch piece of fresh ginger root, grated<br />

• 1 clove garlic, minced<br />

• 1 tsp turmeric<br />

• 1 tsp cumin<br />

• 1/2 tsp garam masala<br />

• 1 tsp lemon zest<br />

• 1/3 cup fresh cilantro, chopped<br />

• 1 tsp salt<br />

• 4 tbsp besan (chickpea flour)<br />

• 1 tbsp lemon juice<br />

• 1 cup frozen peas, thawed<br />

• cooking oil

In aid of the Women’s Refuge, Hobbs in Bury St<br />

Edmunds show their support for a special cause...<br />

“Bury St Edmunds Women’s Aid Centre (the Refuge) was<br />

established in 1974 to provide safety and support for women<br />

and children experiencing Domestic Abuse.”<br />

On Wednesday 5 th April, Hobbs fashion store at<br />

The Arc, Bury St Edmunds, held a special charity<br />

fashion show in aid of Bury’s Women’s Refuge.<br />

When sadly, I found myself in a time of need, their<br />

doors were open to give me all of the help and<br />

advice I required. I wasn’t alone.<br />

<strong>Bounce</strong> Editor, Rachel Ducker, was invited along<br />

to report and compère at the event.<br />

“The women’s refuge in Bury St Edmunds is a<br />

charity which is very close to my heart, so I was<br />

delighted when I was asked to help with the event.<br />

Although domestic violence is becoming more<br />

talked about now a days and with shows (like ‘The<br />

Archers’) covering this sensitive topic, until you<br />

have lived it, domestic violence can be a very hard<br />

topic to understand. This is now a topic that I am<br />

no longer afraid of.<br />

Manager Tracey Zahra-Norris and her staff were<br />

on hand to make the event a great success and<br />

managed to raise over £250 for the charity.<br />

Most recently the store celebrates the win of a<br />

nationwide award for being the top performing<br />

store in their UK portfolio throughout the autumn<br />

and winter season and is the second store in the<br />

UK to have a refit, making the store a flagship one.<br />

Bury St Edmunds Women’s Aid Centre (the<br />

Refuge,) was established in 1974 to provide safety<br />

and support for women and children experiencing<br />

Domestic Abuse. The Refuge has living<br />

accommodation for up to 23 bed spaces. They<br />

offer temporary accommodation in a safe and<br />

supportive refuge where women and their children,<br />

can recover from the traumatic effects of domestic<br />

violence and make informed choices. Not only that<br />

there is also a wide range of community services,<br />

courses and counselling to support women to<br />

rebuild their lives after abuse.<br />

Hobbs would like to thank everyone for coming<br />

along and to the staff and models on the evening.”<br />

Some abuse is not always physical, and mental<br />

scars can last just as long.<br />

The popular event at Hobbs was enjoyed by<br />

all, and guests were given a glimpse of the new<br />

also in attendance on the evening, as the Women’s<br />

Refuge is one of his chosen charities this year.<br />

R: What was the inspiration behind Boomting Bunting?<br />

I was on maternity leave and my mum wanted a hand<br />

making some bunting for my sisters wedding. As it turns<br />

out, our creative minds and passion for sewing worked well<br />

together!<br />

R: How long have you been in business?<br />

We’ve been in business since October 2016.<br />

R: How has the business evolved since then? After<br />

meeting clients/other business through hiring bunting,<br />

we soon had a lot of requests for venue draping. We can<br />

transform any venue with our drapes, bunting, lanterns<br />

and lights into something beautiful! We are soon starting<br />

Throne Hire (Its big in London and we want to bring it to<br />

the countryside) and a whole range of quirky décor hire!<br />

R: What has been your favourite creation to date?<br />

My favourite creation has to be our bohemian bunting<br />

range. It’s colourful and quirky and represents us perfectly.<br />

It can be finished with strips of material in between flags to<br />

give a rustic feel. My mum loves all of our bespoke projects.<br />

THE AMAZONS...<br />

The Amazons are tipped to be one of <strong>2017</strong>’s biggest breakthrough rock acts<br />

and have been listed on nearly every ‘artists to watch’ lists for <strong>2017</strong>… it’s no<br />

surprise as they have been independently building their sound for years.<br />

The release of their eagerly anticipated selftitled<br />

debut album, is out <strong>May</strong> 26th on Fiction<br />

Records. Lead singer, Matt Thomson’s knack<br />

for introspective lyricism shines through in an<br />

emotive vocal delivery, completed by guitarist<br />

Chris Alderton, coy bassist Elliot Briggs and<br />

powerhouse drummer Joe Emmett. The<br />

Amazon’s crushing contemporary rock is one<br />

to blow out your speakers to.<br />

Rachel Ducker caught up<br />

with Matt Thomson to find<br />

out about The Amazon’s<br />

upcoming tour and new<br />

debut album.<br />

R: How did you form as a<br />

band and when?<br />

That’s a good question.<br />

September 2014 was the official time that The<br />

Amazons started. Myself, Chris our guitarist<br />

and Elliot our bassist, had been navigating<br />

around a fairly desolate, baron landscape<br />

in the Reading scene for a couple of years,<br />

after being in various bands and never really<br />

getting anywhere. We picked up management<br />

in a previous band, but it didn’t work out for<br />

whatever reason… maybe because we were a<br />

little bit too young to know which direction<br />

we wanted to go in.<br />

We lost our drummer from that project –<br />

project sounds terrible! I mean we had a<br />

band!... So, we were looking for a drummer,<br />

we auditioned anyone and everyone in<br />

our path, and in the meantime worked on<br />

acoustic gigs. By this point we’d finished<br />

school and wanted to have a crack at doing<br />

music. We didn’t go to uni, we just got jobs at<br />

supermarkets, me and Elliot our bassist were<br />

working at Waitrose, and<br />

we stumbled across Joe and<br />

it turned out to be pretty<br />

good. We then settled on<br />

the band name The Amazons<br />

and finally it just felt like<br />

something fit with The<br />

Amazons.<br />

What made you settle on the<br />

name The Amazons?<br />

There’s a book by Arthur Ransome called<br />

‘Swallows and Amazons’, it was a movie set in<br />

the Lake District in the 1920s – it’s the most<br />

inoffensive, bordering on dull, super not rock<br />

n roll book. I read it a few years ago; it was on<br />

my bookshelf and I thought, is there a band<br />

called The Amazons? It sounded obvious<br />

that there would have been though when I<br />

Googled it there was nothing.<br />

It’s a hard job isn’t it to pick a name that will stick with<br />

you forever?<br />

Ah it’s the worst, like song titles, album names, everything!<br />

How difficult has it been to make an impact on the music<br />

scene?<br />

Through a lot of failed attempts in previous bands, we<br />

kind of settled on an ethos of doing as much as possible<br />

on our own. We are in an Internet age, we are an Internet<br />

generation, I don’t really remember a huge amount before<br />

dial up connections. We know what we are about and very<br />

early on we wanted it to be a really natural thing, so we set<br />

up a core fan base in our hometown.<br />

This is why we didn’t move to Manchester or London and<br />

become just “another” band. We’d do things like go to<br />

WH Smith and buy a lot of cheap CDs, then burn our self<br />

produced demos on them and instead of selling them, we<br />

handed them out to anyone who came to our shows. It’s<br />

funny as now people still come to our shows who have<br />

those original CDs. We were in the mindset of ‘the right<br />

people will come to us at the right time’, we will just do our<br />

thing, create our own world, write our own story, we’ll paint<br />

our own picture, we’ll carve our own path and that’s exactly<br />

what happened. We ended up with really passionate<br />

people who we love working with. I think that’s the best<br />

advice I could give anyone, the right people will find you,<br />

set the tone, you don’t need people pulling you along, you<br />

need to be leading them.<br />

I heard you played around 75 gigs alone last year, does it<br />

ever get tiring?<br />

Yeah it does. Its quite a tiring process, but we know what<br />

life is without being in the band, you never really take it<br />

forgranted when your on tour, but its tough, but its what<br />

we’re passionate about and we’re lucky enough to have<br />

that. Even when we played to 20 people in the early days,<br />

it wasn’t like ‘oh no’ – it was like; ‘ah at least we get to do<br />

a gig’. We have a love of the process rather than a love of<br />

the perceived end game and the success. Being famous is a<br />

bi-product of the music. If we were obsessed with success<br />

and fame, we wouldn’t have lasted two years under the<br />

radar before anyone really picked us up and<br />

started talking about us, I wouldn’t be talking<br />

to you now. The amount of times we played<br />

to no one in unknown places… it can be sole<br />

destroying but what keeps you going is your<br />

passion for music.<br />

What was your favourite gig so far? Have you<br />

ever had a time standing on the stage and<br />

thinking, we’ve made it!<br />

Ha ha… umm that is yet to happen! It will<br />

happen soon. I think when we play our<br />

hometown in Reading it has a certain energy<br />

and vibe, I think people are excited to see us<br />

come from Reading. We actually blew out the<br />

PA during our last visit, which was great, it<br />

was fun and in the moment.<br />

I’ve looked at your dates - your playing<br />

quite a lot of places in a short space of time,<br />

looking at your list, I’m thinking how do you<br />

get from Sweden to Norway to Germany in a<br />

couple of days, it must be intense?<br />

Ha ha… umm that is yet to happen! It will<br />

happen soon. I think when we play our<br />

hometown in Reading it has a certain energy<br />

and vibe, I think people are excited to see us<br />

come from Reading. We actually blew out the<br />

PA during our last visit, which was great, it<br />

was fun and in the moment.<br />

There has been such a massive buzz around<br />

you guys… you were included in the BBCs<br />

“sound of <strong>2017</strong>” and MTV’s “Brand New<br />

<strong>2017</strong>” lists how did that feel?<br />

We feel grateful in a way that we are flying<br />

the flag for the wave of rock bands. There<br />

is a huge array of talent in the scene at the<br />

moment. Its good for the genre!<br />

Your debut album is out on 26th <strong>May</strong>, what<br />

can we expect?<br />

The response has been amazing so far and we<br />

actually brought the release date forward. I<br />

think if you’ve listened to ‘In My Mind’ ‘Black<br />

Magic’…<br />

I’ve actually been listening to those tracks<br />

recently and loving them…<br />

Aw thank you very much. On the new album<br />

there’s a display of the more heavier and<br />

raw sides, but I think we’ve got some other<br />

faces to show. There are a few more intimate<br />

and quieter moments that people might not<br />

expect.<br />

brighter evenings make Spring<br />

many people’s favourite time of<br />

year, it is set to trigger a wave of<br />

problems due to the start of hay<br />

fever season.<br />

Trees begin to pollenate as early as March, and<br />

with this comes microscopic spores, dust and<br />

pollen that irritate our eyes and sinuses. Hay<br />

fever affects more than 1 in 5 people in the UK,<br />

with one of the most common symptoms being<br />

itchy, burning and watery eyes.<br />

Here are Sarah’s 5 top tips to help you survive<br />

this hay fever season naturally:<br />

BANISH STUFFY NOSES<br />

Springtime is all about getting outdoors and<br />

being active, but feeling stuffy and blocked<br />

up can make that a challenge. Blocked sinuses<br />

from pollen allergies can leave you feeling<br />

lethargic and sluggish but there are things we<br />

can do to help. Try adding a couple of drops<br />

of peppermint oil to a bowl of hot water and<br />

inhaling the vapour. It will help clear blocked<br />

noses as well as being calming!<br />

DUAL PROTECTION FOR ITCHY EYES<br />

One of the most common hay fever<br />

complaints is itchy, burning, and watery<br />

eyes, but preservative free eye drops can<br />

How to try the pose:<br />

1. Lie supine on the floor. Bend your knees<br />

and set your feet on the floor, heels as<br />

close to the sitting bones as possible. Bend<br />

your elbows and spread your palms on the<br />

floor beside your head, forearms relatively<br />

perpendicular to the floor, fingers pointing<br />

toward your shoulders.<br />

2. Pressing your inner feet actively into the<br />

floor, exhale and push your tailbone up toward<br />

the pubis, firming (but not hardening) the<br />

buttocks, and lift the buttocks off the floor.<br />

Keep your thighs and inner feet parallel. Take<br />

2 or 3 breaths.<br />

3. Press your feet and hands into the floor,<br />

tailbone and shoulder blades against your<br />

back, and with an exhalation, lift your head off<br />

the floor and straighten your arms. Turn the<br />

upper thighs slightly inward and firm the outer<br />

thighs. Narrow the hip points and lengthen<br />

the tailbone toward the backs of the knees,<br />

lifting the pubis toward the navel.<br />

4. Turn the upper arms outward but keep<br />

the weight on the bases of the index fingers.<br />

Spread the shoulder blades across the back<br />

and let the head hang, or lift it slightly to look<br />

down at the floor.<br />

5. Stay in the pose anywhere from 5 to 10<br />

seconds or more, breathing easily. Repeat<br />

anywhere from 3 to 10 times.<br />

Beginner’s Tip:<br />

The knees and feet tend to splay as you lift<br />

into this pose, which compresses the lower<br />

back. In the beginning position, loop and<br />

secure a strap around your thighs, just above<br />

the knees, to hold the thighs at hip width and<br />

parallel to each other. To keep the feet from<br />

turning out, place a block between them, with<br />

the bases of the big toes pressing the ends<br />

of the block. As you go up, press the feet into<br />

the block.<br />

THE TAILOR<br />

OF DISS<br />

Murder in a Norfolk market town...<br />

The largest congregation to attend a service<br />

at the parish church did not do so to listen to<br />

Reverend Edward Chappelow. On Sunday 4th<br />

April 1742, four thousand people crowded in to<br />

the church to glimpse a local tailor named Robert<br />

Carlton.<br />

He was there under close guard, as he had been<br />

convicted of one of the most celebrated crimes<br />

of his generation. The following day he was to<br />

be hanged on Diss Common for the crimes of<br />

sodomy with his young lodger and for poisoning<br />

his lodger’s fiancée.<br />

The two men enjoyed a relationship, until Lincoln<br />

tired of their secretive way began courting a<br />

young country girl, Mary Frost, from Redgrave<br />

in Suffolk. Carlton became very angry and<br />

threatened Lincoln that “if he ever brought his<br />

whores near to him he would do them some<br />

mischief”. But paying no regard the young<br />

couple continued to meet and a few weeks later<br />

announced their marriage.<br />

On the evening of 15th November 1741, Carlton,<br />

now reconciled to the marriage, invited Mary<br />

and Samuel Fuller, her landlord, to his house for<br />

supper. That night she became violently sick and<br />

died in agony at Fuller’s house the following day,<br />

and when the doctors opened her they found all<br />

her entrails affected by the poison.<br />

The trial was reported throughout the region.<br />

Lincoln admitted to his relationships with both<br />

Robert Carlton and Mary Frost, and recounted the<br />

threats to poison her. Finally Samuel Fuller told<br />

the story of their meal together, and suggested<br />

that the salt given to Mary had been mixed with<br />

the poison.<br />

Executions outside of London were still not very<br />

common in the early eighteenth century, and<br />

even a city such as later in the eighteenth century,<br />

Carlton’s homosexuality was undoubtedly an<br />

element in the popular interest in the case, and<br />

an added attraction for the crowds who were<br />

expected to attend the planned spectacles.<br />

On the Monday morning, following his appearance<br />

at church, the second ‘event’ was organised for<br />

the benefit of the spectators. Although Robert<br />

Carlton continued to deny knowledge of the<br />

murder, he could not bring himself to condemn<br />

his young lover who had testified against him.<br />

Thus the two men were brought together at a<br />

local alehouse, where, under public gaze, they<br />

each “drank a pint of ale and ate a bis¬cuit<br />

together, and parted good friends”. At about four<br />

o’clock in the afternoon, the wretched Carlton<br />

was eventually brought to the scaffold in an open<br />

cart, and taken up in front of the jeering crowd, to<br />

face his hangman.<br />

Carlton’s body was put in chains, and hung from a<br />

tall gibbet, erected on Diss common close to the<br />

gallows, where it could be seen for miles around.<br />

It was left to rot and be eaten by the crows.<br />

centre of Southwold, a popular seaside<br />

town in Suffolk. The <strong>Bounce</strong> team<br />

stopped by to see what the boutique<br />

hotel and restaurant had to offer its<br />

coastal clientele...<br />

enjoy a peaceful meal in relaxed and calming<br />

surroundings.<br />

During summer months, there is also an<br />

outdoor seating area at the back of the house,<br />

which is transformed into a buzzing al fresco<br />

dining area... Not forgetting to mention, its<br />

close proximity to the seafront, ideal for an<br />

after dinner stroll along the promenade.<br />

Open for breakfast, lunch and dinner, it is<br />

advisable to book in advance! This place gets<br />

pretty busy and if you continue to read you<br />

will see why.<br />

Accompanied by my good friend, Lois, (who<br />

was more than happy to offer her tasting<br />

services for the evening), we arrived and took<br />

our seats in the dimly lit dining room.<br />

“Sutherland House is full of period charm,<br />

from wooden beams to elegant pargetted<br />

ceilings and open fireplaces.<br />

Dating back to 1455 this very rustic, but<br />

trendy building, complete with its own<br />

contemporary bar made of vintage wine<br />

boxes, offers diners an interesting and<br />

intimate setting.<br />

It shot to prominence in the 17th century when<br />

it became a naval headquarters during the<br />

Anglo-Dutch Wars and was frequented by the<br />

Duke of York (later James II) and the Earl<br />

of Sandwich.<br />

Set on Southwold’s bustling high street, this<br />

adult only boutique establishment, offers<br />

the perfect escape for those wishing to<br />

Owners, Andy and Kinga Rudd, have clearly<br />

worked extremely hard to give the building<br />

a new lease of life. Stand out features<br />

include the funky bar area and beautiful soft<br />

furnishings, which add balance to the venue,<br />

creating a warming accenting the rustic<br />

traditional fixtures.<br />

At first glance, the menu seemed excellently<br />

thought out, with a great emphasis on local<br />

food... in my opinion, this is always the sign<br />

of a great local eatery. In fact, Sutherland<br />

House actually print food miles on their<br />

menu to quantify this, and only use seasonal<br />

ingredients. Many of the fruit and vegetables<br />

travel no more than 400 yards - from the<br />

hotel’s own allotment - and much of the fish<br />

comes straight from the harbour!<br />

A glass of champagne kick started the meal,<br />

followed shortly by an ‘Artichoke and Truffle<br />

Amuse-Bouche’, served in a miniature<br />

cup and saucer. Neither lasted long, a<br />

promising start.<br />

If you’re a meat-eater, you must try the<br />

award-winning black pudding, which I had<br />

the pleasure of sampling in my starter dish.<br />

Served beneath ‘Seared Scottish Scallops<br />

and Pork Belly, with Parsnip Puree and<br />

Pomegranate Seeds’ it was packed full of<br />

flavour. This, coming from someone who<br />

doesn’t usually entertain Black Pudding!<br />

Lois selected the ‘Candied & Pickled<br />

Heritage Beets with Pomegranate, Stilton<br />

and Endive Salad’. This little concoction of<br />

ingredients had a slightly sweet and sour taste<br />

surrounding it, the punch of the beets lead to<br />

tones of sweetness, creating a really fresh and<br />

zingy dish.<br />

There’s a strong wine list on offer, and Andy<br />

was happy make recommendations to pair<br />

with food. My favourite glass was the ‘Saint<br />

Clair Sauvignon Blanc Marlborough’<br />

by Matt Thomson, which accompanied my<br />

main dish. A crisp and powerful white wine,<br />

whilst remaining full and well-balanced, with a<br />

slightly salty minerality.<br />

Being near to the coast the menu is naturally<br />

fish-heavy, so I decided to try the ‘Pan Fried<br />

Fillet of Sea Bream with Champ Mash and<br />

Pistachio Pesto’, accompanied with some<br />

Fried Green Beans & Mushrooms in Garlic. It<br />

was particularly good; light and flavoursome<br />

and filling but not too heavy. Just what you<br />

desire from a main meal. Whilst I got tucked<br />

into my fish dish, Lois got stuck into Steak.<br />

The Grilled 28-day aged Rib-Eye Steak<br />

complete with ‘Confit Plum Tomatoes, Hand<br />

Cut Chips and Café De Paris Butter’, (which<br />

contained over 30 different ingredients),<br />

looked incredible. Sadly, I didn’t get to try<br />

any (thanks Lois), but she did allow me to<br />

try a couple of her Hand Cut Chips, and if<br />

they were anything to go by, I am sure the<br />

rest was amazing.<br />

On to the finale, dessert! You will find a<br />

good selection including English classics like<br />

bread and butter to lighter alternatives.<br />

On this occasion ‘lighter’ seemed like the<br />

best way forward.<br />

Lois opted for the ‘Lime & Ginger<br />

Cheesecake with Lemon Tuille and Ginger<br />

Puree’, whilst I headed out of my usual<br />

‘chocolate comfort zone’ and chose<br />

‘Pineapple Carpaccio served with Coconut<br />

Ice Cream,’ garnished with mint, lime and<br />

chilli. It was perfectly sharp and although<br />

I must confess, I am not usually a mint lover,<br />

this daring twist made the dish very refreshing<br />

indeed.<br />

An Espresso Martini topped of the evening<br />

and after a quick tour of the five refurbished<br />

bedrooms, it was closing time. We really<br />

enjoyed our experience at Sutherland House<br />

and as locals ourselves; we will be heading back<br />

very soon”.<br />

Summer<br />

salmon with<br />

minty veg...<br />

An easy-to-prepare healthy<br />

summer meal which counts for<br />

two of your five-a-day...<br />

1. Boil the potatoes in a large pan for<br />

4 mins. Tip in the peas and beans,<br />

bring back up to a boil, then carry on<br />

cooking for another 3 mins until the<br />

potatoes and beans are tender.<br />

2. Whizz the olive oil, lemon zest and<br />

juice and mint in a blender to make a<br />

dressing (or finely chop the mint and<br />

whisk into the oil and lemon).<br />

Ingredients<br />

• 750g small new potato, thickly sliced<br />

• 750g frozen pea and beans (we used<br />

Waitrose pea and bean mix, £2.29/1kg)<br />

• 3 tbsp olive oil<br />

• zest and juice of 1 lemon<br />

3. Put the salmon in a microwaveproof<br />

dish, season, then pour the<br />

dressing over.<br />

• small pack mint, leaves only<br />

• 4 salmon fillets about 140g/5oz each<br />

4. Cover with cling film, pierce, then<br />

microwave on High for 4-5 mins until<br />

cooked through.<br />

5. Drain the veg, then mix with the<br />

hot dressing and cooking juices from<br />

the fish. Serve the fish on top of the<br />

vegetables.<br />

The Wines<br />

of Sicily<br />

Sicily is the largest of the Mediterranean Islands and is at the<br />

southern end of Italy. It has earned the reputation of producing fine<br />

fortified wine called Marsala.<br />

success with the British and the British Navy under<br />

Nelson used much of it.<br />

BY ‘WINE BUFF’ FRED FISHER<br />

For nearly 3000 years wine has been produced<br />

here starting with the Greeks who settled in the<br />

8th Century BC. The Phoenicians and the Romans<br />

traded with Sicilian wine and lent their knowledge<br />

and expertise to promoting the area. According to<br />

legend Dionysus (AKA Bacchus) was the God of<br />

wine who brought pleasure to mankind and wine<br />

to Sicily.<br />

The next important date is 1773 when John<br />

Woodhouse started producing Marsala, rather<br />

similar to sherry using alcohol to fortify it. It was a<br />

The last 20 years or so has seen changes to the<br />

Island’s culture with the production of fine wine.<br />

The climate is typical Mediterranean, warm sunny<br />

and hot. It is dominated by a large active Volcano,<br />

so the soil is certainly volcanic giving rise to a<br />

range of flavours.<br />

DOC Wine Areas<br />

There are 23 DOC zones in Sicily and 1 DOCG.<br />

This category is similar to the French AOC and<br />

controls the quality of grapes produced.<br />

These are mostly on the mainland except<br />

Pantelleria, an island remote from the mainland<br />

Grapes<br />

Sicily is unique in that it has its’ own abundance<br />

of indigenous grape varieties which have proven<br />

so successful with the climate and soils present.<br />

Wines are either ‘In Purezza’ where a single grape<br />

variety is used or blended using several grapes.<br />

The main ones used are:-<br />

Red Wines<br />

Nero D’Avola - One of the oldest indigenous<br />

grapes. Aromas of cherry, strawberry, and cocoa.<br />

Full bodied, good acidity and tannin and great<br />

with meat dishes<br />

Syrah - A classic grape from France which<br />

is particularly suited to the climate<br />

and soil of Sicily. Full bodied and<br />

tannic, good with meat dishes<br />

and cheese.<br />

Etna Rosso - A blend of two<br />

varieties of Nerello grapes,<br />

suited to the soils of Mount<br />

Etna.<br />

Cerasuelo di Vittoria - A Blend of<br />

Frappato and Nero D’Avola with some<br />

Grossonero and Nerello grapes. Famous<br />

wine from the Ragusa district<br />

White Wines<br />

Bianco D’Alcamo - Using the Cataratto, Greciano,<br />

Damaschino and Trebbiano grapes comes from<br />

between Alcamo and Trapani areas.<br />

Wines made from Grillo, Inzolia, Cataratto,<br />

Greciano and Chardonnay are produced ‘in<br />

purezza’ or can be blended together. Can be<br />

exceptionally good. Great with most light dishes<br />

like seafood and fish or white meat.<br />

Note:- It is hard to describe each grape as they<br />

are often, as is said, blended. Best to look at the<br />

back label on a bottle see their descriptions, if<br />

any. If no description there is a risk it is of low<br />

quality.<br />

Dessert wines<br />

The very warm climate lends itself to very ripe<br />

grapes and thus lots of sugar. The drying qualities<br />

of the sun also lends itself to the production<br />

of dessert wines. Some of these are of historic<br />

importance and are:-<br />

Marsala - A famous fortified wine first<br />

produced by John Woodhouse, an<br />

Englishman, in 1773. It is a blend<br />

of Grillo, Cataratto, Ansonia and<br />

Damaschino. Distilled alcohol is<br />

added to produce the fortified wine.<br />

Although it is famous as a Sweet<br />

wine it is also made as dry and medium<br />

wines. Being a fortified wine it was suitable<br />

to export to the US in the 18th Century as the<br />

high alcohol (19%) preserves the wine during<br />

the long journey by sailing ship. It was extremely<br />

popular with the Royal Navy and Admiral Nelson<br />

himself ordered it. After the Battle of Trafalgar it<br />

was known as ‘Victory Wine’<br />

Passito di Pantelleria - Made from the Zibbibo<br />

grape which have been dried in the sun, thus<br />

concentrating the sugar. It is a small island south<br />

of Sicily.<br />

Conclusions...<br />

Its use of many indigenous but virtually unknown grapes leads to Sicily providing a voyage of<br />

discovery of new wines. You will find a range of wines to suit most tastes of Marsala, which is used a<br />

lot in cooking, particularly Zabaglione, it is worth trying the range from dry to sweet.<br />

Rum Cocktail...<br />

Rum is such an evocative spirit. It transforms,<br />

transcends and instantly transports<br />

the drinker to the sun-washed<br />

shores of the West Indies.<br />

This one is an interesting blend of<br />

fresh fruit flavours with a rum and<br />

apple juice base, perfect for sunny<br />

days in the garden or evenings on<br />

the terrace. The recipe makes two<br />

highball drinks.<br />

Method<br />

1. Blend all the ingredients together<br />

with crushed ice.<br />

Ingredients<br />

• 2 ripe peaches, pitted roughly chopped<br />

• 1 part rum<br />

• 4 strawberries, cubed<br />

• flesh and seeds of 2 passion fruit<br />

• 4 ounces cloudy apple juice<br />

• 1 Tablespoon superfine sugar<br />

• 2 teaspoon grated fresh ginger<br />

crushed ice<br />

• Apple fans for garnish<br />

2. Pour the mix equally into two<br />

highball glasses.<br />

3. Garnish with an apple fan.<br />

• Once home, place your fillet skin down<br />

on an absorbent piece of tissue paper and<br />

season well. Keep in the fridge until needed.<br />

• Make your olive dressing by adding the<br />

chopped ingredients together with the olive<br />

oil and seasoning, reserve.<br />

• Cook the potato gnocchi for 4 to 5<br />

minutes in boiling water with a pinch of salt,<br />

drain and keep aside.<br />

• Chopped Black olives<br />

• Chopped flat parsley<br />

• Seasoning.<br />

1/2 clove<br />

100ml<br />

Method<br />

• Buy the Seabream from the fishmonger<br />

and ask for your fish to be filleted.<br />

• Pour the tomato Passata in a sauce pan<br />

and add the 1/2 glove of garlic (finely<br />

chopped) the white wine and one pinch of<br />

salt, reduce on a low heat for 5 minutes.<br />

• Pour some oil and add a 20g of butter into<br />

a non-stick frying pan, place on a medium<br />

heat and wait until the butter is completely<br />

melted.<br />

• Add the fish to the pan skin down and<br />

cook for 4 to 5minutes, turn the fillet over<br />

and cook for a further 2 minutes.<br />

• Add the potato gnocchi to the tomato<br />

sauce and reheat. Once hot, place the<br />

gnocchi at the center of the plates, place<br />

the Seabream fillet on top and serve with<br />

the black olive dressing.<br />

Popular Food & Drink Festival returns to Beccles<br />

It’s back! The 3rd Beccles Food & Drink Festival will<br />

be held on Saturday 27th <strong>May</strong>, and should be an<br />

educational and fun day for all the family.<br />

Running from 10am till 4pm, the free event, held<br />

in and around the town centre, will follow the<br />

successful format developed over the previous 2<br />

years.<br />

Upwards of 50 stalls will be on hand,<br />

selling a wide variety of cooked and raw<br />

food, pickles, preserves, oils and other<br />

condiments, confectionary, along with<br />

alcoholic and non-alcoholic drinks.<br />

Stallholders from the Waveney Valley<br />

area include Fen Farm Dairy, The<br />

Penny Bun Bakehouse and Waveney<br />

Smokehouse, while those from further<br />

afield include Kenton Hall Estate,<br />

pudd’Eng and Yum Yum Tree Fudge.<br />

There will also be a variety of demonstrations and<br />

talks in a cookery theatre on the stage of the Public<br />

Hall throughout the event, featuring local chefs and<br />

producers. Stalls will be situated there, in St Michael’s<br />

Church, as well as in the heart of the town centre.<br />

Children’s entertainment, including storytelling, face<br />

painting and Punch and Judy will be centred on the<br />

town’s Library, where a Fair Trade Pop-up Café is<br />

planned.<br />

Visitors are encouraged to use the excellent bus<br />

links to the town or use the East Suffolk rail line to<br />

the refurbished Beccles Station, while those arriving<br />

by car can make use of a free Park and Ride facility<br />

from Beccles Quay. Free maps, showing<br />

a food trail round the various sites,<br />

all within easy walking distance of<br />

each other, will be available from the<br />

Quay Park and Ride and the festival’s<br />

information point in the town centre.<br />

A new feature for <strong>2017</strong> is the addition<br />

of “Specials” for the festival day only<br />

by some of the town’s eateries and<br />

butchers, which will feature on the<br />

map, together with the cookery theatre<br />

timetable.<br />

Local businesses set to participate in this feature<br />

include Twyfords, Baileys, the Waveney House Hotel,<br />

Graze at the White Horse, and the Wine Vaults.<br />

The aim of the event is to celebrate independent food<br />

and drink suppliers and eateries, both within Beccles<br />

and throughout the wider Waveney Valley area, and<br />

to attract visitors to the vibrant market town.<br />

The 16th <strong>May</strong> 2007 was the date that was to<br />

change the fortunes of the run down and loss<br />

making Bull Inn at Barton Mills.<br />

Newcomers to the industry Cheryl Hickman and<br />

Wayne Starling took the “bull by the horns” and<br />

haven’t looked back since. Non believers said to<br />

the couple at the beginning “you don’t know what<br />

you are doing” – this one comment from a cynical<br />

and jealous local is what spurred this young,<br />

dynamic and focused couple onto success.<br />

3am / 4am in the morning!! These shifts were<br />

7 days a week and they could see this would be<br />

a potential problem to the business becoming<br />

successful, so Sonia (Cheryl’s sister) joined the<br />

team full time making the Inn a real family affair.<br />

When Cheryl & Wayne took the Bull Inn over<br />

the business was losing £100,000’s a year and it<br />

was everything you would imagine from a failing<br />

unloved roadside inn. To top it all off they took on<br />

the Inn in the very midst of a recession in the UK<br />

and pubs were closing left right and center due<br />

to this and of course the imminent implentation<br />

of the smoking ban in July 2007. EVERYTHING<br />

was staked up against this young and some would<br />

say bonkers couple! But against all odds they<br />

have transformed the unloved and failing business<br />

into an award winning modern yet historically<br />

sympathetic and hugely funky coaching inn.<br />

After the initial 6 months Cheryl and Wayne<br />

respite of a couple of nights a week off to enable<br />

them to remain upbeat and focused about the<br />

journey they were on. Those early days were hard<br />

both physically and emotionally.<br />

It’s now a destination Inn and the place that friends<br />

meet for lunch, families come for breakfast and<br />

business people stay over for something a bit<br />

different to your normal accommodation and of<br />

course locals and strangers alike can eat, drink<br />

and enjoy the amazing pub and AA rosette dining<br />

rooms.<br />

The couple have led the team and the business<br />

to win many awards over the years and have<br />

maintained their AA rosette. One of the best<br />

awards achieved is the “Funkiest Inn in the UK” as<br />

The Huntingfield<br />

EASTER PANTO...<br />

Back in September 2016, a vision<br />

came to the folk of Huntingfield.<br />

Brought to life by resident<br />

Stephen Harrison, the tale of the<br />

Sausagerous was born.<br />

As you may be aware, most Pantomimes<br />

happen around Christmas time, but we don’t<br />

like to be too traditional in Huntingfield and<br />

felt a few months practice was pushing it, so<br />

we announced an Easter date instead.<br />

Much better!<br />

Word spread, and more people from the<br />

village, (and surrounding villages,) started<br />

to participate. Scripts were formed, Vikings<br />

were born and the star of the show, Arthur<br />

Freen was selected. She also happened to be<br />

Stephen’s daughter Olivia, who knew the story<br />

long before anyone else, which seemed more<br />

than fitting.<br />

Oh and did I mention what my partner Sam<br />

and I ended up playing? Can you guess? Yes…<br />

we were the Sausagerous monster, a make<br />

believe creature with two heads and a slinky<br />

body. It took a bit of practice walking under<br />

bucket made faces and a hula-hoop body<br />

covered in sailcloth, but luckily no falls!<br />

Week after week, rehearsal after rehearsal,<br />

we were almost ready. Winter came and went<br />

and as spring sprung, 74 tickets were booked.<br />

There was no going back.<br />

The performance took place at The Hub in<br />

Huntingfield on Saturday 8th April. It was a<br />

really successful event and I think I can speak<br />

for everyone when I say too much fun was had in the<br />

making. A big thank you to everyone who attended, to<br />

the cast including; the terrifying Vikings, Brian, Ken and<br />

Stephen, the villagers - Linda, Joan, Nigel, Sue, Marie<br />

and Frances, Arthur Freen played by Olivia, Rose her<br />

friend who stole the show by also helping to announce<br />

the scenes, and David, Helen, Liz, Margaret, Sue B and<br />

Stephen who made a great job of lighting, prompting,<br />

costumes, staging and narrating.<br />

Don’t be frightened of your staff<br />

For employers an employee or former employee<br />

bringing a claim against them in the employment<br />

tribunal is a problem best avoided.<br />

The costs involved in dealing with such disputes, both in<br />

terms of financial burden and management time, can escalate<br />

quickly taking valuable resources away from the day<br />

to day running of the business. So is there anything that an<br />

employer can do to avoid such claims being made against<br />

them?<br />

Of course there are steps which can be taken to minimise<br />

the risk. Ensuring you have good management procedures<br />

in place will help, as will providing your employees with<br />

Contracts of Employment and having an Employee Handbook<br />

which is easily accessible to employees. It will<br />

depend on the size of your organisation and the type of<br />

business you operate as to what areas those policies and<br />

procedures contained in the Employee Handbook will<br />

cover but, at the very least, you should ensure that<br />

grievance and disciplinary procedures are clearly set out<br />

and are in line with the ACAS Code of Conduct. An Equal<br />

Opportunities Policy coupled with relevant training is also<br />

important to minimise the risk of discrimination claims.<br />

When problems do arise, ensure that you follow your own<br />

policies and procedures and make sure that any meetings<br />

are documented. If your employee later brings a claim<br />

against your organisation those notes, taken at the time,<br />

will be invaluable as evidence.<br />

The reality is that you can never be sure that an employee<br />

will not make a claim, however with the requirement that all<br />

claimants make an Early Conciliation Notification to ACAS<br />

prior to their claim being accepted by the Employment Tribunal<br />

an employer ought to have advance notice that a claim<br />

may be issued and should therefore have an opportunity to<br />

consider their position and whether defending that claim or<br />

settling it is more appropriate at that stage.<br />

Once ACAS issue a certificate confirming that the Early Conciliation<br />

requirements have been met then the Claimant may<br />

issue proceedings in the Employment Tribunal.<br />

It is important that employers seek advice from an<br />

experienced solicitor at the earliest opportunity when faced<br />

with a potential claim by an employee. In order to minimise<br />

the risk of future claims, and to ensure you are best placed<br />

to deal with them if they do arise, it is prudent to have an<br />

experienced solicitor review your employment contracts and<br />

existing policies and procedures on a regular basis to ensure<br />

they comply with current law.<br />

Our hair and make-up expert, Kirsty Woolnough,<br />

shares her thoughts about hair extensions and what is<br />

best for your hair...<br />

The choppy bob and pixie crop<br />

cuts come in and out of fashion,<br />

however, long bouncy ‘Beyoncé’<br />

waves seem to continue to be a<br />

timeless and favorable style.<br />

For some of you, including<br />

myself, we simplly cannot achieve<br />

this look without a little help. The<br />

answer... hair extensions!<br />

Whether you want long luscious locks, thicker, fuller, more<br />

volumous hair, or you simply want to temporarily add some<br />

length to an up-do for a special occasion like a wedding,<br />

there are many options to choose from.<br />

In the last decade hair extensions have come along way<br />

so you can now have hair fitted knowing it’s 100% human<br />

hair and ethically sourced. It’s achievable to add length or<br />

volume to your hair without using any form of glue within a<br />

couple of hours causing no damage to your natural hair.<br />

A few methods used by professional<br />

and sew the weft into the braid using a needle<br />

and thread.<br />

I TIP/MICRO-LOOP…<br />

The hair is pulled through a bead or a tube<br />

and clamped shut.<br />

TAPE IN-ALSO KNOWN AS SKIN WEFT…<br />

Where hair is applied using either double or<br />

single sided tape.<br />

UTIP…<br />

A keratin utip bond attached to hair using a<br />

heat element.<br />

NANO…<br />

The hair is pulled through a tiny silicone lined<br />

bead and clamped shut.<br />

My personal and preferred method in which I<br />

offer to clients, is Nano bead hair extensions.<br />

It’s very hard to find any fault with this<br />

method, but when considering to have Nano’s<br />

fitted, you need to do your research and have<br />

a consultation.<br />

ABOUT NANO’S…<br />

The most obvious positive is that they are<br />

very small in size. Almost 90% smaller than<br />

micro rings. The silicone lined nanobead holds<br />

the correct amount of natural hair placed<br />

within the silicone ring and is clamped shut.<br />

The silicone protects your hair from damage<br />

and the beads are very secure.<br />

I prefer them because they are very<br />

discreet and when placed correctly they are<br />

completely undetectable when hair is up or<br />

down. Nano’s are one of very few methods<br />

that suit most hair types especially fine hair.<br />

As long as you’re using a fully insured<br />

professional for fitting your hair then<br />

rest assured that they will be applied<br />

safely, securely, neatly and discreetly. You<br />

should receive all after care advice and a<br />

maintenance service.<br />

MAINTENANCE...<br />

The only thing you do need to<br />

fully consider is how to maintain<br />

them. Every 6-8 weeks you<br />

should be prepared to visit<br />

your professional for a<br />

refitting.<br />

Luckily these 10 amazing hacks will help you find<br />

both affordable and easy remedies to save your<br />

skin and hair. Trust us, you’ll be thanking us for<br />

1. FIX FAKE TAN WITH BAKING SODA...<br />

If you’re staying away from the sunshine this<br />

summer and opting for a false glow instead, fix<br />

any fake tan botches with baking soda. Simply<br />

apply some baking soda on a loofah with warm<br />

water, and exfoliate to get rid of any patchiness.<br />

2. USE A POTATO TO PEDICURE...<br />

Get your feet flip-flop ready by giving yourself a<br />

home pedicure. To exfoliate the skin, cut a potato<br />

in half and coat in sea salt. Then, begin by rubbing<br />

Sun and salt water may be great for our skin and<br />

hair, but if your hair is coloured, it can encourage<br />

fading. Half a cup of apple cider vinegar is a great<br />

natural remedy to help brighten up your locks.<br />

Simply add the vinegar to a spritz bottle and<br />

spray all over the hair before leaving it in for about<br />

10 minutes, then rinse out.<br />

4. MAKE COCONUT OIL YOUR NEW BFF...<br />

Coconut oil is a multi purpose product that is<br />

great to use as moisturiser, conditioner, serum<br />

and cuticle oil. Pack into a small travel bottle and<br />

take away with you on holiday to keep your skin<br />

hydrated.<br />

5. USE TOMATO JUICE TO KEEP BLONDE<br />

HAIR BRIGHT...<br />

Chlorine can certainly damage your hair, especially<br />

if you’re blonde or have highlights. It can also add<br />

an awful greenish tinge. To protect your colour,<br />

coat your hair in leave-in conditioner or sesame oil<br />

before swimming. Always remember to rinse your<br />

hair after getting out the pool and wash in cold<br />

water to boost shine. For a post-swim remedy,<br />

coat your hair and your scalp in tomato juice for<br />

5-10 minutes before washing with shampoo and<br />

conditioner. This will help fade the greenish hue if<br />

you have one.<br />

Place a cotton pad in-between your blush<br />

shattering in your suitcase. Your expensive beauty<br />

products will thank you for this hack.<br />

10. GET YOURSELF SOME BABY POWDER...<br />

Baby powder isn’t just for little ones; it can be<br />

used as a cheaper alternative to dry shampoo<br />

and can also remove wet sand from the skin,<br />

making it perfect to stash away in your beach<br />

bag.<br />

Kates Top Tip for <strong>May</strong>: Plant out<br />

cannas and dahlias<br />

As bulbs fade and herbaceous<br />

borders grow in leaps and bounds,<br />

it is now clear that summer is<br />

approaching.<br />

Sowing and planting out bedding can begin,<br />

depending on regional weather variations, and you<br />

can take softwood cuttings.<br />

It’s also time to get back into the lawn mowing<br />

regime, as the lawn will be loving the warmer<br />

temperatures this month brings.<br />

Flowers<br />

Tubs can be planted up with<br />

summer bedding in milder areas.<br />

In colder areas further north or at<br />

high altitudes, it is advised to wait until<br />

early June, or until all risk of frost has passed.<br />

Divide clumps of herbaceous perennials that you<br />

want to propagate.<br />

Bamboos and clumps of bulbs or rhizomes can be<br />

divided in the same way. Cutting back clumps of<br />

spring-flowering perennials such as Pulmonaria and<br />

Doronicum can encourage a fresh flush of foliage.<br />

anyone?<br />

Now my quick-fire response<br />

to this question would most<br />

certainly, normally, be a no.<br />

I am far from green<br />

fingered.<br />

But when Mum and Nan invited<br />

me along to their annual visit, I<br />

thought I’d take them up on this<br />

VIP invite and see what I<br />

was missing.<br />

everything else? The ‘garden centre’ housed a lot of<br />

different departments and I soon realised lots of people<br />

were here for a leisurely wander- not just a replacement<br />

wheelbarrow.<br />

We worked our way through home furnishings, stationery,<br />

cards, novelty gifts, clothing, sculptures, home foods,<br />

plants and various other areas. Don’t get me started on the<br />

pet’s corner!<br />

Scotsdales Garden Centre in<br />

Cambridge was our destination.<br />

I was unsure at how we were<br />

going to spend the majority of<br />

the day here but I soon found out<br />

there can be more to a garden<br />

centre than gardening…<br />

A little while in I realised I had lost track of Mum and Nan.<br />

We were all being distracted by our different interests. Nan<br />

was off searching for greeting cards and Mum decorative<br />

end tables. I myself had built up a bit of a wish list too<br />

including; a cacti plant (it pricked me but I still wanted it),<br />

a selection of chocolate and fudge, a sculpture, a scarf<br />

holder and most importantly a dwarf rabbit.<br />

Sure, there was a gardening<br />

section! But what about<br />

Before any purchase decisions were made we regrouped<br />

for lunch in the café. And it was busy! We got our table<br />

just before 1pm and there was<br />

plenty of atmosphere even on<br />

a weekday.<br />

Weekends are very popular<br />

according to the waiter!<br />

There was a good selection<br />

for lunch, and all the food<br />

being placed on the tables<br />

around us looked tempting.<br />

Mum and Nan went for their<br />

traditional quiche and I opted<br />

for the prawn jacket potato-<br />

I’d have it again.<br />

Over lunch, as well as having a<br />

lovely catch up, we all decided<br />

what we would be leaving<br />

with.<br />

So after the energy boost we<br />

set off to fill the baskets.<br />

Mum and Nan left with two tables, bird<br />

feeders and countless plants.<br />

I selected two items from my wish list- the<br />

cacti and chocolates.<br />

Well who’d have thought it, an afternoon out<br />

at the garden centre?<br />

Especially if they’re all equipped with cafes<br />

and pet corners! Although I did leave with a<br />

new-found desire to decorate the garden…<br />

This must count as a mums always right<br />

moment- and nan too! Except next time I’m<br />

leaving with the rabbit.<br />

My biggest fear this summer is losing<br />

our ‘Pole in goal’ – even though the comments<br />

above, from Mick McCarthy, once again diverted<br />

the headlines back to the man in the hotseat.<br />

“As for some of the stuff about<br />

‘Mick McCarthy you’ve ruined<br />

our club’, that’s the biggest load<br />

of cobblers I have ever heard.<br />

“I saved the club from<br />

relegation and I have had<br />

three top-10 finishes.<br />

The one time I have a<br />

bad season then people<br />

have turned their backs<br />

on me which is a bit<br />

of a surprise and it’s<br />

disappointing.<br />

“But hey-ho, I am not<br />

walking away. I have a<br />

year’s contract to run<br />

and unless something else is done, no, I am<br />

not going, no way.”<br />

I had every intention of waxing lyrical this<br />

month about Bartosz Bialkowski.<br />

It’s player of the year time at Portman<br />

Road and beyond and while 2016/17<br />

will probably only be ‘memorable’ for<br />

being the club’s worst in over years, not<br />

everything about the campaign should be<br />

forgettable.<br />

Tom Lawrence had a purely magical<br />

midway spell where virtually everything he<br />

touched turned to goals, but Bialkowski<br />

gets my nod, for pure consistency and<br />

It seemed certain that McCarthy’s impressive<br />

reign in Suffolk was coming to an end. Forget<br />

the last few months, overall Mick has done an<br />

amazing job on a budget where ‘shoestring’<br />

barely does it justice. That said, for many<br />

months, my opinion has been its time for a<br />

change but clearly that also depends on the<br />

direction owner Marcus Evans is taking us.<br />

Could anyone do better on such little financial<br />

backing? I’m not so sure. Could another<br />

manager at least play a more attractive brand of<br />

football? I think so.<br />

If Mick is to stay, and I can’t see<br />

him getting sacked, then Evans<br />

needs to start truly backing his<br />

man. The relationship between<br />

McCarthy and Evans has shown<br />

a few understandable cracks of<br />

late, but surely there has to be<br />

serious summer talks over the<br />

direction of the club.<br />

Ipswich will start next season with<br />

a few thousand less season ticket holders, but<br />

something has to be done to start bringing back<br />

some of the fans.<br />

Style of football has to be almost as important<br />

as points on the board. Fans don’t expect to win<br />

the league, but they do expect to see an attempt<br />

of an ‘Ipswich way’ of playing – something I<br />

don’t think is too much to ask.<br />

McCarthy’s recent talk of a top-six push next<br />

season is fantastical without some investment in<br />

the playing staff in what will be one of the most<br />

intriguing summers at IP1 for many a year.<br />

The spotlight will remain on the manager and<br />

also the future of captain Luke Chambers and<br />

Christophe Berra.<br />

KNOW YOUR ARNIS<br />

FROM YOUR ELBOW!<br />

This month I joined maestro<br />

Eric Amada at the Stowupland<br />

sports centre for a lesson in the<br />

martial art and national sport of<br />

the Philippines, Modern Arnis.<br />

In its current guise the sport is relatively<br />

young having been founded in the 1960s<br />

by Remy Presas, Modern Arnis (also known<br />

as Kali and Eskrima) includes hand-to-hand<br />

combat, joint locks, grappling and couples<br />

them to the centuries old Filipino Martial Art<br />

style which incorporates weapons such as<br />

sticks and blades.<br />

Whilst you may not have heard about it the<br />

sport is as popular as karate and judo. It’s<br />

addition of weapons and a fluid counter<br />

attacking style generates a very attractive art<br />

to watch and to practice.<br />

In fact you’ve probably already watched<br />

Arnis without even knowing it, Hollywood<br />

movie stables Taken, Bourne and the latest<br />

Bond flicks all include an element of Arnis in<br />

their fight choreography as does hit Netflix<br />

series Daredevil, in which case keep your eyes<br />

peeled for Action Man: The Movie!<br />

I joined the group at their regular training<br />

session on Tuesday evenings 7:00 - 8:30 at<br />

Stowupland Sports Centre (Church Rd, IP14<br />

4BQ) whilst I have participated in a number<br />

of different marital arts now the styles and<br />

techniques are all slightly different, which<br />

makes Arnis not only great for total novices<br />

but also those looking to add to their martial<br />

art repertoire.<br />

Following our warm up, it was time to pick up<br />

our sticks, the most common Arnis weapon,<br />

first we learned striking, then we studied<br />

defending and then moved on to combining<br />

the two and it wasn’t long before I was able<br />

to string together an effective and thrilling<br />

sequence. Granted, at a more subtle pace<br />

than the more experienced group but after<br />

just one lesson I was very happy and proud of<br />

how much I had picked up through my first 90<br />

minute class under the excellent guidance of<br />

Maestro Eric Amada an executive member of<br />

the national body BCKEAI.<br />

I appreciate that it can be difficult when<br />

starting a new sport to catch up amongst a<br />

vastly more experienced group however now<br />

is the perfect opportunity.<br />

course starting on Tuesday <strong>May</strong> 2nd and<br />

running for 4 weeks.<br />

summer of 2012 as a live music<br />

night at Walberswick’s infamous<br />

Studio on the coast of Suffolk,<br />

and quickly grew into an active<br />

and supportive community of<br />

musicians and fans.<br />

As well as that in June’s <strong>Edition</strong>, we will<br />

be showcasing the talents of local Suffolk<br />

musician Nonny Denny.<br />

TOP TIPS FOR MOVING HOME WITH PETS...<br />

Well you may have guest it, I am<br />

moving… again!<br />

This will be my 4th move of home to date… but<br />

it’s not me I’m worried about! As you know ‘the<br />

kittens’ and I have become good pals of late, but<br />

whilst I will move wherever I am told, moving<br />

home for cats can be a little more complicated!<br />

So after researching some top tips to keep them<br />

safe, I thought I’d share them. Uff!<br />

Safety first...<br />

Early on the day of the move, put your cats in<br />

one room with all doors and windows closed so<br />

that you know that your cat is safe and can be<br />

found when it is time to go. Feed your them in<br />

the morning but not too close to moving time in<br />

case of illness during the journey, ewww! Keep<br />

your cat in a basket or carry cage on arrival<br />

until one room in the new house is available to<br />

become a ‘safe area’ for your cat. Familiar items<br />

such as a bed, scratching post and toys should<br />

be placed here as well as a litter tray, food and<br />

water bowls.<br />

rubbing it gently around your cats face to pick<br />

up their ’personal scent profile’. Dab this around<br />

at animal height in the room(s) where they will<br />

be kept at first so that the cat begins to feel at<br />

home and bonds with the territory.<br />

When to let your cat outside...<br />

It’s important that your cat stays confined to the<br />

house for at least two weeks as this will allow<br />

them time to get used to their new territory.<br />

A few days before you let your cat out, sprinkle<br />

some of their used litter around the perimeter<br />

of your new garden. Make sure your cat has<br />

some form of identification with your name,<br />

address and contact phone number. It is also a<br />

good idea to get your cat microchipped. If they<br />

are already chipped, then remember to contact<br />

the microchip company to update your contact<br />

details.<br />

This is also similar for us doggies, but I’d like to<br />

think I am a bit smarter than cats! Wish us luck!<br />

obviously none of these smells will be present<br />

in the new house and there will be various alien<br />

smells, which may make the cat feel insecure.<br />
