ST PATRICK’S DAY TREAT FOR GROWN UPS<br />
GUINNESS CHOCOLATE MOUSSE<br />
Serves 6<br />
350g dark chocolate<br />
115g butter<br />
100g caster sugar<br />
10 egg yolks<br />
10 egg whites, whisked<br />
100ml Guinness<br />
Place the dark chocolate and butter into the top of a doubleboiler.<br />
Stir over hot water in the bottom of the double-boiler<br />
until melted. Allow to cool slightly. Stir in the Guinness and<br />
egg yolks. In a separate bowl, beat egg whites until stiff and<br />
gradually add the caster sugar, beating until thick and glossy.<br />
Fold half the egg white mixture into the chocolate mixture,<br />
then gently fold in the remainder. Pour into serving glasses<br />
and chill until set. Decorate with your choice of topping such<br />
as freshly whipped cream, chocolate shavings, or something<br />
GREEN!<br />
