IN THE KITCHEN
Summer Sipping
One of my favourite summertime pleasures is
sitting outside, enjoying a cool drink. Here are
two of my favourites, depending on who is
joining me and what time of day it is. The
strawberry lemonade is perfect throughout the
afternoon. Family and friends of all ages will
enjoy this unusual take on the summer classic.
The sangria is a great choice for happy hour,
served with nibbles on the deck.
Strawberry Lemonade
A simple recipe with a simple equation.
Strawberries + Lemonade = Summer. Local,
ever-bearing strawberries are available and are
super sweet.
1 cup ripe strawberries
1 cup fresh lemon juice
2/3 cup fruit sugar (instant dissolving)
2 cups cold water
1/3 cup whipping cream
Ice cubes
In a food processor, puree the strawberries until
smooth. Pour into a large pitcher. Strain the
lemon juice and add to the pitcher. Add the
sugar and whisk until it is dissolved. Add the 2
cups water and the cream and stir to combine.
Fill glasses with ice. Pour the lemonade over
the ice. Garnish with extra strawberries, cut in
half and wedged on to the rim of each glass.
Serve immediately. Store any extra lemonade
in the refrigerator. Serves 4.
Summer Sangria
Nectarines are a great stand in for peaches and
there is no need to peel them beforehand.
1 cup ripe peaches, peeled and sliced
½ cup fresh raspberries
2 Tbsp fresh mint leaves, packed
¼ cup berry sugar (instant dissolving)
1 Tbsp fresh lemon juice
750 mL bottle Ontario dry white wine, chilled
1 cup peach schnapps
1 cup sparkling water or club soda
Ice cubes
Place the peaches, raspberries, mint, sugar,
lemon juice, and wine in a blender and puree
until smooth. Strain the mixture through a fine
sieve into a large glass pitcher. Before serving,
stir in the sparkling water or club soda and
garnish with additional raspberries. Serve very
cold, over ice. Serves 4.
